THE HUMAN TOUCH ou are settled in your seat, you have opened this month’s WestJet Magazine and you are ready for another great flight on Canada’s favourite airline. Whether it’s your first or two-hundred-andfirst flight, you want to know WestJet has your back. If you are travelling for a family reunion, a weekend with friends or a vital business meeting, you want reassurance your journey is every bit as important to us as it is to you. Security lines and boarding gates can be confusing, and at times, even bewildering. Navigating a large international airport such as Toronto Pearson or connecting on a tight itinerary through Calgary, can add stress and anxiety to your journey. While our automated kiosks and mobile

app can help get you on your way quickly, we believe in the importance of the human touch. And that’s why we treat people like family or friends who we are looking forward to seeing again soon. Like any business, we will sometimes slip up. Weather disruptions, technical issues and aircraft changes are a fact of life in the airline industry. But we genuinely believe how we respond and recover your loyalty and trust is what sets us apart. In our mind, the spirit of Canada is all about demonstrating the humanity and care that makes this country such a great place to live and visit. Enjoy your time with my fellow WestJetters on your journey today. We certainly appreciate the chance to add a personal touch to your travel plans. Onward and upward.

Ironically, our most GROUNDBREAKING innovations are OVER-THE-WATER.

Exceeding Expectations. It’s How We Earn Our Stars Every Day. People come to the Caribbean for its mesmerizing, crystalline waters, so Sandals® created the most innovative designs and cutting-edge amenities over the water—something that’s earned us quite a few stars. Our Over-the-Water Villas and Bungalows were the first of their kind in the Caribbean, offering “sea-through” glass floors and expansive decks with over-the-water hammocks and infinity-edge plunge pools. We put pools in the sky and living rooms in pools. Our 5-Star Global Gourmet™ cuisine is even more sumptuous when enjoyed in a restaurant directly over the sea. feature (page 38) for three perfect days in three very different regions of Hawaii. I also learned an important lesson on that trip. Vacation, and leisure time in general, is best spent doing the things you actually want to do, not the things you think you should do. That lesson shows up in our Winter Two Ways feature (page 31) as we explore how to embrace the coldest season of the year. No matter where your travels take you this season, remember to leave time for the things that truly bring you joy.

WHAT I LOVED

y first trip to Hawaii was a few years ago. I went to Oahu and had big plans of driving around the entire island, exploring every inch of it and seeking out the best local spots. I also wanted to take sunrise yoga classes and learn to surf. Essentially, I planned to live what I thought was my best Hawaiian life. But that’s not how the trip went. I was instantly enamoured with Honolulu, so I mostly stuck to the city. I wasn’t awake for one sunrise and I didn't learn how to surf. Instead, I spent my mornings “exploring” (read: shopping), afternoons lazing around the hotel’s pool drinking Campari and sodas, and evenings indulging in leisurely dinners at some of the city’s most popular spots. Not exactly the dreamy, beachy vibe I had in mind when planning the trip. But it was a dream for me. I had just gone through a big life change and I was feeling burnt out. I needed to hit reset, and this trip allowed me to do just that. And that’s the beauty of Hawaii— the cities, towns and islands are so diverse, you really can choose your own adventure and draft your version of paradise. To get you inspired, we created itineraries in our Paradise 101

Collectively called Los Cabos, the area has a reputation for lazy beach days and active nights. DAY 3

Morning Fuel up on savoury chilaquiles (breakfast nachos) at The Office on the Beach, located on Médano Bay in downtown Cabo San Lucas, before exploring the trails outside of town on a mountain bike tour with Cabo Adventures. Pedal past prickly plants on a ride that takes you from the Baja’s desert outback (shown) to the Pacific Ocean. Afternoon Rent a stand-up paddleboard from Cabo SUP, located at the Bahia Hotel & Beach House, and head out to Lover’s Beach and the adjacent El Arco. This much-photographed rock arch at Land’s End is where the Pacific Ocean and Sea of Cortez meet. Evening Start your night with craft brews and a mesquite-fired beer pizza (the dough is made with beer and spent barley malt) on the patio of the Baja Brewing Company, located along the Cabo Marina. Wander next door to Cabo Wabo Cantina, musician Sammy Hagar’s iconic nightclub, where live music is performed every night.

DAY 2 Morning After a strong dark roast at The Cabo Coffee Company, hit the road to Todos Santos, a charming mission town an hour’s drive north of Cabo San Lucas. Saddle up with Todos Santos Eco Adventures for a 90-minute horseback ride that showcases the region’s ecological diversity. You’ll travel through a lush oasis, alongside the Pacific and up into the surrounding desert. Midday Eat lunch at La Casita Tapas + Wine Bar, a farm-to-table restaurant that serves fresh fish and local,

organic produce. After, take time to browse the town’s galleries and boutiques for locally made souvenirs to bring home. Late afternoon Drive 20 minutes toward Cabo and stop at Los Cerritos Beach, which boasts the best surf break in the area. The pros at Mario Surf School will have you standing in no time— for a few seconds, anyway. Post-surf, don’t miss the margaritas and tacos served with the catch of the day at Barracuda Cantina, just steps from the sand.

Morning Take your activity level down a notch by indulging in a Mexican Herbal Ritual body treatment at the YHI Spa at the Paradisus Los Cabos resort. This relaxing experience includes exfoliation and an aromatherapy massage to rejuvenate sore muscles. Afternoon Alternate between lounging in one of the resort’s poolside cabanas and body surfing in the waters of Tequila Cove Beach, one of Los Cabos’ swimmable beaches. Be sure to try the beach bar’s Ojo Rojos, beer jazzed up with Clamato, lime and spices. Evening Located at the Chileno Bay Resort, COMAL is one of Los Cabos’ best restaurants, with Chef Yvan Mucharraz preparing regional ingredients in innovative ways. Opt for the sea bass ceviche or blackened tuna and one of bartender Osvaldo Vasquez’s signature cocktails. AIRPORTS THAT MEAN BUSINESS If you’re travelling for business, airport conveniences can have a big impact on your journey. From lounge access to VIP services, it’s the small—and sometimes big—things that can make your trip memorable. Here are five airports you need to experience.

22

YVR

DEN

Denver International Airport Had a rough work week or a tough meeting? The Denver International Airport offers a number of services designed to help you relax and get your mind off work. Once you arrive, you can spend time with a member of the canine airport therapy squad, or participate in one of the events that take place on the plaza between Jeppesen Terminal and the Westin Hotel, such as weekly workouts, performances and ice skating during the winter.

NOVEMBER 2019 | WESTJETMAGAZINE.COM

DUB

Dublin Airport Those looking for the ultimate experience should try the Emerald VIP Services at the Dublin Airport. Prices start at ¤200, for services that include being met at the aircraft, fast-tracked through security and assisted at baggage claim before being driven by a chauffeur to your destination. If you choose to use this service on your departure, you can be picked up from your office or hotel and escorted from check-in to your gate.

ATL

Hartsfield–Jackson Atlanta International Airport With more than 100 million visitors a year, Hartsfield– Jackson Atlanta International Airport is the busiest in the world, yet more than 80 per cent of arrivals and departures are on time, which is ideal for business travellers. Within the airport, you’ll find a full-service bank, 13 lounges and free Wi-Fi. If you need a vehicle for your stay, there are 13 agencies available at the rental car centre, which is open 24 hours a day, seven days a week.

Vancouver International Airport Vancouver International Airport’s BorderXpress uses the tagline “built by an airport, for airports,” and the service doesn’t disappoint. International arrivals, including U.S. travellers, can use a BorderXpress kiosk before speaking to a Canada Border Services Agency officer, helping decrease their time in customs. For those departing with a few hours to spare, consider making a trip to the McArthurGlen Designer Outlet Vancouver, which is just two stops away from the airport via the SkyTrain. —Barry Choi

YYZ

Toronto Pearson International Airport Canada’s busiest airport is very business traveller friendly. Both terminals have lounges in the domestic, international and U.S. transborder departure areas, so you’ll always have access to food, drinks, comfortable seating and, in some cases, even a shower. Getting to your meeting downtown will be easy since there’s direct access via the UP Express train to Union Station. If you’re flying out of YYZ and tight on time, take advantage of the valet parking, which can even accommodate electric vehicles.

GUY FAWKES DAY

THE TOWER OF LONDON Guy Fawkes was a Roman Catholic rebel who took part in a conspiracy to blow up the Houses of Parliament and overthrow the protestant monarch, King James I, on Nov. 5, 1605. On The Yeoman Warder guided tour, you’ll learn more about Fawkes in the very place he was tortured and executed.

LEWES Travel to Lewes, south of London near the coastal town of Brighton, to attend the country’s largest bonfire celebration. Here, they not only burn an effigy of Guy Fawkes, they also burn effigies of controversial, modern-day figures, including British and world politicians and celebrities.

ALEXANDRA PALACE While you’ll see and hear families exploding fireworks above backyards across England around the first week of November, there are also plenty of public events. For something really special, head to “Ally Pally,” as some locals refer to it, to experience one of the biggest fireworks displays in London.

THE LANTERN The original Houses of Parliament cellar was destroyed in an 1834 fire, but visitors can still see a genuine artifact from the period. The Ashmolean Museum of Art and Archaeology in Oxford houses Fawkes’ original lantern, which he was holding when he was captured. —Fiona Tapp

“Remember, remember, the fifth of November.” Each year, families across England gather to set off fireworks, build bonfires and toss an effigy of Guy Fawkes into the flames. It might sound ghoulish, but this 400-year-old tradition is a firm favourite among young and old.

Winter is a polarizing season—some people want nothing more than to sip hot chocolate beside the warmth of a fire on a snowy day, while others want to lounge on a sun-soaked beach, just listening to the sound of waves. The English language may lack the proper words to fully describe these sensations, but our Scandinavian and Caribbean friends have the perfect terms—hygge and liming. Here, we share the meaning behind these words and explore how and where to experience them.

WESTJET.COM | NOVEMBER 2019

were inches above our heads. It seemed like a secret tunnel. We settled into the lodge’s leather armchairs beside a roaring fire, playing game after game—Risk, Monopoly and Careers—and connected with our son by phone to reassure him we would be there the following day. And, we got that feeling. That feeling of hygge, without even knowing such a term existed. Winter travel has its extra challenges, especially in Canada. But most Canadians I know relish the idea of snowstorms, snuggled up with family or friends, sharing stories, repeating well-worn jokes and eating comfort food. We made it safely to our destination the next day and spent a wonderful week visiting our son. But the kids still talk about that night at Emerald Lake Lodge, and the luck we had in finding this cozy and welcoming place. You can find hygge anywhere; you’ll know it when you feel it. —KB

y family found hygge far from home on a trip to Western Canada. It didn’t seem a likely set-up for a contented space as we drove toward our destination. “…And it looks as though the highway is blocked for at least 10 kilometres,” the voice on the radio warned. I looked around the car at my husband and three kids (ages 12, 15 and 22) and sighed. Having arrived at the Calgary airport a few hours earlier, we were on our way to Panorama Mountain Resort in B.C. to visit our 20-year-old son, who was working there. We were excited to get our family together after six months apart. The snowfall had intensified as we drove into the Rocky Mountains from Alberta into B.C., and the road ahead had just been closed. We simply weren’t going to make it. Saddened by our reunion delay, we made hasty plans to stay at Emerald Lake Lodge, not far from where we were waylaid. Our reward was a main lodge full of board games and cabininspired rooms filled with homey decor. As we led our kids down the path to the main building, the snowbanks on either side

WINTER E VA D E R S LIMING (L'm-iNG) The art of relaxing with good company, delicious food and cold drinks without concern for the passage of time. Structure is frowned upon, but long stories with little point beyond entertainment are encouraged.

he fact that I’m trying to figure out how to lime is part of the problem. It should be effortless—as natural as tying your shoelaces or riding a bike. I’m struggling because it requires me to embrace an idea as foreign to many Canadians as cricket matches or all-night fêtes—doing nothing. Not aimlessly checking social media, not settling in with a good book and definitely not adhering to a vacation itinerary. The term may have originated with British soldiers, but it was the islands of Trinidad and Tobago that made it famous. It has spread across the Caribbean, and even here, at The Lodge at Jaguar

Reef in Belize, I see evidence of masters. My family’s two-bedroom suite faces the pool and, shortly after our arrival, we discover a few families with lilting Caribbean accents circling around a palapa. Slowly, effortlessly, as their children wade in three feet of water nearby, they begin the process. First, two men sit in the Muskoka chairs underneath the shaded palapa. Two more join soon after, carrying cold beers and a large bottle of white rum. Their body language says as much as their rising voices. Stories are being exchanged. There are no cards or dominos in sight, but soon there is music. Jamaican reggae is making

its way toward the group thanks to a mini-speaker carried by one of three women who join them. A pool boy appears carrying extra chairs. For the next three hours, the scene varies little. Snippets of conversation and loud laughter fly through the air toward my patio. Shortly after sunset, they wrap up children who need to be bathed and fed something other than plantain chips and wander home. I watch a similar scene in town. A local hangout is peppered with men and women who order drinks in their native creole. “Buy anyone a rum and you’ll get a story,” my cab driver says when I ask if travellers are welcome.

My own attempts at liming don’t go as smoothly, as my tendencies take more than a few hours to fade. My family is making progress, though. Just yesterday, we gathered on a giant mesh daybed stretched out over the sea. This is it, I thought, as I leaned back and began to regale them with random thoughts. We’ve got the relaxation down, it seems, but I’ll need a few more days of paradise to perfect the practice. —HGD

A 25-minute drive northeast of Vernon brings outdoor enthusiasts to SilverStar Mountain Resort, where a cheery, Victorian-style village greets guests. B.C.’s third largest ski area is known for its all-natural snowfall that covers wide cruisers, gentle glades and bumped-up black diamond runs on the backside. Woven through the village is a separate network of multi-use trails for fat bikes, snowshoes and skinny skis. In fact, SilverStar’s 55 kilometres of groomed and track-set trails connect with neighbouring Sovereign Lake Nordic Centre and its

52

50 km of cross-country paths, to make the combined network B.C.’s largest trail system for Nordic skiers. After working up a thirst, wine tour along the Scenic Sip Trail and sample everything from pinot auxerrois to merlot. There are eight wineries in Lake Country, south of Vernon, open in winter (check websites for hours). Or, sign up for Vernon’s new Okanagan Foodie Tour, a three-hour walking tour that passes painted murals downtown and visits businesses with artisan-crafted foods, as well as three restaurants that feature local, seasonal cuisine. The region’s bounty is also on display every week at the Vernon Indoor Farmer’s Market at Kal Tire Place. Shop for apples, root vegetables and farm fresh eggs all winter.

For outdoor adventurers, B.C.’s Powder Highway, a circular route through the Kootenay Rockies that includes eight alpine ski resorts, is a must-do. Nestled in the Columbia Mountains just a two-hour drive from Kelowna, Revelstoke Mountain Resort earns its place as a Powder Highway powerhouse. Boasting the continent’s longest vertical drop and terrain that encompasses expert chutes and alpine bowls, Canada’s newest ski resort is also one of its gnarliest. It receives 10.5 metres of snow annually and even holds the Canadian record for snowfall in a single season (24 metres!). But newbies shouldn’t let Revelstoke’s reputation for steep and deep scare them away. Beginner and intermediate skiers can now access easy runs mid-mountain thanks to the Stellar Chair, a new fixedgrip quad. The new chairlift opens up four green runs and two blue runs high up, to help learners progress from the base to the summit. Rounding out the Revelstoke experience is a refined village base with ski-in ski-out accommodations at The Sutton Place Hotel, which features full-service condo units and upscale amenities including a spa. Dial down the altitude a notch at your next stop on the Powder Highway: Kicking Horse Mountain Resort. Close to Golden in the Purcell Mountains, Kicking Horse soars up 1,359 metres and is spread over 3,500 acres of bowls and steeps routinely covered in fluffy powder snow.

It’s not unusual for 11 metres of light “blower” snow to fall each season, blanketing the five alpine bowls in soft layers of hero snow. No wonder so many riders sign up for the

THE ISLAND While skiers are hunting powder stashes on the mainland, adventure seekers clad in rubber boots and Gore-Tex head to Vancouver Island. Between November and March, violent storms pound the island’s west coast and the seasonal deluge of wind, rain and crashing waves has spawned a new pastime: storm watching. Ground zero for this thrilling activity is Ucluelet, a fishing village wedged between Pacific Rim National Park and the Wild Pacific Trail. Cozy up by the fire in your hotel room with a glass of wine to watch nature’s fury, or dress for the weather and tackle the Wild Pacific Trail. This nine-km network of paths winds through an ancient rainforest, over a bog studded with dwarf trees, and past the mighty ocean where lookouts afford a prime view of the storm (stay on the trail—the rocks are slippery and the waves

are bigger than they look). Smell the fresh air, splash in puddles and reconnect with the great outdoors. When your nature cup is full, head to Victoria, the province’s colourful capital located at the southern tip of Vancouver Island. Relish the contrast between wild coast and civilized city as you wander around an illuminated Butchart Gardens, pop in to the Bay Centre for shopping amid 50 decorated Christmas trees, or browse tidy streets lined with bakeries, tea rooms and boutiques.

If you’re looking for a special gift be sure and stop by Idar Jewellers on Fort Street. Talented goldsmith Idar Bergseth specializes in Nordic, West Coast and ancient Celtic designs and can craft the perfect ring, earrings or pendant.

hen the Eagles released “Take It Easy” in 1972, few people would have predicted the impact it would have on a sleepy Navajo County city called out in its lyrics: Well, I'm standing on a corner in Winslow, Arizona, such a fine sight to see, it's a girl, my Lord, in a flat-bed Ford, slowin' down to take a look at me.

Winslow, located about 95 kilometres east of Flagstaff, welcomes upwards of 100,000 visitors annually—more than 10 times its population—thanks in part to the classic rock and roll song. Every fall, this city, which is located on equally iconic Route 66, hosts the Standin’ On The Corner Festival. At this two-day, live-music event, you can bet that a certain classic tune will be played.

Q

While it was a song that established Winslow in popular culture, it was the train that first put it on the map. In the late 1800s, trains on the Atchison, Topeka and Santa Fe Railway line had no sleeping or dining cars, so Winslow became a pit stop where people could get off the train and grab a bite to eat. Route 66 rolled out in 1926, with a stretch passing through the city and, just four years later, the grand La Posada resort opened. Considered one of the finest hotels in the Southwest, it hosted guests such as Amelia Earhart, Clark Gable, Albert Einstein and Franklin D. Roosevelt. As rail travel dwindled in the late 1940s and ’50s, Winslow began to fade into obscurity. La Posada closed down and the building was later gutted and turned into offices. By the 1960s, auto-touring was booming and Route 66 attracted those seeking the freedom of the open road. Jackson Browne was one of them. In an interview with Uncut magazine, the singersongwriter said he started to write “Take It Easy” while driving a beat-up Willys Jeep through Utah and Arizona. On his return, he played the partially completed song to his friend, Glenn Frey, who was working on an album with his new band, the Eagles. Frey asked if the Eagles could record the song when it was done and Browne told Frey to “Just finish it.” The rest is history. It became the Eagles’ first single and would go on to become one of the Rock

& Roll Hall of Fame’s “Songs that Shaped Rock and Roll.” Winslow leaned on Route 66 for tourism, but the construction of Interstate 40 and the arrival of a bypass in 1979 hurt the city economically. As Browne and Frey’s stars were rising, Winslow was being left in the dust, destined only to live on in the verse of a song. Fortunately, it was not just any song, it was the ultimate American road-trip anthem. Thanks to Browne and the Eagles, nobody could forget the name Winslow, and, by the 1990s, locals had decided it was time to transform the city into a destination. Thanks to a group of volunteers, the corner of West 2nd Street and North Kinsey Avenue—located on the original Route 66—was designated Standin’ On The Corner Park in 1999. An impressive mural depicting a woman in a red pickup truck, a fictionalized version of the vehicle in the song, was created. Leaning against a streetlamp is a life-size bronze statue of a 1970s musician, a character inspired by Browne, but who everybody just calls Easy. Today, visitors make the journey to Winslow to do one thing: simply stand on the corner. Across from the park, a busy gift shop sells commemorative souvenirs of both Route 66 and the Eagles, while a vehicle out front bears the licence plate TAK T EZ. Just a couple of doors down, RelicRoad Brewing Company buzzes with chatty diners

sampling local beer amid vintagecar decor—its grilled cheese sandwich is called Take It Cheesy. The La Posada was saved from demolition, too. The protected building is now restored to its former glory and houses a hotel, art gallery and museum. Winslow also has the Eagles’ approval. When the mural was damaged by a fire in 2004, the band donated a signed guitar to be raffled off to pay for the cost of repairs. When Glenn Frey died in 2016, a statue dedicated to him was swiftly installed on the street alongside Easy.

“I grew up here—my parents had a shop on Route 66, so I’ve seen it change,” says Tommy Butler, vice-president of the Standin’ on The Corner Foundation, the volunteers dedicated to preserving Winslow’s lyrical legacy. “The park resonates with people,” he adds. “It’s so international; we have people coming from every corner of the world.” From all corners to this one corner, music fans, railroad enthusiasts and Route 66 followers all congregate. And, it seems, the people of Winslow have found a place to proudly stand.

S

WESTJET.COM | NOVEMBER 2019

Signature experience Not too long ago, Union Station mainly housed trains, but a makeover has given the downtown depot new purpose. Today, this landmark space is a testament to Denver’s growth and its booming food and drink scene. Lined with restaurants and shops, the station’s Grand Hall is filled with comfy chairs where guests can relax with a shake, malt or an ice cream from Milkbox Ice Creamery, or a hearty pasta dish from celebrated chef Alex Seidel’s Mercantile. If you’re staying on-site at the Crawford Hotel, wake up and hit Snooze, a popular pancake joint.

DINING GUIDE

AROUND THE CLOCK BREAKFAST The Universal might look unassuming on the outside, but it’s one of Denver’s top morning hangouts. Expect lineups on the weekend, but the wild boar scramble is worth the wait.

Elevated and easygoing Acorn Dress up, or down, for dinner at this popular spot in The Source, a complex that features a hotel and two massive market halls. Acorn was one of Denver’s first restaurants to really push culinary boundaries and, even after switching head chefs, its cuisine remains innovative in cooking techniques and flavours, with dishes that are still perfectly executed. Try the wagyu beef tartare, the popular black pepper and Gouda pork rinds and the unforgettable kale salad. The cocktail menu features drinks that go from zero-proof to alcohol-forward.

PLACES TO SIT & SIP From craft beer to artisan spirits, much of Denver’s booze is made in the state. Many of the city’s bars and restaurants showcase local producers by serving microbrews and mixing well-balanced cocktails featuring homegrown ingredients.

Tamayo For an authentic Mexican experience, this vibrant downtown noshery—run by chef and restaurateur Richard Sandoval—hits all the right culinary notes. The restaurant is located on historic Larimer Square, one of the city’s prettiest streets. Order the succulent white mole on grilled chicken with sweet plantains, or a pile of the street tacos topped with grilled skirt steak, beef cecina, Mexican chorizo, asadero cheese or grilled nopales. A taco cart even comes directly to the table for groups of four or more. Be sure to pair your meal with a tangy prickly pear margarita.

LUNCH If your group can’t agree on lunch, Avanti Food & Beverage is the answer. This food hall boasts seven casual spots serving everything from fried chicken sandwiches to French bistro fare.

DINNER With the Hearth & Dram’s rotating menu, you can dig into dishes such as the grilled Colorado lamb with a side of housemade Hawaiian rolls or Oak Grilled Steelhead Trout served with summer squash.

Ratio Beerworks Denver is known for its craft-beer scene and innovative brewmasters, and this lively spot is proof of that. Led by Jason zumBrunnen, a talented and inventive brewmaster, Ratio Beerworks has a solid lineup of brews, such as the King of Carrot Flowers, made with elderflower and fresh-pressed carrot juice. It also has a huge patio, which is the perfect place to taste a flight, or two.

Sweet Stops Indulge in these high-altitude treats Head to Steuben’s, Ace Eat Serve or Vesta to find treats by pastry chef extraordinaire Nadine Donovan. The orange creamsicle push pop and fried apple pie with Frosted Flakes at Steuben’s are crowd favourites. For small-batch frozen treats, visit Sweet Action Ice Cream and order the salted butterscotch. If you’re looking for something totally off the wall, you’ll find creations such as Mexican Fried Ice Cream, served with chocolate and exploding whipped cream, at The Inventing Room. —Linnea Covington

Family Jones Spirit House Every pour on the menu at this bar and restaurant is made in-house, including the spirits, liqueurs and syrups. Try a Colorado Sour, made with bourbon, rosemary, amaretto, lemon and egg white.

Brass Tacks Located in what was once the Blake Street Vault, this spot combines the relaxed attitude of a dive bar with the service and quality of a classy cocktail joint. On the menu, you’ll find local beer, cold-brew coffee and bottled craft cocktails.

SHEER ROCKS AT A GLANCE

Was it hard transitioning to a Caribbean style of cooking? The availability of ingredients here has pushed me to be more creative. I joke that I could write a book now on 101 things to do with pumpkin. Being in contact and really hands-on with smaller suppliers who grow [produce] on the island has a lot more soul to it compared to calling up a wholesaler and ticking off boxes. What’s your favourite menu item? An oven-baked mahi mahi with comte and pretzel crust—the strong salty, cheesy, pretzel butter crust goes so well with the creamy cauliflower purée and charred leeks that we serve it with.

CHEF INSIDER

Award-winning chef Simon Christey-French is savouring island life, and being flexible. erched on the cliffs overlooking the aquamarine waters of Antiqua’s Ffryes Bay, Sheer Rocks is one of the hottest dining experiences on the island. Sure, the view is jaw-dropping, the plunge pool is Instagram-worthy and the cocktail list has 21 gin drinks alone, but it’s Simon ChristeyFrench’s Mediterranean-style food with Caribbean influences that is drawing diners. Being head chef at a small restaurant in Antigua is not something Christey-French envisioned for himself, but he couldn’t be happier paying tribute to the local culture with his exceptional seafood dishes and elaborate meals.

After winning Young Chef of the Year in the UK in 2007, he went from cooking in Michelin-starred restaurants in London to being Richard Branson’s private chef on Necker Island. Following a stint as chef de cuisine at the Pink Sands Club in Saint Vincent and the Grenadines, he came to Antigua. Christey-French says that he aims to give diners a sense of place, so 80 per cent of the ingredients at Sheer Rocks are locally sourced. “I’ve had to adapt my menu to local styles,” he says. “And availability of ingredients means that I've become somewhat flexible—if I swap my grouper for snapper, nobody’s going to complain that it’s too fresh.”

The average dish costs around US$30.

Decor The shabby-chic feel includes furnishings made using materials found on the island.

Signature Dish The Seared King Scallops & Sticky Pork Belly with pumpkin and beetroot.

Coc ktail Wash your meal down with the Old-Fashioned Rum Punch, made from a top-secret local recipe.

How are you inspired? I’m inspired by the great team I work with, as well as the local producers and fishermen. One of our best-selling dishes is a creamy and aromatic spicy coconut fish curry; it’s a recipe from one of our sous chefs. What are some challenges? In the Caribbean, every rule is very flexible. Things don’t ever run on time. People aren’t always reliable. Minutes before service, with a full restaurant, your fish supplier might not turn up. You always have to have a Plan B and a Plan C. How much joy does working here bring you? Every day, I walk down the steps to the restaurant, which has 180-degree ocean views. I’m still taking photos of sunsets. The staff tease me, saying: “Haven’t you seen enough sunsets?” But I never get tired of that view. —Lola Augustine Brown

A TOAST TO WHISKY his beloved, caramel-hued spirit is most simply defined as distilled beer. But there’s a complex spectrum of production styles and flavours that exists within whisky. The type of grains used—corn, barley, wheat and rye among them—can add a spicy or sweet quality, while aging techniques can offer notes of vanilla and smoke. As you’re cozying up to a fine dram this winter, here are a few whisky facts to keep in mind.

Only whisky made in Scotland can be labelled as scotch. While not all whiskies are peated (using grains exposed to peat smoke), scotch is known for having a smoky flavour. Try: Ardbeg 10 Year Old is rich with notes of coffee and tobacco.

This American style is made with at least 51 per cent corn. Only new, charred oak barrels can be used for aging, and no additional flavourings or colourings are allowed. Try: Maker’s Mark is a sweeter sipper with hints of spice and oak.

Named for the peppery, spicy grain that provides its flavour, rye is synonymous with Canadian whisky, but is not always its main ingredient, so check labels to verify. Try: Lot 40 has a bold, spicy palate that is perfect for cocktails.

SCOTLAND As the largest whisky producer in the world, Scotland has become synonymous with the drink, which is called scotch. The region of Speyside is the country’s most prolific producer and home to Glenlivet, Glenfiddich and the Macallan distilleries. UNITED STATES The United States is home to the biggest-selling whisky brand in the world, Jack Daniel’s, which produces Tennessee whiskey that’s filtered through charcoal before aging. The country is also known for its bourbon production, which is concentrated in Kentucky.

Best Tasting Papaya in the World Maybe it’s our tropical climate, or our clean air and water, or maybe it’s our rich volcanic soils – no matter the reason, Hawaii grows the best tasting papaya in the world.

Ranked one of the top five healthiest fruits, papayas are low in fat and a good source of fiber. They are an excellent source of Vitamins C and E and beta-carotene, three strong antioxidants. Papayas are also a great source of calcium, potassium and Vitamins A and B. On top of that, papayas are rich in enzymes that stimulate stomach secretions and aid digestion as they contain protein-digesting enzymes like papain and chymopapain.

Proud to Grow GMO Papayas Long before GMO’s became controversial, biotechnology was used to “inoculate” papaya trees against PRV, a plant virus that nearly destroyed the papaya industry in Hawaii. For two decades, consumers have enjoyed more than 260 million pounds of Rainbow Papaya safely and happily.

1

Hawaii Grown

There are four varieties of papaya grown in Hawaii, the Kapoho Solo, Sunrise, Laie Gold and Rainbow. Grown on the Big Island, the Rainbow Papaya is Hawaii’s principal variety.

2

Safe From Disease

Rainbow Papaya has been genetically engineered to be resistant to the destructive papaya ringspot virus. Without biotechnology, there would be little — if any — papaya grown in Hawaii today.

3

Fill it Up!

In Hawaii, papaya is known as “bowl fruit.” Its unique shape means it doubles as its own bowl. Scoop out the seeds and fill it up with sweet treats — think fruit salad, yogurt or ice cream — or opt for savoury items such as chicken salad, rice and more.

How does it feel?

A

t WestJet, it’s our goal to make air travel something our guests not only enjoy but look forward to. That’s why it makes sense to us that an airline should never intentionally overbook a flight. It’s something that we just don’t do. Getting you there on time is important to us as well, that’s why we are proud to be the most on-time airline in Canada.* We know we have made a difference in the air travel experience of Canadians and our guests because in 2019 we were named Canada’s most trusted airline; as well as voted Canada’s best airline and the winner of the Travellers’ Choice Award by Trip Advisor, for the third year in a row.** To celebrate some of these distinctions, our team used our latest advertising campaign to demonstrate how WestJet is different by playfully showing how travel can feel when other airlines don’t treat people with the same care that we do. Yes, sometimes we do have occasional delays— but you can expect to be treated with care when you’re facing some of the uncontrollable stresses of travel. It’s our goal to show you that we are a different airline when it comes to care, and we plan on keeping it that way. We recognize how important and valued that you, our guests, are and are motivated by that thought every day. We hope you enjoy the message, the storytelling and above all, your next journey with us.

C

Tracey Simpson

Customer Service Agent, WestJet | WestJetter since 2009

Winner of the 2018 President’s Circle Award

Tracey is one of our extraordinary customer service agents at WestJet. She is one of 12 WestJetters chosen for the President’s Circle Award in 2018 – an award that recognizes WestJetters who consistently go above and beyond to create a remarkable guest experience. Based in Victoria, British Columbia, Tracey is known for jumping in when needed to lend a hand to her fellow WestJetters. We sat down with Tracey after she won the President’s Circle Award to hear her thoughts on WestJet: Favourite WestJet destination: Orange County, California. I struggled with picking just one destination, but I have had very happy trips to Disneyland with my family. Describe WestJet in three words: Caring, Canadian and evolving. What is one thing you want to share with our guests? While our company is growing and changing, our culture is still the same. Caring for our guests will remain integral to WestJet while we continue to expand. What is your favourite WestJet value and why? Care from the heart. I believe this value is fundamental to the success of our business and the interactions we have with our guests. Where do you see WestJet in the future? I see us everywhere, continuing to expand the list of destinations we fly to. I can’t wait! What other WestJetters say about Tracey: Thank you Tracey for assisting me at check-in with a guest who required multiple documents. I really appreciate how you jumped in to help even though you had other tasks at hand. You are a fantastic resource for our team!
