how to prune trees Pruning can help your trees to grow strong and keep a good shape. Another reason to prune is to remove damaged branches, which allows for new growth and helps prevent viral, bacterial and fungal infections from entering the tree. We’ll show you how to prune correctly and how to avoid damaging the tree.
STEP 1
STEP 1. TRIM SMALLER BRANCHES WITH SECATEURS Before you start put on your safety glasses and gloves. Secateurs are like spring-loaded scissors and have a locking system to keep the blades shut while you’re not using them. Start by cutting off small branches near the base of the tree. You can also use the secateurs for low hanging small branches. STEP 2. CUT MEDIUM BRANCHES WITH YOUR HANDSAW Ideally the blade on your handsaw will be very sharp, so it’s important to work carefully. You can use a handsaw to cut any protruding or lower level branches too big for the secateurs. Cut the branch off close to the tree trunk and avoid cutting the main trunk. Make sure you cut the branch on an angle that protrudes slightly off the trunk. STEP 3. PRUNE HARD TO REACH BRANCHES Use your pole pruner’s lever action to cut hard to reach branches. For thicker branches, there are attachments for the pole pruner, including a saw, that you can also be used to cut branches higher in the tree.

STEP 4. PRUNE THICKER BRANCHES WITH LOPPERS Loppers are like giant secateurs used for pruning big branches. They are designed to give you more leverage and makes it a lot easier to cut through thicker branches. STEP 5. CUT THICKER BRANCHES USING AN UNDERCUT Undercuts are used to remove large branches, that if you cut it from the top, the weight would snap it off. This can lead to tears in the bark and expose the tree to diseases. To undercut, start under the branch and saw upwards until you have cut halfway through. Then saw down from the top of the branch, starting about 3-5 cm up from the undercut. Keep sawing until the weight of the branch pulls it away from the tree. Tidy up the tree by cutting from the top of the remaining branch, away from the trunk, all the way through.

beef massaman curry Recreate hot nights in Thailand with this classic massaman curry with a divine rich coconut sauce and beef that falls apart at a mere touch.

INGREDIENTS • 60ml (1/4 cup) peanut oil • 1.2kg gravy beef, fat trimmed, cut into 4cm pieces • 1 large bro n onion, finely chopped • 195g jar massaman curry paste • 3 garlic cloves, crushed • 1 tablespoon finely grated fresh ginger • 500g baby Cream Delight potatoes, peeled • 375ml (1 1/2 cups) Campbell’s Real Stock Beef • 400ml can coconut milk • 270ml can coconut cream • 3 whole star anise • 2 cinnamon sticks • 3 kaffir li e leaves • 2 tablespoons palm sugar • 2 tablespoons lime juice • 1 tablespoon fish sauce • Roasted chopped peanuts, to serve • Steamed rice, to serve METHOD Step 1 Heat 1 tablespoon oil in a heavy-
based saucepan over high heat. Cook one-third of the beef, turning, for 3-4 minutes or until browned. Transfer to a plate. Repeat, in 2 more batches, with remaining beef. Step 2 Heat remaining oil in the pan over medium-low heat. Cook the onion, stirring, for 5 minutes or until soft. Add curry paste, garlic and ginger. Cook, stirring, for 3 minutes or until aromatic. Add beef, potato, stock, coconut milk, coconut cream, star anise, cinnamon and kaffir li e leaves ring to the boil. Reduce heat to low and simmer, covered, for 2 3/4 hours or until beef is almost tender. Step 3 Uncover. Cook, stirring occasionally, for 1 hour or until beef is tender tir in the sugar, li e uice and fish sauce and simmer for 15 minutes or until the sauce thickens. Transfer to a bowl. fast chicken tagine his chicken dish is uick, easy and full of flavour INGREDIENTS • 1kg chicken thigh fillets, halved • 3 tablespoons chermoula spice mix or paste (see note) • 2 tablespoons olive oil • 1 onion, thinly sliced • 3 garlic cloves, thinly sliced • 1 lemon, thinly sliced • 100g blanched almonds • 140g green olives • 1 cup (250ml) Campbell’s Real Stock Chicken • Couscous and chopped coriander, to serve
METHOD Step 1 Toss chicken with half the spice mix. Heat oil in a large pan over medium heat. Cook onion and garlic, stirring, for 2-3 minutes until softened. Remove and set aside. Step 2 Add chicken to pan and cook over medium-high heat for 2-3 minutes each side until golden. Add lemon, nuts, olives, stock and remaining spice mix. Bring to the boil, then reduce heat to low, cover and simmer for 20 minutes or until chicken is cooked. Serve with couscous and coriander. Source: www.taste.com.au

sausages and champ mash with eschalot gravy Try this delicious sausage and champ recipe for a hearty weeknight meal. INGREDIENTS • 1.5kg potatoes (such as pontiac or desiree), peeled, chopped • 1/4 cup (60ml) thickened cream • 2 tablespoons Dijon mustard • 150g unsalted butter • 4 spring onions (pale part only), finely chopped • 1 tablespoon each olive oil and plain flour • 12 pork chipolata sausages (or 8 regular thin pork sausages) • 8 eschalots (200g total), thinly sliced • 1/2 cup (125ml) red wine • 1 1/2 cups (375ml) Campbell’s Real Stock Beef • Flat-leaf parsley leaves, to garnish METHOD Step 1 Cook potato in boiling salted water for 12-15 minutes until tender. Drain, then
return to pan with cream, 1 tablespoon mustard and 120g butter. Mash until smooth. Stir in onion and season. Cover and keep warm. Step 2 Meanwhile, heat oil in a large pan over medium-high heat. Prick sausages with a skewer. Fry, turning, for 6-8 minutes until cooked through and browned. Transfer to a tray and keep warm in a 160°C oven. Step 3 Drain all but 1 tablespoon oil from pan and return to medium heat. Cook eschalot and cook for 5 minutes until soft. Add flour, stir for 30 seconds, then add wine and stock. Bring to a boil, then simmer over medium-low heat for 10 minutes until thick. Whisk in remaining mustard and butter until well combined. Serve sausages on mash, pour over gravy and garnish with parsley. Source: www.taste.com.au

quick chicken roast Serve up a golden roasted chicken with this simple one-tray bake recipe. INGREDIENTS • 6 thyme sprigs, leaves picked • 4 anchovies in oil, drained, chopped • 2 teaspoons dried oregano • 1 teaspoon chilli flakes • 2 tablespoons olive oil • 2 garlic cloves, chopped • Finely grated zest of 1 lemon • 8 chicken thighs (bone in, skin on) • 800g baby kipfler potatoes, halved lengthways • 100g speck or streaky bacon, cut into 5mm-thick batons • 250g baby truss tomatoes
METHOD Step 1 Preheat the oven to 200C. Step 2 Combine the thyme, anchovies, oregano, chilli, oil, garlic and lemon zest in a bowl. Add the chicken and turn to coat. Add the potatoes and toss to combine. Place on a large baking tray and scatter over the speck. Step 3 Cut the zested lemon into wedges and add to the tray. Season and roast for 40 minutes or until chicken is golden and potatoes tender. Remove from the oven and top with tomatoes. Roast for a further 10-15 minutes until tomatoes are blistered. Step 4 Squeeze over roasted lemon juice to serve.
