This year’s event is bigger and better than ever with an additional focus on the region’s blossoming drinking scene, and new categories to encompass the welcome recent explosion of micro-pubs and wine bars. We are also looking for a much greater involvement from Southside readers, as we ask them to help us make the big decisions in all the major categories. As in previous years we’ll be revealing all the winners at Baldwins Omega. It will be the end of an era for this legendary Sheffield banqueting venue which closes for the final time a few weeks after our awards dinner on Monday 4 June. We know that standards of food and

region’s finest eateries we’ll be publishing our shortlist of the best venues in all categories, from best contemporary restaurant to best pub. Once the shortlists are revealed, we’ll be asking our readers to have their say on the best in each category. We’ll add up the reader votes, put them with our judges’ own views and come up with the best of the best. Sounds a bit like how the voting works on Strictly Come Dancing, doesn’t it? Seafood special FISH FIGURES PROMINENTLY ON A MENU THAT PROVES THE TICKLED TROUT HAS UPPED ITS GAME, WRITES CHRIS WILSON. aving grown up in and around pubs, and then served his restaurant apprenticeship working alongside Michelin-starred high flyers such as Gordon Ramsey and Marcus Wareing, Chris Mapp was always ideally suited to the tricky balancing act that involves simultaneously running a gastro pub and a restaurant. After a very successful last few years as chef patron at the Tickled Trout in Barlow, it seems Chris feels confident enough to ring the changes, and the recently revised menu looks decidedly more gastro than pub. The excellent selection of real ales is still there, and while steak and chips is off the menu, if you do fancy a good old carb-loaded plate of comfort food, burgers, pies and pizzas will satisfy that need. But elsewhere there are some lovely, flamboyant touches on a very wellconstructed menu that will appeal to seafood lovers in particular. The Tickled Trout is a versatile venue; there’s a lovely sunny conservatory as well as the restaurant, but on a bitterly cold Saturday lunchtime with sleet lashing the windows we bagged a seat in the lounge close to the roaring log fire. We began by sharing a portion of lightly fried whitebait with a pot of tartare sauce for dunking (£7.95). This is a dish I’ve fallen out with over recent years, but memories of too

much greasy batter and not enough seafood fragrance were banished by this lovely appetiser. For starters I selected one of the new dishes labelled as ‘something special’, a bold claim that was justified with a flourish. Cornish cod brandade (£8.50) was a quail’s egg covered in cod, fried in the crispiest breadcrumbs and served with a light curry sauce and seaweed. On looks alone this dish was a stunner, and cutting into it revealed a perfectly runny yolk, and a heavenly combination of tastes and textures. Our other starter of arancini (£7.95) was a real crowd-pleaser, with crisp parmesan risotto squares and truffle mayonnaise. Two seafood main courses really played to the Tickled Trout’s strengths. The Cornish catch of the day (£17.50) was a dazzling concoction of sea bass fillets, dashi foam, samphire, mushrooms, mussels, roasted fennel and dauphinoise. From the fresh flakes of white fish to the crispy skin and intensely savoury foam, this was cooking of the highest order. The Looe day boat fish (£17.95) was equally complex, perfectly balanced and a joy to eat. Cod, butternut squash, brown shrimps and Fowey mussels worked together beautifully. A portion of salty skinny fries (£3) may have seemed out of place in such high class company but we thought we’d best

check the basics were not being neglected. With such a strong emphasis on fish you’d expect a good selection of white wines and a fresh and fruity Picpoul Plo D’isabelle (£7.95 large glass) was the ideal choice to accompany this seafood spectacular. Desserts included one of my all-time favourites, caramelised apple tarte tatin (£11.95 to share) and the Tickled Trout version, served with clotted cream and vanilla ice cream, was as sticky, salty-sweet, chewy and moreish as I could have wished for. The Tickled Trout has really upped its game and if you like high end cuisine in a relaxed, friendly setting, it must rank among the very best. It proved to be the perfect venue to stage our inaugural Young Chef of the Year event in 2017. The cream of the region’s young culinary talent came together and really wowed the judges with some first rate, inventive virtuoso cooking. Entries have already started coming in from young hopefuls across the city and we are putting out panel of judges together now. Once again our judging panel will be headed by a legend of the Sheffield restaurant world,

Mick Burke. Mick taught thousands of college students the fine art of cooking in his role as senior chef lecturer at Sheffield College. He retired last year after 37 years during which he passed on his skills to generations of young chefs who went on to have great careers in the kitchens of some of the finest restaurants in the land. The Westside/My Fathers Heart Young Chef of the Year competition is a great opportunity to shine a light on the next generation of kitchen superstars. We’re looking forward to seeing what the best young talent out there has to offer, and giving all four finalists, a boost by placing them in the spotlight. The results will be announced at the Westside Restaurant Awards on Monday 5 June 2018, an event which is fast becoming the Oscars of the local restaurant scene. So now it’s down to the head chefs and restaurateurs across the region to nominate their young kitchen stars for this prestigious event. We’ll be contacting restaurants across the region in the next few weeks, reminding head chefs and restaurateurs to get involved. But don’t wait to be invited. The Peacock Inn Cutthorpe Andy Clark: Head Chef I have worked at the Peacock Inn for four years, serving up a range of food varying from pub classics, such as beer-battered cod chunk, to modern British food like the brisket and marrowbone suet pudding. Before I came to the Peacock, I was the head chef at the Dragons Fold restaurant in Chesterfield, having studied catering at college after leaving secondary school and falling in love with every aspect of it. I was inspired by my grandmother, who was a fabulous cook, she taught me a lot of the techniques that I still use to this day and I love coming up with new dishes. On a normal day in the kitchen, we all arrive around 9.30am to prep for service, which starts at midday, and we have a fantastic team, so everything is completed to a very high standard. My advice to aspiring chefs: if you have a strong work-ethic, a creative mind-set and positive attitude, you’ll go far in this industry. The Tickled Trout Jack Butler: Sous Chef I started out in my career as a kitchen porter at Sheffield’s Owlerton Stadium, before catching the chef ‘bug’ and working in various restaurants and hotels. I took to being a chef naturally, enjoying the artistic creative side but also the old school tough love military side of learning. And I love the ability to travel, meet new chefs and share their stories and recipes. As well as having the freedom to express yourself and watch people enjoy your creations. A typical working day for me starts by taking notes of any incoming deliveries or those to be placed, greeting all the staff and grabbing a cup of tea. Then it’s straight into prep for the day ahead. My advice to aspiring chefs: work hard, listen a lot and learn from your mistakes – you will make them, but it is all part of the fun. I’m also a keen reader of top chef and foodie books and find it very rewarding as it gives you a marker to drive towards. Learn from them, open your ideas, and remember, every chef draws on influences from other chefs. As the green shoots of spring are popping through the ground, racing enthusiasts from across the country are getting ready to don their racewear for the official opening of the UK flat turf season. The gates open at 12noon and the racecourse will formally start the flat season at 13.50pm, with seven races throughout the afternoon. OUR WINNER Tesco Finest Salted Caramel Egg 310g, £9 A smooth Belgian milk chocolate base with creamy milk and white chocolate. Both are sweetened with crunchy caramel pieces and enhanced by a hint of sea salt... With a description like that, we were salivating before we’d even opened the box. The egg is split into two halves, so you can enjoy the best of both. As we split this thick and decadent egg in half, a few members of the panel even let out some “oohs” and “aahs”. The salt beautifully balances out the sweet caramel and chocolate, it’s an impressive size, well-presented and is egg-cellent value for money. The fact that we couldn’t help going back for seconds, was also a strong indicator that this was the best of the bunch.

This was such a work of art, it was a shame to behead it. But we were soon rewarded with smooth Swiss milk chocolate, which was easy to break up as it bent rather than snapped, therefore avoiding pesky crumbs – well, it would be a shame to waste any. Green, green grass NOW IS THE TIME TO START GETTING YOUR LAWN IN SHAPE FOR SUMMER. iving your house a spring clean is a popular activity this time of year and your garden deserves the same attention if you want it to look its best. When we do venture back outside, though, we are often faced with overgrown shrubbery and under-loved lawns, and bringing your garden back to life can seem like a daunting task. But it doesn’t have to be. As the weather gets milder, now is the perfect time to give your lawn some much needed TLC and keep it healthy and weed free in the months ahead. The milder winter means your lawn has probably continued growing all year and could have done with attention a little earlier than usual. First things first – it pays to take care of any bare patches that may have appeared. The best way to deal with them is to carefully rake the patch and then sow some grass seeds mixed with a little top-soil. It’s important not to let the seeds dry out, so remember to keep them well watered and you should see some sprouts appearing within a few days. Grass needs as much direct sunlight as possible to stay healthy and green, so raking up

any dead leaves and twigs is another important job and can be a great way to get the kids involved and develop their ‘green thumbs’. As a rule of thumb, the first dry and sunny day in March is the ideal time to give your lawn its first cut of the year. Cutting the grass too short, too soon, can attract unwanted weeds and moss, so to avoid that happening, make sure you use the highest blade setting on your lawnmower. Special fertilisers are available to use at this time of year to give grass the essential nutrients it needs to grow strong and give it a vibrant colour; these seasonal treatments have been specially developed to work in cooler temperatures. Spring weather conditions tend to result in a flourish of young weeds, and selecting a treatment that includes a herbicide can help to control brood-leaved weeds such as daisies, clovers, dandelions and buttercups. Once you’ve carried out basic maintenance on your lawn, it pays to plan ahead to prevent all your hard work in the spring going to waste, and to guarantee a beautiful lawn you can enjoy all summer long. Hotter weather and dry spells over the

summer can lead to your lawn turning yellow and drying up, but there are some really effective treatments out there that can help keep grass greener for longer, such as the Oasis treatment from local lawn care specialist GreenThumb. The surfactant attaches itself to the molecules in the soil to conserve any moisture, helping to reduce the amount of watering needed. Where soil type is mainly clay, which is common in the Sheffield region, the amount of water needed to keep grass green can be reduced by up to 80 per cent, so you can spend less time watering and more time enjoying your lawn. Local jewellery company supports Whirlow Hall Farm Sheffield young people with special needs given Alternative Educational Provision thanks to Freemasons The work of Sheffield charity Whirlow Hall Farm Trust has been given a boost by a £12,000 grant from the Yorkshire West Riding Freemasons. The grant will support the Trust’s programmes which help young people with complex learning and behavioural difficulties reach their potential through engagement with the outdoors. Whirlow Hall Farm Trust’s ‘Whirlow LIFE’ programme helps young people with learning disabilities or other additional needs fulfil their potential by offering an alternative approach to education and development, one that combines learning with outdoor, hands-on activities. Ben Davies, chief executive at Whirlow Hall Farm Trust, said: “We’re grateful to Yorkshire West Riding Freemasons for this very generous grant, which will allow us to help young people face their challenges and develop vital life-skills. It really will help them make the most of their potential.”

St Luke’s Hospice needs your clothes for Lent Westside’s publishing manager Sam Warsop knows what she’s giving up for Lent… and she’s supporting a great cause at the same time. Local fine jewellery company Roseanna Croft Jewellery, proudly supported the Whirlow Hall Farm Trust in February by creating a bespoke piece for their charity Masquerade Ball at Baldwins Omega. The piece was designed especially for the occasion, inspired by The Phantom of the Opera’s ‘Masquerade’ and the intricate patterns often found on Masquerade masks. The piece was handmade in sterling silver with a unique white topaz and sparkling black sapphires. It helped to raise around £2,000 as the prize for the opening game on the evening. more evident than at our annual Celebrate Chesterfield event taking place later this month. Celebrate is one of the largest business events in the area, attracting up to 300 delegates each year. I love the event; there is always a buzz in the room and a collective air of excitement for the town. This year, the breakfast event will include an update on many upcoming plans and developments for Chesterfield, including the hotly anticipated Chesterfield Waterside development which will progress significantly in 2018. We’re a small town with big plans that are really starting to take shape. Our ‘city thinking’ was perfectly embodied by the Chesterfield Observation Wheel, which the town hosted over the past month. High profile locations such as Liverpool,

Hyde Park, Leeds, and even the London Olympic celebrations had previously played host to the wheel, and I was proud to see Chesterfield now on that list. Another reason to celebrate in Chesterfield this month, is National Apprenticeship Week (5-9 March). Naturally, we celebrated in our own unique way with the launch of the brand new Apprentice Town website to support this innovative project in Chesterfield. I am passionate about apprenticeships. They will play a key role in the town’s future workforce. With all the upcoming developments and trade and tourism potential that they will bring, comes the requirement of a skilled workforce – and apprenticeships can offer this. Apprentice Town is the perfect vehicle to raise awareness and interest in an area that has previously been misunderstood and under-represented. With all of this, we are not only sowing the seeds for a successful 2018, we are also looking further into the future and securing our place as a thriving town in which to live, work and socialise. We must remember though that you reap what you sow – and growth on a large scale such as that in Chesterfield takes care, time and attention.
