A century of Bettys WE LOOK BACK AT 100 YEARS OF A NAME THAT BRINGS SMILES TO FACES JUST AS MUCH, IF NOT MORE THAN EVER, BEFORE.
The history of Bettys ou might think of Bettys and think of a true Yorkshire institution, and while that’s what many of us see it as, it’s not Yorkshire where the story of Bettys began, but in Switzerland in 1885.

In 1885, Anna Maria Bützer and her husband, Johann (a miller and master baker) welcomed their son, Fritz to the family, bringing him home to their mill in Lindenbach near Bern. While he was still just a baby, Fritz’s mother died, and a few years later tragedy struck for a second time, with a fire at the family mill leaving Fritz and his older sister Ida orphaned. 1890-1906
After the fire, Ida was taken in and raised by relatives, but with no room for a fiveyear-old Fritz, he was sent to the village 24 Northside | www.northsidemagazine.co.uk
of the ancestors, as was Swiss custom at the time, where he was fostered by a local farmer. Fritz spent much of his childhood working as an unpaid farm labourer, and as soon as he was old enough he left the foster home to train as an assistant baker, before travelling around Switzerland and France learning to be a confectioner and chocolatier.

When looking for a place to live, Fritz fell in love with and later married his landlady’s daughter, Claire Appleton, and on 17 July 1919, with the financial support of Claire’s family, the first Bettys opened for business.

In 1907, Fritz decided to seek his fortune in England, but upon his arrival in London he realised he’d lost the address of his destination – all he could remember was that the place he was heading sounded like ‘bratwurst’. A helpful local put him on a train to Bradford, and upon arriving in the Yorkshire city, he found work at a Swissowned confectioners, Bonnet & Sons. Fritz eventually settled in the spa town
It didn’t take long for Bettys to become well-known in Yorkshire for its excellent service, elegant surroundings and delicate continental cakes. During the 1920s, Bettys expanded, opening a purpose-built bakery to supply new cafés in Bradford and Leeds. By 1937, Frederick had set his sights on a new goal, and brazenly opened premises in York, the confectionary capital of Britain.

When Frederick wrote a letter to his sister Ida after arriving in Yorkshire, he described Harrogate as a ‘spa of the first order’. This has prompted people to believe that perhaps he chose to attract

During the Second World War, it wasn’t tea and cake Bettys York was famous for, but its bar. A few years before the war broke out, Frederick secured a liquor licence, opening a cocktail bar on the ground floor and another bar in the basement, both of which became popular among servicemen. In 1942 the café was hit by an incendiary bomb but escaped major damage. Throughout the war, Frederick found himself stretching rations to feed as many people as possible and creating confections from salvaged goods that would have otherwise gone to waste. 1950s-1970s
In 1953 Frederick died and his nephew, Victor Wild, became managing director. Over the next decade, Victor stabilised the business and helped it adapt to the
locals to his smart café by naming it after Betty Lupton, ‘Queen of the Harrogate Wells’, who served the town’s spa water to visitors in the 19th century.

So maybe we don’t know where the famous name comes from, and perhaps we never will. But doesn’t the mystery add another level of excitement to an already much-anticipated day out at Bettys?

WE TAKE A LOOK AT WHAT’S IN STORE AND SPEAK TO PRESENTER TOM HEAP. ountryfile presenters Matt Baker, Anita Rani, John Craven, Steve Brown, Tom Heap and Ellie Harrison are heading for Yorkshire stately home Castle Howard as part of this year’s BBC Countryfile Live events. The event, in the grounds of Yorkshire’s magnificent stately home, will bring the UK’s best summer day out to the UK’s biggest county. om Heap is ‘the serious one’ on BBC’s popular Sunday night show Countryfile. “When I meet members of the public they always say that I don’t get enough fun stuff to do,” he laughs. “I tend to be the presenter who introduces the item where the black cloud comes over.” As rural affairs correspondent for BBC news he’s also a regular contributor to Panorama and Radio Four’s Costing The Earth. So when Tom meets fans of the show at the upcoming Countryfile Live event at Castle Howard, he knows some of them may want to talk about the tougher issues that he has covered in his role as investigative reporter – whether it be vegetarianism, badger culling, tax breaks for wealthy farmers or sustainability. “That’s great, I am very happy for them to ask about those things, it’s the whole point,” he says. “People enjoy seeing the presenters out and about. And there will be plenty of chances, whether we are out and about walking around the show, or up on stage.

“It’s a great day out in the country. Castle Howard – big tick for a start. And there’s a huge variety of things going on whether your interest is food, water sports, getting kids out in countryside or great local produce – it’s all there. “We’re a current affairs programme so there’ll be debates happening on stage on the more controversial aspects. I’m often involved in chairing those. “But there are things I want to try too. If I can sneak away and have a go at tree climbing or whatever I am all for that.” This is the first time Countryfile Live has been staged in the north of England and Tom thinks it points the way forward for all types of country shows to attract the large attendances they need to survive. “One thing I was really struck by the first time we did Countryfile Live at Blenheim Palace was how interactive it is and how much thought goes into the events on the programme. It was all about cutting down the barriers between us and the public. “Whether it’s a village green, a maypole, climbing trees, or people
walking round in t-shirts with the words ‘ask a farmer’ on them, there’s a lot of thought put in to making sure there’s plenty to do. It’s not just about having enough to look at or enough things to buy. “We need to keep coming up with nicely curated ideas, because some of the long-running country shows have struggled to find an audience in recent years.” Tom relished a pre-show visit to Castle Howard recently. he Great Yorkshire Show is a Yorkshire institution, showcasing the very best of British farming, food and the countryside. Held over three days in July, the Great Yorkshire Show welcomes more than 130,000 visitors and 8,500 animals every year, and regularly hosts national cattle competitions as well as one of the finest show jumping competitions in the country, the Cock O’The North. The show’s strong agricultural links makes it one of the best placed for suppliers to showcase their latest models. And while agriculture at its heart, there’s also entertainment, shopping, live music, cookery demos and a professional catwalk fashion show – including a oneoff celebrity special. The first Great Yorkshire Show was held in 1838 and is organised by registered charity the Yorkshire Agricultural Society. This year’s show will be staged between Tuesday 9 and Thursday 11 July. Motorbike stunt riding team The Bolddog Lings will take centre stage at the Great Yorkshire Show in 2019 as

organisers plan a host of exciting performances. Show Director Charles Mills said: “Farming is very much at the heart of the Great Yorkshire Show where we welcome some of the best livestock in the UK into the judging rings, the latest agricultural innovations and key movers and shakers from the industry. The Show is also a place to socialise and enjoy some fantastic entertainment and The Bolddog Lings will go down a storm in the Main Ring.” Managed by one of Europe’s top freestyle motocross riders, Dan Whitby, the team uses one of the largest, most sophisticated FMX landing ramps ever seen anywhere in the world. Riders will use the ramp to perform a trick flying 35ft in the air when they take to the Main Ring once a day. The Great Yorkshire Show will also welcome back Rosemary Shrager who will entertain crowds in the Food Theatre and the Kuoni Catwalk Fashion Show, which will be bigger and better than ever. In the judging rings, thousands of
animals will compete from cattle to sheep, pigs to pigeons and the show finishes with one of the most prestigious showjumping classes in the country, the Cock O’The North competition. From cutting edge farming equipment and machinery to displays from big name brands, this is the place where deals are done and the latest ranges are showcased. While the show has agriculture at its heart, there’s also entertainment, shopping and live music. GET READY FOR THE GREAT YORKSHIRE SHOW, SHOW – COMING TO CHANNEL 5. or the first time in its 161-year history, a two-part series dedicated to the Great Yorkshire Show is set to be filmed. The Great Yorkshire Show Show will be presented by Anita Rani and Jules Hudson with special guests Julian Norton and Peter Wright from The Yorkshire Vet. Leeds-based Daisybeck Studios, the production company behind The Yorkshire Vet and Springtime on The Farm, will film The Great Yorkshire Show Show for Channel 5. Filming started when the build-up began and continues throughout the Show itself. The programme will go out on primetime national TV in July. Paul Stead, Managing Director of Leeds-based Daisybeck Studios, said: “We’ve been working towards this with the Yorkshire Agricultural Society for the last three years. We’re delighted that Channel 5 have commissioned this celebration of the finest agricultural show in the country for broadcast at the heart of the primetime schedules. “We’re biased of course but having filmed at The Great Yorkshire Show for Yorkshire Vet specials up to now, we’re thrilled at the chance to produce highlights programmes that capture a much broader array of competitors and contributors. fashion business set up by a Yorkshire farming family is expanding so quickly that all hands are needed to help deal with demand. Galijah, set up by Sarina Dean at her family’s 190-acre farm at Oldstead near York, produces individually hand-crafted tweed capes which are now selling as far afield as Japan and America. Sarina’s mother has now come on board as it expands. Sarina said: “I was keen to explore how we used our wool in other ways and investigated the idea of unique tweed capes. Now, in order to keep up with demand my mother has now become involved with the design and sewing process too.” The capes were sold mainly locally in the farming and equine community, but word soon spread and they set up a website for on-line sales, which also includes a range of dresses, skirts, Gilets and accessories. This summer they will take part in their first fashion show as one of the new Yorkshire companies on the catwalk at the Great Yorkshire Show Kuoni Catwalk. “It’s incredibly exciting but nerve wracking as this is our first fashion show,” said Sarina. The company name, Galijah comes

from Sarina’s two sons, ten-year-old Gabriel and seven-year-old Elijah, with the latest family addition, Xavier represented with an x in the company logo. The family’s 250-strong flock is made up of several breed types and after trials with wool from their rare breed Manx Loaghtan sheep, which was rather coarse to dye the vibrant colours they needed, Sarina is now experimenting with different wool types. As well as finding the perfect fabric from the wool from their own sheep, Sarina is also working with Marton Mills, a traditional family owned weaving mill near Otley. Sarina said: “We think our clothes are a little different to anything you can buy in the shops and we can’t wait to see the reaction of people at the fashion show at the Great Yorkshire Show. It’s all happening so quickly and we are very

excited about the future.” Show Director, Charles Mills added: “We are delighted to be showcasing the work of a Yorkshire farmer on the Kuoni Catwalk. The Show is one of the biggest agricultural events in the UK and it’s about showing the diverse way on life on farms throughout the country, and Sarina’s work does exactly that.” The Great Yorkshire Show’s Fashion section is set to get a makeover this year with a new presenter, new home and entrance, opening into the heart of the Showground. The GYS Fashion Show, which has been part of the three-day-event for over 20 years, will be next door to its former home, with more seating around the Kuoni Catwalk as 7,000 visitors will now get the chance to watch the show. For the first time, ITV Calendar’s Christine Talbot will be presenting the show – an opportunity she said she was delighted to take up. The fashion show will be produced by Bernadette Gledhill with hair and makeup by students from the White Rose Beauty Colleges from across Yorkshire. The Kuoni Catwalk will take place each day at 11am, 12.30pm, 2.30pm and 4pm, with a one-off celebrity special on Tuesday 9 July at 2.30pm.

V’s Red Shepherdess, Hannah Jackson, is set to make her debut at the Great Yorkshire Show this year. The 26-year-old who starred in Channel 4’s reality show SAS: Who Dares Wins, will open the Discovery Zone’s new area Gen Z which will educate teenagers about agricultural careers. Hannah will take to the Kuoni Catwalk as part of the Celebrity Special on Tuesday at 2.30pm as well as being guest speaker at the Future Farmer’s Breakfast Meeting on the Wednesday morning (7.45-9am). Hannah said: “I’m thrilled to be coming to the Great Yorkshire Show for three days doing a variety of talks, meeting visitors, pupils and farmers and even taking part in a fashion show, I’m looking forward to an exciting three days!” Show Director Charles Mills said: “We are thrilled to have Hannah at the Show. She will be the perfect ambassador for speaking to the thousands of school pupils we have coming to the Show – including a school from as far afield as London – about her life as a young shepherdess and about considering agriculture as a career. Known as the Red Shepherdess thanks to her flame-red hair – Hannah moved to the Cumbrian hills five years ago after swapping city life, for the peace and quiet of the rural countryside. After graduating with a BSc in Animal Behaviour at 20, she took a life-changing decision to head from Wirral, up to Cumbria, to pursue her dreams to have a career working with animals. In 2018 she was a finalist for the national Young Farmer of the Year. She is an active ambassador for the farming industry and was on the national judging panel for the NFU Farmvention Programme, aimed at supporting schools to engage with how food is produced. She is an ambassador for the National Sheep Association and is a regular speaker at conferences and events – sharing her perspective as a new entrant and young farmer. She is active on all forms of social media with tens of thousands of followers with her brand @Redshepherdess In 2019, Hannah completed the selection process for SAS Who Dares Wins. Surviving in arctic conditions in the Chilean Andes, Hannah was the first intake which included female recruits and was one of the only two females to complete the course. She thrives on the extreme challenges and the ability to test both her physical and mental resilience and strength.

The Duke of York last visited the Great Yorkshire Show in 2002 and will be hosted by the Show Director Charles Mills. Mr Mills said: “We are honoured to welcome The Duke of York to the Great Yorkshire Show where we will take a tour of some of the highlights. We have some of the best animals in Britain competing, first class entertainment, state-of-the-art farming equipment, terrific demos in the forge and the cookery theatres to name a few. fter a brief hiatus from Northside, I’m back again (hope you didn’t miss me too much!) with plenty of news. The summer period is always crazy busy for me, as all the bars and restaurants are launching their latest food and cocktail menus. And, as you can imagine, trying them all out is a task that requires a lot of time and effort! I was lucky enough to work with one

of my favourite bars recently, when we were invited to help launch the allnew terrace at The Alchemist in Trinity. Easily one of the city’s coolest bars, their cocktail creations never cease to amaze me. The launch night was epic, with the Leeds crowd out in force with a Smoky Old Fashioned or Lightbulb Moment cocktail in hand despite the ropey weather.

Across town, the sun did come out for the Pink Gorilla Hairy Lemon after work drinks soiree at Oracle terrace, along with several old friends I’ve not seen for an age. In my humble opinion, Oracle is the original and best riverside hangout spot in the city, and their pizza and cocktails are still amazing. I can’t wait to party there again on 29 June when the fun-filled Brewery Wharf Festival returns. PBR Streetgang are headlining this year, so it’s going to have a definite Balearic vibe to it, which I’m all over. Another memorable moment for me has to be the BBQ at the Midnight Bell. They’ve got easily one of the most underrated courtyard terraces in the city, and their summer BBQs take full advantage of the space. If you want to get involved, drop in to see them from midday each Friday, where you’ll find the juiciest Yorkshire steak burgers, the best Leeds Brewery beers and a ton of tasty gin cocktails. If you follow the news, you may have heard we also launched the state-of-theart Azuma train at London’s King Cross. Built using Japanese bullet train technology by Hitachi, the trains are simply awesome, offering a smoother ride, better tech and a lower carbon footprint. You won’t want to go from London to Leeds any other way! I was honoured last month to get an invite from LUFC owner Andrea Radrizzani to watch the Leeds game from the Chairman’s box. Not only were we treated to a gourmet lunch and endless bubbly, but we even ended up on

Sky News. To top it all off, Leeds finished with a triumphant win and the atmosphere was electric. Best of luck for next season boys. During the limited down time I had last month, I managed to treat my mum to the fabulous afternoon tea at Hudson’s in York. Located in the historic Grand Hotel, the experience offers a fine-dining twist on the tried-and-tested afternoon tea formula, and we absolutely loved it. If you love speciality teas, gourmet sandwiches and delicious cakes, then you must go. Restaurant manager Walter talked us through the tea journey and my mum, who is a tea addict, loved every minute! Definitely worth a visit. That’s it for now, I’ll check in with you next month.

New suppliers Provenance Inns & Hotels group has launched new summer menus, along with the announcement of two new key suppliers. Soanes Poultry have been rearing delicious chicken on Yorkshire Wolds farms for over 70 years and will provide the whole rotisserie chicken at the Crown & Cushion and the chicken kiev at the Carpenters Arms. Another Yorkshire based company, Warrendale Wagyu, will be the source of the Yorkshire Wagyu Burger.
All change for Arts Independent restaurant Arts on Call Lane is under new ownership and has a new head chef, Simon Turner from The Reliance, where he learnt from their ethic of using seasonal, sustainable and local produce to recreate global cuisine with an emphasis on flavour and quality. Cycling Yorkshire Four ‘auld fellas’ are riding the full Yorkshire boundary to raise money for the Leeds based charity, Brain Tumour Research and Support across Yorkshire. The 425-mile bike, which follows the edge of the entire county from Sheffield in the south to Redcar and Guisborough in the north, is being undertaken by two long standing members of Skipton Rotary Club, 73-year-old David and Kevin Wharton (65). They will be joined by friends Ray Cryer (71) and Rich Newall (55), in a bid to raise funds for Leeds based Brain Tumour Research and Support across Yorkshire (BTRS), in memory of Skipton Rotary president, John Wright’s daughter Annette, who tragically died of a brain tumour aged just 11 years. National final place A colouring book based on Yorkshire landmarks has earned young entrepreneurs from Giggleswick School a regional award and a place in a prestigious national final. The group of A level students won the Young Enterprise Yorkshire and the Humber Company of the Year following the regional final at the National Railway Museum in York. They will now compete in the national final in London. rofessor Nick London is a specialist knee surgeon with more than 20 years’ experience managing knee conditions from sports injuries in children and young adults, through to the management of knee osteoarthritis in older patients. What is a partial knee replacement?
“A partial knee replacement is essentially a resurfacing operation used when one of the three compartments of the knee has worn out. Most commonly, this is the inner compartment causing patients to develop severe discomfort and limitation of their normal activities due to bone rubbing on bone once the lining of the
joint has worn away. “Patients with wear on the inner compartment end up developing a bowed leg and the surgery is designed to resurface the worn part of the knee, straightening the leg aiming for relief of pain and a return to activities. “For older patients, this may simply mean being able to return to walking, climbing stairs and maintaining their independence, whereas for younger patients, the surgery can be performed in order to allow patients to continue working comfortably and return to functional activities like golf, tennis, skiing etc.” What are the benefits of a partial knee replacement compared to a total replacement?
“Modern total knee replacement (resurfacing) has become one of the world’s most successful procedures for relieving pain and restoring patient’s quality of life but a small proportion of patients can experience complications of surgery or fail to be fully satisfied with the outcome.” “A partial knee replacement has considerable benefit for those patients
who are suitable, ie, those patients whose wear (osteoarthritis) is limited to one side of the knee. “Patients with partial knee replacements usually recover quicker, experience less discomfort and return to more activities at a higher level compared to those with a total knee replacement. “In addition, the risks associated with total knee replacement at the time of surgery (including infection and blood clots) are up to three times higher than with partial knee replacement.” Who are suitable candidates for partial knee replacement?
“Suitable candidates are patients who have severe wear in their knees limited to one side of the joint, whose pain is significantly affecting their quality of life and reducing activity levels. “Partial and total knee replacements are offered to patients when simpler measures including weight loss, painkillers, physiotherapy and other treatments have proven unsuccessful and are no longer controlling the pain.” How does the surgery work?
“During surgery, the worn out side of
the knee is resurfaced with a thin metal surface on each bone with a plastic bearing (or cartilage) between the two metal surfaces. “Surgery takes approximately one hour and the patient is made comfortable with painkillers and nerve blocks.” How long is the recovery process?

WE SPOKE TO JAMES ARCHER ABOUT HIS EXPERIENCE AT ONE OF THE LEADING PRIVATE HEALTHCARE PROVIDERS IN THE AREA. or the past 56 years, James Archer has loved nothing more than spending his days working on his farm in Dishforth. Now 80 years old and semi-retired, there’s still nowhere he’d rather be, and it’s thanks to The Duchy Hospital and Professor Nick London that he’s still able to do what he loves. Thirty years ago, James was involved in a head on car collision which caused extensive damage to his left knee. At the time of the accident his knee was fully repaired, but he was warned that due to the significance of the damage he would need to consider a knee replacement later in life. After the initial surgery to repair his knee, James found he was able to carry on with work and life as normal, continuing with his love of running, completing several half marathons and strenuous days working on the farm. As time went on, however, James started to see that the advice he was given after the accident was spot on. James found himself experiencing a significant amount of pain due to the cartilage being worn away on his left knee (severe arthritis), which in turn caused him to develop a constant limp.

James’ pain continued to increase until enough was enough, and he sought the advice of Professor Nick London, whose reputation preceded him. “Nick London has a fantastic reputation,” says James. “I wanted to choose my consultant, but I knew if I went through the NHS pathway I wouldn’t have been able to choose and I would have had to wait to have my operation. “Choosing the private route most importantly meant I could go back to work quicker and my recovery wouldn’t be held up.” In September 2013, James underwent a total knee replacement at BMI The Duchy. His recovery took six weeks with the help of physiotherapists and he got a great result from the surgery. In the years following the successful total knee replacement on James’ left knee, James was once again limited by pain, but this time on his right knee, which was showing signs of severe wear on the inside of the joint. Professor Nick London advised he would need a partial knee replacement to his right knee, and this operation was carried out in November 2018. James couldn’t believe how quickly he recovered from the partial knee replacement, especially in comparison to the time it took him to recover after his total knee replacement. Back on the farm after a two-week recovery period, James couldn’t fault his experience at BMI The Duchy. “The treatment was excellent, and the result from both operations has been fantastic,” says James. “All of the staff at BMI The Duchy Hospital looked after me very well. Question: I have read there are now less invasive treatments for benign prostate problems. Would I be suitable for either Urolift or Rezum therapy? Answer:
Men with enlarged prostates (the medical term is BPH), which may cause difficulties with passing urine often suffer with other typical symptoms which may be extremely bothersome. Traditionally surgical treatments would involve removing prostate tissue. After surgery, men usually experience a rapid
improvement in urinary flow but recovery from surgery may be prolonged and side effects such as incontinence, scarring and sexual problems may occur in some men. Recently, minimally invasive treatments have shown benefit in improving symptoms alongside a quicker recovery, faster operating times and reduced issues with potential surgical complications. Currently, two new treatments have shown proven results in helping men suffering from BPH. Urolift involves the insertion of tiny implants (like miniature treasury tags) which help to hold the prostate tissue out of the way, helping to improve the flow through the water pipe. Alternatively, Rezum uses heated water vapour (steam), which gently causes cell damage within the prostate tissue. Over time, the body will then naturally re-absorb the treated tissue as part of the healing response. The risks of these treatments are much less than standard conventional treatments, however, it is best to talk to your urologist who performs these procedures as to your suitability and discuss all options available. Both treatments can be performed as a day case admission to hospital. You will need to be fully assessed with regards to the size of the prostate, how bothersome the symptoms are and exclude any other factors which might be causing your problem to urinate.

Cellar talk FANCY A GLASS OF SOMETHING SPECIAL? DAVID BURLTON, SOMMELIER FOR HOTEL DU VIN & BISTRO IN HARROGATE, SHARES HIS LOVE OF WINE. Where are you from and where did you learn to be a sommelier?
I come from Northumberland and have both English and Scottish roots. My mother is Scots but grew up in Tasmania, plus my father likes to travel, so I have had a fairly cosmopolitan outlook from the get go. I learnt to be sommelier by observing the pros at a number of hospitality establishments: firstly as a waiter at L’Ortolan in Berkshire, then at Castle Terrace Restaurant in Edinburgh, and later as Head Barman at Raemoir House in Aberdeenshire. What was it about the world of wine that particularly appealed to you as a career?
As a kid I sang in the Church choir and often travelled to Europe. I developed a particular taste for the French way of life – I suppose a career in wine is an extension of this! I actually had a very keen interest in Scotch first of all, but figured that wine was more of a global language. Wine has also been a way for me to specialise within the hospitality sector, while simultaneously broadening my career options. There is no reason why I could not also work in wine sales or wine logistics in the future, for example. When you’re asked to give advice in the restaurant where do you begin? Is it always about finding a wine to match the food on offer?
My aim is to quickly understand what my guest would enjoy – I have to be intuitive here and the approach is different for every table. What is most important is that I am able to describe the wines as accurately as possible, and that I can advise away from any food/wine combinations that wouldn’t work. After that, my job is to upsell, for sure, but equally to ensure that whatever the price, my guest takes maximum enjoyment from the wine that I recommend. A sale essentially comes from a three-pronged attack of knowledge, creating a narrative, and giving tactful suggestion. What do you particularly like about working at Hotel Du Vin & Bistro?

Newcastle, where I worked previously, and Harrogate. It is very satisfying creating a list for these two markets, as they are both very different: Newcastle has a taste for big New World reds; Harrogate for crisp whites and French classics. The company has given me the opportunity to expand my career in working over the two sites, with a strategic approach, and I value that. Hopefully I will be able to develop the role – I love teaching wine skills to the new generation for example. Are there any ‘hidden gem’ wines that our readers might not know about on the Hotel Du Vin list?
Are Newcastle United the best football team on earth? It’s a yes! I inherited some fine 2010 Marsanne from Tahbilk in Victoria, Australia, when I arrived in Harrogate. Marsanne can develop wonderfully with age, and this wine is no exception. It shows graceful citrus, honeysuckle and honey notes, all for only £36 per bottle – the perfect match for our Sole Meunière. For red, I recently began to list 2015 Caballo Loco Sagrada Familia Grand Cru: made by talented Kiwi Brett Jackson for Valdivieso in Curicó, Chile, this is a powerful and silky alternative to red Bordeaux, with great aging potential and comprising a generous dose of Chile’s signature grape, Carmenère, along with Cabernet Sauvignon and other classic Bordeaux varieties; at £69 it is well worth the money. Finally do you have a personal favourite wine/tipple?
Hah, how long do we have? I have a family connection with Australia, so I really enjoy anything from Down Under. If I had to be specific, I would say that I love the wines from Best’s of Victoria, especially their Great Western Riesling and Young Vine Pinot Meunier; if we are looking at something more tannic in red then I would go for Yangarra’s collection of McLaren Vale Shiraz – Peter Fraser has done magical work there. Coonawarra Cabernet normally hits the spot for me too. I also particularly enjoy Burgundy (doesn’t every sommelier?); and I am very interested in wines from the UK – for me one of the best was a 2017 Pinot Noir Précoce from White Castle Vineyard of Monmouthshire.

Passion for food NORTHSIDE SPEAKS TO PROVENANCE INNS & HOTELS’ NEW GROUP CHEF, JASON WARDILL. How and when did your career in hospitality begin?
It started when I got a job as a 15-yearold in a restaurant in Bridlington working for a chef who had trained and worked at 90 Park Lane for chef Nico Ladenis (three Michelin star). At 15, I was making two types of bread daily, along with sorbets and ice cream and homemade petit fours – that was it, I was hooked! What is your secret to being a great chef?
Passion for great food, ingredients and a constant yearning to do things better. Who inspires you and why?
A big inspiration is Gordon Ramsay; he was good at something and it did not work out, so he became good at something else, cooking. He came from very humble beginnings and has moved with the times, constantly evolving. My mum is my other inspiration she always worked hard and has been a fantastic role model. She instilled in me a great work ethic and how to respect and work with people. What has been your greatest career achievement and challenge to date?
Lots of things – I loved captaining a culinary team and coaching various junior chefs within the hotel group I worked for to go on and win medals in national competitions. Winning two AA rosettes in 92 Northside | www.northsidemagazine.co.uk
various roles and working at a Michelin star restaurant as a sous chef were all great times. Being voted the best leader out of 2,000 people was special too. What are your favourite Yorkshire ingredients to work with?
Yorkshire Wagyu is very special for me, this has recently been introduced to the Provenance menus for our burger. I love lots of Yorkshire ingredients, too many to mention; from game to Yorkshire farmed chickens, to some of the most amazing Yorkshire cheeses. Since joining Provenance Inns & Hotels what has been your focus?
One of my first projects has been to work on and launch a new exciting menu at the West Park Hotel. Although it is part of Provenance it is a different beast to our Inns; we feel we need to have a slightly different offering here. We will be offering modern British cuisine with lots of crowd pleasers and a few twists, some good healthy options with vegan and vegetarian options too. I have been working hard on the menus with the team in the West Park and we are all excited about the changes and the style of food on offer. Book a table soon and come and sample our great new summer menu. I have also been working hard with the rest of the head chefs on their summer menus and looking at our core classic

dishes. We will be introducing the Yorkshire Wagyu burger to the menus as well as a modern twist on the seafood platter we do. We are also doing a Provenance version of a Ploughman’s, as a good pub should always have a Ploughman’s available. We have also introduced Soanes as our chicken supplier across all sites, as they supply 100 per cent Yorkshire grain-fed farmed chicken. What Provenance dish were you most excited about adding to the menus?

Fell in love NORTHSIDE FINDS PEACE, TRANQUILITY AND DELICIOUS FOOD IN THE HEART OF THE YORKSHIRE DALES. et in the Yorkshire Dales National Park, The Devonshire Fell Hotel is a world away from the hustle and bustle of city life. As we arrived, we were in awe of the amazing views on offer and the perfect silence that surrounds a venue that instantly makes you feel like a weight has been lifted from your shoulders. And relax... As we arrived we were greeted by David who, it has to be said, is worth his weight in gold. He took care of our every need all evening and was so knowledgeable about the menu, the area and the hotel itself. In fact I found all the team to be some of the friendliest people I’ve ever met. We were shown to a comfy seating

area while drinks orders were taken; the ambience is so relaxed, warm and unbelievably tranquil that you would think you had come to a spa. Then out came the complimentary canapés, a duo of goats cheese and sun blush dip with sour bread and mushroom arancini. We knew we were in for a real treat as soon as we bit into the arancini and nearenough had to be dragged to our table, otherwise we could have just stayed put and feasted on these fabulous nibbles. The elegantly-decorated fine dining restaurant currently has two rosettes but the aim is for three. It’s a table with a view, that’s for sure. In fact the countryside vistas were so relaxing, we couldn’t help asking David if we could
just check in and never leave. Next up was another irresistible premeal treat, sea salt focaccia bread with a chorizo butter. As a Yorkshire woman I love my bread and butter and this was the softest, lightest bread, a real treat. The set evening dinner menu (three courses £38 or two courses for £29.50) is a varied fine dining menu with fresh, Yorkshire produce from potted rabbit to chalk stream trout. For starters I opted for the guinea fowl ballotine served with ham hock fritter, chorizo and celeriac remoulade. The presentation was so beautiful it was almost a shame to spoil it. Almost... I dived straight in and this was a dish where all the components worked

perfectly together. My friend was equally impressed by her asparagus and crispy duck egg served with pancetta and shallot dressing, For the main course my companion found more reasons to smile with a rack of new season lamb (£5.50 supplement) served with shoulder croquette, sweetbreads, savoy cabbage, broad beans and wild garlic. The lamb was cooked to perfection and as for the savoy cabbage... who knew eating your greens could be such a treat? I chose duck breast with rosti, confit drumstick, liver and poached rhubarb, another great combination of flavours. The duck was perfectly pink, as was the rhubarb whose sweetness perfectly contrasted the richness of the duck.
There’s a great wine list by the way including the lovely Casa Felipe Sauvignon Blanc (£7 per glass). Completely satisfied but never known to quit before dessert, we rounded off a memorable dining experience with a chocolate fondant served with white chocolate ice cream and kirsch cherries, and an elderflower jelly served with fresh blueberries and blueberry sorbet. The chocolate fondant oozed out when cut on to my partner’s plate and she delighted in the soaked cherries that give the dessert the wow factor. The elderflower jelly looked like a work of art, but when I eventually ruined the look by plunging in a spoon, it was the most refreshing end to a flawless meal. We sat with full stomachs, content
with life and trying to figure out how we could stay on indefinitely to relish those awesome views, the tranquillity, the luxurious yet relaxed restaurant atmosphere, the warm friendly staff and of course the finest food. Deliciously decadent WHAT BETTER WAY TO SAMPLE ALEXANDER’S OF SKIPTON’S NEW SUMMER MENU THAN WITH AN IMPRESSIVE TASTING MENU FROM CHEF PAUL CUNFLIFFE. RHIANA HUGHES FELT RIGHT AT HOME. ’ve spent years being that annoying person at the dinner table, spending far too long perusing the menu, only to finally decide upon the first thing I saw, then spending the remainder of the meal wishing I’d ordered the same dish as my dining companion. Imagine my relief then (and that of my partner), when we were invited to Alexander’s of Skipton to sample their new summer menu, with new head chef Paul Cunliffe putting together an impressive nine courses for us to enjoy. Paul’s reputation precedes him, having not only worked some of the region’s most celebrated establishments, but having been awarded the prestigious Michelin Bib Gourmand during his time at The Dunsforth, achieving an AA

rosette for culinary excellence, and reaching the National Chef of the Year semi-finals on more than one occasion. “I’m delighted to be working with the experienced team at Alexander’s on a brand new menu bursting with modern, well-executed food that’s packed with flavour and looks stunning – that’s what I’m all about,” says Paul. From our first bite of bread to our last sip of coffee, it was clear to my partner and I that Paul and Alexander’s are a match made in heaven. Each course flowed seamlessly into the next, with fresh and local produce and the most impressive preparation and presentation apparent in each and every dish we were served. Our meal began as many do, with a starter of bread, only here at Alexander’s
we had the added benefit of an array of ‘nibbles’ served alongside it. Crispy tempura black pudding, perfect bitesize pieces of halloumi in a dusting of fine breadcrumbs and flavoursome mini chipolatas were devoured within minutes, with mustard mayo the final tick on our imaginary checklist. This of course was just the beginning, and as we made our way through the courses my partner and I couldn’t believe our luck, the gluttons we are. The rump of Yorkshire lamb, served with slow cooked lamb shoulder, asparagus and potato puree was my personal favourite dish of the day. The perfectly pink and tender rump, and the intense and rich shoulder were a carnivore’s dream, while the smooth potato purée and the fresh asparagus

lightened the dish to ensure we still had room for what was left to come. It was the crisp belly pork with roast scallop, king oyster mushroom and pea and vanilla that had my partner’s tastebuds overcome with joy. The smoky mushroom contrasted wonderfully with the sweet and tender scallop, while the star of the show, the pork belly was seasoned to perfection. Our mysterious palate cleanser, the frozen “Sipping the Velvet” exceeded all expectations. Presented to us in a martini glass, dry ice and all; a hollowed out passionfruit was filled with a delicious mixture of the fruit’s juices and ice, the

perfect way to prepare us for the menu’s desserts. From raw honeycomb and fresh goats cheese to warm cinnamon doughnuts and a chocolate opera to die for, the selection of desserts we were served were utterly faultless, as was the attentive service we received throughout our afternoon at Alexander’s. I could talk forever about our wonderful experience at Alexander’s of Skipton, but suffice it to say there’s not a thing I’d have changed. The restaurant’s decadent yet relaxed environment and the stunning dishes we were served from Paul Cunliffe and his team have made it
