Although the definition of a healthy life differs between people, it’s a vital aspect to achieving your ideal mental and physical wellbeing.

After struggling with her weight for many years, Terri-Ann Nunns took the unusual step and created her own diet plan. She has become something of a diet guru, and her 123 diet plan is highly sought after. The plan is broken into three simple steps, starting at the ten day boost through to the maintenance stage. It is simply a high protein diet with limited carbs, so you can eat as much fish, meat and poultry, vegetables, fruit, quinoa and sweet potatoes, but steer clear of white potatoes, white and brown rice, white bread and pasta. Here she tells us why it is so important to champion healthy living and offers up some simple steps to live healthier.


HEALTHY LIVING

Why is it important to keep your body and mind healthy and happy?

I feel it’s important to keep both your mind and body happy as with society keeping us super busy, life can take over and we fail to take time out for reflection and most importantly you time. What are some simple steps to follow to live a healthier lifestyle?

Take time out, sit back and reflect on life such as where you have been, but most importantly where you are going. Eat well and avoid toxins such as alcohol and processed foods. Exercise as much as you can – bike rides with the kids or go swimming and don’t forget to have fun with it!

Which key food groups should you bring into your diet when trying to lose weight, and which ones should you steer clear from?

Vegetables, lentils and seeds are a must, steering clear of beige bland processed foods. Avoid too much red meat and consume at least two pieces of oily fish a week. How has the 123 diet plan developed over the years?

This is my eighth year in business and to date I have assisted over 75,000 people with their weight loss. The business is growing rapidly year on year and I have just taken on a full-time dietitian who will see the plan develop more.

What advice would you give to anyone wanting to lose weight?

What exercises would you recommend to go alongside the 123 diet?

Firstly you must mentally prepare yourself as the biggest fight is against your own willpower. Try and cut out processed foods and take one step at a time, and remember weight loss should be a staged process.

Exercise is not essential but we do recommend doing at least one activity a day such as jogging, biking, swimming or just a nice walk. Exercise shouldn’t be dreaded but enjoyed – I have just started horse riding and find this a great and fun form of exercise.

How do you tackle getting the balance between eating healthy and exercise right?

Little and often for both – make good decisions when eating and don’t see exercise as a burden but something you can enjoy!

Butternut squash lasagne is my favourite, and the kids love it. We also find lots of members enjoy the ‘fakeaway’ section which is packed with iconic take away food recipes so you feel as though you have had a little cheat day! What are your personal goals this year?

One of my goals is top secret and I cannot share until June – it’s super hard not to though! Another goal is make more family time. I’d like to add that you can make 2018 your year. emember – you’re the boss. You need to established boundaries,” shouted our master baker, Emmanuel Hadjiandreou, as I cautiously pinched the sticky dough in my bowl. Who knew French baking was so much like a relationship? One person tends to wear the trousers, and you need to be clear about your intentions and boundaries or you may find yourself in a sticky situation. But the politics of love aside, taking a cookery course together is a brilliant way to bond this Valentine’s month, and what could be more romantic than baking bread from the love capital of the world? What’s more, The School of Artisan Food is based on the idyllic Welbeck Estate, a gradeII registered historic park in Nottinghamshire made up of some of the country’s most important rural heritage buildings and

surrounded by 15,000 acres of woodland and farmland, as well as a deer park. Tucked away in a village-like setting, away from the main house, all was peaceful and quiet, save for the flap of a bird’s wings, as I entered the school on a bright and early Sunday morning. On arrival, I was led to a dining room, where I was met with a trough filled with huge, round loaves of flour-dusted bread. After sampling a delicious apple and cinnamon teacake with a cup of coffee, our class of 14 were greeted by Emmanuel and bakery co-ordinator, David Carter. We were in safe hands. Emmanuel has been in the baking industry for over 30 years and has worked extensively in Greece, Germany and London. Originally from South Africa, he now lives in Hastings and travels to the school twice a week to train the next wave of bakers.

David has an interesting background too. Proving it’s never too late to turn your passion into your career, he was originally a solicitor. After being made redundant some ten years ago, he decided the time had come to try something new. He had enjoyed one of the school’s short courses so much, he quickly enrolled in their ten-month advanced diploma in artisan baking. After that, he got a job at the school as a technician. Since then, he has climbed the ladder to bakery co-ordinator and has done baking demos at a number of cookery shows and events up and down the country. As we were taken to our workstations and put on our aprons in the adjoining room, I felt the same kind of apprehension the contestants on The Great British Bake Off must feel, when they are about to make bread in front of such renowned bakers. The day started with some teamwork, as we got into three production lines to weigh

out all the ingredients we would need for our pain de campagnes, baguettes and brioche. Emmanuel would demonstrate a step or two, then we would go away and try it for ourselves. This involved a lot of getting our hands sticky, as one by one, we folded each type of dough into shape – the opportune moment for couples to recreate that romantic scene from Ghost. Along the way, Emmanuel and David were happy to do some troubleshooting with us, exploring all the types of yeast, from the dry, active kind, to the fresh variety, which comes in blocks, suited to those who bake more often. Emmanuel also explained how he made the bubbling bowls of poolish, a pre-ferment made the night before from equal parts water and flour, which we added to our baguette and pain de campagne mixtures. We had reached the point where our doughs were resting, covered in our bowls. While Emmanuel’s balls of dough looked smooth with little excess on his bowls, he reassured us less seasoned bakers that our shaggy-looking doughs were not ‘a mess’, but rather ‘rustic’. Once we’d rolled our baguettes into four sausages, wrapped them in tea towels on a tray and put them in the fridge to chill, we went back through to the dining area for a well-deserved carvery buffet, created by the talented chefs at the school.

After lunch, we put the finishing touches on our loaves, scoring the tops of two of our baguettes and chopping the other two in places to make them look like sheaves of wheat. Our pain de campagnes, which had been proofing in their swirl-patterned bowls, had retained this shape and were scored, while the brioche were brushed with an egg glaze and sprinkled with sugar. The baguettes and campagnes were slid into a huge, industrial, steam-filled oven, and the brioche were slid into smaller conventional ovens. Et voila! Our beautiful bakes were ready. It had been a tiring day, but the satisfaction of seeing – and more importantly, tasting – our finished golden-brown bakes at the end made it all worthwhile. If you don’t think yourself much of a baker, a sense of humour is key. Emmanuel and David’s brisk teaching, combined with their easy-going natures, made the class much more relaxed and enjoyable. French baking is certainly something fun and different to try with a partner, but solo bakers are sure to make friends on this fullday course.

New name and new era for Doncaster Amateur Operatic Society For the first 107 years (1909-2016), their name was Doncaster Amateur Operatic Society (DAOS), but in September 2016, the members voted to change the name to Doncaster Stage Productions (DSP). The DSP welcome this change as a start to a new, vibrant and current musical theatre group and are really looking forward to the future and hope this will help to attract new, younger members and a wider audience. The society was founded on 4 February 1909 at the Glynn Hotel on Station Road and on 10 January 1910, the society staged its first performance – Gilbert and Sullivan’s opera, The Mikado. The society has continued to thrive giving performances every year – except in the war years – and has donated thousands of pounds to local charities. 2014’s Sound of Music was a huge success, followed by 2015 sell-out Hairspray and the critically acclaimed 9 To 5 in 2016. #ToBoltonforBolton A group of fundraisers are enduring a gruelling 67-mile walk from Doncaster to Bolton for their friend Matthew Bolton, who was recently diagnosed with oesophagus cancer. Matthew was diagnosed a few months before Christmas. He is in a lot of pain and can barely eat, meaning he has lost a staggering six stone since September. Matthew is also extremely tired having already had six blood transfusions since his diagnosis. Chemotherapy is due to start in the next few weeks, and later in the year, he will undergo a seven-hour operation to remove the tumour. Life has been hard for Matthew and his partner in the last few years. Their daughter Beau was diagnosed with spina bifida and was told she would have no quality of life. She proves the doctors wrong every day, but at two-years-old she has already had seven operations. Whilst Matthew continues to have a positive attitude, he can’t help but feel stressed about the financial pressures he and his partner face. His friends have therefore decided to raise money through a sponsored walk. It will take place on 10 March, starting from the Game Cock Pub in Harworth, Doncaster and will finish at the Town Hall in Bolton. Treetop acrobatics come to Hodsock Priory Artistic group, Whispering Wood Folk, are creating a specially commissioned performance called The Snowdrop Queen at Hodsock Priory near Worksop in celebration of the beautiful array of snowdrops on the estate.
