chilli beef and bean tortilla wraps Roll up these tortillas with their spicy mince and bean filling for a simple meal that will have the family licking their lips in anticipation. INGREDIENTS • 80ml (1/3 cup) Campbell’s Real Stock Beef • 1 large brown onion, chopped • 3 garlic cloves, crushed • 250g Heart Smart beef mince • 1 425g can crushed tomatoes • 1 300g can red kidney beans (Edgell brand), rinsed, drained • 2 tablespoons tomato paste • 2 teaspoons medium Mexican chilli powder blend (MasterFoods brand) • 1 teaspoon sugar • Salt & freshly ground black pepper • 8-12 20cm diameter Mexican tortillas (Buttercup brand), to serve • 3 tablespoons extra lite sour cream, to serve • Shredded lettuce, to serve • Chopped green shallots, to serve
METHOD Step 1 Place the stock, onion and garlic in a medium saucepan. Bring to a simmer over medium heat. Reduce heat to low and cook, covered, for 10 minutes or until the onion softens. Increase heat to high, add the mince and cook, breaking up the mince with a wooden spoon, for 10 minutes or until mince changes colour. Step 2 Stir in the undrained tomatoes, kidney beans, tomato paste, chilli powder blend and sugar, and bring to the boil over medium-high heat. Reduce heat to low and cook, partially covered, for 25 minutes or until the mixture is thick. Taste and season with salt and pepper. Step 3 To serve, spoon the mince mixture onto the tortillas, top with a dollop of sour cream, some lettuce and green shallots, and roll up firmly. Source: www.taste.com.au

vegetarian chilli beans This protein-packed vegetarian chilli is a hearty and delicious meat free alternative. INGREDIENTS • 1 tablespoon olive oil • 1 brown onion, finely chopped • 1 red capsicum, deseeded, coarsely chopped • 1 x 435g can refried beans • 1 x 420g can Mexican Chilli Beans • 1 x 420g can red kidney beans, rinsed, drained • 1 x 400g can diced Italian tomatoes • 90g (1/3 cup) light sour cream • 1 bunch coriander, leaves picked • Mixed salad leaves, to serve • Flour tortillas, to serve (optional)
METHOD Step 1 Heat the oil in a large non-stick frying pan over medium heat. Add onion and capsicum and cook, uncovered, stirring, for 3 minutes or until the onion softens. Step 2 Add the combined beans and tomato to the pan and stir until well combined. Increase heat to high and bring to the boil. Reduce heat to medium and simmer for 5 minutes. Step 3 Divide the bean mixture among serving bowls. Top with sour cream and coriander. Serve with mixed salad leaves and tortillas, if desired.

chicken chilli con carne Here’s a super-smart dish that keeps on giving — a delicious meal one night, with leftovers and a recipe for the next night. INGREDIENTS • 2 tablespoons olive oil • 800g chicken mince • 2 medium brown onions, finely chopped • 1 medium red capsicum, diced • 3 garlic cloves, crushed • 1 1/2 tablespoons ground cumin • 1 1/2 tablespoons ground coriander • 2 x 400g cans red kidney beans, drained, rinsed • 3 x 400g cans diced tomatoes • 1 tablespoon dried oregano • 1 teaspoon dried chilli flakes (optional) • Steamed SunRice White Medium Grain Rice and fresh coriander leaves, to serve METHOD Step 1 Heat half the oil in a large, heavybased saucepan over medium-high heat.
Cook mince in 2 batches, stirring with a wooden spoon to break up mince, for 8 to 10 minutes or until browned. Transfer to a bowl. Step 2 Heat remaining oil in pan. Add onion and capsicum. Cook, stirring, for 5 minutes or until softened. Add garlic, cumin and coriander. Cook, stirring, for 1 minute or until fragrant. Return mince to pan. Stir to coat. Add beans, tomato, oregano, chilli, if using, and 1/2 cup cold water. Cover. Bring to the boil. Reduce heat to low. Simmer for 30 minutes. Remove lid. Simmer for 15 minutes or until sauce has thickened. Step 3 Serve half the chilli con carne with rice, sprinkled with coriander. Cover and refrigerate remaining chilli con carne. METHOD Step 1 Heat olive oil in a large frypan over medium-high heat. Add onion and cook for 2-3 minutes until soft. Increase heat to high, then add beef mince and cook, stirring, for 4-5 minutes until browned. Reduce heat to medium, then stir in the tomato, stock, tomato paste, cocoa, chilli powder and oregano, and simmer for 15 minutes. Add kidney beans and cook for 5 minutes or until heated through. Step 2 Meanwhile, halve the avocados, remove the stones and peel. Step 3 Divide the rice among serving bowls and top with avocado halves. Top with chilli beef, and garnish with onion and coriander. diy indoor hanging herb garden Cooking with fresh herbs from your own garden always tastes better. This hanging window herb garden is easy to make so you can grow your favourite herbs all year round. STEP 1. MEASURE AND MARK FOR THE FLANGES Measure and mark the desired heights for your two pipe rails. Make sure you leave enough distance between the bottom pipe and the window frame for the hanging herb bucket to fit. Hold the flanges in place on the bricks and mark the drill points with a sharpie.

STEP 2. DRILL THE HOLES FOR THE FLANGE Drill holes into your wall for the flanges using a hammer drill with a 6mm masonry bit. STEP 3. MEASURE AND CUT THE GALVANISED PIPE Measure the width of your window to determine the length of pipe required to make the hanger. Connect two pieces of pipe together with the twoway connector. Repeat this to make the second hanger. Mark on the pipe the width of the window. Clamp the pipe to the work bench and use the hacksaw to cut the pipes to length.
STEP 4
STEP 4. SECURE THE HANGERS TO THE WALL Slide the flanges onto each end of the galvanised pipe. Line the flange up with the holes drilled in the wall. Tap in the masonry bolts in with your hammer and secure them with the drill.
STEP 5 STEP 5. PLANT THE HERBS IN THE BUCKETS Now it’s time to plant the herbs in the buckets. Choose a wide variety of herbs that you like to cook with and are in season. Remove them from their containers and place them in the buckets. Top up with a good quality potting mix, then water and fertilise. STEP 6. HANG THE BUCKETS ON THE PIPES Hang your buckets on the galvanised pipe with the butchers hooks. Make sure they are evenly spaced and remember to water the herbs regularly.
