The spirit of Christmas Estate agents Morfitt Smith are backing a campaign to bring festive cheer to some of South Yorkshire’s poorest youngsters.
A
s we scour the shelves to grab the latest on-trend toy for our children or gift sets for the teenagers in our lives, spare a thought for those who will be waking up to no presents on Christmas Day. One in three children are living in poverty in South Yorkshire – that’s approximately 76,000 children – and this is why Morfitt Smith estate agents has teamed up with Hallam FM Cash For Kids to launch Mission Christmas. All you need to do to help support this cause is to buy one extra present this year. It can be anything from essentials such as clothes and bath sets to toys and entertainment – just make sure they are suitable gifts for newborns, babies, children or teenagers up to the age of 18. If you prefer, you can donate money either online, in person at Cash For Kids’ Herries Road head quarters or you can text HALLAM to 70808 to donate £5. Morfitt Smith are the official drop off point for your Christmas gift donations and with branches in Banner Cross, Hillsborough and Crookes, you’re never far from your local branch. Hundreds more local businesses have
also signed up to become drop off points to make this year the best fundraiser yet. Every Morfitt Smith branch will also be promoting the campaign with a name the bear competition. To enter, just give the bear the best name you can think of and donate £1 to Mission Christmas. The bear will then be donated as a gift. Mission Christmas is an annual campaign, and as usual, the Hallam FM team will be out on their sleigh, spreading Christmas joy to the children of South Yorkshire, collecting gifts from the drop off points and getting involved in Christmas light switch-ons. The Morfitt Smith team will also be getting into the Christmas spirit by helping out at the Cash For Kids head quarters, handing out presents in Christmas fancy dress costumes. The estate agents specialises in selling, but also rent properties all over Sheffield. Joint director and valuer John Morfitt has worked in property for over 30 years and
spends much of his time visiting clients, whilst co-director Paul Batty is in charge of the dayto-day running of the branches. Together, they are dedicated to providing a warm welcome and a personal service. “Christmas is such a lovely time of year for bringing friends and families together and we all remember the excitement of waking up on Christmas morning to find out what presents we have, but not everyone is as fortunate,” says Paul. “Mission Christmas is such an important and worthy cause to ensure that every child has a smile on their face on Christmas morning.” Last year, Mission Christmas helped 17,000 disadvantaged and hospitalised children have a merry Christmas with approximately £750,000 worth of gifts. This year, the team are hoping to reach even more children. If you want to help a disadvantaged child this Christmas, drop your gifts into your local Morfitt Smith branch until Wednesday 23 December. Fossil Fuel Divestment – By Graham Walton “The economic climate has suited ethical funds over the last year, carefully researched and low investment in China due to human rights issues, low exposure to commodities especially mining stocks, and very little exposure to fossil fuel investment have led to ethical funds performing well”, says Graham Walton ethical investment specialist and member of the Ethical Investment Association. One recent theme that has captured global attention has been the fossil fuel divestment campaign. Universities, companies, councils and charities have all been under pressure to move pension investments away from these carbon intensive industries. The Issues – A consensus of scientific opinion agrees that the world is warming and this is largely due to human activity, with global planetary temperatures greater than they have been for 11,000 years. The IPCC (Intergovernmental Panel on Climate Change) has identified a Carbon Budget, above which it would be difficult to avoid the worst effects of climate change. This has been defined as remaining within 2 degrees of preindustrial temperatures. By 2011 scientists estimate that the world had already burnt 65% of this allowable budget. hen you hang tinsel on a Christmas tree, pull a cracker or get merry at the office party, do you ever stop to think about why we celebrate Christmas in the way we do? The Nativity is a huge part of Christmas, but the festival has slowly changed, adapting
to more recent traditions and customs to become the Christmas we know today. And what about our other traditions such as Christmas trees in our homes, the idea that Christmases should be white and the origins of Santa Claus? Where do all these customs come from? Former University of Sheffield lecturer
and author of The Christmas Book, Dr Patrick Harding has been demystifying our festive customs for the past 20 years. In his book, Patrick explains where all these customs come from, but before we get into all the weird and wonderful reasons why we celebrate Christmas in the way we do, let’s start with the birth of Jesus …

The Nativity “The accounts may have been slightly changed over 2,000 years, but what I like to do is see if there is any science to back the nativity story up,” says Patrick. It shouldn’t come as much of a shock that Jesus wasn’t born on 25 December, nor was he born on what we think to be the year 0AD. After much research, Patrick discovered that Jesus was actually born in September 7BC. For Patrick, the most important part of the nativity story is the star, which wasn’t a star at all. David Hughes, an astronomer from The University of Sheffield, introduced Patrick to the idea of triple conjunctions. These occur when Jupiter and Saturn align in the constellation of Pisces, creating a light that would have looked like a bright star. The magi (or wise men) who followed this ‘star’ may have even realised the significance of this rare event, as Jupiter represents the king of the gods, Saturn

signifies the land of Palestine and Pisces is the sign of the zodiac which represents the Jews. Combine this with the fact that one of these triple conjunctions took place in 7BC and that scientists have worked out that
Jesus was born between 8 and 6BC, and this fits Patrick’s theory. “Of course, it sounds silly to say Jesus was born in 7BC, but does it matter? I just look at 25 December as Jesus’s official birthday, a bit like the queen,” says Patrick.

Christmas before Christianity So why do we celebrate Christmas on 25 December? Those who think our customs are all centred around Christianity may be surprised. “The 25th is the most important day for a competing religion called Mithraism,” says Patrick. “If you believe in the teachings of Mithras, your god is the sun and what I find interesting is that the 25th is just after the shortest day. “If you believe god is in the sun, you get a bit upset because your god isn’t getting out of bed very early but as soon as it starts rising again, it means god is still there. So followers of Mithras may very well have looked out the window and said ‘Our sun is risen!’” Roman Emperor Constantine followed Mithraism before converting to Christianity, but the date and many other Christmas customs were carried over from other religious festivals. The Romans would celebrate the god Saturn with a festival called Saturnalia from 17 to 24 December, a time of overeating (saturnus means plenty) and general boisterousness as
well as a time for visiting friends and exchanging presents. Patrick explains in his book, “It was also a time for greater sexual freedom, the latter no doubt stimulated by an excessive consumption of alcohol. The ‘goings on’ at Christmas parties in the 21st century pale by comparison.” Who’d have thought that even our Christmas party shenanigans are a longstanding festive tradition?
Santa, drugs and St Nicholas’s gold Over the years Santa Claus, Father Christmas and St Nicholas have all combined to create one big fat figure in a red and white suit who delivers presents to children. When the Dutch immigrants landed in New York (originally New Amsterdam) in the 17th century, they brought Sinter Claes (or Sinterklaas) with them. He was a legendary figure with characteristics similar to St Nicholas, whilst the idea of Father Christmas started in Germany with the Norse god Odin, who would ride an eight-legged horse through the sky and fill children’s boots with treats. And then there was 4th century figure, Saint Nicholas, who originated in Turkey. “There’s a story about a friend of St Nicholas who couldn’t afford his three daughters’ Â

weddings,” explains Patrick. “So, St Nicholas throws a bag of gold through each daughter’s window. However, the youngest daughter has her wedding in the winter. She shuts her window, so he climbs up onto the roof and drops the final bag of gold down the chimney.” Lapland has also played a huge part. Tribes who made their living off reindeer in Northern Lapland would live in yurts with small openings to let in visitors and let out smoke. When people were ill, witch doctors would enter through these chimney-like entrances and deliver gifts of healing. Patrick also explains why our modern day Santa is represented as ‘merry’. “In Lapland you can’t easily make alcohol because of the low temperatures,” explains Patrick. “But they realised that the red and white mushroom is hallucinogenic and if you take it, you get the feeling that you are leaving your body and flying through the air – ho, ho, ho!” The red and white of the mushrooms may very well have triggered the colour scheme of today’s Santa suit, but it was also Tolkien who influenced this change when he posted Christmas letters to his children with illustrations of a red Father Christmas. Then in 1931, Coca-Cola cemented the idea, with a Santa wearing a red top and trousers with a white fur trim to match their logo, which has captured the public’s imagination ever since.
Just like the ones I used to know As we move away from the nativity story and the meaning of Christmas and its customs changes generation by generation, are we losing sight of what it’s all about? “I always say to people, Christmas never stays the same but I think that’s why it has been so successful,” says Patrick. “Even if we are not Christian we can celebrate it.” Patrick’s years of research have done nothing to take the magic out of his family’s Christmases. If anything, it has helped him not
Wondering where our other traditions come from? Dr Patrick Harding reveals more about our Christmas customs… Holly, ivy and mistletoe – They’re all evergreen and signify the eternal nature of Jesus. The red berries on holly represent blood and the prickly leaves are Jesus’ crown of thorns. Christmas trees – Many German immigrants already put up Christmas trees in Britain and they were used by the royal family 50 years prior to Prince Albert bringing them over from Germany, but after a picture of Queen Victoria, Prince Albert and their children, stood in front of a Christmas tree was published in the Illustrated London News in 1848, the decoration soon became popular throughout British households. White Christmases – Writer Charles Dickens was born into something of a mini ice age in London and his Christmases were always snowy. A Christmas Carol was a huge part of a Victorian Christmas revival and many customs from this novel have survived today. Cranberries – In the 90s, the US had a glut of cranberries left over from Thanksgiving so decided to convince Britain to eat them with their turkeys too. Delia Smith’s popular Christmas cookery book came out soon after and was filled with recipes full of cranberries. Most supermarkets sold out and the fruit became a national hit.
to take this often stressful time too seriously. “My kids have left now. It is important to me and my wife as a family time, but if either of our children wants to go to their prospective boyfriend’s or girlfriend’s families for Christmas, it doesn’t bother us because one of the sad things I find about Christmas now is the arguments and the ill feeling that goes on. “It shouldn’t be like that, it should be a time when people relax and enjoy themselves, eat a bit too much, and drink a bit too much, so we try to be laid back about it.” So what is the true meaning of Christmas for Patrick? “Christmas is a time when the difference between the haves and the haves not is very obvious. I think it is a time when one should reflect on the number of people, especially up north, who are in need of food banks. “I’ve dedicated this book to my father-inlaw, Jack Binney, who was every bit as generous as Father Christmas, and there are a lot of other people who are generous and who give. The thing about St Nicholas is he gave without making a fuss about it. The daughters in the story didn’t know where the gold had come from.” So don’t be a humbug this Christmas. Bask in one of our many festive traditions and embrace your inner Father Christmas. Whatever part or version of the Christmas story you choose to follow and however many years have gone by, the message remains the same; celebrate in style and give as much as you can to others.

MAKE A SPLASH in Switzerland
Dive into the waters of Lake Zürich for a weekend break with a difference, writes Richard Abbey.
B
y definition, a city break is rarely relaxing, more often than not a whistle-stop tour of the best and brightest an urban sprawl has to offer. Jam-packed itineraries usually include arts, culture, shopping, eating, drinking – you even have to find time to sleep amongst all these things to do. So how about a short holiday with a difference? Less than a two-hour flight away, Zürich in Switzerland ticks all the right boxes for a quick getaway; arts and culture in abundance, high-class shopping, a good and varied choice when it comes to eating out and decent nightlife. But there’s one more thing that gives it the X-factor (or should that be Z-factor?) – the lake. It’s the heart of the Switzerland’s largest city in every way. Not only does it dominate the Alpine landscape, it seems to permeate the very lifestyles of the city-dwellers themselves. It’s easy to forget you’re in one of the financial capitals of the world with such an oasis of calm at the centre of it all. At 40km long and 3km wide, there is more than enough room to enjoy yourself and if you don’t fancy the do-it-yourself approach (sailing boat, pedalo, jet ski), a short cruise from

Bürkliplatz with Zürichsee is a good start to any short stay here and a relaxing way to spend 90 minutes. The summer weather and 30-degree temperatures inevitably brings out the best the lake – and the River Limmat – has to offer. In the warmer months they are transformed into a giant urban aquatic park with 30 lakeside and riverside bathing facilities (called ‘badis’) and almost 20 other open-air swimming baths. No other city in Europe has such a high concentration of bathing facilities per capita as Zürich. I used the Utoquai, a stone’s throw from my hotel. It costs 8 CHF (about £5.30) to enter – others are free to use – but for that you get three sun-deck areas (male, female and mixed), changing rooms, showers, lockers, a bar/café and unlimited use of the glorious lake. Torn between climbing in gracefully or bombing off the top diving board, I ended up somewhere in between and landed with a huge splash in the fresh, almost crystal clear water. With a temperature around the 23°C mark, it was delightfully refreshing and such a unique way to cool off. In the evening the badis remain just as popular, transforming into lively yet relaxing bars where you can enjoy a drink, something
to eat or some live music. I can highly recommend the Seebad Enge, which was laid back with great views of the lake (and the opportunity for another swim), while the Rimini bar, next to the Schanzengraben canal, had more of an open-air pre-club vibe. From the badis there are plenty of clubs to choose from. Zukunft in the Langstrasse area of the city, seems to be a popular choice and offers two floors of house and techno music. Heading out of the city a little is the formerly industrial area of Zürich West, the new ‘trendy’ area littered with clubs, bars, restaurants and shops. Frau Gerold’s Garten is an open-air oasis in the heart of the district, uniting a restaurant, shopping, art and a flower nursery. The garden is surrounded by three clubs – Hive, Supermarket and Helsinki. Elsewhere you’ll find the Viadukt, converted railway arches filled with over 50 shops, bars, restaurants and a market hall, and Freitag, the shipping-container home of the niche recycled bag company. Eating out in Zürich is a varied affair; you’ll find restaurants to suit every palate. But if you want to sample some traditional Swiss fare, you’ll need to try the Zürcher Geschnetzeltes, Zürich-style sliced veal served with mushrooms in a cream sauce and rösti

(hash brown potatoes). There’s perhaps no better place to sample this dish than at Zunfthaus zur Waag, a 14th century former guild house, one of 14 in the city. For the uninitiated, the guild houses define the period between 1336 and 1798 when the master craftsmen and traders dominated the political landscape in the city. A French invasion brought an end to their rule but the guilds still remain with many of the old houses being converted to social venues. The Biedermeier-style dining room at Zunfthaus zur Waag is classically opulent, with fantastic stained glass windows overlooking Münsterhof Square. The food is well-cooked and presented and complemented by stunning Swiss wines. Elsewhere I enjoyed the showmanship at the Zeughauskeller, a 15th century former armoury, Restaurant Viadukt and Restaurant Quai 61, whose chargrilled ribs and crisp white Swiss wine were matched perfectly by the stunning vista of Lake Zürich. The standout dining experience during my visit, though, was the Rotisserie at the Hotel Storchen. The building, which dates back 650 years, has a medieval-style dining room and a pleasant terrace overlooking the River Limmat from which to enjoy the restaurant’s homemade pasta (the veal ravioli was delicious) and home-smoked salmon (exquisite).
While it may be hard to tear yourself away from the lake when the weather is so good, Zürich is the perfect base to explore this north-eastern part of Switzerland. Sixty minutes north of the city, and accessed through the town of Schauffhausen, is Europe’s largest waterfall – the Rhein Falls. A boat trip to the centre of the falls (8 CHF) is a must, if only just to take in the sheer atmosphere and noise of approximately 450,000 litres of water cascading down the falls every second. Closer to the city is Uetliberg, Zürich’s mountain. At 2,850 feet above sea level you can access the summit via train, a 15-minute ride from the central station, or walk or cycle one of the many trails that lead upwards. At the top you’ll find an unrivalled panorama of the city and lake as well as those picture postcard snow-capped Alps in the distance. If you’ve worked up an appetite on reaching the top, the Restaurant Uto Kulm serves a delicious buffet brunch with lots of local dishes on offer. The Hotel Ambassador à L’Opera is a more than adequate base for a stay in Zürich. Part of the Small Luxury Hotels of the World group, its location is ideal; behind the opera house and close to the lake, it is just a twominute walk from the Stadelhofen train station, perfect for a short 15-minute
commute to the airport. Its 45 bedrooms lend it a boutique atmosphere. The staff are extremely friendly and courteous while the bedrooms have everything you need for a pleasant stay, from electronically-controlled beds and a ‘pillow menu’ to in-room Nespresso machines and free wifi. The little touches like complimentary mineral water and the ‘apple of the month’ make it feel that bit more personal and homely. At the top of the neo-baroque building, which dates back to 1898, is the most stunning of roof terraces which affords views across the lake to one side and Zürich rooftops to the other. A particularly nice touch was the invitation for all guests to join staff on the roof each Friday evening for a complimentary glass of Swiss wine and barbecue. A delicious hot and cold buffet breakfast is served in the hotel’s Opera restaurant each morning, which is worth a visit if only to marvel at Tatjana Tiziana’s stunning baroque opera-themed mural, which she painted in ten days. It might have 50 museums, 100 galleries, high-class shopping and great restaurants but for me, as much as Zürich has to offer, you can’t help coming back to the lake. With the sun shining, you just want to jump right in.

Kitchen showdown Chefs go head to head in Whirlow Hall Farm charity cook-off.

wo of Sheffield’s finest chefs went head to head in a Sheff’s Kitchen charity cook-off to raise funds for Whirlow Hall Farm Trust. With over 200 expectant diners crammed into the Genting Club restaurant, the heat was on for Charlie Curran, head chef at Peppercorn , and Simon Ayres, head chef at the Cross Scythes in Totley. Both chefs were given identical food parcels containing pork, beef and a selection of vegetables from Whirlow Hall Farm – the working farm on the outskirts of Sheffield that provides children and young people with an experience of farming, horticulture and the countryside. Then it was down to their inventive skills as they were tasked with producing a three course menu that would be voted the winner on the night. Just to pile on the pressure, they were working in an unfamiliar kitchen with a small team, including local college students – and to crank up the competition even further, there was a chillingly realistic Gordon Ramsay
lookalike prowling the dining room. Alternate diners on each table ate the menus produced by either the Red Kitchen (Charlie) or the Black Kitchen (Simon). Having
won this event the previous year, Simon had a lot to live up to. Charlie, meanwhile proved to be a worthy challenger. The real winner on the night was, of course, Whirlow Hall Farm, as the event raised cash and awareness for one of Sheffield’s most valuable assets, a countryside venue that provides a chance for inner city children and those with special educational needs to get close to nature. But when the votes were added up winner, by a whisker, was Peppercorn’s Charlie Curran. His menu of a selection of pork starters, smoked corn beef hash with slow-cooked rib and an assiette of desserts really hit the spot, although with a succession clean plates heading back to both kitchens it was clear that each chef had really excelled himself for this worthwhile cause. This was only the second year this event has been held but it has already become an established favourite on the Sheffield foodie calendar, and with all the chefs involved keen to have another go next year it is clear that the Shef’s Kitchen challenge is set to go from strength to strength.

Looking forward The offering at S. Anselm’s School is all the more impressive thanks to the introduction of a College, expansion and a dedicated extras programme. No wonder the children are described as ‘sunny and polite’.
S
et in the heart of the Peak District, S. Anselm’s School boasts an idyllic countryside setting for children to play, learn and develop. Here, pupils are encouraged to be themselves and achieve their very best. While the school is proud of its tradition and values, it takes a refreshing approach to adaptation and changing times. Most recently, in response to the needs of parents, this September S. Anselm’s opened a College, expanding its age range from nursery age to 16, instead of the current leaving age of 13. The College students have their own kitchen, common room and workspace, to encourage independence and to allow the prep school to keep its identity and permit the younger children to remain children as long as possible. With the College now open, Headmaster Peter Phillips is looking towards future developments. Almost £400,000 will be invested into two areas of the school, one of which will be the science facilities. “Sheffield is known for niche engineering; there is some fantastic stuff going on. Sheffield University is one of the top-rated in the country for it,” Peter says. “We have been looking at what universities expect from undergraduates and we know ICT will play a big part in our developments. It’s going to be very special; we really wish to make it a centre of excellence.”

Peter also plans to transform an existing area of the school into a brand-new learning centre, with a focus on making it user friendly for children with special educational needs. S. Anselm’s already uses innovative technology, such as voice recognition software, to help those with writing difficulties, but Peter hopes the learning centre will offer a much more inclusive learning environment. “There are more and more children who need support with their learning,” he says. “It is something I feel passionately about and want to invest in. The centre will be very carefully worked out in terms of interior and surroundings so that those children are able relax and enjoy learning. We are looking at new methods of teaching, as well as learning through music, through colour, and using sport to develop coordination.”
Peter also hopes that by screening children at a younger age they will be able to identify those that require additional help much earlier. He continues: “I’m trying to get the best out of the children and change the way we teach those with learning difficulties in a truly innovative way.” Additional help is not just available for children with special educational needs. At S. Anselm’s, each and every child receives personalised teaching and is fully supported by the experienced teachers to be the best they can possibly be. Although there is a keen focus on gaining fantastic academic results, the core of the school’s ethos is for children to be as creative as possible in every aspect of their thinking.

Displays of their artistic creativity lines many walls, including a wall of stained-glass panels designed by the children and printed by local artist Jane Littlefield. Alongside a full extra-curricular programme including playing sport every day during the week except Thursdays there is also an extras programme, which allows each child to select an additional three activities for the year. Each teacher hosts an activity of their choice and there is a whole range to choose from including pottery lessons, bridge club, fly fishing, French film club, and scuba diving – where ambitious pupils can work towards their PADI (Professional Association of Diving Instructors) open-water certificate. The extras programme not only offers
pupils a chance to try out an activity of interest, but it also provides a relaxed environment in which the children see a more informal side of their teachers away from the school environment. This allows closer bonds to be formed and makes for more effective learning. In a recent visit, Simon Carder, who has been an ISI Inspector (Independent Schools Inspectorate) since 1992 said: “It’s an exceptional atmosphere with sunny and polite children in a safe and happy environment.” Ultimately, S. Anselm’s is a beacon of excellence where children, their learning and development are central to everything they do. With the new learning centre and science facilities due to open next September there is plenty to look forward to at S. Anselm’s. The school also has many events ongoing throughout the coming months, see box opposite for further details.
• The S. Anselm’s Piano Competition (open nationwide) will take place on Saturday 9 April. • S. Anselm’s writing festival will take place in the summer term, inviting written entries from children everywhere locally and writing workshops open to children from locally maintained schools. At the end of the festival, the stories will be judged and prizes awarded. The prize-giving evening will be a celebration of the work, with music, wine etc – dates tbc. • The S. Anselm’s U9s Football Festival will take place on Wednesday 16 March, inviting all the local schools. Chris Marshall, the lead coach from Sheffield United, will offer some coaching drills and a festival of football matches will follow.

Halloween fun at S. Anselm’s On the night before Halloween, 65 boarders at S. Anselm’s School in Bakewell took part in an exciting zombie chase. Following written clues, the children raced around in the dark on a spooky treasure hunt, chased by zombies (their teachers) intent on stopping the children finding the treasure trove of sweets. Split into teams, some children chose to take refuge in the safe zone where they could encourage all of their friends but not take
part themselves. Others enjoyed the adrenaline-fuelled evening activity, dressing up and enjoying the drama of Halloween. At the end of the treasure hunt, all of the sweets were divided among the children and all calmed down with a cup of cocoa before heading to bed.

Tasty festive treats Impress your guests this Christmas with these seriously classy canapés, courtesy of James Duckett at the Samuel Fox Country Inn in Bradwell.
B
y now, you’ll almost certainly have the Christmas lunch down to a fine art. Perhaps a few exciting additions or side dishes will be introduced to keep things fresh – a sprinkling of bacon with your sprouts, for example – but turkey with all the trimmings is a tradition that many feel no need to break with. No, it’s the other opportunities to wow festive guests that enable you to really show off your kitchen skills – and nothing says ‘accomplished cook’ more boldly than a beautifully presented plate of canapés to enjoy with a glass of something special. Who better to ask for a little guidance in this culinary quest than our 2015 Westside Restaurant of the Year winners – the Samuel Fox Country Inn in Bradwell? On Christmas Day, those fortunate enough to have a table at the now fully booked gastropub will be served this trio of delectable little bites on arrival. One element of a sumptuous five-course menu, they’re the perfect accompaniment to a glass of dry sherry in front of the roaring fire. These quirky takes on classic recipes are part of an eight-strong set of tried and trusted canapés devised by chef proprietor James Duckett, who insists that preparation is

everything when it comes to devising your festive menu. “Christmas is such a busy time for us that it’s essential to start preparing in advance – as early as September – and we encourage amateur chefs to do the same. The best thing about these canapés is that you can make them well in advance, freeze them, and serve as though fresh whenever you have guests.” The brioche’s high fat ratio and the

fritter’s low water content make them ideal for a quick refresh in the oven or fryer straight from frozen. The devils on horseback can be made up to three days beforehand and simply improve with age. All three are fairly easy to make and are not too fiddly – so handling and plating them up when your guests arrive should be a doddle. “It’s about being clever and assessing what you can realistically achieve within your own limits and time constraints,” James continues. “It’s no good trying to make brioche rolls on Christmas Eve when there are a hundred other things to do, because it takes time to roll them nicely. They can also be quite messy so allow enough time and space to really enjoy making them.” If James’ preferred tipple of dry sherry (Fino to be precise) isn’t your bag, he suggests a good fizz – Cava, Prosecco or Champagne, depending on your own tastes – or even something sweeter such as a Floc de Gascoigne. It couldn’t be simpler to impress the foodies in your life this Christmas but if you’d really rather leave it to the experts, there is still a handful of tables left at the Samuel Fox on Christmas Eve and Boxing Day. And if these canapés are anything to go by, you’d be in for a very special treat.

❬ Smoked paprika brioche doughnuts ❭ Pour the milk and yeast into a bowl and stir to dissolve the yeast. Put the flour, salt and beaten eggs into an electric mixer fitted with a dough hook and pour in the milk and yeast mixture. Mix on a slow speed to combine and knead the dough for five minutes.
Scrape down the sides of the bowl with a rubber spatula, then knead at medium speed for about ten minutes. By this stage, the dough should be smooth, elastic and combined well. Meanwhile, in another bowl mix the butter and sugar together. Add a few small spoonfuls of the butter mix to the dough and, with the mixer running at low speed, add the rest a piece at a time.
Makes 30 35ml tepid milk 8g fresh yeast 250g plain flour 1 tsp fine salt 3 eggs, beaten 175g butter, slightly softened, plus extra to grease 15g caster sugar Smoked paprika
When the butter mixture is all incorporated, increase the speed and work for 610 minutes, until the dough is very smooth and shiny and comes away from the bowl with perfect elasticity. Remove the dough hook, leaving the dough in the bowl. Cover with a tea towel or clingfilm and leave to rise in a warm place for about two hours, until the dough has doubled in volume. Knock the dough back by flipping it over two or three times with your hand. Cover the bowl again and refrigerate for at least six hours (but not more than 24 hours). The dough is then ready to use and mould. Roll the dough in 20g balls, using flour on your hands to stop the dough sticking to them. Then place the finished dough balls on a tray lined with parchment paper. Preheat a deep fat fryer to 160ºC then drop about 15 of the balls in the fryer at a time and cook until golden brown, remembering to rotate the balls during the cooking process. Once they are cooked they can be chilled or frozen and quickly refried from the freezer when required. Tip on to a tray with kitchen paper to remove excess grease and dust lightly with smoked paprika. Â

❬ Smoked haddock fritters ❭ Makes 30 250g butter beans 1 onion 2 cloves of garlic ½ tsp ground cumin 1 tsp toasted, crushed coriander seeds 1 tsp grain mustard 100g naturally smoked haddock 50g flour ½ tsp bicarbonate of soda 1 egg 2 tbsp fresh coriander, chopped Zest of 1 lemon
Soak the butter beans overnight in cold water. In the morning, gently cook half of the beans in salted water until tender and soft. While they are cooking, blend the remaining beans in a food processor until they look like breadcrumbs. Remove from the blender and put in a bowl. Drain the cooked beans and blend them until they look like breadcrumbs then add these to the blended soaked beans. In a frying pan, add the chopped onion, garlic, cumin and coriander seeds. Cook with olive oil and salt until soft and transparent, then add to the beans along with the mustard. Poach the haddock fillets in hot water until cooked then drain and flake into small pieces. Add to the beans. Then add the flour, bicarbonate of soda, egg, chopped coriander and lemon zest. Mix thoroughly, season with salt and pepper. Roll into 20g balls and fry in the deep fat fryer at 160ºC until golden brown. If you prefer, place the balls on parchment paper and freeze. When frozen solid, transfer to an air-tight container and keep frozen until required. They are small enough to be cooked from frozen whenever you want. Serve with lemon wedges and lemon mayonnaise.

Makes 30 200g sliced pancetta 30 prunes 30 small sage leaves

On a chopping board, lay one slice of pancetta out flat. Place a prune on the pancetta about 2cm from the edge nearest to you. Place a piece of sage on top of the prune then roll the prune up so it completely wraps the pancetta up several times over. These can now be stored in a fridge for a few days to let the sage leaf marinade properly before cooking. Once you have enough prunes wrapped in pancetta, place them on a greased, non-stick tray in a pre-heated oven at 180ºC and cook until the pancetta has a nice shine and has shrunken tightly to the prune. Serve immediately.

SPIRIT OF CUBA
After blazing a Latin trail in the early noughties, Cubana are now firmly established as one of the top party venues in the city.
I
t was 15 years ago that Cubana burst onto the Sheffield nightlife scene, offering a burst of joyous Havana sunshine on a sleepy back street a short shimmy away from the city centre. Looking at all the multicultural restaurants, bars and music venues in Sheffield, it is easy to take the wide variety of food, drink and sounds from around the world for granted. But it hasn’t always been such a hotbed of diversity, and Cubana was one of the trailblazers that helped breathe new life into Sheffield. Now the salsa venue is celebrating a landmark anniversary… and it is as fresh and vibrant as ever. First unleashed on an unsuspecting public in November 2000, Latin music, salsa dancing, spicy tapas food and colourful cocktails all blended, bringing people together in a fun and friendly setting. Now based in Leopold Square, the Latin beat pulses stronger than ever.

First Steps Co-owner Adrian Bagnoli first got into Latin music whilst visiting a popular Brazilian nightclub called the Maracanã in Florence, Italy. Adrian was amazed by the lively atmosphere and was convinced that this was exactly the kind of night out Sheffield needed. “Back then, the only type of dancing you’d find couples doing would be the slow, smoochy style at the end of the night, in a cheesy nightclub,” explains Adrian. “The only Latin music people knew was The Gipsy Kings and La Bamba. We decided the time was ripe to introduce a bit more culture to Sheffield.” Adrian and friends Toni Dente and Gian Bohan started by launching a Viva Salsa night at local nightclub Club Uropa (formerly Isabellas), booking Brazilian DJ Marcus Vinicius and a live Brazilian band called Viramundo for the opening night. An astounding 700 people attended the first event in June 1996, making Sheffield’s first salsa club night an undeniable success. “This really paved the way for us,” says Adrian. “Calendar News came to cover it and the atmosphere was incredible. It gave us lots of confidence and we started booking touring bands from Cuba and Latin-American bands based in London and Manchester.” The final Viva Salsa took place in May 2000 and it was then that Adrian joined forces with Brad Charlesworth and Kito Morales to open Cubana on Trippet Lane.

I – Trippet Lane Getting the look of the venue right was just as important as creating the authentic tapas dishes and cocktails, so Adrian employed talented architect and close friend Paul Brady, to capture a true Latin vibe. “We offered something different – people felt like they’d discovered something great tucked away on this backstreet in the city centre,” says Adrian. “There wasn’t another tapas bar in Sheffield at the time. “We’d already built up contacts with the Latino community from the Viva Salsa night, so they were on board as soon as they discovered we’d be offering live music.” Cubana had fast become a popular venue for couples, as well as a great place for singletons to mingle. Many long-term couples comment on how they first met or how they had their first dates there – proof that music is the food of love.

One of Cubana’s proudest moments was hosting a night at Music In The Gardens Festival 2010 in the Botanical Gardens. Cubana Live attracted a sell-out crowd of over 3,500 people and helped raise thousands of pounds for local charities. The extravaganza offered some of the most popular Latin artists, including Omar Puente and his band. The group arrived in chauffeurdriven 1957 Chevrolet convertibles and pulled up in front of the stage, before delivering an amazing performance.

Over the years, Cubana have been honoured to welcome many memorable guests. A visit from legendary Cuban band the Buena Vista Social Club in 2007 was certainly a highlight and Adrian was overwhelmed when the band returned after their second Sheffield City Hall gig in 2008. Not least, because the highlight of their second visit was when Buena Vista’s pianist Rolando Luna took up the offer of playing the classic Latin favourite ‘Guantamanera’ alongside the house band on a piano specially hired in for the occasion. “It was just incredible, the place erupted and the atmosphere was electric – it was a very special night,” confirms Adrian. Lady Salsa Once at their new premises at Leopold Square, Cubana was given the ultimate seal of approval when Dr Aleida Guevara, daughter of famous Latin American revolutionary Che Guevara, visited for dinner and posed for a picture underneath the portrait of her father. Other notable guests include Panamanian boxer Roberto Duran, once considered to be the best pound-for-pound fighter of all time, who visited in 2003 and the cast of Lady Salsa Brad and Adrian with following a performance at Roberto Duran (centre) the Lyceum Theatre. II – Leopold Square After 14 years building up a reputation as the most vibrant independent Cuban bar in Sheffield, it was time to say goodbye to Trippet Lane. Adrian discovered the two-level venue, formerly Platillos in Leopold Square, had become available. After a discussion with business partner Brad, they decided the time was right to move. Adrian and his team enlisted the help of local artist Paul Staveley and Paul Brady once again to recreate Cubana’s trademark style. Just four days after closing the Trippet Lane venue, the new Cubana was opened. “The final Saturday night at the old Cubana felt like a New Year’s Eve party; people were looking forward to a potentially exciting future,” Adrian recalls. “We opened with a big party on Thursday 24 July. Over 400 people turned up and it was an incredible atmosphere. We knew right then, from everyone’s reaction that it was going to work.” Now offering two floors for two different nights out, diners can enjoy the cosy upstairs area or party downstairs. Cubana turn over around 300 diners on a Saturday night, many of which stay all night. “You could walk in at 7pm and end up staying until we close at 2am,” says Adrian. “There’s great flavoursome food, courtesy of Chilean head chef Fabrian Cruz who has been in charge of kitchen affairs since day one, exotic cocktails, friendly customer service, chilled-out live music and vibrant music to dance to – all under one roof.” Cubana’s Salsa In The Square has also been a huge success. Since Cubana has taken over hosting the Bank Holiday Sunday extravaganza, attendance numbers have doubled and Adrian looks forward to offering a live Cuban salsa band, salsa lessons, dance demos and more in May 2016. So, after 14 years brightening up Trippet Lane and a successful first year adding a vibrant mix of Cuban flavour to Leopold Square, how will Adrian and his team be celebrating their success? “Of course, there will be a big party, but Brad and I are going over to Cuba in January too,” says Adrian. “It’s such a great place and we’ll get loads of inspiration. Dame for a laugh
Pantomime season is back and sees Damian Williams return to the Lyceum to cause chaos – and (hopefully) lots of laughs. Words: Fiona Barber
B
utch, bold and boisterous; Damian Williams has been causing slapstick chaos on the Lyceum stage as a panto dame for the last seven years. This festive season, his reign continues as he plays Widow Twankey in the fun-packed family pantomime, Aladdin. The demand for pantomime seems to be as strong as ever (last year’s Dick Whittington was seen by over 44,000 people) and Damian believes they remain so popular because it is something the whole family can be involved in. “It is great entertainment and a great family Christmas tradition,” he says. “No other country has got pantomime, and we’re the only ones that do it well, because we’re the only ones that really understand it. A panto is often the first time kids will ever go to a theatre, so it’s quite important.” Damian recalls his Nan taking him to the theatre as a young boy. They went to see Robinson Crusoe with Charlie Drake in it. “I was only five or six but I still remember some of the gags and what the dame did, so it made a big impression,” he admits. Theatre was always something he was interested in and Damian’s first taste of the limelight came aged just 15, in a Bugsy Malone production at his local theatre. This marked the beginning of a long and successful career. He explains: “The guy that directed it ran a rep company and he said to me: when you leave school, if you’d like to go into the business, don’t go to drama school, come and join the rep company and we’ll go on tour. I was taught by him, by watching other actors and I learnt my craft that way. In my first panto when I was 16, I played the ghost in the ghost gag and then after that I started playing villains. I played villains for years and then I got offered the chance to play a dame.” Damian admits the villain is a great role to play, but he prefers the dame because of his love of comedy. “You can go in and cause chaos and get the laughs,” he says. “The thing I like about playing a dame is that you can have contact with the audience and you can be on their side. I like to play it as though I’m

part of the audience and you know, you can get away with murder.” Of course, no dame would be complete without a set of fabulous outfits and Damian confesses he has over 100 costumes stored away, which he describes as a playground of wigs, feathers and slippers.To make sure Widow Twankey was dressed for the performance of a lifetime, earlier in the year Damian met with Helga Wood, who designs and makes the costumes, to discuss what they had in store. While dames and designers might spend months planning costumes, Damian admits that wardrobe malfunctions are simply unavoidable and says: “I’ve had things fall down, pop off and things split, but you just get on with it.” While the dame role has been a major part of Damian’s acting career for 20 years, he has also been involved in many other productions and acknowledges playing his alltime favourite comedian Tommy Cooper in Being Tommy Cooper was a particular highlight. “I like all the old-school comics like Tommy Cooper, Les Dawson, Morecambe and Wise,” he says. “I was brought up on people like Laurel and Hardy; they were funny, funny men and that’s very rare these days. People like Lee Evans come quite close to that style but you don’t get that anymore; it’s less physical.” This physical comedy is very much still part of panto and Damian confirms there will be plenty of slosh and mess in this year’s Aladdin. He has been involved in a great number of pantos including Peter Pan, Sleeping Beauty, Snow White, Dick Whittington, Jack and The Bean Stalk and Aladdin, but he says there is still one he has yet to tick off. “I would love to do Mother Goose here.We have talked about it, so I’m hoping in the next few years we’ll be able to do it.” You can see Damian and the rest of the cast – including Chris Gascoyne (Peter Barlow from Coronation Street), Alex Winter (CBeebies), and writer and entertainer Hilary O’Neil – in this year’s spectacular production at the Lyceum from 4 December until 3 January.

Staying power With its tasty food and relaxed atmosphere, Ella’s Cafe has all the right ingredients to see off the Ecclesall Road competition, writes Fiona Barber.

eing the new kid on the block is never easy. This is especially true when it comes to cafés and restaurants on Ecclesall Road, because with such fierce competition, there’s an even greater need than ever to prove you are worth a spot on Sheffield’s ‘golden mile’. A recent addition to the road, Ella’s Café, has got off to a flying start with its exceptionally popular breakfasts, brunches and lunches. Located just off Hunters Bar, the café is named after owner Matthew Begley’s

grandmother. “She was a German immigrant who was always baking and making beautiful stews,” Matthew recalls. “I have fond memories of being in the kitchen helping her as a child.” Matthew is originally from Brisbane, but after travelling the world he settled in Sheffield and managed Antibo in West One for 15 years. The Italian restaurant closed last year and Matthew decided the time was right to start up his own business. When the site on Ecclesall Road became available, he grasped the opportunity with both hands. The café opens 8am to 5pm, Monday to Sunday and offers an extensive breakfast and lunch menu. The pork sausages and bacon all come from just up the road at Whirlow Hall Farm, and they even make their own delicious hash browns. Ella’s Café is also a popular place for coffee and cake and those with a sweet tooth will be delighted by a wonderful array of desserts, all handmade by Matthew’s wife Khatuna, who originates from Georgia and includes this influence in some of her bakes. Alongside daytime delights, on Fridays and Saturdays from 6pm, the café transforms into a cosy candle-lit bistro and, one blustery evening my partner and I went along to find out what was on offer. The bistro menu is concise but varied, with a selection of six starters and five main courses. To start, we both chose cheese dishes: pan-fried halloumi for me and blue cheese and walnut croquettes for my partner. The delicious halloumi came served with a flavoursome olive tapanade, hummus and warm toasted ciabatta, and my partner’s

gorgonzola and walnut croquettes were full of bold flavours, which were wonderfully balanced by the accompanying sweet honey dip. Both were a fantastic start to the meal. On to mains, and my generous portion of sea bass was cooked to perfection with beautifully crisp, well-seasoned skin. Served on a bed of samphire grass, with new potatoes and baked cherry vine tomatoes, it was a truly delectable combination of tastes and textures. Across the table, my partner was equally impressed with his ribeye steak. Cooked exactly medium-rare, the meat was wonderfully juicy with a lovely char-grilled flavour. Accompanied by peppercorn sauce, chunky chips, onion rings and a crunchy side salad this dish was a real hearty treat. For dessert we enjoyed an indulgent chocolate brownie, squirrel (layers of chocolate sponge and crème pat topped with chocolate ganache) and a caramel and nut slice. While all three were delicious, for us, the chocolate brownie really stole the show (apparently the secret ingredient is balsamic vinegar). One visit to Ella’s Café is all it takes to be hooked. With simple-yet-tasty food at a reasonable price, a relaxed atmosphere, friendly staff and of course, the added bonus of being a BYO venue with no corkage charge, it’s easy to see why. Rest assured this newbie is here to stay.

I
n Italian culture, food and family make for a happy marriage. Family time is food time and vice versa. But how many of us actually sit down together at meal times? Modern, hectic lifestyles mean that dining as one has become a rarity in so many households. So lets take a nod to the Italians; we’re going out for pizza and the whole family are coming along. Our destination is Proove, the latest addition to Broomhill’s burgeoning restaurant scene. The Neapolitan-inspired pizzeria, which has been open almost three months, looks to be a good choice; it’s busy and with plenty of families too. It’s a charming space, split over two levels, with a huge brick-built wood-fired pizza oven dominating the rear of the ground floor. We couldn’t feel the heat from our window seat but could see the chefs quietly working up a sweat in the open kitchen. Wooden tables and benches give it a contemporary yet relaxed feel with little pots of fragrant herbs on each table to add a touch of flora. There’s some colourful local artwork on the walls, not forgetting our table too, as the children set about enthusiastically drawing their own pizzas. While food and family go happily hand in hand, so does the menu, which combines the best local produce with ingredients imported from Italy. Much of the fruit and veg used at Proove is sourced a few doors up the road, while some of the desserts come from Forge Bakehouse and ice-cream is from The Cowlick Creamery. The star of the show, though, is the dough, which is made from Italian ‘OO’ grade

Caputo flour and slow proved for a minimum of 20 hours. This is complemented by tomatoes from San Marzano and fior di latte mozzarella. Meats and salami, including prosciutto from San Daniele, are imported too. We started with tronchetto – fennel salami, mozzarella and basil-topped dough, is rolled, baked and then cut into little pieces – which, in a word, was delicious, the flavours

working so well together. Across the table the young ones happily tucked into dough bites before setting their sights on margherita pizzas. Both swayed by the prosciutto options, my wife and I tucked into a San Daniele (with tomatoes, mozzarella and rocket) and a Pizza Bianco (with ricotta, garlic and mozzarella). They were both delicious but, for me, the San Daniele was the better of the two, the San Marzano tomatoes definitely adding that something extra. Desserts were an easy choice for the children, and perhaps the most anticipated. Scoops of vanilla and strawberry gelato were devoured with much gusto. Our chocolate brownie and lemon slice, both supplied by Forge Bakehouse, were rich and gooey (former) and tart (latter) as they should be. Despite our full tums, co-owner Deepak Jaiswal insisted we tried the pizza dolce, a sweet dough of nutella and grated coconut. We were so glad we did. Think a Bounty on a pizza. There’s a good selection of drinks, including Italian wines, beers and soft drinks. I particularly liked the Menabrea Birra Amber, a full-bodied ale with enough flavour to compete with the pizza. With a new specials menu starting soon, as well as the addition of two new pizzas, there’s plenty of reason for us to return. And we’ll have no hesitation in bringing the family with us. * Proove are currently gearing up for the festive season with a range of party menu options – see their website for details.

t was the summer of 1983 and I was a stranger in town. I’d arrived at my digs in Sheffield a few hours earlier with all my possessions in a couple of holdalls; the next day I was starting a new job so I had to find my bearings without knowing a soul. Thankfully, fate played a part in the form of a friendly landlady who took pity on a lost soul and invited the new lodger out for tea. These days you can eat your way around the world seven days a week but back then the choice was somewhat limited, particularly on a Sunday. As I recall, the brightly-lit diner, with burgers and hot dogs on the menu and a slightly risqué poster showing a young female tennis player scratching her bum, was lively and fun. So here I am again, 32 years on, and it’s like we stepped into a time warp. The red brick walls and dark wood panelling looks pretty much identical, and the tennis girl looks as pert and perky as ever. No prizes for guessing that I’m in Yankees on Ecclesall Road. Sheffield’s golden mile, and restaurant scene in general, may have changed beyond recognition since my younger self pitched up, but it’s more than just nostalgia that makes me so pleased this place still exists. You just can’t beat American-style diners for comfort food, and Yankees has always had the winning formula. The menu has been tweaked in recent years to accommodate the recent trend for barbecue but the classic staples remain unchanged, including the
burger cheese sauce which more than one of my contemporaries seems to find downright addictive. The combo platter is as good a way as any to get an early taste of what Yankees is all about. This shared starter selection of ribs, chicken wings, potato skins and onion rings sets the scene nicely and the crisp, lightweight savoury batter on the rings is particularly fine. We continue the sharing theme for the main course. A salty blue burger with blue cheese, smoked bacon and mushroom ticks all the boxes and a hot dog with sauerkraut, onion and thousand island dressing called Ze German (political correctness be damned, apparently) is a meaty, salty-sour treat. The fries are nicely crisp and sides of chunky coleslaw, crisp and delicious, and chilli cheese fries, which are smothered in bean chilli and cheese sauce and are probably a greedy extra too far, complete an indulgent main course to remember. For a taste of sweetness to round things off, we share a honeycomb smash cheesecake. I’ve already guzzled a peanut butter shake which I fear may become an addiction if I’m not careful, so two excellent strong coffees to round things off are much appreciated. As for the true heroine of my first Sheffield dining experience, I bumped into my ex-landlady Bernadette a few weeks ago and, rather like the tennis girl and Yankees itself, she remains a timeless classic, destined never to grow old or go out of fashion. We should all be so lucky...

Two’s company The wait is finally over. BMW has finally released details upon its most eagerly anticipated model in recent times. The M2 looks like a very aggressive beast thanks to a distinctive body kit, wider tracks – front and rear axles from M3 and M4 – and quad exhausts giving the impression of a much more taught and purposeful machine. The engine is a beefed-up version of the unit found in the M235i, meaning a single turbocharged 3.0-litre straight-six producing 370hp and a maximum of 369lb ft of torque. It’s available with a six-speed manual or a seven-speed DCT automatic gearbox and is driven exclusively through the rear wheels via an electronic differential. 0-62mph times are 4.5 and 4.3 seconds respectfully. Priced from £44,070. On sale in April.

It’s called the Black Edition and it’s for those wanting a tad more style from their Citigo without forking out the extra for the Monte Carlo trim. Additions to the Black edition include 15-inch black Auriga alloy wheels, Sunset privacy glass for the rear windows, a choice of Deep Black or Candy White paint and body-coloured door mirrors. It also includes Skoda’s Portable Infotainment Device (PID), which controls the likes of the satellite navigation, Bluetooth and the multimedia player. Manual air-conditioning comes as standard too, as well as four additional loudspeakers and a multimedia holder. Only the 59hp 1.0-litre petrol is available for this car.
