If you are anything like me, you are certainly glad to have Fall return. While I love the warm days of summer – even if we did not seem to have too many this year, there is something to be said for the return of the routine that comes with this time of year.

The last few days of summer are making way for autumn in Kingston and area, bringing cooler temperatures, shorter days, and longer nights. It is a time of reflection. Did we do all of the things that we intended to do this summer?

My three kids are back to school and our evenings and weekends are once again filled with a variety of sporting activities. I love this time of year – like Spring it is a time of new beginnings – I was hopeful as I shuffled the kids off to their first day of classes, hopeful that they will have a great year ahead, filled with new friendships, opportunities and educational growth.

Did we get outside, travel, and entertain enough? Fall is the perfect season to continue to enjoy family and friends while pursuing new activities and routines.

In this issue we explore some of the new and upcoming businesses, products and people in Kingston who too are hopeful. They are, for the most part, entrepreneurs who have great visions for their futures and we are excited to share their stories with you. Our annual Best of the Best special feature is back. Here you will find a list of business that made up my “Publishers Short List” and are celebrated by the community as leaders in their respective industries. In addition we have great content around the craft beer movement, delicious restaurants to indulge all your senses, our local fashion scene and ideas on how to make your home cosy for the upcoming cooler weather and so much more. We highly encourage you to reach out the businesses you learn about in our pages, maybe you’re learning about them for the fist time, or perhaps it is someone you’ve known about for several years. The people throughout these pages are pillars of this community and their commitment to the local economy is inspiring to us and to the city at large. The Property When you enter through the beautiful, rich-red double doors you feel a sense of welcoming that will rival the best boutique hotels in the world. Owner Becky Moore has made it her passion to make sure every guest feels at home from the moment they arrive. No details go unnoticed, right down to making sure guests enjoy the finest coffee (they offer delicious craft coffee beans from Bri’s Beans in Trenton!). Your first few steps will lead you into a lovely open concept living space with a stone faced fireplace, a fully equipped gourmet kitchen, floor-to-ceiling windows, a large master suite with a king size bed and a huge bathroom featuring a Jacuzzi tub. Off the living area are doors that lead to a back deck with an extra large harvest table, a high top bar and a barbecue, all of which can be enjoyed as you overlook the beautiful serene Parks Creek. For cooler weather, guests can lounge and relax in the three-season, screened-in timber frame room, which boasts a hot tub, large seating area, fire table and an oversized swing bed. The retreat offers a total of four bedrooms and can comfortably sleep 12-16 guests.

Meetings & Retreats The Limestone City is home to many small and medium sized businesses, so it’s no surprise Moore has seen a rise in the number of people contacting her to book the space for corporate meetings and retreats. “Everything you need is here, from a projection screen and large meeting tables to whiteboards and Wi-Fi,” says Moore. “No matter if your organization has two people or 16 we can accommodate you.” The space is a great way to escape the traditional hotel boardroom meeting space. At Parks Creek, business guests can ponder next year’s budget plans as they enjoy the sounds of a rippling creek or a crackling fire. If it’s a corporate retreat space you are looking for, Parks Creek is ideal. With the crystal clear watering hole off the beautifully landscaped backyard, an outdoor fire pit, a hammock for lounging, two hanging chairs suspended from the balcony and a covered gazebo, you will have no shortage of ways to relax and unwind with your colleagues. For a fun team-building idea, Moore suggests cooking a meal together as a group. “This is a great way to practice skills you have focused on during your retreat. There’s plenty of space to navigate around, so you won’t be stepping on one another’s toes.” As the demand for Parks Creek grows, so do Moore’s plans to expand. She is in the process of building a studio space to host niche events, such as yoga retreats. “There is a demand for space to hold smaller retreats, but people don’t want to spend half a day travelling just to get there,” explains Moore. “Because of our close proximity to some of the major centres, such as Kingston, Napanee and Belleville, and even as far as Ottawa and Toronto, people find our location ideal.”

No Need To Leave Everything you need is readily available when you arrive, including most toiletries, linens towels, and a fully stocked kitchen. There is even a full washer and dryer, which is perfect for those enjoying an extended stay. All you need to do is bring your own food and beverages, and you will be set. However, if you want to explore the area, Moore recommends a short drive to the newly opened Signal Brewery in Corbyville. It’s just a short 10-minute drive, off highway 37. More adventurous guests can find two beautiful golf courses, the Tyendinaga Caves, multiple conservation areas, canoeing, kayaking, beaches, shopping and dining all within a short drive. Moore has also partnered with Beyond The Vine; a Prince Edward County based food and wine tour company. They can bring their immersive food and wine experience to you during your stay, or you can join them for a full tour. No matter what your reason is for escaping the city — be it business or pleasure —Parks Creek offers the perfect getaway setting. There’s something bittersweet about those first few fall mornings. When a cool and crisp autumn breeze replaces the humidity in the morning air. As summer slowly departs, it can be difficult to part with the fleeting season that many of us so eagerly look forward to year after year. Luckily, you don’t need to sever those summer ties completely, as there are a few ways you can continue to wear your favourite summer threads even as September approaches. With a few tweaks and additions, you can smoothly transition your favourite summer looks for the fall season. It’s as easy as adding a little pumpkin spice to your latte!

Shorts For All Seasons

You’ve been sporting those shorts all summer long and are dreading stuffing them away in your drawer as the temperatures drop. All too often, we consider shorts to be strictly summer attire, when in actuality they’re probably the sneakiest transition piece you’ve got in your wardrobe. A classic pair of black shorts is instantly fall-ready with the addition of opaque black tights. Shorts in black, blue or any dark hue can easily be paired with longer sleeves and knits, as long as you add tights to your look. If you love your patterned shorts and can’t bear to part with them, look for styles with darker colours and hues. Your warmth-adding hosiery will be perfectly complemented by the tones within the geometric or floral print.

Layered Up!

What’s more effortless than the casual summer frock? Quickly slipping into a simple summer dress is one of the joys of the season. It’s just so easy! Dresses can be worn year round, and fall is no exception. As the weather gets cooler it becomes increasingly important to layer your look so you’re comfortable in both the warm afternoon and cooler evenings. Layering a blazer or jacket over a summer dress is the perfect way to take your look from day to night as the temperatures drop. Next time you’re perusing the endless selection of easy-breezy summer dresses, consider which ones would painlessly pair with a structured blazer, or perhaps a faux or leather jacket. Keep it uncomplicated by adding a neutral tone, or opt for a bright bold colour that complements your favourite dress while saluting summer!


So as the summer season leaves us, don’t fret. You don’t have to buy an entirely new wardrobe, or move all of your summer favourites to the back of the closet. As those end-of-season sales start popping up, keep an eye out for key pieces that will help you build a smarter wardrobe, and save you money in the long run. Shop for items that extend your wardrobe beyond a single season and get the most bang for your buck! The summer will live on in our hearts, but there is no reason it can’t live on in your wardrobe as well.

Trousers and pants of varying colours and styles are a fantastic investment, and often go on sale as the summer season comes to an end. These pieces play double-duty when it comes to transitioning into fall fashion, and aren’t just for those sunshinefilled days. Pair those bold pants with basics such as a white blouse and a black blazer to balance out your look and let your slacks steal the spotlight. This will work with just about any colour, but hues such as red, mustard yellow and grey-blue work particularly well as we changeover into fall.

Life is incredibly busy these days. It’s 9am in Kingston as I write this and I’ve already done everyone’s laundry and dishes, organized my work day as well as all 3 of my teenage sons, been to the dentist for a root canal consult, and on and on. And I’m not alone in having too much to do in too little time. Work, kids, spouse, house, parents, friends and then hopefully self – repeat. I’m constantly looking for ways to multitask and be efficient in the jobs that need doing, so I can try to find more time for the jobs I enjoy doing. So have I tried online shopping? Yes, I do it weekly.

Online purchases are fast and easy (sometimes too much so when I get the credit card statement), and unarguably the best option for certain commodities out there. But for me, the big word is commodities. I may buy my pantry groceries online, swing the car by and pick them up - but I’m not doing the same for my clothing. I am a buyer, and a professional one - I do this for a living and have for a few decades now. When I train a new buyer, my golden rule is NEVER to purchase items from a book/picture. Some lessons you need to learn firsthand. Clothing is tactile, clothing is a feeling, clothing is an emotion as it brings a smile to our face. And that experience is repeated every time someone sees us in what we have chosen as a reflection of our inner selves. It has to be tried on, it has to be examined. Colors have to be real, and not filtered, and sometimes clothing needs to be altered to make it yours. The same reason you chose these jeans instead of those? They fit YOU better. I don’t know about you, but even I can’t decipher that from a webpage. What can your store offer you? Some would say a break, some would say a visit, but all would say efficiency. I can have someone dressed for an interview in 15 minutes. I can ease your mind on what to wear for your son’s wedding so you can focus on what’s really important. Lost your luggage? We can address that. Need a sounding board? I can do that too, and give you options to boot. And most importantly, you can try it and see for yourself.

The Sport Coat Deconstructed The sport coat (or sport jacket) is just that—a men’s suiting-style coat.

While a sport coat is in most cases still a tailored garment, during summer months, they are frequently unlined. You’ll instantly appreciate the extra step of taped seams in the manufacturing of seasonal sport coats because these airy jackets—in plain or patterned ultra-lightweight wool, linen and cotton—are cool and comfortable in warm weather. Three season jackets can be constructed from a multitude of fabrics, including cotton, jersey, wools and or microfiber fabrics to make them more travel friendly and better suited to certain seasons.

Versatility, Function & Value Unlike a suit jacket, however, a sport coat is sold without matching pants, which makes it far more versatile. Also different from a traditional ‘blazer’, the sport coat is today’s answer to everyday casual-amped up style. Today’s designs come in a trimmer cut and are shorter in length. Lapels are narrower and details like contrast collar fabrics and built in pocket squares mean that the sport coat is versatile for a number of different settings. Many have a softer construction across the shoulders and back, all of which add comfort to your killer style while feeling more relaxed. Wideranging finishes include two- or three-button front closures, single or double vents at the back, hand-stitched lapels, patch or flap pockets, and colorful button treatments at the cuff - lots of details to pick from.

And at any time of year you can dress up your sport coat in classic fashion with a pair of dress pants, shirt and tie. Pocket your tie at the end of the day, and your trusty sport jacket will effortlessly take you from the office to an evening out. Pop it over a polo shirt, T-shirt or self-collared knit shirt and you’ll feel stylish and relaxed. Conversely, create an upscale casual look with chinos, linen pants or jeans. This flexibility means your sport coat is appropriate for almost any occasion that doesn’t require a two-piece suit. What to look for when buying - same rules apply as buying any other structured ‘jackets’ - look for quality. Pay attention to the fabric and seasonality. Fit, construction and alterable details need to be addressed to ensure that it feels good and looks better on the body. Canadian Contributions to

WORLD FASHIONS Looking back at the last 150 years By Angela Campagnoni

It’s impossible to open a Canadian publication or watch Canadian television and not be reminded that this is Canada’s 150th year as a unified country. I wanted to join in on the celebration and write about the history of clothing in Canada. Canada has made many notable contributions to the international fashion scene over the years. I have chosen just a few to highlight. Some may surprise you!

Bing Crosby was responsible for the “Canadian tuxedo”

Let’s start with the “Canadian tuxedo.” This is the combination of a denim jacket and denim pants. How did this become a thing? Well, actually, it didn’t even start as a Canadian item. It was coined as Canadian after Bing Crosby was here for a fishing trip in the 1950s. Apparently Crosby was wearing the outfit when he tried to get a reservation at a Vancouver, B.C. hotel and was initially denied access because of his wardrobe. Another employee realised who he was and they quickly rectified the mistake. The story made the news.

Months later on June 30, 1951, Crosby was at a rodeo in Nevada and Levi’s presented him with a denim tuxedo with a patch inside. The patch read, “Notice

he went looking for an available hook to hang his coat. He took a piece of wire and shaped it to match the shoulders across his coat. Upon seeing this, his boss went and registered the patent for it. Parkhouse never received a dime for this internationally known and used invention. Much like many parts of the United States, the Canadian fashion industry began to see growth after the Second World War. When a boom happened in the 1960s, we started seeing a lot of influences from European fashion, and as the industry grew and flourished, veterans of the industry were able to enjoy their success. However, the abolishment of tariffs on global trade

in the 1990s forced many wellestablished designers and brands to work overseas. With one sweeping change, an entire industry would forever be affected as cheaper overseas labour made it very difficult to compete Many Canadian designers became famous for their talents in areas such as Europe and New York. Although the industry of today still struggles with this, there has been an increasing amount of fabulous Canadian talent staying in Canada as consumers are becoming more educated on quality and the issues that “fast fashion” has put on our environmental footprint. Many Canadians have made notable advancements in the international garment and fashion industry. Some examples are false eyelashes, MAC Cosmetics, Elizabeth Arden and supermodel Linda Evangelista. And did you know the hockey mask, protective cup and jockstrap were all invented in Canada? Canada may not have a set fashion template you can plug into a historical timeline like one you would find in European history, but that is because we are constantly evolving. Canada has such a mix of cultures and we are always integrating these cultures into our fashion scene. It’s one of the many things I love about Canada.

Blouse: tucked in or left out? Pants: flare or fitted? Jacket: peplum or deconstructed? Heels: wedge, platform or flat? How to put together your dayto-day look can be very overwhelming. In a recent scientific study noted in the Journal of Experimental Social Psychology, researchers have found that the clothing we wear affects our behaviour, mindset, personality, disposition, confidence and even the way we interact with others, this is called “enclothed cognition.” “You should be dressing your body in a way that makes you look and feel confident,” says local fashion maven Jesse Whale.

Jesse’s passion for fashion developed in her early teens and flourished when she started working at various retail clothing boutiques in Belleville. She would often find herself assigned to work in the fitting rooms where customers asked her advice on how to put together various outfits.

“So off I would go to hand select items for them to try. Essentially, I was their personal stylist. I had a lot of fun,” says Jesse. As much fun as fashion can be, it can also trigger certain insecurities and negative body image issues, both of which Jesse

can relate to. She is very open with her story of dealing with these challenges and says it is only in the last few years that she was able to heal herself. Her therapy was assisting others — both men and women — change the way they feel about themselves through how they dressed. She is now an advocate for self-love and body positivity, no matter your shape or size. One of Jesse’s creative outlets is sharing her self-acceptance message through social media. While Jesse was a student at St. Lawrence College studying advertising and marketing, she wanted to create a place where people could go for inspiration and advice — it was

So, one day I was driving up this road and noticed a biker heading toward me. Nothing uncommon about that. However, this time I was floored by what he was doing... It moved me and I wanted to recreate the emotional experience that remained with me for days. I contacted a friend (Al Pinkerton) who at one time organized the Ride For Dad day in this area. I wanted this photograph to be as real as possible. She gave me the name of Doug. He is the real deal! I stood with him by the road while he told me his story of being captured and tortured in 1980 in the Middle East (Beirut Lebanon) when the US Embassy was under siege. The flags in the background almost stood to attention with respect for this man. Each flag represents 1,000 Canadian soldiers that have given their lives for this country. When it comes to our skin, we often stress about what we put on it. And while that’s important — chemicals and toxins can irritate and age our skin — it’s equally important to take care of our skin internally. Proper nutrition and healthy habits are essential for looking and feeling vibrant. Add these key nutrients to your drinks so you can glow from the inside out! Water. Your cells are primarily made up of water, and your skin cells are no exception, so it makes sense that you need to consume an adequate supply to hydrate your skin and make it more plump and retain its elasticity. Furthermore, your body needs water to properly utilize collagen and flush out toxins. Aim to drink two litres of water every day — and if plain water isn’t your jam, add lemon slices for kick! Carotenoids. Beta-carotene, lutein and lycopene are all carotenoids that can help make our skin look radiant, due to their high antioxidant content and anti-inflammatory properties. These fat-soluble nutrients are what give fruits and vegetables their bright colouring: think carrots, sweet potatoes, kale and tomatoes. Research shows that carotenoids can help protect the skin from sun damage and prevent premature aging. Juice these veggies or add them to a smoothie for a nourishing breakfast!

It is undeniable, there is a movement of women wanting more than what their nineto-five job is offering. Whoever said a woman is never satisfied may indeed be right. When it comes to our careers, why should we be? We often sit complacent in a job we may have simply landed in, allowing ourselves to go through the motions day after day. We spend the majority of our waking hours at work and it is unfortunate that most are lacking in both drive and passion. And that’s where the side hustle comes in. If you aren’t familiar with the term, I’m sure you are familiar with the idea. All it takes is a scroll down your Facebook page, seeing the growing number of vendor shows, or having yet another friend excitedly fill you in about her new venture, to understand that women are pushing fear to the side and aiming high. What you may not have thought about is why. Outlined below are what I believe to be the four main reasons becoming an entrepreneur-on-the-side is increasingly attractive to women.

According to Ontario Craft Brewers there are over 180 operating breweries in Ontario and the list is growing with an estimated 50 more in the planning stages. Pure Ingenuity Inc., a dynamic small business in Kingston is now designing and manufacturing the new Spearhead Brewery. For decades, Pure Ingenuity has been a leading supplier of food and pharmaceutical processing equipment to multinational food and drug companies across North America. The name Pure Ingenuity alludes not only to the outstanding expertise and creative genius of the company but also to the extreme hygienic standards its equipment fulfills. Now, these engineers and fabricators are applying their expertise to something extremely worthwhile... the making of really good beer! In the words of Pure Ingenuity President Richard Ward, “My entire career has revolved around designing and building processing equipment for food companies, so when the craft beer trend started about ten years ago I wanted to be involved. I met the founder of the Spearhead Brewing Company and I liked their innovative new beers so much I invested in the company�. Before long, Richard and a team of engineers began working on the design for a small, high end brewery.

“Brewing is a craft but it is also a science. And I knew early on that the kind of brewery I wanted to build would use the science of big brewing in a small brewery package. The Spearhead folks wanted a ‘showpiece brewery’ featuring the best sanitation system in the industry to keep the product clean and fresh. They wanted the highest levels of energy efficiency to reduce carbon footprint and improve sustainability, the highest yields of product from ingredients, and the best packaging system to preserve the fresh taste and extend shelf life.” The system includes a four vessel automated brewhouse with external wort boiling, energy recovery system, touch screen graphic controls and ethernet controlled sanitary valves. All the fermenters and other cellar vessels are built to Canadian food equipment standards for stable fermentation temperatures and easy cleaning. The CIP (clean in place) system is designed to thoroughly clean and sanitize all brewing equipment without the need for disassembly thus eliminating the possibility of beer infections that are so common in micro-breweries. Even the floors are designed to be easy to clean and self-draining to enhance brewery sanitation. The Pure Ingenuity team has been toiling on this project for three years and is thrilled to see it approaching completion. The construction of a high-end brewery involves many skilled tradespeople who are pushed to do their finest work. Engineering, metal forming, welding, electrical and programming all must work together like a well- oiled machine to produce a brewing system of this quality and sophistication. “When we finish it will be a beautiful blend of craft and science”, Richard Ward boasts. Unique to Ontario, the Spearhead Brewery will be the only local brewery designed and crafted entirely in Kingston. Pure Ingenuity plans to sell their new brewing technology to micro-breweries across North America. Currently employing 25 staff including engineers, machinists, welders, electricians and other skilled tradespeople Pure Ingenuity is one of Kingston’s greatest assets. Located on Development Drive, Pure Ingenuity is available for consultation, to solve manufacturing problems and design custom equipment solutions for businesses of many sizes and types. This fall the Spearhead Brewery will open on Development Drive right next door to Pure Ingenuity. Visitors will have an opportunity to tour the brewery and enjoy sampling the fruits of Pure Ingenuity’s labour and expertise.

Founded in 2011, award-winning Toronto-based Spearhead Brewing Company is building a new, custom-built craft brewery in Kingston’s west end. Partnering with Pure Ingenuity Equipment Design and Fabrication Group, Spearhead is expanding its production capacity to create the largest craft brewery in the YGK area, while keeping the quality and uniqueness of a small batch brewery. Spearhead is bringing its wacky, “ahead of the crowd” spirit to Kingston, in anticipation of creating a destination for beer enthusiasts.

"Sometimes you don’t know what is going to happen, but you do it anyway... We like to do exciting, crazy things,” says Tomas Schmidt, head brewmaster of Spearhead Brewing Company. 42

The Brew At the heart of Spearhead is their passion for brewing “off the hook” beers and one-offs, which are referred to as “Beer Without Boundaries.” Spearhead was voted Best Brewery in 2011, 2012 and 2013 by the Session Craft Beer Festival, and in 2014 by Toronto Beer Week Drinker’s Choice Awards. Post City calls them “One of Ontario’s most inventive brewers.” And inventive they are. Thanks to “the Legend,” brewmaster Tomas Schmidt, and a team of out-of-the-box thinkers, Spearhead has created unique beers using out-ofthe ordinary ingredients. Spearhead’s most popular, critically acclaimed beer Hawaiian Style Pale Ale features pineapple as its underlying flavour. Moroccan Brown Ale is made with dates, figs, raisins and a dash of cinnamon. Spearhead is constantly brewing up small-batch specialty brews, such as Jamaican Fire, Big Kahuna Imperial IPA, Belgian Style Stout and India White Ale, each available for a limited time only. One of their most exciting ventures is their collaboration with the Sam Roberts Band, creating a unique core brand session ale. Available now in many pubs and restaurants, Sam Roberts Session Ale will be available in cans soon. All Spearhead beer is brewed in small batches, taking more time than the average beer producer to gain a better final product. Their beer is unfiltered and unpasteurized making it “real beer,” brewed the old fashioned way. “Our products are always going to be first class products,” says Tomas. “We brew the way people should be brewing.”

The Building Located on Development Drive, in a completely gutted and renovated warehouse, Spearhead’s new digs sport a top-of-the-line Canadian manufactured brewing system built by Pure Ingenuity, with design help from a team of Queen’s engineering students. In collaboration with Pure Ingenuity, and with Tomas’ knowledge, Spearhead has adapted large brew technology to craft beer scale. For 30 years, Pure Ingenuity has provided systems for the food and pharmaceutical industries, which meet the highest standards for hygiene and cleanliness. Combining their expertise with Spearhead’s creativity is a recipe for success. The craft brewery will feature a taproom for visitors to sample beers; a retail space where customers can purchase beer, apparel and other merchandise; and a viewing area where guests can watch the brewing and production line in action. The high end canning line will have a capacity to package 70 cans per minute, which makes it the largest craft brew canning line east of Toronto and south of Ottawa. It is designed to get the product packaged with the least amount of time, oxygen and light, thereby gaining the freshest, highest quality product possible. Spearhead is also planning an event space, and is working with the city to eventually have an outdoor weekend farmer’s market for artisans and crafters catering to the west end. V.P. Richard Ward did squash Josh’s suggestion to acquire mini-pigs as mascots at the brewery, which would eat the spent grain and double as a petting zoo. Maybe a future possibility? Spearhead Brewing Company is, however, excited to support Kingston’s art community with plans to display student’s artwork for purchase, at no cost to the artists.

Josh joined Spearhead in 2015 and became president in 2016. Josh says that early in his adulthood he was not much of a beer drinker, “because of crappy beer.” But his mother-in-law gifted him with Nicholas Pashley’s book Notes on a Beermat, and that book changed his life. He proceeded to go on wacky pub adventures and in trying different beers found that he liked it after all; so much so, he started blogging about it on Beersnob.ca and wrote a beer column for Muskoka Life. As president of Spearhead, Josh’s creative mind and adventurous spirit have free reign to push the limits and lead the team in trying new ideas, as long as he can get “Old Man Ward” to lighten up.

Richard has spent 30 years developing stainless steel stuff that sort of looks like brewing equipment. He loves really good beer and the science behind it. Most of his time is spent trying to control Tom and Josh’s crazy, extreme beer ideas (see mini-pig mascot suggestion above).

He gave up a life of leisure for the promise of making exciting craft beer. In his past, he has fixed and built breweries and developed a taste for the best in beer. In hopes that he will get to retire one day, he is passing on his knowledge and expertise to his son, Jacob.


As spokesman for Spearhead Brewing Company, Josh Hayter says, “We don’t pretend to be brain surgeons, we make beer for a living. We do it well and have fun while we do it.” The team looks forward to being part of the city of Kingston — not just in building a brewery and expanding their brand, but in building a sense of community as well. Tomas noticed on a visit downtown, that “People are always smiling.” He says, “Kingston is an interesting community and we are very excited to enjoy the people and spirit there.” While Prince Edward County is often regarded as “Wine Country,” the Spearhead team hopes to work their magic and create “Beer Country” out of the Kingston region. So Kingstonians, get ready, Spearhead is coming! And as Josh says, “We do everything at 200 miles an hour, like our hair is on fire! Cheers!”

Chien Noir Bistro Chien Noir Bistro, Tim Pater’s flagship restaurant is a fun, upbeat brasserie. Served with a cashew satay sauce and sprinkled with sesame seeds, the ribs pair well with MacKinnon Brothers Absinthe Wheat Ale. Made entirely from ingredients grown on the MacKinnon’s family farm, this ale hints of citrus and herbs, which complements the flavours of the ribs and refreshes the palate from the chili heat. MacKinnon Brothers Brewery beers are a staple at all Black Dog establishments, and were in fact the first restaurants in Kingston to serve MacKinnon’s beer on tap.

Harper’s Burger Bar Harper’s Burger Bar on Princess Street is a fun, contemporary, upscale burger joint lined with warm brick walls, cosy booths and Edison style lighting. For a treat, indulge in an old-fashioned shake or a special “beer float.” Harper’s, like all the Black Dog Hospitality Group’s restaurants, supports local craft breweries, dedicating a tap to a rotating supply of beers brewed locally. Staff are well educated on the types of craft beers available and are helpful with pairing suggestions. Harper’s Burger Bar is the type of restaurant you return to regularly, knowing you and your friends are bound for a good time. Thinking outside the bun, Harper’s features a delicious plate of Pulled Pork Tacos; slow roasted local Haanover View Farms pork shoulder

All Aboard the Barley Bus

The Kingston region is known for limestone architecture, gorgeous waterways and recreational settings. Over the past few years the area is also becoming known for its craft beer culture with numerous new breweries popping up over the limestone landscape and visiting them is easier than ever before. Kelli Orr and Brian Carrie, have recently developed Kingston Gan Beer Tours. The company allows customers 
to explore and enjoy many of these new breweries by travelling aboard The Barley Bus to regional breweries, cideries and wineries, or by enjoying a unique walking tour in Gananoque. All tours focus on craft beer and celebrate the history and legends in the area. Kingston Gan Beer Tours launched their first tour in spring, 2017. Currently, three different bus tours — accommodating 12 to 40 patrons — are available daily for individuals or groups looking for a day of craft beer samples. The second tour, the “Spirits of the Rideau” includes the Gananoque Brewing Company, Top Shelf Distillers in Perth, Perth Brewery, Scheuermann Winery in Westport and 
4 Degrees Brewing Company in Smith’s Falls (when open). The third bus tour, the “County Craft and Cider” tour takes patrons to Prince Edward County, making four stops of many choices: MacKinnon Brothers Brewing Company, Parsons Brewing Company, Lake on the Mountain Brewing Company, 555 Brewing Co, Barley Days Brewery, Apple Falls Cider Company, and Kinsip House of Fine Spirits. These lists will evolve to include any new breweries that open throughout the summer. All tours include samples of craft beer, with some stops also offering wine, cider and spirits. Information about beer and the brewing process is provided at each stop, with operational tours where possible. All bus tours include a catered lunch or one provided by a partnering establishment. While on the bus, knowledgeable tour guides will provide guests with snacks, games, and plenty of water. Along the way, the group will hear about local history, legends and local events running in various areas. Guests on the tour will have an opportunity to purchase additional beer and/or cider and wine, and many breweries/cideries have additional merchandise available for purchase.


The cost of each bus tour is approximately $99 per person and will take four to six hours, depending on the tour. Departures are usually from the K-Rock Centre but alternative arrangements are possible for interested groups to be picked up from other locations or cities in the region. Individuals can purchase tickets online for tours, and private groups of 12 or more can book The Barley Bus any day of the week for a tailored tour, suitable for bachelor/bachelorette parties, corporate events, networking opportunities, university and college students and more.

Walking Tour For those interested in walking tours, Kingston Gan Beer Tours also offers a Gananoque walking tour. Groups of five to 15 people are led by a guide to the Gananoque Brewing Company, and then taken to the Old English Pub, the Stonewater Gastro Pub, and the Gananoque Inn. Guests on this tour sample craft beer and food pairings are provided at each stop by local chefs to complement the regional craft beer selections. The cost for this tour is $65 per person. Most of us have some vague memory of our first sip of coffee. Mine goes back to when I was 14; I was skipping school with some older kids (sorry mom!) and we were all headed to a local coffee shop. Hesitant, I ordered a cup of brewed coffee, black. Probably not the best choice for a coffee newbie! I felt pretty cool with my big mug of coffee, but could barely chug a few sips back. It was so absolutely revolting to my teenaged palate. Still, I felt a distinct sense of fascination with this beverage that seemed to me an essential part of becoming a proper adult. Surely there was more to this whole coffee thing than this unappealing cup before me?

Fast-forward a few years, and many great (and not so great) cups of coffee later, I started really enjoying this brewed wonder. I came to appreciate all of the steps that go into making a cup truly special. But only once I stumbled upon the world of specialty coffee did it all come together, and my passion for coffee really flourished. What is specialty coffee, you ask? Well, here are a few points to consider if you’ve heard the term “specialty coffee” and are wondering what it means. Let’s start by differentiating commodity coffee and specialty coffee:


Commodity Coffee

Most coffee consumed around the world is commodity coffee. This is what you will find at most fast-food chains, in grocery stores, etc. It has its own grading system but the emphasis is not on quality and flavour profiles, and the price is set by the open market since this product is usually traded through the New York Board of Trade. You could essentially call it your standard, mass-produced cup.

Specialty Coffee

Specialty coffee is graded on a 100-point scale. To acquire the “specialty” designation, coffee has to be graded at a minimum of 80+ points. Quality is the main focus here, which results in complex, unique coffees with interesting flavour profiles grown in small lots in special microclimates. The price of these coffees is based on quality and is often four or more times higher than the price of commodity coffee. So basically, you get what you pay for.

U

nlike “gourmet” or “premium” coffee, which are simply marketing terms with no actual meaning, with specialty coffee you know you’re getting a quality product. Much like wine, specialty coffee has many complex flavours and tasting notes. If you hear your barista describe the coffee as fruity, floral, or having notes of chocolate and dried fruit, fear not! It doesn’t mean you’re about to try a flavoured coffee, these are just tasting notes designed to guide you when trying different coffees. Another key term to look for is “direct trade,” which means the buyer (usually the roaster) deals with the producers (or farmers) directly and ensures they get paid a fair price for their product. This means the farmer can then funnel the funds back into their business and expand, purchase better equipment, pay their workers a fair wage and work with the buyer to plan what they will grow for years to come. These relationships provide a fair and stable income for the farmers for years to come, and a quality product for the buyer. It’s a win-win situation! If you’re new to the world of specialty coffee or feel intimidated by all the choices, I suggest finding a café where you feel comfortable and the staff is friendly, and asking questions. This way the staff can make recommendations based on your preferences and suggest some drinks you may enjoy. Like most things, it may take a bit of trial and error to figure out what you prefer, but trust me, it’s worth it! Coffee is one of those affordable, simple pleasures in life. Make it a part of your regular routine to pop into a quaint little café, sit down with a good book, and sip a great cup of coffee. You may be surprised to find that the world of specialty coffee becomes an exciting adventure that pulls you in.

The Next Natural Step in Luxury Flooring

voking memories of rustic English farmhouse kitchens, there’s something satisfying about having natural stone in the home. Historically, stone was only affordable for royalty, but in the last 50 years the production of stone tile has made the material more accessible for homeowners. In a time when so many flooring materials do their best to imitate natural products, it’s an affordable luxury to have the real thing. One of the most popular choices in stone flooring is limestone. Limestone is a sedimentary stone formed in ancient sea beds, whose characteristic colours include neutrals such as off-white, beige, tan, taupe and a light blue/grey. Popular in the medieval period in the construction of castles and cathedrals, limestone has been a reliable building choice for thousands of years. Limestone can have numerous fossil impressions in it, evoking memories of sand and sea. While it is a durable stone, it is relatively soft and shouldn’t be used in high-traffic areas of the home. Its porous nature makes it susceptible to staining as well. A heavy-duty sealant can fix those problems, however, it will need to be reapplied every few years. For a traditional and elegant look, marble is a great choice. Used by Greek and Roman sculptors, marble has come to be a symbol

for refined taste. What was once the choice of kings is much more accessible now, giving an old-world elegance to the home. A highly resilient stone, marble does need some special care when it comes to scratching and staining. Marble is a metamorphosed limestone, which gives it a hard surface that can take a high polish, giving it that glossy look it is known for. This glossy surface looks especially pristine in a kitchen or bath where the tile can be continued on the wall. Because of its associations with artistry, marble is often seen as a statement, but it is one that stands the test of time with a rich historical legacy. Travertine is a luxury stone tile that is often thought to be impractical because of its porous surface which lends itself to staining. However, with the proper milling and sealing, this stone can be a gorgeous addition to any home. Travertine can be honed to give it a satinsmooth finish and very little reflection, or it can be polished, which gives it a high-gloss finish that reflects light and highlights the stone’s colour and markings. The characteristic colours of travertine are off-white, beige, tan and yellow, and it makes a great choice for hallways, entrances and living spaces. Its matte finish provides a warm look, and feels soft underfoot. Most quality

travertine comes from Italy and Turkey, which have the biggest and most wellestablished stone quarries. Stone tile flooring works well in any season, whether you’re looking for the cool touch of stone in the summers or the luxury of heated tiles in the winter. Adding a touch of the old world and nature to your home, stone tile is a great investment. ReFINEdKINGSTON

A giant oak tree is given right of passage through the deck, offering shade and protection to the entire home, and allowing the natural environment to remain a highlight of the property. Pristine landscaping surrounds the dwelling and leads down to the water by a side yard, where the waterfront, trees and flora are preserved and protected While keeping elements of the historical styling of one of Canada’s oldest cities, the Atkinson team has brought a “fresh contemporary Scandinavian design” to the interior of the three storey, four bedroom living space. An open concept layout in pale gray and white creates a modern, airy and luxurious interior. Hardwood floors and high ceilings emphasize the spacious floor plan. Cupcakes Britta’s Couture & Dreams Cupcakes The Oxford dictionary defines a cupcake as “a small cake baked in a cup-shaped foil or paper container and typically iced.” Sounds simple enough, however, the perfect cupcake is created by a far more complicated process than splashing cake batter into a muffin tin. Getting the right flavour combinations, perfecting the batter consistency, and even choosing the proper pan all lead to an evenly golden hue and a finished work of art. This is a challenge local baker Britta Flood gladly accepts, and in the opinion of her many satisfied clients, she has achieved what is hailed as the perfect cupcake. As a young girl, Britta loved to cook and often helped out in the kitchen. It was during this time her passion for baking flourished. “I always loved baking and it allowed me to be creative,” says Britta. Two years ago — after many years of baking for friends and family as a hobby — Britta decided to take her love of baking to the next level and officially opened Britta’s Couture Cupcakes. Her excitement and passion is evident as she explains some of the recipes she has created. As Britta’s business continues to grow, her plans for expansion are just as unique as her flavour combinations. Her dream would be to have a collective shared kitchen space where a group of bakers

At present she makes use of a regulated, inspected commercial kitchen, which she notes is important when selecting someone to cater food for an event. While Britta specializes in decadent hand crafted signature cupcakes that

are sure to delight even the most discerning client, she also offers classic cupcakes. Alyson Hoadley is the owner and creative director of Platinum Hair Lounge since she opened the door under the name Fossa in 2011. She is an advanced stylist graduating from St. Lawrence College in 2006 and adds to her innate sense of style with continuing education. She is a master in corrective work and current techniques with a natural eye for balance and technical skill to create new trends. As a working mother of two boys, a seven-month-old and a two-year-old, Alyson knows that our lives are often non-stop. She understands the importance of taking time to treat oneself to a relaxing visit to the salon and a good up-dated hairstyle. Her vision is to provide both the atmosphere and experience to give every single client a much-needed break.

Heather is an advanced stylist and colourist who excels in technical cutting. She graduated from St. Lawrence in 2005. Heather has developed skills in precision cutting, incorporating texture to create movement in hairstyles. She takes time to meet with clients and gets to know them in an effort to find a style suitable for both their personality and lifestyle. Heather’s love of design combined with her learned skills makes her an excellent stylist.

Morgan is a licensed, intermediate stylist who graduated in 2011. Brandy graduated in 2014. Through schooling at Aveda and Schwarzkopf she refined her skills in balayage, colouring, cutting and formal styling. She has built a solid clientele, watches trends and keeps up with current styles and new ideas. She makes her clients feel relaxed and beautiful.


Amanda has a background in esthetics, she is a master makeup artist, and since 2014 has worked as a hair stylist. She graduated in 2005 from the Versaille academy where she went on to become a lead instructor. Now she provides the whole package — creating hairstyles for clients and providing makeup application for special occasions.

Korinna is the salon coordinator. Korinna brings years of management and marketing skills to the salon. She is helping Platinum become a stronger, more competitive company. Her positive attitude is an asset and she is excited to be part of the team.

Go Italian’s cosy, casual atmosphere and amazing food has made it a popular destination for patrons for the past five years. A hidden gem, tucked away on Princess Street in Kingston, the Italian restaurant has recently undergone a change in ownership. “I would come to the restaurant once or twice a week, every week since the day it opened,” says new owner Kristal McKay. “They served incredible food and there was an equally impressive wine list. When I heard the previous owners were selling, I looked at my husband and said, ‘I’m going to buy Go Italian.” Kristal then went to work planning how she would make her dream a reality. With months of research and

planning, all with the support of her husband, Cody, in August of this year she officially became the new owner of the quaint restaurant she already loved so passionately. The family friendly, welcoming space is ideal for gathering with la familia for dinner, as there is something on the menu to please everyone, including a large variety of gluten-free options. In the evenings, the warm inviting décor promotes intimate conversations, which make it an ideal date night restaurant, where you can peruse the curated wine list and “pick a beautiful bottle of Luigi Righetti Valpolicella to pair with the Seafood Portofino,” says Kristal. In addition to being a fantastic dinner destination, Go Italian is an ideal location to meet a friend for a light lunch, a colleague for an authentic cappuccino and biscotti, or after work catch-up with friends for a local craft beer or glass of wine.


Customers already familiar with the mouth-watering dishes Go Italian is known for can be confident their favourite menu items will remain, as Kristal does not plan to make any dramatic changes. After all, it was the food she fell in love with in the first place. She says they will also continue to use only the freshest ingredients in all their recipes. She says she will, however, look to source more of her ingredients from the local market whenever possible, as she recognizes this is an important part of the dining out culture in Kingston. Every house, every product of architecture... should be a fruit of our endeavour to build an earthly paradise for people.” – Alvar Aalto, Finnish Architect, 1898-1976 Creating little pieces of paradise was what Kristian Vincent had in mind when he named his company Paradise Construction. Whether designing and building houses from the ground up, or renovating existing structures, Kristian seeks to create perfect pieces of paradise for every single client. A home paradise means something different to everyone. For some, it might be a re-creation of their favourite Caribbean resort; others may want a private, luxurious bathroom where they can unwind after work; and some might wish for a designer den. Whatever the homeowner dreams of, Paradise Construction can make it reality. Kristian creates fully finished spaces with unique, and often opulent details, where clients can find rest and relaxation.

In a recent bathroom remodel, Kristian took a small existing, outdated bathroom and masterfully re-designed the space to create a modern “hotel style” bathroom. To gain more space, he first knocked through a wall into a bedroom, shortening the bedroom slightly but adding significant space in the bathroom, enabling him to build a large walk-in shower with a built-in bench. All four walls were covered floor to ceiling with 12 x 24 tiles in a stretched marble pattern, with a glass wall separating the shower from the rest of the room, but still admitting light. The homeowners now enjoy a rain-head shower fixture. A recessed shelf and LED lighting complete the luxurious area. The bathroom floor is finished with form works concrete in a complimentary style. Kristian added a “floating” vanity, topped with a pure white marble counter. Sleek and spacious cupboards house toiletries, keeping the surface clean and clutter free. A one-piece toilet completes the modern, refined look that Kristian and the homeowners desired. Most of the products used in the project are available at Gananoque Home Hardware.

THE STORY OF

Fête Beach Boutique Every small business starts with a story. The story of Fête Beach begins with a mother-daughter trip to Europe that owner Heidi Bergeron took with her daughter, Zöe, who was living in France at the time. The pair travelled for two weeks to luxury destinations — Venice, Florence, Milan, Paris, Nice, Cannes, Barcelona, Santorini and Mykonos — driving along winding roads, getting lost, and loving every minute of their adventure. While wandering through the streets of Venice, the pair happened upon a shop that sold clothing that was different than anything they’d seen before, at home or abroad. “Castiglia Boutique in Venice is where I fell in love with La Bottega di Brunella,” says Heidi Bergeron. Drawn by the organic linen fibres, soft woven textures, natural colour palette and loose, sculptural lines of the clothing, both mother and daughter were smitten.

Later on their journey, on the island of Santorini, Greece, the pair was delighted to discover another shop carrying a selection of “Brunella” linen. The love affair ended for a time, however, after Bergeron returned to Canada and discovered that the only online source for Brunella clothing was based in Australia. She imported some pieces for herself, and quickly discovered it was impractical to do so, as the duties and taxes to bring the items from Australia were prohibitive. “Brunella” was gone, but not forgotten.


Several years passed, and another mother-daughter trip to Europe was planned with daughters Eila and Zöe to the Amalfi Coast to Positano, where La Bottega di Brunella is made. “I had arranged a meeting with Cristina, one of the owners of the shop, beforehand,” says Bergeron, who hoped to convince the family to allow her to bring the clothing to Canada for re-sale and wholesale. “We spoke no Italian, but the family spoke some English, and over the next several days our families connected.” Bergeron was introduced to Vito Casola, the original designer of the clothing line, and his wife Brunella, a dressmaker — the dynamic team that created La Bottega di Brunella in the 1960s. “They’re still in the workshop every day, along side their children Cristina and Anna-Maria, and their grandson Vito who is the same age as Zöe, as well as other family members.

We became friends, and a business relationship was born,” says Bergeron. The trio were taught how Brunella clothing is woven on an ancient Neapolitan loom from carefully selected raw fibres into unique fabrics, which are then brought to the workshop in Positano, to be cut and sewn. “Each piece is a work of art,” says Bergeron. Positano buying trips are now an annual treat for Bergeron and her family. “Zöe, Eila and I are so pleased to share this beautiful line of luxury Italian linen resort wear with our Kingston customers through pop-up shops, at our new Prince Edward County shop Fete Beach Boutique, and online. We also wholesale to other fine boutiques.”

Brennan now works with his father, which is a testament to how the company operates. Spraying insulation is hard physical work, requiring strength, stamina and skill. Kevin is raising his sons with the same work ethic he developed. Although heating costs and winter weather are far from everyone’s mind in summer, this is an opportune time to plan ahead and prepare for the future. Kevin suggests people with older homes explore retrofitting grants that are available to encourage Kingston homeowners to develop a greener community with more efficient homes. Consider the cost of where you lay your head at night. Living in a residence or apartment can be a great experience, but it is also expensive. In 2009, the average cost of a four year degree for someone living away from home was $77,132, compared to $51,763 for those living at home.* If you do decide to live away from home, sharing an apartment is usually cheaper. Investigate every possible income source. Before applying for a student loan, check out scholarship or bursary possibilities from the school, provincial governments, foundations, religious groups, service clubs and civic groups, and at these websites: Canlearn.ca and Studentawards.com. Budget realistically and don’t budge. List the many expenses you’ll encounter, such as tuition, books, accommodation, travel and food, and don’t forget your ‘fun money.’ Balance those costs against your resources such as RESP income, family contributions, personal savings, and income from summer and part-time employment. Manage your borrowing and debt. If you do apply for a student loan, don’t deepen your debt by borrowing more than necessary. Credit cards are readily available to students but they can drown

you in debt. But they can also be helpful in an emergency, or for establishing a credit history. Make the responsible choice. Don’t pay needless fees. Universities often charge for a student medical plan, but you can opt out of the school’s coverage when you’re covered by a plan at your parent’s employment. Buy used textbooks. A lot of learning is now done on e-devices, but when you need traditional textbooks, buy used. Then sell them at the end of the semester. Take advantage of free or inexpensive programs. Use the school gym or clubs and sporting events. Eat economically. If your tuition includes a meal card, use it instead of eating out. If you’re not on a meal plan, cooking your own food saves money. Shop around for bargains and use money-off coupons. Make the most of government relief for students. File a tax return to take advantage of tax deductions and tax credits for education costs. Filing a tax return also allows you to build RRSP contribution room for the future. Talk to a professional advisor about these and other strategies for relieving the financial stress of your education and for a sound financial future after graduation.
