DISABLED SURFERS SOUTH COAST HANDS ON DAY - GERROA Gerroa at Seven Mile Beach Sunday 27 March 2016 The annual Disabled Surfers South Coast Hands on Day will be held in Gerroa at Seven Mile Beach. It is a fun day surfing experience for any person with a disability, no matter how challenging, with complete water supervision. All wetsuits, rash vests and soft surfboards are supplied for the day. everything you ever needed to know about mulch Using mulch is one of the best ways to grow and maintain a healthy garden. It protects plants, improves soil and encourages growth. Here’s everything you need to know to choose the right mulch for your garden. WHAT IS MULCH? Mulch is any material you use to cover the surface of your soil around plants. It keeps the moisture in, stops nutrients from washing away, maintains even soil temperature, and blocks out sunlight to prevent weed growth. TYPES OF MULCH There are many different mulches, both organic and inorganic. Organic mulches include leaves, grass clippings, bark and straw. Being natural, they decompose over time to add nutrients to the soil but often need topping up. While inorganic mulches such as gravel, pebbles, black plastic, landscape fabrics and even old newspaper are longer lasting but don’t contribute directly to the soil. ORGANIC MULCHES You’ll find plenty of mulches on the market but you can also use natural garden wastes. Some work better than others do, so it’s important to know a bit about the different types to help you choose what’s best for your garden. Straw is a great mulch for vegetable gardens. It decomposes quickly and improves the soil as it decays to help you grow a bumper crop of vegies. Sugar Cane mulch is made from dried sugar cane leaves. It provides an attractive finish in garden beds that also encourages helpful soil organisms. Pine bark is great for garden beds and pots. It’s dark natural colour blends in with the soil and looks great in any garden. Coir is fibre from the outer husk of coconuts. A more decorative mulch, you can get it in concentrated blocks, which quickly expand when you add water. Hard wood mulch is great for suppressing weeds. It looks good and takes a while to decompose so you don’t have to replace it as often. Lucerne mulch has the added advantage of giving your soil extra nitrogen as it breaks down. It’s ideal for roses, flowers, vegetables and fruit trees. Woodchips are not only great for mulch but also make an attractive feature in your garden. Putting down a 4–6cm layer provides good weed control.
Grass clippings are great for growing a lush green lawn. After mowing, it’s best to dry out your clippings and then add a 6cm layer over your lawn. Leaves lying around in your garden can be gathered up and used as mulch. You should shred them first because whole leaves often blow away. INORGANIC MULCHES While they don’t offer the same soil fertility as organic mulch, synthetic mulches are the best soil insulators because they don’t break down. They keep soil warmer for longer, promoting helpful bacteria and can sometimes extend the growth period of your plants. Gravel and pebbles are permanent and best used for foundation plants. They make an appealing design feature that you can enjoy year after year. Black plastic or weedmat is most effective as weed control. However, it can break down in sunlight so it’s best to bury the plastic under your soil so that it lasts longer. It’s also a good idea to cut out some holes for water drainage. Landscape fabrics work the same way as plastic but let air and water through better. For best results, add another 6-8cm of organic mulch over the top. Old newspaper can be recycled as mulch. Place it down in 10-page layers and throw on some organic mulch like straw to stop it blowing away. The newspaper keeps weeds down and makes the straw last longer.

INGREDIENTS • 2 tbs sesame seeds • 1 tbs Hoyts Pepper Colour Mix, coarsely crushed • 1 tsp dried chillies, crushed • 400g chicken breast fillets • 1 tbs olive oil • 420g can corn kernels, rinsed, drained • 2 truss tomatoes, quartered, seeded, finely chopped • 1/3 cup chopped fresh coriander • 1 tbs lime juice • 8 x 20cm flour tortillas • 120g (1 1/2 cups) grated cheddar • Fresh coriander sprigs, to serve • Sour cream, to serve METHOD Step 1 Combine the sesame seeds, pepper and chilli on a plate. Dip the chicken in the chilli mixture to coat. Heat the oil in a frying pan over medium heat.
Cook the chicken for 6 minutes each side or until cooked through. Set aside to rest for 10 minutes. Slice the chicken. Step 2 Combine corn, tomato, coriander, and lime juice in a bowl. Spray 1 side of half the tortillas with oil. Place, oil-side down, on a clean surface. Top with half the cheddar, the chicken and two-thirds of corn mixture. Top with remaining cheddar and tortillas. Spray with oil. Step 3 Heat a frying pan over medium heat. Add 1 quesadilla and cook for 2-3 minutes until golden. Turn and cook for 2 minutes or until cheddar melts. Transfer to a plate. Cover with foil. Repeat with remaining quesadillas. Step 4 Cut quesadillas into wedges. Top with coriander sprigs. Serve with sour cream and remaining corn mixture. Source: www.taste.com.au

INGREDIENTS • 1 bunch Dutch (baby) carrots, trimmed, halved • 2 tablespoons extra virgin olive oil • 2 teaspoons finely grated lemon rind • 1⁄4 cup Almond and pistachio dukkah • 4 small chicken breast fillets • 1 baby red cos lettuce heart, leaves separated • 60g baby rocket • 1/3 cup fresh mint leaves • 1/3 cup fresh flat-leaf parsley leaves • 100g Lemnos Full Cream Fetta, crumbled Honey dressing • 2 tablespoons honey • 1 tablespoon red wine vinegar • 1 tablespoon extra virgin olive oil

METHOD Step 1 Preheat oven to 200C/180C fanforced. Place carrots in a small baking paper-lined roasting pan. Drizzle with 2 teaspoons olive oil. Season with salt and pepper. Step 2 Combine lemon rind, dukkah and remaining oil in a small bowl. Rub all over chicken. Place chicken in a separate baking paper-lined roasting pan. Step 3 Roast chicken and carrots for 25 minutes or until chicken is cooked through and carrots are tender. Slice chicken. Step 4 Meanwhile, make Honey dressing: Whisk honey, vinegar and oil in a bowl. Step 5 Arrange lettuce, rocket, carrot, mint, parsley and fetta on serving plates. Drizzle with dressing. lime and chilli chicken salad Fresh iceberg lettuce adds crunch to this zesty gluten-free salad. INGREDIENTS • 500g chicken breast fillets • 2 teaspoons finely grated lime rind • 1 long green chilli, finely chopped • 2 garlic cloves, crushed • 1/4 cup lime juice • 2 tablespoons Australian extra virgin olive oil • 2 corn cobs, husks and silk removed • Olive oil cooking spray • 1/2 iceberg lettuce, roughly chopped • 1 avocado, sliced • 4 green onions, thinly sliced • 1/2 cup fresh coriander leaves METHOD Step 1 Place chicken in a glass or ceramic dish. Add lime rind, chilli, garlic, 2 tablespoons lime juice and 1 tablespoon oil. Rub to coat. Cover. Refrigerate for 20 minutes. Step 2 Meanwhile, place corn in a large,
heatproof microwave-safe bowl. Add 2 tablespoons cold water. Cover. Microwave on HIGH (100%) for 2 minutes or until just tender. Remove corn from bowl. Pat dry with paper towel. Spray with oil. Step 3 Heat a barbecue chargrill on medium-high heat. Add chicken and corn. Cook chicken for 4 minutes each side or until browned and cooked through, and cook corn for 5 minutes, turning, until browned. Transfer chicken to a plate. Cover with foil. Rest for 5 minutes. Transfer corn to a chopping board to cool for 5 minutes. Step 4 Using a sharp knife, cut kernels from cobs. Slice chicken. Combine remaining lime juice and oil in a small bowl. butter chicken This mild Indian butter chicken curry is kid friendly and fantastically fragrant. INGREDIENTS • Olive oil spray • 1 large brown onion, finely chopped • 2 tablespoons tandoori paste • 600g chicken breast fillets, excess fat trimmed, cut into 2cm pieces • 400g can no-added-salt chopped tomatoes • 125ml (1/2 cup) chicken stock • 55g (1/3 cup) cashews, finely chopped • 70g (1/4 cup) natural yoghurt • 75g baby spinach leaves • 2 cups steamed SunRice Basmati Rice • Chopped Lebanese cucumber, to serve • Fresh coriander leaves, to serve • Pappadums, to serve
METHOD Step 1 Heat a wok over medium-high heat. Spray with oil. Cook onion, stirring, for 3-4 minutes or until golden. Add the tandoori paste and cook, stirring, for 1-2 minutes or until aromatic. Step 2 Add the chicken and cook, stirring, for 3-4 minutes or until browned. Stir in tomato and stock. Reduce heat to low. Simmer for 10 minutes or until chicken is cooked through. Step 3 Add the cashew and simmer for 2-3 minutes or until sauce thickens. Stir in the yoghurt and spinach. Divide the rice and chicken mixture among serving plates. Top with cucumber and coriander. Serve with pappadums.
