Prefab by Archier is a unique solution in the architectural landscape. Can you discuss how this initiative addresses the challenges of the construction market and aims to make great design more accessible? Prefab by Archier revolutionises construction by making architecturally designed homes more accessible through prefabrication technology. This approach reduces construction times and environmental impact, addressing traditional construction’s inefficiencies and aligning with sustainable living demands. BBQ King Prawns Shellf ish Sauce This BBQ King Prawns & Shellfish Sauce recipe by LK Hospitality Culinary Director Stephen Nairn showcases Omnia Bistro’s signature blend of European bistro flair and Australia’s finest produce. Omnia Bistro 625 Chapel Street, South Yarra


Method

Components Ux 10 (very large) prawns, shellfish sauce, shiso leaves, and preserved lemon strips

Shellfish Sauce Ingredients 50ml extra virgin olive oil 100g fennel, sliced 80g leeks, sliced 50g shallots, sliced 35g black garlic, peeled 10g garlic, minced

1. Heat the olive oil in a large straight-sided sauté pan. Add the fennel, leeks, shallots, black garlic, minced garlic, and bay leaves. Sweat until tender. Add the kombu, bonito flakes, and squid ink, then toast lightly on the bottom of the pan. 2. Deglaze with brandy and reduce until almost dry. Add the lobster stock, mussel juice, and clam juice, then bring to a simmer. 3. Simmer for 20 minutes. Add the parsley and tarragon, cover, and steep for 45–60 minutes. Strain through a chinois, then thicken lightly with a cornstarch slurry. Season with lime juice, cayenne, and salt. Strain again.

Prawns (3x per Portion) 1. Defrost the prawns. 2. Keep the head and tail intact, but peel the shell and devein. 3. Skewer the prawns. 4. Grill on high heat in the Josper.

4 bay leaves 15g kombu, soaked and rinsed 4g bonito flakes 30g squid ink 50g brandy 600ml lobster stock 400ml mussel juice 300ml canned clam juice 7g tarragon 7g parsley 25g raw garlic, smashed

Preserved Lemon (make in advance) For a batch of preserved lemons, use 1kg (about 8 lemons). *Alternatively, buy preserved lemons from a quality retailer, and for this recipe, use one slice from a single lemon. 1. Quarter the lemons and pack them in salt. 2. Place the salted lemons into a vacuum-sealed bag and seal tightly. 3. Store in the fridge for a minimum of two weeks (ideally 4-6 weeks). 4. When ready to use, remove the lemons from the bag, wash them, and separate the flesh and rind. 5. Carefully trim the rind into a thin layer, square it off, and cut into uniform julienne strips.

Cornstarch slurry, as needed Lime juice, cayenne, and salt, to taste

Garnish/Service 1. Add the sauce to the centre of a large plate. 2. Place the grilled prawns on top. 3. Garnish with five preserved lemon strips and shiso leaves.

A Partnership for Change Marshall White & You Matter

In a recent episode of REB’s Secrets of the Top 100 Agents podcast, Deborah de Rossi, CEO of You Matter, and Nicholas Brooks, director and auctioneer at Marshall White Stonnington, discussed the critical role of community—especially men—in raising awareness, initiating conversations, and speaking out about family violence. Alongside host Juliet Helmke, they explored how You Matter plays a vital role in supporting women and children who have been impacted by family violence. Deborah explained how the charity organisation helps ensure housing security for these vulnerable individuals. Since its founding in 2019, You Matter has set up nearly 250 personalised havens for women and children who have left abusive situations. Beyond providing essentials—like beds, linens, and kitchenware—You Matter creates customised, welcoming spaces that respect each woman’s preferences, from colour schemes to personal interests, to help women feel valued and secure as they rebuild their lives. This September, a powerful event was held to address family violence. The ‘Stand Up in September’ campaign called on men to pledge solidarity against family violence, addressing the 40% spike seen during the AFL finals. Emphasising the crucial role men play in fostering respectful relationships, the event raised $27,000 on the night for You Matter and opened valuable conversations. As Nicholas Brooks put it, “Sunlight is a great disinfectant—shining a light on family violence leaves it with nowhere to hide.” Nicholas described the profound experience of representing the real estate industry as one of You Matter’s ‘Top 8’ men—community leaders who have pledged to stand against family violence. He shared how charitable initiatives create a lasting positive impact on both the community and organisations like Marshall White. As a major corporate partner of You Matter, Marshall White contributes through donations of funds, furniture, and volunteer hours. During quarterly ‘warehouse days,’ our team members gather to assemble furniture and prepare kitchen packs for the havens You Matter furnishes for families. Our support also includes sourcing furniture destined for disposal from properties we manage, helping create welcoming spaces for those in need. Initiatives like ‘Stand Up in September’ reflect You Matter’s belief, shared by our team, that family violence is a community issue best confronted with collective support, compassion, and awareness. ■
