old staircases back to life using oak and glass, we get a huge reaction, “ added Paul. “Adding oak newels and rails alongside really does give a contemporary look but also a nice contrast of colours to the areas. Some believe you have to remove the whole staircase but you actually don’t. It’s easier to do than you think.” Glass staircases are usually installed much easier, quicker and simpler compared to that of a normal staircase. Glass panels, in a glass staircase, usually attach using brackets. Going wild AHEAD OF HIS TOUR LATER THIS YEAR, NORTHSIDE SPOKE TO COMEDIAN MILTON JONES. orget James Bond, Jason Bourne, Ethan Hunt – there’s a new spy in town. And he’s not dressed in a neat tuxedo or headto-toe camouflage. He’s wearing a garish Hawaiian shirt. That’s right, Milton Jones – ‘Mock the Week’s resident oddball, Radio 4 regular and king of the surreal one-liner – is back on tour, and this time he’s an international man of mystery. The wild-haired joke-teller might not be the obvious choice for a secret agent, but in ‘Milton: Impossible’ the 55-year-old comic will be taking his audience through an action-packed story via hundreds of his trademark, exquisitely-crafted pieces of wordplay. We caught up with the ‘Live at the Apollo’ star ahead of his UK tour to check he’s had the proper training.

The new tour is called ‘Milton: Impossible’. What made you decide on the spy theme?

‘Basically, I came up with the title before the show! I thought: “That sounds good!” So I made a rod for my own back by theming it. But sometimes it’s easier to write to a theme than have a completely blank page. The show is based on “Mission: Impossible”, but “Mission: Impossible” has a huge budget and lots of special effects. My show is just me and some hats and about 250 jokes. It’s low-tech instead of high-tech.’ 12 Northside | www.northsidemagazine.co.uk

So, like your last two tours – ‘Milton Jones is Out There’ and ‘The Temple of Daft’ – this show has a narrative element to it?

‘If you’re going to do a show for over an hour you can’t just tell bits. That’s what I do on “Mock the Week” and “Live at the Apollo”, which is fine, but you want something with the veneer of satisfaction, otherwise it’s too fragmented. This show’s got an interrogation scene, a car chase with a swivel chair, and I end up escaping on top of a Vince Cable Car. It’s not strictly realistic, but it’s as daft as ever.’ Before touring, you perform work-inprogress shows to test your material. How important are those previews?

‘They’re very important. Even after all these years, I’ll think I’ve written the best joke ever and it turns out to be one of the worst jokes ever – but what I’ve improvised off the back of it stays in the show. So I would have never got to point B without going through the dreadful point A.’ Do you end up with a lot of great jokes that just don’t fit into the theme or narrative of the show?

‘Yeah, I do. There are about 250 jokes in the show, but I reckon I end up writing about 350. A lot of them are then used somewhere else – in the next tour, on radio, on “Mock the Week” – so they’re never wasted. And if they’re particularly brilliant then I might go out of my way to include them in the show!’ Have you ever thought of doing a show of just the off cut jokes that didn’t make it into the final version?

‘Yes, I could even call it “off cuts”, couldn’t I? In fact, some would argue that that’s what I do anyway!’

‘If a gag works, it makes a cartoon in someone’s head – a very brief picture where they think they know where it’s going, and then you pull the carpet from under them and it was all about something else all along. It’s reverse engineering from an idea or a phrase.’ Your last tour played to more than 100,000 people, and you’ve appeared on ‘Mock the Week’ over 40 times. What’s more fun to do: a live show or a TV appearance?

‘They’re both good in different ways. Going to small place on a Saturday night where they’re all determined to have a great laugh – I don’t think that can be beaten, in one sense. With radio or television, you’re as good as the edit, and it’s out of your control. That may well work in your favour, or it may not. With “Mock the Week”, when I think I’ve done a bad show, I’ll watch it back and think, “oh, it was all right”, but when I think I’ve done a really good show I’ll watch it back and think, “oh, it was all right”. It all evens out.’ Do you always watch your ‘Mock the Week’ appearances back?

‘Yes, because I need to know what they used and what they didn’t. Doing several episodes, the same subjects may come back, so obviously I don’t want to say the same thing that has already been aired. And then, occasionally, I’ll be channel flicking and I’ll come across myself, as it’s endlessly repeated on Dave. But I watch them from behind a sofa a bit. I’m very grateful to “Mock the Week” for giving me a wider platform, and also a slightly different audience. It’s a younger audience, and those people will come to a tour show, sometimes even bringing their grandparents or parents. My audiences are a motley selection of people, which I quite like, actually.’

because overall my references are quite general, and even if you didn’t get it, the joke’s only going to last 20 seconds, so there’ll be something else along soon enough.’ You have another Radio 4 series in the works, the tour and more ‘Mock the Week’ episodes. What’s next after that?

‘I don’t have anything else planned! But who knows what will turn up. Sometimes the unexpected things that come along are the most interesting – other quiz shows, a corporate event abroad – things you wouldn’t have predicted. Doing “Celebrity Mastermind” or something, you know? You get to meet and talk to people you wouldn’t otherwise.’

When do you consider a joke ‘finished’?

‘When I’ve got an idea over in the minimum number of words, then I know it’s done.’ And what makes the perfect joke?

How do you cater for those different generations in the same audience?

‘I am aware that if I make a reference to Instagram or something I’m going to lose everyone over 50. But that’s fine

DINING OUT ON THE HEATWAVE: JORDAN ODU EMBRACES SUMMER. iven how 2022 has been the most normal year we’ve had in what feels like forever (ignoring the doom and gloom of the news of course), you won’t catch me complaining about the recent heatwave. I somehow managed to avoid melting and soaked up some rays during what’s been our busiest month in ages. First of all, we launched the highly-anticipated Rudy’s Chapel Allerton, where their

heavenly Neapolitan-style pizzas went down a storm. My new personal favourite is the Cinghiale, which is blessed with an irresistible nduja, wild boar salami, and fior di latte topping – they can expect many restaurant visits and Deliveroo orders from my household in the coming months. Another favourite on my doorstep is the ever-popular San Carlo, which has definitely been one of my go-to summer spots for years. Their terrace is ideal for people watching, whilst sipping on some chilled Gavi over a plate of seafood linguine and their famous garlic pizza bread. 20 Northside | www.northsidemagazine.co.uk

Another gem I’ve discovered is Harrogate’s historic Coach & Horses. They’ve recently undergone a stunning makeover which pays homage to the pub’s original design and storied past. They do an excellent Sunday roast, which we enjoyed with views of The Stray. An essential spot for anyone that loves that traditional pub charm we don’t see enough of these days. If you’re heading into Leeds this

month, you’re spoilt for choice when it comes to newness. First up, Honest Burgers have finally arrived having conquered London and beyond. As the only UK burger brand with their own farm, they truly deliver on their promise of ‘the great British burger’ and make everything they serve in-house. Their limited-edition Morocco Burger is a must this summer, which comes stacked with Merguez-rubbed Honest beef, cheddar, Moroccan guacamole and harissa mayo served with their rosemary fries, and a side of the Leeds’ first bacon cheese gravy to dunk, they’re incredible. the wow factor and freshest ingredients. It’s also a steal at £25 for three courses and a glass of Chandon Garden Spritz. I went with the light and airy Smoked Salmon Mousse, followed by the juicy Flat Iron Steak. The Maple Syrup Cheesecake with blueberry compote and candied pecans finished off an impressive lunch. For the rest of the afternoon, I embarked on a bar crawl around several of the city’s best bars. First stop was Lost

& Found at the iconic Leeds Club, which has just unveiled its summery spritz menu. The Saint Germain Spritz is a highlight for me, blending Prosecco with St-Germain and soda. Easily one of Yorkshire’s most eye-catching bars, and always fantastic service. Over in Granary Wharf, The Canal Club continues its quest to innovate where cocktails are concerned. Try the refreshing Pearfection, which blends the zesty Ketel One Citroen with apple liqueur, pear puree, fresh lemon, and

elderflower syrup. I was also a little peckish by this point so tried a couple of their new summer dishes including Thai Chicken noodles, the colourful peach and beetroot salad, all washed down with a jeroboam of Minuty. Bringing the perfect end to a fantastic evening on their riverside terrace. It’s safe to say that summer 2022 has delivered on its promise of greatness, long may it continue. A large proportion of these purchases were dogs, as families and individuals looked at ways to stay active, help their stress and perhaps combat social isolation. Dogs are a great addition to any household, providing companionship, affection and fun, and are also a great way to meet people. Whether you’re looking to join likeminded owners for walks or social activities or just want to head out with the family, it is imperative that your pooch is well behaved. For time-served dog owners, training them can be second nature but for new owners, this can prove to be a challenge and requires patience, perseverance and, sometimes, a helping hand. Along with two other dog trainers, Jacob Morgan set up Yorkshire Canine Academy (YCA) in April 2021 with the aim of providing an unrivalled dog training service in Leeds and the surrounding area. “We have a wealth of experience, from raising puppies to treating dog aggression,” said Jacob. “Our qualified training team will guide you and your dog through our extensive training programmes.”

YCA offers one-to-one training, home visits, residential training, doggy boot camp and online-based classes. But, even with expert help, don’t think that this is a quick fix. “How long does it generally take to train a dog? How long is a piece of string?“ said Jacob, who has been training dogs for five years and has taught over 500 animals during this time. “Factors include; genetics of the dog, drives of the dog, motivation, health, diet, and the relationship with the owner just to name a few! Whatever you do, consistency is key if you want things to go as smooth as possible. I always say the same thing “slow is smooth and smooth is fast” rushing the process might lead to

you falling over yourself and stunting progress.” Not all dog owners are prepared to put in the hard work but Jacob can’t stress enough the importance of a structured routine - you’ll reap the benefits in the long-term. “Most of our clients are hard-working and dedicated to their dog but sometimes people want the flashy results but have no interest in putting in the work,” he added. “Think wishing for that beach body but ordering takeaway every night.” Jacob and the YCA team - there are seven members of staff in total - take great pride in their work and seeing dogs, whatever their age, overcome genuine anxiety and fear-induced aggression and the impact that has on their owners is really rewarding for them. Finally, is their any advice Jacob would give to potential new dog owners? “Pick the breed that’s suitable for your lifestyle,” he said. “It’s so so important you can meet that dogs needs. Wanted: budding new designers WITH HAREWOOD AS ITS BACKDROP, THE NEW YORKSHIRE SCHOOL OF GARDEN DESIGN AIMS TO UNEARTH THE HORTICULTURAL STARS OF THE FUTURE. RICHARD ABBEY SPOKE TO FOUNDER ALISTAIR BALDWIN. isitors regularly flock to Harewood House to marvel at its gardens, which span over 100 acres and were originally designed by ‘England’s Greatest Gardener’, Lancelot ‘Capability’ Brown. They are some of the most beautiful in Britain. As well as the huge visual aspect, there’s also a large amount of technical detail that goes into planning such outdoor spaces, something that Yorkshire-based garden designer Alistair Baldwin is keen to highlight in his latest venture. Alistair, who launched Richmondbased landscape and architectural design consultancy AWB Associates over 15 years ago, says its time for a school which teaches budding new designers of the future how to work in beautiful terrain, specifically in the north. To achieve this dream, he has partnered

with Harewood to launch the Yorkshire School of Garden Design, which opens its doors this month. “The Yorkshire School of Garden Design was born out of my passion for this great art, combined with a deepseated belief that the north of England is crying out for such a school,” said Alistair. “For too long the budding designers of the north have had little local choice when looking for a learning

experience to broaden their skills and launch them into the profession. More often than not, students have had to make the journey to London to find the right course and I thought that needed to change. “I have lived and worked in North Yorkshire for over three decades and have developed an acute understanding of how the terrain, geology, even climate and the way of working is very different in this part of the UK. “The process within which gardens are designed and built in this magnificent landscape is very different to the south of England – so I want to share everything I have learned over the last 35 years and inspire a new generation.” The school will offer a range of short courses throughout the year - designed for garden design enthusiasts and those wanting to learn more about all aspects

Most certainly. I’ve been longing to get back to teaching since leaving Leeds Metropolitan University some 13 years ago following a 14-year stint there as a lecturer in landscape architecture and garden design. I’m passionate about nurturing designers as individual creatives, with their own individual ways of seeing the world and expressing their ideas for improving it. Tell us about the school?

This is a school based in and imbued with the values of this great county of Yorkshire. Our ethos is underpinned by a practical, friendly and high quality approach to teaching and we’ve brought together the best the north has to offer to deliver a suite of informative and enjoyable courses. Our courses will be delivered in the wonderful listed Courtyard building at Harewood, where we have a large teaching and design studio overlooking the Capability Brown parkland and historic stable courtyard. Your flagship course is a year-long diploma in Garden Design - tell us more.

The Diploma runs from September to July and prepares students for either setting up their own practice or seeking employment in an established practice. It has been designed to nurture students

through a sequence of carefully designed projects and creative assignments, laced with weekly insights into the workings and portfolio of the AWB team as well as those of other practicing designers. And what about the other courses?

We’re offering a growing list of short courses for both aspiring professional designers as well as interested amateurs. From coaching on the latest software to create incredible imagery, through the demystification of planting design and the capturing of beautiful garden photographs, to the designing and delivering of a show garden for those looking to take the plunge and exhibit at one of the numerous RHS flower shows around the UK. he addition of a Garden School is not the only change at Harewood this summer. Arch Barn Studio has recently opened in the yard and is home to Harewood Holistics, a calming retreat for yoga, Pilates and fitness classes as well as workshops, relaxation treatments and personal training. It strengthens the appeal of the country house and gardens, which is also home to the Food and Drink Project, which utilises ingredients that are grown, foraged or reared on the estate, and Harewood Holidays, nine Grade II listed cottages, which are open for anyone to stay in and enjoy the beautiful scenery. Sophie Lascelles has been the driving force behind this latest project which has seen the Grade II-listed building transformed into a state-of-the-art studio space, with surround sound, underfloor heating, exposed beams, a treatment room and relaxation room. “A huge amount of work has been done by our fantastic team, explains Sophie. “We have lovingly restored this space to a studio with a treatment room, community refreshment space and large changing area. The space is serene and light with exposed beams and high ceilings which are beautifully lit and create a

stunning York Gate Garden in North Leeds which promises to be a superb event. It is offered on both Friday 26 and Saturday 27 August. How does garden design differ from other design disciplines?

Its all about plants. Knowing your horticulture is key, and its what separates us out from everyone else in the design profession! What makes the North Yorkshire landscape unique?

That’s a big question! It’s a place that proudly shows its heritage – architectural, cultural, agricultural, creative – for all to see, and the history that has shaped and defined this county is not only still visible in so many places, its still active and part of everyday life. Yorkshire lives and breathes its uniqueness with pride and passion and those who live and work here have the great privilege of doing so in a landscape which constantly reminds us of our past, our weather, our achievements, our distinctiveness and our future. Dish of the month Roast salmon with maple syrup and spring vegetables Ingredients 2 fresh salmon fillets 150g each 50ml maple syrup 20ml soy sauce 1 lime, juiced 1 teaspoon toasted sesame seeds 1 small courgette, trimmed into ribbons with a peeler 100g fresh broad beans, podded 100g fresh peas, podded Mixed salad leaves

Method 1. Preheat the oven to 200°C/gas mark 6. 2. To begin, mix together the maple syrup, soy sauce and lime juice to make the glaze. Set three tablespoons aside for the vegetables as a dressing. 3. Line a baking tray with foil and lightly oil. Place the salmon fillets (skin side down) on the tray and pour over the remaining glaze. Leave the salmon to marinate for 30 minutes in the fridge. 4. To prepare the vegetables bring a pan of salted water to the boil and drop in the peas and broad beans. Onr minute later drop in the courgette ribbons. 5. Leave to cook for 30 seconds only, then drain and refresh in ice cold water for five minutes (this will stop the cooking process). Drain again and remove the skin from the broad beans and refrigerate. 6. Place the salmon in the preheated oven and cook for 10-12 minutes. 7. Warm the blanched vegetables quickly in a pan with a knob of butter and place them in a bowl. Drizzle a little of the reserved glaze over them and add the salad leaves. Toss the leaves and vegetables together. 8. Divide the vegetables between serving bowls and arrange the salmon fillets on top. Sprinkle with the toasted sesame seeds and any remaining cooking juices.

Taking it to a whole new level SAKKU’S BUFFET-STYLE DINING IS FAR REMOVED FROM THE ‘CANTEEN-STYLE’ VENUES OF OLD, WRITES RICHARD ABBEY. uffet-style dining has been brought into the 21st century at Sakku in Leeds. Any preconceptions you might have about big, noisy halls with food laid out under heated lamps are quickly dispelled as you step through the doors of this basement restaurant, which is located opposite the Leeds Playhouse and the BBC in St Peter’s Square. First impressions are definitely more classy cocktail bar than the cacophony of a canteen. Sakku opened in November last year and is already blazing a trail as a modern way to enjoy all-you-can eat dining. The interior is bang on trend with neon lights and signage as well as an abundance of artificial flowers and foliage to give it a Japanese garden feel. The restaurant sits on one level and has booth-style as well as table seating. The

lights are turned down low to create and intimate atmosphere but is complemented by uptempo dance versions of familiar songs. Seated in our curved booth, we were given the ‘menu’ on an electronic tablet from here you can order everything; drinks, food, desserts… whatever takes your fancy. Each diner pays a set price and then can choose as many dishes as they like, although it’s recommended to choose no more than five at a time and leave around ten minutes before ordering your next lot. We visited on a midweek evening and paid £29.95 per person which rises to £34.95 on weekends and bank holidays. Lunchtimes are cheaper and there are discounts for children. Drinks are, of course, charged extra and the menu includes a good number of cocktails as

well as beers, wines, spirits and traditional Japanese sake. I started with a Sakku beer (£4.60) whilst my wife tried one of their signature cocktails, a passion fruit mojito (£9). There are over 150 dishes on the menu with plenty of sushi options as well as hot dishes, deep fried dishes, soups, salads, rice and noodle dishes. All food is freshly prepared which can impact on wait times during busy periods, although we suffered no such hold-ups on the evening of our visit. Such is the demand of maintaining this ‘freshly-prepared’ ethos that the restaurant can often utilise up to 20 chefs during busy periods. We enjoyed a steady stream of dishes arriving at our table over the course of our visit which were all clearly freshly made and beautifully presented.

Making best use of our tablet, we indulged our sushi cravings and started with tuna nigiri, salmon tataki, edo rolls and Dragon Aburi Maki. The thin slivers of fish set atop pressed rice to form the nigiri were just delicious but we particularly liked the latter dish which combined tempura prawn, avocado and Japanese mayo for a dish that offered both texture and taste in abundance. Bowls of miso soup served as a sort of palate cleanser before we moved onto some hot dishes. Chicken gyoza were very good examples of traditional fried dumplings whilst we also tried crispy squid with soya, garlic and Japanese mayo, king prawn tempura, chicken katsu with Japanese curry sauce (and rice), and beef tataki. A bowl of egg and vermicelli noodles with chicken and prawns added a further dimension to our dining. Stand-out dishes on this sitting included the thin slices of rare beef which had been seared on the outside and the curry, which married crispy chicken with a sauce that was subtly spiced. Still with a little room to spare, we finished with salmon tempaki - a seaweed cone filled with salmon, avocado and tobiko; tuna hosomaki, small seaweed and rice rolls; and salmon tataki sashimi, which was as good an example of raw fish as you’ll find anywhere. Servings of peppermint tea and Japanese green tea (both £2.50) provided a fitting finish to our meal. Given past experiences, I’ve never been a huge fan of buffet-style dining but Sakku’s modern take was both refreshing and impressive.The quality of the food and drinks throughout was excellent, the ordering was really straightforward via the tablet and wait times were minimal. It all made for a thoroughly pleasant evening. There’s no standing still for Sakku who also has plans in place to open in Manchester later in the year. Part of the same restaurant group as Estabulo, they will be opening Sakku Samba, a fusion of Brazilian and Japanese food in the Spinningfields area in December. Made for sharing THE DIJON BOYS ARE PREPARING TO OPEN THEIR FIRST RESTAURANT THIS MONTH. ometimes it’s easy to forget how lucky we are.Thirty years ago, maybe even more recently, the choice of cuisines when it came to eating out was pretty limited. British food was a given, Italian restaurants were pretty common as was American-style dining and of course you could always get a curry or pop down to your local Chinese. But now, that choice is seemingly endless. In Leeds in particular, diners are well serviced so whatever you’re in the mood for, you can dine from all corners of the globe with relative ease. And whilst our palates have evolved, so has our way of eating. The tradition of having three courses seems to be a fading trend - although it still has its place - and is being replaced by much more sociable sharing dishes. It’s an ethos embraced by The Dijon Boys who, after a nomadic summer operating popup after pop-up throughout the city, are getting ready to launch their first restaurant. The new eatery will share a space – and a name – with the Number 8 Cocktail Bar in Meanwood, Leeds and opens on 23 September. It will showcase the trio’s passion for serving reasonably-priced, exceptional quality food in a relaxed setting. It’s been quite the journey, albeit it a short one so far, for Jamie Layall, Cameron Sohel and Nicko Lachica who only made the decision to step away from their secure jobs and go it alone a few months ago.The three friends - all just 22 years of age worked together at The Mustard Pot in Chapel Allerton; Jamie was front of house whilst both Cameron and Nicko worked in the kitchen. “The idea of starting our own business was first floated over six months ago,” explains Jamie.“We discussed many ideas

to understand what route we wanted to go down, such as private dining, food stalls, event catering, however, we decided food pop-ups was the best place to start, with the view to evolve into a more well-rounded business.” The first pop-up opened at the Boot&Rally Bar in Meanwood in April and has been followed by similar concessions at Preston (North Bar), Oakwood, and Belgrave Feast and The Watermark in Leeds city centre. The initial success of the pop-ups evolved into private dining events under the brand Herencia - the most recent of which was a Charlie and the Chocolate Factory-themed menu with dishes inspired and named after scenes

and features of the film. “After doing the pop-ups this was a huge and exciting challenge for us to serve full meals to a large number of customers,” added Jamie. “Keep a look out for these events at Number 8 as they will become a permanent feature and will take place once a month. We also aim to host these events in other venues around Leeds.”

Whilst the pop-ups and private dining events have helped The Dijon Boys find their culinary feet, the goal was always to find a permanent home and they lucked out with the Number 8 Cocktail Bar in Meanwood. “After hosting a private dining event at Number 8 we established an excellent relationship with owner James Ince,” says Jamie. “When discussing future events, it became clear we had similar intentions; James wanted a permanent food offering whilst we wanted our own kitchen. It’s worked out perfectly for both parties.” The new restaurant will be an intimate space with dark wood furniture accented by blue wallpapered walls, mirrors and lots of indoor greenery. There’ll be an open kitchen, fully-stocked bar and huge sliding windows that give an inside/outside feel to the downstairs area. The Dijon Boys class their tasty sharing plates as ‘Modern British’ but will draw influence from around the globe. “Our heritage is very diverse,” explains Jamie. “Our appreciation of cultures and food from all over the world has helped us to develop our tastes and skills. I’m half English-half Indian, Nicko’s Filipino and Cameron has Indian, Cypriot and Scottish blood.” You’re sure to see some of these influences on the ever-changing menu

that will utilise seasonal, local and fresh produce with a firm emphasis always on quality, reasonable prices - and sharing. Nicko, in particular, is keen to introduce the Leeds suburb to Filipino food and flavours and, after a stint working at Bulgogi and learning the art of fermentation, don’t be surprised to see pickled and smoked items on menus too. “Our food very much lends itself to an interactive eating style - where a group of friends or family can order a bunch of dishes and share, talk and enjoy food together,” adds Jamie. The Dijon Boys will be aiming to keep food waste to a minimum and limit the amount of plastics or disposable items they use in the kitchen. Whilst immediate attention will be focused on the restaurant, the pop-ups are still very much on the agenda too

and will continue to run throughout August.You can catch The Dijon Boys at Caspar’s Bottle Shop Chapel Allerton on 4-5 August for a yakitori and beer/wine pairing and doing their first Sunday roast at Number 8 on 7 August, which will run every two weeks before becoming a permanent fixture when the restaurant opens. They return to Boot&Rally on 11-12 August for a tapas event and will be providing a barbecue at the Black Sheep Beer Festival in Chapel Allerton from 19-21 August and finish the month at Otley Social for a North Bar pop-up and Filipino cuisine on 26-28 August. Jamie, Cameron and Nicko see the launch of Number 8 as the start of much more to come. Hidden gem THE AWARDS AND ACCOLADES KEEP COMING FOR YOREBRIDGE HOUSE HOTEL. ourteen years after opening its doors,Yorebridge House is still considered a newcomer on the hotel scene, with many guests describing it as a hidden gem of the Yorkshire Dales. The returning guests, who have reluctantly shared glowing reviews of ‘their’ special place over the years are part to thank for the outstanding reputation Yorebridge House prides itself on – alongside the numerous awards and accolades the hotel has achieved in its short history. The building, owned by David and Charlotte Reilly, was previously the head office for the National Park Authority. Over 18 months, the Grade II listed Victorian school and headmaster’s house were loving renovated and transformed into the five-star, boutique hotel that stands today. Amongst other incredible accolades; including twice winning Small Hotel of the Year at the Visit Britain Awards, Yorebridge House has most recently

scooped the Service Award at the Top 50 Boutique Hotel awards as well as a ‘Best of the Best’ Award with Trip Advisor placing the hotel within the top one per cent of properties worldwide for romance and luxury. In 2014 the restaurant was awarded three AA rosettes, less than six months following the appointment of head chef Dan Shotton who has maintained this exceptional standard since, placing Yorebridge House in the top ten per cent of restaurants in the UK. Dan’s wife, Sophie, is the general manager and this year won an Acorn Award ranking her in the top ’30 under 30’ hospitality professionals. In January, David and Charlotte invested in a brand new kitchen, swapping gas-powered equipment to a

more sustainable and eco-friendly induction suite, enabling the kitchen team to develop their offering even further. The ambitions of the owners, managers, and team members at Yorebridge House are infinite. Plans for the future include a riverside spa, treatments rooms and an alfresco dining area as well as the creation of a 13th bedroom. Converted from an existing Yorkshire Dales Barn, the bedroom will be the first hotel room in Europe to boast endorsement from the prestigious Laurent-Perrier Champagne House. The barn will strengthen the already powerful alliance between the two family owned businesses which was cemented with the opening of the Laurent-Perrier Grand Siecle Tasting Room a couple of years ago. The tasting room, at the bottom of the original cellar steps, is the ultimate luxury hide-away, boasting wine-clad walls, glistening chandeliers and a bespoke white granite tasting table. The champagne tasting room is open daily for viewings and is available to hire for private dining celebrations and wine tasting events for up to 12 guests. Those with a passion for perfor mance will enjoy our Musical-in-a-Week Workshops. Taking place in The King’s Theatre, QE’s full-scale professional venue, children can take on the challenge of lear ning and perfor ming some well-known musicals in just one week, working alongside industry professionals. From Monday 8 – he theme will be Fr iday 12 August th The Greatest Showman, and from 22-26 August the theme will be Matilda. The workshop is open to children from 6 years upwards and perfor mances will be held on th he Fr iday after noons for fr iends and family. Inspir ing th he imagination, th he Visual Arts Week will offer budding artists the opportunity to explore a different artistiic medium each day. Open to children from Year 6 upwards, the course will take place from Monday 15 – Fr iday 19 August. Practical Science Week will offer a 5 day course explor ing the wonderful world of science. Open to students from Year 6 upwards, the course will take place from Monday 22 August to Fr iday 26 August. and is non-residential. As well as the subject-speciffiic 5-day courses, QE will also be host over the summer to its resident multi-actiivity camp, Camp QE. Running throughout the summer holidays for children aged 5 (school Year 1) to 13, Camp QE offers and action-packed daily programme for children. Every day is different and combines and broad selection of outdoor sports, outdoor games, indoor sports, indoor activities and arts and crafts. The camp runs from 9am to 4pm each day, and free wraparound care is available from 8am to 5.30pm. Included in the pr ice is a hot lunch and snacks each day. This summer, for the ffiirst time, Camp QE will be offer ing residential stays as well as day and weekly camps, to suit your summer plans. Running each week from Monday 25th h July until Fr iday 19 hemes for 2022 will include August, th Jurassic Week, Commonwealth Games Week, Blast from the Past Week, and Big Cities Week. A fruitful career in the Kitchen Garden BY JOE LOFTHOUSE, HORTICULTURIST IN THE KITCHEN GARDEN AT RHS HARLOW CARR. ’ve worked for ten years here in the Kitchen Gardens at RHS Garden Harlow Carr. Before that I was here as a student for a year and prior to that I did work experience so I’ve been here a fair time! It was natural for me to get into gardening. I was lucky to grow up on a big private estate (The Swinton Estate near Masham) so I was always outside. I’ve stuck to productive gardening because I love seeing the whole process through - from seed sowing to harvesting, I also have a passion for growing fruit. I enjoy the fact that every year you learn something new and find that every season is different and throws up a new challenge. Visitors to the Kitchen Garden really enjoy asking us questions but we learn from them too. We get a lot of questions from people who are new to growing but also more advanced ones about a particular pest or disease. It’s very wide ranging and a bit of my job I really enjoy. This summer visitors will be able to see lots of things being harvested – sweetcorn, peas, potatoes and many more crops. In the glasshouse we’ll have cucumbers and tomatoes fruiting in August. Every year I like to pack them in quite tight and get as many varieties in there as I can! We’ve grown some unusual veg this year too like the Apios americana or sometimes known as the potato bean - it has a pea-like flower but grows undergrown edible tubers. Although it’s harvest time, it’s not too late to still grow your salad crops and chard is good at this time of year. Chicory and fennel too - all your overwintering salads can be started sowing in August. My biggest tip for anyone getting started though is get your soil right. If you do that properly then everything else will follow. The other tip is not to forget watering - especially after all the dry weather we’ve had recently. The image of horticulture as a career has changed for the better since I was at school when it seemed like something for older people.There are lots of areas to specialise within the RHS and opportunities for career progression. I love it and I’d definitely encourage other people to consider it as a career.
