lenheim Park Estates have moved to their new prestigious offices on Carter Knowle Road.

They have created a modern industrial look to their office space, which provides a wonderful environment to work and meet with clients. A key focus of the design was the creation of a large open space with a range of rooms for retreat and casual/formal meetings. The design brief also required a large board room, private offices and a media suite as well as staff facilities and a kitchen/lounge area. The concept was to create a working environment, which would be conducive to open communication with all areas designed to interconnect with the use of glazed partition walls and doors to create zoned areas. The design meets all the prerequisites for an open and accepting working culture that gives clients and employees the feeling of a home away from home. The interior design emphasises the agency’s open-minded thinking and working principles, as well as uniting the various departments across the business. Design, development, implementation and finishings were carried out by Blenheim Park Developments and MIS Architectural Aluminium were responsible for the internal and external glazing.

ne of Sheffield’s most iconic buildings is set to be given a new lease of life and will be restored to create 30 new homes on the site. Beauchief Hotel, situated on Abbeydale Road South, will be lovingly transformed into housing by developers Brantingham Homes and will be marketed by Redbrik Estate Agents. The former hotel, originally built in 1900 as the Abbeydale Station Hotel, shut its doors to customers on New Year’s Eve 2015 and has remained closed ever since. Now, the land and property are set to be repurposed bringing much-needed homes to the area, comprising of 18 apartments and 12 detached family houses, all set within a gated entrance that epitomises the site branding – a statement in luxury living. The original Beauchief building is to be sympathetically converted into six fabulous, two-bedroom apartments. Each of the individually designed conversions are generously proportioned (between 915 to 990 sq. ft.) and will be finished to a high specification throughout. The new build apartments will start at £270,000, and the converted apartments in the former hotel will start at £370,000. There will also be 12 stunning new detached modern family houses, set across three and four levels, offering a mix of four and five bedrooms. Each of the substantial properties will feature garages and landscaped gardens. The developer, Brantingham Homes, has a rich history in property conversion in the local area. Some of their previous projects include the transformation of the Church at School Lane in Crookes, as well as the restoration of Westbourne Manor in Broomhill, where they compassionately restored the building to retain many of the original features. The Brantingham team has also worked on several apartment conversion projects in the city. In 2006, Brantingham acquired the old Ashton Works site on Upper Allen Street in the St. Vincent Quarter. The derelict block has been lovingly transformed into 20 warehouse style apartments, keeping the large windows, exposed brickwork, and original steel beams. Recently he decided to buy a new kitchen... this is his story. “I’ve supplied a few kitchens in my time, so who would I go to when I wanted a new kitchen? To be fair there was quite a choice for me, but in the end I decided to speak to Dawn Rayner who had worked closely with me for many years, and who had most recently joined her daughter-in-law, Mary Major, in a new kitchen venture, Designer Kitchen Direct (DKD) on Junction Road, in Sheffield. Mary is a qualified designer, and I purposely resisted the temptation to interfere with what she suggested. I dare say there was a little anxiety on both parts to begin with, but I am pleased to say that Mary designed the kitchen and made her recommendations in a completely independent and professional manner, which actually made it easier for me to stick my oar in where I felt it was needed. More on budget than design, as it turned out! I have always stuck to quality of product, and DKD did not disappoint. The product is excellent and the optional internal fittings are of a superb standard. It was an added bonus that the fitter had also worked for me previously, and the tiler’s work was first class. It’s clear time has moved on and certainly

in this case kitchen design and the installation process, which can occasionally be a lengthy nightmare, has moved on as well. Using the latest hi-tech equipment and with lessons learned from the past, delivering a first class service is not just an option. Everyone, including the granite suppliers, and the delivery drivers who were involved were nothing less than polite and helpful. So, that’s where I went, DKD. Many parents wonder if investing in a quality preschool is even worth it. Would it be better to stay at home with your child during these formative years? With Princess Charlotte of Cambridge having recently started school in a blaze of publicity, and apparently already well on the way to being bilingual at the age of two; it’s worth discussing the benefits of nursery school. The little Royal’s preschool says it focuses on providing a fun, structured environment where children are encouraged to read, write and understand numbers – with minimum pressure. They are 25 per cent more likely to drop out of high school and 60 per cent probably won’t go to college. It also claims that 40 per cent are more likely to become a teen parent and 70 per cent of at-risk children are more likely to be arrested for a violent crime. Scary stuff! So next time you get emotional about saying goodbye at the school gates just remember, you are giving the little darlings a huge leg-up in life.

OUR WINNER Tesco Finest Salted Caramel Egg 310g, £9 A smooth Belgian milk chocolate base with creamy milk and white chocolate. Both are sweetened with crunchy caramel pieces and enhanced by a hint of sea salt... With a description like that, we were salivating before we’d even opened the box. The egg is split into two halves, so you can enjoy the best of both. As we split this thick and decadent egg in half, a few members of the panel even let out some “oohs” and “aahs”. The salt beautifully balances out the sweet caramel and chocolate, it’s an impressive size, well-presented and is egg-cellent value for money. The fact that we couldn’t help going back for seconds, was also a strong indicator that this was the best of the bunch.

Cohabiting couples don’t have the same rights as married couples hen you start a relationship with someone and commit to living with them, you rarely think of what will happen if things go wrong. However, the sad fact is that relationships often break down and if this happens to you and you are not married, you could be left unprepared and at a financial disadvantage. You can prepare for this eventuality by having a cohabitation agreement drawn up by a family lawyer who understands the complexities of such agreements and how they should be written to protect your interests. The number of unmarried couples living together has doubled since the mid 1990s to nearly 3 million. However, many of these couples, who often refer to themselves as ‘common law spouses’, don’t realise that they don’t have the same rights as married couples when they separate. Married couples have a claim on all matrimonial assets when they divorce. However, if you cohabit, you are not protected by the same laws as married couples and have no automatic claim on your partner’s assets unless you can say that you have an interest in them. This can cause untold distress when couples have been living together for some time and believe that they ‘own half of everything’. A cohabitation agreement can address issues relating to:

A cohabitation agreement can be enforced by the courts as long as certain criteria are met, such as both parties having obtained independent legal advice. The agreement shows your clear intentions at the time you entered into it. The agreement also ensures that you both have a clear understanding of your financial commitments and responsibilities whilst you live together and essentially means that if you do separate you both know where you stand. The agreement can be particularly useful in terms of ownership of assets when there is an economically weaker partner. For example, if the property you live in is owned in your partner’s sole name and you stay at home to look after the children whilst your partner works, your interest in the property can be recognised in a cohabitation agreement in acknowledgement of the contributions you have made towards looking after your family and home. If you own a property with your partner as joint tenants, this is usually divided 50/50 on separation regardless of whether you have contributed more or less to its purchase, unless you make a written agreement to declare different shares or interest. The cost of writing a cohabitation agreement depends depends on how complex your living arrangements are and how much detail you want to include in your cohabitation agreement. We will advise the cost once we know the nature and extent of your intended provisions. In some cases, we can agree a fixed fee with you. One thing’s for sure, it will be a lot cheaper than battling out later disputes in court without one! If you cohabit and you want your partner to inherit any of your estate, you should also consider making a will. Unlike married

Sheffield Girls’ trio heads for Oxford and Cambridge Three Sheffield Girls' students have been offered a place at the prestigious Cambridge and Oxford universities. Westbourne’s under-13s take runners-up spot Westbourne School’s under 13 cricket team proudly finished runners up in the Sheffield Schools cricket tournament. The team played a fine tournament, beating King Ecgbert's and Parkwood in their league matches before reaching the final. Only a very strong Ecclesfield side stopped them, but Westbourne held its head high after coming up against much larger schools. RACHEL MARTIN LOOKS AT THE VITAL WORK THE SHEFFIELD CHARITY DO. oundabout, Sheffield’s youth housing charity, provides shelter, support and life skills to over 150 young people in Sheffield everyday who are homeless or at risk of becoming homeless. They provide emergency hostel Matt Cockayne accommodation, a range of medium term accommodation in safe bedsits and in shared housing throughout the city, and can support young people living independently in their own accommodation, who might otherwise struggle to do so. Roundabout is committed to preventing young people from becoming homeless and believes home is the best place to be, if it is safe to be there. But by far the most common risk to a young person is problems with family, which often leads to feeling they need to leave home. Roundabout’s homeless prevention service offers family mediation and advice for young people at risk of homelessness, and their peer education project trains young people who have experienced homelessness to go into schools and increase awareness and understanding – positively impacting on pupils, preventing youth homelessness and empowering the peer educators, who become more confident and gain a BTEC

qualification, thus assisting them on the path to self-sufficiency. Earlier in February, the charity, which turned 40 last year, launched a city-wide fundraising event, Pulp’s Nick Banks Bangers & Cash – the UK’s first art road show banger rally. Teams of three intrepid adventurers from each business will then travel the 1,219 miles from Sheffield to Monte Carlo, each with a unique design painted on the bonnet by a local artist, which will be returned to Sheffield to be auctioned

Shauna and Cheryl, Roundabout’s mediation worker

Shauna’s story: hen Shauna was just nine years old, her mum passed away and the grief put a huge strain on her family and relationships with her dad and brother. A few years later, when Shauna was 12, her grandmother passed away, and this meant the already strained relationships began to get worse. As Shauna grew further apart from her dad, she stayed at her aunt’s house, to escape the tension in the household, and when she turned 16, she finished school and started studying hairdressing at college. By this time, her relationship with her dad had reached breaking point and she moved out of the family home to live with her boyfriend. But unfortunately, the relationship didn’t last, and Shauna had no choice but to move back in with her father months later. Over the following months, Shauna’s relationship with her dad began to improve. Things got easier at home and she concentrated on her college work, successfully completing her hairdressing course. Once she had finished, Shauna was keen to leave college, rather than carry on studying, however her dad insisted that if she wanted to stay living in his home, she needed to be studying. With this in mind, Shauna returned to college to study childcare, but her relationship with her dad became frayed again. The situation worsened, leading to Shauna leaving the family home at 17, and with nowhere else to go, she was referred to Roundabout. Due to her maturity, Shauna was given the opportunity to move into Number 11 – the property next door to Roundabout’s hostel, which has eight self-contained flats suitable for young people who have shown signs of

progressing towards independence, but still need support from a key worker. From here, Shauna moved into one of Roundabout’s resettlement properties, where she lived in a semi-supported housing setting. However, Shauna struggled with the lack of round-the-clock support, so moved back into the hostel. Once she was back in the hostel, Shauna was able to get the support she needed to feel more independent and ready to have a place of her own, and after a few months, with support from her key worker, she applied for her own flat. Knowing that this was a big step, Roundabout continued to offer Shauna support once she’d left the hostel and she was assigned a support worker from Roundabout’s supporting tenants’ team, who help young people in their own properties to maintain the tenancy and cope with independent living. Currently, Shauna and her dad are working hard to build their relationship and Shauna is attending mediation sessions. These sessions allow one or both parties to talk about their differences, helping to sort through their issues and resolve problems. “I have been accessing help from mediation in order to help my relationship with my

dad,” says Shauna. “It’s only me who sees Cheryl and she has helped me to understand my dad’s side of things. She’s also helped me to understand why I react to him the way I have been. “Since all this, our relationship has massively improved and the majority of our arguments have stopped. We can now sit and talk without arguing, and this is all thanks to mediation.” Shauna has since volunteered at Roundabout, helping Cheryl by attending events and aiming to promote the mediation work offered by Roundabout, and in addition, she has been part of the peer education team. She was trained to go into schools and deliver lessons, aiming to break down the stereotypes around homelessness and raise awareness amongst young people of what to do if they have to leave home and how to access support. Now living independently, Shauna is a qualified youth worker: “Without Roundabout, I wouldn’t be where I am today. Their help has meant that I’m now able to live independently and have the confidence to do other things, and I’m keen to use my experiences to help other young people who need support.”

IS THERE A DRINK MORE ‘IN’, THAN GIN? TO CELEBRATE THE NATION’S FAVOURITE TIPPLE, THE GIN SOCIETY ARE HOLDING A FESTIVAL IN SHEFFIELD ON 9-10 MARCH. HERE’S WHAT’S IN STORE... BY LIA DESAI. rom Mother’s Ruin to must-have tipple, gin has benefitted from a massive makeover in the last few years. Once considered a poor man’s drink, or a mass-produced medicine for povertystricken mums, it is now a designer product for affluent hipsters. It’s come a long way since the 18th century. The recent resurgence of gin-drinking has brought a plethora of flavours that seem to resonate with discerning drinkers. So now is the perfect time for Sheffield to host a gin festival. The Gin Society is visiting Cutlers’ Hall, Sheffield on 9 and 10 March and the organisers are inviting people to sample from a choice of over 120 different gins. From classic to contemporary flavours, they reckon there’s a drink for everyone. Throw in a prosecco cocktail bar serving fizz mixed with a variety of fruit flavoured gins, and a vintage DJ playing jazz and swing, and you have the ingredients for a sophisticated night. Upon arrival, visitors will receive a limited edition gin glass as well as a booklet describing the drinks on offer and suggesting the best mixers. The event operates with a voucher system. These can be purchased with either cash or card payments at the voucher station.

But why are more people making – and drinking – gin? Firstly, gin is quick and easy to make. So for those wanting to create and brand their own spirit; gin is the way forward. The production process is pretty simple and you can be creative with the recipe. No wonder there are so many craft gin distilleries popping up all over the country. These include True North Brew Co who have created the first gin to be distilled in Sheffield in over 100 years. This dry gin is a truly unique blend of locally sourced ingredients including gentian, juniper and Henderson’s Relish – a distinctly Sheffield flavour.

Gin is also popular with millennials, the biggest influencers of existing new trends. This generation is spending its disposable income on unique, locally sourced and bespoke products from independent businesses. They see gin as easy to drink and comforting – unlike other spirits, which have that harsh ethanol-burn. Finally, it is the most versatile spirit to mix. Mixologists are inspired by and love experimenting with gin. It’s an essential ingredient in over 700 recipes, cocktaildrinking also having made a recent revival. So it seems gin is here to stay. We’ll raise a glass to that.

GET THE PARTY STARTED AT KETTLE BLACK WITH A COCKTAIL MASTERCLASS, WRITES PHOEBE SEYMOUR. veryone has their own night out rituals. For my sister and I, no night out is complete without a couple of salt-rimmed margaritas. So imagine our dismay, when we arrived at Kettle Black on Ecclesall Road to discover that this classic was not on the menu. But we needn’t have worried. “We’re happy to make up any cocktail as long as it’s nothing too obscure!” reassured Danny, our mentor and mixologist for the evening. Naomi, our friend Paris and I had signed up for a cocktail masterclass, and as we stood next to the chic, golden backlit bar, with its towering shelves of giant liquor bottles, we felt a little out of our depth. However, Danny was so infectiously enthusiastic, knowledgeable – and above all – patient with us, that we were soon put at ease. I was first to give it a shot (get it?). I chose to make an Italian Hills (£8), a refreshing long beverage which pays homage to the fact that both Sheffield and Rome are built on seven hills. While shaking up the concoction of Whitley Neill gin, elderflower syrup and Martini Bianco in a tall Boston glass, I wondered if it was obvious I was a rookie. But just then, a customer mistook me for a bartender – maybe I was getting the hang of this after all.

Paris had drink envy and followed suit. Then it was Naomi’s turn to make a Margarita (£9). Danny quickly and expertly selected all the ingredients and before we knew it, we were sipping one of the most delicious versions we’d come across – sour with a sharp aftertaste of salt. For my second drink, I made a Pornstar Martini (£8.50). As one of Kettle Black’s most popular cocktails, I had to see how the experts do it. Naomi was indecisive, but as a gin lover who enjoys a fuller flavour, the Aviation (£8) with its aniseed notes, was a good call from Danny. One for danger, Paris was instantly enticed by the label next to the Zombie (£10.50), which read, “Warning! Pyrotechnic bartenders at work”. Her curiosity was rewarded with a tall tiki cup overflowing with four types of quality rum and topped with a flaming piece of passionfruit. The music Kettle Black’s resident DJ was playing was just as varied as their cocktails, with everything from noughties R’n’B by artists such as Mary J Blige, to contemporary floor fillers by Disclosure. It was a Friday night, so the bar was filling up nicely by this point. We’d wisely reserved a table, so we could sit back in one of the luxurious booths, with a bottle of Fiorino D’Oro prosecco (£18, Sunday special £15).

And with a stylish, heated patio, it’s one of few venues you don’t mind standing outside. While many bars have come and gone on Ecclesall Road, Kettle Black has all the ingredients to stand the test of time. One thing’s for sure – Naomi and I will be making cocktail masterclasses our new tradition. Mick Burke. Mick taught thousands of college students the fine art of cooking in his role as senior chef lecturer at Sheffield College. He retired last year after 37 years during which he passed on his skills to generations of young chefs who went on to have great careers in the kitchens of some of the finest restaurants in the land. The Westside/My Fathers Heart Young Chef of the Year competition is a great opportunity to shine a light on the next generation of kitchen superstars. We’re looking forward to seeing what the best young talent out there has to offer, and giving all four finalists, a boost by placing them in the spotlight. The results will be announced at the Westside Restaurant Awards on Monday 5 June 2018, an event which is fast becoming the Oscars of the local restaurant scene. So now it’s down to the head chefs and restaurateurs across the region to nominate their young kitchen stars for this prestigious event. Ashoka Noor Alam: Head Chef Ashoka have been serving up Indian food of distinction since 1967 and I’ve been head chef for 21 years. I specialise in the tandoor, but breads and meat are my passion, and as I used to work in a butchers, it allows us to buy in whole and manage the process in house. A typical working day for me involves butchering, marinating, baking breads and cleaning, and I thrive on the adrenaline of a busy service. Haddon Restaurant at the Izaak Walton Hotel Simon Harrison: Head Chef I’ve been head chef at our two AA rosette restaurant at the Izaak Walton for threeand-a-half years, serving up classic flavour combinations with a modern twist. I started out in catering as a part time job at 15 and my passion grew from there. I’ve always had an interest in food and decided to pursue this after sixth form, taking on an apprenticeship at Jury Inn Hotel and attending Sheffield Castle College for one year. A typical day for me begins with baking our specialty bread and rolls, then either running the pass or cooking on the stove. I love working with my hands and creating dishes using the best local produce we can source, and working alongside our students with learning disabilities within the café creates a wonderful and unique environment that I have not seen in any of my roles so far. My advice to other aspiring chefs: work hard from a young age and don’t rush your way through jobs trying to progress too quickly. Seafood special FISH FIGURES PROMINENTLY ON A MENU THAT PROVES THE TICKLED TROUT HAS UPPED ITS GAME, WRITES CHRIS WILSON. aving grown up in and around pubs, and then served his restaurant apprenticeship working alongside Michelin-starred high flyers such as Gordon Ramsey and Marcus Wareing, Chris Mapp was always ideally suited to the tricky balancing act that involves simultaneously running a gastro pub and a restaurant. After a very successful last few years as chef patron at the Tickled Trout in Barlow, it seems Chris feels confident enough to ring the changes, and the recently revised menu looks decidedly more gastro than pub. The excellent selection of real ales is still there, and while steak and chips is off the menu, if you do fancy a good old carb-loaded plate of comfort food, burgers, pies and pizzas will satisfy that need. But elsewhere there are some lovely, flamboyant touches on a very wellconstructed menu that will appeal to seafood lovers in particular. The Tickled Trout is a versatile venue; there’s a lovely sunny conservatory as well as the restaurant, but on a bitterly cold Saturday lunchtime with sleet lashing the windows we bagged a seat in the lounge close to the roaring log fire. We began by sharing a portion of lightly fried whitebait with a pot of tartare sauce for dunking (£7.95). This is a dish I’ve fallen out with over recent years, but memories of too

much greasy batter and not enough seafood fragrance were banished by this lovely appetiser. For starters I selected one of the new dishes labelled as ‘something special’, a bold claim that was justified with a flourish. Cornish cod brandade (£8.50) was a quail’s egg covered in cod, fried in the crispiest breadcrumbs and served with a light curry sauce and seaweed. On looks alone this dish was a stunner, and cutting into it revealed a perfectly runny yolk, and a heavenly combination of tastes and textures. Our other starter of arancini (£7.95) was a real crowd-pleaser, with crisp parmesan risotto squares and truffle mayonnaise. Two seafood main courses really played to the Tickled Trout’s strengths. The Cornish catch of the day (£17.50) was a dazzling concoction of sea bass fillets, dashi foam, samphire, mushrooms, mussels, roasted fennel and dauphinoise. From the fresh flakes of white fish to the crispy skin and intensely savoury foam, this was cooking of the highest order. The Looe day boat fish (£17.95) was equally complex, perfectly balanced and a joy to eat. Cod, butternut squash, brown shrimps and Fowey mussels worked together beautifully. A portion of salty skinny fries (£3) may have seemed out of place in such high class company but we thought we’d best

check the basics were not being neglected. With such a strong emphasis on fish you’d expect a good selection of white wines and a fresh and fruity Picpoul Plo D’isabelle (£7.95 large glass) was the ideal choice to accompany this seafood spectacular. Desserts included one of my all-time favourites, caramelised apple tarte tatin (£11.95 to share) and the Tickled Trout version, served with clotted cream and vanilla ice cream, was as sticky, salty-sweet, chewy and moreish as I could have wished for. The Tickled Trout has really upped its game and if you like high end cuisine in a relaxed, friendly setting, it must rank among the very best. The perfect 10 WITH A NEW LOOK AND AN UP-DATED MENU, RANMOOR’S WELL-LOVED BISTRO IMPRESSES RACHEL MARTIN. p until the last year or so, Ranmoor was an area I rarely, if not ever ventured to – especially if food was involved. But after I discovered West 10, and its talented head chef, Will Cowling, I fell immediately in love. Since our last visit, the buzzing Fulwood Road wine bar has had a facelift, and clearly it’s been performed by an expert. Everything has been peeled, exfoliated, filled and polished and the result is pleasingly natural, mature and burnished. The freshly painted walls and restored wood bar nudge West 10 away from its drinking-den roots, and towards the high-end restaurant that spawned it, and the new menu is elegantly worked and impeccable. At glance, it reveals familiar classics chicken, ham and leek terrine (£7), confit pork belly (£15), pan fried hake (£16) - and we started the evening with a full bodied, citrus scented glass of False Bay chardonnay (£6.50). Salads are the bellwether of a good bistro, and my starter of pear and walnut salad (£6) came decorated with blue cheese and improbable quantities of fragrant balsamic. No two ways about it: this was the best bit of greenery I’ve had all year, each mouthful succulent, crisp, vibrant, fresh and delicious.

If ever there were a dish to make you welcoming of the last of the arctic weather, my partner’s bowl of sweet potato soup (£5) was it. Delightfully light and creamy, it provided a fantastic contrast to the earthy taste and texture of the accompanying bloomer. My ears pricked up when I heard that the special was Norwegian Skrei Cod, a sustainable fish caught while travelling through Norway. Being so young (between 4 and 7 years) means the meat is firm, lean and packed with flavour and it’s seasonal, caught only during the winter. Will served up the fish with chorizo, squid and octopus ragu and roasted radicchio (£15). It had many layers of flavour and texture, but what brought it all together was the sauce – inky and rich, yet refreshing, sour and sweet at the same time, it was a real winner. My partner relished every bite of his beef fillet, served with wild mushroom, cabbage and truffle mash (£21). The meat was outrageously fresh and sweet and once again, the flavours all complemented one another. For dessert, we shared a plate of chocolate delice (£6), a perfectly presented cheese board (£6) and two large glasses of infamous Jonnie Red – another worthy

recommendation from proprietor, Jonnie Higginbottom. The chocolate delice was lavished with mixed berries and peanut caramel that crackled between your teeth, and the latter was a simple and well sourced selection of soft and creamy cheeses and crisp breads. After polishing off our wine, and one too many boozy berries (recycled raspberries left over from making Pinkster gin) we headed out into the night, both in agreement we would return. Peppercorn Charlie Curran: Head Chef I’ve been head chef at Peppercorn for four-and-a-half years and before that I ran a restaurant with rooms in Bradwell, Derbyshire, called the Samuel Fox, for three-and-a-half years. My brother was a chef and told me they needed a pot washer where he was working, which is where I feel in love with the buzz of the kitchen. I enjoyed the atmosphere and loved learning new skills, and I also found it very rewarding when people enjoyed the food I had cooked. A typical working day for me involves putting all the fresh deliveries away, checking everything has arrived ok and general prep throughout the day, before heading straight in to service and then preparing orders for the next day. I love that no day is the same as any other, and I enjoy working with my team and the camaraderie within the kitchen. I also love making our amazing customers happy with my food, and Peppercorn will have been open for five years in August (2018), something I’m very proud of. My advice to aspiring chefs: start at the bottom and work your way up. I have worked at Nonnas for seven years, where I serve a modern twist on Italian foods and hold one rosette. Previously, I was head chef at the Royal Oak, Barlborough for two years, having spent seven years at this little village pub where I first started my journey in catering, starting out as a pot wash when I was 14. I became a chef by accident. It was never my first choice as a career but when you’re young you never know what your future passion might be. And whilst I was working at the Royal Oak I went to college to complete a plumbing and electrical installation course and began looking for a job in the building trade. I found myself being given the same answer by interviewees: that qualifications where only a door opener, and so I completed an NVQ in catering and fell in love cooking. A typical day for me, like most chefs, goes something like this: espresso, head down, mise en place and keep pushing until the last check is sent. What I enjoy most about being a chef is no one day is the same. The Peacock Inn Cutthorpe Andy Clark: Head Chef I have worked at the Peacock Inn for four years, serving up a range of food varying from pub classics, such as beer-battered cod chunk, to modern British food like the brisket and marrowbone suet pudding. Before I came to the Peacock, I was the head chef at the Dragons Fold restaurant in Chesterfield, having studied catering at college after leaving secondary school and falling in love with every aspect of it. I was inspired by my grandmother, who was a fabulous cook, she taught me a lot of the techniques that I still use to this day and I love coming up with new dishes. On a normal day in the kitchen, we all arrive around 9.30am to prep for service, which starts at midday, and we have a fantastic team, so everything is completed to a very high standard. My advice to aspiring chefs: if you have a strong work-ethic, a creative mind-set and positive attitude, you’ll go far in this industry. West 10 Wine Bar & Bistro Will Cowling: Head Chef

Silversmiths John Cluckie: Head Chef I’ve been head chef at Silversmiths for nine months, having previously trained as a group development chef under Marco Pierre White and once cooking for Nelson Mandela. A typical working day for me involves meeting with suppliers, menu design and planning, prepping for the day ahead and any upcoming events, as well as planning for potential big events such as weddings. Being creative, being able to travel and kitchen banter are some of the things in enjoy most about being a chef and my biggest inspiration is my mum. I actually started out in my catering career as a kitchen porter, working for her. My advice to aspiring chefs: keep your head down, work hard and take all the advice you can get.

I’ve been head chef at West 10 for four months, having previously spent four-and-a-half years in London, working in Michelin-starred restaurants. I started as a commis/junior when I first moved to the Big Smoke, and eventually worked my way up to senior sous chef. I’ve always had an interest in trying different foods, which my father encouraged me to do, and when I was 16 I took a job washing dishes in a large banqueting restaurant. From there, my responsibilities grew to food prep, and my head chef at the time encouraged me to pursue a career in the kitchen, so I went to Birmingham College to study culinary arts. I think cooking is a great way to be creative and add your own flair and passion to each ingredient, from a humble piece of veg to the finest cut of beef, every ingredient demands respect. And although I couldn’t pin down a signature dish, I love using fish and our supplier, JH Mann, supplies us with some fantastic fresh produce. My advice to aspiring chefs: the early days are hard, the hours are long and the work is not glamourous. But persevere and work hard and your career can be a lot of fun. The Tickled Trout Jack Butler: Sous Chef I started out in my career as a kitchen porter at Sheffield’s Owlerton Stadium, before catching the chef ‘bug’ and working in various restaurants and hotels. I took to being a chef naturally, enjoying the artistic creative side but also the old school tough love military side of learning. And I love the ability to travel, meet new chefs and share their stories and recipes. As well as having the freedom to express yourself and watch people enjoy your creations. A typical working day for me starts by taking notes of any incoming deliveries or those to be placed, greeting all the staff and grabbing a cup of tea. Then it’s straight into prep for the day ahead. My advice to aspiring chefs: work hard, listen a lot and learn from your mistakes – you will make them, but it is all part of the fun. I’m also a keen reader of top chef and foodie books and find it very rewarding as it gives you a marker to drive towards. Learn from them, open your ideas, and remember, every chef draws on influences from other chefs. Tapton Hall David Archer: Head Chef I have worked at Tapton Hall for almost two years and before that I was head chef at Greenscene Side Farm in Todwick, prior to three years at Aston Hall. I have over 14 year’s kitchen experience, but I actually enrolled on a travel and tourism course at college, alongside 23 women. As much as I like female company, it wasn’t for me, so I ended up studying for three and a half years at Castle College, which is renowned across the country for its catering department. Every day is different at Tapton Hall, but I usually I start around 10am and finish around 9pm. Time goes fast, though, as I have a good relationship with my co-workers, which makes for a great working environment. I don’t have a signature dish as such, but there are a few things I make which are always well received. I do a deconstructed beef wellington with dripping fondant and tender stem broccoli, and a homemade egg custard tart with nutmeg ice cream – there the two that are always winners. The perfect setting CHRIS WILSON ENJOYS LUNCH IN THE GRAND SURROUNDINGS OF TAPTON HALL. here is no shortage of venues offering Sunday lunch, but few can provide the wow factor offered by one of Sheffield’s grandest buildings, Tapton Hall. The original Tapton House was built in the 18th century for the Shore family. It was rebuilt in 1855 and over the years became the residence for some notable Sheffield figures including George Wilson (of Wilson’s Snuff fame). It has been refurbished over the years and now functions as a fully modernised dining venue, ideal for banquets and special occasions. Meanwhile those echoes of the past, from the stone exterior that never fails to create a strong first impression when you emerge from the curved drive into the large car park, to the grand staircases and high ceilings of the interior. It all adds up to the perfect setting for a classic traditional Sunday lunch with all the trimmings and now, on the first Sunday of every month, that is precisely what is on offer. There’s no exposed brickwork, fake industrial lighting or impractical plonking of food on slates to be seen here, thank goodness. It’s pristine white tablecloths, Sheffield stainless steel cutlery and attentive, old-fashioned service all the way. That doesn’t mean stuffy though; the atmosphere is relaxed and friendly and the

food, beautifully cooked and generously portioned – everything that is good about the classic Sunday lunch. For starters tomato and basil soup was nicely seasoned and not too gloopy, while duck and orange pate, smooth and rich, was just crying out to be smothered on buttered toast. The main course is all about the classic roast dinner with a choice of beef, gammon or chicken, although there is a roast vegetable strudel available if you are that way inclined. It had to be roast topside of beef for me, served in thick slices, slightly pink in the middle, very tender and tasty. My companion chose the chicken breast which was, once again, carved thick and generously portioned. There were no side-dishes, our plates were piled high with a selection of traditional vegetables, roast and mashed potato, with a giant Yorkshire pudding balanced perilously on top, swimming (not drowning) in proper homemade gravy. You’re probably guessing that Sunday lunch at Tapton Hall is all about good, honest comfort food with no surprises, but when standards are this high the occasion is anything but routine. I loved the roasted root vegetables, full of flavour with plenty of nice chewy charred corners, while across the table my companion was raving about the smoothest, nicest mashed potato she had ever tasted. Desserts kept the warm, familiar glow

intact with a wedge of warm chocolate fudge cake with vanilla ice cream and a nicely sharp lemon meringue pie served with red berries and clotted cream. Speaking of warm glows, the wine list is very reasonable, with prices from £13.50 a bottle. A couple of glasses of house prosecco (£5) and house red (£5.80 large glass) served us nicely. Despite being one of Sheffield’s landmark buildings, as a dining venue Tapton Hall may have been off your radar in recent years. With bar and business lunches served from Tuesday to Saturday and Sunday lunch on the first Sunday of every month, now is the ideal opportunity to get better acquainted. Fantastic Mr Fox… RICHARD ABBEY DISCOVERS WHY THE SAMUEL FOX COUNTRY INN KEEPS COMING UP TRUMPS IN THE WESTSIDE RESTAURANT AWARDS. egular readers of Westside won’t need me to tell them that the Samuel Fox Country Inn is something of a gem. Under the stewardship of chef/proprietor James Duckett, the cosyyet-seriously-classy Hope Valley pub has been worthy double award-winners at our annual restaurant awards twice – in 2015 and 2017 – scooping ‘Restaurant of the Year’ on both of those occasions. And the commendations don’t stop there; the AA five-star venue has also been included in the most recent Good Food Guide and been praised by Michelin. High praise indeed. This was my first visit to the Bradwell hostelry and, having delved through some back copies of Westside beforehand to get up to speed, I was delighted to find that it not only met my expectations but exceeded them too. What I really liked was the laid-back atmosphere, which is perhaps not too surprising given that this is a country pub after all. You can hang your coat at the door, pull up a chair in front of the log fire and tuck into a pint of local ale if you so wish. Or, if like me, your purpose is to sample the fine food, you can grab a glass of something – sparkling water for me, a Carmenere (£9, large glass) for my wife – before mulling over

the tempting menu. Dinner is a set menu – £29 for two courses, £36 for three – with four starters, mains and desserts to choose from. A sevencourse tasting menu (£55 per person) is also available. After tucking into some excellent complimentary bread, our starters duly arrived. And didn’t disappoint. My goats’ cheese tortello was a riot of texture and flavour. Perfectly-cooked pasta was generously filled with unctuous goats’ cheese accompanied by circles of sweet potato, dollops of red pepper purée and crunchy almonds. A smoked almond pesto added further intrigue. My wife’s fish soup with saffron and curry was light and flavoursome; a good start. My main of pan-fried fillet of sea bream with a pearl barley and mussel risotto, charred lettuce and aioli was a triumph, and went perfectly with the glass of Mancuria Etnia sauvignon blanc (£7.80, large glass) as recommended by our host for the evening, Matthew. The risotto was particularly moreish, packed with flavour, and was complemented by the crispy skin and soft white flesh of the fish. Across the table, slow roasted belly pork with cannelloni, parsnip, braised cabbage and

cider sauce was perfectly judged, getting the thumbs up from my wife. We finished with generous portions of bitter sweet chocolate tart with mandarins, pistachios and chocolate sorbet and sticky toffee pudding with caramel ice cream; how we managed to fit all that in is anyone’s guess. This maybe fine dining but this is a pub after all. You won’t go home hungry. Just a 20-minute drive from the south west of the city, if, like me, you haven’t visited the Samuel Fox before, it’s time to give it a second thought. It’s a worthy winner. Italian flair THE STUNNING SURROUNDINGS AT ROSSI’S MIGHT CAPTURE THE IMAGINATION BUT IT’S THE FOOD THAT TAKES CENTRE STAGE, WRITES HANNAH SANDERS. he last time I marvelled at Michelangelo’s The Last Judgement was in the breathtaking Sistine Chapel amid a bustling crowd of people. I didn’t expect to be transported back to the cobbled streets of Rome, on a rainy Saturday evening in Sheffield, but as the doorman ushered us into Rossi’s, the traditional greeting and stunning Italian décor whisked us back to the Vatican City, minus the hustle and bustle of thousands of tourists. With its marble pillars, cascading ivy, mosaic floor and a ceiling adorned with frescoes it’s no wonder Rossi’s has stood the test of time. We were instantly greeted by owner, Vito Restaino, and shown to our table which gave us a perfect panoramic view of the restaurant. With so many tantalising dishes on the a la carte and specials menu it was difficult to decide, so to tide us over we nibbled on freshly baked bread with a balsamic and olive oil dip (£4.90) and olives (£3.90) along with a glass of house red wine (175ml £3.95) and a Pepsi (£2.45).

After recommendations from Vito, we both chose from the specials menu. My partner opted for the salsiccia (£7.95), which consisted of rich Italian sausages partnered with a sweet red wine tomato sauce, while I went for the fritelle di pesce orientale (£7.95). The three cod and salmon fishcakes were delightfully crisp and the sweet chilli dip provided some subtle heat. For mains, I chose the spigola e Gamberoni (£18.95). The chefs didn’t miss a mark when it came to the seabass fillet, which was cooked to perfection with a light and delicate skin served on a bed of asparagus spears and a sweet white wine and lemon sauce finished with king prawns, fennel seeds and topped with thin strips of sweet potato. My partner went for the tender lamb shank (£18.95), served on a bed of parmesan mash, cherry tomatoes, peppers and mushrooms along with a side of roasted vegetables. The slow-cooked meat, with its rich and tender flavour, was covered in a thick tomato concassee sauce with hints of red wine and rosemary.

For dessert, my partner satisfied his sweet tooth with profiteroles (£4.95), which were tightly packed with Chantilly cream, covered in a heavenly chocolate cream and drizzled with a moreish chocolate sauce. I opted for something lighter – the lemon flute (£4.95) which was made up of generous helpings of lemon sorbet and a sharp kick of limoncello liquor which was a delightfully refreshing end to the meal. Explore the unknown THERE’S MUCH MORE TO MEDITERRANEAN CUISINE THAN GREEK SALADS AND GYROS, WRITES RACHEL MARTIN. MUCH MORE. he Mediterranean just got a little closer to Sheffield. I say this having recently eaten a soft shell crab – sweet, marinated seafood tucked into a buttery, deep-fried exoskeleton – at The Mediterranean on Sharrow Vale Road. But calling The Mediterranean “a Mediterranean restaurant”, doesn’t quite do it justice. Because when people hear Mediterranean, they tend to think Greek salads and gyros, of which they serve neither. For its cuisine, The Mediterranean reaches across the sea, from North Africa to Greece to the Middle East. And what the kitchen has come up with, is some of the best and most exciting food anywhere in Sheffield right now. No dish underlines that sentiment like the monkfish: slow-cooked until tender, then blasted with heat. And like almost every dish at The Mediterranean, it struck our pleasure receptors with waves of soft-then-crunchy textures and spicy-then-sweet flavours. The menu, too, is written in a way that conveys a sense of adventure, of exploring the unknown, coupled with familiar comforts, and dictated by seasonality and market availability.

And wines run the gamut from familiar to exotic, coupled with an affable waiter who can help you along either path – leading us to a Vintage Vino dei poeti Prosecco and a flavour that is gently sharp and fragrant. I started with the aforesaid and the surprise delight of the night: sea-fresh soft crab (£6.99) and for my companion, a light and wispy, yet distinctly rich and creamy portion of goat’s cheese wrapped in filo pastry (£6.50). Topped with caramelised onions and accompanied by fresh-from-the-oven bread for scooping, this was a subtle and delightful assembly of flavours and textures, and the underlying pesto dressing gave a lovely savoury afterglow. From the mains, bream fillets (£18.99) came bubbled and blackened, but salty and powerfulwith the white flesh ready to fall from the fork. My companion’s monkfish came nicely caramelised on the outside and giving within, with a hint of spice and unusual fruitiness from the accompanying condiment. Composed desserts are light and floral, like my companion’s crème brulée with raspberry coulis and mango foam (£5.95). But what

summed up this meal was the extraordinary texture of my poached pear with red wine and cinnamon glaze and vanilla ice cream (£5.95) – the spoon slicing through without any resistance, as though it had become a warm mousse. Our waiter’s must-have dish of paella must wait for my next visit, but that won’t be long, as I’ve already booked to return soon. And when a restaurant can persuade a critic to go back and spend their own money, it’s definitely a winner. Plain sailing in Panama CARMEL STEWART RECENTLY ACHIEVED A LONG-HELD AMBITION TO TRANSIT THE PANAMA CANAL. HERE ARE SOME EXTRACTS FROM HER BLOG WHILE ON BOARD THE REGENT SEVEN SEAS NAVIGATOR.

Vive la difference The big difference between the independent traveller and the experienced cruiser is that the former hold on tight to their possessions, paperwork and passports, come what may. Experienced cruisers are altogether gentler, more trusting souls. The boss says hand over your passport at the beginning of the cruise and they do – not just for a few hours or even a few days but for the full duration of the excursion which, for some, could be as much as four months. For me, it has to do with the potential disasters every serial catastrophiser (such as myself) has at the forefront of their minds – the ‘what if ’ list of imagined problems. These will include an unforeseen event which will require paying a large bill, arrest for mistaken identity, detention for an unintentional misdemeanour (or for failure to pay that aforementioned large bill) and, on this trip, the need to buy an airline ticket to the next port due to one of the possible catastrophes actually becoming a reality. The point is, every solution includes the production of a passport which is not possible when my passport is locked on board inside the captain’s safe and I am locked inside the local jail. So, when the cruiser and the independent traveller meet, a compromise is called for. Suggestions on a post card, please.

Plain sailing After the initial clash of cultures, we have settled into our first cruise very well. By we I mean my Australian-based sister, Kathy, with whom I have been travelling for the past umpteen years. When booking, we chose our cabin with care opting for a mid-ship, twin berth, with balcony. Taking the hit for an all-inclusive deal has taken much of the hassle out of the whole process. We can eat where and when we like; we can drink where and when we like; and we can take part in lectures, activities and shore excursions on the same bases. So, when you are researching your cruise, have a calculator close by. All-inclusive has an expensive initial outlay but, once you have delved into your savings account searched every pocket and piggybank to gather together the 102 Westside | www.sheffieldvibe.com

required cash, that’s it. By contrast, a pay-as-you-go cruise will have you constantly checking to make sure you haven’t exceeded your allocated budget. But inevitably, there are things that will cost extra. For example, in my personalised Passages newsletter – thoughtfully delivered to every cabin every evening – I note that I can have an ‘Age Defying Pedicure’ for ‘Just $115’. The problem is that, while my feet may well acquire a more youthful appearance, the rest of me is ageing with alarming alacrity. The only real surprise is how rocky the journey has been. I have always been certain that a large vessel will be pretty stable, but the weather is such that everyone is rolling along the corridors – tail-end of the hurricane season will do that.

Rolling Along Things have calmed down considerably since those first few nights and we have made very rapid progress, almost imperceptibly. We visited the Cayman Islands, which were very pretty and very English – roundabouts, driving on the left etc. Had hoped to ‘interact’ with turtles and stingrays but cancelled due to the bad weather so visited the botanical park instead. A few days later we visited Tayrona Park in Colombia where the guide was useless and the trip pointless. He knew nothing about the flora and fauna of the area. In addition, the loos were awful, no water either to flush or wash hands – bit yuk, frankly. But I enjoyed Cartagena, a little further up the Colombian coast, the following day, mainly because I chose the soft option – the hop-on, hop off tour during which I hopped on at the beginning and hopped off at the end. Kathy did similarly but added a city stroll to her itinerary and took some great pics showing the contrast between the old and the new. The day after was the day I had been waiting for – the transit of the Panama Canal – and we did so in style.


TRAVEL

A dream come true We had been given an excellent talk the day before by the on-board Smithsonian Lecturer, Terry Bishop, so were well primed as to the history and the lay-out of the locks and the lake. We arrived early in the morning and were provided with an intermittent commentary which was not quite up to the Bishop’s standard but certainly added to the occasion. The captain directed operations from a mobile workstation on a cantilevered balcony so that he had an uninterrupted view of the canal and we had an uninterrupted view of him. We could see what was happening from every angle all day – it was really terrific. And, if anyone felt the need of a lie down during the long day, they still had a ringside seat, as it were, via the bridge dash cam relay to all cabins 24/7 throughout the entire cruise. For those who like the facts and figures, the Panama Canal is 48 miles long and connects the Atlantic and Pacific oceans, providing a conduit for ships and boats of all shapes and sizes. It comprises three sets of locks at either end of the Gatun Lake. The work was

originally begun by the French in 1881 but they did not have the required engineering expertise. The Americans took over the project in 1904 and the Canal finally opened in the summer of 1914. Its construction cost billions of dollars and thousands of lives. Small towing trains, known as mules, guided us through the locks. They run on tracks alongside, ensuring we don’t veer off course. Additional guide ropes are used to help the process. Alongside the original canal, there now runs a wider transit corridor which can accommodate larger commercial shipping. We were given maps of the canal and, later that evening, received personalised certificates as a memento but we didn’t really need a reminder. emember – you’re the boss. You need to established boundaries,” shouted our master baker, Emmanuel Hadjiandreou, as I cautiously pinched the sticky dough in my bowl. Who knew French baking was so much like a relationship? One person tends to wear the trousers, and you need to be clear about your intentions and boundaries or you may find yourself in a sticky situation. But the politics of love aside, taking a cookery course can be a rewarding experience, whether you’re a solo baker or a couple looking for an activity to bond over. And what could be more romantic than baking bread from the love capital of the world? What’s more, The School of Artisan Food is based on the idyllic Welbeck Estate, a gradeII registered historic park in Nottinghamshire made up of some of the country’s most

important rural heritage buildings and surrounded by 15,000 acres of woodland and farmland, as well as a deer park. Tucked away in a village-like setting, away from the main house, all was peaceful and quiet, save for the flap of a bird’s wings, as I entered the school on a bright and early Sunday morning. On arrival, I was led to a dining room, where I was met with a trough filled with huge, round loaves of flour-dusted bread. After sampling a delicious apple and cinnamon teacake with a cup of coffee, our class of 14 were greeted by Emmanuel and bakery co-ordinator, David Carter. We were in safe hands. Emmanuel has been in the baking industry for over 30 years and has worked extensively in Greece, Germany and London. Originally from South Africa, he now lives in Hastings and travels to the school twice

a week to train the next wave of bakers. David has an interesting background too. Proving it’s never too late to turn your passion into your career, he was originally a solicitor. After being made redundant some ten years ago, he decided the time had come to try something new. He had enjoyed one of the school’s short courses so much, he quickly enrolled in their ten-month advanced diploma in artisan baking. After that, he got a job at the school as a technician. Since then, he has climbed the ladder to bakery co-ordinator and has done baking demos at a number of cookery shows and events up and down the country. As we were taken to our workstations and put on our aprons in the adjoining room, I felt the same kind of apprehension the contestants on The Great British Bake Off must feel, when they are about to make bread in front of such renowned bakers. The day started with some teamwork, as we got into three production lines to weigh

out all the ingredients we would need for our pain de campagnes, baguettes and brioche. Emmanuel would demonstrate a step or two, then we would go away and try it for ourselves. This involved a lot of getting our hands sticky, as one by one, we folded each type of dough into shape – the opportune moment for couples to recreate that romantic scene from Ghost. Along the way, Emmanuel and David were happy to do some troubleshooting with us, exploring all the types of yeast, from the dry, active kind, to the fresh variety, which comes in blocks, suited to those who bake more often. Emmanuel also explained how he made the bubbling bowls of poolish, a pre-ferment made the night before from equal parts water and flour, which we added to our baguette and pain de campagne mixtures. We had reached the point where our doughs were resting, covered in our bowls. While Emmanuel’s balls of dough looked smooth with little excess on his bowls, he reassured us less seasoned bakers that our shaggy-looking doughs were not ‘a mess’, but rather ‘rustic’. Once we’d rolled our baguettes into four sausages, wrapped them in tea towels on a tray and put them in the fridge to chill, we went back through to the dining area for a well-deserved carvery buffet, created by the talented chefs at the school. After lunch, we put the finishing touches

on our loaves, scoring the tops of two of our baguettes and chopping the other two in places to make them look like sheaves of wheat. Our pain de campagnes, which had been proofing in their swirl-patterned bowls, had retained this shape and were scored, while the brioche were brushed with an egg glaze and sprinkled with sugar. The baguettes and campagnes were slid into a huge, industrial, steam-filled oven, and the brioche were slid into smaller conventional ovens. Et voila! Our beautiful bakes were ready. It had been a tiring day, but the satisfaction of seeing – and more importantly, tasting – our finished golden-brown bakes at the end made it all worthwhile. If you don’t think yourself much of a baker, a sense of humour is key. Emmanuel and David’s brisk teaching, combined with their easy-going natures, made the class much more relaxed and enjoyable. French baking is certainly something fun and different to try. Whether you are a regular baker wanting to up your game or a complete novice, you’re sure to learn a thing or two on this full-day course.

CRAFTSMAN NICK HUNTER, WHO SPECIALISES IN CARVING EXQUISITE WOODEN BIRDS. EXPLAINS HIS PASSION TO HANNAH SANDERS.

ucked away a corner of Stannington, perfectly nestled between the rolling hills, a craftsman is hard at work. Looking across Sheffield’s valleys and being greeted with breath-taking views, made even more spectacular on the day we met by the blanket of snow settling on the ground, this is where local woodcarver Nick Hunter spends his days. After studying fine art in South Africa, Nick returned to London to continue his studies before settling in Sheffield. “I had never thought about a career as a woodcarver – the cards just fell that way. I remember when I was a child, amongst posters of The Beatles and Jimi Hendrix was a photograph from National Geographic of an old man in a carving workshop. Looking back on that there must have been something

drawing me to this career.” As a talented self-taught woodcarver and skilled painter, Nick uses his many years’ experience to introduce simple and delicate beauty into people’s homes through handcarved birds. Through observing nature, Nick brings originality into each individual tiny carved bird, from the shape of the beaks to the sparkle in their eyes, and brings their personalities to life through the addition of delicate colour. For Nick, the creative process begins with researching and observing each individual species. He then spends time sketching, understanding the shape and different elements of the birds before the carving process. “Once I have the basic shape, I get a block

of jelutong wood, draw the side shape and cut it out. Next I move onto the beak which is added in as an extra piece of stronger wood and then it is time for the carving process. “I don’t sand anything, as that can sometimes deaden the effect. Once the bird is finished, I use a casein paint to add the finishing touches, and then usually place them on plinths make out of burr oak.” Whether he is carving a wren, woodpecker, kingfisher, wagtail or a starling, Nick uses a range of tools and his artistic eye to create something that captures their simplistic essence, and he makes every species hard not to admire. “It’s hard to give an exact measurement of the time it takes, as there are so many different processes. Sometimes I spend longer on the researching and drawing of a particular species before carving. “I actually really like the sound of the carving, and find it therapeutic. I worry about a lot of things in life, but running out of ideas is never one of them, and I find it satisfying when i transform the birds from a sketch into a 3D piece of artwork.” Nick enjoys creating unusual species on commission and with his experience in traditional decorative carving and his skills in hand-cut lettering, Nick can personalise each bird’s perch with dates, initials or quotes. “I’ve previously made a full sized toucan and a kestrel which were both interesting to create. I’ve also made bees which are popular, as well as snails and rabbits.” Aside from the contemporary birds, Nick also does more traditional work including decorative carving, hand-cut lettering and carving repairs. He’s previously done pieces for Chatsworth House which included an intricate snake banister and carved mouldings. “The handrails at Chatsworth were done in sections as it was such a big project. I started by carving the heads and tails before moving onto the scales. I got into a nice rhythm with
