This inspiring and evocative collection of works were created in a hospital room in India, descending and ascending mountains and while exploring and building in the African desert. These journeys, made for different reasons & often repeated over years, herald Cooper’s firm belief that it is not about the destination so much as the journey. Cooper’s beautiful wandering renderings – paintings and drawings – capture a number of Mt Sinai climbs (one with her own wedding party), a fretful wait in hospital room 4837 (where her late husband passed away), ten years and twenty visits to Morocco (where she restored her own Kasbah) and one month walking 750 kms of the Camino, Spain. Pilgrim runs from June 15 – June 25th with an opening night exhibition launch

apple pie Delicately spiced, this old-fashioned apple pie is an all-time classic dessert with minimum fuss! INGREDIENTS • 2 1/2 cups (375g) plain flour • 1 teaspoon baking powder • Pinch salt • 2 tablespoons caster sugar • 2/3 cup (160ml) olive oil • 1 egg yolk • 1 egg white, lightly whisked • 1.25kg apples, peeled, thinly sliced • 1 tablespoon fresh lemon juice • 1/2 cup (115g) caster sugar • 1 teaspoon ground cinnamon METHOD Step1 Combine the flour, baking powder, salt and sugar. Combine the oil, egg yolk and 1/2 cup (125ml) of iced water. Stir into dry ingredients until combined. Knead until smooth. Divide into two portions,

cover and refrigerate for 30 minutes. Preheat oven to 180°C. Step 2 Roll out one portion of pastry to line a 25cm round pie dish. Brush with egg white. Toss the apples in lemon juice. Combine the sugar and cinnamon. Step 3 Place half of the apples in the pastry case. Sprinkle over half of the cinnamon sugar. Repeat. Roll out remaining pastry. Place over the apples. Press the edges to seal. Trim. Make 2 slits on top and decorate with leftover pastry. Brush with egg white. Sprinkle with a little extra sugar. Step 4 Bake for 40-45 minutes until golden. INGREDIENTS • 50g unsalted butter, chopped • 150g (2/3 cup firmly packed) brown sugar • 160ml (2/3 cup) golden syrup • 3 eggs, lightly beaten • 1 teaspoon vanilla extract • 240g (2 cups) pecan halves • Whipped cream, to serve Shortcrust pastry • 200g (1 1/3 cups) plain flour • Pinch of salt • 125g chilled unsalted butter, chopped • 1 egg, lightly beaten METHOD Step 1 To make pastry, combine flour and salt in a large bowl. Add butter and, using your fingers, rub into flour mixture until it resembles fine breadcrumbs. Make a well in centre of flour mixture. Combine egg and 1 tablespoon iced water in a small bowl, then pour into well. Using a round-bladed knife, stir until mixture forms a dough. Step 2 Turn out onto a lightly floured surface and shape into a 2.5cm-thick disc. Wrap in

plastic wrap and refrigerate for 30 minutes. Step 3 Preheat oven to 200C. Place dough on a lightly floured work surface and roll out to a 30cm diameter disc. Line pan with dough, then trim and discard excess. Refrigerate for 15 minutes. Take a bite out of the US with this pie full of sweet spices and maple syrup. INGREDIENTS • Olive oil spray • 250g (1 2/3 cups) plain flour • 2 teaspoons caster sugar • 160g butter, chilled, chopped • 2 tablespoons cold water • 345g (1 1/4 cups) pumpkin, cooked, mashed, cooled (see note) • 2 tablespoons maple syrup • 250ml can Nestle Reduced Fat Cream • 60g (1/3 cup, lightly packed) brown sugar • 3 eggs • 1 teaspoon ground cinnamon • 1/2 teaspoon ground cloves • 1/2 teaspoon ground nutmeg • 1/2 teaspoon ground ginger • Icing sugar, to dust • Double cream, to serve METHOD Step 1 Preheat oven to 180°C. Spray a 4.5cmdeep, 23cm pie plate with oil. Process the flour, sugar and butter in a food processor

until the mixture resembles fine breadcrumbs. Add the water. Process until the mixture just comes together. Step 2 Turn the dough onto a lightly floured sheet of baking paper and roll to a 4mmthick disc. Line the base and side of the dish with pastry and trim any excess. Pinch edges to crimp. Place in the fridge for 15-20 minutes to rest. Step 3 Line the pastry case with baking paper and fill with pastry weights or rice. Bake for 10 minutes. Remove paper and weights or rice and bake for a further 10 minutes or until light golden. Set aside to cool completely. Step 4 Combine the pumpkin, maple syrup, cream, sugar, eggs, cinnamon, cloves, nutmeg and ginger in a bowl. Whisk until smooth. Pour over the pastry. Bake for 40-45 minutes or until just set. nectarine pie This nectarine pie is a great spin on a dessert classic. It’s ideal with a cuppa for afternoon tea! INGREDIENTS • 375g (2 1/2 cups) plain flour • 200g butter, chilled, chopped • 5 tablespoons caster sugar • 60ml (1/4 cup) iced water • 1.5kg yellow nectarines, halved, stone removed, cut into wedges • 2 tablespoons plain flour, extra • 1 egg, lightly whisked • Pure icing sugar, to dust METHOD Step 1 Process flour, butter and 2 tablespoons sugar in a food processor until it resembles fine breadcrumbs. Add water. Process until dough just comes together. Form a disc. Cover with plastic wrap. Place in the fridge for 30 minutes to rest. Roll out two-thirds of the dough to a 28cm disc. Line a 20cm pie dish with pastry. Place in the fridge for 30 minutes.

Step 2 Preheat oven to 200°C. Line pastry case with non-stick baking paper. Fill with pastry weights or rice. Bake for 12 minutes. Remove paper and pastry weights or rice. Bake for a further 5 minutes or until light golden. Step 3 Combine nectarine, extra flour and remaining sugar. Spoon over pastry base. Roll out remaining one-third of the pastry to a disc large enough to fit the top of the pie. Place over pie. Seal edges. Trim excess. Brush with egg. Cut 2 slits in top for steam to escape. Step 4 Bake for 20 minutes. Reduce temperature to 180°C. Bake for 25 minutes or until golden. Dust with icing sugar.
