Closer to Havana than Miami, Key West has always been the place to abscond to when things get too much up north. In the late 1940s, President Truman ran the country from here when the stress of Washington got to his head; Hemingway wrote his war novels here in peace under the Caribbean sun (in the company of 66

A celebration of family and harvest, Chuseok (추석) is one of the biggest and most significant holidays in South Korea, where family members from all corners of the country will come together to share food and give thanks to their ancestors. Chuseok is the Korean equivalent of Thanksgiving Day and is honoured with traditional customs and rituals encompassing dress, food and dance. On the morning on Chuseok, family members gather to perform a memorial service called Charye to honour their ancestors. Formal Charye services are only performed twice a year: during Seollal (Lunar New Year) and Chuseok. The main difference between the two is that during Seollal the major representative food is tteokguk, a rice cake soup, while during 30

Chuseok the major representative foods are freshly harvested rice, alcohol and songpyeon (rice cakes). Traditionally, Korean women of each household would gather to handmake these half-moon shaped treats filled with sweet bean or chestnut, and it was believed that those who could make pretty songpyeon would be blessed with beautiful daughters. Today, songpyeon can be store bought, and is available in elaborate floral designs, intricately wrapped and adorned. During Chuseok, many cultural sites including Deoksugung Palace, Jongmyo Shrine and the heritage Namsangol Hanok Village will host special holiday events such as traditional games and dance performances. Palaces like the UNESCO World Heritage
Changdeokgung Palace and Huwon, Gyeongbokgung Palace, and the Joseon Royal Tombs will offer free admission to visitors wearing a hanbok (traditional

INNER DEMONS I WAS READING A QUORA ARTICLE earlier today that answered the question: What is it like to work with Elon Musk? The former head of talent acquisition at SpaceX shared an anecdote that perfectly illustrated how he managed to turn what would potentially have been a crushing defeat into a motivational win for his team. She described how, within moments of the crash of the third Falcon 1 launch, Elon addressed the company ahead of the press and reminded them of the tremendous feat that they had already achieved, that he had prepared for the possibility of the failure, and encouraged them to pick themselves up, dust themselves off, and soldier on. “For my part, I will never give up, and I mean never,” and that if they stuck with him, they would win. Within moments, the energy of the crowd went from despair and defeat to a massive buzz of determination, and people began to focus on moving forward instead of looking back. In her own words, “I think most of us would have followed him into the gates of hell carrying suntan oil after that.” Although the article also prefaced itself by saying that “working with him isn’t a comfortable experience”, isn’t that where we find our greatest selves – outside of our comfort zone? It is said that you cannot dream yourself a character; you must hammer and forge one into being. Not many of us are blessed with a leader like Elon Musk, but I believe that within us all is the potential for a little Elon to exist – a little Jiminy Cricket-sized Elon Musk that sits on our shoulder to pick us up, dust us off, and motivates us to keep hustling every day. hile my stay in Myanmar was a short one, it was not difficult to notice how the traditional Burmese culture blended in with some of the more modern cultures, practices, and technologies. It was commonplace to see Burmese women dressed in trendy and fashionable blouses coupled with the traditional Longyi (pronounced long-gee). This long woven fabric, typically made from vibrantly coloured cotton or silk, is wrapped around the waist and hangs like a long skirt. 16
FACETS OF TRADITION OF MODERNITY A more physical representation of the modernmeets-traditional vibe of Myanmar is the Sedona Hotel Yangon. A JAUNT AROUND TOWN Located mid-downtown, the Sedona Hotel Yangon prides itself as a “city hotel with a resort feel”. SONY RX100 IV This pocket-sized powerhouse certainly packs a punch! For those who want dreamy, aperturepriority shots without having to lug around anything larger than a hefty powerbank, this is your go-to camera. IT‘S 11AM AND THE GENTLE SUMMER SUN begins to warm my skin – like kisses from the divine. The late August air shimmers on the horizon and the occasional cool breeze wafts through the moorlands. Blooming fields of flowers have come and gone, and all that remains are a couple of loose clusters scattered across the park. The skies are a vibrant azure – a fine canvas for the almighty Alps that stood beneath it. And even though in late summer the Alps are just mostly bare, jagged rocks with the exception of its highest peaks, it is still breathtaking to be in such close proximity to the mountains.

DISCOVER THE TREASURES OF BIODIVERSITY Known as Alp Flix, this high plateau moorland is located within regional national park (RNP) Parc Ela, the largest nature park in Switzerland. Fertilised and dry grass meadows are intermingled with mountain forest, high and flat moorland and mountain lakes to form a multifarious mosaic. In Alp Flix alone, 2,092 species of flora and fauna were discovered within a span of 24 hours back in 2000. “I have discovered about 500 species of flowers myself earlier this season,” says our local guide Victoria, an affable middle-aged lady of Romansh heritage. “Now that summer is ending soon, we are using the fields to gather hay and make farming tools. In the next two months, autumn magic happens and the leaves turn to a gold, red and rust colour. The view is simply beautiful, especially from high up the mountains.” Unsurprisingly, Alp Flix is a tranquil country

Unwind within the terrace in the evenings and watch the last warming ray of the sun set behind the sharp mountain silhouette
place, but it wasn’t always so. Until the 17th century, the Walser people had populated the area until they permanently abandoned the settlement to live in Sur. Now, all you can hear is the ringing of cowbells, the relaxing sound of gentle streams flowing down the Alps and the occasional shuffling of hiking boots against gravelled paths. With a relatively flat terrace set 2,000m above sea level, it is an appropriate area for hiking beginners, families or group of friends for a great alpine summer adventure. The circular hike is an ideal route for those pressed for time. It starts at the new parking area in Alp Flix and leads into the moorland plain, Alpine hamlets of Tgalucas and Cuorts, and eventually Flix lakes and Lai Neir before looping back. The treasure trove of plant species to be discovered is varied and includes plants native to high altitudes, alpine flowers, berries and even mushrooms! “A lot of our visitors from

At the Savognin Visitor Center, visitors can even get locals to check if the mushrooms are safe for eating. Lake Blue (Lej Blue in Romanash) is a work of art in itself. As if the finest of mirrors, the expansive blue sky and neat rows of pine trees reflect a flawless image in the water. For 36 Francs, parents may purchase a discovery kit for their kids to explore the park like a researcher. The questionnaires allow kids to identify the flora and fauna in the park, test the pH of the lake or simply learn about the ecology of the park. Piz Calderas and Piz D’err fringe the portrait and all that was missing from this unrivalled image are canapés and champagne for a relaxing picnic. If picnicking can’t be arranged, try Berghaus Piz Platta, a mountain house located away from Lake Blue. It is as an Alp hut in summer seasons, offering an overnight roof for hikers and a place to rest and refuel for daytime visitors. Here, you can get an authentic Swiss meal starting with a refreshing cup of Apple Shorley, fresh apple juice mixed with carbonated water.
AT THE HOME OF THE KING OF THE ALPS Divided by a series of mid-range Alps, almost parallel to Savognin on the west, is Casti-Wergenstein. This idyllic municipality transports one back into the past as the valleys and rustic buildings have remained untouched since the 1700s, or even earlier. From the bottom, rustic Swiss cottages dot the grassy hills covered in pines that stand straight up like spikes that flank the roads that wind around the mountain. Standing on the other (peak) end of the valley peeking down, rivers are streaming through deep valleys in the far distance next to a small but close knitted township nearby. RNP Naturpark Beverin is the highlight of this region, and home to hundreds of mountain capricorns (also known as ibexes in Romansh) living on the cliffs around Piz Beverin. Together with 3,000 inhabitants, Naturpark Beverin staff strive to find solutions to work towards an economically and socially sustainable development in this region. This is the reason why nature and educational tours are highly recommended here. Owner of a dairy company and local guide Michael Magnasch invited us into his alp dairy on Alp Curtginatsch, also the highest alp with cows of the canton Graubünden. One of the biggest alp dairies in the region, it has approximately 100 cows and they are milked daily. The 2,000L of milk collected every morning is used to produce cheese and other dairy products, shared our Belgium postman, who works as a Swiss cheese maker during the summer. Right out in front of the alp dairy is the viridescent pasture leading up to the crown of the rocky grey mountains. There is no need to conquer the mountain because from up here, it already feels like the summit of the world – peaceful and serene. Though it is summer, temperatures run at a cool 19˚C at its warmest. The unspoilt landscape is only viable on foot and with a bit of luck, ibexes and marmots can be

spotted. Interestingly, ibexes were only re-introduced to Switzerland in 1956. They were once used as a food source until their numbers dwindled to nothing and locals had to steal some from the borders of Italy to breed them in St Gallen. Thankfully, this (illegal?) operation was a success and the alpine animals were returned to the wild in Naturpark Beverin and Italy. Stafel Nurdein was built in 1925 for the sole purpose of milking cows. Up until the 1950s, the alp hut was fully functional but was abandoned thereafter. In recent years, there have been plans to convert this rundown cottage into an alp house. Because the moorland is a protected area of national importance, showers and sewage systems are prohibited. Thus, only a simple bed and breakfast will be made available at a cost of 30 Francs per night for communal sleeping quarters, and 60 Francs per night for a private room, which will be more suited for families and groups of friends. Isolated patches of nature, mostly evergreen meadows and rolling tussocks, surround the cottage. There are lots of trekking routes available in this area to fit all levels of experience and fitness. Call it sheer luck but while on a trek, we managed to spot some alpine marmots popping out of their burrow, surveying the environment before scurrying back, and a herd of ibexes at the peak of the Alp.

CANYONS AND MOUNTAIN PASSES Life is full of ups and downs – especially so at Viamala, a route within the Naturpark Beverin in the heart of the Graubünden canton. But here, the ups and downs are simply magical. A 20-minute car ride north of CastiWergenstein will bring you to the Viamala Gorge, an impressive natural monument with up to 300m-high rock faces, which, at their narrowest spot, are only a few metres apart. Carved through the massive cliffs thousands of years ago by glacial ice and the waters of the Rhine (Hinterhein), the Viamala Canyon still contains living evidence of its fascinating history to discover today. As we walked along the Viamala Route 13 towards the famed Wildener Brücke (Wilderner Bridge), our eyes catch sight of wooden figures of Roman statues placed within gaps at the top of a cliff. That was the treacherous path used 2,000 years ago by the Romans to move from Italy to South Germany. The surroundings might be an exquisite sight but it was a wild and life-threatening journey for the travellers that once walked this path. Standing on the bridge, the first thing you’ll be able to spot is the zigzagging 359-step stairway leading down to the heart of the gorge from the visitor center. At the end of it, there is a rock gallery that showcases limestone, quartz and slate that make up these noble walls and rugged canyon.

The Viamala Gorge is just a pit stop along The Via Spluga, a classical cultural hiking route within the central Alps that, throughout the centuries, has linked the towns of Thusis and Chiavenna. The route offers the opportunity to appreciate a slice of genuine history, and allow hikers to know more about the mountain terrain alongside the local population whose life has been greatly influenced by generations of travellers making their way across the Alpine pass. It covers a distance of 65km and begins in Thusis (720m), all the way down south to Chiavenna (333m). There is also a shorted, leisurely 45-minute hike route from Viamala Gorge to Zillis, Rania. Stephan Kaufmann, deputy director of Viamala Tourism, lead our group. Within the forest trail, the sky vanishes almost completely, leaving fragments of blue peeking through the canopy. Sparse pines cover each square foot of forest floor and the air reeks of rotting wood. It doesn’t take long before we arrive at Viamala pedestrian bridge that was brilliantly constructed in 1999. The bridge is made of steel and stone and although it looks unstable, is very strong. “You can jump on it without worries,” jokes Stephan. From where we are, we can see the young river Rhine meandering through the forest. Imagine a place on earth where you can safely drive at high altitudes with superb views of the valleys and polished glacial rocks. That very place is the San Bernadino Pass, one of the world’s ultimate driving or biking routes. This winding road takes one from Chur to Ticino over incredibly smooth roads, lined by Alpine trees and awe-inspiring scenic views. Several deserted castles and ancient churches along the way are testimony to the importance of this valley in the Middle Ages where it served as the main trading route between North and South Europe.

THE UNFAMILIAR GREEN OASIS Famous writer Max Frisch made Onsernone Valley his home back in 1964. He liked the idea of living within nature’s nest for its abundance of fresh air, calmness, and stillness, and the surroundings inspired his tale, ‘Main in the Holocene’. Amazingly, this piece of land that shares a topography similar to Singapore has managed to retain its unique characteristics for future generations to enjoy, an effort of the Locarnese National Park Project. “Technically, you are now standing on two continents: Africa and Europe. Because of tectonic plate movements, a collision occurred with both continents that led to the fold up of a high mountain range, known as the Central Alps,” says Giovanni, a renowned meteorologist in Switzerland, as he pokes his 50
hiking sticks into the ground while we climb up Salei. “Anticyclones form from air masses cool down to temperatures lower than their surroundings, which causes the air to contract slightly, making the air denser. Because of this, the humid air mass that comes from Italy makes the region moist and this results in dense rainforest.“ Salei is easily accessible, and a fun place to spend the day. From Vergeletto-Zott, a tiny four-seater cableway takes passengers up to Alp Salei for a panoramic view of the deep canyons and Amazon-like forest. The hike is easy and the trails are well paved with routes that smoothly ascend. Wild grass line the path and larch trees slope over the forest floor. It is as close I can call to a walk in the park with the exception that these park grounds are 2,000m above sea level and adjusting to the

high altitude will take some time. We reach our final destination, Pond Salei, in no time at all. It lacks an ethereal sparkle under the sunlight but there is a deep sense of serenity and achievement when we see it. Ancient villages where people still live and work today will be part of the future Locarnese National Park and these will serve as a one-stop cultural centre for visitors. One fine example is the Farina Bóna Mills in Vergeletto, which produces Farina Bóna, a traditional corn flour made from Zea corn. The corn is first toasted then finely ground
into powder and used to enhance flavours of food. A familiar smell of popcorn fills the air here, where a modern industrial coffee grinder is used to produce Farina Bóna. It is highly likely that Ilario Garbani, the owner of the mill, is the only one left in the world to produce this corn flour. Ilario started his mill out of a school project that soon turned into a business opportunity. But instead of focusing on making a profit out of an archaic tradition, Ilario uses the mill to educate visitors and lays the foundation of how Farina Bóna has played an integral part of Onsernone’s history.

Built in 1780, Palazzo Gamboni is set in a bucolic location that overlooks Onsernone Valley. The charming country house was bought by the citizens’ community of Comologno and converted into a small hotel for travellers in 1996. The charming house has its original exterior façade and its interior is filled with antique furniture and contains details that reflect the history of the building. There are two wings to the hotel: one has modernly furnished rooms, while the other wings’ rooms follow authentic traditions. Book rooms in the latter for a bona fide experience.
Cardada is distinguished for its magnificent viewpoints but in summer seasons, it is also great for camping and children activities. LIVING LA DOLCE VITA 2,300 hours of sunshine per year and a church established after an appearance of the Virgin Mary – this is Locarno town within Canton Ticino, the warmest region in Switzerland. The urban landscape of cars filling up the streets as peak hour approached, people milling about on the pavements and an orderly chaos in the train station is vastly different from the still and quiet nature we’ve had the pleasure of experiencing the past week. Locarno is the prime example of Ticino, with its palm trees lining the roads accompanied by an Alpine hinterland and a plethora of buildings, both ancient and modern. Madonna del Sasso, the pilgrimage church, is the most noticeable landmark of Locarno, as it seems to float about the town when viewed from a distance. The church was consecrated in 1487 on the spot where the Virgin Mary was said to have appeared to Brother Bartolomeo da Ivrea from the San Francesco monastery. It remains one of the most important religious and historical sites in
the canton of Ticino and many locals choose to walk up from the city centre instead of opting for the funicular. Restoration took place in 2012 but statues have been replaced with new ones. From the corridors of the chapel, we have a stunning bird’s eye view of the city, lake and mountain range. I may be back in the city but I feel at peace in the chapel adorned with beautiful frescoes. Before the 1950s, Cardada and Cimetta were destinations for winter sport enthusiasts, who ascended the mountain on foot while carrying their skis. Then, between 1951 and 1965, ski lifts were built to entice more skiers onto the slopes. Together with the cableway that began in December 1953, tourism began to flourish with the help of restaurant and cabin openings in the vicinity. Since then, the cableway has been renovated extensively to meet the needs of affluent visitors and the latest one is a panoramic teardrop shaped cableway. Nowadays, the mountains remain a simple but popular getaway to nature throughout the whole year. 52

A short drive away from Locarno is Ascona, the lowest lying town in Switzerland. Its mild climate, old town, lake promenade and Latin-ambient street cafes are just some of the reasons why it is so well received. A visit to this northeastern state simply wouldn’t be complete without a dip into one of the great natural wonders of the world – the Great Barrier Reef, home not just to some of the world’s best diving and snorkelling, but also more than 900 islands some of the best luxury resorts in the country. As one of the world’s largest coral reef systems, the Great Barrier Reef is home to thousands of marine species, including dugongs, turtles, dolphins, whales, more than 1,500 species of fish and 4,000 types of molluscs. Not just restricted to underwater critters, there are also about 200 species of bird that thrive (and depend) on the reef for survival. Its sheer size means there are virtually dozens of different ways to experience this incredible wonder, with tour operators operating in towns up and down the Queensland coast (including Bundaberg, Airlie Beach, Townsville and Cairns). You can fly overhead and sail directly on top of it, or even sleep on it – yes, sleep on it – if you like. But snorkelling or diving those clear turquoise depths offers a magic all of its own, giving you an intimate look at the kaleidoscopic colours, unbelievable array of marine life and crystal clear waters which stretch seemingly into infinity. In some parts of the reef you can dive with green turtles or manta rays, while others offer the once-in-a-lifetime opportunity to swim with rare dwarf minke whales (Eye to Eye Marine Encounters; marine encounters.com. au). Be sure to tick off your scavenger list of the reef’s Great 8: giant clams, turtles, clown fish, manta ray, potato cod, Maori wrasse, sharks and whales. Fat, friendly potato cod appear every day at the famous Cod Hole, expecting treats from visiting divers. The coral here is arguably some of the reef’s best, too. Want a truly unique experience? How about a dive into a shipwreck? The historical SS Yongala shipwreck has become the adopted home of hugely colourful marine life, and is definitely something to add on to your bucket list. The views here are so breath-taking that arriving visitors often forget – just for a moment – to take photos of this incredible scene. Instead, they’re too busy mentally filming the translucent blue waters that glitter like a million diamonds, and the seemingly endless stretch of greenery-fringed beach and silica-white sands here on Whitehaven Beach’s seven-kilometre stretch. This regular contender in Top Ten beach lists around the world is one of those all-too rare locations that actually looks better in real life than the way it’s depicted in brochures or on postcards – it’s just that difficult to do it justice. Take a short bush walk to the lookout at Tongue Point to see the magical swirling of aquatic colours in Whitehaven’s ocean inlet. Visitors aren’t usually allowed to stay overnight on this beach (unless you’ve received a special camping permit or are commandeering your own yacht), so the beach is always sparkling clean. There is a fantastic walk at the northern end of the beach called Hill Inlet Walk, a short trek that will take you up to a lookout offering expansive views over Hill Inlet and Whitehaven. There are several options for exploring the area, including a full-day cruise that will bring you sailing through the sparkling islands with the wind in your hair. Arrive with a picnic lunch and you can explore the beach at your leisure. While the restaurants at Noosa are much to fawn over, foodies should consider venturing further afield to Ricky’s, The Boathouse and Wasabi (wasabisb.com), three long-standing local favourites that are a less than five minutes’ drive from Hastings Street. Wasabi, in particular, is Noosa’s only two-hatted restaurant, and was awarded Regional Restaurant of the Year in the 2015 Good Food Guide. With its amazing food, entirely waterfront dining space with spectacular river views, and amazing sunset vistas, who could argue?

The epitome of coastal chic, and a welcome alternative to the more crowded beach cities such as Gold Coast, Noosa has a star quality all its own. Like any A-lister worth their salt, Noosa knows how to show off those natural good looks to full advantage – chic restaurants beckon and local markets and cute boutiques hold the promise of the perfect holiday memento, all stretching along a pristine beach filled with ridiculously good-looking surfers. There’s usually a midway stop where the captain will unpack a picnic basket to fix your munchies (and where the only loo stop will be, so be sure to make full use of that). A hungry goanna or two may wander up to your picnic site, but be sure not to feed them any junk food! For the aquatic at heart, Noosa is a great place for you to get up close and personal with one of the world’s most gentle sea creatures, the humpback whale. The ‘Swim with Whales’ experience with Sunreef is suitable for all; don’t your sense of adventure is greater than your swimming ability, simply grab hold of the line attached to the boat and float alongside these beautiful marine mammals (sunreef.com.au).

India is an assault on the senses, challenging you with its extremes, prompting you to contemplate who you are and where you stand in the world. In ashrams across the country, Najiah Ramlee uncovers what it takes to be a yogi here
INDIA, THE LARGEST DEMOCRACY in the world is also the world’s second largest nation with 1.25 billion people calling it home. Seemingly homogeneous at first glance, this nation of 29 states and 7 union territories is actually so diverse it is almost shocking. Nearly all of the world’s religions are represented here, while 22 different languages are officially recognised with many others being spoken across the country. India has had its share of foreign rule as well that spans over 1,100 years, with the British claiming 300 and the Mughals 800. This hotbed of various influences allowed for the shaping of Indian society as we see it today. There is no concrete history of the birth of yoga – many of the sacred texts and teachings were transmitted orally and were considered secret for many years. While the Indus-Sarasvati civilisation of northern India is widely credited with yoga’s beginnings over 5,000 years ago, some historians believe yoga may have started as early as ten millennia ago. Pre-classical yoga was developed by the Brahmans and Rishis (mystic seers); they documented their practices and beliefs in the Upanishads, of which the most renowned is the Bhagavad-Gîtâ, composed around 500 BC. The Upanishads taught that excellence could only be achieved through the sacrifice of the ego via self-knowledge, action (karma yoga) and wisdom (jnana yoga). In classical yoga, there is an “eight limbed path” containing the steps and stages towards obtaining Samadhi or enlightenment. In contrast, post-classical and modern yoga rejected the ancient teachings in favour of embracing the physical body as the true path to achieving enlightenment; the yoga masters created a system of practices designed to rejuvenate the body and prolong life, and developed a new form of practice called
Tantra Yoga (what we refer to today as Hatha Yoga), consisting radical techniques to cleanse the body and mind in a bid to free the flesh from the binds of physical existence.

HARIDWAR The next stop was to visit Haridwar, in the state of Uttarakhand, where tourists can witness devotees washing their sins away in the holy Ganges river in the daily Aarti ritual to attain Moksha or true freedom. The river flows from the Himalayas and enters North India for the first time in this city. It is regarded as one of the 7 holiest places to Hindus. It is said that Amrit, the elixir of immortality, was spilt at Har ki Pauri while carried by the celestial bird Garuda and that is celebrated every 12 years with a huge festival of ritualistic bathing by both pilgrims and tourists alike. Nevertheless, even the daily rituals are incredible to behold, where sadhus or pilgrims clad in orange robes or just loincloths join the masses on the banks of the Ganges with both pilgrims and devotees bathing in the freezing waters as the priests chant. Everyone else can also join in the fun by lighting the beautiful flower offerings and setting them afloat in the river and joining in the chants.

Just a short distance away (25km) is Rishikesh, also known to many Western yoga enthusiasts as the Yoga Capital of the World and to Hindu pilgrims, one of the holiest places where sages have visited to gain enlightenment since ancient times. The city is meat and alcohol free, one where cows have right of way and cow poop is constantly swept away. Rishikesh came to fame thanks to the Beatles who visited in 1968 and were inspired to record the ‘The Happy Rishikesh Song’. Here, one is reminded of the extremes of India, where poverty and pollution litter the streets. However, when one steps into an Ashram, it’s a completely different story - almost as though they were two separate places. The largest ashram with over 1000 rooms in Rishikesh is the Parmarth Niketan, along the banks of the Ganges, founded in 1942. Visitors can stay in its many rooms to take part in the daily schedules of yoga, meditation, kirtan, lectures and enjoy Ayurvedic treatments. At sunset, everything comes to a halt as everyone is treated to a world-renowned Ganga Aarti. Aarti means to remove darkness, usually with a flame or light. After songs in praise of a deity, devotees cup their downturned hands over the flame and raise their palms to their forehead as a blessing. The flame is waved around clockwise around a centre, suggesting how one lives with the universe or God at the centre of all activities. It was an honour to be right in front, on the river bank, dipping my feet in the holy river and even participating in the Aarti as the priests chanted. The ceremony is open to all, regardless of race, ethnicity, nationality and religion, to gather on the banks soaking in the magical atmosphere as the skies dim. After the Aarti, the spiritual head and President of the Ashram, Pujya Swami Chidanand Saraswatiji Maharaja and Sadvhi Bhagawati Saraswatiji engage in an open dialogue again open to all who seek any guidance.

KERALA Kerala, which means Land of Coconut Trees, is believed to have been built by God itself with 44 rivers, backwaters and 600km of coastline along with forests covering a third of the land. Its name already hints at its beauty and peacefulness, making it a great vacation destination. It is said that in Keralan cuisine and life, the humble coconut features so much that without it, they would not know how to live. Trivandrum, Kerala is home to a beautiful ashram which is part of the famed Sivananda lineage, the Sivananda Vedanta Dhanwantari Ashram. There are 3 Sivananda ashrams in India – in the Himalayas, Kerala and Madurai. Ashram refers to home of a guru or saint. While physical postures or asanas are what yoga is commonly known for, in the yoga sutras of Patanjali, they are only 1 part of an 8 limbed path that guides a yogi’s life. This stems from the belief that only in a healthy body does a healthy mind live. In asanas, one uses the body as an instrument to eventually connect with the higher self and universe. For visitors, it is advisable to visit the ashram from June to March, avoiding the sweltering summer months of April and May. For those interested in Ayurvedic treatments, it is best to go during the monsoon season of June to August when it is cooler as many techniques incorporate steaming. It was at this time that I learnt from the guides who accompanied us that the many gods in Hinduism merely represented pieces of the whole puzzle, each showcasing different facets of the universal truth. It is said that humans created these stories in order to help them grasp the vast concept of the One. My personal favourite is the story of Ganesha, the popular elephant God with an elephant face and a human body, the God of Beginnings and Remover of Obstacles. His big elephant ears and long nose remind us that one should learn to listen and breathe through life’s challenges. His small eyes signify concentration. His four hands hold on to objects like the axe which notes that in life, problems may come from attachment and there is a need for balance. In another hand he holds a rope, by which farmers used to control a cow, indicating how we should be able to control ourselves and our five senses from harm. Next, he holds a tusk, used to write, inspiring the attitude of
constantly learning. Finally, he holds a sweet to remind us that life is still beautiful. And to top it off, he rides a tiny mouse as his vehicle of choice, to illustrate how contradictions can always exist. All in all, India has been both nourishing and yet entirely educational, opening one’s eyes to so many extremes, contradictions which exist next to surreal idealism. It is certainly a place which lends itself to multiple trips, revealing new glimpses into India with each visit.

Feasting in Fés
It is said that in order for a nation to develop a great cuisine, it must have four prerequisites: a rich land from which to draw upon an abundant range of ingredients; a variety of foreign cultural influences; a great civilization; and lastly, a refined palace with royal kitchens to inspire the nation’s cooks. Morocco has it all, and is home to some of the most tantalizing food imaginable. From robust roasts to rich aromatic stews, spiced or sweetened salads to savoury pastries and fragrant mounds of couscous, there is such a wide variety to choose from. One great example of the country’s cuisine is bastilla, an exquisite blend of shredded pigeon and spiced onion sauce with saffron and herbs encased in a flaky, filolike pastry, topped with cinnamon and sugar – an intricate dish that epitomises everything that is grand and extravagant in Moroccan cooking.

ONE OF THE MOST INTERESTING WAYS to absorb the delights and diversity of the country’s cuisine is to visit the souks (markets) and where better than Fés, often regarded as Morocco’s culinary capital. To wander through the myriad of laneways that make up the medina of Fés el Bali (old Fés) sampling the food on offer, is to take a gastronomic journey through Morocco itself. Early morning is a wonderful time to be out and about and I set off to get thoroughly lost. Sunlight streams in slanted rays through the woven bamboo shades covering the narrow alleyways, catching the steam rising from the many cookers. Street vendors are preparing for the day’s trade and already the air is awash with all manner of exotic aromas, the hustle and bustle as stalls are set up and neighbours greet one another. Great crusty rounds of warm khboz (bread) are on display at the feet of an old man crouching behind his produce. Munching on this doughy aniseed-flavoured bread is perfect for strolling the medina. In most Moroccan homes bread is prepared every morning, kneaded in unglazed red clay pans and sent to the community bakery on the heads of children on their way to school. Close to the city gate of Bab Bou Jaloud one stallholder is already busy at trade cooking and selling one the most common forms of Moroccan breakfasts, miklee. With

deft handwork he pinches small balls of dough and presses them into a paper-thin squares covered with oil. Folded, then folded again he slips them onto a skillet sizzling with oil where they materialise into flaky pancakes and are served to eagerly waiting customers with butter and honey. In a fruit and vegetable souk, produce of every kind lines the street. There are juicy oranges, lemons and grapefruits from the sun-drenched groves of Agadir, golden melons, vine-ripened tomatoes, clementines, crisp celery and plump mounds of grapes, preserved fruits and nuts. Entire shops are jam-packed with nothing but olives - of every flavour, size, quality and colour or bunch of 72

fresh mint displayed in baskets and hanging from ceilings. I head down into the dark underworld of the souks, through alleys so narrow that the only way the shopkeepers can get their stock in, is on a donkey’s back. The medina’s 9400 lanes and streets seethe with a human tide of endlessly streaming humanity, crammed with shops, restaurants, mosques, rug stores and even tanneries. Somewhere near the Attarine quarter I stumble upon a spice souk. The smell, colour and range of the spices are striking. There’s the bright reds of paprika and cayenne peppers alongside the rich yellow turmeric, soft-hued ginger, dusty sticks of cinnamon all contrasting in texture with seeds of cumin, sesame, aniseed, caraway, coriander and many more. All are heaped in tubs waiting to be measured into twisted envelopes of paper. These are some of the spices that form the soul of Moroccan cooking, transforming simple dishes to exotic heights. This Moroccan love of spices is a tradition handed down for thousands of years from their ancestors, who brought them in caravans across North Africa from Arabia and beyond. They brought with them the sophisticated knowledge of their uses as perfumes and medicines, as an enhancement of food and as currency for trade. choice’) line the top shelf. Consisting of anything up to a hundred different spices, no two mixtures are the same and only the maker knows the quantity of the various ingredients. When I ask the shopkeeper what the contents of his mixture are, he throws his hands up dramatically and exclaims, “This is the finest ras-el-hanut in all of Fés, and the ingredients are secret.” A seductive aroma wafting from a nearby food stall reminds me that I have a lunch date. Moroccan hospitality is famous and an invitation to dine with a family is never to be turned down. Any local cook will tell you that the best Moroccan cuisine is eaten at home, lovingly prepared by the lady of the house. “Welcome my friend, come, my home is your home!” says my host Taleb drawing me into his home. I follow him down a labyrinth of passageways and up a flight of stairs and into a spacious salon. The walls are decked out with intricate woodwork, colourful zellij tiles and graceful archways. Berber carpets and rugs cover the floor. Mint tea is traditionally served before and after a meal. Today is no exception. The tall silver teapot packed with fresh mint leaves, tea and sugar appears on a four-
legged silver tray called a siniyya. After the tea has brewed for some minutes, Taleb makes a ceremony of pouring the fragrant golden liquid from a great height into small decorative glasses. Taleb’s wife Nahmiah and his two daughters serve the first course of lunch; a sumptuous salad of oranges, cantaloupes, carrots, Dijon mustard and balsamic vinegar. The unlikely marriage of these ingredients is simply delightful. When there’s a guest in a Moroccan home, the women might not always eat with the family, but allowances are made when female visitors arrive for lunch and Nahmiah joins us. Next comes the tajine, one of Morocco’s most famous dishes. The name refers to the conical-lidded pot in which it is prepared, as well as the intricately spiced stew of meat and vegetables, sometimes with dried fruits and nuts, cooked very slowly over a charcoal fire. Typical tajine combinations include: lamb with raisins and almonds; beef with prunes and apples and lamb with dates. Today it’s a Moroccan classic; chicken tajine with green olives and preserved lemons - a simple yet delicious dish that is accompanied by thick wedges of crusty 74
Moroccan flat bread, perfect for soaking up the sauce. The arrival of a large platter topped with a mountainous mound of steaming couscous replete with pumpkin, raisins, and almonds and topped with fresh coriander has me loosening my belt. The basic premise behind Moroccan hospitality is that no guest shall go home hungry and Nahmiah is making sure I leave her table on all fours. What many people do not realise, is that couscous is not traditionally considered a main course, rather it is the dish served at the end of the meal to achieve shabban (total satiation). After the meal we retire to the cushioned divans that line the walls to stretch our legs and partake of yet again, more mint tea. Sipping on the refreshing sweet liquid and nibbling on fruit, I now fully understand that wonderful word shabban, and why Morocco‘s cuisine is one of the world’s best.

COUSCOUS WITH ROAST PUMPKIN, RAISINS & ALMONDS (SERVES 4)
This makes a great vegetarian dish or starter if not used in the traditional manner to end a meal.

½ large pumpkin (seeds and skin removed) Olive oil Sea salt and freshly ground black pepper 1 onion peeled and chopped 2 cloves garlic, crushed 1 ½ cups chicken or vegetable stock 1 ½ cups instant couscous ½ cup raisins ½ cup toasted sliced almonds 1/3 cup of chopped fresh coriander
CHICKEN TAJINE WITH LEMONS AND OLIVES (SERVES 4)
This is a classic Moroccan tajine 3 onions, peeled and sliced 4 chicken legs with thighs 2 tablespoons olive oil 1-teaspoon ground turmeric 1-teaspoon ground ginger 1-½ cups chicken stock Sea salt and freshly ground pepper 2 preserved lemons, quartered and rinsed 1 cup green olives ¼ cup chopped fresh coriander Place onions in the base of a tajine pot or casserole. Arrange chicken portions on the bed of onions, drizzle with olive oil and dust with spices. Pour over stock and season with salt and pepper. Cover the pan and bring the liquid to the boil then turn down the heat to simmer for 1-½ hours, turning the chicken pieces once or twice, until the chicken tests cooked and the liquid is much reduced. Alternatively the cooking can be done in an oven heated to 180°c. Add the preserved lemons, olives and coriander to the sauce and cook for 10 minutes more. Skim any excess fat from the surface before serving. Serve with wedges of chewy, soft-crusted Moroccan bread.

Preheat oven to 200°c. Cut pumpkin into 2cm cubes and place in an oven pan. Drizzle with a little olive oil; season with salt and pepper and toss well. Roast for 30 minutes, tossing once during cooking, until pumpkin is tender and golden brown. Meanwhile heat 2-3 tablespoons of olive oil in a large saucepan and cook onion and garlic over a moderate heat, cover and leave to steam for 10 minutes to soften. Remove covering and fluff up couscous with a fork. Season well with salt and pepper to taste. Combine couscous with raisins, toasted almonds, coriander and hot pumpkin. Toss well and serve.

Coined the “Korean Wave” in mid-1999 to describe the burgeoning appetite for Korean cultural exports, this global phenomenon is a veritable capital of its own, an immensely powerful form of soft power that is subtly impacting global lifestyles. Having reached as far as Latin America, North Africa, and the Middle East, the Korean Wave is influencing everyone from avid K-pop fans to Hallyu drama-chasers, putting increasing spotlight on cosmetic surgery and the re-writing of fashion and beauty ideals, and proliferating the growing taste for everything Korean, from traditional garb to regional cuisine. On the cusp of everything cool and with the power to influence international trends, Seoul Fashion Week has increasingly become more scrutinised in the global fashion scene. Although previously rather insular in nature, and in fact often denying digital reporters and “bloggers” on scene for most of the shows, the event is slowly opening up to the international media, with ambitions to join the ranks of New York and Milan Fashion Weeks as global trend-setters. The main shopping and tourist districts of Seoul can be split into two categories – North of the Han River, and South. Widely considered as the unofficial “heart” of Seoul, the City Centre is situated in the Jung district to the north, and holds some of the few remaining European-style government buildings in the country, vestiges of its Japanese imperial colonialist past. Termed the mecca of domestic Korean fashion, the Dongdaemun area (located slightly northeast of the City Centre) consists of over 40 different commercial and traditional markets, each offering a wide variety of fashion and accessories at amazing wholesale prices. One of these is the famed Dongdaemun Market, the retail attraction that never sleeps; many stores and food vendors usually start operation around 9pm to cater to the night market crowd, and the famous Mukja Golmok food alley is essential to anyone looking for a taste of the latest trends in Korean cuisine. If you’re in the mood for a bit of alternative shopping, Yangnyeong Market is one of the most famous oriental medicine markets in the country, and is worth a quick jaunt for its curious curation of medicinal wares. Several large fashion complexes in Dongdaemun, like Doota and Migilore, are dedicated to Korean-made apparel, and together constitute a shopper’s paradise of shoes, toys, leather goods, pet products, and other lifestyle accessories. Doota even has a huge outdoor concert stage, and regularly hosts events such as fashion shows, concerts, modelling contests, and classical Korean music performances. The newest kid of the block is Dongdaemun Design Plaza, also called the DDP, a major urban landmark with its distinctively neo-futuristic façade of exhibition spaces, rooftop parks, and a housing of restored parts of the Seoul fortress.
Slightly south of the palace complex is the Bukchon area, which houses over 900 traditional Korean hanoks that have been converted into numerous galleries, craftsmen’s workshops, and guesthouses that offer an authentic “old school” Korean experience. Adjacent to Bukchon is Insa-dong, a labyrinthine network of side and back streets that fan out to form a large area specialising in antique wares and local artist boutiques. Widely recognised as the cultural and artistic heart of the city, Insa-dong is a shopper’s paradise of old books, historical furniture, and handmade traditional crafts. Ssamziegil is particularly wonderful to browse, its spiralshaped space filled with quirky stores hawking a variety of unique knick knacks, including handmade soaps and scents, traditional pottery and tea sets, cat-themed merchandise, and a multitude of exotic and charming terrariums to delight any green thumb. Peppered throughout the area are a wide selection of traditional Korean cafeterias and pushcarts offering local snacks and desserts; an outstanding favourite is hotteok, a sweet dessert pancake that is a comforting concoction of hot fried dough, honey, nuts, and cinnamon. There’s even an adorable stall near the entrance of Ssamziegil that sells a poop-shaped version! Insa-dong is also famed for the fact that most, if not all, of its shop signs are written in hangul (Korean script), even Starbucks, the most perpetuated of Western exports. 82

Finally, pay pilgrimage to the Venissa estate on the Island of Mazzorbo, one of the last surviving examples of walled vineyards in the world. The entire farm stretches over two hectares, completely surrounded by medieval wall; a commemorative marble stone indicates that it was reconstructed in 1727, while a picturesque 14th century bell tower and an 11th century Roman Catholic basilica church, the Chiesa di San Michele Arcangelo, stand testament to the ground’s ancient roots.

Did we mention the additional bath amenities such as sunscreen, after-sun lotion and facial mist on top of the usual shampoo and soap? It was the perfect place to be if you enjoy cradling by the lull of the waves and the caress of the ocean breeze.

PROPERTY Alila Seminyak comprises 240 contemporary styled rooms and suites with a spectacular penthouse, all of which embraces modern style chic with composites of nature within the design elements. Usable spaces are also thoughtfully planned out for artisanal living and each room is furnished with sliding balconies and sun shading screens to fully embrace guests in the light and airiness of the outdoors. The lobby space was definitely one to remember. The open counters were a concept designed to maximise the use of natural cooling, shading and daylight to reduce energy usage. Once we set foot into the massive space, we were ushered to the plush sofa seats right in the middle of the lobby for a refreshing and fuss free check-in process, which includes some spa products (facial mist, body lotion) accompanied with a cold cup of tea and some local desserts. Though it might be a simple act, I find it very heartwarming to know that guests are treated right the moment they set foot into the establishment. Art décor is a huge deal for the resort and artefacts on display are handpicked works from local artiste and placed around the resort premise, subject to change seasonally. Akin to visiting a museum, you will be in for a treat each time you return. We were then escorted to our Ocean Suite, located within the main hub of the hotel and with easy access to the beach, and given a room tour before settling in. A bottle of fresh orange juice and a small platter of local delicacies might be the first thing to notice, after which, the incredibly bright yet inviting natural sunlight that lit the entire room (or suite in this case). What I really love was the fusion of nature and modern contemporary as seen in the furnishings within the room. The walls were made of dark wood sourced from local timbers and the design

Scenes from a sabbatical OVER MY POST GRADUATION SUMMER, before most young men my age would (or are supposed to) settle down into a life-long career and a solid ten-year financial plan, I decided to pack up my bags and spend three months working and backpacking through New Zealand. One of the months I spent woof-ing for a nice elderly couple who own a little farm growing hazelnuts, just an hour’s drive from Christchurch. I spent most of my days working and travelling around the country with them, experiencing what it truly feels like to be treated like family in a total stranger’s home. They taught me a very important life lession: that we are all born equal, and that it is every person’s equal right to be loved. To love a stranger unconditionally, not knowing or holding against them who they are or what they did, that is something that I will never forget. Ever. Unfortunately, what I only realised on hindsight was that summer in the Northern Hemisphere meant winter in the South. But beyond the constantly chilly hands, a close encounter with frostbite, and the tragic loss of a camera lens over a cliff, winter meant great opportunities for glacier hiking, comfortably uncrowded tourist spots, and spectacular sunrises. If I had to do it all over again, I would – but perhaps in the summer this time round.

Known as Flock Hill, these dramatic valleys and tortured rocks are about 90 minutes drive from Christchurch on the Arthur’s Pass Highway to Greymouth.
A pastel-coloured cotton candy cloud floats peacefully above the rippling waters of Lake Tekapo on the northern edge of the Mackenzie Basin. The lake’s waters are harnessed for electricity through the Tekapo Canal, and the local people still fish in it for trout and salmon.

Millie was the farm’s resident Russian rag doll. It took a while for her to warm up to me, but when she finally did, she would sneak in to my bed for a snuggle on colder nights.
Going glacier hiking was definitely a first for me – this was also where I dropped and broke a lens while climbing down. Nonetheless, Fox Glacier was one of the most spectacular experiences ever.
If you make it to the top of Mount Eden (I hiked a volcano for this), you’ll be rewarded with stunning panoramic views of the Auckland city below. That monumental structure sticking out of the skyline is the Auckland Sky Tower, an observation and telecommunications structure that also allows visitors to experience a SkyJump or SkyWalk – their names are explanation enough. 96

Día de Muertos, which means the Day of the Dead, is a three-day celebration about death. As macabre as the holiday sounds, Día de Muertos is festive and full of meaning for the people of Mexico. From 31 October to 2 November, families will visit the graves of the dearly departed and decorate the graves with candles, marigolds and chrysanthemums. Friends and family also exchange colourfully decorated sugar skulls to ward off the fear of death. The main events take place in the city; people dress up in costumes and paint their faces to look like skulls as they walk in a parade. To the Mexicans, Death is no longer foe but a friend.
