AMBER WAVES Farm founders Amanda Merrow and Katie Baldwin met in 2008 during an apprenticeship at Quail Hill Farm in Amagansett. They were so inspired and honored to grow food for a community that prides itself on its agricultural heritage (despite its popularity with celebs and jet-setters) that they started brainstorming ways to continue farming together on the East End.

A short time later, they opened Amber Waves Farm, an oceanside farm whose mission is to unite food and community through education for aspiring growers, thoughtful cooks, and eaters of all ages. They accomplish this through their Market & Café, community-supported agriculture (CSA) program, and classes for children.

“A special part about our farmland and market is how much history there is that predates us, and how connected and attached people feel with the land,” says Merrow. It “makes us feel part of something bigger; the next stewards of a place that means so much to so many.” Lack of pretension and deeprooted appreciation for Amagansett’s splendid natural setting are values Merrow and Baldwin share with many locals in this hamlet that has become synonymous with laid-back luxury.

“Our tight-knit community is abounding with creative and hardworking people,” says Baldwin. Main Street in Amagansett is lined with local businesses offering everything from antiques to fine jewelry, housewares to skincare, and more. Amber Waves Farm is located in the former Amagansett Farmers Market and on the nine acres of fields behind it, just a mile from the ocean. Baldwin describes it as a place “where fertile land meets pristine sea.” Downtown, the Market & Café (367 Main St., 631.267.5664) is open from April through January. The café serves a seasonal farm-forward menu that includes sandwiches, salads, bowls, and pastries baked in-house using home-grown wheat flour and seasonal fruits. The market stocks locally grown fresh produce, flowers, and grains.
