Magic MOMENT
The Drifters Girl arrives in Leeds this month. Simon Button atalks to some of its leading stars.
14 www.rmcmedia.co.uk
Ashford Campbell as Ben E. King
Following in the footsteps of Beverley Knight and Felicia Boswell as Faye Treadwell in The Drifters Girl is a daunting prospect for Carly Mercedes Dyer.
Fresh from a run in London’s West End, where it played to packed houses and standing ovations nightly, the musical is embarking on a UK and Ireland tour – arriving at Leeds Grand Theatre from 19-23 March – bringing the story of the legendary vocal group and the woman who helped turn them into global superstars to audiences around the country.
Carly, who was up for an Olivier as Best Actress in a Supporting Role in a Musical for her rave-reviewed turn in Anything Goes, saw the show in London and was intrigued to learn about Faye, who managed The Drifters through the highs and lows of chart-topping hits and sold-out tours as well as multiple line-up changes and legal battles, and who gave them a second career when she moved the band to the UK in the early 1970s.
“She was tenacious, hugely intelligent and resilient,” the 36-year-old actress marvels. “The show is about this woman who took on an industry which didn’t have women in managerial positions and because manager she was constantly overlooked and undermined.”
Does she think Faye, who bought out her partners and took over management of The Drifters full time after her husband George passed away in 1967, was ahead of her time? “Absolutely. As an African-American woman in the record business she was groundbreaking and to persevere when people keep telling you ‘no’ and shutting down your ideas takes a lot of resilience. She really was ahead of her time because she could have easily just given up and gone home.”
After graduating from The Arts Educational School, Carly made her debut in High School Musical and has been in numerous shows since, including Chicago, Memphis (opposite Beverley Knight), Dreamgirls, Sweet Charity, West Side Story
since Faye refused to conform. “I can relate to that 100 per cent because in our industry sometimes people go ‘Oh okay, that’s what you do’ and they want to keep you in that box. But I like to do things that scare me and push me out of my comfort zone. I never just rest on my laurels.
Treadwell’s husband George is played on tour by Miles Anthony Daley, who hails from Hackney and whose previous credits include Tina - The Tina Turner Musical and Choir of Man. He sees the character as a commanding one. “But what I like about George is that in areas where you think his life is very blackand-white, actually there’s a lot of grey. It’s really interesting to explore that space in the middle where he’s opening himself up to become a better version of himself.”
Like the other male leads, 30-year-old Miles has various other roles throughout the course of the show and says: “It’s a balancing act but as an actor it’s fun to be able to show all the different strings to my bow.”
He feels audiences are in for a treat.
“There are a lot of ups and downs, there’s a lot of joy and there’s a lot of triumph, there’s a lot of drama and the band’s story is really interesting. Plus of course it’s
UK tour and I’m so excited about taking it to audiences around the country.” He smiles. “I’m going to have to stock up on the on the Manuka honey, the vocal tablets, like this.”
Formed in 1953, The Drifters went on to sell more than 200 million singles, including such huge hits as Save The Last Dance For Me, Under The Boardwalk, Saturday Night At The Movies Kissin’ In The Back Row Of The Movies and Come On Over To My Place, to name just a few. They’ve also sold more than 100 million albums worldwide and in 1988 they were inducted into the Rock & Roll Hall of Fame by none other than lifetime fan Billy Joel.
The show demands a lot of its cast in general and of the foursome who play The Drifters in particular. Tarik Frimpong doesn’t just play founder member Clyde McPhatter, he also plays the band’s road
manager Lover Patterson and a host of other characters.
The 29-year-old Australian, who now lives in London, was drawn to The Drifters Girl because of the multiple-role aspect of it. “And also, because it’s so exciting to see an all-black cast on stage. I saw the show in London and seeing the performers play black characters, white characters, younger characters and older characters with all sorts of different accents seemed like a fun challenge.”
Tarik knew many of the songs that are featured in the show, but he didn’t know the story behind them until he saw the West End production. “It was so interesting to hear about Faye Treadwell’s life and the role that she played in the group’s history and success. It was amazing to hear about this African-American woman who lead this group of men on to become superstars.”
Then there’s the character of Clyde McPhatter, of whom he says: “Clyde was a pioneer of R&B and doo-wop and so many artists that came after him speak of him so highly as an idol.”
Tarik’s credits include Aladdin, Beautiful: The Carole King Musical and The Lion King and he’s a big fan of musical theatre, saying: “I love the escapism it provides for people to come in and forget about their lives for two hours. It’s pure enjoyment, and in the case of The Drifters Girl, also educational. Hopefully after they leave the theatre, audiences will treat people with more empathy in their day-to-day lives.”
Making his UK touring debut, Tarik smiles: “I feel like my true Australian nature will come out, travelling to so many places I haven’t been to before. And I can’t wait to see how audiences react to the show. The vocals are out of this world, if I say so myself, and the choreography is so slick and fast-paced. It’s a learning curve as well as fantastic entertainment.”
The Drifters Girl is at Leeds Grand Theatre from Tuesday 19 to Saturday 23 March 2024. Book tickets online at leedsheritagetheatres.com or call the Box

Master CRAFTSMAN
There’s nothing that tailor Desmond Merrion doesn’t know about making true bespoke suits. But it could have been oh so different…
Tailoring wasn’t something that Desmond Merrion ever really considered as a career growing up; he had his heart set on becoming a gunsmith and eventually joining the army. But circumstances dictated that he would eventually follow in the footsteps of his family and now, after over 40 years in the business, he’s one of the most respected tailors around.
Desmond’s mum and dad, as well as his sister and grandmothers, had all worked at Montague Burton’s in Leeds, once the world’s biggest clothing factory, which employed over 10,000 people in its heyday and produced over 30,000 suits a week.
It was at Burton’s that Desmond got his often accompany his father, who was the chief sewing machine engineer, there on
weekends and roam the sprawling 40-acre site as well as running the odd errand.
Desmond’s parents eventually left the company in the early 1980s – mum Pat was made redundant and dad Terry was approached by two former colleagues to see if he would be interested in joining them set up their own tailoring factory. Terry accepted and, using his wife’s £5,000 redundancy money, became an equal partner in Doncaster-based Topping
After leaving school in 1984, sadly passed away, he made the decision to work at his father’s factory – and stayed there until it wound up in 1996. It was here that Desmond developed a real love for the craft, where he honed his skills and
learned everything about the trade.
“I liked it from the get-go,” Desmond recalled. “I liked the idea of creating something from nothing, I found it really interesting.”
Not that the money was good – “I was on a pittance” – and the desire to join the army was still there, and was only later
cadet to becoming a cadet trainer and then joining the Territorial Army.
Desmond started at the bottom at option of entering either the trouser room, the jacket room, the cutting room or to become a ‘cutter’ and learned about the preparation of cloths, collars, pocketing, lining, canvas and more from cutters who were all former employees of Montague Burton.

“I started working for myself at home. Long gone was the steady wage, I was now dealing with people who often paid you when they wanted, and more often than not the cheque would bounce.”
“The cutting room foreman, Mr Watson, started to train me how to use shears correctly, slapping the back of my thumb with a dog-leg yardstick every time I lifted my thumb from the thumb rest,” said great cutter and very good at his job. I have never forgotten ‘thumb down’ and it pains me to this day to see a cutter using his shears with his thumb stuck up in the air.”
The factory eventually closed in 1996 and was sold lock, stock and barrel to Russia. Desmond’s father, Terry, took retirement whilst his son, along with all the other staff, was made redundant.
“I think I got about 1,400 quid, which was not a lot of money, it was three month’s mortgage payments,” commented Desmond. “Within two weeks I started working for myself at home, mainly making coats for other established tailors. Long gone was the steady wage, I was now dealing with people who often paid you when they wanted, and more often than not the cheque would bounce.”
After eight years of doing trade work, Desmond decided to fully go it alone and set himself up as a bespoke tailor making in premises in Rawdon, Leeds. In 2023, he moved into new premises in Castleford, just on the fringes of the town centre, which has a gorgeous curved window and is very much a shop/workroom.
“My unique selling point is that people
buy a product and you’re paying for my great.”
Desmond has three other staff working alongside him, including his daughter
Laura, and makes everything on site,
shortage in the industry.
“It’s frustrating because the amount of work I’ve got is just crazy, there’s enough to last until the New World super specialised and getting staff is really
ultimately that’s what I need.”
As well as making garments for individual clients, many of whom are returning customers, Desmond is also currently working for tailors on Savile Row Dunhill as clients. What’s often considered to be the pinnacle of British tailoring is also suffering from staff shortages, hence why they turn to people like Desmond whose
“Reputation is hard-earned but easily lost which is why I can’t just take on anybody otherwise it compromises your product,” said Desmond. “In the trade my name would not give me the work if they didn’t know I was capable.”

and you’ll see the same bunch of cloths I’ve got here,” he added.
The big difference between ‘made to measure’ and ‘bespoke’ is obvious to
Desmond, if not so clearly to us, and is the the art and craft of real tailoring. For the uninitiated, a made to measure suit is one
from the ground up.
“I might sound bitter – I’m not – but the with people who say they’re a tailor, but they’re not,” said Desmond. “Even after 40 years, I’m still passionate about the trade. I think it’s more than just a job. I love creating, I get a lot of satisfaction from it, and I’m still looking at how I can ‘make it better’. I’m still learning, even now.”
Desmond’s individual suits start at
a full bespoke, not cheap by any stretch of the imagination but what you’re paying for cloths and materials. A semi-bespoke suit can take him 40 hours to make whereas a full bespoke comes in at around 80 hours.
One area that Desmond would like to branch out into is ladies tailoring – he’s a trained ladies cutter as well as a maker and loves the creativity afforded by feminine garments. Men’s suits tend to be very rigid in their construction whereas a

Desmond.
Whomever he is making for, he does it with the same passion, craft and attention with over 40 years in the business. The army’s loss is tailoring’s gain.

Exceptional at sea
A voyage of discovery on the Crystal Serenity.
t’s been 15 years since we last sailed on the Crystal Serenity, during which time the line was acquired by the A & K Travel Group, and we couldn’t wait to see the much-hyped results.
We boarded in San Diego for an 18-night voyage that took us to Honolulu and Kauai, Hawaii and then onto French Polynesia, where Moorea and Bora Bora were both gems of spectacular colour and crystal clear waters. Any time spent at sea was blissful with no ringing phones, no ping of emails… just the vast ocean and time to
The ship looked brand new throughout and we were wowed from the moment we stepped aboard. Staterooms have been modernised; the cool interiors are sleek, fresh and fabulous… incorporating Frette
TVs and there’s free WiFi throughout. Bathrooms boast huge walk-in power showers (a rarity on most cruise ships) with luxurious ETRO toiletries.
Our Sapphire stateroom came with its own butler (standard for staterooms) and had a spacious veranda, accessed by sliding glass doors from both the bedside and sitting area… perfect for wave watching and dreamy sunset views.
The beautiful Serenity carries up to 740 guests with a crew to passenger ratio of 1 to 1.5, and as you expect, service is exemplary. Staff are attentive yet discreet with careful attendance whilst allowing enough distance to relax and miraculously, everybody knows your name!
One of our highlights was Scott, the wonderful hotel director, inviting us onto the bridge to view our departure from Nuku Hiva - what an amazing experience!
The ship is a foodie’s paradise. Both the The Serenity and sister ship The Symphony have an array of restaurants to choose from. From the culinary star, Umi Uma serving NOBU-style Japanese fare to the Trident Grill, your tastebuds will be delighted. Afternoon Tea is a daily ritual in the
lounge, and there’s The Bistro for tasty snacks throughout the day. The main Waterside Restaurant is top notch and in suite dining is available 24/7.
After dinner you can head to The Avenue Saloon, where pianist Neil plays American songbook standardsin an oak-panelled speak-easy style setting. Or take in a show; tributes to Frank Sinatra and Billy Joel were both world class, whilst night owls can dance from 10 till late in PULSE with its resident DJ.
The Serenity offers a wealth of activities whilst you’re at sea. Enrichment talks are varied, ranging from behind the scenes at De Beers Diamonds to Easy Italian Lessons.
Need some extra pampering? The Aurora Spa offers a fantastic selection of treatments. Try the Chariots of Light LED
Massage; 75 minutes of bliss. Or for the more energetic, the state of the art gym has
Regular classes include yoga, Pilates and stretch. Outdoors there’s tennis, golf driving net, and a walking track.
Crystal sailings cover Europe, Asia, Africa, Australia & New Zealand and journey lengths vary. Families are welcome with children over three years. Kids club, activities and babysitting is available.

Alternative wedding venues
Couples are increasingly moving away from tradition and looking for something that bit different for their special day. Unconventional venues such as barns, vineyards and industrial spaces offer a blank canvas for creativity and can set the tone for your wedding, allowing to create the atmosphere you desire.

Celebrant-led weddings
There has been a big increase in the search volume for ‘celebrant weddings’ in the past year. For the uninitiated, a celebrant is someone who conducts personal and meaningful ceremonies that are individually created, with few restrictions imposed on location, timing, or content. They operate outside of any particular belief system or framework, adapting their ceremonies to suit the values of the individuals they are working with.
Paula McDonnell is a professional celebrant after qualifying through the International College of
Typically, a celebrant would conduct ceremonies held at key stages in a person’s life; a naming ceremony to welcome a child into a family, a wedding ceremony to celebrate a marriage* between two people, a vow renewal for those already married, perhaps to celebrate person’s life after they have passed away. Celebrations of other life events are also growing in popularity, such as coming of age, coming out or gender transition.

Families meet and get to know their chosen celebrant in advance of the ceremony, which allows them to work together to create a meaningful occasion with someone they know and will feel at ease with on the day.
Food
Formal, sit-down three-course meals are also becoming less common with wedding breakfasts becoming much more sociable occasions. Sharing platters brought to the table or dedicated grazing tables are becoming more popular – after all, food was made for sharing.

Green Dental & Implant Centre offers a complete implant journey.
ental implants have revolutionised dentistry by providing a more advanced and effective solution for replacing missing teeth. They are designed to mimic the natural look and feel of teeth and, unlike traditional dentures or bridges, offer a more stable treatment option.
DWhen a tooth is lost, the underlying jawbone can start to deteriorate over time causing bone loss around the area. Placing an implant can help to stabilise the foundation and where necessary additional bone can be generated
This retention of the bone and the implant crown (this is the tooth that attaches to the structure and provide a stable chewing surface. Implants can be used to replace a single missing tooth, multiple teeth, a full arch or can even be used to support full dentures. This versatility makes them suitable for various types of tooth loss scenarios.
With proper care, dental implants can be a long-term solution. This makes them a more permanent and cost-effective solution compared to some traditional tooth replacement options that may need frequent replacements or adjustments.
Implants can restore oral function but they also contribute to an improved quality of life. Patients with dental implants often overall satisfaction with their oral health.
At Green Square Dental & Implant Centre we can provide a seamless approach to your implant journey. Dr Duncan Park (BDS

The practice offers a complete implant journey and Green Square Dental boasts its allowing them to scan the jaw for bone volume. Traditionally this would have needed a hospital referral for a scan, but now means Green Square can give immediate results and a decision on what is involved with implant treatment at the initial consultation.
In the following case, the patient was missing several of his upper teeth and
feeling frustrated with the lack of stability he came to see implantologist Duncan agreed treatment plan was to place a full upper implant bridge. This meant removing the upper arch using guided surgery with an immediate temporary bridge. This was all done using IV sedation to make the

Anything is POSSIBLE
Sharron Lowe is the go-to motivational speaker of the beauty industry and has been described as the ‘success coach who adds millions to your business’. Richard Abbey spoke with the global success coach, and why she’s such a positive role model for women’s empowerment in life and business.
mpossible’ is not a word in Sharron Lowe’s vocabulary. The success coach, speaker, and author has spent her entire career proving the opposite and has inspired thousands of people all over the world to be the best they can be and focus on the positive.
Working predominantly in the retail beauty industry, Sharron has partnered with the world’s leading cosmetic and perfumery brands helping them to grow their brands by growing their biggest resource, people. Her client list is impressive: Chanel, Estee Lauder, Clinique, Lancôme, Christian Dior and L’Oreal amongst many others.
She has coached thousands of people in over 50 countries, for some of these brands, and also partners with charities, business and entrepreneurs networks.
Leaving school at 16, Sharron says that she didn’t have an exact plan but always had a feeling that if she followed her passion an exciting career and life would follow.
She got a taste for business from a young age; alongside her sister Anne, she grew up in a family business where her parents had a manufacturing silversmith business and were considered entrepreneurial long before you called people that, certainly by Sharron who was enthralled by her Dad’s amazing passion and Mum’s talent of making it all work around the family unit.
“When we’re young we pull energy from the people we’re around,” she says. “When mum and dad went into the warehouse on weekends we used to go with them and I loved the buzz of the workplace. I had a feeling I was destined to go into business.”
But Sharron had another love and that was beauty and so she went to college to study her favourite subjects. It was the business lessons that really captured her imagination, though, and she quickly made up her mind that she didn’t want to go down the therapist route so opted for retail, accepting a job at Debenhams.

Sharron worked for the Fabergé as a beauty consultant – makers of Brut – and quickly excelled, impressing not just her London.
“I put every ounce of my passion into that role,” she recalls. “I found sales opportunities that other people didn’t. I was open to doing it ‘differently with outside talks to drive in sales and my account became number two for sales in the UK.”
Sharron’s results created opportunity and she was encouraged to share her success, which led to her becoming the youngest ever area manager for Fabergé. A few years later she was headhunted to join Nina Ricci as UK director for training. From there, followed a role as training director at the platinum guild & De Beers Diamonds, a time when she found herself bodily insured to wear £1million of jewellery when presenting on stage and with her own personal bodyguard.
Barely in her thirties, Sharron decided to set up her own coaching and speaking consultancy with a focus on the beauty industry. The aim was to help her clients grow their brands by growing their people, which she did to great success. She has worked with the Estee Lauder group, Chanel, Parfums Christian Dior and Louis Vuitton over 25 years.
“The UK press named me ‘the success coach and speaker who adds millions to businesses’, that was my tagline,” beams Sharron, who is so grateful for that press.
that you’ve impacted thousands and thousands of peoples’ performance, it is the greatest gift in my life.”
Through her work, Sharron became UK ambassador for the Cosmetics and Perfumery Retail Association (COPRA), the highlight of which is a yearly event at The Savoy in London where she addresses 700 of the UK’s top retailers, including Harrods, Harvey Nichols, retailers, and beauty directors.
As well as speaking at the prestigious event, Sharron also gifts the winners of the ‘Beauty Consultant of the Year’ awards a ‘Mind Makeover’ book masterclass, which leads us nicely into her book.
The Mind Makeover, The Answers to the Best YOU Yet! is a self-growth book to show you to take control of your life by taking control of the greatest thing you own, your mind, and get the success you deserve. It does this with easy-tofollow strategies and chapters deal with motivation, myths, the power of the mind, laws of attraction, imagination, and your inner voice.
home, garden, relationships, career… but what about showing us how to makeover our minds,” says Sharron. “The book shows you how to move from where you are now to where you want to be, it gives you a toolkit.”
The overriding feeling of the book is that of living in the moment, in the now, focusing on the positive – if you can do this, then everything else will fall into place.
Writing the book seemed like a natural progression for Sharron who is keen to share her experiences and is passionate about helping people to grow. Her overriding motivation through the 18-month process was a desire to launch her book in the Mail on Sunday’s YOU magazine, with a readership of over three million.
“I had a burning vision, although I was
the only person in the UK who had that vision,” she laughs. “I sat in a boardroom with 17 people from the publishers, Piatkus, and was basically told it was impossible and why.
“So I created a positive mindset by covers of YOU magazine with a picture of my book’s front cover on top and then found an opportunity to be at a function where the editor-in-chief was. I had so
a conversation, got the ball rolling and eventually had an exclusive YOU magazine four-page book launch followed by HELLO and many other top publications.”
Sue Peart, editor-in-chief of YOU magazine, also wrote a testimonial for the book, saying: “Sharron is the most dynamic and inspiring person you could ever meet. For Sharron, anything is possible; and this book will empower you to achieve anything.”

The Mind Makeover dominates a lot of Sharron’s current talks and presentations with UK and global empowerment conferences and women entrepreneur conferences and events.
Having moved back north just over a year ago, it was for BAWE (British Women Entrepreneurs) that she was asked to be keynote speaker at an event at Chatsworth House in July, which raised money for the then Master Cutler’s Challenge.
“I believe, none of us achieve alone and we all need what I call my wisdom circle, great friends, businesswomen and entrepreneurs. Together we can share ideas, inspire, empower, motivate, and grow together, adds Sharron. “When you’re an entrepreneur and you start your business you can feel isolated like you’re at the new school gates and don’t know anybody.
Sharron cites a particular group as
being a great example of how to network need it.
“Mums and dads of school age children, network really well and form communities and support groups,” she says. “We need to do the same, to have people around us who can listen, guide us, nurture, learn from, share, support, laugh, enjoy – there’s no point doing it if it’s not fun and we’re not sharing.”
I chatted with Sharron over coffee and having spent well over an hour in her charming company, found her warm, engaging, and full of energy. She’s hugely passionate about what she does and what she coaches, and the proof is in the scores of endorsements she receives from across the world.

With such a positive outlook, it’s no surprise that she believes that anything is possible. She certainly has the tools and experience to prove it.

Putting Doncaster on the CULINARY MAP
Champion of Doncaster Market and indeed all that is Doncaster, Martyn Pippard purchased Scicluna delicatessen when one of the true legends of the city, Josie Scicluna, decided to hang up her apron.
plan to organise the deli into two halves: delicatessen and dining, linked by
excellence of service, atmosphere and quality. And so DN1 Delicatessen & Dining was born – could this be a foodie paradise right here in Doncaster?
The story of the last two years is one of ups and downs, setbacks, along with huge surges forward in progress. Finally, refurbishments are almost complete and the concept has really come to life.
Enter the High Fisher Gate venue and dining to the right. It is sleek, stylish and unpretentious and, above all welcoming.
The cheese and charcuterie counters take centre stage on the deli side - 12.5 metres won the title of Best Deli in Yorkshire by Yorkshire Life magazine.

There’s a section for African and Caribbean cuisine, Asian, eastern European and just about every pasta shape imaginable. It’s destination shopping and well worth a trip.
“We nearly went for a standalone restaurant but this unique location has allowed us to create something very different,” explains Sarah. “There really a dining room but are much more than that. We’re very much a community and welcome everyone into our little domain which is helping to put Doncaster on the culinary map.”
In addition to winning Best Deli in Yorkshire, DN1 Delicatessen & Dining has enjoyed the perfect start to the year after being awarded 2 AA Rosettes, the only restaurant in the city to have received such recognition. What’s more, the young chef team, led by head chef Marcus AshtonSimpson, achieved this on what was their
2 AA Rosette establishments are characterised as ‘excellent restaurants that aim for and achieve higher standards and better consistency. A greater precision is apparent in the cooking, and there is obvious attention to the selection of quality ingredients’. Only 40 per cent of restaurants/hotels within the AA Restaurant Guide have two Rosettes.
For DN1 to have achieved this already, is quite remarkable – and they were very close to getting 3 Rosettes.
“This is what it has been all about, such days I’m sure,” said Martyn. “Congratulations to Marcus and junior sous chefs Adam Barratt and Oska Ready.”
It caps a remarkable beginning for the business which has also been voted ‘Best Contemporary – Out of Town’ at our sister magazine Westside’s Restaurant & Bar Awards in 2023. The Times food critic, Giles Coren, also recently visited and had high praise for the High Fisher Gate venue.
DN1 Delicatessen & Dining also recently joined the Guild of Fine Food, who has a mission to support, celebrate and encourage independent food and drink retailers and the producers that supply them. They also host the annual Great Taste awards.

bustling markets of Barcelona and Italy, we sought to create a harmonious blend, where the passion we have nurtured for our chefs culinary treasures housed within the deli,” added Martyn.
“Thank you to all the team members here at DN1 and all the diners who’ve supported and encouraged this amazing young team,” said Sarah. “We are proud to bring this experience to the great people of Doncaster – it’s a great boost to the food scene here in our fabulous city.”
Seemingly the only way is up for the 2 AA Rosette DN1 Delicatessen & Dining. Next stop, a Michelin star? You wouldn’t put it past them.

Marcus began working with The Gentleman Fishmonger almost four years ago and spent half of that time looking for the best venue to host their restaurant. They found the perfect spot at DN1 Delicatessen.
“I had a small chef’s bench at Doncaster Fishmarket - they were fun times but now we have completed the restaurant here are the Delicatessen and we have been serving tasting menus for the past 16 months,” he said.
“It’s classic food with a modern twist - I was once given a brief to take the diners’ palates that little further than they know and always make them feel like the dish is made with love.”
Marcus knew he wanted to be a chef from the age of ten and was inspired by a certain TV chef.
“When I was younger, Gordon Ramsay remember watching Hell’s Kitchen and asking my mum if that was what kitchens were like to work in because I might want to change my mind about doing it if they
were… obviously they are not and it is all for the TV but it has instilled in me a calm while I am working. Gordon and I are like polar opposites.”
Marcus previously worked at Peak Edge Hotel & Restaurant but has worked with and under many head chefs in around the get from a nice busy service, saying “it’s an adrenaline-booster, the only problem with that is, you can’t sleep when you get home, not always the best when you have a young baby like I do!”
His day starts around 9am when Martyn (The Gentleman Fishmonger and owner of DN1) returns from the docks at Grimsby or Billingsgate Fish Market in London. He then takes time to pick out the other fresh ingredients for the day and heads into the kitchen to prep.
Alongside his team, both chefs and front of house, Marcus goes through the booking lists, allocates tables, checks for allergies and may may even taste a few of the dishes and add to the list pairing wines.
