Lavender Tired of being tired? Lavender could be the flower for you. Studies from the University of Southampton have shown that people who sleep with lavender on their pillows have 20 per cent better sleep on average than those who do not.

Sage Around half of this plant is made up of vitamin K. Although this vitamin doesn’t get much press, it is actually rather useful, helping to prevent cardiovascular disease, osteoporosis and diabetes.

Honey Honey is the bee’s knees of natural remedies. Rich in antioxidants and vitamins, it really can be used for everything from lowering your chance of getting heart disease to promoting wound and burn healing. It has even been said that local honey reduces the effects of hayfever.

Home comforts A RELAXED DINING EXPERIENCE IS THE ORDER OF THE DAY FOR PHOEBE SEYMOUR ON HER RECENT TRIP TO ASTON HALL HOTEL. he best hotels always seem to feel like a home from home, and as I sit in Aston Hall Hotel’s Bamford Restaurant, it quickly becomes apparent that this is the kind of place I could certainly get used to. Contemporary purple and grey walls, cosy lamps and silver framed mirrors create a living room effect, while the a la carte menu steps away from intimidating fine dining, opting instead, for comfort food. As a Best Western Plus hotel, Aston Hall has the benefit of being part of an established national company, but the freedom of being an independent. Restaurant manager, Thomas McCole, has a wealth of experience in the hotel restaurant industry, and has quickly realised that guests respond better to a relaxed dining experience. Looking at the menu, it’s not as casual as their Volante Bar menu, but strikes a balance between popular classics such as surf and turf, and dishes more suited to a higher end gastropub. My partner and I selected three courses for a very reasonable £24.95. After a couple of

warm bread rolls, I started with the grilled asparagus served with a crispy-coated hen’s egg – perfectly runny in the middle – and a zesty saffron mayonnaise that contrasted nicely with the bitterness of the asparagus. My partner had the homemade soup of the day – an earthy, yet slightly sweet, creamy mushroom. A crunchy raft of garlic and herb croutons complemented the dish well and created a variety of flavours. For mains, my partner had the chargrilled chicken topped with a thick peppercorn sauce and served with a grilled tomato and mushroom, golden onion rings, triple cooked chips and a rocket salad – a truly British dish, which was mopped up in no time. Meanwhile, I had the puy lentil, sweet potato and coconut curry with red pepper, onion, spinach, pilaf rice and garlic naan. This aromatic curry was tangy and moreish and wouldn’t be out of place in a traditional Indian restaurant. We had been excited about dessert from the moment we arrived and were not disappointed. My hot chocolate pudding with milk and white chocolate sauce and a cool mint chocolate chip

ice cream looked delicious and tasted even better, while my partner’s coconut panna cotta with passion fruit jelly, coconut macaroon and coconut ice cream was colourful and a lighter way to round things off. Full, satisfied and relaxed, I wished we had booked a room to stay in. Still, I was glad to have had a couple of hours to fully appreciate this cosy restaurant, which makes diners feel just as welcome as hotel guests. Barbecues are great for getting the family around, young or old, big or small, this truly is people pleasing food. However, they can be frustrating sometimes, even to those who are very experienced in using them, so we’ve come up with a few tips and tricks to help you out at this time of year.

Charcoal Ideal for those who want a full BBQ flavour, cheaper than gas.

Hooded BBQs In order to effectively sear your food, place it on the edge of the grill and fold the hood over it. Average cooking time for sausages and burgers is five minutes, chicken thighs ten minutes and larger cuts should be in there for 20 minutes or longer.

Unhooded BBQs Put the food on the grill, and adjust the height to relieve or intensify the heat, judging by the colour or the type of food you are barbecuing.

Barbecuing over gas Ideal for those who haven’t got much time and want something that’s easily adjustable. Turn the burners up to full power until it is sufficiently warm (around 200-250°C) – this should take around five to ten minutes. Place food in the centre of the grill until it is fully browned then immediately lower the heat and close the hood (if you have one) over it.

Cleaning There are various ways to do this. It is best to clean your BBQ when it’s still a little warm to remove grease stains or oil. Have any leftover onion or beer? These can be used too. Just chop up your onion and stick it on to remove any grit or pour over some beer and wipe it down with newspaper.

TIPS: Always cook chicken and sausages in the oven first – you don’t want your guests to go down with food poisoning

Get your meat up to room temperature by taking it out an hour before you want to cook it for effective grilling

Light your barbecue well in advance so you’re not waiting round for ages for food to come out

If you have the time make your own burgers – they’re super tasty and better than shop bought ones

Don’t just stick to meat – veg and fruit can often be cooked on barbecues and can turn out to be a real crowd-pleaser

Test the meat before you eat – it may seem obvious but it can be overlooked especially if you’re in a rush

Don’t throw on cold water in an attempt to cool down hot coals, it can leave you in a bit of a pickle

And, just in case everything goes to pot, make sure your kitchen’s pots and pans are up to scratch for last minute emergencies

Olive oil 4 thick slices of aubergine 1/2 tsp paprika 1/2 tsp garlic powder 2 tsp oregano 1/2 tsp salt 1/4 tsp pepper 2 hamburger buns Lettuce leaves Red onion slices Hummus Tomato slices

120ml olive oil 1 tsp sea salt 1/2 tsp ground black pepper 1/2 tsp paprika 1/2 tsp cumin 1/4 tsp cayenne pepper 2 cloves garlic, chopped 3 tablespoons onion, chopped 64g fresh parsley, chopped 350ml beer

Method

1. Sprinkle the aubergine slices with salt and let them stand for 30 minutes, then pat dry. 2. In a small bowl, stir together about two tablespoons of olive oil, paprika, garlic powder, oregano, salt and pepper. Brush each side of the aubergine slices. Heat a pan or BBQ grill and cook each slice for 3-4 minutes per side. 3. Toast or grill the buns. Top the bottom buns with lettuce, onion slices and aubergine, then spread desired amount of hummus. Top with another eggplant slice, tomato slice and the top of the bun. Or use your preferred toppings, enjoy!

Method

1. Pour olive oil into a bowl and mix together with the salt, pepper, paprika, cumin, and cayenne pepper. Add garlic, onions, and parsley. Mix together well with a fork. Slowly add beer as it will cause the mixture to foam and bubble slightly. 2. Pour the marinade over the chicken in a zip top bag. Remove as much air as possible from the bag and seal. Turn the bag from side to side to make sure all the chicken has been coated with the marinade. 3. Place the bag flat on a small, rimmed kitchen sheet and refrigerate. Allow to sit for up to one hour or overnight for best results, turning the bag over every few hours to keep the chicken coated.

Help when you need it FROM A FOOD BANK TO SUPPORT GROUPS, NEW HOPE COMMUNITY CHURCH IN HALFWAY PROVIDES AID IN TIMES OF CRISIS. n recent years, a multitude of community-based initiatives have emerged in response to the growing demand for emergency food aid across the UK. These charitable ventures are an increasingly familiar feature of society and have come to be an indispensable part of efforts to reduce hunger in a country where an estimated 8.4 million people are living in food insecure households. One such organisation is New Hope Community Church in Halfway, an alliance tackling food poverty and social isolation, which campaigns to deliver “God’s provision in times of crisis”. Staffed largely by volunteers, New Hope distribute an average of 25,000 food parcels each year, providing those in crisis – within a six-mile radius – with three meals a day, per family member. “Non-perishable, in-date food is donated by the public at a range of local institutions, such as schools and churches, as well as supermarket collection points,” says food bank coordinator, Michelle. “It is then sorted into emergency food parcels by our volunteers to be given to those

in need; who are referred to receive a parcel of seven days’ nutritionally balanced food.” But New Hope recognise that helping those in crisis is about more than nutrition, which is why they provide a range of befriending and mental health services, like debt and money management advice and CV masterclasses, to help break the cycle of poverty. Volunteers provide a listening ear and signpost organisations who can help resolve the underlying cause of crisis; such as GROW, a mental health movement which helps people who have suffered, or are suffering from, mental health problems. “GROW is a non-judgmental listening space and the principal strength of this group – held on a Wednesday evening – is the support members give each other from their own experiences,” says volunteer and befriender Kirsty. “Support groups are a helpful tool to aid recovery and by sharing experiences in a confidential setting, you gain hope and develop supportive relationships.” The New Hope Furniture Project helps families and individuals achieve a better

John Hewett Owner/Director John has worked in the car industry since 1971, starting out as a mechanic and opening J P Autotechnics in 1984.
