thai green chicken curry Recreate your favourite takeaway with this fragrant Thai green chicken curry. INGREDIENTS • 1 1/2 cups (300g) SunRice Long Grain Jasmine Rice • 2 tablespoons Alfa One Rice Bran Oil • 1 brown onion, cut into thin wedges • 1/2 x 210g jar Valcom Authentic Thai Green Curry Paste • 400ml coconut milk • 300ml chicken stock • 450g Coles RSPCA Approved Chicken Breast Fillets, cut into 1cm-thick strips • 1 green capsicum, seeded, thinly sliced • 100g snow peas, trimmed (optional) • 1/2 bunch coriander, leaves picked • 1 tablespoon fish sauce • 1 tablespoon brown sugar • 1 cup (65g) bean sprouts (optional) • 2 limes, cut into wedges

METHOD Step 1 Cook the rice following the packet directions. Step 2 Meanwhile, heat the oil in a large frying pan over medium-high heat. Add the onion and cook, stirring, for 2 mins or until onion softens. Add the curry paste. Cook, stirring, for 2 mins or until fragrant. Step 3 Add the coconut milk and stock. Bring to a simmer. Add the chicken, capsicum and snow peas, if desired, and cook for 2-3 mins or until chicken is cooked through. Chop half the coriander leaves and add to the curry. Stir in the fish sauce, sugar and half the bean sprouts, if desired. Squeeze over half the lime wedges. Taste and add more fish sauce, sugar and lime juice, if desired. Step 4 Top the curry with remaining bean sprouts, and coriander leaves. Serve with the rice and lime wedges. Source: www.taste.com.au

chicken pie Try this hearty chicken pie the whole family will enjoy! Created by Michael Weldon, MasterChef Australia Series 3 contestant. INGREDIENTS • 1kg Coles RSPCA Approved Chicken Thighs, cut in thirds • 1 onion, coarsely chopped • 1 carrot, coarsely chopped • 1 celery stick, coarsely chopped • 2 garlic cloves, halved • 5 thyme sprigs • 80g butter • 1/2 cup finely chopped onion, extra • 1/2 cup finely chopped carrot, extra • 1/2 cup finely chopped celery, extra • 1/3 cup plain flour • 1/2 cup (125ml) pouring cream • 1/2 cup (125ml) milk • 1 Continental Chicken Stock Pot • 1 lemon, zested • 1/2 cup frozen peas • 5 thyme sprigs, extra • 1 sheet frozen butter puff pastry • 1 egg • Mixed salad leaves, to serve METHOD Step 1 Combine the chicken, coarsely chopped onion, carrot, celery, garlic, thyme and a large

pinch of salt in a saucepan. Cover with water and simmer over medium heat for 10-15 mins until chicken is cooked. Transfer the chicken to a plate and use a fork to coarsely shred. Discard cooking liquid. Step 2 Preheat oven to 180C. Combine the butter, finely chopped onion, carrot and celery in a saucepan over medium heat. Cook until the vegetables begin to soften. Add the flour and season with salt and pepper. Cook, stirring, until the flour soaks up the butter. Gradually pour in the cream and milk and whisk until smooth. Add the stock pot and 1 1/4 cup water and whisk to combine. Season with salt and pepper. Remove from heat and stir in the shredded chicken, lemon zest, peas and extra thyme. Step 3 Transfer the mixture to a 1 1/2 L capacity pie dish. Cover the mixture with pastry and press the edge to enclose the filling. Use a knife to cut a few slits into the pastry. Whisk the egg in a small bowl with a little water. Brush the egg mixture over the pastry. Bake for 30 mins or until top is golden. Serve with mixed salad leaves. Source: www.taste.com.au

INGREDIENTS • 1 1/2 tablespoons olive oil • 1kg diced lamb • 1 brown onion, coarsely chopped • 1 garlic clove, crushed • 250g button mushrooms, halved • 400g can chopped tomatoes • 250ml (1 cup) Campbell’s Real Stock Beef • 250ml (1 cup) red wine • 2 tablespoons tomato paste • 1 tablespoon chopped fresh rosemary • Olive oil, to grease • 1 sheet (25 x 25cm) frozen puff pastry, just thawed • 1 egg, lightly whisked • Fresh rosemary sprig, to decorate • Steamed green round beans, to serve METHOD Step 1 Heat one-third of the oil in a large heavy-based saucepan over medium-high heat. Season the lamb with salt and pepper. Cook half the lamb, turning occasionally, for 3-4 minutes or until browned. Transfer to a heatproof bowl. Repeat with half the remaining

oil and the remaining lamb. Step 2 Heat remaining oil in the pan. Cook the onion, garlic and mushroom for 4 minutes or until soft. Increase heat to high. Stir in the tomato, stock, wine, tomato paste and chopped rosemary. Cover. Bring to the boil. Step 3 Reduce heat to medium-low. Return lamb to pan. Cover and cook for 1 hour. Uncover and cook for a further 30 minutes or until lamb is tender and the sauce thickens. Set aside for 1 hour to cool slightly. Transfer to a bowl. Cover with plastic wrap. Place in the fridge for 1-2 hours to cool completely. Step 4 Preheat oven to 200ºC. Brush a 24cm (base measurement) pie dish with oil. Spoon lamb mixture into dish. Top with the pastry. Trim excess. Use a fork to press the edge to seal and decorate. Brush the pie with egg. Cut a 4cmwide cross in the top of the pastry. Decorate with a rosemary sprig. how to hang pendant lights The right light can transform a room, but how do you hang a pendant light correctly? Pendant lights can perform a variety of functions. From task lighting to a statement piece, the right light can give a room a distinct personality. But how do you hang a pendant light correctly? Is there a set of guidelines to follow or is it a case of whatever goes? Bunnings’ Lighting Buyer Kelly Squibb has the following advice. LOCATION, LOCATION, LOCATION Is the pendant a feature or is its role more functional? Maybe it’s a bit of both. Whether your pendant is intended to provide task (lighting a specific area, usually a workspace), accent (throwing light on a particular feature) or ambient (background or general) lighting will dictate where you place your fixture in the room. HOW HIGH (OR LOW) SHOULD A PENDANT LIGHT HANG? Get this wrong and it could throw out the balance of your room. The height you hang your pendant will depend not only on the height of your ceiling but also what is beneath the light – furniture or open space – and its intended use. If the pendant/s are hung above a piece of furniture, and there’s no chance anyone can bump their head, then it can be hung a bit lower to create a cosy feel. When hanging pendants beside a bed, these should be hung at the same height that a bedside lamp would sit, allowing enough room to put things on the bedside table. The other thing you need to consider here is light projection. The lower you hang a pendant light, the shallower the

light projection will be. Also, the shape of the pendant will also impact light projection – the wider the pendant the greater the light projection. Ask your electrician to hold the pendant at different heights or locations until you’re completely happy with its position. It’s difficult to gauge whether or not you’ve got it right by holding the pendant up yourself. Your electrician will also be across legislation for minimum heights over wet areas to ensure safety. The following heights can be used as a guide only (they may not work in every setting): • Above a kitchen bench: 55–70cm above the benchtop • Above a dining table: 70–82cm above the tabletop • Above bedside tables: 40–55cm, above the bedside tabletop THE RIGHT SIZE FOR THE SPACE Check your space – the pendant you select needs to sit comfortably within its surrounds. To visualise, ask someone to hold up a rough cardboard profile to get a better idea of how the light will fill the space. It’s a good idea to take photos so you can compare different positions. Large pendants can make a great

statement and become a focal point. Or try creating additional impact with smaller pendants by hanging more than one in a cluster, at the same or different heights, or in a row. Many pendants are available in range families. For example, small pendants hung as a set of three over a kitchen bench or dining table, or one large pendant in a stairwell. GET THE LOOK There are myriad styles of pendants on the market – from statement pieces to more subtle designs. Also, the material you choose will go a long way to help setting the mood in your room. Choose concrete or metal for a more modern or industrial look, or try natural materials for a beach or modern scandi style. Glass and woven or slatted shades appear more open and throw out reflected light and shadows, creating a great effect. DON’T GO IT ALONE Always get a qualified electrician to complete any electrical work on your home. If you are not a qualified electrician, then performing electrical work is not only illegal but very dangerous.
