“Thebuildingisover500yearsold andhaslotsoforiginalfeatures,”said Michaelofthe29-bedroomhotel.“I wantedtohaveasmallboutiquehotel withtheamenitiesofafive-starhotel. It’sveryquaintandvisitorscan experienceMaltesevillagelifefirsthand.”

Askedwhyhechosethisspecificgin, hesaid:“ShiveringMountainginwas introducedtobebymyfriendAndy DaykinwhousedtoworkatSheffield UnitedFC.Wehadaworking relationshipwiththeclubandtogether withVisitMaltaandtheFortinaSpa Resortwesponsoredtheclub.

“Oncethesamplesarrivedwedidan in-housetasting…andwelovedit.We

thendecidedtoaskfordistribution rightsintoMaltaandbecametheirfirst export.”

TheideaforShiveringMountainwas developedbyNickMalaczynskiwho returnedtohisnorthernrootsafter spendingthemajorityofhiscareerin London,aswellasworkingoverseas. BorninDronfield,heboughtanold farmhouseinHathersagein1997with theintentionofusingitasaretreat, beforemovingtherepermanentlywith hisfamilyin2011.Theproperty,which hasstunningviewsoverMillstoneand StanageEdges,alsohadanumberof outbuildings,whichNickaimedtoput touse-hejustdidn’tknowhow.

“I’dbeenlookingatgrowing botanicalstosupportthecraftginboom andslowlythisprogressedintomaking theginitself,”hesaid.“Asusual,Iwas abouttenyearsbehindthetimesasthe UKginmarketisverycrowded,butI thinkthatmanyofthenewerdistilleries aren’tdoingthingsverywellandthat therewasroomforamuchmore professionalapproach,whichwe’vetried toexecute.”

ShiveringMountainginisa communityenterprisethatemployslocal experts,suppliersanduseslocal botanicalsandingredientswherepossible

tocreateatrulyauthenticPeakDistrict ginexperience.Ittakesitsnamefrom thenicknameofMamTor(Mother Mountain),amountainthatoverlooks CastletonintheHopeValley.Nickspent muchofhisyouthwalkingupthat mountainandontheridgewalksaround thevalley–itseemedtheperfectfit.

“Twomillionyearsago,whenthePeak Districtwasasubterraneanseanexttoa riverestuary,theseacreaturesdied, formingaweak,porous,limestoneover themilleniaandtheestuarywascut throughhard,heavynon-porous gritstone,”saidNickofthearea’shistory. “Volcanicactivitypushedupanunstable geologycreatedfromthetwotypesof rock,wherethelimestonewasfrequently washedawaycreatingcavernsacrossthe areaandamountainthatisconstantly land-sliding–orshivering!

“Whenweweredecidingthenameof thebrand,welookedatanumberof storiesoriginatingfromthearea,but ShiveringMountainwastheclear winner.”

Havingbuiltandruninvestment companiesformostofhislife,Nickwas acompletenoviceaswereother membersofhisteam.Somehadhadbar experiencebutno-onehadmadealcohol previously.Thesolutiontocreatingtheir

ginwastoreadlotsofbooks,attendlots ofcoursesandhireadistillertoteach themtherudimentsofthebusiness.In 2019theydevelopedtheirfirstrecipe.

“Ithoughtthatthegincrazewas producingsomeridiculousrecipesand gimmicksthatwouldnotstandthetest oftime,”explainedNick.“Iwantedour gintobeauthentic–builtaround botanicalsavailablelocally,heldina bottlemadelocally,basedonalocal story,promotingtheareaandsoldby localpeople.

“MydadwasabigforagerwhenIwas youngandweusedtopickbilberries andsloes,aspartofourbounty.Iguess ourfirstginwasan‘homagetomy father’sforaging.Wetooksloesfromthe valley,gorseontheslopesupthe mountainsidesandheatherandbilberries onthetopsofthehillsandmoors.This isthespineofallourginsatthe moment.”

APremiumDrygincamefirstwitha PremiumDryPinksoonafter.Thethird recipe,theEarlyHarvestEdition,was developedattherequestoftheCraftGin Club.Theyhaveover100,000subscribers payingaround£40permonthtogeta monthlyboxofgin,tonics,cordials, nibbles,chocolatesetcandamagazine andaskedShiveringMountaintomakea newginforthemandsentitouttotheir membersinMarch2022.TheEarly Harveststickswiththelocalflorabut goestotheflowersandleavesofmany ofthesamebotanicalsratherthan

relyingontheberries.Theresultisa lightersweeter,morefloralgin.

“Eversincewestartedtrading,I’ve beenamazedattheresponse,”beamed Nick.“Duringourfirst12monthswe soldaroundtwicewhatIexpectedto sell.Havingabottlethatissostriking alsohelpedgetattentionandhelpedget usintoJohnLewis,MasterofMalt, HouseofMaltandEnotria&Coe amongotherdistributors.Thisisgiving usnationalrecognitionandofcoursethe CraftGinClubmail-outboosted awarenessconsiderably.”

Alltheginsaresoldinvariationsofa stunningbottlethatisaworkofartin itself.ItwasdesignedbySheffieldnative JamesBackhurstoftheAllotment AgencyandmadebyAlliedGlassin Castleford.

“Makingabottlewithamodelof MamTorinsideitwasquiteamission, AlliedGlasstalkaboutitasoneoftheir mostdifficulteverbottles,”saidNick. “Thethingthatpleasesmemostabout thebottleisnotthemountainorthe embossingonthesidethatmakeit shiverwhenyouturnit,butatinydetail –lookonthebottomandyouwillsee thegridco-ordinatesofthetrigpoint thatsitsonthetopofthemountain.As longasyoutakeabottleofginupMam Toryouwillnevergetlost..!”

Increatingthegins,Shivering MountainalsomadeupanewtermGinology-whichcoverstheimpactof geology,geographyandthelocalclimate

onthegin.

“Bybeingtruetoourhabitatandour historywehavecreatedsomething authentic,”explainsNick.“Wedidn’tset outtomakethebestginintheworld, wesetouttomakesomethingthat representsthebestoftheareawherewe liveandwork.Asithappens,theresultis atrulyfinerangeofgins.”

Forthepeapurée:

1.Boilwaterandaddthegardenpeas, allowtosimmerfor6-10minutesuntil peasarecookedthoroughly.

2.Drainwaterandaddpeastoasmall blender.

3.Addthecream,apinchofsalt,pepper andchives,thenblenduntilathickpurée isleft.

4.Settooneside(youcaneatthiswhile stillwarm,orcool–wepreferwarm!

Forthepancettacrisps:

1.Heatyourovenorgrillto200ºC.

2.Placestripsofpancettaonabakingtray. 3.Cookforaround15minutes(oruntil crispy),thensettoonesidetocool& oxidise.

Fortheblackpuddingandscallops:

1.Heatanon-stickfryingpantoa moderatelyhighheat(mustbehot enoughtosearthescallops)andadda teaspoonofoliveoil,allowtocomeupto heatandspreadtheoilaroundthepan

2.Addtheblackpuddingslice(oneper portion)tothefryingpanfor approximately90secondsperside.

3.Addthescallopstothesamepanfor around30secondseachside,oruntil seared/goldenbrown.

4.Whenyouturnthescallops,adda tablespoonofbuttertothepan,andallow tosizzle.Bastethescallopsonceturned.

5.Removethepanfromtheheatand allowtorestfor1-3minutes,depending howwellcookedyoulikeyourscallops.

3.Tomaketheduxelle,takethe mushrooms,chopfinelyandcookina saucepanonamediumheat.

4.Addsalt,pepperandbrownsugar, allowtocookandreduceuntilapastetypetextureisleft.

5.Takeyourcookedmushroomsandadd toasmallblender,blenduntilextrafine

(ifyoudon’thaveablender,thisisfine, simplysliceanddiceyourmushrooms extrafinebeforecooking).Onceblended, settoonesidetocool.

6.Now,layoutsomeclingfilmonaflat surface(enoughtowrapthestartofyour wellington).

7.Carefullycreateabottomlayerwith pancettaorparmaham,thenspreadyour duxelleevenly,leavinga1-2cmborder aroundtheedge.

8.Placeyoursearedfilletintothecentre ofyourduxelle.Wraptheparmaham aroundthefillet,andwrapastightlyas possibleusingclingfilm,tocreateaparcel typeshape.

9.Placeyourwellingtoninthefridge overnighttoset.

10.Thenextday,takeyourwellington fromthefridge,andplaceittooneside.

11.Takeasheetofpuffpastryandlayona flatsurface.Removetheclingfilmfrom

yourwellingtonfromearlier,andplacein thecentreofthepastrysheet.Foldthe pastryaroundthewellingtonastightlyas possible.Trimthepastrysonoexcess remains.

12.Onthetopofyourwellington,score withasharpknifetocreateacross-cross pattern,calledalattice.

13.Beatoneegguntilsmoothandeggwashyourwellington.

14.Re-wrapwithclingfilm,andplacein thefridgeovernighttoset.

15.Onthedayofcooking,pre-heatyour oven(withbakingtrayinside)to200ºC(if yourovenismorepowerful,180ºCwill suffice).

16.Removeyourwellingtonfromthe fridge,andallowtocomeuptoroom temperature(thisshouldtake1-2hours).

17.Re-applyeggwashtoyourwellington, andplaceonanon-stickbakingtray(you cangreaseuporusegreaseproofpaperif youdonothaveanon-sticktray.

18.Placeyourwellingtoninthecentreof thebakingtrayandintotheovenfor18 minutes(thiswillbringoutyour wellingtonraretomediumrare,thisis howwerecommend,howeveryoucan alteryourcookingtimetosuithowyou likeyoursteakcooked).

19.Removefromtheoven,andallowto restfor3-5minutes(thisisSOSO important,notallowingasteakor wellingtontorestwon’tallowthefoodto finishcookingatroomtemperature, patienceisavirtue).

Thekitchenservedawonderful four-coursemealwhichconsistedof codandprawnbake,lightlyspiced sweetpotatoandcoconutsoup,pot daubeofbeefandwhitechocolate andraspberrycremebrulée.

Whenitcametothe2022 Westside&SouthsideRestaurant& BarAwards,competitionwaskeenof course,andweweredelightedathow manylocalrestaurants,barsandcafes enteredintothefestivities.Itwas fantastictoseeallofthenominees togetherinoneroom,celebratingthe superbqualityofindependent eateriesfoundinourregion.

shortlistandwalkedawaywith plaquesintheContemporary,Indian andBestNightOutcategories.

Thebuildingitself-aformerschoolhousedatesbackto1683andaftervarioususesover theyears,waslovinglyrestoredbyDavidAldred andhisteamlastyear.

toiletriesbyNobleIsle.Itwasspacious, comfortableandbeautifully-decorated.

Oncesettledandsuitablyshowered andchangedweheadeddowntothebar forpre-dinnerdrinksbeforetakingour seatsintherestaurant.

HeadchefFabienHombourger returnedtotheF&Hafterpreviously workingtherefrom2008to2010and hascuratedanalacartemenuthat drawsonseasonalityandalsochampions localproduce.

Westartedwithsomeexcellentcelery andmustardseedbread,whichwas servedwithsaltedandharissabutters, beforemovingontoourstarters.

Mywifecouldn’tresistthesaltedsea scallops,caramelisedporkbelly,crispy blackpuddingbonbon,cherryapple, appleandvanillapuréeandpork crackling(£15.25).Itwasastunning dish,bothsweetandsaltywithadded sournessfromtheapples.

Ichoseapan-friedchickenandwild mushroomboudin,roastbutternut squashandartichokecrisp(£12)from thespecialsmenu,whichwaswell cookedandhadrealdepthofflavour. Themushroomsaddedarealearthiness tothedish.

Maincoursescontinuedthehigh standardsandthepan-friedfilletof halibut,saffronandcoconutShetland mussels,gnocchi,piñacoladachicken wing,saffroncrisp,lemonandcoriander oil(£29.95)wastherealstarofthe show.Thefishwasbeautifullycooked andwasgivenrealfreshnessfromthe saffron,coconutandlemon.

Myoutdoorrearedporktenderloin, ciderpoachedchorizo,crispypork, fondantpotatoandBlackSheepsyrup (£27.95)wasagreatautumnaldishwith lotsoffamiliarflavours.
