wo years from now, WestJet will be a digital company that happens to fly airplanes. That’s the bold vision I shared at WestJet’s very first “hackathon” recently, powered by some 120 technical, creative and design professionals from 17 bluechip technology companies including Adobe, Facebook, Amazon, Google, Twitter, Microsoft, IBM and Salesforce. The purpose of the exercise was to leverage the remarkable talent of these companies to co-create new and better ways to improve the experience for premium travellers and enhance the digital journey for all guests. WestJet has a history of innovation in many areas including guest experience. In 2016, we became the first Canadian airline to offer social media support on a 24/7 basis through Facebook and Twitter. Ours is a round-the-clock business and our guests expect and deserve a response from us no matter what time of day or night. And, last month, we became the

first Canadian airline to launch a text-based, artificial intelligence (AI) powered chatbot via Facebook Messenger. “Juliet” provides guests with instant answers in both official languages to questions about flights, destinations, baggage, deals and much more. Maybe it’s the backto-school vibe that runs through Canada at this time of year, the abundance of new shows premiering on traditional or streaming TV, or simply the first hint of excitement for the holiday season.

Thought-provoking exhibits in San Francisco and Ontario OPENS SEPT. 22 Contemporary Muslim Fashions at the de Young Museum San Francisco In the first major exhibit of its kind, the de Young Museum’s Contemporary Muslim Fashions explores the diversity and complexity of dress among Muslim women. Fashion will be on display—including custom couture—as part of a wider discussion about cultural trends in different parts of the world, including Muslimmajority Middle Eastern countries. The exhibit will also display art by contemporary artists such as Rania Matar and Shirin Neshat.
OPENS SEPT. 28 Anthropocene at the National Gallery of Canada and Art Gallery of Ontario Ottawa and Toronto Photographer Edward Burtynsky, documentarian Jennifer Baichwal and filmmaker Nicholas de Pencier reflect on the effects human activity is having on Earth in Anthropocene. Photographs, film and augmented reality installations are being shown at the National Gallery of Canada and the Art Gallery of Ontario. Even though it’s only in its first year, Vancouver’s art, music and food festival, SKOOKUM (Sept. 7 to 9), has pulled in headliners The Killers and Florence and the Machine.

In a film-worthy plot twist, the LA Film Festival has moved from summer to fall. This year the fest, which largely screens independent films, will run from Sept. 20 to 28.
A staple of Calgary’s literary scene, Wordfest (Oct. 8 to 14) brings a range of local, national and international writers to the city to wax poetic on all things books.
OPENS SEPT. 25 Bernhardt/Hamlet Broadway, New York Sarah Bernhardt was the first to portray Hamlet on film in 1900—a role she famously performed on stage the previous year. Playwright Theresa Rebeck reimagines the dramatic stage debut in Roundabout Theatre’s Bernhardt/Hamlet, with Janet McTeer in the titular role. OPENS SEPT. 26 Company West End, London This new production of the ’70s musical at the Gielgud Theatre reverses the gender of the main character. Bobby is now Bobbie, and is played by Rosalie Craig. ‘SHE WAS A FEMINIST BEFORE FEMINISM EXISTED’
nne Shirley may be one of Canada’s most beloved literary creations, but Amybeth McNulty says there’s more to the icon than just her signature red hair and freckled face. “She was a feminist before feminism even existed,” says the Irish-Canadian actress, who plays the iconic Anne of Green Gables on the CBC show Anne with an E. “She didn’t know what it meant. No one else knew what it meant,

she just knew she had these views. She is 100 per cent a feminist icon, and I love that about her.” McNulty, who dyes her naturally blonde hair red for the role, says viewers will see a slightly different Anne on Season 2 of the show, which premieres Sept. 23. The second season is currently streaming on Netflix outside of Canada. “Anne is growing up. She is definitely becoming more comfortable in her family and she is secure. She knows she's not going to be sent

away at the drop of a hat. That brings a lot more emotion as she figures out who she wants to be and what she wants to do.” The 16-year-old bested 1,800 other actors for the role of the orphaned girl adopted by Matthew and Marilla Cuthbert. “I’m just a wee girl from Donegal [Ireland],” says McNulty. “I was just here doing my own thing and, all of a sudden, I was whisked away to Canada. It’s mad.” She describes her audition as a
bit “mad” as well. “They handed me a photo of lions and an archway of flowers and said, ‘Talk about that for as long as you possibly can.’ I had to make up stories. I have no idea what came out of my blabbering mouth, but it seemed to work.” Both seasons of Anne with an E were partly filmed in Prince Edward Island, where the novel by Lucy Maud Montgomery is set. “When I originally went there to shoot the first season we couldn’t tell anyone what we were doing,” she says.

TORONTO It’s played host to a superhero car chase, stood in for a presidential funeral and has even made a few cameos as itself over the years. With a more-than-$2-billion movie and television industry—and a world-class film festival each September— Toronto is a movie-lover’s dream destination.
THAT LOOKS FAMILIAR DOWNTOWN Digitally scrub out the CN Tower from the skyline, add a little staged garbage to the sidewalks, and Toronto easily passes for New York City, says Bruce Bell, a local historian who provides tours of Toronto and is well-versed in the story of the region, including its use as a popular filming location. Suits, the New York City-set legal series starring the recently royal Meghan Markle, films in the two-storey glass lobby of the Bay Adelaide Centre, while American Psycho was partially shot among the Toronto-Dominion Centre’s modern black steel towers. Toronto City Hall (1), with its distinctive saucer-shaped central building hugged by two curving towers, appeared as an alien city in the original Star Trek series and Racoon City’s civic hall in Resident Evil: Apocalypse. Comic fans walking at night along nearby Yonge Street will recognize the visually blaring, oversized TV screens that played in the background as Batman clung to the top of the Joker’s hurtling car in Suicide Squad. Guillermo del Toro, the Oscar-winning director who lives part-time in Toronto, chose to film some of his movie The Shape of Water in the city, using downtown’s Massey Hall and The Elgin theatres, along with other sites like The Port Lands and the University of Toronto’s Scarborough campus, to create the film’s 1960s feel.

OLD TORONTO A national historic site built in 1850, King Street’s St. Lawrence Hall—with its clock-clad cupola— stepped in for the White House in various films, while the Cathedral of St. James, its stained glass depicting George V and his family, was used to recreate President John F. Kennedy’s funeral in the mini-series The Kennedys. It was in a corner banquette in the nearby King Edward Hotel restaurant, amid morality protests outside since both stars were married to other people, where Richard Burton proposed to Elizabeth Taylor for the first time in 1964. Further east, The Distillery District’s (2) cobbled streets and lanes were used in scenes from Russell Crowe’s The Cinderella Man and also depicted a concentration camp in X-Men. CASA LOMA This never-finished castle (3) was the dream of industrial tycoon Sir Henry Pellatt, who spent his $17-million fortune on his Spadina Avenue estate. The popular tourist site is now owned by the city. Mike Myers’s The Love Guru, and Oscar-winning Chicago filmed here. In its 40 years as a movie location, only 2010’s Scott Pilgrim vs. The World allowed Casa Loma to play itself. Traditionally, the castle stays open to the public during filming, but an exception was made for the superhero movie X-Men.

THE TORONTO INTERNATIONAL FILM FESTIVAL ith world-premiere film screenings, starstudded red carpets and carnival-like atmosphere along King Street West, the Toronto International Film Festival galvanizes the city for 11 days every September. The festival—this year it runs Sept. 6 to 16—has developed into one of the most important in the world, screening hundreds of films and documentaries, and, more often than not, is a barometer for future Academy Award winners.

Seeing films is only part of the fun. For a portion of the festival, a stretch of King Street West is closed to vehicles and is filled with interactive exhibits, pop-up stores and red-carpet crowds outside Roy Thomson Hall and the Princess of Wales Theatre. If you are not in Toronto during the festival, the TIFF Bell Lightbox is a year-round film centre with five theatres screening independent films. It is also a learning facility, with filmmaking classes and an extensive research library that includes a large collection of movie-related material.
INTERMISSION You may think they’re off-limits during the festival, but many hotel bars are open to the public. Stop by The Ritz-Carlton’s Ritz Bar for a fest-inspired cocktail and grab a seat on the patio overlooking the hotel entrance to see the stars climbing into their black sedans on their way to a premiere—or simply walking across the street to Roy Thomson Hall. “FROM THE MOMENT YOU ARRIVE, YOU SHOULD HAVE A FEELING OF WONDER”
A good bed is the key to a great room, says Kit Kemp co-owner of Firmdale Hotels it Kemp was running a graphic design company in London’s West End in the 1980s when she met her future husband, Tim. He wanted to upgrade a string of student hotels he owned, and Kemp decided to take on the task. Eight restaurants and bars, 10 hotels, and two design books later, Kemp is a highly lauded interior designer with multiple collaborations under her belt—including Wedgwood, Andrew Martin and Christopher Farr Cloth. With properties in some of London and New York’s trendiest neighbourhoods, Firmdale Hotels has earned a reputation for creating upscale, beautifully designed boutique hotels. What makes for a well-designed hotel? The same things that make a beautiful home. You have to appeal to all the senses, not just one or two. There has to be an element of calm and comfort, and balance. What goes into creating that first impression? There should be something that [grabs] your imagination—in the lobby of the Whitby Hotel in New York, we have a grandfather clock by Maarten Baas, and the clock face displays a figure who draws on the time, minute by minute. From the moment you arrive, you should have a feeling of wonder and a sense of adventure. What is your first thought when starting work on a new property? Help! When it’s a large project, it’s quite frightening, but I start by using something I love—a fabric or a piece of art. From start to finish, how long does it take? Ham Yard [in London’s Soho] took approximately six years from design concept and architect planning to building, landscaping and opening. What is one of the challenges of hotel design? Rooms below ground level—basement areas where there’s no natural light. Good ceiling heights help, and a good imagination.

What is most important when it comes to designing a hotel room? The bed. It has to be both high and imposing in the hotel room and amazingly comfortable with a glorious headboard. How do you keep hotel rooms looking good? We’re always working on at least 12 different rooms at a time in different hotels, and we change them completely approximately every three years. I recently designed a wallpaper for Andrew Martin
and immediately ordered 400 rolls for the hallways at the Covent Garden Hotel. What is your approach to a hotel’s common areas and outdoor spaces? At Ham Yard, the first thing we did was buy five 30-foot-tall oak trees. So, when we opened the hotel, we had a beautiful green area with mature trees. If you’ve got floor-to-ceiling windows overlooking fully grown oak trees, you’ve got a lot on your side before you even hang up a curtain.

From its days as a desert outpost, through its years as a neon-infused land of possibilities, vintage Vegas can still be experienced.

La ville a toujours eu comme conviction profonde qu’une personne peut changer la donne injuste qu’elle a reçue. « Les gens viennent souvent à Las Vegas pour se réinventer », affirme Geoff Schumacher, directeur principal du contenu du Mob Museum. Vegas fait ses débuts comme point d’eau où des groupes d’Autochtones de la région, des Espagnols, des mormons et, plus tard, des mineurs, s’arrêtent pour les sources naturelles. Un sentiment de permanence s’installe peu à peu avec l’arrivée du San Pedro, Los Angeles & Salt Lake Railroad en 1905, et la constitution de la ville de Las Vegas en 1911. n draw poker—a variation of the strategy game—you can replace any or all of the cards the dealer gives you. It’s no wonder the game is popular in Las Vegas. The city’s philosophy has always been that a person can change the unfair hand they’ve been dealt. “People often came to Las Vegas to reinvent themselves,” says Geoff Schumacher, senior director of content at the city’s Mob Museum. Vegas’ story began as a watering hole, where local Indigenous groups, the Spanish, Mormons and later miners would stop to use its natural springs. A sense of permanence developed with the arrival of the San Pedro, Los Angeles and Salt Lake Railroad in 1905, and Vegas’ incorporation as a city in 1911. The early city was built on a system of blocks centred around the railway station at the top of Fremont Street. Block 17—location of The Mob Museum—was set aside for African Americans, while Block 16— now a parking lot—was the red light district. “It was a tough little town,” says Schumacher. “Miners were out in the desert for weeks on end, so when they came to town they wanted to have some fun. The city was pretty tolerant.”
RELIGIOUS ROOTS In the 1850s, the Mormons arrived, selecting the area—halfway between Los Angeles and Salt Lake City—for a fort. The soberlooking, adobe-walled Old Las Vegas Mormon Fort is now a historic state park.
THE GOLDEN GATE
F
or many of the settlers during Vegas’ early days, the journey to a better life started with a short walk across the dusty street from the train station for a hotel room and a drink. Among the first buildings was the twostorey Hotel Nevada on Fremont Street, which opened in 1906. The original building is now part of the Golden Gate Hotel & Casino, run by the same group that owns the nearby The D Las Vegas, and a display case in the lobby chronicles the hotel’s history. It was home to the city’s first telephone; its phone number was “1.” The owner’s home had the second phone installed and its number was “2.” The Gate saw a number of historic moments. In 1959, the iconic 50-cent shrimp cocktail was introduced to Vegas by the casino, and members of the Rat Pack—Sammy Davis Jr., Frank Sinatra and Dean Martin—would stop by for a drink before catching the train out of town.

riving along Route 95 southeast of Las Vegas, a power line comes into view. It’s joined by another. Then another. And another. A snaking mass of cable stretches across the dusty ochre hills above and valleys below the highway. They converge at Hoover Dam, a wonder of concrete construction that rose from Black Canyon between 1931 and 1936. The dam’s construction coincided with the legalization of gambling in Nevada in 1931 and the end of prohibition two years later. During the Great Depression, an estimated 42,000 work-starved men descended on the site for one of 5,000 jobs. The workers were housed in nearby Boulder City, a gambling- and alcoholfree town they eagerly escaped from every payday for Vegas’ neon lights—the first of which appeared on Fremont in 1928. The power generated by the dam allowed Vegas to really glow. Businesses installed neon signs to attract the dam workers, the estimated 100,000 tourists who came to see its construction, and later visitors during neon’s brightest decades: the ’40s to the ’60s.

ore than 200 signs—the majority with their glass tubes, once filled with inert gasses, now broken or missing—rest in the Neon Museum’s Boneyard on Las Vegas Boulevard. Iconic signs from Binion’s Horseshoe, the Stardust and Caesars Palace sit next to those for pool halls, dry cleaners and wedding chapels. “The Moulin Rouge was the first integrated casino. It was short-lived, but helped to desegregate The Strip,” says one of the Neon Museum’s interpreters, referencing the historic sign. Located in a small yard across the street from the museum, Brilliant is an immersive outdoor show that allows spectators to see some of Vegas’ iconic signs come back to life—without the neon. Choreographed lights and videos are projected onto the old signs while classic songs play.

HOWARD HUGHES Today, the Wynn Las Vegas and Venetian Las Vegas stand on the site of the Desert Inn and the Sands, with the only real remnant of Howard Hughes' time in the city being an old house he briefly lived in during the early 1950s. or organized crime, which saw bootlegging profits dry up when prohibition was repealed, gambling became an even more lucrative racket. Gambling had always been part of the mob’s portfolio, but with a crackdown on illegal gambling, they doubled down on Vegas where it was legal. Vegas turned into an “Open City.” “Any mob organization could come into town and invest here,” says The Mob Museum’s Schumacher. “That wasn’t the case in New York City where there were territorial boundaries. In Vegas, there was enough for everyone.” That mostly conflict-free atmosphere meant organized crime was able to invest in the casinos that would eventually dominate Las Vegas Boulevard—known as The Strip. By the 1950s, a number of Vegas hotels were mob-owned or had ties to organized crime, including Stardust and Tropicana. It was only with a change in casino ownership rules in the ’60s, increased federal scrutiny and the arrival of eccentric billionaire Howard Hughes—who bought properties like the Desert Inn, Sands Hotel and Casino and Silver Slipper—that the mob era began to decline.
THE EL CORTEZ HOTEL
O
ne year before he opened the iconic Flamingo Hotel & Casino in 1946, mobster Benjamin “Bugsy” Siegel was part owner of the El Cortez. When Jackie Gaughan bought the hotel and casino in 1963, he acquired more than just the gaming equipment. He also got a mysterious lodger at the Cortez. According to myth, Fat Irish Green was an associate of Siegel’s who promptly returned a large amount of money he was holding to the mob after his boss was murdered. To thank him, they let him stay rent-free at the Cortez. He lived there until his death in 1977. Gaughan, who died in 2014, was a legend in Vegas. He handed out “fun books”—discount coupons—to casino guests and was known for helping out his employees. “He covered funerals and helped with the purchase of homes,” says John Dorweiler, manager of the El Cortez. “Some urns are still in an office downstairs because the employees didn’t have families.”

n 1951, atomic bomb testing began at the Nevada Proving Grounds northwest of the city. “Las Vegas was only about 25,000 to 30,000 people. It was a very small community, but, overall, they were supportive of what was going on,” says Michael Hall, director of the National Atomic Testing Museum on E. Flamingo Road. “People were immensely proud.” Hall says the bomb symbolized everything modern and sexy. There were Miss Atomic beauty pageants, the cover of the 1953 Las Vegas High School yearbook features a mushroom cloud, and atomic-themed cocktails were served during early morning parties, when customers would flock to the roofs of casinos and bars to watch the explosions more than 100 kilometres away. Sometimes, the blasts blew out windows downtown, but no one complained. It was the patriotic days of the Cold War, says Hall. “People think gambling built Vegas, but that’s not true,” says Hall, who adds 200,000 jobs were created during the program’s first 20 years, with the government creating housing and schools for the workers and their families.

Popular through the early 1900s, a fizz is a shaken drink that mixes alcohol with citrus, sweetener and sparkling water. When asked to create a signature drink for the T-Mobile Arena—home to the Vegas Golden Knights—mixologist Tony Abou-Ganim wanted to reflect the region’s history and culture. The Atomic Fizz features vodka, Aperol, fresh lemon, prickly pear purée (which gives it the magenta colour) and chilled sparkling water.
Populaire au début des années 1900, un fizz est un cocktail qui mélange alcool, agrumes, édulcorant et eau pétillante. eiger counters, used to ensure the food and drink—and customers—were not radioactive, are still on display on the shelves behind the bar at Atomic Liquors on Fremont Street. The oldest free-standing bar in Vegas, Atomic opened in 1952 and was a popular spot to watch the atomic tests. The bar’s exterior hasn’t changed since it opened, nor has part of the wooden bar or—as the staff jokes— the popcorn ceiling. Only one of the bar stools has a back support and this is where Barbra Streisand would sit and chat with the owner. Another legendary customer was journalist Hunter S. Thompson. The Hunter S. Mash is Atomic Liquor’s best-selling cocktail and was created after the owners discovered a cache of Old Crow whisky—Thompson’s favourite brand— from 1976 in the bar’s back room.

CH I NAT OWN As Canada’s oldest Chinatown (North America’s second oldest after San Francisco’s), this area grew rapidly during the mid-1800s as Victoria was an entry point for Asian immigration into the province. Fan Tan Alley (pictured), the heart of Chinatown, is packed with shops and restaurants. Legend has it the alley is also one of the city’s most haunted places.

Victoria has two legit castles; the other, Craigdarroch, was built by coal baron Robert Dunsmuir in 1890. Hatley was built by Robert’s son, James, in 1910.

As Amazon drew headlines earlier this year with its hunt for a second North American headquarters (HQ2), we decided to take a look at the burgeoning hi-tech scenes in a handful of digitally savvy destinations.

he 6ix (thanks, Drake), has evolved into a socalled “Silicon Valley of the North,” with more than 90,000 people employed in IT, which contributes roughly $8 billion in annual wages. Experience the high-tech vibe at annual conferences such as AI Toronto, Canadian Telecom Summit, VRTO, Elevate Toronto and Collision—which launches in Canada in 2019 and has been dubbed North America’s fastestgrowing tech conference. Toronto is home to a number of virtual reality arcades, such as
VR Connect, where you can play an immersive game of Cowbots and Aliens or minigolf. The Toronto-Waterloo Region Corridor, a 112-kilometre stretch linking two of the country’s biggest innovation centres, is among the top 20 technology clusters in the world, with no fewer than 5,200 start-ups. The Waterloo Region is ranked third in Canada for technology, and is heaving with tech talent, both homegrown and those drawn to the area by its world-class universities, research institutes and collaborative culture.

Quebec’s largest city is a world leader in the growing wearable technology industry. Hexoskin and OMsignal, which both make clothing that measure the wearers’ biometric signals, are based here. Earlier this year, Startup Fashion Week launched in Montreal. This three-day fashion event includes keynote speakers, networking events, conferences and a runway show featuring functional-yet-aesthetic tech-forward clothing and accessories. Drawn to the event are wearable tech start-ups and emerging and internationally renowned tech fashion designers.
This West Coast city, which tossed its toque into the Amazon HQ2 ring but didn’t make the shortlist, is home to video game developers and publishers like Capcom Vancouver, The Coalition—a subsidiary of Microsoft Studios— and Burnaby-based EA Sports (makers of FIFA and NHL games). One of the world’s mostcreative cities, it’s no wonder Vancouver will host the VR/AR Global Summit later this month (Sept. 21 to 22). The event will bring together the brightest minds in virtual reality, augmented reality and mixedreality technologies.

hile images of a day spent cycling, topped off with a cold beer on a rooftop patio, might be the first thing to come to mind when thinking of Denver, it’s actually one of the top hubs for entrepreneurs and start-ups in the U.S. Last year, the Mile High City came in at No. 8 on SmartAsset’s list of best cities for women in tech. Multinational electronics corporation Panasonic chose Denver for its CityNOW “smart city” project set in a 400-acre parcel of empty land near Denver International Airport. CityNOW is expected to be realized by 2026, and, if successful, will be used as a blueprint for future high-tech smart cities fitted out with free and fast Wi-Fi, autonomous vehicles, sensor-laden highways and a solar-powered micro-grid—an electrical source hooked up to a centralized national grid, but with fully independent capabilities.

MUST-TRY RESTAURANTS FRESHLY CAUGHT FISH AND HOMEMADE INTERNATIONAL FARE BULLOCKS BISTRO Celebrating 19 years in a heritage building in Old Town, one of the city’s most iconic restaurants welcomed new owners two years ago who have kept the wild fish menu and sassy signs such as “No snivelling” and “Nobody’s perfect and I’m nobody.” The fish is served deep-fried, pan-fried or grilled—think seasonal whitefish, lake trout, pickerel, Arctic char and Great Slave cod (burbot). Splurge on fish and hand-cut fries with homemade tartar sauce and salad splashed with feta and dill or herb and garlic dressings. A seat at the counter delivers views of the open kitchen where stellar house breads and cinnamon buns are made from scratch. Bullocks draws lineups, so reservations are recommended if you want to get a table. Don’t leave without signing the wall, if you can find an empty spot.

ZEHABESHA TRADITIONAL ETHIOPIAN FOOD Dinku Tadesse and his wife, Eline Baye, have run what may be Canada’s most northern Ethiopian restaurant for almost four years. Fresh injera (a crepe-like, sourdough flatbread) from teff and barley flour is made every 12 hours so regulars and newbies can scoop up beef, chicken and vegetable stews by hand. Injera is known as the “edible tablecloth,” which makes sense as Ethiopian meals are meant for sharing. Zehabesha shines with its salads and yetsom beyayantu—a vegan platter that showcases green beans, lentils and spinach. Don’t count on a sweet dessert; instead, opt for the traditional combination of Ethiopian coffee, served in espresso-sized cups and popcorn.

The Sidecar ontrary to popular belief, the Sidecar cocktail is probably not named after the side-seat of a motorcycle. And, in all likelihood, it wasn’t even invented in Paris. “That’s the problem with many classic cocktails,” says Lyon-based drink historian Fernando Castellon. “A bartender prefers to give a good story, even if it’s wrong.” Geographically, the assumption couldn’t have been too far off the map. The Sidecar does features two French spirits, after all: cognac, which is high-end brandy from the Cognac region, as well as Cointreau, a liqueur flavoured from sweet and bitter orange peels. And, the third ingredient—lemons—do grow in the country. Castellon’s own research on the Sidecar reveals it was indeed first created in France in the early 1920s—but likely in Cannes, not Paris. He hypothesizes it was in the sunny south of France where vacationing Brits fell in love with the libation’s strong and sweet-tart

charms, and brought the cocktail’s magic formula back to London, where it first appeared in print in 1922. The original recipe, published in both Robert Vermeire’s Cocktails: How to Mix Them, and Harry MacElhone’s Harry’s A B C of Mixing Cocktails, calls for one part each of cognac (brandy), Cointreau and lemon juice. This makes for an adequate, albeit tart, tipple, with the lemon somewhat overpowering the star spirit: cognac. Modern bartenders, such as those at Bar Hemingway in the Ritz Paris, play with the ratios by pouring in more cognac and going easy on the lemon juice. It works, though Ritz head bartender Colin Field says the proportion is a guideline only; any good bartender will adapt and personalize each Sidecar they make. With the drink still a popular choice, this ability to adapt may be the key to its longevity as it continues to challenge bartenders to create original offerings using cognac as the base. —Lisa Kadane

In a blender, combine the coconut milk, five sprigs of cilantro, the zest of one lime, the juice of half a lime, the serrano pepper, honey, salt and pepper. Blend until smooth and transfer to a container or bowl and refrigerate the mixture until it is well-chilled.

In a medium bowl, toss the seafood with the juice of the remaining limes. Add a pinch of salt and pepper. Let sit for 20 to 30 minutes, stirring occasionally, until the fish is firmer and opaque. Chop and add the remaining cilantro, the avocado and grilled pineapple. Crack the coconut, drain the water and finely chop the tender meat. Add about half to the ceviche.

Add enough of the coconut milk mixture to give it the consistency you like. Serve garnished with corn nuts and cilantro, along with tortilla chips for scooping. Tip: Prep before and put it together when your guests sit down. That way you don’t have to work during the party, says Kiewek.

alifornia native Flynn McGarry—lanky and soft-spoken with a mess of curly strawberry-blonde hair—became so obsessed with cooking when he was 12 years old, he convinced his parents to install a makeshift kitchen inside his bedroom. He started hosting elaborate dinners for family and friends—using recipes inspired by The French Laundry and Alinea cookbooks—and, later, launched a supper club dubbed Eureka from inside his San Fernando Valley home. By 16, he had taken his dinners on the road, staging them at some of the most prestigious kitchens around the world (Ray’s in Los Angeles, Chicago’s Alinea, Eleven Madison Park in Manhattan), and even cooked for the Obamas. Earlier this year, McGarry opened his first brick-and-mortar restaurant, Gem, in New York City’s Lower East Side. Now, just a few months shy of his 20th birthday, he is shaking off his teenage nicknames—wunderkind, prodigy, kitchen whiz—for the far simpler title of chef. Divided into separate rooms, Gem is accented by vintage rugs, mustard-yellow banquettes and mid-century modern furniture, creating a warm, apartment-like atmosphere for diners. “It’s like a house, [rather than] a restaurant. The kitchen is in the din-

People are coming to see me and sample my food, so it’s a personal [dining experience] in that way,” says McGarry, perched on a wooden chair inside his restaurant. “Especially in New York, where you have such tiny apartments, everyone is looking for a sense of home and that’s what we’re tapping into.” By day, the Living Room space is abuzz with locals enjoying house-
made pastries and custom coffees made with beans from small-batch roasters; at night, the 18-person Dining Room opens for a prix-fixe reservations-only tasting menu, with seatings at 6 and 9 p.m. The US$155 multi-course meal—with an optional $100 beverage pairing— features between 12 to 15 dishes and focuses on seasonal ingredients sourced from a farmers’ market.
Creating his signature aged-beet dish, which, at first glance, could easily be mistaken for slices of steak, requires McGarry to use a parade of techniques. The beets are first smoked and braised in their own juices, then dehydrated and roasted, and finally grilled. To serve, they are glazed in a rich brown butter-and-beet sauce and placed atop a bed of creamed beet greens. “The food has become simpler in a lot of ways, with a focus on making delicious food versus impressive food,” he explains. “I don’t want the menu to feel too precise. We still want to be a little rough around the edges.” While his restaurant is still a finedining affair—McGarry has a pair of tweezers in his apron that he uses to place edible flowers onto smoky spring peas and set trout roe atop homemade tofu when he is plating dishes—there are no white tablecloths and classic Michael Jackson songs play in the background while bottles of wine sit on a vintage Danish bar cart. After the savoury main courses, diners move into the more intimate café for dessert, a variety of light palate-cleansers such as alphonso mango sorbet and elderflowerinfused strawberries. “Cooking is my creative outlet, that’s why I love it. There’s always something new to learn or explore,” says McGarry. —Patty Lee

To stay ahead of the curve, we created the WestJet Social Care team to monitor our social media feeds and provide support to our guests. Our Social Care Specialists are experts on all things WestJet and are trained to manage conversations with guests around the world on multiple channels. As online behaviour continues to change, we’re working to provide quick and easy access to information as well as efficient digital solutions for our guests across all of our platforms.

JULIET, YOUR DIGITAL TRAVEL ASSISTANT This year, WestJet launched our first conversational artificial intelligence (AI) chatbot, boosting our Social Care team’s round-the-clock presence and capabilities. Think of Juliet as your personal digital travel assistant. Through Juliet, our guests are able to converse with us on Facebook Messenger, on a variety of travelrelated topics. Juliet is designed to accumulate knowledge based on guest conversations—the more interactions she has, the more she learns—so she is continually learning. TRAVEL INSPIRATION Through natural conversation, Juliet is able to provide travel inspiration and recommend destinations based on your interests and vacation style. Juliet will help you explore destinations through various media, and when you’re ready to book, simply tap the “Book Now” button to start the booking process. INSTANT SUPPORT Because Juliet never sleeps she is always ready to provide instant support and quick answers on many topics, ranging from in-flight entertainment to flight status, to travelling with pets. Ask Juliet a question—just as you would a person on the phone or via social media—and you’ll receive an immediate response.
