C arlotta and G ee

Georgina Cavanagh tells us how a peaceful night in Byron Bay led to the creation of Carlotta + Gee, the linen brand she co-founded with friend Carlotta Casals, making luxury, sustainability, and style effortlessly accessible.

What inspired you and Carlotta to turn your love for linen bedding into a business? Can you tell us how a moment at a boutique hotel influenced your journey?

Carlotta and I stayed at an amazing boutique hotel in Byron Bay called The Atlantic. We had the best night’s sleep and felt so relaxed and inspired. We wondered why that feeling of small, simple pleasures disappears when you return to the ‘rat race.’ We started discussing our love for a great night’s sleep and the sense of calm we experienced there. That moment sparked the idea - where could you buy linen that wasn’t overly expensive, boring, or old-fashioned but still evoked that same comfort? And so, Carlotta + Gee was born.

Starting a business with a friend can be a unique experience. How did your combined backgrounds in interior design and PR shape the brand, and how do you balance your roles now?

It’s definitely unique - almost like a marriage! Very few people could come up with an idea, start it, and, nearly seven years later, still run a successful and growing business together. Carlotta worked in event management and aviation, bringing branded events like the Aperol marquee at the Australian Open to life. I worked in PR, building brand profiles and generating publicity for consumer brands. Our skill sets are completely different but complement each other perfectly. From the start, we’ve stuck to our respective roles, and it’s worked seamlessly.

Your linen is made from sustainably grown flax and is certified eco-friendly. Why was it so important to make sustainability a core part of your brand's mission?

Linen is a long-lasting investment. We believe in slow fashion - products that stand the test of time, make you feel good, and are kind to the environment. We love how flax, the plant used to make linen, is entirely waste-free. Grown in Normandy, France, every part of the flax plant has a purpose - flax seeds for salads, flax oil for varnishes, and fibres for linen. Unlike cotton, flax doesn’t require irrigation, making it an eco-friendly choice.

What does the process look like for developing your product range and choosing those beautiful earthy tones? Where do you draw inspiration for your designs?

Our designs blend European flair from Carlotta (who’s Spanish) with Australian influences from me. At Carlotta and Gee, we ensure our colour palette is cohesive, allowing customers to mix and match effortlessly. Every colour complements the others. Our latest tones, like Marine Blue, Green Fig, Yellow Stripes, and Tobacco Stripes, are perfect for the warmer months.

Looking ahead, what are your plans for the future of the brand? Are there any exciting projects or goals you are working toward?

2025 is shaping up to be an exciting year! We’re expanding our colour palette, which already features over 25 hues, with a few new additions. Plus, we’re thrilled to announce the launch of our C+G Kids range, including cot sheets, quilts, and everything little ones need to enjoy luxurious linen. ■

Ingredients Method

Prawns

6 (U6) Skull Island prawns, peeled and cleaned with heads left on (shells reserved)

2 skewers

Canola oil, for brushing

Salt and black pepper, to season

Taramasalata

peeled shallots, sliced

6 cloves confit garlic

1 lemon, zested and juiced

2 tbsp tarama paste

150g sourdough bread (crusts removed), soaked in cold water and squeezed out

100g olive oil

800g grapeseed oil (or any neutral-flavoured oil)

Salt and pepper, to taste

Aleppo Prawn Butter

500g butter

5g black pepper

5g cumin seeds

5g fennel seeds

20g Aleppo pepper shallot, sliced

2 garlic cloves, sliced Reserved prawn shells

5g salt

Prepare the Prawn Skewers

Thread three prawns onto each of the two skewers and set aside.

Make the Taramasalata

In a blender, add all ingredients except the oils and blend until smooth, adding a touch of cold water if needed. Once the mixture moves freely in the blender, gradually add both oils to form an emulsion. Do not add the oil too quickly or it will split. Once fully combined, the mixture should resemble thick mayonnaise, holding a peak. Set aside.

Prepare the Aleppo Prawn Butter

Begin by dry-toasting the spices in a frying pan until fragrant and lightly smoking. Add the butter, prawn shells, shallots, and garlic. Bring to a bubble, then simmer for 20 minutes. Remove from heat and allow to cool and infuse for another 20 minutes. Strain the butter and set it aside, discarding the solids.

Cook and Plate the Dish

Preheat your BBQ to high. Brush the prawn skewers lightly with canola oil and season with salt and pepper. Grill until the flesh turns opaque and the prawn heads become vibrant orange. Rest for a minute.

Spoon two generous tablespoons of taramasalata onto each plate and place the grilled prawns on top, pressing them down slightly. Spoon over the Aleppo butter, ensuring the prawns are wellcoated. Finish with a sprinkle of Aleppo pepper and a touch of lemon zest.

Balance, Choice & RESULTS

This week in the property market, we’re seeing a healthy level of activity, with an encouraging balance between buyers and sellers. A steady flow of listings is potentially providing buyers with more choice, while strong auction results suggest the market is absorbing this supply with confidence.

Over the weekend, Marshall White conducted around 90 auctions across various price ranges, with an impressive average of 2.75 bidders per auction - nearly three bidders per property. This level of competition indicates strong demand, reinforcing the balanced conditions we’re currently experiencing.

Marshall White’s auction success rate stood at 75% this past weekend, climbing to an impressive 85% after post-auction negotiations. These figures highlight not only buyer interest but

also sellers’ willingness to meet the market, creating successful outcomes for both sides.

The recent interest rate cut has added another layer of confidence, though many buyers had already factored it into their decision-making. Rather than spiking demand, the new rate level aligns with buyer sentiment and seems to be supporting the market's steady momentum.

Looking ahead, if current conditions hold, buyers can continue to enjoy increased choice, while sellers benefit from strong buyer depth. It’s a moment of balance, making it an ideal time for those considering their next property move. ■
