Decadence and discovery A NEW ERA IN ULTRA-LUXURY EXPEDITION CRUISING HAS ARRIVED.

or many years, expedition cruising has been operated on board ex-research vessels and former ice-breakers. For guests who wanted to experience remote regions, such as the Arctic and Antarctica, there were very limited options for comfort and luxury. Over the past five years, this has changed, with several cruise lines announcing an expansion into luxury expedition cruising, led by Scenic Luxury Cruises & Tours. In August 2019, Scenic’s first ocean ship set sail on her maiden voyage, before being christened by Godmother, Dame Helen Mirren, in New York. Scenic Eclipse, the World’s First Discovery Yacht™, pioneers the concept of ‘ultra-

luxury’ expedition cruising, combining six-star decadence with discovery. On board Scenic Eclipse, exploration is taken to a whole new level. From a fleet of Zodiacs to a dedicated, highly experienced Discovery Team, two onboard helicopters, a submarine, kayaks, and so much more – now guests can venture further than ever before. Inspired by the sleek contours of a sailing yacht and seamlessly marrying state-of-the-art technology and discovery equipment with unrivalled style and indulgence, there are just 228 guests on board Scenic Eclipse (200 in Polar Regions), up to ten dining experiences, a 550m2 Senses Spa and private verandahs in every suite.

From the Arctic to Antarctica and everywhere in between The new Scenic Eclipse 2020-22 collection has just been released, taking guests on some of the most beautiful journeys on Earth. As well as providing incredible itineraries to popular ocean cruise destinations, Scenic Eclipse seeks to push the boundaries that others can’t during expeditions to the Arctic, Antarctica and beyond, following in the footsteps of early explorers. The yacht’s unique size allows easy navigation of the little-explored seaways of the polar regions, visiting ports and destinations other larger ships simply can’t. Guests on board will be part of a select group to witness myriad icebergs, glaciers, fjords and islands, not to mention some of the world’s most intriguing wildlife. The on-board Zodiacs and kayaks enable guests to get up close to incredible feats of nature, be that the Arctic tundra, the Antarctic icescapes or the marine life that call these incredible regions home. Scenic have enlisted the expertise of an experienced and passionate Discovery Team, their vast knowledge spanning the polar regions promises truly authentic experiences and unrivalled insight. Just one of many additions that set Scenic Eclipse apart from the crowd. Almost every day provides the opportunity to make the most of their flexible Scenic Freechoice program and Scenic Enrich experiences – created exclusively for Scenic guests.

The sixth star experience – helicopters and submarine Witnessing marine life in its natural habitat takes on a new dimension when you’re below the ocean’s surface. With Scenic Eclipse, guests can dive into crystal clear waters on board Scenic Neptune – a state-of-the-art submarine. Scenic Neptune is a U-Boat Worx Cruise Submarine 7 capable of diving up to a depth of 300 metres, with spacious seating for up to six guests, plus the pilot. Custom-built for optimal sightseeing, with seats mounted on revolving platforms, guests can swivel 280 degrees to view in all directions for an excursion under the ocean that will be truly unforgettable. Scenic has always sought to venture beyond the horizon. For an additional cost, guests can take to the skies in helicopters, giving them access to an exciting range of excursions. Imagine flying over icebergs or venturing further

than most on the Antarctic and Arctic continents. The Scenic Eclipse fleet is equipped with state-of-the-art Airbus H130 helicopters, which can seat up to six guests, who will feel like pioneer explorers as they soar above places previously thought inaccessible, for a unique bird’s eye view.

Gastronomy inspired by the world Intimate and luxurious in equal measure, the Discovery Yacht boasts world-class amenities and up to ten dining experiences, showcasing cuisine from all corners of the world. Enjoy a theatrical teppanyaki display over an open grill at Teppanyaki @ Koko’s, fine Italian steak and seafood at Elements or all-day casual grazing at Azure Bar & Café. Alternatively, guests can choose to dine in the opulence of their suite. Culinary direction comes from executive chef Tom Goetter, who oversees the menu development. Guests will even be able to put their own cooking skills to the test in the bespoke cooking school, Scenic Epicure, where they’ll learn to create authentic, regional recipes, taking ingredients from the hydroponic herb garden.

Indulgent spaces Unlike many ocean cruisers, there’s

plenty of room to roam. Just 114 suites promise a maximum of 228 guests (200 in the Arctic and Antarctica) at any time. From the generous 32 square metre Verandah Suites, to the colossal 195 square metre Owner’s Penthouse Suite, exquisite attention-to-detail, an en-suite bathroom and private verandah come as standard. Not forgetting a complimentary mini-bar – restocked daily – and a butler service for every guest, making the suite the perfect retreat to retire to after a day of adventure.

Taking care of mind, body and soul The exclusive Senses Spa consists of 550 square metres of pure indulgence, including Scandinavian-inspired temperature controlled plunge pools, saunas and steam rooms. At no extra costs, guests can stretch their legs in the well-equipped gym, find their centre in the serene surroundings of the yoga and Pilates studio, or take some time in the therapeutic thermal lounges.

The new Scenic Eclipse 2020-22 collection The brand new 2020-2022 collection has arrived, and for a limited time only guests can enjoy exclusive earlybird fares for these incredible new voyages, as well as free private door-to-door chauffeur transfers and £500 per couple early payment discount when the full fare is paid by 31 December 2019. Great escape WHY FILEY IS THE PERFECT PLACE TO STAYCAY IN 2020.

n an age of uncertainty around travel and holidays, there is one thing that discerning Brits are sure about: the need to think long-term when it comes to investing in their vacations. One outcome of this is the rise of the ‘staycation’. More UK residents – 3.8%, according to Visit England – are swapping an annual overseas trip for more frequent breaks on home shores. But this is not just about being cautious – increasingly, people are taking complete control of their hard-earned leisure time, by seeking luxurious accommodation that can also double up as an enduring source of income. For savvy Yorkshire folk, one hidden gem is ripe for discovery when it comes to staycation investments. Filey, with its award-winning, sweeping sandy beach and breath-taking, dramatic clifftops, is rapidly becoming a hotspot amongst aspirational holidaymakers. Understated and elegant, with panoramic views across the bay, this popular seaside retreat is winning countless new devotees. As more people unearth Filey, the demand for luxury property has increased, resulting in a new development of country lodge holiday homes at Aria Resorts’ The Bay Filey. “Filey is an increasingly popular choice for Yorkshire residents who seek out the finer things in life, but who don’t want to waste time travelling too far,” says Paul Bingham, who is sales

manager at The Bay Filey. “They want Filey’s sandy beach and picturesque countryside, but with highquality holiday homes and a host of amenities on their doorstep.” The prestigious new resort will feature 55 high-specification country lodges. With an ICW ten-year warranty and 999-year lease, the properties have already attracted a high degree of enquiries from investor buyers, as they are fully mortgageable, with a guaranteed 7% return available through Aria’s managed letting service. All investment options are, of course, subject to the financial status of the applicant and terms and conditions apply. Paul added: “The resort we’re creating here at The Bay Filey is for those who yearn for a comfortable retreat in the perfect location but don’t want to compromise on quality of accommodation or facilities. “We look forward to welcoming visitors to the show homes for a taste of the Aria resort lifestyle.”

Lakeside lodges with unrivalled quality Aria’s new, gated resort at The Bay Filey will feature beautiful lodges in three different styles: the warm and inviting Nikki with natural materials and feature porthole window; the luxury New England-style Tahiti with its vaulted ceilings and sweeping deck; and the bright and spacious Kontiki, designed for families and groups with a love of sea, surf and the great outdoors. The self-contained resort offers facilities including a leisure complex with indoor pool, sauna, steam room and fitness suite; a traditional pub and pizzeria; a beauty room; all-weather tennis courts and a programme of entertainment and activities. Hosting this awe-inspiring show, which sees sensational footage from the BAFTA and EMMY award-winning BBC series shown on a gigantic 4K ultra highdefinition LED screen, and backed by music from the City of Prague Philharmonic Orchestra, is science and natural history presenter, Liz Bonnin. Liz has presented over 40 primetime programmes, include Blue Planet Live, Super Smart Animals, Galapagos and Horizon and she couldn’t be happier to be presenting this touring extravaganza, which arrives at Leeds’ First Direct Arena on 28 March. “When I got the call, I lost my mind, I was so psyched,” she enthuses. “The thought of seeing these spectacular images of nature on a gigantic, high-definition screen while listening to a live orchestra playing the score of Hans Zimmer sends a tingle down my spine.” So how does it feel to be filling the Sir David Attenborough role? “I don’t think I or any of my peers ever think about stepping into Sir David’s shoes – they are far too big to fill!” continues Liz. “It’s a lovely feeling to be part of something special. I am constantly amazed at what Sir David and the team conjure up in their imaginations about how else they can deliver wildlife stories and spectacles to their audience, and how inevitably they succeed in the seemingly impossible.” The Planet Earth II series had so many memorable moments – we’ve all got our own – and Liz was equally captivated. “I never forget screaming at the television when that marine iguana was running for its life! Or being completely awestruck at the tiny glass frog protecting it clutch of eggs from wasps using karate kicks and do you remember the swordbilled hummingbird? Its bill was so long it couldn’t clean its feathers like the other hummingbirds, it was so cute.” As entertaining as the show is, there’s a

A

serious message behind it (and other shows like it) and it plays an important role in helping us understand more about the world we live in, it’s not to be underestimated. “I personally know so many people who were inspired to follow careers in science and conservation because of this programmes,” says Liz. “There’s something incredibly powerful about discovering the capabilities of all these species, how they’ve evolved to survive. It can be very humbling. “I do believe people will walk away feeling inspired, moved and feeling motivated in playing a part in saving our planet. We can all be the change the planet needs to see.” Nature played a big part in Liz’s life growing up and she’s now lucky enough

to indulge that passion through her work in front of the TV camera, although she took quite a circuitous, and perhaps fortuitous, route to get there, as she explains. “I stress to people that I’m not a text book case. I studied biochemistry in Dublin before taking a year out. I knew I wanted to go back and do something more relating to conservation and zoology. “I was singing in a band at that time and that led to me presenting a music show in Ireland, then one thing led to another and I was working in television for quite a while. I was in London by then so went back to school and did a masters in Wild Animal Biology. “By that stage I had worked with

some wonderful producers and I thought to myself, I’ll work in conservation but it might be nice if I did a bit of telly work to communicate the stories I care about. The rest, they say, is history. “I combined my absolute first love, my passion for science and the natural world, with this newfound passion for story-telling. So it’s only because I took a few years off to sort of play, I guess, in my early twenties, that I found this new passion and now, I pinch myself, I feel very lucky that I’m doing what I love.” You’ll probably see a lot more of Liz over the coming months. As well as the Planet Earth II Live in Concert tour, she’s recently finished a documentary on the impact of meat production on the planet and she’s got a couple of projects coming up on animal behaviour and more ‘natural history stuff ’ (her words). Despite her ongoing work, she’s cut back on her travelling and will be now concentrating on projects more closer to home. “About two years ago I decided to cut down on the travelling, not least because of all the planes I was taking to film,” she explains. “I’m actually filming less series a year now, I’m going to be on the ground a lot more in order to be useful in other ways, to keep communicating what needs to happen to our planet. “I’ve realised it’s not just about making programmes, which take a long time to make, so I’m giving a lot more talks, I’m attending a lot more conferences to better understand how I can play a role in helping us all to be the change the planet needs after everything I’ve learned. I’m sort of adapting my role to what can be more affective so that means I don’t fly as much.” She’s a credit to us all and will no doubt be brilliant – and passionate – as the host of this amazing touring show. e’s a celebrated Yorkshire artist with a name to match, a man whose fame and popularity have grown stronger over the decades. Sheffield’s Joe Scarborough sold his first painting for £5, staged his first one man show in 1973 and has gone on to see his work displayed in galleries and exhibitions all over the world. Now in his 82nd year his status as one of the leading artists of his generation remains undimmed. He began by painting clipper ships but quickly found the subject matter that made him popular, shining a light on the minutiae of Sheffield life – the people, the pubs, the iconic local buildings and businesses. Once you know his colour-drenched style, simultaneously depicting current events while harking back to the past, a Scarborough painting is instantly recognisable. He continues to fly the flag for Sheffield with a major retrospective of his work, currently showing in Weston Park Museum in Sheffield. Joe Scarborough has affectionately documented Sheffield’s history in glorious technicolour for over 50 years, and Life in the Big Village brings together over 60 of his paintings and drawings for the first time in over 25 years. Joe’s work can also be found in major collections, including Sheffield Museums and Sheffield Hallam University He said: “From the start of my career my paintings have been inspired by Sheffield and the people who live here. I’ve always seen the city as my native village – from the local pubs and parks to places where people work and live.” Born in Pitsmoor in 1937, Joe Scarborough first began to paint having spent six years working at Thorpe Hesley Colliery and as a miner found his inspiration in the colour and light above ground. After selling his first painting “for a fiver”, Scarborough left the pit and took several labouring jobs which allowed him to paint in the morning and evening. Support from a sponsor, Cyril Caplin, gave Scarborough a life-changing opportunity to focus on his artwork. He went on develop the style and content of his paintings. In 2008, Scarborough was commemorated with Sheffield Legends status on the Walk of Fame outside the city’s Town Hall.

Deserved recognition THERE IS PLENTY TO CELEBRATE FOR IRWIN MITCHELL’S FAMILY LAW TEAMS. he Yorkshire Family Law teams at Irwin Mitchell are celebrating after numerous successes in the teams over the past couple of months. In September the Sheffield family law team was ranked in the top tier in the Legal 500 with the head of the Sheffield team, Zoe Round, being ranked as a Leading Individual for Family Law. The Leeds Family Law team were also ranked in the Legal 500 with testimonials describing the team as “a personal approach to family law, which a client might not otherwise expect to find in a large firm”. On 10 October the teams celebrated a double triumph after beating some tough competition at the Yorkshire Legal Awards to win Family Team of the Year and being ranked in Chambers and Partners – all on the same day. The Yorkshire Legal Awards was attended by Zoe Round, Maisie Huynh and Roopen Kalirai who were delighted to accept the award for Family Law Team of the year. The team was recognised as “being highly acclaimed by their clients both for their breadth of legal knowledge but also for showing a caring attitude”. At the ceremony Zoe Round described the win as phenomenal and praised the team for their contribution to the win; the award was dedicated to the leadership of Martin Loxley who had successfully led the team for a number of years. Irwin Mitchell was also shortlisted in six other categories including residential property, employment and private client. The much awaited Chambers and Partners 2020 publication ranked the Sheffield family law team as the only family law team in Band 1 for Family Law in Sheffield and the surrounding area and the Leeds team in Band 2. The Chambers and Partners entry noted that the team is “highly respected for the breadth of its expertise and its handling of high-value and complex matters”. The team was highly praised for its client care with one interviewee commenting that the team “consistently endeavour to

T

offer a high level of service to their clients” and “Client care is a priority and one of their areas of strength“. A number of individuals were highlighted in Chambers and Partners as notable practitioners in the area. Zoe Round was described as “pragmatic and practical” with her “collaborative, outcome-focused approach.” Former National Head of Family Law Martin Loxley was ranked as a senior statesperson for his “deeply experienced” presence in the market. Associate Solicitor Maisie Huynh, who is based in Sheffield but also works in Leeds, was highlighted as one of the Associates to Watch with sources saying “She often deals with more complex issues and has a strong understanding of the financial implications of a situation”. The team had the most number of notable practitioners recommended in the directory; with Maisie Huynh being the only Associate to Watch for family law in Sheffield. Zoe Round is keen to highlight that the successes of the Legal 500 and Chambers and Partners rankings were based on the successes of the team as a whole: “we have a one team mentality and our breadth of expertise

means that we are able to offer the best service to all clients at every level”. Behind the scenes the teams have gone from strength to strength. Scott Halliday was promoted to Associate in October 2019. In August trainee solicitor Edward Allan completed his training contract with the firm and has been retained as part of the Sheffield family law team. Olivia Green and Ellie Fairhurst joined the teams in Leeds and Sheffield as part of the firm’s Apprentice Paralegal programme; and in October, Clodie Allott, a paralegal in Sheffield, was offered a training contract with the firm. Zoe Round explains that the development of the team at every level is a key driver; there is an emphasis on inclusivity and diversity to ensure that the team recruits and retains the best possible talent. MR OLIVER KAYES, MBBS, MSC, MD(RES), FRCS(UROL) IS A CONSULTANT UROLOGIST AT LEEDS TEACHING HOSPITALS TRUST AND SPIRE LEEDS HOSPITAL IN ROUNDHAY. Question: I have read there are now less invasive treatments for benign prostate problems. Would I be suitable for either Urolift or Rezum therapy? Answer:

Men with enlarged prostates (the medical term is BPH), which may cause difficulties with passing urine often suffer with other typical symptoms which may be extremely bothersome. Traditionally surgical treatments would involve removing

50 Northside | www.northsidemagazine.co.uk

prostate tissue. After surgery, men usually experience a rapid improvement in urinary flow but recovery from surgery may be prolonged and side effects such as incontinence, scarring and sexual problems may occur in some men. Recently, minimally invasive treatments have shown benefit in improving symptoms alongside a quicker recovery, faster operating times and reduced issues with potential surgical complications. Currently, two new treatments have shown proven results in helping men suffering from BPH. Urolift involves the insertion of tiny implants (like miniature treasury tags) which help to hold the prostate tissue out of the way, helping to improve the flow through the water pipe. Alternatively, Rezum uses heated water vapour (steam), which gently causes cell damage within the prostate tissue. Over time, the body will then naturally re-absorb the treated tissue as part of the healing response. The risks of these treatments are much less than standard conventional treatments, however, it is best to talk to your urologist who performs these procedures as to your suitability and discuss all options available. CHRISTMAS

Share in the hope and joy of the season YORK MINSTER IS THE PERFECT SETTING TO EMBRACE ADVENT AND CHRISTMAS. he seasons of Advent and Christmas are a busy time at York Minster as the cathedral hosts some of its most popular events and services of the year. Last December the Minster welcomed more than 60,000 people from across the globe who came to experience beautiful, breath-taking services, seasonal concerts and familyfriendly activities in one of the world’s most magnificent cathedrals. The season officially begins on Advent Sunday – which falls this year on Sunday 1 December – with the popular Advent Procession service. The cathedral starts in total darkness, before a single flame is

used to spread light throughout the congregation, with each person holding a candle and passing the flame to their neighbour. Advent Sunday marks the start of the new Christian year and the service symbolises the coming of Christ, the Light of the World. As well as traditional services, the cathedral has embraced new seasonal services in recent years including the stunning Sankta Lucia – a Festival of Light (Friday 6 December). Run in partnership with the York AngloScandinavian Society, the atmospheric Swedish carol service features a candlelit procession led by Lucia, or St Lucy, a

young Sicilian girl martyred in the fourth century. Lucia wears a crown of candles with a red ribbon around her waist, symbolising her martyrdom. Introduced in 2013, the service has proved hugely popular with more than 1,000 people attending in 2018. Music features heavily throughout December not just at services but during seasonal concerts too. The Christmas Carol Concerts (Thursday 12 and Friday 13 December) have long been a staple in many people’s festive traditions. The concerts feature a mixture of classical and popular music from the York Minster Choir, with the chance for the audience

to join in with Christmas carols, and seasonal readings by celebrity guests. In early December, the York Minster Choir is joined by internationally renowned soloists for a special performance of Handel’s Messiah (Saturday 7 December). The famous work was first performed in Dublin in 1742 and has since become one of the best-known and most Sankta Lucia popular English oratorios. Performed in the beautiful setting of York Minster’s Nave, the poignant choral performance about the story of Christ offers the perfect way to celebrate the Christmas season. But December at the cathedral also offers moments for quiet reflection. Many visitors come simply to light a candle or spend time absorbing the atmosphere of the building, which offers an antidote to the hustle and bustle of the outside world. One of the most popular activities in recent years has been the chance to add a reflection to its Christmas trees. Based on the question ‘What does Christmas mean to you?’, hundreds of people add tags to the cathedral’s trees each year in memory of a loved one or as a prayer, with those unable to visit in person sending reflections via social media. For families, the Christmas activity trail encourages youngsters to discover York Minster Director of Music Robert Sharpe at the annual Christmas Carol Concerts

The trail includes items to look at, touch, smell and discuss at each stop. Young explorers can also collect a Little Explorer Backpack from the cathedral’s admission desk, packed with fun facts and gadgets to help them discover the cathedral’s stories.

The focal point for the season is Christmas Day, when Christians around the world celebrate the birth of Christ. Christmas Day this year will be particularly poignant, as it marks the start of new beginnings and fond farewells. December 2019 is the first Christmas the new Dean of York, the Right Reverend Dr Jonathan Frost, will spend in role, following his installation as the 76th Dean of York in February. It will also be the last for Dr John Sentamu as Archbishop of York, ahead of his retirement in June 2020. Dr Sentamu has been Archbishop of York since 2005 and traditionally preaches at the 10am service on Christmas Day, which he will do for the final time in December. The Right Reverend Dr Jonathan Frost, Dean of York, said: “The seasons of Advent and Christmas at York Minster are a time to share the traditions at the heart of the Christian faith. It is an exciting time of preparation, special services, festive celebration, seasonal music and carol concerts. “There is also a sense of wonder and anticipation as we await the birth of Jesus Christ and the light he brings to our lives. We hope you will make York Minster part of your Christmas and join us to share in the hope and joy of the season.” Northside | www.northsidemagazine.co.uk 57

From the middle of November until Christmas, Vienna's prettiest squares transform into magical Christmas markets, whilst the aroma of cinnamon, hot punch and toasted almonds hangs in the air and The Old City and shopping streets are decorated with festive lights that create a truly yuletide atmosphere. A tall arched gateway lined with candles welcomes visitors at the entrance to City Hall Square for the Vienna Christmas World on Rathausplatz. A special attraction for couples is the tree of hearts, where visitors can skate over a 3,000 m² ice rink and along numerous paths through the park. The Children's World offers a carousel, a reindeer train and wonderful light installations, which are based on Christmas stories for little ones. Not far from here is the Christmas Village on Maria-Theresien-Platz, between the Kunsthistorisches Museum Vienna and the Naturhistorisches Museum Vienna. Over 70 booths offering traditional handicrafts and original gift ideas are set up here during Advent and gospel choirs and music groups create a festive mood. The Christmas Village then transitions seamlessly into the New Year's Eve Village. With a children's railway and old-fashioned carousel, the Christmas Village in the Altes AKH is also a big hit with families. The Old Viennese Christmas Market on Freyung is committed to tradition. The first Christmas market was held here as early as 1772 and today, it is a place to buy handicrafts, glass decorations, traditional mangers and ceramics. Find out more: https://www.wien.info

Venison Loin with Suet Pudding INGREDIENTS: Venison lion Venison shoulder Suet pastry Onions Garlic Wild mushrooms Red wine Beef stock Juniper berries Rosemary Parsnips Kale Button mushrooms Shallots White wine vinegar Sugar Salt Butter

METHOD:

Venison Loin: Begin by pan frying and roasting the venison lion in the oven to taste – we recommend medium rare. Suet Pudding: Braise down the venison shoulder with onions and garlic in a red wine jus.

METHOD:

To make the red wine syrup, heat up a bottle of red wine and add 4-5 orange peels, two cinnamon sticks and 750g of sugar, leave to simmer for 10 minutes. Leave to cool for 30 minutes, strain and bottle (the syrup will keep for a couple of months and will make up to 50 drinks). Stir all ingredients down in a rocks glass and garnish with an orange peel.

When cooked, sauté the wild mushrooms. Place in a mould lined with suet pudding pastry and steam in the oven for 20 minutes. Accompanying veg: Parsnip Puree Peel the parsnips and remove the core, dice and cook in cream and milk until soft, then blitz into a smooth puree and season. Parsnip crisps Peel the parsnips and slice thinly. Deep fried at 180 degrees until golden brown. Kale Wash the kale and blanch in salted water before finishing in a pan with butter. Mushroom ketchup Slice the button mushrooms and cook with diced shallots and garlic. Once cooked, add white wine vinegar and sugar to taste and reduce by twothirds. hen Kala King visited a cocoa plantation in Venezuela, little did she know that a few years later she’d be starting her own business selling handmade chocolates and patisserie in the heart of the North York Moors National Park. “I was living in Venezuela with my husband and our daughter and had a busy career in the oil industry,” explains Kala. “I’ve always loved chocolate so when some of my friends suggested a trip to a local cocoa plantation one weekend, I jumped at the chance. We were privileged to watch the entire process of seed to bean – it was a truly amazing experience. My passion for chocolate making began right there.” Continues Kala: “South America is a world-class producer of selected cocoa beans and it was the perfect place to start my own journey into the world of chocolate. Seven years later and my family and I moved to the picturesque village of Hutton-le-Hole in North Yorkshire. Once we’d unpacked and got settled in, I started my chocolate and patisserie training with Callebaut, home of the finest Belgian chocolate, and Cocoa Barry. “I’ve since completed specific training to enable me to create chocolate centrepieces with Martin Chiffers, international pastry consultant, and Ruth Hinks, UK World Chocolate Master. “After ‘practising’ my skills on friends and family – my harshest critics! – I wanted to share my enthusiasm for all things chocolate with more people. I felt the only way to do that was to start my own business, so Kala King Artisan Chocolate & Pastry became a reality.” “From the very start, I was adamant about sourcing and using only the very finest ingredients,” states Kala. “Quality is key and it’s something that sets good chocolate apart from outstanding chocolate. I want everything we do to be outstanding and exceed people’s expectations. “For me, the business is all about creating delicious chocolates, brownies, desserts and patisserie for everyone to enjoy. As such, I also pride myself on creating vegetarian, vegan and glutenfree versions of many of our treats. Everything I do is handmade in my North York Moors kitchen – with lots of love – to ensure it not only looks incredible, but it tastes exquisite too. “Just as important is that I know

W

exactly what goes into each product. I aim to source as many ingredients as possible from local suppliers and farms including eggs, flour and milk to fruit and berries. Plus, I use only the very highest quality, ethically-sourced chocolate.” Adds Kala: “As well as creating luxury artisan chocolates, I make individual desserts and chocolate centrepieces for special occasions including weddings, birthdays and corporate events. I love taking clients’ ideas, no matter how extravagant, and bringing them to life. I also run regular chocolate workshops designed to introduce people to chocolate making. The workshops are really popular and always great fun; they’re the ideal way to share my passion

for chocolate and no-one ever leaves hungry or empty-handed!” Concludes Kala: “We all deserve a little outstanding chocolate in our lives and that’s my vision. I simply want people to enjoy food at its very best. Whether that’s by ordering some of our luxury artisan chocolates or sumptuous vegan brownies, challenging us to create a wedding centrepiece or by making memories in a chocolate workshop; there’s a chocolate experience for all – everything chocolate possible here at Kala King Artisan Chocolate & Pastry!” Find out more about Kala and her scrumptious business at www.kalaking.co.uk or email: info@kalakingchocolate.co.uk

Rural retreat SURRENDER TO LIFE AT THE FEVERSHAM ARMS & VERBENA SPA. IT’S THE ULTIMATE RELAXATION VENUE, WRITES RACHEL MARTIN.

reat explorations don’t tend to commence outside the borders of a countryside hideaway, as the accommodation choice suggests that relaxation is the only option on the agenda. But there’s something about The Feversham Arms & Verbena Spa that entices you to take on the great outdoors, no matter how comfortable you feel within the sumptuous confines of the bucolic bolthole. Whether it’s the surrounding views and rolling hills, or the handy maps that are swiftly exchanged at the front desk to those who show a slight interest in the surroundings; the North Yorkshire Moors National Park beckons. But, of course leaving the hotel doesn’t suit everybody. And who can blame them? Though the rooms sprawl across

G

several buildings, centred around a heated outdoor pool and courtyard, it feels intimate. Every inch of space has a purpose; whether it’s relaxing, socialising or dining and, though each has a different feel, the cosy, country-luxe atmosphere carries across all areas – paintings courtesy of Helmsley Galleries, deep sofas and armchairs with puffed up pillows, well-read books piled up in corners, and antiques and trinkets decorating what space is left. On a sunny day, head out onto the poolside terrace, which has the ambience of a friend’s country house, rather than a hotel. There’s certainly a very ‘Sunday’ vibe about the place, and though we visited during the week, it’s one which naturally encourages you to slow down, be present, and enjoy the moment.

EATING OUT

When you’re not taking refuge in your room, the Verbena Spa is the perfect spot to indulge in an afternoon of relaxation. You can smell it before you can see it, the calming scents floating up the stairs and wafting into the communal areas, creating a real atmosphere of stillness. Here you will find a saunarium, aromatherapy room, steam room, monsoon shower, relaxation lounge, spatisserie, Mediterranean inspired treatment

rooms, and separate, secluded outdoor hot tub for introspection and real, deep rest. There is also an enclosed outdoor pool. There’s enough to be found in Helmsley to while away an afternoon and after doing just that we headed to double AA Rosette winning restaurant, The Weathervane, which runs along the back of the hotel and offers views of the spa garden beyond. In the summer, the windows are opened so that guests can eat alfresco, and during the colder months, the dwindling evening light bathes the room in a golden glow. Head chef Simon Brough, uses locally sourced produce and food foraged from the North Yorks Moors, and the carte du jour changes with the seasons; it being early autumn, the dishes were full of earthy flavours and a hint of spice at the finish. The Weathervane is all about creativity and culinary craftsmanship, and the local authenticity, passion and homespun touches that it prides makes for some serious food, packed with serious flavour. As we worked our way through the menu, and work our way through we did, we enjoyed a bottle of Regaleali Rosso Nero d’Avola, a velvety blend from one of Sicily’s top producers, while looking out over the poolside, now void of guests and effortlessly peaceful in the dwindling sun. Dinner, a three-course affair that started out with warm-from-the-oven bread and marmite butter and finished with lemongrass infused poached pear, was, quite simply, some of the best food we’ve had in a very long time. The seared scallops were divine and

the coddled hen’s egg with white asparagus perfectly balanced. The rump of Yorkshire lamb was charred and rare all at once and the tiramisu the stuff of dreams. It was, in short, just as you want every meal out to be, with the addition of a sumptuously comfortable bed awaiting your arrival. Our suite, on the second floor of the hotel, had a magnificent bathroom, decked out with products from worldrenowned brand Temple Spa and an enormous king-sized bed swathed in lovely linens and the fluffiest of cushions. We relaxed almost immediately. In its current form, since the existing owners procured the property in 2008, The Feversham Arms offers an excellent base from which to venture out to such local features as Helmsley Castle and stunning Walled Garden and the scenic Duncombe Park. Originally an old coaching inn, the hotel houses 33 bedrooms and was rebuilt and renamed in 1855 by the Earl of Feversham on the site of an older hostelry. It was later known as The Guest House, The Board Inn and latterly The Bay Horse, where beer and candles were crafted and sold. At the same time, three cottages adjacent to the hotel were built

by the Earl in matching Yorkshire stone. In 1967, the hotel was purchased by Charrington’s Brewery, before being bought by Mr and Mrs de Aragues in 1977. The de Aragues then purchased the three cottages, in order to extend the hotel and added the swimming pool and gardens. As a result, The Feversham Arms Hotel & Verbena Spa, as it is known today, was born. A stay at this rural retreat is much more than a foray into the spectacular North Yorkshire countryside. It’s about cutting off, meandering round the spa garden after a dip in the pool and just surrendering to life and all it has to offer, before you wheel your luggage to your car and the porter waves you off. Plan your ‘Great Escape’ this autumn to the beautiful market town of Helmsley. Arrive and hideaway in the Verbena Spa heat experience – perfect for soothing aching muscles and destressing tired minds. Relax in your fabulously appointed suite before a locally inspired threecourse meal from the a la carte menu. The next morning there’s no rush, as late checkout is at 12noon, so you can enjoy a leisurely breakfast and more time in the spa. Rates from £249 (deluxe suite) This offer is subject to availability SundayThursday from 1 October until 23 December 2019 and is fully pre-payable and nontransferable or refundable. Spoilt for choice LUKE CLIFTON WILLIAMS IS OVERWHELMED AT THIS COSY COUNTRY RETREAT. he Anchor Inn at Whixley is now one of my favourite foodie finds of the year. Owned by Nyk and Victoria, this delightful inn has a warm cosy feeling with nooks and crannies, crooked low doorways and warped beams, with bookshelves heaving with old pages and picture frames full of history – exactly what you’d expect from a good old-fashioned pub. However, that’s as far as tradition goes, because the Anchor Inn has something very different to offer when it comes to cuisine. After meeting Nyk, it was obvious that what he was offering was a winning formula, not just because of queuing diners, but because the sheer amount of choice on offer was phenomenal. We couldn’t wait to jump right in and give it all a try. One brilliant addition to Nyk’s carving counter is the rotisserie which spins succulent chickens ready to be served. Patrons have a choice of sauces, like hot piri piri, garlic or BBQ which can be paired with salad from the fresh salad bar. Or, if you fancy having the chicken with all the tasty trimmings, then there is a hot counter full of roasties, mash and freshly prepared vegetables, which are nothing short of delicious (and local!). For the purpose of this review, we were lucky enough to try a little of everything that was on offer, like the carved pork with crackling, which was full of flavour and the Arthur Haig ham, that is delivered every Thursday. The ham arrives already brined but Nyk and the team sugar bakes each cut in demerara giving it that crispy sweet outer that just tasted like ‘home’.

T

The steak pie was heavenly, baked in thick crust pastry and heaving with thick hand-sliced chunks of beef chuck, which dissolved in your mouth instantly. One of my favourite dishes on offer was mince beef with gorgeously crumbly dumplings. The flavour was intense and the mince so tender. Nyk explained that the mince

was made from the trimmings of the beef chuck used in the beef pie. It was great to see that the cuts were being completely used, with no waste, creating various dishes. Each one different but all sharing the same love and attention that we sometimes miss in these sorts of establishments.

Rotisserie chicken is a new addition to The Anchor Inn at Whixley and can be paired with all the traditional roast trimmings (above) and healthy salad options (below)

The rotisserie chicken was succulent and the most delicious chicken I’ve eaten in a long time. I imagined coming home from the gym and popping into The Anchor for some chicken and salad to save me cooking. This offer of healthier options is, again, a perfect example of how the Anchor caters to just about every taste. If you’re vegetarian then they specifically rotate the vegetarian menu to consistently offer new choices, creating vibrant tasty meat-free dishes. If you’re gluten intolerant, then they offer glutenfree gravy, as well as gluten-free deserts. I tried the banoffee pie, made by one of the girls. She not only makes the

pudding herself, but she bakes the gluten-free digestives for the base as well, creating the most perfect glutenfree pud. Nyk’s passion for food is undeniable: his tales of colourful foodie trips filled both Tom and I with excitement and hunger. Nyk is a man who wanted to bring something different to The Anchor, which he took over 13 years ago. He wanted to give diners choice, serving them a variety of tasty locally sourced food at reasonable prices, and with Sunday lunch costing only £10.95 or £9.95 from Monday to Saturday, it’s no wonder I was surrounded by a mixture of regulars and newcomers all ready to tuck into Nyk’s mouth-watering options. I can’t wait to visit The Anchor again (next time we’ll be bringing our families). I think the atmosphere is heart-warming. I love the music playing in the background, which works in perfect harmony with the soft chatter and laughs that resonate around the inn. The sound of people enjoying themselves, families tucking into roast dinners, children dislocating their jaws to take in the giant fudge cake slices and couples chinking glasses to celebrate life, or just a win on the lotto. It’s a hub of life, where everyone seems happy and downright cosy. The overall love Nyk has for his art is infectious. It resounds in the food, throughout his staff and with us, his customers. We left planning our next visit with huge smiles on our faces and, of course, a full belly! Anchor Inn at Whixley New Road, Whixley, York YO26 8AG Tel: 01423 330432 www.anchorinnwhixley.com

Where to eat this autumn? FINE DINING PAIR BEHIND HOME LAUNCH THE OWL. any of us will be familiar with HOME, Leeds’ fine dining sensation. Sitting unobtrusively above Kirkgate shops, just off Briggate’s main pedestrian thoroughfare, HOME’s high-end tasting menus (which change monthly to make the most of the seasons) and welcoming, intimate atmosphere have been lauded both near and far. Some may not know the chefs behind this successful venture. HOME was cofounded, and is co-head cheffed, by Liz Cottam and Mark Owens. Masterchef viewers will recognise Liz from her success in the 2016 series. Brought up in her parents’ ‘spit and sawdust’ pubs in Leeds suburb Middleton, Liz has taken a long journey to become the critically acclaimed chef behind this fine dining behemoth. Others may recognise Mark’s name as the head chef who retained Ilkley’s The Box Tree’s Michelin star rating, as well as having worked at two-starred Le Gavroche, The Star Inn at Harome and other stellar dining establishments. HOME has developed a loyal fanbase of returning customers, and there are many more of us who have had their eye on the place for some time but haven’t yet found an excuse to indulge, or gotten around to making a booking. Luckily, we can report that the pair are launching several ventures in Kirkgate market over the next year – the first of which is The Owl. That should provide plenty of opportunities to taste their critically-acclaimed cookery – as long as we can get a seat!

Mark Owens and Liz Cottam at Kirkgate

The Owl The Owl is a 44-seater dining and taproom, opening in early November. This is a gastropub like no other. For one thing, it will be the first pub ever to sit inside the beautiful and historic Kirkgate (Europe’s biggest covered market). Sited at the top of Fish & Game Row (the first building created in the market), The Owl will prioritise showcasing the best of the North, in both their food and drinks offerings. Forget everything you thought you knew about gastropubs. Alongside a dining menu which focuses on whole roast fish and game (to honour its location), there will be a bar menu, allowing an evening of drinks to be pleasantly accompanied by the tastiest snacks imaginable. Award-winning Leeds brewery Northern Monk is on the taps, and they have even brewed up a speciality beer just for The Owl – a refreshing and fragrant hazy pale ale called Wisdom, based around the notes of

the herb lemon verbena. This is a great opportunity for diners from Leeds and beyond to get a taste of Liz and Mark’s famous culinary talent, without the waiting lists and price tag attached to the more formal HOME experience. Indeed, we might find ourselves at The Owl every day. The Owl is set to reinvigorate the market, making it once again a thriving hub of Leeds culture. Keep your eyes peeled for further market ventures from the HOME pair, which are set to include a champagne and oyster bar, Chef ’s Table-style tasting experience and somewhere to pick up a coffee and a quick bite. Liz and Mark are truly hoping to provide something to suit everyone in Kirkgate, and to bring thoroughfare and footfall back through this Leeds institution. So next time you’re shopping on Briggate, reroute, and set your path for Kirkgate – to pick up some of the best food on offer in this great city right now.

Sartorial elegance TUCK THAT NAPKIN DOWN YOUR SHIRT, IT’S TIME FOR THE NEW FACE OF LEEDS PASTA. eeds has plenty of Italian chain restaurants, where you can find a mediocre, passable pasta dish. The suburbs, equally, have some very traditional and authentic Italian hotspots to keep your tummy entertained. But the city centre? Central Leeds has been starved of quality Italian food for too long! Starve no more. Sarto, in Munro House, is now open. Sarto is the outcome of a collaboration between two successful existing Leeds food establishments – and we are excited about what it promises. Laynes Espresso team up with The Brunswick to create this pasta paradise.

L

Laynes Espresso + The Brunswick = Sarto The Brunswick is sited up on North Street. Perhaps a ten-minute stroll from Briggate, North Street has become Leeds’ most exciting foodie destination, hosting as it does Swine That Dines, The Reliance, Wen’s Chinese, #EatNorth’s weekly summer festival and The Brunswick itself. The Brunswick has somehow managed the impossible; to attract the hip crowd, and also remain a ‘community’ bar – it truly functions like an old-fashioned pub. Laynes, meanwhile, needs little introduction. The renowned cafe serves up some of the best coffee in the country (just ask The Telegraph, who rated it in Britain’s Top 30), as well as mouth-watering brunch and lunch options, both savoury and sweet. The two founders found a shared passion, though, and have brought it to

bricks and mortar. Sarto – a new go-to for that most heart-warming, soulsatisfying dish – homemade pasta.

Introducing Sarto “Sarto”, Italian for “tailor”, is housed just south of the bus station, in Munro House (already home to exciting art gallery-come-shop Colours May Vary and art gallery-come-cafe Café 164). Taking over the space which was formerly Ipsum Vinoteca, Sarto promises to satisfy a myriad of diners – from office workers who need a quick bite, to those enjoying a lazy lunch, and couples on a date. They will all be satisfied by the self-same, simple product – authentic pasta. Ranging from filled varieties like tortellini and ravioli to the simplicity of a

perfect pappardelle, the city centre is crying out for somewhere stylish yet without airs and graces, somewhere passionate about serving up Italian classics without fanfare – and that is what Sarto promises. And although pasta is their focus, the small dishes/starters include other Italian favourites like arancini, polenta, regional salads, and meatballs. Having added several extra evenings to their run of exclusive Sarto Supper Club nights at Laynes (where diners could try out dishes from the new menu and help crowdsource towards the new venue’s final flourishes), there is clearly a lot of interest in the new venture. Not least from us. Get the Verdicchio in the fridge chilling; we will be back at the city’s newest Italian venture with fork in hand!

WHAT’S GOING ON LEEDS?

LEED’S ORIGINAL PARTY PLANNER – DEBORAH DE VITTORIS – STARTS THE OFFICIAL COUNTDOWN TO CHRISTMAS.

t was my birthday in October and when you work in events, the last thing you want to do is throw a party, so I kept the celebrations somewhat low key this year, celebrating at my staple favourite The Ivy, with a delicious dinner with a few friends. That said, I was lucky enough to be whisked away to Grantley Hall in Ripon, which, as a lover of a good pamper (it’s a luxury spa and hotel), I’d highly recommend. With the perfect blend of modern and grand vintage design, everything from the décor and food to the service and facilities is worthy of its five-star rating. Speaking of birthdays, I can’t believe we celebrated four years of Revolucion de Cuba Deborah meets the showgirls last month, it only seems like two minutes ago since we did the launch party. In true Revs fashion, the night went off with a bang, with incredible cocktails, a live Cuban band and some amazing Latino dancers with bodies to die for. In my next life, I’m absolutely coming back as a showgirl! Alas, it’s difficult to keep that ‘beach bod’ when it’s been a month of trying out the ample new food offerings that are springing up across the city. I have been a vegetarian for over 20 years now and whilst I have strived to be vegan, I’m a terrible cook! Luckily, my job allows me to sample lots of new food and it’s so refreshing to see menus specifically catering for vegans and veggies. One of my favorites vegan dishes is the Alchemist’s Moving Mountain Burger. It tastes so good that you carnivores will struggle to taste the Getting into the spirit at the difference. Their Sunday dinner is one of the best in the city too, and the ‘little ones’ menu makes it perfect for a family day out. We also want to showcase the work of up-and-coming photographers to give them a leg up. We don’t want the festival to be sniffy or static, we want it to be inclusive. We want people to walk through the door and feel welcome.” To keep up to date with Photo North Festival’s latest bookings and events please visit the website www.photonorthfestival.co.uk. Tickets are available via the website, and tickets include a free sample of Yorkshire Gin and a complimentary copy of Dench Does Dallas book, whilst stocks last.

Mad Hatter’s Tea Party Back in June, Mayfield View, Ilkley’s newest care home opened its doors to welcome the Ilkley community to a Mad Hatter’s Tea Party. A special “design-a-cake” competition judged by Stray FM’s Nick Hancock was won by Sadie Eccles of Ben Ryhdding Primary School. Sadie visited the home together with her family to see her cake which had been superbly translated from paper to reality by Emma McDonagh as the home prepared to celebrate in style with a party for residents, relatives, staff and members of the local community. Sadie said: “Ever since I won the competition I have been looking forward to this, it’s so exciting to see the cake and the person who made it is so clever – it’s amazing!” The care home offers residential, nursing and dementia care from award winning Springfield Healthcare and features beautifully designed rooms as well as lovely communal areas for relaxing, socialising and dining with superb views over the moors, the Wharfe Valley and its own stunning, private gardens. 102 Northside | www.northsidemagazine.co.uk

Stylish accents Race stars impress school pupils Teenage racing driver, Moh Ritson, wowed pupils at Woodhouse Grove School, where he is currently studying in the Sixth Form. He and Tockwith Motorsports (TMS) teammate, Sarah Moore, showcased their Ginetta G50, sharing their racing experiences and taking questions from both captivated students and the local media. Moh and Sarah, as well as Simon Moore, TMS’ owner, spoke comprehensively to students studying a variety of different subject matters, such as aerodynamics, engineering and design, all of which are vital aspects of motorsport. The team talked at length about their motor racing careers and what life is like during a typical race weekend in the Britcar Dunlop Endurance Championship. Woodhouse Grove Director of Sixth Form, Chris Softley, said: “We are very proud of Moh and work hard with him and his family to ensure that he can fulfil his academic potential as well as allowing his racing career to flourish. We encourage a well-rounded, diverse approach to teaching and believe this is the key to building academic and personal confidence.”

Leeds-based luxe interiors brand Dowsing & Reynolds has officially opened its doors to its first store in Victoria Quarter’s County Arcade, showcasing a range of striking fittings and stylish accents for the home. Spanning 2,165 sq ft across two floors and designed by James and Ally Dowsing-Reynolds with the help of local interior designer Karen Knox from Making Spaces, the concept shop has a dedicated section for each room in the home. The ‘kitchen’ features design-led cupboard and drawer handles, knobs and pulls whilst the ‘living room’ showcases paint, table lamps, outside lights, as well as the company’s range of faux foliage. Customers will be able to browse sockets and switches in unique finishes, and customise their own light while exploring the range of pendant and wall lighting in the ‘hallway’ and ‘bedroom’. The shop has been entirely decorated in ‘mud wrestling’, a shade of dark grey sold by Dowsing & Reynolds, and features the brand’s characterful monkey lamps throughout. Bespoke units have been designed and built to house the rainfall showers and wall mounted taps in the ‘bathroom’ upstairs, and moss walls bring the store interiors to life.

Nursery improvements First Steps at Froebelian, a private day nursery in Horsforth, is celebrating the completion of a major refurbishment. Following fantastic success during its first four years; and achieving an ‘Outstanding’ judgement from Ofsted after only 12 months of opening, the New Road Side nursery has undergone major improvements. These include aesthetic changes to its outdoor area and a kitchen refit as well as a full redecoration of all the nursery rooms. This work will enable an even greater focus on the quality of education and will extend the provision of freshly-made, high-quality meals for all children. Head of Nursery Rachel Brook said: “The rapid expansion of First Steps since its inception has meant that a number of changes were required to ensure that we are providing the best possible facilities for each and every child that we look after. We have a reputation locally for providing care and education of outstanding quality. The new improvements to the nursery will make certain that we can continue to provide the highest possible standards for many years to come.” Northside | www.northsidemagazine.co.uk 103
