Pay as you go 2014 and 2015 have seen marked growth in the number of people without private medical insurance choosing to pay for treatment in a private hospital. Suzanne Wynne-Jones, business development manager at Spire Leeds Hospital in Roundhay explains some of the factors driving this growth.
T
here are many reasons why an increasing number of people are opting to self-pay for private hospital treatment.
Suzanne explained: “Probably the most compelling reason is speed of treatment. Rather than waiting many weeks or even months for first appointments and elective surgery in the NHS, patients can simply phone or email a private hospital such as Spire Leeds and book an appointment to see a consultant specialist within a matter of days. Often, they do not even need a GP referral. At the appointment, patients can then arrange rapid appointments for any tests, scans, physiotherapy or surgery “As with many things, having a choice is also crucial; people like to be able to choose which hospital to come to, which consultant to see, when to have an appointment and especially when to have surgery. The cost of private hospital treatment is often more affordable than they think, with out-patient consultations starting from £150. “Undoubtedly another factor is now the restriction in some of the services that the NHS provides. In some parts of our region for example, varicose vein surgery is often no longer widely offered and many people only have the option of paying privately”.

On the road for charity The latest challenge facing a team from Leeds First Direct Arena will see them criss-cross Europe on the ultimate fundraising drive. Words: Stephanie Burns
F
or most businesses, Christmas parties consist of a set menu, a few too many pints and some questionable flirting between staff. But Leeds First Direct Arena isn’t just any old business – certainly not with director Tony Watson at the helm, anyway. “I couldn’t decide what to do for a Christmas night out,” he says. “So I decided to put on Facebook that I and two of my colleagues, Jacob Smith and Kyle Minnock, would do anything for money for the following 24 hours to raise money for the British Heart Foundation. “In no time, a local businessman had offered us £100 to cut down a real Christmas tree and deliver it to his office, someone asked for Kendal Mint Cake from the Lake District, and someone else wanted a pint of Baileys from the Golden Mile in Edinburgh.” Clearly, the public had found an appetite for seeing just how far they could push the trio, and so the idea of the Festive Charity Challenge – a day of road trip fundraising – formulated. Soon after, they took on the Castle Challenge; in 24 hours they visited 24 castles in the UK to raise money and awareness for homeless charity Simon on the Streets. As so Team JKT – which so far has raised more than £15,000 – was born. “It was about the three of us coming up with different ideas that would get people talking about smaller, lesser-known charities,” continues Tony. “We captured people’s imagination and we have been getting more and more publicity with every challenge we do. Everyone does sponsored swims and things like that, but this is more unusual.” Their third challenge, which raised funds

for Simon on the Streets and the Alzheimer’s Society, was certainly more unusual – and included some of the toughest four days of their lives. Between 7am on 28 March and 6pm on 1 April, the team drove more than 7,000km from Leeds, through ten European capital cities, and back home in a car donated by Enterprise. During Eurostomp, as it was known, the car was moving for a total of 120 hours. Though he didn’t let it hamper their efforts, Tony began suffering with cellulitis (a
painful skin infection that turns skin red, swollen and hot) on day two and the guys watched in horror as his leg swelled to more than twice its usual size. Thankfully, he is fully recovered, and raring to go for the fourth challenge – Poppystomp. “For Poppystomp, we’ll have a new member of Team JKT, Alex Pawsey. The four of us will set off at 6am on 6 November and we aim to return to the Cenotaph in Leeds on 11 November at 11am after visiting ten war graves run by the Commonwealth War Graves Commission. It’s our longest challenge to date and will cover 6,000 miles across France, Germany, Austria, Italy, Spain and Belgium.” In addition to the commission, they’ll be raising money and awareness for Pilgrim Bandits (which helps wounded soldiers live life to the full), the Royal British Legion, and Simon on the Streets. Businesses – including Northside – have been lining up to sponsor the challenge and help the guys achieve their £10,000 target. W
ith two bridal boutiques in Harrogate focusing on two separate areas of the bridal market, I have to keep my finger on the pulse with regards to emerging trends. Fresh from the recent buying season in the bridal industry, here is an overview of the key emerging trends for the coming year. If you’re getting married in 2016 or 2017 take note, bridal is pushing boundaries. Beautiful brocade fabrics are bringing classic cuts into a modern look, enabling brides to choose a timeless shape but in a fabric that is a little more edgy. Designers such as Raimon Bundo (stocked at The Harrogate Wedding Lounge) also have a collection of beautiful boho styles full of fluid skirts in delicate silk tulle and decorated with soft, pretty lace appliqués on the bodices and arms, perfect for a relaxed informal wedding or if you just want to feel unstructured and comfortable. Next on our list was queen of the corset Suzanne Neville (stocked at The Bridal Collection); 2016 gave us everything we expect from Suzanne’s collections. Plenty of simple elegant shapes creating silhouettes to die for. Heavy crepes, soft silk tulles and light

as air dupion were in abundance as well as some nods in a different direction too. Sumptuous silk satins adorned with beautiful hand beading, draping and all over sparkle gave the collection a new feel with an air of glamour. Ian Stuart (stocked at The Bridal Collection) never fails to disappoint with his iconic and unique designs and the 2016 collection was no different. Big beautiful ballgowns with 3D flowers scattered cleverly to enhance shape, billowing skirts in printed fabrics and matching cathedral length veils to add to the drama. Caroline Castigliano (stocked at The Bridal Collection) was perhaps where our most fashion forward purchase came from. An overriding theme in the bridal world at the moment is the introduction of bridal separates. Dramatic skirts are being paired with simple ivory camisoles or crop tops – perfect for brides who want to be a little different. Jenny Packham’s (stocked at The Bridal Collection) beaded beauties gave us art deco influence and red carpet looks while there were also some simple grecian styles with metre upon metre of silk chiffon creating beautiful movement and interest.
Sassi Holford (stocked at The Bridal Collection) is a staple in our boutique. Brides love the wearable styles that still give a beautiful shape. Sassi’s new 2016 collection features classic ballgowns in soft silk organza skirts, delicate beaded lace fit and flare shapes and some real show pieces, including a fabulous high low hem and detachable tie back box jacket. However, the sensation is often unpleasant and can cause considerable worry or distress. If your symptoms persist or are associated with symptoms such as breathlessness or dizziness then you should initially consult with your GP who may arrange for you to have an electrocardiogram (ECG). This records the electrical activity of the heart and whilst it is often normal in patients with palpitation, can sometimes pick up an abnormal heart rhythm or “arrhythmia”. You may also be referred to a cardiologist, often one who specialises in abnormal heart rhythms (Cardiac Electrophysiologist) for further assessment and tests to identify if there is a problem. These may include a 24-hour ECG recording if your palpitations occur frequently or an exercise ECG if your palpitations are triggered by exertion. Other tests such as a cardiac ultrasound (echocardiogram) can sometimes be helpful in identifying patients with underlying structural heart disease. Depending on the cause, palpitations may not require specific treatment although sometimes medication is tried initially. Sometimes a slightly more invasive test called an electrophysiological (EP) study can be performed to identify extra electrical connections in the heart which may cause fast abnormal heart rhythms called supraventricular tachycardia (SVT). If these can be identified then catheter ablation can be performed at the same time. This is often very successful and can offer a cure for many patients.

N
icky Snazell has an international reputation for treating patients with chronic spinal pain and related problems such as sciatica. Patients from around the world seek her help at her two clinics in Staffordshire, where she has treated nearly 10,000 patients. Patients started to call Nicky ‘The Pain Killer’ as she killed their pain, so the name stuck. As a biologist, physiotherapist and subsequently a spinal pain specialist, she has gained nearly 30 years of knowledge to help understand the causes of pain and immobility. Her career has taken her to China, Korea, Canada and many European countries, where she has been privileged to work alongside pioneers in their fields. Her drive to learn and discover better methods was ignited by her frustration, as a child, watching her mother suffer years of horrible back pain. Despite seeing numerous professionals, she was never really helped. Nicky is one of only a few in the world to have reached the highest level of qualification and the first practitioner in the world to be awarded a fellowship from the Institute for the Study and Treatment of Pain. In addition to teaching internationally, she also presents internationally on pain and health with Californian Joseph McClendon, also known for presenting to millions with Tony Robbins. She recently published her first book ‘The 4 Keys To Health’, already rated five stars, in

Hair and Make-Up This wedding season it’s all about the traditional look. The classic sleek and simple hairstyle will always impress, especially if you intend it to be an up-do. Tidy buns with a front-centre parting is a perfect example of this, or, if you’re looking for a twist on the classic style, try a side parting with a twisted French braid leading into a bun. To make it a bit more glamorous, add some sparkles with
glitter or a glittering headband to match your dress. If you wear your hair down, loose ringlets are wonderfully elegant. Pin top sections to the crown and leave a few curls out to beautifully frame your face. For those looking for a more relaxed, woodland look, slipping a garland of flowers on your head for the big day will always be a winner. If you are a believer that less is more when it comes to makeup, subtler colours are for
you. Light mascara, a dab of blusher and a subtle flick of eyeliner will emphasise your eyes without being too obvious. A girly pink, or a neutral peach, for your lip colour also adds to an understated look. However, if you prefer a fuller coverage, darker colours, such as tones of olive, brown and black can be used on eyes with eye liner and mascara to create that feline look. If you’re going for a bold lip to match your eyes, a strong wine or rouge red is the perfect choice.
The Flowers When it comes to the flowers, try to avoid foliage and exposed stems – you don’t want pollen all over everything. Instead, if you’re looking for more subtle colours, without the risk of pollen and staining, choose romantic blooms like orchids, hydrangeas and hyacinths in creamy, low-key colours. However, the just-gatheredfrom-the-garden look has been popular with brides recently, and this trend doesn’t look like it is going anywhere anytime soon. Go with this theme if you’re looking for something a bit more edgy. Try ferns, blowsy roses, even acorns. Perfect for a wild touch against the sophisticated background.
The Entertainment Entertainment is important when it comes to the big day, but, don’t worry, you don't need to go all out. Ask around for recommendations and go with what ideas that were enjoyed at weddings you have been to. But remember, it’s your special day, so opt for something you will enjoy and, if you're happy and having fun, your guests will follow suit. If you want a classic, sophisticated look, you could go for a string quartet, which would create a calm feeling to your wedding breakfast and reception.There is also the traditional wedding disco to think about for the celebrations later on. If you want something a little unconventional, why not hire a ceilidh band, which will get everyone on their feet learning new dances. What better way to end your special day than with all your friends and relatives dancing together?
The Cake When choosing the cake, matching it up with the season will always be a crowd pleaser. Fruitcake, or hazelnut flavourings for autumn weddings with elaborate decorations are always popular, as is a chocolate or praline cake with typical royal icing, or white-on-white for winter. If it is more of a spring or summer wedding, light-but-tantalizing flavours such as vanilla, lemon and carrot are always good choices, with ombré decorations to hint at the flavours underneath.

The Dress The dress is the main feature. It’s the thing any girl dreams about when thinking about getting married— and it’s the main thing that is going to make you look spectacular on your wedding day. Continuing with last year’s theme, beautiful lace is still very much on trend and once more it can rise high up to the neck or simply trail gracefully along the arms and/or back. It’s elegant everywhere. The romantic and sweet off-the-shoulder necklines are the hottest new necklines of the year, which completely fit a graceful, slightly bohemian bride. P
ure white waves break on golden sands, palm trees provide shade from the blazing sun, you gaze into your partner’s eyes and utter those precious words... if this sounds like your dream wedding then going abroad is definitely for you. On the other hand, language barriers and the fear of coming home to find that your marriage isn’t legally binding are probably things you would much rather avoid. Nevertheless, over 850,000 couples are expected to shun rainy England for nuptials in the sun this year. The main reasons for this trend seem to be lower costs, fewer guests (though you do run the risk of alienating distant cousins) and being able to combine your wedding with your hen/stag do as well as your honeymoon. So how easy is it to plan your big day compared to closer to home?

Getting married abroad The best place to start if you’re organising a wedding abroad is to contact a travel agent. Winter, beach and luxury weddings are just a few choices, making this a slightly more challenging decision than simply choosing the local village church. Once you’ve decided what sort of wedding you’d like and where, a good travel agency should do the leg work for you, making it almost as easy as saying ‘I do’. A wedding coordinator is usually included in the holiday wedding package price and, being based in your chosen hotel or resort, they come fully equipped with expert local knowledge and information about the legalities of getting married abroad. You’ll be safe in the knowledge that you won’t come home to discover you’re still officially single. Some guests may not be able to afford flights, but it may well be that a smaller wedding of 15-20 close family and friends is preferable. By marrying abroad you may even choose to be generous, partially funding some or all of your guest’s flights. Many guests treat a wedding abroad as a holiday, creating a week-long wedding celebration they and you will never forget. However, it is worth considering whether spending an entire week with family is your dream start to married life. So just how much will a wedding abroad set you back? Packages differ in cost depending on where you go, how long you go for and what is included, but the following two examples show how inexpensive they can be. A wedding package available in Mexico including flowers, wine for 40 people, dinner for two, couple massages, a minister and the marriage certificate in the local language starts from £769. A wedding package for Disneyland Florida including a six-hour limousine service, organist for the ceremony, violinist for the reception, a two-tiered cake, champagne, photographer and flowers, starts from £3,500. Of course, there will probably be additional costs, but with reports of the average UK wedding totalling £20,000, it’s easy to see why weddings abroad are proving so popular.
Case Study 2: Kelly recently married Jonathan Mann at Halifax Hall, Sheffield Did you ever consider getting married abroad? I would have considered it but Jonathan wanted to marry in Sheffield so we could have a big wedding and all our family and friends could come. What do you think are the benefits of having a British wedding? We were able to plan everything ourselves and could view venues easily. It also meant we could use companies that we knew were reliable. The flowers were arranged by the same people that my sister used for her wedding. Did you have any concerns about getting married in Britain? I suppose the weather is something you can never guarantee here, but it couldn’t have ruined our day. When we were having our photographs taken it drizzled a bit, but we really didn’t mind; it’s all just part of it. We had some gorgeous weather on our honeymoon in Florida – as well as some tropical storms – and had a fantastic time.

Case Study 1: Lucy recently married husband Damian Read in Marmari, Greece Why did you decide to marry abroad? A lot of our friends had already got married in Sheffield and there are only so many available venues in the area. We’d always discussed getting married abroad and just wanted something a bit different. How did friends and family react? My mum was a bit concerned at first because it’s a big ask for people to come away for a week when the wedding is only a one-day event, but it was nice because it ended up just being prettymuch all family. Was there anything you had to consider special? We had to think about dresses and outfits, because of the weather, and I was a bit nervous about not being able to view things beforehand like you would in England. You also don’t arrange a lot – like booking flowers, hair and makeup – until you’re there. But we’d been in touch with the wedding coordinator by email beforehand, and they do weddings every day, so we had faith everything would go to plan.
Getting married at home So what are the advantages of having a wedding closer to home? The obvious bonus is that you can have a larger wedding in which the majority of your family and friends can attend. Often when a couple marries abroad, they feel obliged to host an at-home reception too, to include those that weren’t able to make it. This adds a big cost onto what might have started as a cheap wedding – pointless when you could have held the wedding at home in the first place. For those who choose to stay at home but still want an alternative to the traditional church or registry office, there are many options. Grand stately homes are particularly popular, as are more relaxed outdoor weddings, but if you want to go for something a bit more unusual, how about a shark aquarium or a whisky vault? Unsurprisingly, these offbeat options come with a hefty price tag; a Yorkshire castle costs over £5,000 to hire, and a woodland wedding over £4,000 depending on the add-ons. Wedding planners in the UK cost around £1,500-2,000 depending on the size of your wedding. Though they do come with a lot of expert knowledge and can guide you through every step of the process, ten to 15 per cent of your wedding budget is a lot to spend on one person.

T
here is no doubt that Hazlewood Castle is steeped deep in an interesting history and romantic mystery. From a compelling mention in the Doomsday Book, to its use as a maternity hospital, a mere glance at its rich and varied past is captivating. The grandeur of the grounds that speak of times long since past, coupled with the elegance of its modern amenities and the beautifully landscaped gardens are truly breathtaking. Hazlewood Castle has been in the Vavasour family since Norman times and it is this fascinating family that has given the castle so much history. Its absorbing past includes royals and politics, persecution and religion, romance and recklessness. It is a story spun from adventure and mystery, of life and death and everything in between. The castle has seen kings and queens rise and fall, uncovered plots, heroic heroes and strong heroines. In fact, the Tudor tower, which was built in 1509, was offered to both King Henry VIII and James I as a gesture to appease these powerful kings, but whilst King Henry VIII accepted the gift, James I declined. Instead, James I is reported to have send a portrait of himself to the residents of Hazlewood Castle. They promptly destroyed it as he had offended them by his rejection of their tower. However, just two years later a member of

the Vavasour family arrested Guy Fawkes in the cellar of the Houses of Parliament for trying to kill King James I in the Gunpowder Plot. The history is, no doubt, the most remarkable element of the castle, but it also boasts many other interesting features. After an extensive restoration, Hazlewood Castle opened in late 1997 and now offers elegant private rooms, luxury accommodation and award-winning dining in an idyllic rural
location. Whilst retaining a relaxing, tranquil atmosphere in a historic setting, Hazlewood offers an inspiring venue for mid-week or weekend breaks as well as weddings, meetings and events all set in an exclusive estate in picturesque Yorkshire. “As a teenager I often had a stall myself and my mum encouraged myself and my brother to get used to buying, selling, customer relations and mental arithmetic great training for life. Mum also had a shop in Otley, where I helped out and learned a great deal about antiques.” Helen went on to study a BA in political studies and an MA in communication studies at The University of Leeds then worked for a number of businesses including a recycling agency and a marketing agency, before returning to the family business. She is therefore highly business-minded as well as having expertise in antiques. With help from her husband Ben, who has run small businesses for most of his working life, and highly-organised administrator Karen, Helen and her team have a strong sense of fairness and excellent customer service. Their reputable stall-holders each have their own specialist knowledge of antiques, too. Bowman fairs play host to specialists in
Clarice Cliff ceramics and other pottery brands including Burmantofts, which was made in Leeds in the 1890s. The events bring together an array of truly marvellous things, from 200-year-old furniture to deco lighting. “We set out to achieve the largest and best quality antiques event in Yorkshire and northern England and indeed we have,” says Helen. “There’s an exciting atmosphere at our events. Unassuming it may be, but behind the purple door is a trove of Thai delights waiting to be discovered.
A
traditional English village is not the usual breeding ground for exotic Eastern restaurants, but it appears that Thai Jantra has been welcomed by Boston Spa with open arms and mouths. Perhaps the fact that the restaurant is a joint venture between both Thai and English food enthusiasts is the reason locals love it so much. Even the surroundings are an interesting combination of the two cultures, as the restaurant is based in an old, cottagestyle coaching house, yet is beautifully furnished with Thai wooden panels, golden stag statues and vases full of lilies. The great thing about local restaurants is that the staff get to know their clients, and as my partner and I took our seats, I saw a waitress having a friendly chat with a group of regulars. Wanting to opt for something authentic, I started with the Som Tam (a famous northern Thailand salad). The cooling tomato, carrot and bean salad had an interestingly contrasting spicy lime and chilli dressing and was topped with crunchy nuts, making it the hottest and one of the nicest salads I’ve ever tasted. My partner’s beef skewers (Nur Yang) came with a gorgeously sweet satay sauce, and both starters were impressively presented with potatoes carved into roses and flowers nested in our salads.

For mains, my red curry (Geang Phed Nur) curry had a tangy and saccharine peanut flavour similar to the satay sauce, with a slightly spicy aftertaste. Filled with generous slices of tender beef and bamboo shoots, I couldn’t get enough. My partner’s mild yellow chicken (Gaeng Garee Gai) reminded me of a thinner, Thai take on the korma with its coconut flavour, only made more exciting with chunks of pineapple and potato. Combined with sticky jasmine egg fried rice and sweet pad thai-style noodles mixed with vegetables and topped with chopped nuts, this was an aromatic feast for two, and what better drink to wash all this sweet and spicy food down, than a couple of bottles of bitter and refreshing Tiger? We finished off with two frozen desserts served in tall knickerbocker glory glasses, topped off again with gorgeous flowers. My partner’s was filled with two creamy scoops of coconut and pineapple ice cream, while mine was filled with two bright and zesty scoops of mango and lime sorbet. If you like piña coladas (and getting caught in the rain – sorry couldn’t resist!) then you’ll love the coconut and pineapple ice cream. So the next time you think about driving into a big city in search of the best Thai restaurants don’t overlook your local town or village. There may be a hidden gem waiting to be discovered within a traditional English setting.

I
s there really such a thing as healthy fast food? At Nourish Restaurants in Leeds, eating is believing. It all started when nutritionist and cofounder David Stache noticed a gap in the market. “There are often conflicting views about what is healthy, so I was commonly faced with people who were confused about what constituted a good diet,” he says. “I also knew people who made poor diet choices owing to a busy lifestyle, little time and a lack of places to go.” David and his business partner Ben Pryor, who is a personal trainer, opened their first Nourish store in Sheffield in October 2013. With David’s eight years of nutrition expertise and Ben’s experience in the fitness industry, combined with chef Rich Pryor’s fascination with food, the store has gone from strength to strength. Almost two years on, the founders have expanded the business with an even bigger and busier store in Leeds city centre. The branch only opened in July, but has already attracted a loyal following and has firmly adopted its sister branch’s values of being nutritionally balanced and community driven, with a focus on engaging and educating their clients. Nourish offers meals to meet every dietary need, including gluten-free, wheatfree, vegan and vegetarian options. They also provide seasonal menus with an autumn menu new for September featuring a wholesome beef stew, gorgeous soups, including sweet potato, and an irresistible squash curry. As well as serving up delicious hot

breakfasts and lunches, Nourish is also committed to helping clients in the long term. From 1 September, the Leeds branch will offer 20-minute diet consultations and meal plans. The consultation will establish any vitamins you may be lacking and a bespoke meal plan will be tailored to meet your needs, including recommended powders and supplements to support a balanced diet. So whether you are an athlete after highenergy, low-calorie meals or just want to take more care of your general wellbeing, there’s a plan for everyone. Starting at £25 per day, Nourish take all the stress out of sourcing
ingredients and cooking by providing all your meals. Nourish is also a company with a conscience and has recently launched a Pay It Forward Tree project at their Leeds store. Customers are encouraged to buy a meal for someone in need and to write it down on an post-it note which is then stuck on the tree. Someone less fortunate can then pick a meal from the tree for free. There has been a great response so far, with as many as 20 meals being attached to the tree at once. David and Ben support the South Yorkshire Housing Association project and the Pay It Forward scheme is particularly aimed at helping the homeless. They plan to introduce Nourishing Schools that cover the key areas of healthy eating and sustainability, with classes that help people connect with food by discovering how it is produced. Delivery vans will soon be launched, meaning Nourish will be able to reach more people than ever before. A
ll chefs love having new toys to play with, and at Fire Lake Grill House the kitchen crew have the ultimate foodie plaything at their disposal – a Josper grill. This cunning kitchen devil is first and foremost a grill but it also has a front door which, when closed, ensures that none of the flavours or natural moisture escapes. It’s probably the hottest indoor barbecue available and the menu utilizes it fully with a tempting range of wood-and flame-cooked or wood-smoked dishes. Situated in the Radisson Blu Hotel in Leeds city centre, this ultra-smart contemporary restaurant is basking in the buzz of a recent renovation that retains some of the landmark building’s art deco touches with a thoroughly modern dining area and cocktail bar. There is an open kitchen where that Josper has pride of place, just to provide an extra touch of theatre in a venue that very much wears its sense of humour and pride in its local roots on its sleeve. Look out for the striking image of Leedsborn actor Peter O’Toole, looking impossibly

handsome relaxing at Cannes film festival a few decades ago; and play spotthe-reference while scanning a cocktail menu that gives name checks to the Rhubarb Triangle and Ilkley, and yet more famous names with local links such as the Bronte sisters, Mel B, Alan Bennett and Jeremy Paxman – now there’s an unlikely set of drinking companions to ponder. Speaking of cocktails, in such a striking venue it seems the only civilized way to start an evening; we slipped into a comfy booth and allowed the mixologists to work their magic. A Peppered Shepherd – a revamped Caipirinha with extra ingredients including pureed mango and black pepper – and a Dirty Leeds Martini – Fire Lake’s signature cocktail which pays tribute to the boys from Elland Road and their reputation back in the 1970s for competing in a robust manner – gave us the opportunity to relax and take in our surroundings. The food menu is hearty with imaginative touches in both ingredients and food presentation; spaghetti in tomato sauce comes in a ‘hipster tin’ while mixed green vegetables are served in a jar. So far, so alternative, but while everything is stylishly presented it’s the gutsy flavours that really impress. We began with two stellar starters – juicy mussels in a rich, sticky sauce of onions simmered in Samuel Smith bitter with flame-grilled lemon focaccia; and fired melting crab croquettes, which were a winning combination of crab, smoked ricotta and tomato in a crisp, crunchy shell with wild garlic chutney. For main courses we could not resist the ‘cooked on coal’ section of the menu; this was where the Josper really came into its own. North Sea prawns, salted and smoked with sweet potatoes and sauce vierge, were supremely tender and savoury; while a dry short loin steak, served with bloody mary

tomatoes, whole salted shallots and fat fries, had all the classic smoky flavour you’d expect from a great barbecued hunk of fine quality meat. The wine list includes some familiar names and a number of ‘curveballs to get the mind going’, to quote the menu. We chose to step into the unknown and were rewarded with a crisp, refreshing taste of Austrian Weitgasse Gruner and the bold and spicy Tilia Bonarda from Argentina. Desserts were taken in the cosy low-lit lounge beside a real fire, comforting even in the height of summer, and a sharing plate of sweet goodies including a splendid ginger cake with liquorice ice cream was the perfect way to round off a memorable evening.

This is the country life! Stephanie Burns discovers a very special rural retreat full of historic charm at the Black Swan in Helmsley.
I
t is impossible to pick just one highlight of The Black Swan experience. From the beautiful food to the huge, comfy bed - even its location in the heart of the quaint, chocolate box village of Helmsley nestled on the edge of the moors – each component in its own right is worth the trip to this little corner of North Yorkshire. Together, they make something really rather special. My partner and I arrived on a balmy Friday evening and, from the moment we stepped off the market square into the fourstar hotel, we began to relax. Crooked dark oak beams, sweeping staircases and winding corridors – from which, every now and then, you glimpse a view of the pretty tiered garden – ensure charm and character greet you at every corner of the 500-year-old hotel. After a quick freshen up, we headed downstairs early to enjoy aperitifs and canapés in a cosy corner of the Cygnet bar while perusing our dining options. Though tempted by the six-course tasting menu, we were won over by a la carte dishes such as seared foie gras with Black Swan granola, mango and foraged herbs; butter-poached halibut with turnip, pak choi, black garlic and shrimp sauce; and chocolate delice on the a la carte. Even before our chosen starters were served in the three AA rosette restaurant, The Gallery (named in keeping with the original artwork that adorns the walls), we got a taste of the kitchen's superb talent. A flavoursome amuse bouche of beetroot jelly with shrimp and pine nuts and a warm slice of walnut bread were the kind of little extras that made the evening even more memorable. This was an excellent start to the meal, and things only got better. From my light, refreshing Yorkshire heritage tomato starter

(who knew such a simple ingredient could be transformed into such a beautiful plate of food?) to my partner’s hearty grouse with the tastiest sherry game jus to that indulgent chocolate dessert, complete with praline, honeycomb and a wonderfully sharp passion fruit sorbet – we savoured every last bite. A special mention must also go to the magnificent cheese trolley. Early on, I spotted a fellow diner making her selection from the huge choice on offer and I couldn’t wait for my turn. With great difficulty – and with a helping hand from our waiter – we whittled it down to just five cheeses. Served with crackers, chutney and grapes, it was the best possible way to end what had been a truly delightful meal. Thankfully, nothing further was required of us for the remainder of the evening than ordering a nightcap from the bar and navigating those winding corridors back up to our room. We arose early the next day for an indulgent breakfast of French toast brioche with caramelised bananas and maple syrup – a sticky, sweet delight of a dish – and eggs benedict. After a gentle stroll around the village, checking out the castle ruins and the many little boutiques that sprawl out from the main square, we made our way home. But with so many more nooks and crannies to explore – not just in the hotel but the village beyond – it almost certainly won’t be long before we return.

Rosemary’s recipe for happiness With her cookery school, recipe books and TV appearances celebrity chef Rosemary Shrager tells Stephanie Burns why she revels in her packed schedule.
T
his summer, Rosemary Shrager has headlined the Great Yorkshire Show for the seventh year running, travelled the country with the Cake and Bake Show (appearing at the Harrogate event in June), and demonstrated at all manner of other food festivals. It’s fair to say that she is very much in demand. What you may not know is that, all the while, she has been running her very own cookery school, which opened in Tunbridge Wells, Kent, in May 2013. And it’s this – which keeps her away from the spotlight, teaching both amateurs and professionals how to cook with confidence – rather than any media booking, that she describes as the highlight of her career. “I love teaching the everyday person who wants to learn to cook and, if people embrace it with me, I give them two-fold back,” she says earnestly. “The school means the world to me. All the work I’ve done and all the things I’ve given up, to end up with this, there has been meaning behind it.” It’s from her home in Wadhurst, Kent, that Rosemary is speaking to me. She answers the majority of my questions with an assumed exclamation mark: when did you first get a taste for cooking? “oh my god, when I was a little girl!”, do you come back up to Yorkshire

often? “oh my god yes, I’m up there all the time!”, how hard is the life of a chef? “oh my god, it’s tough, I used to work 18-hour days!” I can imagine her sitting back in her chair, phone pressed to her ear with one hand, the other making wild gestures through the air as she speaks. Enthusiasm comes naturally to Rosemary and it’s easy to see how the 64-year-old found fame (though she hates the term celebrity, preferring “got well known for what I did” instead), and has managed to hold onto it for nearly two decades. Of course, her passion for cooking began many years before she first appeared on television and her journey to success has not been an easy one. Born in Buckinghamshire in January 1951, she enjoyed cooking as a child but as she got older chose instead to study architecture and soon landed a job in London. It was while

Having taught herself how to cook – and making everything in Mastering the Art of French Cooking by Julia Childs in the process – she gave up her career to work with food. Sadly, it wasn’t all plain sailing and shortly after opening her own restaurant, her life fell apart. The restaurant closed, her marriage to affluent barrister Michael Shrager broke up and she was left with nothing. But she soon picked herself back up and began making waves in the industry once more. Her most notable professional

accomplishments include working for Pierre Koffmann at the three Michelin star La Tainte Claire in London, as well as a stint with JeanChristophe Novelli. Between 1998 and 2002, she was head chef at Amhuinnsuidhe Castle and ran cookery courses for many a keen student before setting up in Yorkshire, where she led a cookery course at Swinton Park for ten years. She still misses the north. “I loved the Dales and I had a lovely relationship with all the local suppliers. Coming down to Kent was definitely the right move but it couldn’t have just been anywhere – it had to be special for me to make a move away from Yorkshire.” Rosemary first appeared on the small screen in 2000, with a six-part series for Channel 5 called ‘Rosemary – Castle Cook’, and she released her first cook book of the same name the following year. They were to be the first of many and she continues to release new shows and books to this day. But it wasn’t until Ladette to Lady – the 2005 ITV1 show that took wayward girls and transformed them into members of polite society at a 1950s-style finishing school – that she really entered the public consciousness as the firm-but-fair cookery tutor. While the audience laughed along at the girls’ lack of social graces, however, Rosemary was battling a moral dilemma. “I found it quite difficult because we’re all caricatures and we all have faults – but who are we [the tutors] to dictate what people should do? We’re not really that special. We’re the same as them but we’re a different tribe, that’s all it is. I just wanted people to feel good about themselves.” The show ran for six seasons, including an
Australian version, and Rosemary’s caring attitude shone through on screen. Seven years later, in November 2012, her celeb status was cemented when she appeared on junglethemed reality show I’m a Celebrity Get Me Out of Here. Finishing sixth out of 12 contestants, she’d won her place in the hearts of the nation and has no hesitation in describing the experience as life-changing. “It was the most amazing experience and I felt really privileged to have been asked to go there. It tested me and told me I was not a bad person and that I could learn to be with people that I didn’t like. I didn’t try to be attention seeking or play a game, I just went in there to be myself. I even didn’t take any herbs, spices or salt in with me!” While she’d never do Big Brother – not without a very generous fee, anyway – she would embrace almost any other reality TV that came her way. “I wouldn’t do anything

Set aside to cool. 3 Place half the pastry on a lightly floured work surface and roll it into a circle about 30cm wide. Transfer it to a lightly buttered baking sheet. Brush the perimeter of the pastry with beaten egg yolk, then pile the chicken mixture in the middle. Roll the remaining pastry into a circle about 36cm wide and place it over the filling, sealing and crimping the edges. Cut a circle about 10cm wide in the top, but leave it in place: this will act as a lid. Brush the whole surface with the remaining egg yolk. Bake in an oven preheated to 180ºC/Gas Mark 4 for about 50 minutes, checking that it’s not browning too much, in which case lower the heat slightly.

Transfer them to a large bowl and set aside to cool.

Should I make a will or not? Asks Paula Myers, solicitor at Irwin Mitchell.
M
ost people will have had sight of the recent press coverage on the Ilott v Mitson case which is a Court of Appeal decision awarding an estranged adult daughter, one-third of her mother’s estate, despite the mother’s wishes for this not to happen. The Will left the entire estate to charity and this was vigorously defended by them at a great cost. This has led to a number of people questioning whether they should make a Will at all and whether they really have a choice in what happens to their money once they have passed away. To put this into context, it is important to highlight that most Wills are regular and valid wills that are not contested and allow us to leave details of our last wishes for our friends and family to follow through. This can extend to whether we wish to be buried or cremated, who gets the family heirlooms and who receives the money, property and investments. This is the best attempt to speak from the grave and explain to our loved ones what we want to happen on our death, without this, there is no guidance and everyone will have their own view on how assets should be treated and divided up. My advice would always be to prepare a Will and to review and update it every five years or after a change in the family circumstances, such as a marriage, divorce, birth of children, retirement, change of job, buying of property or relocating, especially if this it to another jurisdiction. In addition to this prepare a letter of wishes explaining what you want to happen and why, talk to family members and friends to make sure that your wishes are made clear and are understood. If

you decide to leave money to charity, explain why and highlight your rationale for the gift – this could extend to their particular cause or a regular donation of funds to them during lifetime, so that it can be established that there is a link to the charity or organisation. Over 60 per cent of us still do not have Wills in place and most of us do not know what will happen on our death or are under what turns out to be a misapprehension that our loved ones will be provided for and looked after in the way we would expect on our death. If there is no will at the time of death, then the law decides who will inherit. Spouses, children, parents and siblings are included in that list but interestingly, cohabitees are not included and have no form of automatic protection available to them if there is no Will in place. In those circumstances, cohabitees would have to seek advice and consider bringing a claim for financial provision under The Inheritance (Provision for Family and Dependants) Act 1975. In the recent reported case, the mother effectively disowned her daughter who had eloped with her boyfriend when she was 17 years old. That boyfriend later became the husband and father to their five children and they remained married some 25 years later. The mother’s estate was worth around £500,000, in the main because of a substantial death in service benefit from her husband’s premature death. There were no other children or family members and the mother left everything to charities, with whom she had no connection during her lifetime. The Court of Appeal awarded the daughter one third of the estate which the judges felt allowed her to purchase her local authority house and have some capital to supplement her benefits. The
Court took a practical view of this case and highlighted the importance of family relations. It is also important in this case that the financial circumstances of the daughter were fairly modest and this was probably a main factor for the Court in making this decision. There are a number of cases where children are successfully disinherited from their parents’ estates for whatever reason and where Wills are not challenged. We do not have a system of forced heir ship in this country and so other than a moral obligation to children and an expectation on their part what they might inherit from parents, there is no obligation to provide for them and we have a freedom of choice to leave our money to whoever we like. However, this recent case highlights how risky it is for a parent to completely disinherit a child and in these circumstances, it might be worth considering leaving them something in order to prevent future litigation. For those bringing these claims, this is certainly a helpful case which demonstrates how the courts are viewing such claims. For those defending, this is something to be very wary of and needs to be considered carefully before becoming embroiled in litigation and trying to defend such claims. mongst the most recent comments made by the Department for Education regarding early years education, the call has come for more formal, structured learning in England’s nurseries and playgroups in order to better prepare children for formal school. The Department has gone further, however, and has advocated school-based nurseries as the best place for this because they expose the children to an educational environment rather than that of a day care setting. But is this borne out by the reality? Take, for example, the nursery provision at Gateways School where children begin their education at two years old by experiencing the Early Years Foundation Stage curriculum. The Gatehouse Nursery is a purpose-built environment for two-year-olds, much like any other nursery should be. It is a place where children can learn, explore and investigate in a safe and nurturing environment. Upon entering the Gatehouse it is clear to see the appeal to the little ones. The use of space, resources and activities are set up so that little ones stumble from one learning opportunity to another without realising it. Experienced and knowledgeable practitioners are on hand to support and encourage their learning and development. They know each individual child and offer quality learning experiences. Carefully planned and structured learning opportunities are delivered by a team of quality early years professionals. A seamless transition occurs when children enter reception class. They are ready for the next stage in their education and are fully aware of the expectations, having witnessed them on a daily basis throughout their time in pre-reception. They are eager to get going, having already absorbed much of what happens in reception class due to their close proximity with the reception suite. The reception suite offers a wealth of challenges and experiences to promote a love of learning and an attitude to achieve. Being part of a school means everyone wears a uniform and has lunch in the dining room. They all use the sports facilities, dance studio, theatre and acres of outdoor space;
facilities which are simply not available to a stand-alone nursery. This all contributes to a child’s confidence, self-esteem and sense of belonging. At Gateways, children are not cocooned in their environment, rather they are awash with opportunity for stretch and challenge. They know very early on in which direction they are heading and embrace the opportunities without hesitance. The Early Years Foundation Stage is a respected educational model worldwide. It supports and values the importance of early education and the dividends this pays. That way you won’t leave having forgotten what you wanted to ask. Try to find out about the learning style. Ask questions to find out about their general school experience. What is their opinion of the food? What school trips have they been on? This will give you a real insight into the daily life at the school, and the quality of experience your child might have. 3 Look out for notice boards: What feel do you get about the community life of the school? 4 Pay attention to the general atmosphere: Do the staff and pupils look happy?. This will give you an insight into the relationships within the school.
5 Talk to the head: The head’s personality and values are crucial as these shape the ethos and culture of the school. It is vital that you ’click’ with the head. If you can’t speak with them at an open day, arrange to go back at a later date for a chat with them. If this is made difficult by the school, run for the hills. Yorkshire youngsters jumped for joy on results day at Queen Ethelburga’s Collegiate. Last year QE College was ranked 7th in the independent boarding schools’ league table, drawn up by the Sunday Times. It is the top school in the North of England and its impressive results this year should guarantee a high ranking again.
“It is another great results’ day and we are extremely pleased for our students, not just because of their grades but because they will now go on to study at some of the most prestigious universities in the world,” added the Head of QE College, Dan Machin.
