travelled for many reasons in 2019: for weddings, for photoshoots, to run a half marathon (don’t be too impressed—it was the Half Corked Marathon in Osoyoos, B.C., which involved a lot of wine), for a conference, for research, to spend time with my family and friends, and to escape one of Calgary’s coldest winters ever. So I was excited to put together this issue’s 50 Reasons to Travel feature (pg. 35). We searched high and low for the biggest openings, quirkiest attractions and all-around coolest news. Truthfully, we were a little overwhelmed by how much amazing stuff is happening out there, and it was tough to narrow it down, but we managed to home in on our favourite events, most fun ideas and not-to-be-missed destinations. This list is far from exhaustive, though. From openings, including Ace Hotel Toronto (the first Canadian outpost) and fun attractions, the Canadian Potato Museum in PEI (a personal favourite) to the tourism boom in Havana (more about its hotels on pg. 14), we could have easily doubled this list. While much of my travel in 2019 was for life’s obligations, my resolution for

2020 is to travel more just for me. This goal was inspired not only by our list but on a work trip to Toronto in November where I spent my spare time soaking up city life: walking the long way, indulging in too many coffees and pastries and having that second (okay, third) cocktail at my hotel’s bar—Clockwork at the Fairmont Royal York. I hope more of my long weekends look exactly like that. Whatever your travel goals are for 2020, we hope this issue inspires your next adventure.

Morning Head to Waikiki Beach for an outrigger canoe ride. Waikiki Beach Services takes guests out on a canoe and explains the rhythm of the waves until the right one comes along. Then, everyone paddles hard to catch the swell and ride it toward shore. Afternoon Located next to the Hawaii State Capitol, Iolani Palace (shown) was the former residence of the monarchs of the Kingdom of Hawaii. Built by King Kalakaua in 1882, the building has been restored and visitors can tour the state rooms and learn about Hawaii’s regal past. Evening Make a reservation at the Mai Tai Bar at The Royal Hawaiian Resort— known as the Pink Lady of Waikiki for its distinctive paint colour—to watch the sun set over the Pacific Ocean. Sip on one of the bar’s signature cocktails such as Vic’s ’44, the resort’s take on the original 1944 Mai Tai recipe.

DAY 2 Morning Take a tour (Mondays and Wednesdays) of the historic Moana Surfrider hotel to learn about the history of Waikiki. Artifacts are displayed around the property, including newspaper articles about the mysterious death of Jane Lathrop Stanford at the hotel in 1905, and items once owned by surfer Duke Kahanamoku, who won a gold medal in swimming at the 1912 Olympics. Afternoon Remain at the Moana and enjoy afternoon

Morning Visit the Shangri La Museum. Located in the shadow of Diamond Head (a volcanic crater), the former estate of philanthropist and heiress Doris Duke now houses a museum dedicated to Islamic art, culture and design. Afternoon Lunch on the Israeli salad and fish tacos at Merriman’s in Honolulu before shopping for locally made products and art at neighbouring South Shore Market. Evening Learn about locally raised singer Don Ho—who brought Hawaiian music to the world—at the International Market Place. Then, head upstairs for dinner at Eating House 1849 By Roy Yamaguchi. WINTER GLAMPING Don’t let the colder temperatures stop you from enjoying the great outdoors. n 1900, fewer than 3,000 cars travelled the roads of France. It wasn’t good news for brothers Édouard and André Michelin, who owned a tire factory. Their solution was to publish a guidebook that would encourage more drivers to explore the country’s roads. Their first Michelin Guide listed hotels, restaurants, gas stations and car mechanics around France and sold 35,000 copies. By the 1930s, the guide covered most of Europe and introduced its now-famous one-, two- or three-star rating system. Today, Michelin covers more than 30 countries and its culinary stars are coveted by restaurants. One of those stars was recently bestowed on Addison, a luxurious French-influenced restaurant in San Diego, Calif. Located on the grounds

of the Fairmont Grand Del Mar resort, it is where 44-year-old chef director William Bradley indulges his love of caviar and local ingredients. In its new guide to 654 restaurants in California, Michelin notes that Addison “is like wrapping yourself in culinary excellence.” We spoke to Bradley about what it is like being the only Michelin-starred establishment in his city. How did Michelin come to be in San Diego? Michelin had been in the area for a while, but there were rumours that it would come back [and look at] California as a whole. It’s more of a state guide now rather than a city guide. Chefs take it very seriously.

There’s a place in Oregon called Boring that is home to a Bigfoot museum. Yes, it’s really called Boring, but the North American Bigfoot Center helps shake any assumption about the town’s name. This new museum was created by researcher Cliff Barackman, who travelled the world for years searching for sasquatches on Animal Planet’s Finding Bigfoot. When a cold wind blows through this theatre, it’s said to be caused by Alexander Lindsay, a firefighter who died here in the 1920s. L’Anse aux Meadows, N.L. Legend has it a ghostly Viking ship still sails the sea headed toward L’Anse aux Meadows (North America’s first Norse settlement). CULTIVATING CULTURE North America’s first Indigenous winery perfects the process in Osoyoos, B.C. or resident winemaker Justin Hall, a connection with the land and stories from his culture form the guiding principles he and his team at Nk’Mip Cellars follow. Every element of their winemaking process is infused with the traditions of their community. A member of the Okanagan Nation Alliance, the Osoyoos Indian Band (OIB) first recognized the agricultural potential of its 32,000 acres of sacred land—stretching between Osoyoos and Oliver, B.C.—in 1968. It was in that year that the band established Inkameep Vineyards and began growing grapes to sell to wineries across the region. In 2002, the OIB opened its own winery, Nk’Mip (pronounced ink-a-meep), in Osoyoos, becoming the first Indigenous-owned and operated winery in North America. Using grapes cultivated at Inkameep, it produces not only award-winning wines, but also provides jobs to community members. Hall began working at Nk’Mip in 2004. Even though he was only cleaning equipment, by the end of his first four days, he had developed a passion for the business and went on to complete a post-graduate diploma in enology and viticulture. In 2017, he was promoted to his current role as winemaker. “At 24, I was working at the winery eight hours a day,” says Hall. “I would do my school work in the off-hours and then meet up with classmates and sample wine. That was my life for two years.” Hall, who is considered by many to be the first Indigenous winemaker in North America, credits Nk’Mip’s success to three key factors: consistency, communication and culture. The core team at the winery has worked together for more than 16 years, and they collaborate closely throughout the process. This includes working with the viticulture team at Inkameep that grows and cultivates the grapes, and giving their input on the programs offered at Nk’Mip. Hall also acts as a mentor for Indigenous youth who hope to one day follow in his footsteps. Visitors to Nk’Mip can learn more about its winemaking process through The Land to Legacy Vineyard & Cellar Tour—a grape-to-glass experience where guests also learn the history of the winery. They can also experience The Perfect Union: Four Food Chiefs Wine & Food Pairing Tour, which begins with a guided tour of the winery and concludes with a wine pairing in the property’s private cellar. —Bianca Bujan

To make the dough, mix the flour and salt together in a large bowl. Then in a small bowl, blend the milk, egg and oil. Add this to the flour mixture and mix until you have a shaggy consistency. Add the water and stir until you have a soft, tacky dough. Knead about 10 times, cover with a towel and let rest for 20 minutes.

For the filling, combine the sugar and flour; and stir in the berries. Roll the dough to about a 1/8-inch thickness and cut into three-inch circles. Fill with a spoonful of the berry mixture. Fold over the dough and pinch the edges together to seal.

Tip: Savoury fillings don’t require any particular ratio. Stir grated cheese, sauerkraut and/or a bit of grated raw onion into mashed potatoes.

In pot of lightly salted water, boil perogies in batches; once they float to the top, boil for another minute, then transfer to a dish with a slotted spoon. If you like, heat a few tablespoons of butter in a heavy skillet and brown the well-drained perogies on both sides, until crisp and golden. Destination M is an investment portfolio of luxury properties that operates as a not-for-profit company utilizing a shared use model. It is not a time share. All our properties are owned by members and the use of the properties is exclusive only to members and their families. Last year, Brian Anderson, the company’s current Chairman of the Board, added CEO to his title following the retirement of General Manager John Beckel. Anderson has been a club member since 2006 and has travelled to 23 of the club’s homes. When asked what the Board’s plans are for Destination M, Anderson replied: “To continue to be Canada’s leading boutique destination club.” The club currently has access to 32 properties, most of which are club-owned. Many of our homes are located throughout western North America’s finest warm vacation locations — Hawaii, Arizona and California as well as Europe — Paris, London and St Remy in France. We are constantly searching for new and exciting properties. The vast majority of Destination M’s owned properties are serviced by WestJet!

To ensure our members can maximize the use of the investment, Destination M has a low ratio of members to properties. The club offers memberships when a new property is acquired therefore in 2018, the club introduced a waitlist, whereby potential members pay a nominal fee to join for a year. And, this frees up waitlist spots for others to join. Destination M does an annual survey of its members, which includes asking for a wish list of new locations. The waitlist membership model means the club has the capital available to purchase suitable homes. Waitlist members are invited to join and buy a share as new homes are added. Exchange rates are also a factor. A few years ago, the Canadian dollar was at parity with the US dollar, so it made sense to buy in the US. Today, other markets look more attractive. “We mostly look for sunny places, but also urban centers and mountain getaways,” says Anderson. “Our goal is to double our portfolio over the next ten years, adding one to two homes a year.” SHAREHOLDER LIQUIDITY

Last year, the club held an auction for members who wished to sell their shares. Shareholders may also sell independently. “Having these liquidity options helps with our sustainable long-term business model,” says Anderson. But many choose to stay. All M plans are essentially unlimited nights,

Anderson points out. If a property is unreserved within 30 days, then any member can use it, and it doesn’t count against their annual nightly total. “It’s better to have an owner using it than to let it sit empty,” says Anderson. FAMILY LEGACY & NOT FOR PROFIT

Unique to Destination M, is their “not for profit” structure. Other equity-based clubs have a general partner that manages the real estate funds and participates in any profits. But, the management team at Destination M is paid by the club and has no incentive interest in liquidating the fund. Annual dues covering property utilities, taxes and maintenance, plus administration overheads, are set each year. “The total is simply divided by the number of shareholders,” says Anderson. “We’re boutique with an involved shareholder base. Overall it means that club memberships can become a legacy asset for families.” With the club model, those who inherit the membership are not left to run a property. There’s an experienced club management in place to take care of the maintenance and upkeep. “To me, it’s the smartest way to own recreational property,” says Anderson.

Favourite destination and why? Grand Cayman for the snorkelling and swimming. It was just beautiful. They have one of the top 10 beaches in the world with sand that is almost the consistency of flour. What do you think it is that makes WestJet so successful? By far, it’s the people, the passion they have and the commitment to just looking further ahead. They truly just care for everybody. Share one of your favourite WestJet memories. I was asked to fly up on a flight to Fort McMurray, to rescue people who had been caught in the wildfire. WestJet put a crew together, a pilot, flight attendants and me. The pilot was an old bush pilot, and he took us around the outskirts of the fire to see the devastation. It was an amazing feeling just to be there to help.
