For Tracey Baldwin, director of Dining Diva Catering Equipment, all the drama of human life is here, and that’s why, after 33 years in the industry, she can’t imagine doing anything else. In fact she’s expanding with a new showroom at Staniland Marina in Thorne, so for the first time clients have a venue to visit and make their buying choices in a realistic working environment. “If you’re starting up a small café or coffee shop, more often than not the venue will look like a building site until everything comes together just before the opening,” says Tracey. “So when it comes to selecting the range and style of crockery or glassware , or the size of pots and pans you need for cooking, it’s hard to imagine what the

final product will look like and you need all the help you can get.” This is where Tracey’s experience becomes invaluable. Having started in the industry straight from school, working for large companies like ISL, Lockharts, Cearns & Brown and Brakes before setting up her own business in 2015, she’s seen it all from huge catering operations like the Doncaster Racecourse refurb in 2008 the Olympics in 2012 and project managing the opening order at the Hilton Garden Inn Doncaster Racecourse to small cafes. “If you love this business it’s hard to imagine doing anything else because the rewards are so great,” she says. “Some of the big projects I have been involved with, the clients have a large budget and that brings its own demands. “But it’s just as rewarding, and perhaps even more challenging, when you are helping someone who perhaps has taken their redundancy money and put it towards opening a café or tea room. They’ve never done anything like it before and that’s where my role as a consultant is just as important.” That has meant Tracey working until 11pm perilously close to the opening date, and inviting clients to view samples in her own home because their dream café was still a building site. Tracey will always go the extra mile for her clients, many of whom have
become firm friends, but hopefully the opening of her first showroom will mean that sort of last minute mercy dash will be a thing of the past. The showroom specialises in supplying catering equipment to restaurants, bars, pubs, hotels, schools, care homes and leisure parks covering a large range of cutlery, glassware, crockery, kitchen utensils, bar essentials, pans and bakeware, janitorial products, disposables and chef whites. The Crown Hotel The Crown Hotel’s restaurant menus have recently had a mini makeover, but don’t worry, their sweet chilli chicken and the Sheffield’s own Henderson’s Relish beef pie haven’t gone anywhere, they’ve kept the old favourites and added in a bunch of tempting new treats. Crown chefs have cooked up new starters and mains to add to their already enticing a la carte menu, including chicken tikka skewers, warm goat’s cheese bon bons and tandoori chicken. The Crown’s sharing platters have had an update too, with their Yorkshire surf and turf and vegetarian platters all going down a treat with diners. But in her role as managing director of the School of Artisan Food in the glorious setting of The Welbeck Estate, Julie is in the ideal position to make a positive difference. The artisan food movement is growing, as more and more people seek out food with provenance and quality. Many of the students who have passed through Welbeck’s doors since it opened ten years ago are now successfully running artisan food businesses, feeding the growing demand across the UK. If you’re fortunate enough to live close
to one of the many excellent small bakeries that has cropped up in the South Yorkshire region, for example, there’s a good chance the School of Artisan Food played a big part in helping the owners learn their craft and then apply it in a business setting. It’s been over a decade since founder Alison Swan Parente decided to establish The School of Artisan Food after she realised that there was a lack of skilled artisan bakers. Talking to cheesemakers and butchers, who were also struggling to find skilled people, it was evident there was a need to provide education and training in the ‘lost skills’ of artisan food production. For Julie, it’s all about getting the

conversation started and connecting people with good food. She says: “I distinctly remember my grandma baking her own bread and cooking from scratch with local, seasonal ingredients from my grandad’s allotment and the local butcher. My mum always cooked from scratch too. I, however, managed to acquire some bad habits as a full-time working mum of two boys (no excuse I know, but there you go). “But since becoming part of The School of Artisan Food ‘family’ I have transformed how I think about food. My shopping and cooking habits have also changed and I have reconnected with my childhood experiences. I want everyone to have the opportunity to understand food provenance, be adventurous about what they eat and to be confident and creative around food. Food is a fantastic way to bring families, friends and communities together and blend traditional techniques with exciting innovation.” Time will always be a factor for
people with busy lives but Julie is keen to get away from the idea that her passion is an indulgence that can only be enjoyed by those who are privileged or ‘comfortably off ’. “Look at what goes into a loaf of bread,” she says. “Flour, salt, water... it couldn’t be simpler and once you can make your own bread you have a delicious staple that can be the heart of any meal.” And of course, as well as being healthier than the mass-produced bread packaged in our supermarkets, it’s also delicious. “We need to get the message out and get people to rethink their attitudes to food,” says Julie. “The big thing for me is to get people to come and see us. We are a registered charity and not for profit organisation and fund raise for bursaries to support people who can’t afford to come here. “We need to get people to realise that when on a budget you can create great family meals.”

Now, after ten years in which the school’s reputation has soared, is the perfect time for people, who have not yet visited to get acquainted. Julie sees four key strands to the school. 1. Full-time courses, from sixmonth Advanced Diploma in Artisan Baking to the new artisan food production degree in partnership with Nottingham Trent University. 2. Short courses for everyone from people who have never handled dough or raw food right through to professionals. 3. Corporate team building and hosting events such as chocolate making or foraging walks. 4. Go wild at Lottie’s AFTERNOON TEA IS A REAL INDULGENCE AT LOTTIE’S COFFEE LOUNGE, WRITES CHRIS WILSON. AND WHAT A LOCATION. t’s a fabulous day out for all the family at the Tropical Butterfly House in North Anston but you don’t have to pay to visit the fascinating creatures to take advantage of one of the region’s finest cafes situated just next door. Lottie’s Coffee Lounge is easy to reach with loads of free parking and it’s ideal to meet up for a cuppa and a light bite or a spot of lunch. Or, even better, how about going for some full-on indulgence with afternoon tea? It really is a lovely setting, bright and spacious with a striking colour scheme of natural wooden floors, red leather chairs and traditional brick walls with a wood-burning stove to add a touch of class and comfort. It’s spotlessly clean, bright and airy with large windows looking out onto a beautiful countryside setting in all directions. Throw in a friendly welcome and the prospect of a real feast and you’re all set for a meal to remember. With a choice of tea or coffee the only decision to make, we sat back and waited for the magic to happen. Soon the true centrepiece of the table

was being carefully placed between us, a three-tiered cake stand artfully arranged with savoury delights and sweet treats. I’m not sure whether tradition actually demands that you start at the bottom and work up, but seeing as the first level was savoury it made sense. Cut into neat but not too delicate triangles, a tasty selection of ham, egg, cheese and tuna sandwiches, with a decidedly untraditional but very delicious sausage roll thrown in for good measure, eased us gently into the sweet treats to come. Level two was not without controversy as it contained two light-as-air and justbaked fruit scones with some fresh strawberries and grapes for good measure, and clotted cream and strawberry jam on the side. So what is the etiquette here... jam first or cream? Being a lady of great refinement, my companion insisted that jam first looked neater, with a modest smear of cream on top. Personally I see the eating of a sweet scone as an exercise in gravity-defying gluttony, which means a massive dollop of cream first, followed by a spoonful of jam that will immediately try to escape down the side, necessitating speedy and none-too-refined scoffing. Less elegant,
more fun…you decide. A memorable afternoon was rounded off in some style with a selection of cupcakes and the ultimate millionaire’s shortbread. Someone in the kitchen has a marvellously light touch when it comes to sweet treats, guaranteeing our afternoon ended on an indulgent note. And to walk off some of the excess we had, of course, the choice of visiting the butterflies, lemurs, owls and all the rest next door. But remember, Lottie’s is entirely separate and worth a visit in its own right. It’s canine-friendly too, and there are some lovely dog walks in the nearby countryside. Worth the weight THE OLD WEIGHING ROOM MAKES FOR A GLAMOROUS NIGHT OUT, WHETHER THE HORSES ARE RUNNING OR NOT, WRITES OLIVIA WARSOP. hen the person you’re sat opposite in a restaurant claims that they’re eating the best steak they’ve ever had, it might make you look at your own food with regret. Happily this wasn’t the case at The Old Weighing Room at Doncaster Racecourse. In fact I’d had plenty of time to make a careful choice from their menu sitting in at the Art Deco bar, overlooking the terrace and sipping a glass of crisp rosé (£4.30). As well as serving a wide variety of wine and other beverages, this restaurant claims to celebrate modern British cuisine as well as some more classic dishes featuring a selection of Yorkshire ingredients. We were shown from the bar to our table in perfect time for our starters to be served. Chicken liver parfait with braised chicory, candied hazelnuts and sourdough crisp (£6.95) was very elegantly presented and not nearly as elegantly eaten after the first bite of parfait melted in my mouth. This starter was excellently paired with the fresh bread waiting for us at the table. Crab cake with coronation mayonnaise and pickled golden raisins (£7.50) was ticking all the boxes across the table, the

flavour of the crab complemented by the zesty sauce. When the aforementioned fillet steak arrived with salt beef niçoise, triplecooked chips and smoked hollandaise sauce (£29.95), I did look on a little enviously. And once the glowing praise started, so did my plans to steal a bite at the first opportunity. However, steaktheft left my mind almost immediately after I started on my own main. Miso duck breast was juicy and tender with caramelised cauliflower purée and creamy dauphinoise potato bringing it together perfectly (£19.95). If the steak was the envy of the main course then my dessert definitely took the cake. When the waiter brought over my apple crumble baravois with burnt butter shortbread and crème anglaises (£7.50) he took in my befuddled expression with a smile. It was an apple. An apple on a bed of shortbread. I politely smiled and tried to make sense of what I was looking at, a tentative poke with my spoon delightfully revealed it to be a delicate candy apple with a delicious spiced apple and cream filling. If I had to choose which was better, the flavour or the presentation, I’d
say the flavour. But only just. Across the table caramel sous vide pineapple with pink peppercorns, banana and passion fruit sorbet (£7.50) was making for a very happy diner with sticky caramel contrasting with refreshing fruit flavours. Of course if your sweet tooth isn’t as pronounced as ours they also serve a variety of speciality coffees starting from £2.75. The Old Weighing Room makes a trip to the racecourse a glamorous night out, whether the horses are running or not… this restaurant is worth the trip all on its own. I was deteriorating fast as a person.” James Jayawardena’s weight loss difficulties started in April 2016 when his GP diagnosed him with high blood pressure, high cholesterol and prediabetes. “Something had to give as my weight had really started to creep up over the last few years, and, at 22-and-a-half stone, I was starting to become increasingly aware that if I did not do anything about it I was exposing myself to potentially irreversible and serious health implications.” James was worried that his demanding lifestyle would mean it was impossible for him to lose weight, however, as soon as he started on the Alevere programme he was convinced that the team at G&M Healthcare could help him. “My initial concerns were about being hungry, as I ate quite large portions and would often graze during the day. I worked out that I was eating 600/700 calories between meals and I was really worried; I didn’t need to be. “I was apprehensive going into the programme, but once you’re in, the staff walk you through everything, and you feel at ease straight away.” Alevere quickly taught James that losing weight is about understanding food and the effects of various ingredients in food – ensuring you don’t deprive yourself but you take a regular, balanced approach. “I began Alevere with an open mind and the thing that I found most refreshing was that the programme was not about dieting but about making permanent adjustments to my lifestyle.

“I started losing weight very quickly, it was like an overnight transformation. My clothes started to feel too big and people started to notice too, you don’t get any more motivational than that. “Losing weight does not mean giving up everything you enjoy eating. In fact, the pleasure of eating something ‘unhealthy’ is better when it becomes an occasional treat, rather than a regular and ignored part of your diet.” After three months on the programme James had lost almost seven stone, and was starting to feel much more confident again, and has since continued his weight-loss journey. “I was losing 3kg every week, so it was great to get on the scales and realise how much I had lost overall – and that made me want to carry on. I liked the routine of the programme and the big weekly weight loss was a great motivation, I became very focused. “With good planning and listening the programme is adaptable, I wouldn’t say it was easy, it took willpower, but I didn’t feel hungry and my energy levels were noticeably higher to myself and others. “Alevere isn’t a diet, because it changes your philosophy completely. It teaches you to eat normal but healthy food, and retrains you on how you should eat. “The programme is now part of my daily life without me being obsessed with it and by what I can and can’t be eating. I have changed how I eat for good – I
eat regularly and I still have what I want, but I don’t snack all the time.” James has discovered a whole new way of life, and, though he knows there is no magic wand to losing weight, he has seen that with help and support it is achievable. “Alevere has totally changed my life. People always comment that I am now a completely different person and approach things in a different way. “Grace, Sarah and all the staff, therapists and nutritionists are extremely knowledgeable and there’s always as line of communication and support available and you feel like part of a little community. “I firmly believe in Alevere and want others to see how it has worked for me. aving visited a number of spas across Yorkshire, I was intrigued about trying Spa at Ye Olde Bell and first impressions were overwhelmingly positive. I don’t think I’ve experienced a warmer welcome and for someone like me, who loves to be organised, it was the perfect introduction to a day of high-end pampering. We were seated with an ice cold glass of water and offered complimentary tea or coffee before being given the itinerary for the day, with treatment and lunch times and a spa map. Perfect! My husband and I were offered the choice of a double room or two singles for our treatments. We opted for the double and then selected two courses from a wide-ranging lunch menu with a wide range of light bites, healthy meals and indulgent options. We’re both big foodies and this was definitely the best menu selection I’ve seen at a spa. The changing rooms are spacious with hairdryers, make-up remover, cotton wool and complimentary lockers containing a dressing gown, towel, jewellery bag, wet costume bag, and branded flip-flops which are yours to keep at the end of the day. VIP treatment comes as standard and these little touches make you feel like a million dollars. On entering the spa the range of activities is overwhelming. I’m easily bored but we arrived at 9.30am and didn’t leave ‘til 5.30pm and can honestly say I could have stayed even longer! For each experience there’s information and tips. The Herbal Laconium warms your body through, clears the mind and relaxes the muscles. Next is the stone bath, where steam is released as an automatic bucket of coals is levered to hit the well of water, looking like something from Game of Thrones. Next is the Alpine sauna, the hottest experience constructed with Swiss stone pine. After the sauna it was time to cool down. The snowstorm experience is a glass corridor backed with mountain scenery, press a button and snow comes tumbling down on top of you. For my husband, a snowboarding fanatic, this was the best part. Time for our treatments. We headed to the double room where my husband’s Turkish ritual massage released tension in the neck, back and shoulders, working wonders for a man whose manual job leaves lots of knots in his back. By Monday he was a brand new man, completely free of aches and pains.

I had the Rides Collagen boost eyes treatment to reduce puffiness and wrinkles. I put a picture on social media of us enjoying our spa day and one of my friends actual said I looked 12. Safe to say I was very impressed and my skin and eyes have never looked better. Then it was back to the spa for a steam bath, alternating between extreme heat and the cold experience of the shower walk and bucket shower. This certainly stimulates the senses and is the perfect preparation for a superb lunch. Starters of scallops were definitely in the top range restaurant class followed by healthy butter poached corn fed chicken, mustard mash and spicy sausage and bean cassoulet for me while my husband had spring lamb, minted potatoes, heritage carrots, garden peas and redcurrant jus. Then it was back to the spa and the Tranquil Salt Inhalation room, a relaxing
marine climate that can aid respiration, unblock sinuses and help alleviate allergies. It’s also, we found, the perfect spot for a post-lunch snooze! Post nap we pottered about enjoying the Indoor/Outdoor Vitality Pool, pressing the many buttons which set off jets on the recliner seats set in the pool or massage chairs. We rested our feet in the foot spas and enjoyed the complimentary teas on offer in the spa detox. Back at work, I feel revitalised and fresh, my skin is glowing and we are already planning a return trip. Local hospital named ‘best team’ at annual awards

The experts behind Doncaster and Bassetlaw Teaching Hospitals’ (DBTH) campaign to vaccinate staff against the flu have been named ‘Best Team’ at NHS Employers’ annual Flu Fighter awards. The ceremony was hosted by Daniel Mortimer, Chief Executive of NHS Employers, and celebrated the achievements of flu teams and organisations in promoting the vaccine to frontline health and social care staff. Nominated as both ‘Most Creative’ and ‘Best Team’, vaccinators at DBTH were awarded the latter honour, with the judges commending the Trust’s multi-disciplinary approach and emphasis on team working while displaying brilliant leadership throughout.
Ancala Water Services, and Yorkshire based Creative Marketing Agency Moirae, have scooped Gold at the prestigious Transform Awards Europe ceremony in London. The Transform Awards honour excellence and reward innovation in brand development from large organisations and agencies from all over Europe. Companies such as Tesco, Deliveroo, Canon and Arriva were also entrants for the coveted awards. Ancala Water Services and Moirae Creative won a Gold Award for the ‘Best Visual Identity from the Energy and Utilities Sector’. Did you spot a sparrow? The latest results from the RSPB’s Big Garden Birdwatch have revealed a mixed picture for South Yorkshire’s garden birdlife with a quarter of the top 20 species returning fewer sightings in gardens across the county than in 2018. Now in its 40th year, the Big Garden Birdwatch is a chance for people of all ages to count the number of birds that visit their garden helping the RSPB build up a picture of how they are doing. The event, held over the last weekend in January, revealed the house sparrow kept its number one spot in South Yorkshire. UK house sparrow numbers, reported by participants since the Big Garden Birdwatch began in 1979, have fallen by over half, but in recent years, national numbers have slowly started to rise again, giving conservationists hope that at least a partial recovery may be happening.

New cinema approved Frenchgate Shopping Centre in Doncaster has received planning consent for a multiplex cinema and is currently in discussions with two well-known cinema brands. Work on the £8million investment will begin later this year, ahead of a spring 2020 opening. The planning permission is part of an ongoing investment strategy by the centre’s owners, The Frenchgate Limited Partnership. Occupying 15,000 sq ft and comprising up to eight screens, depending on configuration, the cinema will be complemented by a further proposed development of three new food and beverage operators totalling in excess of 6,000 sq ft. The cinema space will occupy the remaining part of the former BHS on North Mall, which is also home to a 30,000 sq ft Flip Out trampoline park. Frenchgate was the first shopping centre in the UK to achieve a change of use from retail to leisure for a former BHS. The proposed restaurants will be created within existing adjacent space. The cinema and supporting food offer will be directly accessed from the mall of the existing busy centre, which has an annual footfall of 16 million. The new offer will join a strong line-up of retail and leisure brands, with Flip Out, Lovisa and one of the first Taco Bells in the UK all opening at Frenchgate in the last 12 months.
