CATHEDRAL OF LIGHT Artist: Mandylights (Richard Neville (United Kingdom)) Collaborators: Daniel Mercer (Australia) / Shane Radcliffe (Australia) / Andy Romanowski (Poland) Cathedral of Light draws physical inspiration from traditional arched windows, typically found in historic churches, to create a 70 metre long tunnel illuminated by tens of thousands of LED light globes. The installation evokes feelings of attraction, warmth, inclusion and a sense of journey with its distinctive shape, attractive tone and walkthrough nature. Much like the idea of a church, the installation draws people out of the darkness and towards the metaphoric light. Designed to be viewed from both inside and out, the Cathedral of Light appears as a single solid shape of bright light that illuminates its surroundings

when viewed from a distance, radiating soft light outwards from all angles. Inside the ‘cathedral’, the space is smaller and much more intimate, and it becomes apparent that the cathedral’s light is not from a single source, but made up of thousands of tiny globes that together make the light so bright. The artists draw the analogy that, just like a strong community or congregation, the sculpture is made up of many smaller parts that work together to achieve a stronger, unified output. The installation is constructed from a series of modular extruded columns that are assembled into the abstract shape of a volcanic mountain. The mountain is designed to be viewed and approached from all sides, offering a full 360-degree experience. Each column is packed with computerised graphics that can be controlled by visitors to create effects of superb accuracy and realism. The entire mountain is controllable, so participants can direct colour patterns to run from one side, across, around, down and up the mountain. asian chicken, corn and noodle soup

Just six ingredients is all you need for this speedy, budget-friendly Asian chicken noodle soup! INGREDIENTS • 1/4 cup Malaysian curry paste • 2 green onions, thinly sliced • 425g can corn kernels, drained • 2 cups shredded barbecued chicken (see note) • 4 cups Campbell’s Real Stock Chicken Salt Reduced • 220g shelf-fresh Singapore noodles

METHOD Step1 Heat a large, non-stick saucepan over medium heat. Add curry paste and half the onion. Cook, stirring, for 1 minute or until fragrant. Step2 Add corn, chicken, 1 cup cold water and stock. Bring to the boil. Add noodles. Simmer for 5 to 6 minutes or until noodles are tender. Serve sprinkled with remaining onion. INGREDIENTS • 550g pork and veal mince • 1/3 cup parmesan, shredded • 1/4 cup fresh parsley, chopped • 1 teaspoon dried oregano leaves • 1 egg, lightly whisked • 2 tablespoons olive oil • 1 brown onion, finely chopped • 2 zucchini, finely chopped • 1 celery stick, finely chopped • 2 garlic cloves, crushed • 2 x 400g cans Italian diced tomatoes • 4 cups Campbell’s Real Stock Chicken • 1/3 cup couscous • Extra shredded parmesan and chargrilled Italian crusty bread, to serve METHOD Step 1 Combine mince, parmesan, parsley, oregano and egg in a large bowl. Season. Mix well. Roll tablespoonfuls of

mixture into balls. Place on a large plate. Heat half the oil in a large frying pan over medium heat. Cook meatballs, in two batches, turning occasionally, until well browned. Transfer to a plate. Step 2 Heat remaining oil in a large saucepan over medium heat. Cook onion, zucchini, celery and garlic, stirring, for 5-8 minutes or until soft. Add the tomato and stock. Increase heat and bring to the boil. Reduce heat. Add meatballs. Simmer for 10 minutes. Remove from heat and stir in couscous. Set aside until the couscous is tender. Step 3 Ladle into serving bowls. lentil, sweet potato & pancetta soup

One of the healthiest foods around, lentils are low in fat and very versatile - perfect for salads, soups and sides. Packed with vegies, this hearty lentil soup wins for taste and budget. INGREDIENTS • 750ml (3 cups) Campbell’s Real Stock Chicken • 2 teaspoons olive oil • 1 large red onion, finely chopped • 2 celery sticks, trimmed, finely chopped • 50g pancetta, finely chopped • 2 garlic cloves, crushed • 500g sweet potato (kumara), peeled, cut into 1cm pieces • 400g can no-added-salt lentils, rinsed, drained • 400g can no-added-salt diced tomatoes • 250g broccoli, cut into small florets • Chopped fresh continental parsley, to serve

METHOD Step 1 Heat oil in a saucepan over medium heat. Cook the onion, celery, pancetta and garlic, stirring, for 6 minutes or until soft. Add the sweet potato. Cook, stirring, for 1 minute or until combined. Step 2 Add the stock, lentils and tomato. Increase heat to medium-high and bring to the boil. Reduce heat to mediumlow. Simmer, partially covered, for 15-20 minutes or until sweet potato is tender. Add broccoli. Simmer for 3-4 minutes or until broccoli is tender crisp. Step 3 Divide the soup among serving bowls and top with parsley.

cauliflower soup This cauliflower soup is a quick, easy, and comforting winter dish. INGREDIENTS • 1 tablespoon olive oil • 1 large brown onion, chopped • 2 garlic cloves, crushed • 1 head (1.3kg) cauliflower, cut into florets • 500g sebago potatoes, peeled, chopped • 1 litre Campbell’s Real Stock Chicken (Use vegetarian stock for a vegetarian soup) • 1/2 cup pure cream

METHOD Step 1 Heat oil in a large saucepan over medium-high heat. Add onion and garlic. Cook, stirring, for 3 minutes or until onion has softened. Add cauliflower and potato. Cook, stirring, for 5 minutes. Step 2 Add stock. Season with pepper. Cover. Bring to the boil. Reduce heat to medium-low. Simmer for 15 to 20 minutes or until potato is tender. Set aside for 5 minutes to cool slightly. Step 3 Blend, in batches, until smooth. Return to pan over low heat. Add pure cream. Cook, stirring, for 2 minutes or until heated through. Serve. how to winterproof your home The average home uses up around 38% of energy consumption just for heating and cooling. Starting with your front door, we’ll show you some simple ways to winter proof your home by keeping the cold out and sealing in the warmth. STEP 1. SEAL AROUND YOUR FRONT DOOR Drafts from your windows and doors can account for 25% of the heat loss in your home. You can use a rubber seal on your windows or doors to fill gaps of 3-5mm. Tear the rubber seal in half and remove the adhesive strip. Stick it onto the inside edge of the door stop, starting at the very bottom, and then work your way up to the top and straight across. PUT CEILING FANS IN REVERSE If you have a ceiling fan there’s usually a reverse mode for winter. This will push all the warmer air down, making the room temperature more comfortable. STEP 7. INSULATE THE ROOF You can also insulate your roof. Installing insulation batts above your ceiling will help keep your home warm in winter and also cool in summer. However, it’s important to consider the type of insulation that will best suit your home.
