beef vindaloo With its fiery reputation, beef vindaloo is not for the faint-hearted.

INGREDIENTS • 1kg gravy beef, trimmed, cut into 4cm pieces • 2 tablespoons lemon juice • 2cm piece fresh ginger, finely grated • 1 tablespoon vegetable oil • 1 brown onion, chopped • 2 garlic cloves, thinly sliced • 2 tomatoes, finely chopped • 2 long green chillies, halved lengthways • 1/3 cup cider vinegar • Tomato and onion sambal (see relate recipe), to serve Spice mix • 1 teaspoon hot chilli powder • 1 teaspoon ground cumin • 1 teaspoon garam masala • 1 teaspoon ground black pepper • 1 teaspoon ground cinnamon • 1 teaspoon ground turmeric METHOD Step 1 Make spice mix: Combine all
ingredients in a small bowl. Step 2 Place beef in a glass or ceramic bowl. Add spice mix, lemon juice and ginger. Mix well. Cover. Refrigerate for 1 hour or overnight, if time permits. Step 3 Heat oil in a large, heavy-based flameproof casserole dish over medium heat (see note). Add onion. Cook, stirring, for 8 minutes or until softened. Add garlic. Cook, stirring, for 1 minute or until fragrant. Add beef to dish. Cook, stirring, for 8 to 10 minutes or until beef starts to change colour. Step 4 Add tomato, chilli, vinegar and 1 cup cold water. Increase heat to high. Bring to the boil. Cover dish. Reduce heat to low. Simmer for 1 hour 30 minutes, stirring occasionally. Step 5 Remove lid from dish. Simmer for 1 hour 30 minutes, stirring occasionally, or until sauce thickens and coats the beef. Season with salt. Serve sprinkled with sambal. Source: www.taste.com.au

INGREDIENTS • 1/2 x 500g packet yellow split peas • 2 tablespoons vegetable oil • 1 brown onion, finely chopped • 1 carrot, finely chopped • 2 teaspoons yellow mustard seeds • 2 teaspoons ground cumin • 1 teaspoon ground coriander • 10 fresh curry leaves • 1/2 teaspoon ground turmeric • Pinch of ground cloves • 1 cinnamon stick • 3/4 cup red lentils, rinsed • 400g can diced tomatoes • 1 cup fresh coriander leaves • Plain Farmers Union Greek Style Yogurt and extra coriander leaves, to serve
Step 2 Heat oil in a large heavy-based saucepan over medium heat. Add onion and carrot. Cook, stirring occasionally, for 10 minutes or until onion has softened. Add mustard seeds, cumin, ground coriander, curry leaves, turmeric and cloves. Cook, stirring, for 2 minutes or until mustard seeds start to pop. Add split peas, 1 litre cold water and cinnamon. Increase heat to high. Bring to the boil. Reduce heat to low. Simmer, partially covered, for 30 to 40 minutes or until peas are just tender. Step 3 Add red lentils and tomato. Season with salt and pepper. Simmer, uncovered, for 15 to 20 minutes or until lentils are soft and dhal is thick. Stir in coriander. Top with yoghurt and extra coriander leaves. Serve.
METHOD Step 1 Place split peas in a glass or ceramic bowl. Cover with cold water. Set aside for 3 hours or overnight. Drain. Rinse under cold water.

tandoori chicken and fresh herb salad Spiced chicken pairs perfectly with a crisp salad and a yoghurt dressing. INGREDIENTS • 1/4 cup Sharwood’s Tandoori Paste • 260g (1 cup) Greek yoghurt • 600g chicken breast fillets • 1 tbs lemon juice • 1 tsp ground cumin • 1 cup fresh coriander leaves • 1 cup fresh mint leaves • 1 Lebanese cucumber, halved, seeded, thinly sliced • 1 red onion, halved, thinly sliced • Baby cos lettuce leaves, to serve • 55g (1/3 cup) cashew nuts, chopped METHOD Step 1 Combine the tandoori paste and 90g (1/3 cup) of yoghurt in a glass bowl. Add the chicken and turn to coat. Cover
and place in the fridge for 4 hours or overnight to marinate. Step 2 Preheat a barbecue grill or chargrill on medium-high. Cook the chicken for 7 minutes each side or until cooked through. Transfer to a plate. Set aside for 5 minutes to rest. Thickly slice. Step 3 Meanwhile, combine the remaining yoghurt, lemon juice and cumin in a jug. Combine the coriander leaves, mint leaves, cucumber and onion in a bowl. Step 4 Place lettuce leaves on a platter, sprinkle over the coriander mixture. Top with the chicken. Drizzle over the dressing. Sprinkle with cashew nuts.

tikka masala seafood This tikka masala can be made in minutes but tastes like it’s been slow cooked for hours. INGREDIENTS • 1/4 cup tikka masala curry paste • 1/3 cup natural yoghurt • 1/4 cup fresh coriander, chopped • 1/4 cup fresh mint, chopped • 16 medium green prawns, peeled, deveined, tails intact • 500g perch, or ling skinless fillets (firm white fish), cut into chunks • Baby spinach leaves, mint leaves and lime wedges, to serve

STEP 1
A timber-look feature wall can add warmth, depth and texture to any room. We’ll show you how easy it is to transform any wall in your home with this stylish modern look and the tools and materials you need to get it done.
STEP 2
STEP 1. CLEAN THE WALL Before you start, make sure you clean the wall thoroughly using sugar soap and water. This will help the timber boards stick to the wall properly. STEP 2. MEASURE AND MARK THE WALL Measure the height of the wall and use the spirit level to mark a line down the middle. Now measure the width of your wall and mark a line across the middle. This will allow you to evenly lay your timber-look boards on the wall. STEP 3. MEASURE AND CUT THE BOARDS Using your wall measurements, mark and measure up the boards to fit. Use the utility knife to cut the boards and break them cleanly with the set square. Remember, you need to stagger the lengths of the boards so that you don’t have a straight line of wood seams running across the wall. STEP 4. APPLY THE ADHESIVE TO THE WALL Use the scraper to apply the adhesive to your trowel. Then spread the adhesive evenly onto the wall, starting at either side of the line that runs down the centre of the wall. Only apply the adhesive to the area
where you are about to stick one of the timber-look boards. STEP 5. STICK THE FIRST BOARD TO THE WALL Take the first board and place it flush with the cornice at the top of the wall. Make sure it is also flush with the line running down the centre of the wall. Push the board onto the adhesive. STEP 6. CONTINUE STICKING THE BOARDS TO THE WALL Repeat the process of applying adhesive and sticking the boards to the wall. Continually check to make sure they are straight. Use a cloth or wallpaper smoother to help press the boards onto the adhesive. STEP 7. STICK THE LAST BOARDS TO THE WALL After you have stuck all your full-width boards to the wall, you may need to cut a board lengthwise to fit into the corners. Measure the width of the gap between the board and the wall. Mark this distance on the length of a board and use a utility knife to cut it. Apply adhesive to the wall and stick the board to it.
