Calling all YOUNG CHEFS...
If you’re under 23 and a rising star in the kitchen, you could be our next Young Chef
o you have a bright spark working in your kitchen who is shaping up to be an outstanding chef of the future? If you do, now’s the time to shout about it, because Westside is staging Young Chef of the Year 2024.
Once again, the contest will be held at the MSK Academy Kitchen at The by Len Unwin, Curriculum Team Leader of Catering and Hospitality, who will be assembling a panel of expert judges.
Len and his team have devised a brief that will challenge the most skilled of chefs but one that will allow them to be creative and truly show off their skills. Entrants will be invited to take part in a MasterChef-style cooking competition, provisionally set for 2 September, and will be asked to cook a main course and dessert in two hours – but there will be a caveat, more of which will be revealed in future
issues of this magazine.
The competition is open to all restaurants
region and all chefs must be under the age of 23 on 1 August 2024.
The Westside Young Chef of the Year competition is a great opportunity to shine a light on the next generation of kitchen superstars. We’re looking forward to seeing what the best young talent out there has to offer, and gives each of the shortlisted chefs a boost by placing them in the spotlight.
The results will be announced at the 2024 Westside Restaurant and Bar Awards at The OEC – Owlerton Events & Conferencing –on Monday 28 October.
We’ll be contacting restaurants across the region in the next few weeks, reminding head chefs and restaurateurs to get involved.
But don’t wait to be invited. If you employ a bright young chef with the talent and drive to reach the top, let us know.
Last call for entries... Contact editor Richard Abbey by emailing richard.abbey@rmcmedia.co.uk to put yourself or your chef in the running for the competition. Closing date: 31 July 2024.
Westside & Southside Restaurant & Bar Awards 2024
After three successful consecutive years, the Westside & Southside Bar & Restaurant Awards has settled comfortably into its new location at the OEC – Owlerton Events & Conferencing.
This year’s event, which takes place on Monday 28 October, will be the fourth time we have held the event here and if the previous years are anything to go by, 2024’s ceremony is going to be another fantastic affair.
Rewinding back to last year, over 200 people packed out the Hillsborough venue, which opened in late 2019 and hosts a range of impressive multi-purpose suites with catering for up to 500 guests, a perfect setting for weddings, dinners, balls, conferences, live events and
event; extremely well organised, the service was faultless throughout the evening ensuring that the awards ran smoothly and without a hitch.
Each of our 22 winners received an engraved plaque, which were presented on the night by publishing managers Sam Warsop, Mandy Ogle and Sally-Anne Sharp and publishing director Amanda Roy.
Here’s a reminder to all restaurant, hotel, café and pub owners: to make sure your establishment is under consideration for the 2024 Westside Restaurant & Bar Awards, contact publishing manager Sam Warsop at sam.warsop@rmcmedia.co.uk

A guide to DERBYSHIRE
Summer is the perfect time to explore this most beautiful of counties. Here are some towns and villages that need to be on your must-see list.
DERBYSHIRE
Ashbourne
Ashbourne is known as ‘The Gateway to Dovedale’. While there’s no doubt that it’s the perfect base if you want to explore the spectacular limestone landscapes of the southern White Peak, it also pays to take a leisurely walking tour around town to immerse yourself in its fascinating history and architecture.
Ashbourne is a visual feast for the discerning visitor. Don’t miss the splendid facade of the Grade I listed Old Grammar School; the ‘longest inn sign in the world’ outside The Greenman pub and restaurant; or the beautiful St Oswald’s Parish Church with its
Bakewell
Ashbourne also has some fascinating foodie links. The original recipe for Ashbourne Gingerbread was acquired from Gingerbread can be purchased locally.
Edale
famous long distance walking path, the Pennine Way.
The village itself grew from the herdsmens’ shelters or ‘booths’ at what are now the hamlets of Upper Booth, Barber Booth, Ollerbrook Booth and Nether Booth. The central ‘booth’ was Grindsbrook Booth, now usually called Edale Village.
The village has two popular pubs, a café and local shop. The village has a railway station on one of England’s most spectacular two camping sites in Edale as well as others in outlying ‘booths’.
Castleton
Close to mysterious Mam Tor, locally known as the ‘Shivering villages in the Peak District.
Whether you approach through the dramatic limestone gorge of Winnats Pass or from the Hope Valley, you’ll appreciate the fabulous views created by its location on the cusp of the Peak District’s breathtaking limestone and gritstone landscapes.
Whatever the weather, Castleton has something to offer visitors

Idyllically situated on the banks of the river Wye, Bakewell is the biggest town in the Peak District National Park. With

Tideswell was once important for its’ markets and was also a centre for a variety of local industries including quarrying, lead mining, cotton and velvet mills. Today it continues to be a focal point for surrounding communities with a small industrial estate, craftwork, furniture and piano manufacture providing employment.
Set in wonderful walking country, Tideswell makes an excellent base and is a good place for a refreshment stop in one of the traditional village pubs or cafes.

Historically known by the Romans as ‘Aquae Arnemetiae’, or the Spa of the Goddess of the Grove, Buxton is one of England’s fringe of the Peak District.
town in England, but is perhaps most famous for its ‘healing’ spa waters. Visitors have travelled to bathe in Buxton’s mineral waters for thousands of years but Buxton is also deservedly star hotel and spa with rooftop pool, beautiful rooms and spa treatments. Among Buxton’s other architectural gems are the striking Devonshire Dome, which has a larger span than St Paul’s Cathedral and was built by the Duke of Devonshire as stables to complement The Crescent. It then became a hospital and is now Derby University’s Buxton campus.
Another masterpiece is the exquisite Grade II listed Edwardian Opera House, built by renowned theatre architect Frank Matcham

Wirksworth

Hathersage
Hathersage is famous for local literary links and legends; it inspired author Charlotte Bronte when writing ‘Jane Eyre’, and nearby North Lees Hall was visited several times by the author and around the village are also sites associated with the legend of Robin Hood – his lieutenant, Little John is buried in the churchyard of St Michael’s.
The town also has one of the UK’s few outdoor swimming pools round and provides views of Stanage Edge, Hathersage Church and the surrounding hills.

A weekend not to be MISSED!
Don Valley Bowl 29-31 August.
f we told you that some of the UK’s best bands and artists were heading to South Yorkshire this summer, housed in a giant big top complete with all the fun of the circus, would you believe us?
Well, in late August that’s exactly what’s happening as Rock N Roll Circus heads back to the Don Valley Bowl following a hugely successful launch last year where thousands of music fans witnessed epic live performances from the likes of Noel Gallagher’s High Flying Birds, Self Esteem, Natalia Imbruglia, Happy Mondays and many more.
The event is a multi-day festival mixing the best of live music with the best of circus entertainment and will this year be opened by hometown hero Richard Hawley on Thursday 29 August.
to launch next year’s Rock N Roll Circus
He said: “It’s always a privilege and an honour to play in my hometown. I loved seeing Self Esteem at the Rock N Roll circus last year so I’m looking forward to it myself in August.”
Meanwhile, UK pop queen Becky Hill will then be headlining on Friday 30
will take the stage on Saturday 31 August. They will be joined across the weekend by a stellar line up of artists including Peter Doherty, The K’s, The Divine Comedy, Joel Corry, The Coral, Cian Ducrot, Jake Bugg emerging bands.
This year will be even bigger and better than last year and will feature more stages,
more music, extended opening hours, a huge food and drinks village, daily circus workshops and upgraded VIP areas.
Not only will the bars be bigger and better this year, but a new bar will be added to the top of the hill. Introducing Air Force One, the bar that sits on the bank of the Don Valley Bowl hill. Getting a cocktail and watching the sunset across the festival done in style.
Guests will also have the chance to upgrade to have access to the VIP areas, The Ringmaster’s Tipi or The Juggler’s Den. Some VIP offerings include fast track entry, posh loos, private food vendors and exclusive bars for a quicker service. This is a weekend not to be missed!

dream of taking his family on a road trip around Scotland.
ike a lot of visitors to Scotland, my previous incursions north of the border had been limited to the two main cities – Glasgow and Edinburgh. But as good as they are, they offer only a taste of what the rest of the country has to offer.
Keen to explore, I talked my family into taking, some might say, an epic road trip and over eight days we covered in excess of 400 miles, from Dumfries and Glasgow in the south-west up to Nairn and Inverness in the north, Aviemore and the Cairngorms in the middle and Edinburgh in the south-east.
We saw lochs, mountains and glens, experienced snow, sunshine and rain, and loved every minute. We walked – averaging 13,500 steps daily – cycled, and drove our way around the most stunning scenery
Sandman Signature Hotel in Glasgow, a 179-bedroom property well located just off the M8 and just a ten-minute walk from the city’s Buchanan Street, where you’ll
The black exterior was in-keeping with the hotel’s contemporary theme which featured a lobby and bar dominated by exposed concrete and pipework in contrast to cosy, spacious rooms. We stayed in a signature twin which had two double beds, a fridge, microwave and kettle, huge walk-in shower and plenty of room for four. The four-star hotel has an on-site bar and restaurant –Chop Grill & Bar – which also serves a very good breakfast to set you up for the day ahead.
We were well-fuelled by the time we hit the road and headed north to Fort William,
which took us over one of Scotland’s bestknown and picturesque roads – the Glencoe pass. This stunning section of road takes you past the ‘Three Sisters’ and mountain resort and is simply breath-taking.
Fort William sits on the banks of Loch Linnhe and is backed by the Grampian mountain range, of which Ben Nevis stands the tallest. It’s the perfect spot from which to explore, whether you’re into walking

A two-hour drive north from Fort William to Nairn was anything but tedious as the scenery provided a welcome
Loch Lochy and Invergarry Castle before you travel up the west banks of Loch Ness to Scotland’s north coast.
Nairn is home to Crerar Hotel’s Golf View Hotel & Spa, which overlooks the Moray Firth and is sandwiched between two quality golf courses – Nairn Golf Club and Nairn Dunbar Golf Club.
We were wowed by its beachfront location and the quality of the accommodation. Our sea view ‘feature’
rooms were spacious and luxurious with complimentary cold drinks and chocolate treats as well as Nespresso coffee machines
liked personal touches such as the ‘Golf View Gazette’ which had been personalised to each guest and featured information about the hotel as well as weather report and availability in the restaurant and spa.
The treatment rooms for the Coast Spa were fully booked on the day of our visit but we did make use of the pool as well as the sauna, steam and hydrotherapy rooms.
Breakfast at Golf View is taken in the Hickory restaurant and is served a la carte. As well as pastries, fruit and charcuterie, we tucked into very good dishes of smoked salmon and scrambled eggs, smoked haddock and French toast, washed down with very good Scottish tea.
From Nairn we headed south to Aviemore, which sits at the heart of the Cairngorms National Park. But before we
explored the town, popular with snow and outdoor enthusiasts, we headed a little further to Kingussie and the Highland Wildlife Park.
Part of RZSS (Royal Zoological Society of Scotland), the park is home to 19 different species of animal including wolverines, amur tigers, polar bears, snow leopards and grey wolves. The park also has a drive-through reserve where you can get close to European bison, red deer, Przewalski’s horse and vicuna. It was a great way to spend a few hours and son.
In Aviemore we added a little adventure to our holiday by hiring bikes. In Your Element (IYE), based in Rothiemurchus, has a full range of bikes to hire, including brand new e-bikes, and offers other activities such canoeing, white water sledging, gorge walking and axe throwing. IYE was established in 2003 and has

activity bases in the Inverness and Loch Ness area, Loch Lomond and the Trossachs National Park, Fort William and Lochaber and around Loch Tay.
My wife and I took advantage of the e-bikes, which were Marin Rift Zone E1s and had 11 gears as well as a 630WH battery, whilst my children had conventional hardtail Marin mountain bikes. Staff at IYE set up the suspension for each rider and gave us a run through of how they worked, kitted us out with helmets and then sent us on our way. There are some pre-determined trails to follow; we opted for the 13-mile round trip to Glenmore which followed an old logging trail and was relatively easy going on mainly gravel track. Cold and wet weather proved to be no obstacle and we thoroughly enjoyed our three hours or so heading through the forests and glens of the Cairngorms with the snow-covered peaks as our backdrop.
From Aviemore we headed further south on the A9, literally driving through the clouds to arrive at Fonab Castle Hotel just outside Pitlochry. Nestled in the
property is the height of luxury and has been lovingly restored to combine historic features with contemporary touches. Complementing the 42 bedrooms is a 3 AA Rosette restaurant and a spa complex. We stayed in the newer Woodland Wing
Faskally and loved all the comforts it provided, including Egyptian cotton sheets, Nespresso coffee machines and toiletries from Temple Spa. Each guest was provided with a robe and slippers and there was even an umbrella in each room in case you wanted to venture outside – much-needed on our visit due to the wet and windy weather.
Two dining options are available at Fonab; the more formal Sandemans restaurant which is housed in the original part of 19th century castle and serves a seven-course tasting menu, or 1892 on the Loch, a more relaxed brasserie-style restaurant. We opted for the latter and tucked into excellent dishes of Cumbrae oysters, pumpkin and sage ravioli, Loch Etive trout and Perthshire red deer. We
heading upstairs to the bar to sample some local whiskies – I recommend the Edradour, a small batch whisky made just down the road in Pitlochry which is aged in Oloroso sherry and bourbon casks.
From Pitlochry we headed further south to Edinburgh, crossing the Forth road bridge, and spent a couple of days exploring the shops and tourist sites before heading home.
and one that lived up to all expectations. Scotland, you were stunning.
