Wollongong Comedy is branching out and opening a new pro stand up comedy room in Dapto. The super cool Little Joe’s Kitchen & Bar will play host to regular comedy nights on the 3RD THURSDAY OF EVERY MONTH. Shane Moon & Stuart Macpherson, the co-owners of Wollongong Comedy, have been working hard over the last few years creating the comedy culture in Wollongong. sticky date pudding Warm sticky date pudding with sweet caramel sauce is the perfect winter dessert. INGREDIENTS • 200g pitted dried dates, roughly chopped • 1 teaspoon bicarbonate of soda • 1 cup boiling water • 60g butter, softened • 1/2 cup caster sugar • 2 eggs • cups self raising flour Butterscotch sauce • cup firmly packed brown sugar • 1 cup pure cream • 100g butter, chopped

METHOD Step 1 Preheat oven to 180°C/160°C fan-forced. Grease a 6cm-deep, 18cm (base) round cake pan. Line base with baking paper. Step 2 Place dates and bicarbonate of soda in a heatproof bowl. Add boiling

water. Stand for 20 minutes or until tender. Step 3 Using an electric mixer, beat butter and sugar until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, stir in date mixture and flour. tir to combine. Step 4 Spoon mixture into cake pan. Bake for 40 to 45 minutes or until a skewer inserted into the centre comes out clean. Stand for 10 minutes. Turn out onto a wire rack. Step 5 Meanwhile, make butterscotch sauce: Combine sugar, cream and butter in a saucepan over medium heat. Cook, stirring, for 3 minutes or until boiling. Reduce heat to low. Simmer for 2 minutes. Pour warm sauce over warm cake. Serve. Source: www.taste.com.au

INGREDIENTS • 3 cups thickened cream • 1 cup milk • 4 cinnamon sticks • 1/4 teaspoon salt • 1/4 cup honey • 1/2 cup caster sugar • 9 large egg yolks • 1/2 cup caster sugar, extra METHOD gar and cinnamon in a large jug. Whisk Step 1 Bring cream, milk, cinnamon sticks and salt to a simmer in a medium saucepan over medium heat, stirring often. Remove from heat. Set aside for 1 hour to allow flavours to develop. Step 2 Preheat oven to 150°C/130°C fanforced. train milk mixture through a fine sieve over a bowl. Return to pan. Add honey and 1/4 cup sugar. Bring to a simmer, stirring to dissolve sugar. Whisk egg yolks and remaining sugar in a heatproof bowl. Gradually whisk

hot milk mixture into egg mixture. Strain mixture through sieve over a heatproof jug. Step 3 Divide custard evenly between 8 x 3/4-cup (180ml capacity) ramekins. Place in a large roasting pan. Pour enough boiling water into pan to come halfway up sides of dishes. Step 4 Bake for 45 to 50 minutes or until set around the edges, but still wobbly in centres. Carefully remove dishes from water and transfer to a wire rack to cool. Cover with plastic wrap. Refrigerate overnight (or up to 3 days). Step 5 Just before serving, place dishes in freezer for 20 minutes. Using half the extra sugar, sprinkle a thin layer over the top of each custard. Using a kitchen blowtorch or a preheated grill on medium-high, caramelise sugar for 1 to 2 minutes or until golden. Repeat with another layer of remaining sugar. Serve. Source: www.taste.com.au

traditional pancakes with maple syrup butter & strawberries

Treat dad to something special on Father’s Day -- this is the sort of classic pancake stack that family memories are made of. INGREDIENTS • g cups self raising flour • Pinch of salt • 500ml (2 cups) milk • 2 eggs • 60g butter, melted • Melted butter, extra, to grease • 2 x 250g punnets strawberries, washed, hulled, halved, to serve • Maple syrup, to serve Maple syrup butter • 120g butter, at room temperature • 1 tablespoon maple syrup METHOD Step 1 ift the flour and salt into a large bowl. Make a well in the centre. Whisk together the milk and eggs in a large jug. Add the milk mixture to the flour mixture, whisking constantly until a smooth batter forms. Stir in the butter. Cover with plastic wrap and place in the fridge for 30 minutes to rest. Step 2 Meanwhile, to make the maple syrup

butter, use an electric beater to beat the butter in a medium bowl until pale and creamy. Add the maple syrup and beat until well combined. Step 3 Heat a large non-stick frying pan over medium heat. Brush with the extra melted butter to lightly grease. Pour 80ml (1/3 cup) of the batter into the pan to form a 15cmdiameter pancake. Cook for 2-3 minutes or until bubbles appear on the surface and the pancake is golden underneath. Turn and cook for a further 1-2 minutes or until golden. Transfer to a plate and cover with a clean tea towel to keep warm. Repeat, in 9 more batches, with melted butter and remaining batter, reheating pan between batches, to make 10 pancakes. Step 4 Place pancakes on serving plates. Top with the maple syrup butter and strawberries. Drizzle over maple syrup to serve. Source: www.taste.com.au

INGREDIENTS • g cup self raising flour • 100g (1/2 cup) caster sugar • 1 teaspoon ground cinnamon • 1/2 teaspoon baking powder • 185ml (3/4 cup) milk • 1 egg, lightly whisked • 20g butter, melted • 1 teaspoon hot water • 2 teaspoons butter, extra • Icing sugar, to dust • 115g (1/3 cup) strawberry jam • 80ml (1/3 cup) double cream METHOD Step 1 ift flour, sugar, cinnamon and baking powder into a bowl. Make a well in centre and add milk, egg, melted butter and water. Use a wire balloon whisk to

Pour four 60ml (1/4-cup) quantities of batter around the edge of the pan and cook for 30 seconds or until bubbles appear on the surface and pikelets are golden underneath. Turn and cook for a further 1 minute or until golden. Transfer pikelets to a plate. Repeat with remaining butter and batter. Step 3 Divide pikelets among serving plates. Dust with icing sugar, and top with jam and cream. Serve immediately.

top tips for autumn gardening Autumn is a great season for spending time out in the garden getting your hands dirty. It’s all about preparing your lawns and garden beds so they’re ready for winter and set to bloom in spring. CLEAN YOUR GUTTERS AND DRAINS As the leaves start falling, it’s a good idea to keep an eye on your gutters. Clean your gutters out so they don’t overflow in early autumn showers, which can lead to water damage inside or outside your home. If your drainpipe is blocked, stick your garden hose down the pipe and turn it on to flush it out. Walk around your home and check that your drains aren’t covered with leaves or rubbish. If they are, you can have fun scooping it out. Adding 100mls of neat bleach helps unclog your drains. PERFECT TIME TO PLANT Autumn is a good time for planting a range of fruit, vegetables and flowers. You can find out what to grow in your area with our garden calendar. Get your vegie patch going by planting seedlings of broccoli, cauliflower, silverbeet, broad beans, carrots and strawberries so that you

can harvest them in spring. Winter flowering annuals, such as pansies, sweet pea and marigold add colour to the garden but need to be planted now to maximise flowering time. It’s also the right time to plant lavender, ferns and hydrangeas. MAKE YOUR OWN COMPOST You can put the fallen leaves to good use in your garden by composting them and returning their valuable nutrients to your soil. You can make compost with a combination of leaves, lawn clippings, fertiliser or manure, fruit and vegie scraps and water. It’s important to keep it balanced so never add too much of one thing. Using a garden fork to turn your compost occasionally helps it to decompose. MULCH YOUR GARDEN BEDS Now is an ideal time for mulching, which will improve your soil quality, keep it moist, stop it eroding, and stop weeds from growing. There are a number of different mulch options you can choose to suit different garden beds. Before you put down mulch, remove any weeds. Your mulch should be 5-10cms thick. LOOK AFTER YOUR LAWNS Autumn is a time when your lawns can start to recover from the hot summer.

As the rains start, you’ll find your lawn grows faster and needs more mowing. Make sure you raise the blades on your mower to cut it no shorter than 5cm, as long grass makes better use of low sunlight. Now is also a good time to feed your lawn before the winter, when the grass grows slower. Apply a slow release fertiliser, to help develop a strong root system and thicker grass. Clear any fallen leaves from your grass because they can block the sunlight and create dry brown patches. TIME TO START PRUNING Pruning is the best way to promote new growth and can encourage late autumn flowering. Prune back any old growth on plants by trimming at the base. Trimming your hedges allows in light and air in encourages new growth. KEEP YOUR TOOLS SHARP Maintaining your garden tools makes using them much easier and can extend their life. Sharpen and disinfect your pruners with a cleaning agent and apply oil. Lightly sand any tools with wooden handles and apply linseed oil to keep them smooth. If your tools have rusted, apply penetrating oil and scrub with steel wool to remove it. Oil the tools to prevent rust from returning.
