hen the sun is shining on a glorious summer’s day, there’s nothing like whipping out the barbecue and inviting a few friends and family round for a good old knees-up – and what could possibly go wrong? While everyone is enjoying the Pimm’s, you’ve got meat, buns and skewers practically smoking out your ears, and – uhoh – those luxurious leek and cheddar sausages – which you could hardly wait to impress your loved ones with – have started to look more like the hot charcoal that’s cooking them than the succulent bronzedbanger you’d imagined. To ensure all malfunctions are avoided, and so you can enjoy your summer’s day stress-free, filled with impeccably grilled meats; we’ve put together a handy guide to accomplish the perfect barbecue, including cooking techniques, pros and cons of gas and coal barbecues, as well as a recipe to try out.

SETTING UP THE BARBECUE With charcoal cooking, you know it’s ready when it’s covered in a thin layer of grey ash. It doesn’t take too long to reach this stage and there’s no rush to cook on it as it stays hot for a long while. Arrange the hot charcoal in the centre-third of the barbecue, so there’s room for you to move the food away from the heat if need be. Place your food around the column of heat, so as the food cooks and the fat melts, it won’t splash on to the hot charcoal, causing flare-ups. This method should stop your food from blackening. If anything does start to cook too quickly, then simply move it further towards the outside of the grill. Top tips for not burning your food: • Don't cook too soon, use the charcoal’s heat, not flames • Use all of the grill space to cook, not just above the heat • If you have a lid for your barbecue you can use the lid to control flare ups

STEAK SUCCESS Grilling the perfect steak is something of an art form. Although the phrase ‘practise makes perfect’ is apt for this skill, if you follow these simple steps, you should have no trouble grilling a fantastic steak.

TRY THIS TASTY RECIPE:

• Firstly, allow your steak to reach room temperature. • Trim any excess fat off and season your steak to taste, with a brush of olive oil and some cracked salt and pepper. • Oil the grill by grabbing a piece of the trimmed-off fat with a pair of tongs and rubbing it across the grill. • Ensure the barbecue is piping hot and place each steak on the grill for one minute, turn and grill the second side for another minute. Turn again and rotate slightly, to get a diamond-grill pattern. Cook the steak on this side for half the remaining cooking time (see below for guide), and then turn once more to complete. • Remove from the heat. Check the steaks are cooked to preference by using the ‘face test’: cheek – rare, chin – medium and forehead – well-done. If you press the steak and then compare it with the fleshiness of each of these facial features, it provides a decent guide of well-done-ness. • Allow them to rest for five minutes; letting the juices flow from the centre and creating an all-round, succulent taste. For different flavours, soak your steak in a marinade overnight and enjoy with some salad, a corn on the cob, or whatever sides take your fancy.

CHARCOAL v GAS It’s a debate which has the power to cause heated arguments amongst the more Sainsbury’s ‘Grill Me’ gas experienced of barbecuers, who barbecue, £399 have tried and tested both, and faithfully chosen the preferred side for life. It is, of course, the gas v charcoal dispute. Those that are pro-gas will argue that their apparatus provides instant ignition, instead of waiting for the coals to burn, it’s easier to control and adjust the heat and flames and easy-to-clean drip trays provide much less mess than lots of grey ash. On the flip side, loyal charcoal fans will argue that the process of lighting the coals and standing nearby with a glass of wine while they burn is an integral part of the barbecuing experience. The smoky goodness that comes from charcoal also provides a distinct flavouring that a gas cooker simply cannot replicate. While both clearly present their pros and cons, ultimately if you’re looking for less mess and quickness – go for the gas barbecue. Whereas if you’re looking for the more authentic barbecue experience, smoke ‘n’ all, then perhaps charcoal is for you. www.regionalmagazine.co.uk

HALLOUMI KEBABS WITH THYME AND LEMON BASTE Cook time: 15-25 minutes Serves 4

Ingredients 2 medium courgettes 2 peppers (red/yellow) 1 large red onion 250g low fat halloumi cheese 16 cherry tomatoes Pitta bread, to serve For the lemon baste: 1 tbsp olive oil 2 tbsp lemon juice 2 tsp Dijon mustard Method 1. Halve the courgettes lengthways and thickly slice. Cut the onion into wedges and separate into pieces. 2. Thread the halloumi, cherry tomatoes, courgettes and onion onto eight skewers. Cover and chill the kebabs until you are ready to cook (you can do this up to half a day ahead.) 3. To make the baste, mix together the olive oil, lemon juice, thyme, mustard and seasoning. This can also be made ahead and chilled too. 4. Preheat the barbecue or grill and arrange the kebabs on the rack. 5. Brush with the baste, stirring it first to make sure the ingredients are blended. Cook for 4-5 minutes, turning often, until the cheese begins to turn golden and the vegetables are just tender. 6. Serve while still hot with warm pitta bread. For meat-lovers simply add chunks of beef, chicken or lamb and grill until cooked through.

Multi-million pound revamp for Ponds Forge A state-of-the-art gym expansion and brand new changing facilities – including sauna and steam room – will be introduced at Ponds Forge International Sports Centre as part of a multi-million pound refurbishment. Thanks to a major investment by Sheffield City Trust (SCT) and Sheffield City Council, it will be leading in ultra-modern technology with a Wellness System and MyWellness Cloud equipment to track fitness development, Technogym apparatus and the dynamic, pressure-sensitive lighting and sound Prama system which will bring the gym’s floors and walls to life to create an energetic and motivating atmosphere. Steve Brailey, chief executive of SCT, said: “All this will contribute to our ongoing goal to improve the health and wellbeing of Sheffield by creating top-of-the-range venues where local people can go to exercise and improve their fitness.” Until 21 September, there will be a temporary gym in the sports hall. All refurbishment work is expected to be completed by the end of October. Councillor Isobel Bowler, cabinet member for neighbourhoods at Sheffield City Council, said: “Ponds Forge is one of the city’s most

prestigious sports facilities and is an excellent city centre venue for everyone from children learning to swim through to Olympic-level athletes. Charity triathlon raises £300 Kath Morgan-Cresswell and Elaine Kirby – residents at Brunswick Gardens Retirement Village in Woodhouse – completed a sponsored triathlon. The challenge comprised a ten mile walk from Woodhouse to Rother Valley Country Park, a five-mile bike ride around Rother Valley and one hour on exercise machines in the Village’s gym. Their efforts raised £300 for Brunswick Gardens’ self-funding gardening club to purchase compost, seeds and other equipment.

LIFE INSIDE ‘THE BUBBLE’

From fine art to fantastic beaches and 24-hour party people, there are plenty of reasons why Tel Aviv is becoming THE short break destination of choice, writes Chris Wilson.

A

snapshot of Tel Aviv is likely to contain at least three of the following: a spectacular seafront with palm trees and golden sands, beautifully preserved Bauhaus architecture, ultramodern tower blocks, building sites, leafy boulevards... and a handful of impossibly cool dressed-down twenty-somethings making an art form out of doing nothing in particular. This is the city that took a long, hard look at the political and religious strife that most of the world associates with Israel, and decided it would rather throw a party instead. They call it The Bubble, and it’s easy to see why. Well, that’s one side of the story, and if you are looking for a short break destination that provides brilliant beaches, shopping, smart restaurants, and a

relentless dusk ‘til dawn nightlife you won’t be disappointed. You will, however, only be getting half the story. Tel Aviv is certainly big and brash, with an ever-changing skyline thanks to the huge number of very tall buildings being thrown up to cope with a booming population and vibrant business culture – but appearances can be deceptive. The “anything goes” culture that makes this city a magnet for the modern world’s 24-hour party people, has also created a haven for artists, designers and creative minds, a point that was very much brought home to me as soon as I checked in to the Artplus Hotel. This chic and understated hotel (blink and you’ll miss the entrance) is dedicated to Israeli art. Five local artists were commissioned to create the murals that set www.regionalmagazine.co.uk

the tone for the décor on each of the five floors. Retro-style furniture combines with clean modern design. My own room was a white cube with splashes of red acrylic paint on canvas designed by acclaimed local artist Elfrat Gal Nur. All rooms provide scribbling pads and coloured crayons, encouraging guests to catch the mood and get creative. With video installations on the stairwells and a ‘virtual’ Persian-style carpet projected onto the lobby floor, I found the whole set-up great fun. The location is hard to beat. You may not get a sea view but it is a two-minute stroll to Tel Aviv beach and the beachfront promenade. They also do great breakfasts and have a happy hour with nibbles and wine for guests every afternoon. Whether you are here to soak up the culture, hit the beach or crawl the bars, Artplus is the ideal base for your stay. If you want to get to grips with what is happening in Tel Aviv right now, head for the Sarona Complex. Hyped as the New City of Tel Aviv, it is a mix of unique Tel Aviv architectural history and a fusion of urban experiences, incorporating art, culture, entertainment and leisure. Despite the relentless building programme, huge efforts are being made to renovate and preserve. In the Templer settlement, one of the first modern agricultural settlements in Palestine dating back to the 1870s, we stumbled across an immaculately preserved olive press alongside a very cool modern wine bar built into the basement of one of the old dwellings. Often when a city embarks on a massive modernisation programme like this – and the corporate world is pouring millions into the new business-minded Tel Aviv – alternative lifestyles are marginalised and the result is a sterile banality. Not here, where street art (graffiti if you prefer) thrives. These aren’t just chancers with a few cans of spray paint. Committed artists like Maya Gelfman, a 37-year-old who has been exhibited at art fairs around the world, can take weeks working on complex, striking designs that all carry her tell-tale heart signature. There are many more like her. From the overtly political to the simply pretty, this unofficial art is as much a part of the cityscape as the sleek new office blocks and the cool bars. For something slightly less cerebral, take a stroll along the waterfront. From the billionaire’s boy toy yachts in the harbour to the surfers and beach volleyball aficionados, it’s the perfect setting to find a café to settle down for a spot of people watching. I didn’t spot any dog grooming parlours but they must exist, judging by the number of primped pooches strutting alongside their owners. For a more traditional take on Israeli life a visit to Jaffa is a must. Home of the Artists Quarter, also known as Yafo, this is the ancient port city out of which Tel Aviv has now grown. Jaffa has, in recent years, been regenerated with the old narrow streets and courtyards

The narrow passageways and ancient buildings in the Old City of Jaffa are worlds away from modern Tel Aviv, and if you’ve had a hectic Saturday night the quiet cafes serving the most fantastic coffee and freshly squeezed pomegranate juice provide the perfect Sunday morning pick-me-up. Jaffa is also home to the brilliant, barmy Bet Ilana Gur Museum, which exhibits original sculptures and designs of the artist Ilana Gur and also serves as her private home. The museum building stands on a hill in Old Jaffa with breathtaking views of the new city and the Mediterranean. The museum’s collections boast works of art both from Israel and throughout the world; sculptures by Henry Moore, ethnic art from Africa and South America, experimental art from around the world. Eclectic is the word and Gur the collector clearly favours art with a strong sense of self-expression. Even if you are not an art fanatic the views from the roof of the museum, back across to Tel Aviv, are mesmerising. It’s the perfect spot to draw breath, try to put everything you’ve seen into some sort of perspective, and plan your next visit.

TEEING OFF IN TENERIFE An inviting climate and stunning courses make the largest of the Canary islands an ideal year-round destination for golfers.

T

raditionally Tenerife has been the first choice as a winter sun destination, offering the prospect of heat, fine beaches and a break from bleak British weather. That perception is now changing with the realisation that the island, the largest of the Canaries, offers attractions as an all-yearround destination. The principal among these is the climate – temperatures average 22 degrees centigrade and 27 degrees is rarely exceeded. There is no variation in temperature between summer and winter months and it is increasingly seen as a better alternative to traditional summer destinations such as Spain and Portugal where temperatures can be oppressive in the summer months. The tourist industry is helping to encourage this influx of new visitors in the summer by offering attractive rates for hotels and for playing golf on the eight courses on the island. The mild but warm climate in the summer makes golf a pleasure in Tenerife and golf parties or couples would be well advised to consider the island as the ideal destination. Tenerife is just over four hours’ flight time away (Monarch fly from a number of UK airports) and one of the courses closest to the airport is Golf Las Americas. The verdant 18-hole course is formed from a natural amphitheatre of land with stunning views over the Atlantic and the island of La Gomera, home to the Canaries’ ninth golf course El Tecina. The par 72 was designed by John Jacobs and is a perfect example of a really good resort course. The fairways are enticingly wide as they snake around lines of pine and palm trees and the greens, with some undulations, are fair and true. The Bermuda grass on the fairways means that clean ball striking is the order of the day. It is not unduly long and some of the shorter par fours and

fives offer the average club golfer the chance of that rare commodity: a birdie. A review would be incomplete without mention of the wonderful clubhouse with balconies overlooking the course and its exotic flowers and fauna. The quality of food and service is excellent as would be anticipated with it being part of the five-star Hotel Las Madrigueras resort. Many of the luxurious and spacious bedrooms, the terraces, the restaurant and the swimming pool overlook the course and it is ideally situated being close to both Los Cristianos and Playa de Las Americas. As is the case with many golfing destinations, especially on the continent, courses such as Golf Las Americas are attached to a hotel which offers discounted rates to play and stay. The rates improve in the summer months so that one night’s bed and breakfast here for two plus one round of golf is offered from 202 euros until 30 September 2015. The Abama course is another attached to a hotel, the RitzCarlton, where special rates are offered. The course contrasts markedly with Golf Las Americas; it is more of a stadium course

to Golf Costa Adeje, arguably the flagship and most famous course on the island having staged the Spanish Ladies’ Open last September. The Pepe Gancedo layout is highly unusual – raised terraces made from boulders run across a number of fairways, old farm walls line holes and some bunkers incorporate the volcanic signature sand of Tenerife. There is a sense that the course is longestablished and very traditional. This, plus the fantastic views, makes the course a pleasure to play. A number of holes have greens perched on the headland, framed by the azure colours of the ocean below. Other courses on the island include the Manuel Pinero modified Golf del Sur, the Donald Steel designed Amarilla Golf, the Ballesteros Buenavista, the very traditional Real Club de Golf de Tenerife, and Golf la Rosaleda. It’s home to 70 beaches, the majority of which have been awarded blue flag status. It’s an island of two halves; the lush north of the island complements the sunny and dry south, shielded from the wind and humidity by a mountainous landscape which divides the island into two different worlds. At the heart of the mountainous range is the Tiede National Park which features the spectacular Mount Tiede. Vast volcanic craters greet the visitor and imprints of lava flows remain etched on the craggy landscape. A cable car will take you up to the very top of the volcano – although some hearty souls do attempt to walk. Whale and dolpin watching is also popular. The waters around the island are home to about 400 short-finned pilot whales and numerous bottlenose dolphins and tours are available all year round. Tenerife also has a well-deserved reputation as a culinary destination with its excellent food being complemented by some award-winning local wines which owe their success both to great imagination and the subtropical climate. In addition to Hotel Las Madrigueras, visitors might want to consider the plush five-star Iberostar Anthelia Hotel or the comfortable and friendly Hotel Suite Villa Maria – also five-star. Black magic No, this isn’t another hardcore version of one of Mercedes’ already hardcore AMG cars. No, this is a special edition that Porsche has created for its base 911 Carrera. Changes over the regular 911 Carrera include a completely black exterior with 20-inch 911 Turbo style alloy wheels. Standard equipment includes auto-dimming rear-view mirrors, rain sensing windscreen wipers, cruise control, automatic climate control, heated leather seats, sport designed steering wheel and Porsche Communication Management (PCM) which includes a seven-inch colour touchscreen with satellite navigation. As it’s based on the base 911 Carrera, it’ll only be powered by a 350hp 3.4-litre straight-six engine with the option of two or four-wheel drive and in coupe or convertible body styles. On sale now from £75,074.

Joy of six BMW has released a new ‘Competition Pack’ for the M6. The main highlight is a significant power upgrade of 40hp from the standard M6 making total output now 592hp. Torque has also been uprated rising to 516lb ft from 501lb fit. This has improved the performance figures no end: 0-62mph now takes 3.9 seconds or 4.0 seconds for the Cabriolet, 0124mph now takes 11.8 seconds (over half a second quicker than the standard car) and there’s a new top speed of 189mph if you choose to disable the electronic limiter. Other changes include stiffer springs, dampers and anti-roll bars, a new mapping for the steering system, new 20-inch alloys and black chrome quad exhausts. No word on a price yet but it’s available from July.

Competitive edge The 595 Competizione is a spiced-up version of the already mad Fiat 500 Abarth. However, Fiat thinks the ordinary 595 isn’t enough so they’ve increased the power output and added a host of standard equipment. Power has been raised by 20hp from 160hp making the total output of the 595 to 180hp with 184lb ft of torque. This makes the 595 sprint from 0-62mph in 6.7 seconds with a 140mph top speed. It can even do 48.7mpg on the combined cycle. Standard equipment now includes a Record Monza exhaust system, 17-inch alloys with titanium finish, a race-bred Brembo braking system, red brake calipers, Sabelt sports seats, Xenon headlamps and parking sensors. Prices start at £19,890 for the hatch, £21,890 for the Cabriolet. On sale now.

R-rated Jaguar? Upon the arrival of the new Jaguar XE, the fastest version you can buy is the XES which houses the same 335bhp supercharged V6 found in the entry-level FType. While this model is undoubtedly fast, it can’t match the halo models made by rival companies BMW and Mercedes-Benz which are considerably more powerful. As a result, Jaguar’s got a hot version of the XE in the pipeline to take the fight to the unsuspecting Germans. It’s called the XE-R, and while it hasn’t been made official, it’ll most likely come with the 488bhp V8 found in the F-Type roadster.
