The 2023 AHA (Vic) State Awards for Excellence showcased the remarkable achievements of the pub and hotel industry in Victoria. excitement. These events not only contribute to the vibrancy of our state but also elevate our industry to international acclaim, solidifying Melbourne’s position as the sporting capital of the world.

The 2023 Awards night was a truly memorable occasion that allowed us to come together and celebrate the exceptional achievements within our industry. As we reflect on the night, one of the highlights was the presentation of the prestigious Nikakis Award, an accolade that

honours individuals who have made significant contributions in shaping the fabric of our industry over a sustained period.

This year, the Nikakis Award was presented to Brian Kearney, an individual whose sustained contributions have shaped our licensed hospitality sector into what it is today. His tenure as Director of Liquor Licensing elevated him to a position where his experience, quick wit, and pragmatic decisionmaking became instrumental in rewriting Victoria’s Liquor Laws—an achievement that continues to serve our industry tremendously well.

Under his leadership as AHA (Vic) CEO, the association experienced remarkable growth and achieved numerous milestones.

We invite you all to cherish the memories of the Awards night and to be inspired by the exceptional individuals and establishments that shape our industry’s future. The budget presents a number of serious financial challenges for larger pub operations, and it is crucial that we understand the economic landscape and prepare for the changes that lie ahead.

Last month the Victorian Government announced its 202324 State Budget. The budget presents a number of serious financial challenges for larger pub operations, and it is crucial that we understand the economic landscape and prepare for the changes that lie ahead. Our concerns in this regard have been expressed to the Government.

The key provisions effecting members’ businesses are as follows:

Payroll Tax Threshold

The budget outlines an increase in the payroll tax threshold, a welcome initiative for smaller pub businesses.

Effective from 1st July 2024, the threshold will rise from $700,000 to $900,000, exempting approximately 4,200 businesses from payroll tax. Furthermore, from 1 July 2025, the threshold will increase to $1,000,000. However, it is important to note that the budget also signifies the gradual phasing out of the payroll tax-free threshold for larger businesses in the future.

COVID Debt Levy – Payroll of $10m+

Large businesses with a national payroll between $10 million and $100 million a year will incur an additional payroll tax in the form of a COVID Debt Levy, starting from 1st

July 2023. This levy, set at a rate of 0.5%, will be paid on the Victorian share of wages above the relevant threshold.

Businesses with a national payroll of $100 million or greater will face an additional 0.5% payroll tax. It is important to be aware that this levy will remain in effect until 30 June 2033.

Mental Health and Wellbeing Levy

The payroll tax levy on wages paid in Victoria by businesses with a national payroll exceeding $10 million per year will continue as part of the Mental Health and Wellbeing Levy. This levy is set at 0.5%.

Stamp Duty Reform for Commercial and Industrial Properties

A significant transition is set to occur in the way commercial and industrial properties are taxed. The budget outlines a shift from stamp duty to an annual property tax for such properties. This transition will occur after the next sale, and the annual property tax will be applicable after a period of 10 years.

Current commercial or industrial property owners will be exempt from this change. The implementation of this scheme is scheduled to commence on 1 July 2024.

COVID Debt Levy – Landholdings

The budget introduces changes to general land tax rates, specifically affecting the tax-free threshold. Starting from 1 January 2024, the tax-free threshold will decrease significantly from $300,000 to $50,000 for general land tax rates. Sliding scale charges will be implemented, with additional charges ranging from $500 for land values between $50,000 and $100,000, to $975 for land values between $100,000 and $300,000. Properties valued above $300,000 will incur land tax along with an increase of $975, plus 0.1% of the value of the landholdings exceeding $300,000.

It is important to note that current land tax exemptions will continue.

Business Insurance

The budget includes the gradual abolition of business insurance duty over a 10-year period. This will alleviate some financial burden on businesses.

Investment – Tourism and hospitality related:

The budget allocates funding amounting to $478 million toward various sectors, including creative industries, events, community sporting clubs, and tourism. Notable

investments include $200 million for the upgrading of local sporting clubs, $23 million for the Major Events Fund to attract events, shows, and live sports, and $32.5 million for the Victorian Masterbrand framework through Visit Victoria destination marketing activities and the development of an international tourism strategy.

These investments aim to rejuvenate and support our vibrant industry, fostering growth and attracting visitors to holiday in our state.

Pubs, Pots and ProfitS: Uniting for Success at Churchill Hotel

AHA (Vic) kicked off proceedings by traveling to Traralgon on the day before the PPP forum. We caught up with our PPP partners at the Crown Hotel in Traralgon for drinks with our host Brett Melbourne. We headed down a block for dinner at the Grand Junction where we were hosted by Annette Vogt, Kevin Campbell and the team.

We implemented a new format at the Wangaratta PPP so venturing to the Churchill Hotel the only addition we made was to include a Politician’s Panel with local National Members of Parliament; Tim Bull and Martin Cameron.

The panel was well received by all our Gippsland members and corporate partners. AHA (Vic) CEO, Paddy O’Sullivan engaged with the politicians, asking the key questions and then opening up to the floor for questions. Both Tim and Martin were extremely open and honest with all their responses which was great to hear.

The day consisted of great engagement and open discussion. The key take out from the day was the need to maximise and manage margins more than ever before with the current increases in cost of goods.

It was great to get the opportunity for David Gow from Charman Partners to talk about margins. PFD Foods spoke to the members on the key cuts of meat or poultry that allows for increased profit without affecting quality.

A special thank you to Guy Martin for hosting us at his hotel, the members for attending and all our PPP partners for supporting us in our PPP program.

CAMPARI IS LAUNCHING HOWLER HEAD NATIONALLY

Campari Group are Australia’s distributors of Howler Head® Whiskey –the official flavoured bourbon whiskey of UFC and the original banana-flavoured super-premium bourbon whiskey.

Howler Head launched in the Australian market in the on-premise exclusively within ALH venues in February earlier this year. The brand is now set for its nationwide launch in August, building on global sales momentum.

American whiskey sales around the world have spiked in recent years, driven in great part by flavoured whiskies. Howler Head is banana flavoured.

Launched in the US in 2021, Howler Head sold 70,000 9L cases by the end of 2022 and has quickly become one of the fastestgrowing whiskey brands in the United States, with sales now reaching 120,000 9L cases MAT.

Campari has a 15 per cent controlling interest in the Catalyst Spirits brand, which is also available in Canada, Brazil and the UK –in addition to the US and Australia.

“With bourbon whiskey serving as one of our global priority brand pillars for Campari Group and the recent positive trends in overseas markets, Howler Head is an ideal fit for our local portfolio,” said Simon Durrant, Managing Director of Campari Australia.

“In addition to being an exceptionally highquality liquid, in line with flavoured whiskey trends, Howler Head has established a clear unique brand personality and, through its deep relationship with UFC, we believe it will be a hit in Australia,” says Paolo Marinoni, Marketing Director of Campari Australia.

To promote Howler Head across Australia and leverage the brand’s global access to UFC’s 700 million fans, Campari have partnered with UFC fan favourites such as Oliveira, UFC featherweight champion Alexander Volkanovski, former UFC strawweight champion Joanna Jędrzejczyk, and rising stars Sean O’Malley, Charles Jourdain and Caio Borralho.

CHEF’S HAT EMPOWERS CULINARY MASTERY AT THE BOTANICAL HOTEL

Many will tell you to “go to Chapel St” for a refined yet relaxed dining experience in South Yarra; however, nestled right next to the Royal Botanical Gardens lies the stunning, lush and elegant Botanical Hotel. The Botanical has done well to snag Sam Hopkins as their visionary leader and former chef of 2-star Michelin restaurant, Narisawa, one of Tokyo’s finest dining destinations and a frequent contender in the World’s 50 Best.

Recently named as a finalist for this year’s Chef of the Year in the Restaurant and Catering Awards, Sam sat down with us for an exclusive interview where he shared his unique philosophy towards menu development and ingredient selection, shaped by his experiences working overseas. “We source the best from the best. We

have always believed in simple high-quality produce, minimal intervention, great seasoning, and simple cooking methods,” he explained. “That’s why we get amazing bread from Baker Bleu and we just warm it up because they’ve done all the hard work.” This respect has been integral to his culinary approach at The Botanical, which focuses on treating ingredients with reverence and drawing inspiration from the perfectionism he observed in Japanese kitchens.

As our conversation continued, Sam delved into the extraordinary outdoor dining space, a key factor in its nomination as a finalist for Best Outdoor Experience- Metropolitan at the AHA (Vic) State Awards for Excellence. It has become a go-to spot for Melburnians to grab a quick coffee, easy lunch or dinner after a

walk around the Tan. “We wanted to create an inviting atmosphere and ambiance where guests can enjoy their surroundings while savouring exceptional food and the perfect glass,” he explained. “Our consistency and commitment to fantastic service is our strongest weapon. And honestly, being opposite the Royal Botanical Gardens, I don’t know if there’s much else that I’d want.”

Hopkins also emphasised the importance of his partnership with Chef’s Hat Australia. “They’ve been instrumental in our success, providing exceptional equipment and unparalleled support,” he explained. When asked why he chooses Chef’s Hat, Sam emphasised the extensive range of products and exceptional service. He expressed a particular gratitude for Simon, The Botanical’s dedicated account manager at Chef’s Hat. “In terms of suppliers, no one really gets it to the same level as he does and Chef’s Hat. Whether it comes to procurement, getting the right equipment, being realistic with pricing and timeframes,” he shared. “He’ll take my call if he’s in the car on the way home and make sure he gets anything we need as soon as possible. His guidance and expertise have been invaluable to us and we’ve spent a bit of money with Chef’s Hat. So, the proof is in the pudding.”

One of Sam’s favourite tools, the Rational combi oven, came highly recommended by Chef’s Hat. “It’s incredibly versatile and reliable, allowing us to maintain consistent quality in our dishes,” he enthused. Sam credits his use of the best kitchen equipment as a significant factor contributing to The Botanical’s outstanding menu.

VICTORIA’S HOSPITALITY INDUSTRY SHINES AT THE 2023 AHA (VIC) STATE AWARDS FOR EXCELLENCE OUTSTANDING PERFORMERS RECOGNISED

The pinnacle event of the Victorian hospitality industry unfolded on Monday, May 15 at Crown Palladium, with a diverse array of venues and influential figures in the sector being honoured in 40 distinct categories during the sold-out gala dinner and awards ceremony.

More than 1200 individuals gathered in full force at Crown Palladium for the highly anticipated 2023 AHA Victoria State Awards for Excellence, where the industry’s strength and successes were honoured, bringing an electric energy to the room.

“The AHA (Vic) State Awards for Excellence is a celebration of the accomplishments of Victoria’s pubs and hotels, where we come together to recognise outstanding hospitality service and delivery,” stated Paddy O’Sullivan, CEO of AHA (Vic).

“We also express gratitude to the dedicated pub and hotel staff for their invaluable contributions to ensure the success of our industry.”

The ‘Nikakis Benchmark Award’ , named after the late Nick Nikakis, is the most prestigious award of the night which recognises an individual or organisation who by their sustained performance and commitment, serve as an inspiration to all in the industry.

In 2023, Brian Kearney was honoured with this title. Brian’s tenure as Director of Liquor Licensing and CEO of AHA (Vic) made a significant, positive impact on the licensed hospitality landscape in Victoria. His career contributions to the Victorian hospitality scene have seen positive change in liquor, gaming, wagering, smoking and planning.

The highly anticipated ‘Overall Hotel of the Year- Metropolitan’ was presented by Carlton & United Breweries. Contenders for 2023 included The Bay Hotel Mornington, The Camden Hotel (Caulfield South), The Grand Hotel Warrandyte, London Tavern Hotel (Richmond) and the title was won by the esteemed Terminus Hotel Fitzroy North.

The regional counterpart included finalists such as the American Hotel Echuca, The Middle Hotel Korumburra and Torquay Hotel to name a few, and it was the Grovedale Hote l that took home the prize of ‘Ian Larkin Overall Hotel of the Year - Regional’.

Recently, Gavin Keegan of PFD Food Services has the pleasure of sitting down with Jake Furst, the talented Executive Chef of The Kickon Group and the recipient of the prestigious Chef of the Year award. During their engaging conversation, Jake shared insights into his culinary journey and offered valuable advice for aspiring chefs.

When asked about his advice for those considering a career in the culinary arts, Jake emphasised the need for passion and dedication. He expressed, “ It takes a special sort of person to sacrifice what you have to get where you want to be. It’s a beautiful job to do, especially here when you can look out from the open kitchens and people come up to the pass to say their meal was beautiful. Those little things help and we get a lot of people coming to the kitchen to shake the chef’s hand and say, that’s the best they’ve ever had. There’s nothing better than that, creating that emotion for the people that come in and celebrating their special occasions. It’s

incredible. So, make sure you love it and give it a red-hot crack because it can give you a lot, it opens lots of doors and you meet a lot of people. “

Jake’s affinity for the culinary world stems from his upbringing. Growing up in a family that ran a catering business, he was exposed to the industry from a young age. Starting his culinary journey by washing dishes, Jake’s determination led him to pursue a professional career. At the age of 17, he ventured to Melbourne to begin his apprenticeship, solidifying his commitment to the culinary arts.

When it comes to his preferred style of cuisine, Jake’s love for steak is evident. From the art of dry aging to the delicate balance of charcoal cooking, he finds great satisfaction in preparing and serving exceptional steak dishes. Additionally, he appreciates the occasional indulgence in Japanese cuisine, drawn to its refined flavors and culinary traditions.

Throughout his career, Jake has found inspiration in renowned chefs who have made their mark in the culinary world. From the early days, chefs like Scott Pickett and Andrew McConnell have left a lasting impression on him. Jake also holds great admiration for the legendary American chef, Thomas Keller, whose innovative approach has shaped his culinary journey.

When asked about his approach to working under pressure in the kitchen, Jake confidently describes himself as a chilled chef. He believes in staying calm and collected, understanding the importance of maintaining a positive work environment and leading by example.

HOTELS REAP REWARDS OF KENO DIGITAL

Keno’s Victorian omni-channel play has delivered on its promise of greater enjoyment for patrons and a distinct, passive revenue stream for pubs.

The launch of Keno’s omni-channel game on 22 February has not only been enthusiastically embraced by hotel customers; it has also boosted venue’s commissions to a remarkable level.

Evidencing the popularity of omni-channel play (playing the same Keno game in and out of venue) and the success of the digital commission model, 87% of eligible venues who signed on to a Keno Access Fee agreement achieved at least one digitally aligned customer by mid-May reporting.

And venues with even one or two aligned customers experienced significant increases in Keno turnover.

While omni-channel play has delivered customers with a more seamless way of playing, it’s also opened the door to the potential for hotels to earn digital commissions for the first time. The results speak for themselves.

In the first three months, Keno digital play achieved turnover of $6.1 million, and $272,000 in trailing commission was paid to aligned venues.

By mid-May, 55% of total Victorian Keno turnover was being derived from digital players, averaging $1.9 million each week. Most importantly, 35% of digital turnover has a trailing commission paid to a Keno venue, however this can only increase as more venues get on board and reap the benefits.

These early statistics point to a more profitable future for Keno’s Victorian partners in the months and years to come if venues proactively embrace the opportunity to align their customers.

WHAT DO VENUES HAVE TO SAY ABOUT IT?

Nothing says more about the success of omni-channel play and its rewards to hotels than what venues are witnessing.

was astounded by how digital play had benefited the popular pub’s bottom line.

“We’re not a large Keno venue normally, but Keno digital has provided us with a completely new way to earn commission,” said venue manager Greg Dowell.

“So much so that we’ve earnt almost double the commission via digital play in the first six weeks since launch than we did via standard retail commission in the last 12 months”.

For the Irymple Hotel in Mildura, the increase in commissions from digital play came as a major and unexpected surprise.

“We’re not a big Keno venue, I was shocked when our digital commission started coming in – so much so I had to call my Keno Sales Executive just to make sure there wasn’t some sort of mistake,” explained venue manager James Kedmenec.

“Our digital commission is about 85% higher

than our retail commission, so we’re pretty happy with the new revenue stream Keno digital has created.”

Lynbrook Hotel south of Melbourne, which has achieved a strong number of aligned customers, experienced a similar spike in turnover, finding QR codes pivotal to uptake.

“We have 12 digital customers that are aligned to our venue so far,” said venue manager Ollie Mann.

“The in-venue point of sale pack was a critical element for us, particularly having the QR codes in all prominent Keno areas in our venue. It made it easy for customers to download the app and play.

“Our digital turnover is 88% higher than our retail turnover since launch and to our surprise 70% is coming from Keno Mega Millions. I’m thrilled our customers are enjoying the digital experience so much.”

Braybrook Hotel was delighted with how quickly omni-channel play was adopted by their customers, and how much they enjoyed the opportunity for play outside of the venue.

With the Keno App, hotel customers have a synergistic and convenient experience inside their favourite pub, and more flexibility to play anywhere, anytime they want.

“We’ve had several customers download the app in venue. One is a regular customer who

came in to play Keno and was then able to go home and enjoy continuing to play when he wasn’t in the venue,” Braybrook’s manager Lauren Comazzetto said.

“It’s great for us because the patron still comes in and enjoys the hotel’s amenities on a regular basis, but now he can enjoy playing Keno from the comfort of his own home as well. And our venue receives the benefits of out-of-venue commission.”

Make sure your staff are informed about omni-channel play and digital commissions by registering them on the Keno Training portal. More than 600 operators have utilised the portal to understand how the digital offering works.

With rising cost-of-living pressures, not everyone can think about topping up their super right now. But for any staff that want to, the end of the financial year is just a few months away. There’s still time for them to benefit from potential tax incentives by contributing extra to super.

Options such as salary sacrifice, taxdeductible personal contributions, and spouse contributions could help them save on tax. Some could even provide a handy financial bonus come tax time.

For those eligible, the government cocontribution is another good option, and could help your staff receive extra super benefits from the government. When eligible staff contribute extra to their super, the government will match their contribution by 50c for every dollar – up to a maximum of $500.

WALKING FOR CHANGE : AN INCREDIBLE FUNDRAISING TREK FOR THE WINDERMERE FOUNDATION

On yet another lockdown Friday back in 2020, over several evening drinks on Zoom, a group of ladies agreed to walk the Cape to Cape Track in WA to raise vital funds and awareness for Windermere and contribute to their wonderful work in supporting at-risk children in Victoria to live safer and more stable futures. After a few false starts, 6 members of the self-named “Beyond the Ladies Lounge” networking group, headed to Margaret River to embark on an incredibly challenging experience. The five days were demanding physically and emotionally as they trekked up to 20 kilometres on some days on a variety of terrain.

The 130km Cape to Cape Track traverses the length of Leeuwin-Naturaliste National Park and overlooks the adjoining Ngari Capes Marine Park, alternating spectacular sweeping cliff-top views with stretches of pristine beach. Featuring stunning forests, spectacular coastal outlooks, and a variety of fascinating cliffs, caves and rock formations.

HOW THE WATERLOO CUP HOTEL IS USING INNOVATION TO IMPROVE THEIR FOOD OFFER

The Waterloo Cup Hotel in Maribyrnong, Melbourne is one of the 23 venues in Victoria and 11 sites in South Australia operated by the Black Rhino Hotel Group.

The Hotel offers a diverse food menu- all at the touch of a button using Menu Master Speed Ovens, purchased from Comcater.

The goal initially was to implement a food offer that was available for their entire trading hours as an addition to their deliverance in customer satisfaction. After collating an attractive menu, the Speed Oven has been a success and also added another stream of revenue.

We caught up with Daniel Hansen, Food Operations Manager for the Black Rhino Hotel Group to uncover how they are using the Menumaster Speed Oven at the Waterloo Cup Hotel.

What food offering is being served in the Waterloo Cup Hotel? We currently offer a variety of snacks and meals from open to close. We’ve created a menu that requires little to no food preparation, can be easily stored and is safe to cook.

With Comcater’s help, we have programmed the Speed Ovens to be able to include things like pizza, pies, cheeseburgers, toasties and my favourite- mozzarella sticks.

It was important that we implemented an offer that was intuitive for our staff to operate after a short training session. The Menumaster

How quickly can you produce food?

Using convection, microwave and fan forced heat, the Speed oven cooks everything very quickly. It can be programmed to cook in multiple stages in a single cycle, which means you can ensure that food is heated though but is cooked to the right texture on the outside of the dish.

How easy is it to operate and program the Menumaster speed oven?

The Menumaster Speed Oven is really easy for our team to operate. It’s basically opening the oven, pressing a preprogramed button, closing the door and the job’s done.

What sort of challenges did you face when introducing a food service offering?

We were looking for an option that we could fit behind a bar, be in

customer view, can be easily installed and moved if need be and most importantly, easy to use by our staff.

The Speed Oven is ventless and does not require a range hood, only requires a small foot print, doesn’t look offensive, operates quietly and intuitive for our staff to operate.

For those reasons, it was the best option presented to us when we explored the market.
