INGREDIENTS • 2cm piece fresh ginger, finely grated • 2 garlic cloves, finely chopped • 1/4 teaspoon hot chilli powder • 2 tablespoons cider vinegar • 2 teaspoons garam masala • 1/2 cup Farmers Union Greek Style Yogurt • 1kg chicken thigh fillets, trimmed, quartered • 2 tablespoons ghee (see note) • 1 brown onion, finely chopped • 1 cup canned tomato puree • 3 cardamom pods, bruised • 1 cinnamon stick • 3/4 cup pure cream • Fresh chopped coriander leaves, to serve
Step 2 Melt ghee in a large, heavy-based flameproof casserole dish over medium heat. Add onion. Cook, stirring, for 8 minutes or until softened. Add chicken mixture. Cook, stirring, for 8 to 10 minutes or until chicken just starts to change colour. Add purée, cardamom and cinnamon. Stir to combine. Bring to a simmer. Reduce heat to low. Simmer for 40 minutes or until chicken is tender and cooked through. Step 3 Stir in cream. Season with salt and pepper. Cook for 10 minutes or until heated through. salmon pie A luxurious savoury pie wrapped in puff pastry and filled with creamy mushroom and salmon. INGREDIENTS • 3 x 500g Tasmanian skinless salmon portions • 1 tablespoon olive oil • 100g cup mushrooms, sliced • 1/2 cup long-grain rice, cooked and cooled • 1 tablespoon fresh dill, chopped • 2 tablespoon thin cream • 4 sheets frozen puff pastry, thawed • 1 onion, finely chopped • 3 hard boiled eggs, chopped • 1 extra egg, beaten, for egg wash METHOD Step 1 Preheat oven to 200C or 180C fanforced. Wrap salmon in non-stick baking paper and place onto oven tray. Bake for 10 mins until just cooked. Unwrap and cool (leave the oven on). Step 2 Heat oil in a frying pan. Fry onion on medium heat for 5 mins until soft. Add mushrooms and cook a further 2 mins until soft. Transfer the mixture to a large bowl, cool slightly. Stir in the rice, dill, cream and eggs. Season with salt and pepper.
Step 3 Lay 2 sheets of puff pastry together, overlapping by about 6cm on a large sheet of non-stick baking paper. Spread the rice mixture into a pile along the pastry about 5cm in from the sides. Break the salmon into chunks and place along the top of the rice. Step 4 Overlap the 2 remaining sheets of pastry the same way and place over top of filling. Press pastry around edge of filling, trim any excess pastry. Use a teaspoon to press pastry edges together decoratively. Score top of the pie diagonally, brush with egg. Using the paper, lift pie onto a large oven tray. Bake for 45-50 mins until golden brown. Source: www.taste.com.au

INGREDIENTS • 500g desiree potatoes, peeled, finely chopped • 1 bunch silverbeet, ends trimmed, washed, dried, finely chopped • 1 tablespoon olive oil • 150g button mushrooms, thinly sliced • 8 spring onions, ends trimmed, finely chopped • 2 eggs, lightly whisked • 105g (1 1/4 cups) coarsely grated cheddar • 1 teaspoon ground nutmeg • Pinch of cayenne pepper • Salt & freshly ground black pepper • 2 sheets (25 x 25cm) ready-rolled frozen puff pastry, just thawed • 1 egg, extra, lightly whisked • 2 tablespoons sesame seeds • Mixed salad leaves, to serve METHOD Step 1 Preheat oven to 220°C. Place potato in a metal steamer basket over a saucepan of simmering water. Cook for 6 minutes or until tender. Set aside to cool slightly. Step 2 Meanwhile, place the silver beet in a saucepan over medium heat. Cook,

covered, stirring occasionally, for 2-3 minutes or until silver beet wilts. Set aside for 5 minutes to cool. Use your hands to squeeze any excess liquid from the silver beet. Transfer to a bowl with the potato. Step 3 Heat the oil in a frying pan over medium-high heat. Add the mushroom and spring onion and cook, stirring occasionally, for 2 minutes or until onion is tender. Add to potato mixture along with egg, cheddar, nutmeg and cayenne pepper, and stir until well combined. Season with salt and pepper. Step 4 Line a baking tray with non-stick baking paper. Place 1 pastry sheet on prepared tray. Spoon the potato mixture over pastry, leaving a 2cm border. Brush border with extra egg. Top with remaining pastry sheet and use a fork to lightly press the edges to seal. Brush pastry with remaining egg and sprinkle with sesame seeds. how to make the most of natural light Increasing the amount of natural light in your home can actually reduce your heating and lighting costs. It also makes rooms seem bigger and more inviting. Here are some simple and inexpensive ways to get more natural light into your home. WINDOWS, CURTAINS AND BLINDS On sunny days, open curtains and blinds to let in as much light as possible. Replacing heavy curtains with a lighter or see-through material helps to let in more light during the day and keeps in the heat at night. By angling the blinds, you direct the sunlight to where you want it. MIRRORS Use mirrors to reflect natural light and open up small spaces like hallways. Placing a mirror opposite a window that gets good light will make a room sunnier. door or on a desk behind flowers to create the feeling of more space. Place your mirrors in a number of rooms around the home to find out what reflects the most natural light, before permanently installing them.
