Deftly focused on fit, quality, styling and detail, each piece is a work of art inspired by three of the designer’s passions: old films, coffee table books and music. I managed to grab a quick phone call with Ian at the beginning of the year as he was putting the finishing touches to his 2016/2017 collections – due for release in April – to discuss the highlights of his illustrious career. In his line of work, days are anything but typical. In and amongst the designing, his time passes by in a whirlwind of meetings with fabric suppliers, modelling agencies, sales agents and jewellery designers, all the while cataloguing and storyboarding the fabrics, laces and trimmings he collects along the way. Days after we spoke, he embarked on one of his regular fabric-finding missions in Hong Kong, China and Taiwan. From a young age, Ian was given a taste of a more international lifestyle than many children are. He was born in Holland in 1967 before moving to Manchester when he was five. Growing up, he adored theatre and the arts and almost signed up to acting school. Instead, he studied design and graduated with a fashion degree from Berkshire College of Art and Design in 1989. Before the course had ended, he had already been snapped up by David Sassoon of

Bellville Sassoon – a Chelsea-based couture company that has counted Jackie Kennedy, Audrey Hepburn, Elizabeth Taylor and every member of the royal family except the Queen among its loyal clientele over the years – and chose, accordingly, to specialise in wedding dresses for his final project. “It was a practical decision,” he admits. “I really wanted to do theatrical costumes but I realised that at that time there wasn’t that much work in it. Wedding dresses and eveningwear were the most similar things.” At the age of 25, he secured a job at Sweetheart Gowns – in his words, ‘a big cheesy American bridalwear company’ – where he worked for ten years, winning Wedding Dress Designer of the Year in the USA – a major achievement for an English designer – in the process. In 2002, having moved back to London, Ian set about creating his eponymous company along with fellow designer Peter Tague. “We converted a spare bedroom in the house, started up very small, made a collection, went to show it at a show in Germany and got a full order book. At that moment it [went] from being a dream into ‘this is really tangible and we now have to finance these orders and put them into production and actually make these dresses’. So it made it very, very real.” The Collection Designed by Ian Stuart launched the following year in West Dulwich and has since earned Ian the Bridal Designer of the Year award five times. “Seeing [my own company] get off the ground was a really proud moment because I felt that finally I was free and I didn’t have the restrictions and constraints that working for another company has.You only have to answer to yourself.” Ian’s dresses aren’t for every bride; it takes a strong personality and style to pull off his more daring designs. ingredients, burst onto the bridal scene in 2011 and was an instant hit. Such was its success, it featured in the 2014 wedding dress exhibition at the Victoria & Albert Museum alongside dresses worn by Kate Moss, Dita Von Teese and Camilla Parker Bowles. His latest collections, while still heavily featuring this signature style, have travelled in a more demure direction, with 1950s-inspired short styles and dresses with smoother, cleaner silhouettes. They latter may look easier to make than their frothier counterparts, but Ian admits they were even more challenging. “Those dresses look the simplest but they’re actually the most difficult because the draping is so complicated and the dresses are so plain, you can’t hide any mistakes with decorations,” he admits. In April, he’ll no doubt wow yet again with a new shape of dress that would look as good down the aisle as it would on the red carpet. Alongside these Oscar-worthy designs, he’s also been experimenting with some interesting fabric and lace combinations. And his love affair with colour continues with some multi-coloured pastel creations that only he could pull off with style. Unsurprisingly, given his passion for theatre and music, Ian’s favourite job is presenting these new collections and showcasing them with a good dose of his trademark flamboyance. “There’s always a runway show that’s just happened, then there’s the next one to plan ahead for so that’s constantly on my mind,” he says. “I love perfecting that. I love the whole presentation of it, from the music to the set design to the styling of the models.” Since 2007, these shows have not only featured his bridalwear but also his muchloved occasionwear collection Ian Stuart London. And it is these two pillars of Ian’s

career that led him to launch his first flagship store, Blewcoat, last June, which was officially opened by the man who gave Ian his break, David Sassoon. Whether brides are shopping at Blewcoat or one of the boutiques hand-selected exclusively by Ian to stock his dresses – or, indeed, when buying any wedding dress – Ian is outspoken about his dislike for online wedding dress shopping and implores every bride to visit a boutique to find the right style rather than scouring the internet. “You need to be able to see what you’re going to buy in reality and you need to be able to look inside it and know that it’s got the correct construction that’s going to flatter your body,” he says. “When a girl goes into a bridal salon, she’s given expert advice by the sales consultants that will give her guidance and help to eliminate the dresses that are not working for her. The internet is not going to be able to fit you in the dress and do your alterations. It’s not going to advise you on

bridesmaid colours and how to pull it all together. I think it also ruins the whole experience for the bride because it’s a oncein-a-lifetime thing and it should be a pleasurable experience.” For a man who has dedicated his life to ensuring women look and feel their very best on one of the most important days of their life, it’s easy to see why he remains so passionate about doing things the right way. And still, no matter how many brides have sashayed down the aisle on their big day in an Ian Stuart gown, the designer has never tired of seeing it happen. “I feel really happy and proud that somebody had so much choice but they ended up getting one of [my dresses] when there are so many other ones to choose from,” he says. “That feeling when you see someone in one of your designs, it never goes away.” Visit www.ianstuart-bride.com to find your nearest stockist.

Something old, something new Just where – and why – did our modern wedding traditions originate? Phoebe Seymour delves into the past.

A

h, white weddings. Traditions such as the gorgeous dress, the towering cake, and walking down the aisle are what a brides-to-be’s dreams are made of. It may sound like a cocktail for the perfect wedding ceremony now, but if you got hitched a few hundred years ago when these traditions were in their infancy, you’d probably find them less than romantic. From warding off evil spirits, to stopping runaway brides, here are just a few of the reasons why we celebrate weddings in the way we do.

ORIGINS OF MARRIAGE So, why do we get married at all? The concept of marriage is about 4,350 years old. Anthropologists believe that before then, families consisted of large groups (around 30) of loosely related people, with several male leaders sharing a number of women and children. As hunter-gatherers started to settle into civilisations and nurture the land, they wanted smaller and more stable family units. Marriage’s primary purpose was to bind women to men, and guarantee that a man’s children were truly his. The first recorded marriage ceremonies between one woman and one man date back to 2350 BC, in Mesopotamia. Over the following several hundred years, marriage evolved into an institution recognised by the ancient Hebrews, Greeks, and Romans. Interestingly, marriage had little to do with religion or love to begin with. Love became a motivating factor during the Middle Ages, whilst marriage was accepted as a sacrament by the Catholic church in the 8th century. Marriage was then written into canon law at the Council of Trent in 1563. It was only later that the western world started adopting the wedding traditions we know today.

THE WHITE DRESS WESTSIDE 44

Contrary to popular belief, the white dress wasn’t chosen to represent the purity and innocence of the bride, but became fashionable after Queen Victoria wore white for her wedding. Victoria (the trend-setting Kardashian of her time) wore a plain white dress to marry Prince Albert in 1840 simply because she liked the colour. But, she wasn’t the first... Mary Queen of Scots wore white to marry Dauphin François of France in 1558. However, this was considered scandalous at the time, as white was traditionally worn by royal ladies in mourning. The veil and train, on the other hand, originated in Roman times. Roman brides were swaddled from head to toe in a gigantic flame-coloured veil called the flammeum as it was believed its fiery appearance would scare off evil spirits. Similarly, bouquets used to contain garlic and dill, and bridesmaids wore similar dresses to the bride to confuse and ward off evil spirits. The veil and train also prevented brides from running away from their grooms – and vice versa, as the bride’s face would usually only be revealed to him at the end of the ceremony.

CHALLENGING TRADITIONS Some of our wedding traditions are so well established in our society, we forget about the loopholes and how fluid marriage laws can be. Here are a couple of examples of wedding customs tipped on their heads:

LEAP DAY According to an old Irish legend, St Brigid struck a deal with St Patrick to allow women to propose to men. The catch? They could only do so every four years on Leap Day – 29 February. Many women still think men should be the ones to do the proposing, but we say don’t wait for permission. Be a leading lady... and don’t forget that there’s one this year!

There are several possible reasons why we have tiered wedding cakes. In Ancient Rome, bread was broken over the bride’s head to bring the couple good fortune and in Medieval England, cakes were stacked as high as possible for the bride and groom to kiss over. From the mid-1600s, a bride’s pie was served at most weddings. It was considered rude and bad luck not to eat it. This was eventually replaced with a bride cake made of plums or fruit cake, symbolic of fertility and prosperity. Two cakes were then made – one for the bride and one for the groom. The groom would have a fruit cake which was usually smaller than the brides, whilst the bride had a simple pound cake covered in white icing. And this is where the trend-setting Queen Vic comes in again. Sugar was very expensive, so icing really showed off the social standing and wealth of the family. When Victoria used white icing on her cake, she coined the term Royal Icing. The first modern, tiered wedding cake appeared at Prince Leopold, Duke of Albany’s wedding in 1882.

SOMETHING OLD, NEW, BORROWED AND BLUE This tradition is believed to date back to 1898 and comes from an Old English rhyme which says, “Something olde, something new, something borrowed, something blue, a sixpence in your shoe”, all of which are lucky charms carried by the bride on the big day. Something old represents continuity; something new offers optimism for the future; something borrowed symbolises borrowed happiness; something blue stands for purity, love, and fidelity; and a sixpence in your shoe is a wish for good fortune and prosperity, although this last tradition does not seem to have stood the test of time. In return, guests were traditionally given five prettily-wrapped almonds to represent fertility, longevity, wealth, health and happiness as favours. Nowadays, we tend to use anything from the classic sugared almonds, to CDs, to lottery tickets.

MEN WHO MARRIED MEN You may think gay marriage is a new concept, but you’d be wrong. Roman Emperor Nero, who ruled between 54 and 68AD, twice married men in formal wedding ceremonies. Homosexual weddings were common in second and third century Rome, but worried many people including social commentator Juvenal, who pointed out that male “brides” would never be able to “hold their husbands by having a baby”, and the Romans outlawed formal homosexual unions in the year 342. It’s taken over 1600 years, but same sex marriage was finally legalised in the UK in 2014.

Meet the newest members of our team We are delighted to announce that solicitor, Bradie Pell, has joined our highly regarded family law team. Admitted as a solicitor in January 2011, Bradie graduated from the University of Sheffield with a degree in law and criminology (BA Hons). She also undertook her LPC at the university. Bradie initially started her legal career whilst still at university, when she worked as a clerk at a criminal law practice. She then became a paralegal in the field of crime in 2006, but moved to work in family law after she found she enjoyed it during her legal training contract. She took up a dual role as a police station representative and family lawyer in 2010, which she continued until September 2014. Since this time, Bradie has specialised purely in family law. Bradie has over 5 years’ experience of dealing with the whole spectrum of legal issues that affect families, including divorce, separation, finances, injunctions and children matters. She has worked throughout South Yorkshire during her career in which time her empathy and dedication to her work has led to a loyal following of clients. Head of Graysons’ family law department, Sandra Russell, says: “I had the pleasure of training Bradie in family law during her training contract and am delighted to welcome her to our team now. She has also won £1.2 million compensation for someone who had a partial amputation following a motorbike accident and £15,000 for a child who suffered a serious arm injury in a soft play area. The special anniversary lunch at the Cutlers’ Hall was hosted by Lyceum Trust chairman David Heugh, who spoke about the theatre‘s history and recalled that back in 1984 the theatre was in grave danger of demolition or being turned into a nightclub. Breaking new ground

S. Anselm’s continues to forge new paths, providing the best possible environment for their pupils.

F

ollowing local, and its own, tradition of innovative and landmark developments, S. Anselm’s School in Bakewell is forging a new path with its pioneering College. The College opened in September last year, making use of the school’s unique facilities and providing GCSE education in an area where there was no other independent GCSE offering. In an increasingly diverse society children are under pressure, more than ever before, from all sides. Education must also adapt and S. Anselm’s is meeting the challenge with enthusiasm. The College has taken inspiration from the local area and each year group has been named:Year 9 is Kinder,Year 10 Derwent, and Year 11 Arkwright. From the very first Kinder Trespass in 1932, to the training of the Dambusters at Derwent, and the Industrial Revolution, which spawned

Arkwright’s inventions, the area has a rich history of innovation and determination which has shaped it, its people and S. Anselm’s. With the low pupil-to-teacher ratio and authentic relationships with the staff, pupils have the opportunity to explore their subjects in great depth and breadth. For example, a science-initiated water dipping session at Burbage Brook, one of the local bio-diverse rivers, not only gives them the opportunity to assess the water from a scientific viewpoint, but also incorporates historical and geographical learning. Meanwhile, maths is used to accurately assess the results, providing informative, stimulating and challenging situations for all talents. As with the rest of the S. Anselm’s community, the pupils not only learn in the classroom, but through diverse activities. From visiting the Victoria and Albert Museum in London for the shoe exhibition and

returning to make their own shoes in their textiles sessions, to having weekly tennis lessons and gaining their scuba qualifications in the indoor school pool, every activity is a learning opportunity. They are encouraged to be adventurous and absorb knowledge through many different media. An overnight visit to the University of Oxford, exploring the Wilberforce Museum and the opportunity to trek the Santiago di Compostela pilgrimage route in the Spanish Pyrenees are just some of the opportunities on offer. These enriching activities give the children the tools they need to greet new situations and unfamiliar environments in the future with confidence and vigour. S. Anselm’s Nursery, Pre-Prep and Prep School are also buzzing for 2016, with excitement about what lies ahead. The drama production this term is of Fantastic Mr Fox followed by A Midsummer’s Night’s Dream in June to celebrate Shakespeare’s 400th anniversary. Alongside iPads in the classrooms, a ski trip to France, House pancake races, a choral tour of Salzburg and a whole school House Shout (singing competition) this term is sure to be full of fun, learning and stimulation all the way to Easter. Additional homes to be subject to higher Stamp Duty The government has announced that, as of 1 April 2016, purchases of additional residential properties (such as second homes and buy-tolet properties) above £40,000 will be subject to a higher rate of Stamp Duty Land Tax. There will be some exceptions to this, including the purchases of caravans, mobile homes or houseboats, and corporate investments in residential property, but the majority of additional residential purchases will be subject to the higher tax. Birkdale’s celebrates as 12 students head for Oxbridge Birkdale School is delighted to announce that 12 students have been offered places at Oxford and Cambridge universities this academic year. The awarding of university places is a key focus for all Year 13 Birkdale pupils and the offers reflect many years of dedicated education. A number of the students have been at Birkdale since reception, whilst others joined for their Sixth Form studies. here are only so many rave reviews you can listen to before satisfying the insatiable desire to be part of a conversation. And after hearing so many positive comments about Lokanta, the Turkish restaurant on Glossop Road, a few years ago, I was dying to give it a go. Since succumbing to the status quo (it

turned out to be an excellent decision) I’ve been back several times since. Trust me, once you get a taste for the kind of succulent, gently spiced lamb that the Turks do so well, very few meaty alternatives match up. It’s now a well-established part of the Broomhill restaurant scene, with a traditional menu and contemporary setting that hit just the right notes. On my most recent visit, the rain was lashing down as my partner and I hurried through the doors at 6.30pm on a Saturday night. The first diners of the evening, we were led to our window seat and left to dry off while perusing the extensive menu. Even on a cold and blustery night in early January, rookie diners may have been concerned by the lack of company – but we knew better. By the time we’d chosen our starters and mains it was already beginning to fill up and, when we left a couple of hours later, every seat in the house was taken. Unable to decide on just one starter – there’s a whole A3 side’s worth of hot and cold dishes to tempt you – we opted for the cold meze taster plate. The assortment of hummus, cucumber mint yoghurt, pistachio spread, flame roasted pepper with feta, fried aubergine and tomato salad, cous cous, stuffed vine leaves and stuffed pepper was a delight and the perfect way to put their menu to the test.

Not content with just a multi-faceted starter, my partner chose the mixed grill for his main. I watched in amazement as he polished off grilled pieces of lamb, chicken and halloumi cheese, lamb meatballs, Turkish spicy beef sausage, along with the rice, sautéed potatoes, grilled tomato, pepper and barbecue sauce that come with most mains. He savoured every mouthful and was particularly enamoured of those flavour-packed meatballs. My lamb shish was a more modest affair and great for anyone with a more normal appetite (no offence, dear). Of course the marinated lamb skewer lived up to its own sky-high standards and each additional element – especially that beautifully buttery rice – was spot on. I chose to accompany it with a chilled glass of Cankaya wine and from the first sip could easily see why it’s ‘the best known dry white in Turkey’, as stated on the menu. For dessert, my partner tucked into a refreshing scoop of Turkish delight ice cream by Sheffield’s own Yee Kwan while I enjoyed the real deal. The authentic little cubes were a far cry from the gloopy purple packets of my childhood: firm, flavoursome and packed with pistachios. At the end of another great meal at Lokanta, there was no doubt as to the verdict: another rave review to add to the evergrowing list.

The taste of Sicily Fiona Barber discovers a little bit of Italy’s stunning Mediterranean island in Crookes.

W

ith stunning mountains, a rich history and crystalclear waters it’s easy to see why Sicily is considered as one of Southern Italy’s real pearls. As well as being blessed with nature’s finest, this stunning island – which sits just off the tip of Italy’s boot and is the largest in the Mediterranean – also boasts fabulous food and wine. Given the chance, I would readily hop on a plane and while away a few weeks soaking up the scent of lemon trees, nibbling on arancini and sipping Marsala. But for those of us stretched for time and/or money, or simply don’t fancy the 4,000-mile round trip, we’re extremely fortunate that there’s a taste of Sicily right on our doorsteps. Casanova has been part of Crookes since 1997 and, with quality Italian cuisine, a friendly atmosphere and personal service, it has become a firm favourite with loyal customers. We visited the restaurant one Saturday evening, and were pleasantly surprised to find it had avoided the January slump and was already busy with early evening diners. Despite this being our first time at Casanova, owner Salvo greeted us like old friends – as he did with everyone who came through the door that evening. And, while the welcome is warm the atmosphere is too, with attentive staff (who kept our glasses topped with a smooth full-bodied Cabernet Sauvignon throughout the evening) and a cosy wood and leather interior. Alongside the standard menu, there’s an impressive selection of specials and, on Salvo’s recommendation, I opted for the asparagus with dolcelatte sauce; a wonderfully rich indulgence with crushed walnuts and a refreshing lemon zest. My companion enjoyed a lighter, but equally flavoursome pan-fried mushroom and bacon salad, with parmesan shavings and Italian dressing.

For main course I couldn’t resist the Orata Orientale. Two perfectly cooked fillets of sea bream arrived beautifully presented in a delicious soy sauce with ginger, garlic and chilli, served with vegetables – the ideal lightbut-flavour-packed dish I’d been hoping for. My less carb-conscious companion opted for the tagliatelle pollo and enjoyed a steaming bowl of pasta sautéed with tasty strips of chicken breast and mushrooms, in a mascarpone, dolcelatte and rosemary sauce. This was real hearty comfort food at its finest. Despite my earlier healthy intentions, I threw all caution to the wind when our waitress assured us the tiramisu was the best in England. Although I can neither confirm nor deny this – having not tried every tiramisu in the land – I can say it was pretty damn good, especially with an accompanying Tia Maria. My tiramisu, in fact, was an ideal summary of Casanova as a whole: if they do something, they do it well. As Salvo joined us at our table once again and regaled us with tales of his youth in Sicily he told us: “Working in catering is like being a priest you know; you pour some wine and listen. Just like in confession.”

Seafood special With dishes full of sunshine, The Mediterranean’s tried and tested formula keeps its customers coming back time after time.

S

urrounded by white walls, blue cushions and stained-glass lanterns, sipping a chilled glass of white wine and listening to Julio Inglesias, I can almost feel the sea breeze. Except that I’m not on a beach in Spain or even in the UK, I’m at The Mediterranean on Sharrow Vale Road in Sheffield. And it’s even easier to make believe, as this restaurant boasts an extensive range of seafood dishes on their tapas, specials and a la carte menu. Rachid El Afif, who was a chef for many years before becoming the owner two years ago, assures me that all their fish and shellfish are delivered fresh from Grimsby every day. The restaurant was first opened in 1979 by a Greek couple and its firm reputation as one of the best seafood restaurants in Sheffield means customers return time and time again. Though it has changed hands over the years, the style and quality of the food, as well as the timeless décor, have stayed pretty much the same, as Rachid and his team firmly believe in the philosophy, ‘if it ain’t broke don’t fix it’. Of course, there is far more to Mediterranean cuisine than seafood, so as I tucked into my juicy king prawns covered in

an herby, zingy lemon sauce, my partner ordered the grilled garlic chicken skewers, which were lightly spiced and accompanied by saffron-infused rice. For mains, I had the seabass and my partner had beef fillet Tournedos-Rossini. The fish’s crisp skin was a delicious contrast to the soft texture of the white meat, whilst the mushrooms and shallots had a chargrilled flavour and were drizzled in yet another irresistible tomato, lemon and herb sauce. The chefs were just as talented when it came to creating the French classic Tournedos Rossini. The tender fillet of beef balanced on a moist bread crouton and was generously covered in a thick, rich Madeira sauce. Served with seasonal vegetables, these dishes couldn’t have been more different, and yet they were both undeniably impressive in taste and presentation. into a fresh slice of baklava. Still a little warm in the middle, its sticky crisp layers were packed full of nuts and was served with honey and Greek yoghurt – a real treat. Meanwhile, my partner had the Amaretto ice cream and boy, did that have a kick to it. Whether you are big on seafood or not, the great thing about The Mediterranean is that all of their dishes are bursting with mouth-watering flavours. As a freezing wind continues to descend on Sheffield, I look forward to going back and imagining myself in sunnier climes very soon.

Inspired by boutique health clubs in America such as Soul Cycle and Barry’s Bootcamp, they set out to create a gym experience like you’ve never seen before. The result? TRIB3 on Ecclesall Road. Friends since infant school, David and Ian met infantryman Kevin over 21 years ago. After Kevin left the army he joined Fitness First, becoming national manager where he met Dan. He brought the east, west With ‘Year of the Monkey’ celebrations taking place this month, what better time to speak to the king of Chinese cooking, Ken Hom. Words: Fiona Barber

L

egendary chef and author Ken Hom is known as the man who brought Chinese cuisine to British television back in 1984, with his BBC series Ken Hom’s Chinese Cookery. Since, he has published more than 30 books, has cooked for the likes of Tina Turner and Elton John, was awarded an OBE for services to culinary arts in 2009 and, most recently, launched a range of chilled oriental meals in Tesco. I caught up with Ken as he was enjoying a glass of Champagne at the Dorchester Hotel in London. He had just been for a stroll around Chinatown. “I was just in Bangkok, and I feel as home there as I do here. Home is where your friends and family are. I see the world as my home,” he mused. Ken grew up in Chicago with his widowed mother,Ying Fong (his father died when he was just a baby). “My mum instilled values into me and my Chinese uncle had a restaurant and taught me how to cook,” he reflects. “He was an amazing man; he taught me how to work, what was important, and how to be true to things that you believe in – and not to be seduced by fame or money.” Quite unexpectedly – while he was teaching at a cookery school in California – fame did come Ken’s way. He had met renowned Indian chef and television personality Madhur Jaffrey, who had just finished a series for the BBC. At this point, the BBC had interviewed 52 people over two years, in a search for the right person to present a Chinese cookery series. Jaffrey recommended Ken to the producer and the rest, as they say, is history. “It’s one of those things you think: OK it was fun doing it, but I never imagined it would have the success that it did. It really made my career and my reputation, and here I am more than 30 something years later,” he chuckles gratefully.

Longevity in this business isn’t always plain sailing though, so I wondered what has been the secret to Ken’s success. “I have always been true to my beliefs,” he concludes decisively. “When my series first took off, I was approached by a lot of people to

endorse this and that and I said no, even though, at the time I thought: Ooh the money looks good. But it somehow didn’t feel right. Everything else I have been involved in; the woks and my ready meals, I am really involved in. I’m a real pain in the you-know-what,

because if it’s not good enough, I’m not going to sign off on it. I could have made a lot more money – but who really cares? “I think happiness is really important and to be proud of what you have done. There’s so much rubbish in the world and I don’t want to add to that. I want people say to me: I have a Ken Hom wok from 30 years ago and I’m still using it. That makes me happy.” Throughout our conversation it seems that, despite his success, Ken has remained as modest as ever; when he found out he was receiving an OBE he thought someone was ‘trying to pull a mickey’ on him. It’s also clear that he feels passionately about using food as a way to unite people. “If we all sat down and shared each other’s food and culture, maybe we would not have all these stereotypes and prejudices. If you like Chinese food, you can’t not like Chinese people – it’s the same thing for any other type of food. A lot can get you into trouble, but not food!” It’s at this point I began imagining Ken cooking up a storm on a campfire wok singing John Lennon’s Give Peace A Chance, and he admits: “I’m of the hippy generation, I believe in love. It sounds corny, but that what it’s all about.” With the Chinese New Year on the horizon (8 February) – the year of the monkey – Ken was looking forward to spending time with friends and family and says Chinese New Year is like our Christmas, New Year and Easter all rolled into one. “It’s a time of renewal of

I loved that.” While Ken has cooked for over 55 years there is still nothing he loves more than being in a kitchen trying out new things. “I try to tap into things that I have learned but I’m not

restricted by boundaries,” although he does admit: “I prefer to stick to the traditional methods. A chicken should look like a chicken; it shouldn’t be cubed or a foam, or puréed.” For anyone who hasn’t tried cooking Chinese food before, Ken’s advice is to start simple; a stir fry with vegetables, some crushed garlic, chopped ginger, oil, salt and pepper. “Then let the force be with them!” What kind of force is that? “The force of the wok!” He chuckles again. It turns out he is a huge Star Wars fan. And on that note our time was up. Ken finished his glass of Champagne and went off to enjoy the rest of his evening in London. I drove home with an intense craving for chow mein and silently thanked the man that’s partly responsible for making Chinese food as British as fish and chips. im at the pyramid,” said Dave, my golfing partner in his slow Texas drawl. Were we driving off on an Egyptian course in the sand? Well, we were in the sand but it was more of the Nevada desert sort than the Sahara and the pyramid in question was the Luxor hotel on the Las Vegas Strip. That sums up Vegas – inspiring, mightily impressive, but one step away from reality. And it’s that escape from reality that makes the city such a popular destination with tourists from all over the world, with more than 40 million visitors jetting to the desert destination last year. Vegas boasts a myriad of attractions, from 24-hour gambling to exotic hotels, fine restaurants and sensational shows but one attraction that should not be overlooked is golf. Amazingly there are 52 top quality courses within half an hour’s drive of the airport. Bali Hai club maintains Vegas’ fracture with reality. It is constructed on the famous Vegas Strip with views over an array of “

notable landmarks such as the Luxor and MGM hotels. And yet despite its hard-tobelieve location it has a theme – much like the majority of Las Vegas attractions. This course’s theme is a South Pacific island paradise, which is created by deep blue ponds, brilliant white sand bunkers, lush foliage and imposing palm trees. The theme is maintained by the colonial style luxurious club house with its soft leather seating and palm leaved roofing. The club house provides the backdrop to the 16th, a par 3 of 140 yards playing to an island green, as it does to a very difficult finishing par 4 of 486 yards. Get the ball on the fairway then master a long rescue club flighting the ball first over a pond and then drawing it over a beach-sized bunker. With a little luck the ball might just carry to the top of the bunker and then hop onto the green. Two putts mean one of the most satisfying pars of the trip, especially if a 19th hole gallery is gathered on the veranda. A round at Bali Hai means you’re in good company: Clinton, Obama, Samuel L Jackson,

Adam Sandler and U2 are among a long list of celebrities who have walked the verdant fairways of Las Vegas’ only course on The Strip. Another big name to leave a big impression on a Las Vegas club is Tiger Woods who scorched round Rio Secco in a course record 64. He had been a regular at Rio Secco because his former coach, Butch Harmon, runs a golf school at the club. He was obviously in a rich vein of form as a week later he won the 2000 US Open at Pebble Beach by 15 shots. This is golf in the real Wild West. Fairways are hewn out of the desert with huge boulders and rocks running alongside. It’s the rough, but not as we now it. Fortunately my transatlantic golfing pals informed me that rather than smashing a club and a body we should drop out onto the fairway with a one shot penalty. Can we try that in the Saturday medal please? The course is great fun with a number of very difficult par 3s which involve clipping the ball over ravines onto shallow, cliff-hugging greens, framed by prickly cacti and shrubs. A feature of the course is the number of holes that funnel into small greens below sheer cliffs of rock and boulders. “This is where the Indians would round the cowboys up,” drawled Dave. “There was no escape when they were down there and the Indians would just pick them off.” All the courses in the area are worth playing. They all have unusual features but have one in common: they are beautifully maintained, which is an incredible achievement given the lack of rain (1.81 inches in 2014). Our final course was Bear’s Best, the theme of which is a collection of the best holes designed by Jack Nicklaus. The course again is great fun and shouts Vegas with its collection of different holes just as The Strip itself features a myriad of different themes such as Egyptian, French or Italian. When the sun goes down and The Strip lights up it’s time to savour the attractions of another city that never sleeps. Again, suspend

There’s a pirate ship on one side of the vast boulevard, a gondola on another and further down The Strip there’s a huge hot air balloon. Many of the older, landmark hotels such as The Venetian, New York New York and Caesar’s Palace are theme based but more recently the trend has been to develop more luxury brands such as The Bellagio, Delano and Aria. Casinos are still a major part of these establishments but they now offer more, such as the wonderful dancing

regularly performing. We were lucky enough to see America’s Got Talent winner Mat Franco and his array of impressive card tricks. The show came after a trip on Vegas’ own ferris wheel – The High Roller at The Linq. Bigger than the London Eye, it gave us great views of the dazzling city made even more enjoyable by drinks served at a bar in one of the capsules. If you’re not golfing in Las Vegas there’s plenty to do in the day. A helicopter ride over the Grand Canyon is a must with its spectacular views over the Nevada desert and The Hoover Dam. Take a trip downtown

fountains outside The Bellagio and impressive shopping complexes. Top class dining is also a feature of Vegas with celebrity chefs having venues across the city. Try these for an eclectic selection: Rivea at Delano,Yardbird at The Venetian, Guy Fieri’s Las Vegas Kitchen at The Linq and the Triple George Grill at Downtown Grand – famous for its delicious steaks. Nightlife doesn’t end with a meal: enjoy cocktails in exotic bars such as The Skyfall Lounge at Delano or a show with such stars as Rod Stewart, Elton John and Celine Dion

to the Freemont Street area: a more earthy but vibrant atmosphere than The Strip and home to a one of the best museums I’ve visited: The Mob Museum. Sit in an electric chair, be part of a prohibition trial and find out about Sinatra’s apparent connection to JFK’s assassination. And of course, don’t forget the shopping malls – that’s when reality does kick in.

Fiona Barber finds her feet in the new gastronomic capital of Spain.

I

watched cautiously, suspended in silence, as the newborn calf attempted to wobble to its feet for the very first time. Body quivering, eyes wide and legs bent into dangerous angles that only the youngest of bones can reach. On this occasion though, it wasn’t meant to be; gravity one, calf nil. The scene before me wouldn’t have been out of place on a James Herriot set, but far from the flower-rich hay meadows of the Yorkshire Dales, I was in the dehesa (grasslands) of Extremadura – a western part of Spain that borders Andalusia to the south, and Portugal to the west – surrounded by acres of olive and acorn trees, on an Iberian pig farm. Extremadura is nationally and internationally renowned for its jamón ibérico (Iberian ham) and I’d had my first taste of this delicacy the previous evening, in the tranquil surroundings of the Hacienda Arroyo La Plata hotel. Sat on the restaurant terrace with a glass of red from the nearby Ribera del Guadiana region I watched the rich orange sun sink beneath the banks of the River Ardilai. Perhaps my judgement was swayed by the idyllic setting, but this was by

far the best ham I’d ever tasted. As we explored the rustic fields of La Roma pig farm in a tour-guide-driven 4x4, we learned the secret to really great jamón lies in diet and exercise: the more acorns and walking, the better. The safaris, run by GeoActiva, show every part of the jamón process and so, after meeting farmer Felipe, it was off to the slaughter house and drying rooms just down the road. Here, the jamón is cured in huge rooms filled with salt, dried in several other rooms and finally, sweated in a natural cave. This painstaking process can take up to four years, but the result is definitely worth the effort. It’s not just the preparation of the ham that is important either, but also the way in which it’s cut. Master cutters spend years practising their delicate craft, because the thickness actually affects the taste – the thinner the better. I was lucky enough to not only sample jamón sliced by a master cutter, but also have a go myself. It turned out I was far better at eating than slicing. Cuisine in Extremadura stretches far beyond just jamón though, and there’s no better way to explore what’s on offer than with a guided gastro tour of Cáceres. This

historic hub is a charming old-fashioned Spanish city where you are still offered a pincho (a small snack) with every drink. It’s a wonder how – with its gorgeous old town, art galleries, museums, bars, restaurants and World of Music, Arts and Dance festival – it has remained relatively under the radar. But in 2015, it was elected as Spain’s gastronomy capital, and this hidden gem was exposed in all its glory. We met José from L&P Travel in the bustling old town and he took us to three bars and restaurants throughout the evening. Here, we were treated to delicious pork cheek ravioli on mushroom soil, Iberian ham with pea sauce and puff pastry and a wonderful take on miniature fish and chips served on miso sauce with figs – all matched with the finest wines of the region. Further north, Mérida is home to many spectacular historical structures including a Roman amphitheatre, which dates back to 8BC. Here, crowds of up to 14,000 would come to watch gladiators fight to the death against wild beasts and, although only ruins remain, there’s no denying the majestic ambience.The neighbouring theatre, with its impressive marble pillars, 6,000 capacity semi-circle seating area, and performance stage, has become the most emblematic monument in the city. In the summer – when the stifling heat has subsided – concerts are hosted here, and audiences get to relive a piece of history in the grandstands. It was here in Mérida that I got my first

All you need is love With the most romantic day of the year fast approaching, Phoebe Seymour looks at the origins of St Valentine’s Day.

I

t’s fair to say that Valentine’s Day has become the Marmite of the holiday world. Cynics are increasingly annoyed by businesses that use it as a way to shift cards, roses and other gifts, whilst hopeless romantics look forward to expressing their love for their partners (potential or current) and being showered with tokens of love and attention. Whichever way you look at it, there’s no denying that the love-fest known as 14 February is deeply embedded in our cultural calendars and is here to stay. But who was St Valentine and why do we send each other mushy love letters? Read on to discover the origins of Valentine’s Day and why we celebrate it in the way we do.

The original Valentine When it comes to Valentine’s Day, it’s difficult to attribute its origins to one man. The Catholic Church recognises three saints with the name Valentine or Valentinus, but at least two of these figures have merged over time. According to one legend,Valentine was a priest who served under Emperor Claudius II during the third century in Rome. Claudius had decided that single men made better soldiers than those with wives and families, so outlawed marriage for young men.Valentine however, defied Claudius and continued to conduct weddings for young lovers in secret. In another version of the story,Valentine was arrested for helping Christian prisoners escape harsh Roman prisons, where they were often beaten and tortured.Valentine’s

actions were soon discovered and Claudius ordered that he be put to death. While in jail, he is said to have converted his jailer by healing his blind daughter's sight. Then according to a later version, he is said to have fallen in love with the daughter and sent her a note signed “From your Valentine” – hence why many of us sign Valentine’s cards in this way today. By the Middle Ages, St Valentine had become one of the most popular saints in England and France. Though it is tricky to separate fact from fiction, these images of St Valentine combined to create the heroic and romantic figure we now associate with all things love.

The pagan festival While some believe that Valentine’s Day is celebrated in the middle of February to commemorate the anniversary of Valentine’s death or burial, others think the Christian church decided to place St Valentine’s feast day in the middle of February in an effort to compete with the pagan festival, Lupercalia. Celebrated between 13 and 15 February, Lupercalia was a fertility festival dedicated to Faunus, the Roman god of agriculture, and Roman founders Romulus and Remus. According to History.com, members of the Luperci, an order of Roman priests, would gather at a sacred cave where the infants Romulus and Remus, were believed to have been cared for by a she-wolf or lupa. The priests would sacrifice a goat, for fertility, and a dog, for purification, before ripping the

goat’s hides into strips, dipping them into the sacrificial blood, and then taking to the streets to gently slap both women and crop fields with the hides in order to improve their fertility over the coming year. Some historians have even suggested it was young naked men who walked the streets of Rome spanking the backsides of young women – suddenly the idea of staying home alone on Valentine’s Day with a copy of Fifty Shades doesn’t seem so bad, does it?

The rise of the love letter Valentine’s greetings were popular from 500AD, but it wasn’t until the 1400s that written Valentines appeared. The oldest known Valentine still in existence today is a poem written by Charles, Duke of Orleans to his wife in 1415, whilst he was imprisoned in the Tower of London after his capture at the Battle of Agincourt. Valentine’s Day began to be popularly celebrated in the UK around the 17th century. By the middle of the 18th century, it was common for friends and lovers of all social classes to exchange small gifts or handwritten notes and by 1900, printed cards began to replace written letters – most notably, Hallmark who produced their first Valentine’s card in 1913. Today, the Greeting Card Association estimates that 1billion Valentine’s cards are sent every year, making Valentine’s Day the second biggest card-sending holiday of the year (an estimated 2.6 billion cards are sent at Christmas).

Infinitely better It’s fair to say that the Infinity Q50 has not been a leading light in the executive saloon marketplace. It has lagged behind its European rivals in almost every department and you’d only really choose to buy one if your heart was set on having an Infiniti. Infiniti wants to change this and for 2016 they’ve made some slight alterations with the Q50 so help take the fight to the established European crowd. It incorporates what Infiniti call Dynamic Digital Suspension (DDC) which, when teamed with the newly improved Direct Adaptive Steering, helps the car to achieve a much more compliant ride with ‘class-leading’ driving responses. There’s also a new 400hp twin-turbo 3.0litre V6 to go alongside the existing engine line-up. Available later in 2016.

Smart move

Attractive proposition Gone is the SLK. Here comes the SLC. In essence, the SLC is a major face-lifted version of the SLK both inside and out – it’s based on the same chassis – as well as a renaming exercise to keep it inline with the rest of the Mercedes-Benz product line-up. The SLC is a much more attractive proposition than its predecessor, though the rearend still looks like it was conceived by an American. The interior quality has been raised up a notch too. The engines available range from a 1.6-litre petrol with 156hp (SLC 180) up to a 3.0litre biturbo V6 producing 367hp (SLC 43). It’s even available with a 2.2-litre diesel which is incredibly efficient yet scarily powerful. Available in dealerships from April.

At the beginning of 2016, Daimler AG, the company which owns the Smart brand is releasing a convertible version of its tiny twoseater city car, the fortwo. The ordinary car is by no means the manliest motor on our roads, and the removal of the roof certainly won’t put a stop to that, but it’s so against the grain and so totally honest that it’ll put a smile on your face on every journey. The fabric roof is electrically adjustable and the roof side bars can be removed and stored in the car’s folding tailgate without compromising on available boot space. A 1.0-litre 71hp or 0.9-litre 90hp turbo petrol will be available from launch. Prices start at £13,265, approximately £2,000 more than the equivalent hard-top.
