Spicy Garlic

Former restaurant owner turned stayat-home grandma, Hui Wai Ning, shares some of her favourite homecooked recipes with you. Easy to make, healthy, and full of love; these recipes will warm the hearts and bellies of every Hangzhou family.

Ingredients:

• 2 eggplants

• 1 egg white

• 1/2 cup of corn starch

• 3 cups of oil for deep frying (sunflower oil is what I use but any other oil with a high smoking point will do)

For the garlic topping:

• 2 tsp minced garlic

• 1 tsp chopped shallots

• 1 tsp chopped red chilli

• 3 tsp chopped red peppers

• 3 tsp chopped green peppers

• 1 tsp chilli bean sauce ( 豆瓣醬 )

• 1 tsp salted black bean

• 1 tsp dark soya sauce

• 1 tsp soya sauce

• 2 tsp sugar

Method:

1. Put 2 tsp oil in the wok and fry the shallots and garlic until golden and put the rest of the topping ingredients in, stir fry for about 15 seconds, and place into a bowl. 2. Slice the eggplant into 1/2 cm slices. 3. Dip eggplant in egg white, then in corn starch. 4. Deep-fry over medium heat until golden brown. 5. Place in a dish and sprinkle the garlic toppings onto them.
