how to grow vegetables Growing your own vegetables is not only easy but it will also save you money. This step-by-step guide will show you how to prepare your soil, the importance of adding fertiliser, and how mulching helps your vegetables grow better. We’ll also give you a few tips on how to grow some of the more common vegetables like spinach, onions and peas. And remember, before you choose them, it’s important to consider whether your vegetables are suited to the season that you’re planting them in. STEP 1. PREPARE THE SOIL Before you plant any vegetables, prepare your garden beds by digging the soil and adding organic compost at least 1-2 weeks before you start planting. Most vegetables only need 15-20 centimetres of good soil for their roots to grow. If you’re planning to grow crops with deeper roots, like potatoes or carrots, dig and compost deeper – up to 30 centimetres. Water in the compost and let it break down before you plant your vegetables. To get the most out of your vegetable garden, choose vegetables that you will use and plant them at the right time of year. STEP 2. PLANTING SPINACH Spinach is a good source of Vitamin A and one of the healthiest sources of minerals and nutrients that you can grow. Gently remove the spinach plants from their container and separate each plant. Use the gardening trowel to dig a hole deep enough, so that the leaves are sitting just above the soil and cover the roots. Plant the rest of the spinach in a row, about 30 centimetres apart. STEP 3. PLANTING PEAS Peas are easy to grow and also help to improve the soil you’re growing them in. Take each pea plant out of its container. Dig a hole deep enough for the peas, so the leaves are sitting just above the soil. Put the peas in the hole, and then fill it in. When planting your peas, remember that they will need some kind of support as they grow, so take that into account when working out the distance between them. Ideally they should be about 30 centimetres apart.

STEP 5. FERTILISE YOUR VEGETABLE PLANTS Vegetables need regular fertilising when they’re growing. To give yours a good head start, and to help with the shock of being transplanted, dilute a seaweed concentrate, approximately two capfuls in 10 litres of water in a watering can. Soak your vegetables in this mixture. STEP 6. APPLY MULCH Mulch helps your plants grow in a number of ways. As it breaks down it will provide nitrogen to the soil and your plants, keep the roots cool in summer and stop weeds from growing in your vegetable garden. Apply the mulch around your vegetable plants but not touching them. If the mulch gets wet it can rot the plant. STEP 7. WATER THE VEGETABLES To give your vegetable garden a good start, water the plants at least every day for the first few days. Then reduce the amount of water you give them, which will encourage the plant’s roots to grow deeper as they look for water. This will also help the plant to grow, establish itself and produce home grown food for your kitchen table.

STEP 4. PLANTING ONIONS Onions are a popular vegetable because they are easy to grow and don’t take up a lot of space in your garden. After taking the onion seedlings out of their container, separate each plant by gently washing them in a bucket of water to get rid of the soil. Separate each plant and dig a shallow trench. fish and chips Swap the batter for a cornflake crumb and the deep-frying for oven baking and you’ve got a healthy spin on a takeaway meal. INGREDIENTS • 4 medium Pontiac or Desiree potatoes • live oil spray • 2 cups (60g) corn flakes • 1 egg, lightly whisked • cup (80g) wholemeal flour • 600g boneless white fish fillets (such as whiting or flathead) • 2 tablespoons low-fat natural yoghurt • 2 teaspoons finely chopped flat-leaf parsley METHOD Step 1 Preheat oven to 1 0 C. Line an oven tray with baking paper. Step 2 Cook the potatoes in a large saucepan of boiling water for 15 minutes or until almost tender. Drain well. Set aside to cool slightly. Step 3 Cut the potatoes into wedges. Place on the lined tray and lightly spray with oil.

INGREDIENTS • 1 (about 800g, 3cm thick) firm white fish fillet (such as flathead, ling or barramundi), cut into 3cm cubes • 80ml (1/3 cup) extra virgin olive oil • 1 tablespoon finely shredded lemon rind • 60ml (1/4 cup) fresh lemon juice • 1/4 cup loosely packed coarsely chopped fresh oregano • 2 garlic cloves, crushed • 1/2 teaspoon ground cinnamon • Salt freshly ground black pepper • Bought tzatziki, to serve, if desired • Sliced sourdough bread, toasted, to serve, if desired Equipment • ou will need 8 bamboo skewers for this recipe. METHOD Step 1 Thread the fish pieces onto 8 bamboo skewers. Place in a single layer in a shallow glass or ceramic dish.

Loosely cover the fish with 2 sheets of damp paper towel and cook for 5 minutes on Medium/500watts/50 . Brush the fish kebabs with reserved marinade. Turn and cook for a further 5 minutes on Medium/500watts/50 or until the fish is just cooked through. Step 4 Serve immediately with tzatziki and toasted sourdough, if desired. polenta & herb-crusted barramundi These zesty, garlicky fish fillets are the sensible option when you’re craving fish ‘n’ chips. Plus, they taste delicious! INGREDIENTS • 100g instant polenta • Grated zest of 2 lemons, plus lemon wedges to serve • 2 tablespoons finely chopped fresh herbs (such as chives and parsley) • 2 garlic cloves, crushed • 2 eggs, beaten • 4 x 180g skinless barramundi fillets (or use other firm white fish) • 1/3 cup (80ml) olive oil • 300g grape tomatoes • 300g flat beans, sliced on an angle • Lemon wedges, to serve METHOD Step 1 Combine polenta, zest, herbs and half the garlic in a shallow dish, then season. Put eggs in another dish. Dip fish in egg, then polenta, pressing well onto the fish.

Step 2 Heat 1/4 cup (60ml) oil in a large frypan over high heat. When hot, reduce heat to medium and cook fish for 3-4 minutes on each side until golden and cooked through. Step 3 Meanwhile, heat the remaining oil in another large frypan over medium-high heat. Cook the remaining garlic for 30 seconds. Add the tomatoes and cook for 3-4 minutes, then add beans and cook for 2-3 minutes more, until tomatoes have softened and beans are cooked but still crunchy. thai red fish curry Break out of your weeknight meal rotation with this quick and easy dinner, packed with flavour. INGREDIENTS • 4 eggs • 60ml (1/4 cup) vegetable oil • 2 red onions, finely chopped • 2 cloves garlic, crushed • 1 stalk lemongrass, white part only, finely chopped • 75g (1/4 cup) Thai red curry paste (see note) • 2 tablespoons brown sugar • 2x 400ml cans coconut cream • 2 bunches broccolini, trimmed, cut into 3cm pieces • 800g barramundi fillet, skinned, pin-boned, cut into 3cm pieces • 2 limes, juiced • 2 tablespoons chopped coriander • Steamed SunRice White Long Grain Rice (optional), to serve

METHOD Step 1 Cook eggs in a saucepan of boiling salted water for 7 minutes. Drain and rinse under cold running water until cool enough to handle, then peel and set aside. Step 2 Meanwhile, heat vegetable oil in a large, heavy-based saucepan over medium– high heat. Add onions, garlic, lemongrass and curry paste, then cook, stirring frequently, for 5 minutes or until onion and lemongrass are soft. Step 3 Stir in brown sugar, coconut cream and 160ml (2/3 cup) water. Bring to a simmer, then add broccolini and barramundi, and cook, stirring occasionally, for 6 minutes or until barramundi is just cooked. Stir in lime juice and coriander, then season with salt and pepper. Step 4 Halve boiled eggs and place on curry. Serve with steamed white rice, if using. Source: www.taste.com.au
