THE SPIRIT OF GIVING (AND RECEIVING) his edition of WestJet Magazine comes with all the anticipation of that most special time of year. As you prepare for this busy but fun-filled month, we’d like to pose a festive question for you to ponder: is it better to give or receive? That’s the debate at the heart of this year’s WestJet Christmas Miracle. We’ve been surprising and delighting travellers across our network with Christmas Miracles for eight years now, and this year, we are leaving the decision of who will be the lucky Miracle recipients up to our guests. We are incredibly thankful for the opportunity to work with our WestJet Cares for Kids partner, Ronald McDonald House Charities Canada, to spread some Christmas joy to families who will be calling Ronald McDonald House home while their children receive medical care.

THIS MONTH

WHAT I LOVED

WE’RE EXCITED FOR EVERYTHING IN THIS ISSUE, BUT HERE’S WHAT STOOD OUT FOR MANAGING EDITOR DIANE BOLT.

Photo: Our post-lap victory photo. Jon scored the fastest time while I landed the “most-improved” title.

s we near the holidays, my thoughts turn to spending quality time with my family and friends, both near and far. I also look forward to decking the halls, adorning the tree, toasting the season, eating feasts, taking naps, donning ugly sweaters and exchanging gifts—in no particular order. Receiving gifts is always a treat, but, for me, there’s also the joy that comes with finding the perfect gifts for the special people in my life. I once surprised my partner, Jon, with the gift of a winter break in Palm Springs, complete with a few spins around the track at the BMW Performance Center West in nearby Thermal, marking a huge checkmark on his bucket list. Along with Jon’s brother and his best friend, I surprised Jon at work, ferried him to the airport and bundled him onto a plane for a fun-filled, much-needed break from the cold. Seeing the joy on Jon’s face as the surprise unfurled is etched on my mind, and we still reminisce on all the memories we brought home with us, making this the kind of gift that truly does keep on giving. Our gift guide (page 31) features traditional gift ideas from watches to wine glasses, along with our bucket-list picks for trips that we hope will create long-lasting memories for you and your loved ones.

A

Photo: Escape the winter blues and dine with your toes in the sand at La Palapa restaurant in Puerto Vallarta.

This issue is also packed with travel inspiration including what to wear on a festive city sojourn in New York City (page 18), vintage toy spotting in London, UK, (page 45), how to explore Bermuda’s cultural side (page 51), and where to find the best places to eat and drink in Mexico’s Puerto Vallarta (page 61). Wherever your travels take you this month, we wish you a holiday season filled with plenty of memory-making moments.

plendidly mild winters in British Columbia’s largest city mean outdoor fun can last all year long. Ski through the snow atop the North Shore mountains, cycle along the city’s pathway system and roam urban-gem Stanley Park. And be sure to bring your appetite to enjoy all the city’s thriving food scene has to offer.

Morning Start your day with an early ski at Cypress Mountain, located just 30 minutes from downtown. With 53 runs, there are plenty of options for snowboarders and skiers of all skill levels. There’s also a Nordic area with cross-country skiing, snowshoeing and snowtubing. Afternoon Along North Vancouver’s waterfront you’ll find the Shipyards. This historic shipbuilding area has been turned into a bustling, public square with restaurants, shops and a huge outdoor skating rink. Settle in at the Seaside Hotel for local seafood and cocktails made with freshly pressed juice. Evening Find some of the city’s best brewpubs in the SoMa (South Main) neighbourhood. Start at minimalist 33 Acres Brewing Company and order the wood-fired pizza and a 33 Acres of Darkness schwarzbier. After, visit Main Street Brewing Company to try one of its experimental seasonal brews.

DAY 2 Morning Enjoy breakfast at Greenhorn Espresso Bar in the city’s West End. Opt for the ubiquitous avocado toast and a cup of Vietnamese coffee before continuing west toward Stanley Park. Afternoon The park’s 1,000 acres include a lagoon, lake, more than 27 kilometres of trails through old-growth forest, three beaches and an 18-hole pitch-and-putt golf course. Amble along the

seawall—one of the longest in the world at 28 km—on the shores of English Bay. Evening Walk by the sushi and ramen joints lining Denman and Robson streets to Forage. The restaurant highlights locavore fare and the wine and beer lists only feature British Columbian brands. Order the awardwinning BBQ duck chowder with Berezan shrimp (locally and sustainably farmed) and a West End Old Fashioned.

Mark your calendars TWO EVENTS TO INSPIRE YOUR NEXT VISIT TO VANCOUVER

1 Polar Bear Swim January 1 You really can swim year-round in Vancouver, as a few hearty locals do. Or, join the thousands of participants and spectators who show up at English Bay on New Year’s Day for the annual Polar Bear Swim, a tradition that is celebrating its centennial in 2020.

2 Dine Out Vancouver Festival January 17 to February 2 During this foodie fest, a number of local restaurants offer special menus at set prices. There are also a number of special events, including the World Chef Exchange, where an international chef comes to Vancouver and collaborates with a local chef.

Morning Head to the trendy Kitsilano neighbourhood to work out like a Vancouverite at Turf, a fitness studio with an on-site café. Take part in a yoga class and then refuel with a Mexican-inspired breakfast wrap. Afternoon Browse the shops on West 4th Avenue, including Lululemon’s original store, and enjoy lunch at Tacofino’s newest brick-andmortar outpost. Order the fish tacos, which have been on the menu since the local chain began as a food truck 10 years ago. After, rent a Mobi public bike and make use of the city’s more than 300 km of cycling paths. Evening Dine on contemporary Canadian cuisine at Kitsilano’s AnnaLena (shown). Opt for the tasting menu to try dishes such as oysters topped with foie-gras shavings. This restaurant’s wine program won platinum at the Vancouver International Wine Festival, so your meal will be perfectly paired. —Barb Sligl

STAR WARS ESCAPES

DEATH VALLEY NATIONAL PARK CALIFORNIA Six places in this park, which is located about two and a half hours from Las Vegas, were used to film scenes in 1977’s A New Hope—the area served as Luke Skywalker’s home planet of Tatooine—and 1983’s Return of the Jedi. Death Valley’s website has a guide for fans who wish to visit the filming locations.

IMPERIAL SAND DUNES ARIZONA Important scenes from Return of the Jedi were filmed at this park, located 15 minutes from Yuma and a three-hour drive west of Phoenix. Jabba the Hutt’s barge was built here, and scenes involving key characters almost being swallowed by a sand-buried monster were also made at this recreational area.

SKELLIG MICHAEL IRELAND Once home to a sixth-century monastic settlement, this island is located 12 kilometres off the west coast of Ireland. Fans of The Force Awakens and The Last Jedi will recognize it as Luke’s hideaway. Visitors to the UNESCO World Heritage Site are limited, but companies offer boat tours of the island from the water.

REDWOOD NATIONAL AND STATE PARK CALIFORNIA There is speculation about the exact locations where Return of the Jedi scenes were filmed, but it is known this park inspired George Lucas to create the forested moon, Endor. Parts of the speeder bike scenes were shot at Grizzly Creek Redwoods State Park and Humboldt Redwoods State Park. —Dean Lisk

A CHRISTMAS CAROL Each holiday season, Gerald Dickens brings his relative’s classic novel to the stage. When did you first discover A Christmas Carol? I don’t remember what age I was, but my cousins were staying with us for Christmas and my uncle read it to us in bed before we went to sleep. I remember being absolutely astounded when Scrooge woke up on Christmas morning to discover he hadn’t missed it. That always sticks with me.

GER ALD DICKENS

erald Dickens always knew his great-greatgrandfather was a novelist, but he still remembers the day he realized how important his ancestor really was. It was June 9, 1970, the centenary of Charles Dickens’ death, and the family, including six-year-old Gerald, were invited to a memorial service at Westminster Abbey in London. “I was so bored, I was shuffling around and did not want to be there,” he says. “As I was looking around, I discovered, sitting at the end of our pew, was the Queen Mother, who was a special guest. I thought, ‘Hey, I’ve seen her on TV, she is important.’” In 1993, the trained actor was asked to perform A Christmas Carol as part of a charity event and gained a new appreciation for his ancestor’s work. “As an actor looking at a script, I

thought it was incredible,” he says. “The characters are so strong. You hardly need to do any work to make them come to life because Dickens has done all the work for you.” More than 25 years later, Gerald is still at it. He tours the world, with dates across England and the United States this month, performing his one-man show and bringing to life the story of Ebenezer Scrooge, an old, mean London banker who becomes a charitable person after being visited by spirits on Christmas Eve. Why do Charles Dickens’ works still resonate? He is just a darn good storyteller, with great characters. Also, the issues he wrote about in Victorian England are just as pressing and as relevant today. His works hold a mirror up to our present society.

Q

Do you still like performing it? My passion performing it has never changed. It is just such an exciting journey to play all these characters and make them come alive and interact together. The story moves incredibly fast.

Q

Is there a character you enjoy playing most? It’s a very dull answer, but it is Scrooge. He is the only one in the story that goes through a process of change, and he has to do that gradually at every point through the telling of the story. —Dean Lisk

Q

ILLUSTRATION: CRISTIAN FOWLIE; PHOTO BY IAN DICKENS

&

Why has the story remained popular? It’s a feel-good Christmas story. It sums up everything that is good about the Christmas season. It makes you reflect on yourself and look inward. I think one of the clever things is that there are parts of all of us in all the characters. We all have a bit of Scrooge in us; walking down the street a few days before Christmas trying to get our shopping done and there is someone shaking a bucket at you trying to convince you to give to charity, and it’s the last thing you want to do. And, yet, we all have the character of Bob Cratchit in us, and want to be with the family and to celebrate.

are finding to repurpose heritage buildings from the area’s industrial past. One example is New City Gas, an imposing stone structure where coal was burned into gas to illuminate Montreal’s streets in the 19th century. Now, this building lights up the city’s nightlife as a high-tech music venue hosting international DJs and live events—think electronic dance music, dubstep, psytrance, rap, hip hop and more. Wander Griffintown’s southern border is defined by the Lachine Canal. This National Historic Site is now a popular space, with multiuse pathways following the waterway’s route through the city. Grab a flat white or jasmine tea at Chez l’Éditeur Griffintown, a café and book publisher—you may even see one of its authors inside. Then, take a stroll along the canal pathway and watch the boats rise and fall as they go in and come out of the locks. Chill Something’s always baking at La Bête à Pain, an airy bakery, pastry shop and licensed restaurant located on the corner of Young Street that is open early morning to early evening. Indulge Several talented chefs have set up shop in Griffintown, many of them along restaurant row on Notre-Dame Street W. One restaurant that shouldn’t be missed is Junior, a cosy eatery that features Filipino food, a cuisine that’s somewhat under-represented in the city. This restaurant was founded by four partners, including two DJ brothers, so the music is as good as the food, and you can even find their playlists on SoundCloud. If you’re there for brunch, try the Lechon & Waffles—the crispy fried pork belly served on delicious coconut waffles topped with maple syrup makes for an incredible combo. Shop As condominiums pop up to repopulate the Griff, as its Irish inhabitants once called it, several shops catering to new homeowners have opened up, such as MUST Société. The store features an abundance of upscale contemporary furniture that won’t fit into your luggage, but there are plenty of home decor items that you can bring home. Costa Rica Bicoastal, volcanic and covered in rainforest, this Central American country was built for adventurers. From the blue Caribbean to the wild Pacific, right across the jagged spine of the continental divide, Costa Rica is an amazing place to venture off the beaten track.

1 WHERE TO STAY With views of the stillactive Arenal Volcano, Tabacón resort offers luxury guest rooms and suites close to the many thrilling attractions in the area. Hot springs also run through the property, creating dozens of waterfalls and hot pools—the perfect place to relax after an active day.

WHAT TO DO For a serious thrill, sign up for a canyoning tour with Pure Trek. The Ultimate Waterfall Rappel challenges you to four rappels—three waterfalls and one rock wall—and to brave their “monkey drop,” a zipline and a controlled free fall that finishes with a cold splash.

WHERE TO EAT Upscale, but rustic, diminutive Don Rufino offers a long wooden bar, a wall of wine and an informal atmosphere where you can relax under a spinning ceiling fan. Plus, there’s a menu of Costa Rican favourites, from empanadas to traditional casado dishes, made from locally sourced ingredients.

FOR ECO-WARRIORS

WHERE TO STAY Completely off the grid, Playa Cativo is surrounded by a nature preserve and a natural park, and powered by a combination of hydro and solar power. Swim in the hotel’s salt-water pool, hike to the nearby organic gardens (which feed its restaurant) or simply relax in your open-air casita.

WHAT TO DO A rare tropical fjord in the southwest of the country, the Golfo Dulce (or the Sweet Gulf) brings together myriad marine mammals (and birds and reptiles). Hop on a boat for a morning of whalewatching, and along the way you might encounter dolphins, turtles and maybe even a hammerhead shark.

WHERE TO EAT Set on stilts right over the water and at the edge of an evergreen rainforest, every table at Banana Bay Marina, offers views of the Golfo Dulce. Sail in to the marina, located in the town of Golfito, to sample the restaurant’s freshly caught seafood, including three kinds of ceviche: fish, shrimp and octopus.

CANADA’S LARGEST WESTERN STORE We have everything from western apparel, rodeo gear and home décor to arena chutes and stock trailers. Best Tasting Papaya in the World Maybe it’s our tropical climate, or our clean air and water, or maybe it’s our rich volcanic soils – no matter the reason, Hawaii grows the best tasting papaya in the world.

Vitamin-Rich Superfood Ranked one of the top five healthiest fruits, papayas are low in fat and a good source of fiber. They are an excellent source of Vitamins C and E and beta-carotene, three strong antioxidants. Papayas are also a great source of calcium, potassium and Vitamins A and B. On top of that, papayas are rich in enzymes that stimulate stomach secretions and aid digestion as they contain protein-digesting enzymes like papain and chymopapain.

OVER 1400 SADDLES IN STOCK!

Proud to Grow GMO Papayas Long before GMO’s became controversial, biotechnology was used to “inoculate” papaya trees against PRV, a plant virus that nearly destroyed the papaya industry in Hawaii. THE TOY STORE The Pollock name is synonymous with toys. Benjamin Pollock’s Toyshop is located at 44 The Market in London’s Covent Garden. It was bought from Marguerite Fawdry in 1988 by actor Peter Baldwin, who played Derek Wilton on the British soap Coronation Street. After Baldwin’s death in 2015, Louise Heard, who worked in the store for many years, became the owner. The store still specializes in toy theatres but is in many ways a contemporary shop. Items look like they come from another century but are shiny and new.

n a time before flashing screens and remote-controlled gadgets needing an endless supply of batteries, simple toys held children’s attention. Stacking wooden blocks, peering through a kaleidoscope into a world of splintering shapes and colours, or acting out a puppet show while hidden behind a wooden theatre provided hours of entertainment. For many, these toys continue to hold nostalgic charm. Just north from London’s trendy Soho area in Fitzrovia, you’ll find Pollock’s Toy Museum located in a brick building with a red and green facade. Visitors who climb the winding staircases inside the museum will discover a treasure trove of retro nostalgia packed into six small rooms. Each room brims with vintage toys, dolls, old-school curiosities and a single, much-loved rocking horse. Pollock’s story begins in the 1870s, when a young Benjamin Pollock inherited a theatrical print warehouse in Hoxton. It printed miniature 3D theatres complete with the scenery and actors from successful plays being performed on London’s stages. At one time, these tiny theatres would have been the centre of everyone’s attention as parents, family and guests gathered in the drawing room to watch the children act out classical works. Pollock created his theatrical souvenirs using handengraved copper plates and lithographs. His detailed and whimsical creations were immortalized by Treasure Island author Robert Louis Stevenson, who wrote, in an essay, “If you love art, folly or the bright eyes of children, speed to Pollock’s.” Following Pollock’s death in 1937, the shop

changed hands and locations for a couple of decades before Marguerite Fawdry, looking to buy some character slides for her son’s toy theatre, became enchanted by the store. She bought the entire stock and opened a museum. Over the years, Fawdry added to the collection thanks to donations and purchases from friends, family and the public. In the late 1960s, when her collection became too big for its location, she moved the museum to its current Fitzrovia space. Today, Pollock’s Toy Museum is run by Fawdry’s grandson, Eddy. The museum’s collection of 3D paper theatres, with their delicate layers of scenery and faded players, still enchant more than a century after they were first built. Each is a complete stage in miniature, with movable parts that allow children to make believe they are the director of a lavish stage production. Many other pieces in the collection hail from the Victorian period, and it’s easy to imagine the tiny fingers that once turned the dials on the toy soldiers or wound up the mechanical dancing animals. Many of the toys are beautifully preserved and instantly have you imagining the tender loving care a child would have used while playing with them—that cherished stuffed bear or precious tiny doll may have been the only toy that child had to play with, so a little extra care came naturally. The appeal of these antiques and vintage toys is truly in the human story. They were all held, loved and previously brought to life by the carefree wonder of a child’s imagination. This has imbued them with magic from the past, a magic that can effortlessly transport you to a time when fantasy ruled and “let’s pretend” was a rallying cry.

A

Bermuda often conjures images of turquoise waters, pink sand and vibrant colours. But this island is also a cultural destination. In the capital city of Hamilton, elaborate street art is found around almost every corner, works by some of the biggest names in art are displayed next to local talent, and an emerging fashion scene is making international waves.

Mais l’île est aussi une destination culturelle. s you explore Hamilton you will pass a number of murals reflecting island life. The murals include a bird’s-eye view of Bermuda; a moongate, a traditional circular stone entryway that is a symbol of good fortune; and Gombeys, a folk performance dating back to the 18th century where troupes dressed in colourful clothing and masks take to the streets dancing and drumming. “I love the colours and movement of our Gombeys,” says Alshanté Foggo, who painted the three Gombey murals on Till’s Hill on Court Street. “The expression from a face, the eyes, the smile, all of that. But I also like the flavour of island people: the rhythm, the culture, and how we dance.”

On a cinderblock wall at the Par-La-Ville Car Park on Church Street, artist Tai-Quan Ottley uses a paintbrush to fill in the stencil outline of a child playing against a grey, ochre and pink backdrop. “This is the largest mural I have done,” says Ottley of the 15-metrelong work. Once complete, the mural will be one of 12 commissioned by the city. “It’s the first time I’ve used stencils. I wasn’t sure how else I could do the mural because of its size.” Both Ottley and Foggo say the island can’t help but influence their work. “Bermudians are warm people,” Foggo says. “I am surrounded by colours, and a lot of my inspiration comes from our waters, our houses, our people, our unique culture.”

Created in 1987, the foundation—housed in the Masterworks Museum of Bermuda Art at the Bermuda Botanical Gardens—collects influential art inspired by, or with a connection to, the island. The collection includes works by Georgia O’Keeffe, Winslow Homer and Albert Gleizes. “The idea of the collection was to unify people,” Butterfield says. While only a portion of the collection is displayed at any one time, people can visit the archives to view the other works. “A young boy said, ‘I live in one of those houses,’” Butterfield says, pointing to a painting of a Hamilton neighbourhood. “To hear that sense of pride and belonging, that sense of this is my land, my home—I couldn’t ask for a better statement than a child responding to the art.”

PUERTO VALLARTA, MEXICO ocated on the Pacific Coast of Mexico’s Jalisco state, Puerto Vallarta has a bit of everything: the pristine waters of Banderas Bay, a lively downtown and a captivating dining scene. Seafood is still a staple in this once-sleepy fishing village, but you’ll also find everything from elevated French fare to street-side tacos. Must-try restaurants New twists on classic Mexican cuisine Trio Café Located on a cobblestoned street downtown, Trio Café’s decor is a mix of lush, tropical plants and Renaissance-inspired art—a nod to the chefs’ European roots. Known for mixing Mediterranean and Mexican cuisine, Trio transforms traditional European dishes such as foie gras and pasta by adding fresh, local herbs and spices. The eatery’s commitment to authenticity, means the pastas and desserts are made fresh daily, and the menu changes with the seasons. You can be sure a few favourites will always stay on the menu, including the rack of lamb and the open ravioli with lobster sauce. La Palapa Restaurant This historic restaurant is the perfect place to indulge your inner movie star while watching the sun set over Playa Los Muertos. Relax at the same tables where Elizabeth Taylor and Richard Burton drank cocktails out of handblown glassware. The menu is influenced by the oceanside location and fuses Mexican, Asian and French cuisines. Entrees are protein-focused with perfectly prepared lobster, red snapper and beef medallions dishes. Vegetarians need not worry, there’s a decadent eggplant parmesan and an al Pastor mushroom tostada that can also be made vegan.

DINING GUIDE

AROUND THE CLOCK

BREAKFAST Start your day off right at River Café on Rio Cuale Island. It serves traditional and hearty breakfasts such as machaca, sopes and chilaquiles, and lighter fare like fresh fruit.

Master and savour authentic dishes

LUNCH Join the locals at Restaurant Dianita for a delicious (and affordable) lunch. The menu is packed with fresh ingredients and changes daily, so you’ll be in for a treat any day of the week.

Sample these chocolate creations

At Gaby’s Restaurant Bar, guests get the chance to don an apron and really immerse themselves in their meal. During a five-hour cooking class, Chef Julio Castillón will teach you how to make authentic Mexican cuisine. Starting with a trip to the local market to pick up fresh ingredients, Castillón then brings his would-be master chefs back to the kitchen to prepare and cook salsas, mole tamales and more— all while mixing in a raicilla pairing to calm the nerves. The end result is a seven-course meal so you can enjoy the fruits of your labour.

DINNER Thierry Blouet, chef and founder of Café des Artistes, blends French and Mexican cuisine at this elegant hot spot. Splurge on the six-course tasting menu so you can sample a variety of his unique creations.

Chocolate has a long history in Mexico. Learn all about it during a bean-to-bar workshop at the ChocoMuseo Puerto Vallarta. Try your hand at roasting and grinding cacao beans before making a chocolatey drink and blending your own chocolate bar. For your next fix, head over to Metate Chocolate y Café to taste chocolate mixed with pasilla red pepper. If the heat is too much for you, cool off at Lix ice cream parlour with an artisan ice cream cup or cone topped with fruit, nuts, sprinkles, and more. — Jennifer Friesen

DRINK STOPS Mexico may be best-known for its tequila—and there are plenty to enjoy—but its growing craft brewery scene and inventive mixologists ensure there’s something for everyone.

Los Muertos Brewing As Puerto Vallarta’s first craft brewery and brew pub, Los Muertos takes its name from the annual Mexican celebration Día de los Muertos (Day of the Dead), which coincided with the day the pub first opened on Nov. 2, 2012. Be sure to try to the Anillo de Fuego, a wheat-based ale fermented on a bed of diced serrano peppers.

Sweet Treats

The Iguana Restaurant and Tequila Bar Specializing in the region’s best (and often rare) tequilas and mezcals, this spot offers cocktails that blend the spirits with local fruits and herbs.

Twisted Palms Rooftop Lounge Offering an open-air setting, with trees surrounding the patio, this lounge is the perfect spot to order a martini—arguably the best in town—and features a nightly movie screening.

F|E|A|S|T DRINK UP

THE BUZZ ABOUT MEAD Once called the “nectar of the gods,” this honey-based wine has aged well. efore people picked grapes to make wine, or brewed barley to make beer, they extracted honey from beehives and fermented it with water and yeast to create mead. Also known as honey wine, it has been enjoyed across the globe for millennia, and was known as the “nectar of the gods.” Although many cultures claim credit for inventing mead, including the Scandinavians and English, the oldest version of honey wine has been traced to China more than 8,000 years ago. “We believe it’s the oldest alcohol on the planet,” says Electra Logan, co-owner of Meadow Vista Honey Wines in Kelowna, B.C. At this five-anda-half-acre meadery, Logan and her sister, Emily Vanderschee, keep 50 hives housing up to 60,000 honeybees each—plus another 50 to 100 hives their beekeeper moves between local orchards. This award-winning, small-batch meadery produces 20,000 litres annually, and the duo struggle to keep up with demand. Especially popular are its Bliss line of meads, which are sparkling honey wines. Bliss Sparkling Apple is a cyser, a style of mead where apples are added to the honey wine—in this case, fresh-pressed Okanagan apples that lend a crisp taste to the fizzy sip. Equally popular is its Bliss Sparkling Cherry, a style of mead called a melomel that adds in other fruit. Other common styles include traditional mead made with just honey; metheglin, where spices such as cinnamon, nutmeg and cloves are used to create a drink not unlike mulled wine; and pyment, a type of mead where grapes are added in addition to honey, water and yeast. The biggest surprise about mead is that it’s not always sweet. Fermentation converts the sugar into alcohol; how sweet or dry it tastes depends on when you stop fermentation. Mead is lovely sipped on its own—a sparkling mead makes a wonderful stand-in for bubbly at New Years—but also pairs well with food. Try traditional mead with salad or seafood, serve a blackberry melomel with grilled meats or heavier pastas, and a spiced metheglin with your turkey dinner over the holidays. Similar to a grape wine, it makes for easy sipping, so drink in moderation or you’ll really find out what the buzz is all about. —Lisa Kadane

Preheat your oven to 350˚F. In a large bowl, beat the butter and sugar for one to two minutes, until smooth, pale and light. Slowly beat (or stir) in the flour and salt. Once the dough comes together, knead it a few times, until it’s smooth.

Roll the dough until it is a quarter-inch thick and cut into rectangles, or into shapes using a cookie-cutter. Transfer to a parchment-lined baking sheet and poke each cookie with a fork. Bake for 10 to 14 minutes or until golden.

Tip: For whipped shortbread, continue to beat the butter and sugar for five minutes until it’s very pale and light, before adding the flour and salt.

Tip: Customize your shortbread with grated ginger or citrus zest, vanilla, finely chopped rosemary, tea leaves, lavender, nuts or chocolate.

Canada’s outdoor playground is the place to ski, storm watch, savour and sip—all season long

San Josef Bay, Cape Scott Provincial Park.

WITH SNOW-COVERED SKI RESORTS in the high country and lush rainforests on the coast, British Columbia beckons winter travellers who either want to embrace the season—or escape it. Its unique geography, coupled with an overall mild climate, solidifies the province’s reputation as Canada’s all-season destination. Here are a few great ways to play in “Lotus Land” this winter.

From orderly and refined Victoria in the south to the dense rainforest and rugged trails of Cape Scott Provincial Park in the far north, Vancouver Island is a large, lush land that can be as civilized or wild as you like, no matter the time of year. In winter, all of the classic adventures are available, from skiing or snowboarding the glades and alpine bowls at Mount Washington Alpine Resort to snowshoeing in Strathcona Provincial Park, both easily accessible from Comox. Many visitors, however, venture to B.C.’s island outpost to escape the snow. A perfect place to do that is the Cowichan Valley just outside of Victoria. Its name means “the warm land,” and, thanks to a temperate, Mediterranean-like climate and fertile soil, the valley is a star produce and grain grower. You’ll find farm-to-table dining—along with breweries, wineries and distilleries—in towns such as Chemainus and Ladysmith. Let your taste buds continue north to Nanaimo, a city made famous by those delicious chocolate and vanilla custard bars of the same name. Embark on the Nanaimo Bar Trail, which includes 39 stops and opportunities to taste everything from traditional Nanaimo bars to Nanaimo-flavoured macarons, waffles and even cocktails.

This pastime is called storm watching and can be done from the comfort of a resort suite, or from viewpoints along the pathways of the Wild Pacific Trail. After you’ve reconnected with nature, refuel inside a coffee shop or restaurant. Between Wolf in the Fog in Tofino and Pluvio restaurant + rooms in Ucluelet— both considered among Canada’s top restaurants—there’s a growing food scene here, too. It also pays to warm up and weather the storm the old fashioned way, by drinking in the island’s spirit with a wee tipple from Pacific Rim Distilling.

The Christmas Miracle is back!

Le miracle de Noël est de retour!

December is here and with it comes WestJet’s annual Christmas Miracle. Our holiday tradition of giving back to Canadians has been bringing smiles to people’s faces since 2012. This year, WestJet is doing something a little different. Blue Santa is back, but he is joined by a special guest, Ebeniza Scrooge. This combination will take our story to a place it has never been before and create a magical experience for WestJet guests.

estJet’s annual Christmas Miracle falls into two categories. There have been surprises for our guests, such as a flash mob, gifts arriving on the baggage carousel, and our 12 Flights of Christmas initiative, with special events taking place across Canada. And we have hosted charitable events such as the Snowflake Soiree gift drop for families devastated by the Fort McMurray wildfires in 2017, we built a playground for children in the Dominican Republic, and WestJet employees completed more than 30,000 acts of kindness in a single day during our Mini-Miracles campaign. Over the years, we’ve received thousands of messages from our guests with suggestions for the perfect miracle across these two categories. So, this year, we thought we’d let you decide. WestJet Christmas Miracle: To Give or Receive gives guests a choice—donate flights, WestJet gift cards or vacation packages to families staying at Ronald McDonald Houses and Family Rooms across Canada, or keep the gift (perhaps to bring your own families together). Through our WestJet Cares for Kids partnership with RMHC Canada, we have seen the joy of families coming together and we have taken pride in creating magical experiences for our guests. What would you do if faced with the choice of receiving $100, $1,000, $5,000, or a seven-day stay at a Grand Palladium resort, or donating it to a family? Each story is unique and there is no wrong answer. Don’t miss this year’s annual Christmas Miracle: To Give or Receive. It’s up to you. Visit the WestJet Facebook page (facebook.com/westjet) every day throughout December for a chance to participate and follow the results at westjet.com/Christmas.

L

Byron Kerr

Guest service ambassador, WestJet | WestJetter since 2017

Winner of the 2018 President’s Circle Award

Byron Kerr is one of our hard-working guest service ambassadors. He is one of 12 WestJetters chosen for the President’s Circle Award in 2018 – an award that recognizes WestJetters who consistently go above and beyond to create a remarkable guest experience. Based in Toronto, Byron is known for being a hard worker and getting the job done. We sat down with Byron after he won the President’s Circle Award to hear his thoughts on WestJet: Favourite WestJet destination: Saint Lucia. I’ve been there five or six times. I have visited other islands, but Saint Lucia is my favourite. All around, it’s perfect for me. Describe WestJet in three words: Friendly, active and teamwork. What is one thing you want to share with our guests? Give yourself at least three hours per connecting flight. Before working for WestJet, I used to ask my travel agent to give me at least three hours for each connection. I would rather sit and wait than be running to catch my next flight. What is your favourite WestJet value and why? Being friendly. When I first started with WestJet, I thought everyone was faking it, but everyone is really friendly. Where do you see WestJet in the future? Going to more destinations and staying competitive. What other WestJetters say about Byron: You deserve recognition for always being so helpful. I’ve had the pleasure of working alongside you a few times, and you’re such a hard worker. Thank you for all your help and for always getting the job done with ease.
