Limitless boundaries WOOD SPECIALISTS HARESIGN BESPOKE PRIDE THEMSELVES ON THE DESIGN AND PRODUCTION OF FURNITURE ALONG WITH EXCLUSIVE CONSTRUCTION WORK. uality, unique and bespoke are key words when selecting the right construction, joinery or furniture service. But Haresign Bespoke are the only company in the area who offer all this – plus the opportunity to select the exact tree you would like to use for your project. Haresign Bespoke is based on 185 acres of idyllic farmland on the outskirts of Wetherby and is well-placed to serve the people of Harrogate, Leeds and beyond. When you visit their business centre and workshop, you will be taken to the nearby woodland where you can select an ash, sycamore, oak or beech tree, then their dedicated and experienced team will take care of the rest.

Q

“All of our wood is naturally dried, rather than kiln dried, meaning you can see these natural patterns in the wood,” says managing director James Haresign. “None of the wood goes to waste. We use every element. The leftover wood is made into logs or charcoal. Everything else goes in the chipper and is used in our eco-friendly biomass boiler to heat our whole building.” His team also plant a number of trees to replace the ones they have felled to create an ethical and sustainable source. With a background in joinery and a strong entrepreneurial spirit, James set up the construction side of the company in 2010. As the company developed, he realised there was an increasing demand for bespoke furniture.

They now specialise in the design and production of furniture along with exclusive construction work. Their unique creations are all handcrafted, and they work with their clients right through, from design and production to installation. From fitting unique kitchen cabinets and bedroom wardrobes, to creating new builds from the ground up, no job is too big or too small for James and his team. “Every job is of interest to us and anything is achievable. Our extensive construction background has allowed our creative minds to explore the limitless boundaries of design and architectural joinery. “Some people know what they want, they just can’t explain it, so it is up to us to lead

them through it and put it in words our team can understand. “We’re not just a construction company. We have design architects and structural engineers on board who can turn your dream into a reality. Everyone works for me and is a trusted member of the team. We always fulfil our promises.” What’s more, the Haresign team treat every

home they work on like their own and strive to be clean, tidy and polite. As well as working on residential projects, they’ve also been involved in some impressively ambitious projects for businesses such as The Acorn wellness retreat centre in North Yorkshire and Harrogate Water Brands. Many of their designs are inspired by the simplicity of nature, keeping many aspects of

the trees in mind, but they are also dedicated to being ahead of the curve when it comes to technology. James’s team will manage all electrical and plumbing work to thier own high standards. From setting up sensor lighting that comes on when you walk in the room, to controlling everything in the house through the click of a smart phone app, they can design and deliver the homes of tomorrow today. “I take enormous pride from our clients when they see what we have done for them. In any business customer satisfaction is really important and every one of those moments means a lot to me, especially when you surpass their expectations. “We deliver a personal service and we really can produce anything within the industry. I know the possibilities are endless, and that really does make us unique.” To arrange a consultation and to experience a private woodland tour, contact Haresign Bespoke today, or visit their website to view their inspiration photo gallery. The route, which takes less than an hour, opens up a wide range of European and worldwide connections from Heathrow T5. The most popular long-haul flights for connecting passengers from LBA are New York, Los Angeles, Chicago, Boston and Las Vegas, while, to the east, Hong Kong, Singapore and Dubai are well-travelled – so too are the routes to Toronto and Cape Town. LBA passengers looking to stay within Europe often connect onto Madrid and Athens to soak up culture and climate. DEAR DOCTOR... DR DONALD HODGE IS A CONSULTANT IN PAEDIATRIC ALLERGY AT LEEDS TEACHING HOSPITALS NHS TRUST AND AT SPIRE LEEDS HOSPITAL IN ROUNDHAY. HIS SPECIALISED PRACTICE MEANS HE SEES YOUNG PATIENTS FROM ALL OVER YORKSHIRE. Question

My nine-week-old daughter has developed eczema. At present I am breast feeding but in the last three weeks I have introduced a night time formula feed. She always appears very uncomfortable after feeds with mild vomiting and always has loose stools but these have increased in frequency and can be quite mucousy. She is becoming increasingly fussy, colicy and difficult to feed. I have made an appointment to see my GP. Do you think I might need to see a specialist? Answer

It is very important to see your GP.Your daughter has typical features of cow’s milk protein allergy. Cow’s milk protein allergy is the most common food allergy among infants and young children affecting 2-5% of children and usually presents in the first months of life. This type of allergy is seen both in bottle fed and breast fed babies and does not cause urticaria (hives), angioedema (swelling) or anaphylaxis (life-threatening reaction) but produces delayed symptoms affecting the skin (eczema - itchy red skin) and gut (colic, diarrhoea, reflux, constipation) and occasionally respiratory system (nasal congestion / snuffly). Your daughter should be trialed with an extensively hydrolysed formula. This is a special prescription allergy milk in which the milk protein has been pre-digested. Most babies respond very quickly to this change in milk. As you are also breast feeding you will need to strictly avoid any foods containing cow’s milk in your diet as any cow’s milk will be transferred in your breast milk to your daughter. You will need a dietician to see you to ensure that you have sufficient calcium and vitamin D in your diet. The good news is that this type of allergy usually gets better. Your GP should refer your daughter for allergy advice from a consultant in paediatric allergy and for dietetic supervision. GREAT YORKSHIRE SHOW

IT’S SHOWTIME! PHOEBE SEYMOUR LOOKS FORWARD TO THE BIGGEST EVENT OF THE COUNTY’S AGRICULTURAL YEAR.

50 Northside | www.northsidemagazine.co.uk

GREAT YORKSHIRE SHOW

he Great Yorkshire Show is celebrating its 159th annual show with a line-up of activities and events that promises to be more extensive and exciting than ever before. Taking place on The Great Yorkshire Showground in Harrogate from Tuesday 11 to Thursday 13 July, this year’s event is benefitting from a £70,000 investment from the Yorkshire Agricultural Society (YAS). The money will go towards giving the main ring a makeover. Half of which, will feature an Olympic standard, state-of-the-art, allweather synthetic riding surface, provided by Andrews Bowen. This will ensure even better conditions for the riders and their horses taking part in the show’s various riding events. It will be the most scientifically researched surface, developed for the London 2012 Olympics, and is endorsed by the Fédération Equestre Internationale (FEI). Olympic medallist and show jumping legend Graham Fletcher, originally from Thirsk in Yorkshire, is part of the show jumping

T

committee formed by YAS to ensure facilities are of a world-class standard. “The Great Yorkshire Show is the best in the country and it’s always been an event that’s very close to my heart,” he said. “Any of the riders coming to the show for the first time this summer will be totally impressed. If the show committee wanted to run an international show it would have all the facilities needed for international classes.” International show jumping is always a thrilling experience at the Great Yorkshire Show, as the crowd will once again cheer on four riders from four nations to see who will win the most prestigious title of Cock O’ the North. And new for this year, the TV stunt horses who have appeared in popular dramas such as Poldark, Peaky Blinders and Victoria, will be making their debut. East Yorkshire-based Atkinson Action Horses will wow crowds with their combination of stunts and tricks in the main ring each day of the Show. Horse master Mark Atkinson and son Benjamin, who own the Eastrington business, will be stunt riders at the show which will include some 18 horses. The main ring will also be a fantastic place to watch top-class livestock and equine judging events, which will put cattle and horses through their paces. Another first for the Great Yorkshire Show will include the thrill of off-roading, courtesy of Land Rover Experience Yorkshire, where trained instructors will drive passengers round a mobile course. Foodies will be well-catered for with a street food court featuring some fantastic sweet and savoury treats, as well as a gin and prosecco bar, whilst the showground’s exhibition hall will feature everything from presentations about the benefits of home-grown vegetables, through to inspirational cookery demonstrations. At the heart of the hall will be the prestigious Great Yorkshire Cheese and Dairy Show which never fails to impress. Last year saw an outstanding volume of entries across the classes for butter, yoghurt, ¯ Northside | www.northsidemagazine.co.uk 51

liquid milk, ice cream and cheese, and this year’s competition promises to be even bigger. If you are looking for something a bit more hands-on, the Discovery Zone will be providing food and farming-themed activities for children, whilst the agricultural seminar programme will include everything from a discussion of Brexit and what it means for businesses, to a drone and precision agriculture technology showcase. There will also be informal ‘farm to fork’ videos showing the journey of our food. Other exciting events will include an art show, hive and honey exhibits, virtual pig tours, a garden show and a fashion show, including gorgeous tweed jackets specially designed for the Great Yorkshire Show by tailors and long-time supporters Brook Taverner. There will also be a cookery theatre in the VetSpec Country Pursuits Area, a forestry arena and a home and gift hall brimming with presents to remember this brilliant three-day extravaganza. Though the show is always updating its entertainment and activities programme, show director Charles Mills feels that agriculture remains at the very heart of the show, which is the largest of its kind in England. He added: “There is an art to getting animals into peak condition at the right time and a win at the Great Yorkshire Show is the prize that everyone covets. “Following the success of last year, our seminar programme returns with new speakers and topics for discussion and we will be showcasing 100 years of Ford to New Holland tractors on the President’s Lawn. “We're also looking forward to new features this year including performances from Atkinsons Action Horses - it's certainly promising to be an exciting show.” With everything from traditional horse shows, to topical and technical agricultural seminars, and a whole lot more in between, there is something for all the family to enjoy at this year’s Great Yorkshire Show.

GREAT YORKSHIRE SHOW

Charles brushes up his fashion sense CATTLE ARE HIS REAL PASSION, BUT, AS HANNAH SANDERS DISCOVERS, THE SHOW DIRECTOR IS ALSO PARTIAL TO A NICE BIT OF YORKSHIRE TWEED… harles Mills grew up on the family farm near York, where his childhood summers included a trip to the Great Yorkshire Show with his parents. As he grew up he became involved in the show himself, taking on a number of roles over the years until he was appointed Show Director in 2015. A job which not only requires Charles to head up one of the country’s premier agricultural shows, but to also showcase the latest in Yorkshire fashion. Last year, he was among the first to try on the Great Yorkshire Tweed jacket. Three hundred had been specially commissioned for the show, each with ‘Yorkshire Born and Bred’ woven under the collar and a white rose on the lapel pin. “I can tell you from experience it is a wonderful cloth to wear. It’s light, yet warm and looks and feels beautiful – it has every quality that anyone wearing a jacket could want,” says Charles. Due to the runway success of the men’s jackets, this year’s fashion show will feature something new and exciting – the female version. Tailors Brook Taverner have created two new designs. A fitted, single breasted ladies jacket and a heavier weight shooting jacket. They’re

again made from the Great Yorkshire Tweed and feature all the unique design elements that made last years’ jacket a fashion must-have. “We are very proud of our new ladies jackets and hats, and I am really looking forward to seeing them on the catwalk.” “There are a number of celebrities this year modelling the jacket but you’ll have to come down and find out who they are yourselves.” Despite his history in the agricultural side of the show, Charles is as always looking forward to the fashion show, which will see budding designers showcase their work alongside big fashion brands. Charles has previously worked as the joint chief cattle steward at the show and with his farming background has a keen interest in the agricultural industry. “The role involved organising and running the cattle section of the show - we had to make sure everything ran smoothly and of course keep an eye on the cattle so none got away.” “The show is a wonderful thing, it has all sorts of horses, cattle, sheep, pigs and goats along with animal demonstrations, International Show Jumping and the Grand Cattle Parade - which is my favourite part.”

GREAT YORKSHIRE SHOW

Women’s versions of last year’s popular Great Yorkshire Tweed jackets will be available this year

Charles and the team are always working hard to keep the Great Yorkshire Show fresh for visitors by bringing new attractions, constantly re-inventing each section of the show. “Preparations start almost immediately from one year to the next although we do have a few days off, so the team can have a welldeserved break and I can get my harvest done.” He also wants to encourage younger visitors from within the farming industry and all other walks of like through the gates of the Great Yorkshire Show. Charles and other show organisers are wanting to highlight the educational benefit of the show and are appealing for greater flexibility over term times to allow parents to bring their children. He said: “We want to help educate about why the countryside looks like it does and the food that is produced. It is important for children to learn where food comes from.” “The show is all about agriculture and a lot of the livestock here are some of the best in the country. It’s essential the younger generation understand about what takes place in their countryside.” However, it’s not just over the three show days that local children can learn about agriculture. “Education is a big part of who we are. We have countryside days where nearly 7,000 primary school children can come and learn about where their food comes from. It’s a safe learning environment and everyone goes away having learnt something new.” He added: “We also have numerous teacher training days throughout the year.” One of the big new attractions this year will be the East-Yorkshire based Atkinson Horses. The TV stunt horses have starred in popular drama Poldark, Peaky Blinders and Victoria and will be performing a combination of stunts and tricks in the Main Ring each day. “We’re really looking forward to all the new features, especially the Atkinson Horses who will be exciting to watch.” From a farming perspective, The Great Yorkshire Show are celebrating the 100th anniversary of fords and tractors. The Presidents’ lawn will be lined up with them in all their wonderful shapes and sizes

for the public to admire. One of the reasons that Charles applied for the role of Show Director was due to the exceptional team behind the show, along with wanting to give something back to the farming industry. “I’m a farmer and to be able to give something back to the industry that has been good to me over the years is wonderful. Being a farmer I care massively for the countryside and I think it is important to be able to explain to the general public what we do,” said the director. With the show just around the corner it seems Charles’ plan to create another exciting, innovative Great Yorkshire Show to attract visitors from within the industry along with those wanting to learn more about farming, is coming together. “The show isn’t just a social event but one that brings so much of our industry - agriculture and the wider country together in one site. It is somewhere that we can explain to the public a little bit about what we do at The Great Yorkshire Show but also in our industry.” “I want the public to come along see some amazing demonstrations, learn something new and, above all, have a wonderful time.”

Show setting its own unique trend STYLISH AND PRACTICAL, BROOK TAVERNER’S SPECIAL TWEED CLOTHING IS PROVING HUGELY POPULAR. hose new to The Great Yorkshire Show will be surprised to find out that the show doesn’t just focus on agriculture. Fashion is another essential element to the show, and every year they present the specially designed Great Yorkshire tweed jacket. Due to last year’s runway success of the of the man’s jacket, this year the show will feature something just as exciting - the female version. Tailors and long-time Great Yorkshire Show supporters Brook Taverner have created two new designs. A fitted, single breasted ladies jacket and for winter days, a heavier weight shooting jacket. Made from the unique Great Yorkshire Tweed, woven by Guiseley-based Abraham Moon & Son in the society’s green and gold colours, the new line features all the quirky details that made last year’s jacket a fashion must have. The iconic white rose sits on the lapel of the fitted Yorkshire Agricultural Society (YAS) ladies jacket, while ‘Yorkshire Born and Bred’ is like the men’s jacket embroidered under the collar. Waterproof and windproof, the YAS ladies shooting jacket is finished with a gold lining. As well as the ladies jackets, the new female lines include two styles of hat: a ladies cap and a versatile soft hat made by Castleford milliners Lawrence and Foster.

M

“We are all delighted the tweed has been so popular. Not only did demand for the men’s jacket exceed expectations but having the opportunity to expand the range has been really exciting,” said Roger Meeke, retail sales director of Brook Taverner. Show director, Charles Mills added: “We are all delighted at the success of the tweed and every purchase is supporting Yorkshire agriculture as the Society receives a donation from the sales. “We are very proud of our new ladies’ jackets and hats. I am really looking forward to seeing them on the catwalk at this year’s show.” This year the YAS tweed jackets were unveiled at an exclusive fashion show shoot at Birdsall House, near Malton, which belongs to Lord Middleton, President of the Yorkshire Agricultural Society. While the new ladies lines will be taking centre stage, there have still been some additions to the men’s range. Due to the popularity of the male trousers and waistcoats featured on last year’s Great Yorkshire Show catwalk, the pieces are now ¯ Northside | www.northsidemagazine.co.uk 57

Both will be at the Great Yorkshire Show or you can visit their store to get this fashion musthave. Local fashion students will get the chance to get involved as their designs will be showcased to the thousands of visitors. Students from Hull, Harrogate and Huddersfield have been selected to have their designs displayed on the catwalk as part of the three day agricultural show. Students from the University of Huddersfield were tasked with creating a spin-off version of the Yorkshire Agricultural Society tailored jackets, while Hull School of Art and Design were tasked with creating outfits around slavery. Designs from Harrogate College will be from BA (Hons) Fashion Design Students featuring their final year degree collections and showcasing this year will be Berenice Gilmour, Beth Redshaw and Holly Greenwood. The fashion show is co-ordinated by Bernadette Gledhill of Morton Gledhill – The Fashion Team with hair and makeup by The Artistic Team at Harrogate College. “We are delighted to offer a platform at the Great Yorkshire Show to help students develop their work. The fashion show always attracts thousands of visitors and brings together cutting edge fashion and agriculture while giving up and coming designers from across Yorkshire the chance to showcase their work,” said the show director. The catwalk shows will be a place for exclusive previews, including John Lewis who will be showcasing their Modern Heritage autumn/winter designs. In keeping with the Great Yorkshire show’s heritage, Barbour, alongside up-and-coming designers from Yorkshire including Laura Slater, will be taking the catwalk by storm with unique and exciting collections. As well, this year Yorkshire Agricultural Society will be showing its appreciation for the support Yorkshire Cancer Centre has shown a member of the YAS team, by holding a collection at the fashion show. The fashion shows are taking place over all three days at 11am, 12.30pm, 2.30pm and 4pm, and you can keep up to date on all the action from the fashion pavilion on Twitter – just join the conversation by using #GYScatwalk.

Jonny and Alistair Brownlee open Queen Ethelburga’s new sports pitches

WITH RECORD-BREAKING RESULTS AND FANTASTIC FACILITIES, QUEEN ETHELBURGA’S IS ONE OF THE NORTH’S LEADING INDEPENDENT SCHOOLS.

A centre of excellence ounded in 1912, Queen Ethelburga’s Collegiate is a day and boarding school with 1500 pupils aged from 5 years to 18 years and from over 40 different countries. Set in 120 acres of beautiful North Yorkshire countryside, the campus has some of the most impressive study, boarding and leisure facilities in the independent school sector. 2016 saw QE celebrate its best ever A level results. Queen Ethelburga’s College was ranked the top day and boarding school in the North of England, according to the Daily Telegraph 2016 League Table for percentage A*/A A levels and equivalent qualifications. It scored 87 per cent, which ranked it top in the north and the second UK day and boarding school overall. The Faculty of Queen Ethelburga’s, the Collegiate’s other sixth form school, scored 84 per cent with its percentage of A*/A A levels and equivalent qualifications in the Daily Telegraph table, placing it second in the north and fourth in the list of UK day and boarding schools. King’s Magna Middle School takes pupils from age 10 years to 14 years. Here the transition is made from class-based teaching to specialist teaching, so that by Years 8 and 9, all subjects will be taught by specialist teachers. By Year 11 students will choose to attend the College, which offers a more traditional academic route of learning with GCSEs and A levels, or the Faculty, which offers GCSEs and A levels but also more vocational BTEC subjects such as performing arts, fashion or sports science. For many students though, Queen Ethelburga’s is more than a school, it is their home too, and the boarding facilities are

simply exemplary. Student bedrooms and apartments are all air-conditioned and have their own en-suite facilities and for the older students, their own kitchen area. Each room has a direct dial telephone, satellite plasma television with timed gaming port and DVD player. House parents are on hand 24 hours a day to help with prep, heat up hot chocolate or to listen to career ideas. A recent addition to the extensive sports village are QE’s floodlit 3G and grassed sports pitches. Recently opened by Jonny and Alistair Brownlee, they comprise a cricket pitch and outfield area playing home to six wicket squares, five natural and one synthetic. Also a full-size football pitch and a full-size rugby pitch are up and running along side five smaller pitches of varying sizes for dual-use, football and rugby. All pitches have a full drainage and irrigation system. QE runs a Cricket Academy in partnership with The Yorkshire County Cricket Club. This

runs alongside the existing sporting academies – the Rugby Academy, supported by Leeds Rugby Academy and Foundation at Leeds Carnegie and the Netball Academy run by Yorkshire Jets. There will be further development of existing programmes in football, swimming, hockey and basketball, all will have the advantage of use of the facilities in QE’s £30m Sports Village. Queen Ethelburga’s offers a wide range of scholarships and bursaries including a discretionary one which could allow you free transport on the extensive bus service. Please get in touch on 01423 333330 to arrange a visit or find out more about Queen Ethelburga’s at www.qe.org. Assessing the lie of the land SOME TOP TIPS FROM IRWIN MITCHELL’S TERESA DAVIDSON FOR THOSE WHO ARE SPLITTING UP. here seems to be a steady stream of articles in the press at the moment about divorce cases going through the Courts, as well as regular commentary and articles on the separation of the rich and famous. It is therefore easy to pick up views and ideas about what will be relevant and important in divorce cases, whereas the reality and the legal situation is often very different from popular perceptions. What is not highlighted in these press articles is that a good deal of common sense and some good advice is what is really needed when someone faces the often devastating change in their life, which comes with separation and divorce. It is important to pick the right lawyer and the right law firm, which has all of the expertise which you will need. Timing can also be very important. Post Brexit, there were real fears about price per acre of land according to the Royal Institution of Chartered Surveyors, who blamed “an overarching sense of uncertainty” linked to the loss of subsidies from the European Union. If you face separation and own or are living on a farm owed by your spouse, it is going to be important to consider such matters and decide when, or indeed if, it is sensible or necessary to divorce now and split up assets now. In addition, it is essential to formulate a plan at an early opportunity with your lawyer, and not assume that the divorce courts will hold back from ordering a sale of your farm or rural property. It is true to say that Judges are reluctant to order a sale of a farm, but if

T

this is the only way to ensure fairness between spouses and is the only way to ensure that both parties end up with what they financially need at the end of the day, the Court will order a sale. It is important to put forward credible plans for both spouses for the time after the sale of the farm which had been purchased during the marriage. On the other hand, judges can be cautious about ordering the sale of rural property where it has been in the family for two or three generations. A well thought through strategic plan will still be required to minimise the chances of a sale of the entire property and carefully thought through

‘Whatever your scenario, obtaining advice at an early stage is going to be worthwhile and help to ensure that you do not lose out.’

decisions will need to be made about what part of a farm could be sold, so as to minimise income loss and tax payable on sale. Whatever your scenario, obtaining advice at an early stage is going to be worthwhile and help to ensure that you do not lose out. Pre and Post Nuptial agreements can also be really important to protect inherited family assets. At Irwin Mitchell Private Wealth we have significant experience in advising in family situations where assets are being passed on, or where family members are in business together, to ensure this is done in the best way possible and ensure the family are protected. This is particularly important where parents are increasingly assisting children to get onto the property ladder, now being dubbed the ‘bank of Mum and Dad’. Separation and divorce is going to represent a significant change to you and your family. Irwin Mitchell has experience and expertise in all forms of family dispute resolution, we offer unrivalled guidance and methods to support you whatever the circumstance, help you plan appropriately and make the right decisions at the right time. BARBECUE

The joy of the BBQ FOLLOW OUR TIPS AND YOUR BARBECUE BASH WILL BE REMEMBERED FOR ALL THE RIGHT REASONS. n array of different meats smothered in delicious, exotic marinades are slowly cooking. The guests are socialising whilst enjoying the perfect, chilled summer wine and the hosts are relaxed and in control as they serve up the fancy, interesting dishes. This is how we all imagine our summer barbecue will be. In reality, those fancy, interesting dishes have inevitably turned into sausages and shop-bought burgers, and, as always, the bangers are quickly blackening on the outside while remaining pink on the inside. The exotic, delicious marinades seemed too difficult and time consuming, so tomato ketchup and barbecue sauce have become the second choice. The guests don’t seem to be socialising, not that the ‘relaxed and in control’ hosts would know because the out of control food means they’ve not been seen for half an hour. And the drinks? They’ve turned into a last minute job. When we only get to practice our barbecue cooking skills for a few weeks each year, it’s not surprising when our dream party becomes a nightmare. But fear not… help is at hand. Follow our tips and your barbecue bash will be remembered for all the right reasons...

Gas vs Charcoal There are pros and cons to buying either type of barbecue, gas or charcoal, it all depends on what you value most, and exactly what you want to get out of it. Grilling meat over white-hot charcoals is the traditional method of barbecue-ing. Many favour charcoal barbecues because it is believed that the smoke from the coals gives the meat a distinctive smoky taste that can’t be mimicked by gas alternatives. Charcoal barbecues are cheaper than gas, easier to construct and lighter to move. They also take up less space in the garage when you’re not using them. However, they are hard to light and slow to heat up. Gas barbecues are quick and easy to heat and cook on, therefore you will arguably get more use out of them. There is no waiting around for charcoals to get hot and being able to quickly adjust the heat is much more convenient. Despite this, many believe that food cooked on a gas barbecue lacks that char-grilled taste. They are also more expensive, heavier and that great hulking gas canister can make an unsightly feature on your patio.

Top Tips Every chef in charge of the barbecue is under pressure not to disappoint the guests. These cooking tips will help you avoid a culinary crisis. I Start with a clean grill: If you don’t, the taste of your food will be hugely influenced by whatever you cooked on it last week, or last year. What’s the best way to start with a clean grill? Finish with a clean grill. I Preheat properly: To successfully achieve that smoky taste make sure your grill is hot before you start cooking. As well as the smoke from a charcoal grill, the taste is created when the hot grates make sear marks on the meat. These marks will caramelise the sugars in the food and make that delicious smoky flavour we all love. I Don’t cook cold meat: Leave it to fully warm up before cooking, this should drastically reduce the risk of your food being black on the outside and pink on the inside. I Don’t poke and prod: The cooking process won’t be sped up by not leaving it alone. Relax, enjoy the party and let the meat do its own thing.

EATING OUT

Favourable impression IT MAYBE VISUALLY STUNNING BUT COULD THAI EDGE IN LEEDS PASS HANNAH SANDERS’ TASTE TEST? irst impressions are important and at Thai Edge the stunning waterfall, beautiful statues, chandeliers and inspiring artwork can’t help but make a positive impact. This bustling city centre restaurant in the heart of Leeds uses its space wisely, creating a relaxed, roomy feel despite all the eyecatching décor. The extensive menu is not to be rushed and includes Chinese, Japanese and Malaysian dishes as well as Thai, so anyone with a hankering for Oriental cuisine should find something that appeals. Having feasted on our surroundings, we relaxed with a Tiger beer (£3.50) and bitter lemon (£1.80) for myself, whilst my designated driving partner opted for a Pepsi (£1.80), while we perused the menu. After much deliberation we settled on a Chinese classic – crispy aromatic duck (1/4 £9.50) along with some chicken satay (£6.50). The shredded crispy duck was wonderfully fresh served with steamed pancakes, sliced cucumber and leeks and a large helping of sweet hoi-sin sauce. The combination of tastes and texture never ceases to impress.

F

86 Northside | www.northsidemagazine.co.uk

However, my partner favoured the chicken satay, which despite being charcoal grilled, were tender, marinated in herbs and spices and served with a homemade peanut sauce. For mains, not being a fan of major spice, I opted for the mild chicken red curry (£9.50) with a side of steamed sticky Thai rice (£3). This came cooked in coconut milk with aubergine, bamboo shoots, cherry tomato, kaffir lime leaves and basil. The dish had a slight kick, although not so much that it obliterated all the wonderful flavours. I was grateful for my choice of beer, as Tiger from Singapore had a clean, sharp taste and was chilled to perfection, which provided the ideal refreshment after my curry. My partner fancied something a little sweeter, opting for the stir fry chicken with a Japanese teriyaki sauce (£8.95) and side of aromatic sticky rice (£3). The chicken was cooked beautifully, served on a bed of pak choi, green beans, garnished with spring onions and chilli and covered in a sweet, sticky sauce – this dish was light, delicious and perfect for the warm weather that was waiting for us outside. I am not normally a pudding person in Thai restaurants, but the Klauy Buad Chee

(£4.95) proved light and refreshing. The warm banana was cooked in coconut milk, topped with sesame seeds and the smooth rich taste of the milk was perfectly balanced by the sweet bananas. My partner, meanwhile had no trouble in tackling the New York cheesecake (£4.50), which was creamy and smooth, topped with a tangy mango sauce. In a prime site overlooking Millennium Square, Thai Edge makes for a perfect relaxing summer afternoon lunch. Thai Edge 7 Calverley Street, Leeds LS1 3DA Tel: 0113 243 6333 www.thaiedgeleeds.co.uk

Flavours of France DOUGH BISTRO MIXES GALLIC FLAIR WITH THE BEST OF YORKSHIRE INGREDIENTS, WRITES PHOEBE SEYMOUR. ough Bistro delivers classic French cuisine with a Yorkshire twist and aspirations of international flair. The well-stocked bar has everything from Italian Aperol to American Aviation Gin – both reminiscent of the 1920s and the Prohibition era, whilst their extensive wine list allows you to explore more traditional French tipples. Originally a bakery, Dough Bistro has been developed over the last nine and a half years by executive chef, Luke Downing. Joined by restaurant manager and head chef, Laura MacLeod, they are dedicated to bringing guests some adventurous dishes made from local produce. Swillington Organic Farm and Leventhorpe Leeds Wine are just two of the Yorkshire based businesses they use, to create a restaurant that successfully blends the modern and the traditional, and the international and the local. Those wanting to immerse themselves in traditional French cuisine will be delighted with their Menu du Jour, whilst their a la carte menu lists more seasonal British dishes, with some unexpected flavours, and their five-course taster menu allows you to try a bit of everything.

On this particular hot summer’s eve, which did much to put us in a holiday mood, I ordered from the Menu Du Jour, whilst my partner ordered from the a la carte menu. A round of cocktails added to the carefree – and in my case – retro mood as I opted for an Aperol Spritz (£7), while my partner went for the signature Kiwi Clouds (£7.50) with a beautiful design stencilled into the foam. My starter of tourin velouté (£7) was a thick and creamy garlic soup, topped with crunchy parmesan croutons and deliciously crisp and salty pieces of bacon. Meanwhile, my partner was congratulating himself on choosing the deep fried French brie (£6.50). Warm and gooey, it was complemented nicely by a tangy balsamic, grape, tomato and chili jam and sprinklings of pomegranates. My herb crusted hake (£14) served with celery and apple slaw, new potatoes, asparagus and aioli, made for a light and seasonal main and my partner was equally impressed with his fillet of 35-day matured beef (£26) cooked to a juicy medium rare and served with wild boar pate, rich with orange zest, stacked on a fondant potato with horseradish emulsion and confit shallot. For dessert, I had the sweet and salty

peanut butter brownie (£6) with caramel sauce and peanut butter ice cream and my partner had the raspberry and basil cheesecake (£7). With distinct layers and a shiny raspberry puree, it was the type of dessert you’d expect to find in the window of a French patisserie. In a romantic setting with dishes that combine French recipes and Yorkshire ingredients, Dough Bistro is the perfect place for a date night. EATING OUT

Best of both worlds

IT MAY LOOK LIKE YOUR TRADITIONAL COUNTRY PUB, BUT THERE’S MORE TO THE TIMBLE INN THAN MEETS THE EYE, WRITES CHRIS WILSON. ith all the cosy comforts you expect of a country pub, and some classy touches you’d be glad to find in the smartest contemporary restaurant, The Timble Inn offers the best of both worlds. The pretty, tiny village of Timble, on the edge of Nidderdale, between Harrogate and Otley and close to the Fewston and Swinsty reservoirs, is the perfect spot to start a long, bracing country walk, and when you’ve worked up an appetite the local pub is the place to be. Perhaps you haven’t visited this part of the world for a few years. You may remember The Timble Inn as a pretty basic no-frills boozer with a menu that stretched to a few sandwiches and pies. If so, you’re in for a very pleasant surprise. With nine luxurious bedrooms, two separate dining areas and a cosy bar, The Timble Inn is the perfect place to escape for a short break, or just a meal out away from the worries of the world. We visited on one of those glorious June heatwave days when the surrounding countryside was looking particularly inviting, and the warmth of the sun was matched by a cheerful welcome. The stone floors, craft ales and large fireplaces (not needed on this particular day,

W

92 Northside | www.northsidemagazine.co.uk

of course) suggested a cosy bar, but white linen, silver service and attentive waiting staff told the full story. We settled in a cosy window seat and started by examining the excellent and wellbalanced wine list. This was not a day for heavy reds but from the pleasingly large selection of wines by the glass a Rioja Rose (£9) and Picpoul de Pinet (£8) were perfect for summer drinking. Pub classic dishes and a good value set menu make The Timble Inn good value for everyday dining while the a la carte selections, along with the setting, make it the prefect celebration venue too. Seeing as my companion Jane and I were renewing a friendship after not seeing each other for a couple of years, we decided this was not an occasion for half measures. A la carte it had to be. For starters, a sharing seafood platter (£24) gave our tastebuds a thorough workout with a lovely selection of queenie scallops, smoked salmon, salt and pepper squid, fish goujons, garlic mayo and prawn cocktail. My main course of bream (£23) looked dazzling and tasted deliciously fresh, served with lobster, samphire and confit shallots. With a simple bowl of Jersey royals to mop up the savoury sauce, this was a very

satisfying plate. Jane’s slightly more substantial main of belly pork (£18) with scallops, cauliflower, capers and hipsi cabbage was another flavourful experience, with the pork being superbly tender. Two contrasting desserts continued the high standards. My treacle sponge, served with crème anglaise, was light, fragrant and a far cry from the rib-sticking slabs of sponge with lumpy custard from my school days. Jane’s pistachio parfait (£6) with Yorkshire rhubarb, white chocolate and vanilla was a refreshing way to end the meal with the sharp rhubarb cutting a pleasing swathe through the sweet parfait. MAIN PICTURE: Pulpit Rock, a steep cliff which rises 604 metres above the Lysefjorden BELOW: The oil terminal

Norwegian good CHRIS WILSON ENJOYS A BRACING BREAK IN STAVANGER, CAPITAL OF NORWAY’S OIL BOOM. ention that you have just been to Norway, and the odds are you will be asked about the cost of a round of drinks. Never mind the Vikings, mountain trolls or mystical beasts reputed to lurk in the depths of the fjords, it’s the legend of the pricey pint that seems to linger in the British consciousness. So, to answer your question, around £8 for a ‘large beer’ that I reckon was just short of a pint, and the same for a glass of wine. Pricey enough to deter the stag and hen crowd, but not quite enough to demand total abstinence. Just go careful… and don’t get involved in any big rounds. We were staying in Stavanger, a large, bustling port just over an hour’s flight from

M

Newcastle Airport on BMI Regional. The harbour is the heart of the town with navy boats and cruise ships jostling for position while the water’s edge is busy with bars (where those prices certainly don’t seem to act as a deterrent) and fancy seafood restaurants. Head for the narrow, winding streets away from the waterfront and you’ll find many more dining and drinking opportunities, along with plenty of designer shops. There is also a large oil terminal further along the bay, a solid symbol of the reasons for those signs of prosperity. On 23 December, 1969 Norway struck an offshore oil field rich enough to guarantee the nation’s wealth for generations to come.

Cruise ships are a familar sight on the waterfront in Stavanger 96 Northside | www.northsidemagazine.co.uk

From that day onwards, Stavanger was slowly transformed from a dying community where sardine canning was the main form of employment, to the boom town of today. With so much to see and all of it within close proximity, Stavanger is an ideal weekend break location. A city stroll to get your bearings is a sensible first step, and this will inevitably lead you to Old Stavanger, a truly lovely area of steep cobbled streets, perfect wooden houses gleaming with white and pastel shades, immaculate gardens and hanging baskets. This is also where you will find the sardine canning museum. OK, so reading that sentence didn’t make your pulse quicken, but trust me, this place is a gem. Take a guided tour courtesy of museum manager Piers Crocker, an Englishman who married a local girl and never left, and lose yourself for an hour in his fishy tale of the local industry that reflects the town’s fluctuating pre-oil fortunes… and don’t forget to pick up a tin of chocolate sardines from the gift shop on your way out. There are other ways to see the sights. A Segway tour of street art, which seems to be embraced locally rather than dismissed as cultural vandalism, saw me tackling an unlikely form of transport. Thankfully our guide Rami stashed his machines in an

TRAVEL

underground car park, which was deserted and therefore the perfect place to find your balance before taking to the streets. Those gentle practice runs did not quite prepare us for the more demanding task of going uphill on wet, leafstrewn cobbles, but even the most ungainly member of our group (i.e. me) quickly got the hang of it and lived to tell the tale. All this activity, and the bracing sea air, will work up a healthy appetite. For seafood lovers Fisketorget, which has a dominant position at the top of the harbour, is a combined restaurant and fish market where I ate tremendous creamy fish soup with crunchy croutons and pan-fried hake with baked root vegetables, spinach, celeriac purée and shellfish sauce. Over the course of our weekend we also enjoyed local venison at Hall Toll, another harbour-side restaurant in the old customs building, and char-grilled squid and steak at Renaa Maltbaren, the informal, contemporary sister bistro of a rather more sedate Michelin-

starred venue next door. After dark the bars are packed, and with canopies, heaters and blankets as standard, sitting outdoors with a cold beer is a yearlong pastime. Dress accordingly, of course, this is northern Europe so fleeces, hats, gloves and waterproofs are always travel essentials. We stayed at the Victoria Hotel, in the heart of the town on the harbour edge and pleasingly traditional. The rooms were modern and pristine, but the best thing about the hotel was the staggeringly good buffet breakfasts. Forget your wormy bacon and fried eggs turning to bullets under heat lamps, we were offered vegetable juice shots and fruit smoothies, inventive salads of spinach, watermelon and pinenuts, smoked salmon, beetroot, pickled cucumbers and the local black bread. It was healthy, invigorating and a positively lifeenhancing way to start the day. Away from the busy town, fjords and mountains dominate the landscape and even on a short stay it’s essential to get a taste of

the true Norwegian wilderness. A 30-minute coach trip to the outskirts of the neighbouring town of Sandnes took us to the starting point for an exhilarating afternoon hike that took us to the top of the Dalsnuten mountain. The last section was suitably strenuous but the rewards came with breath-taking views of the Jaeren region, with distant mountain ranges, lakes and fjords seemingly stretching to infinity, and looking back towards the sea, an equally dazzling view of Stavanger glistening in the late afternoon sun. We’d already packed for all weathers, of course, and this particular afternoon stroll definitely required hiking boots. Our final morning left one thing to be ticked off our ‘must do’ list and that was the fjord cruise from Stavanger to Pulpit Rock, a steep cliff which rises 604 metres above the Lysefjorden. The view from the top of the rock is the shot you’ll see in all the guide books, and it’s one of Norway’s most popular tourist destinations for those with the energy to tackle a full day’s walk with a strenuous climb at the end. I must admit, floating in the bay looking up at the sheer rock face, I suddenly wished I was one of those hikers on top of the rock looking down. Maybe next time.

Factbox: One-way flights from Newcastle to Stavanger start from £80. As with all bmi fares the price includes 23kg of hold luggage, allocated seating, complimentary in-flight drinks and snacks and speedy 30-minute check-ins. www.bmiregional.com. www.newcastleairport.com www.regionstavanger-ryfylke.com
