Sapphire Stories Hamish

Hamish Munro’s design practice is a personal pursuit driven by discovery. Each design is born from a process of problem-solving and the decoding of physical compositions, resulting in works that challenge and expand the boundaries of fine jewellery.

Every finished piece is crafted with meticulous precision and balance, standing as a testament to his ongoing personal pursuit of creating original works of the highest quality.

Now, Hamish unveils his latest work, the Sapphire Series - a stunning collection of one-of-a-kind solitaire rings and loose stones crafted from Australian sapphires.

This collection is a tribute to the vivid colours and striking clarity of sapphires sourced directly from artisanal mines in Queensland’s central gem fields. Partnering with photographer Josh Robenstone, Hamish embarked on a field expedition to document the journey of each stone, from its discovery at small-scale family-run mines in Rubyvale to its transformation into a finished work of art.

For Hamish, the true value of a gem is realised when sourcing a stone directly from the hand of its founder.

“Sourcing directly from the miners is essential,” Hamish explains. “It ensures not only the quality of the gem but also a connection to the people and places that brought it to life.”

The Sapphire Series celebrates the individuality of each gem, featuring pared-back, classic solitaire designs that highlight the unique beauty of every stone.

Offered as finished solitaires, or as loose stones viewable by appointment and finished to suit each stone’s individual character.

Explore the Sapphire Series in person at Hamish Munro’s Collingwood store, located at 38 Cambridge Street, or online at hamishmunro.com and embrace the natural brilliance and history of Australian sapphires. ■

Purè di Fave, Grilled Octopus & Cicoria

Giorgio Linguanti, award-winning cheesemaker and founder of That’s Amore Cheese, is soon to release a cookbook that showcases the cheese that has taken Australia by storm - Burrata. Generously shared for you to try, this recipe brings the decadent taste of Burrata into your own kitchen.

Ingredients Method

250g dried broad beans olive oil black pepper

1 bunch chicory (endive), rinsed, stems removed and roughly chopped 1 garlic clove, minced 1 teaspoon red pepper flakes 100ml olive oil

450g baby octopus, beak and eyes removed (ask your fishmonger to do this for you)

1 tablespoon lemon juice

4 × 30g baby burratas chilli flakes to garnish

Soak the broad beans in water for 6 hours or overnight to soften, then drain and rinse well. Once the beans are soft, peel off the skins and discard.

Transfer the beans to a saucepan and cover with water. Bring to a boil, then reduce the heat to medium and cook for 40–45 minutes until the beans are tender. Drain, then transfer to a food processor. Season well with olive oil, salt and pepper and blitz until you have a smooth puree. Place in a serving bowl and set aside.

Add the chicory to a frying pan along with the garlic, red pepper flakes, and olive oil. Cook over medium–low heat for 3–4 minutes, until the chicory is soft and tender. Remove from the heat and set aside.

To cook the baby octopus, bring a pot of water to a boil, then add the baby octopus along with the lemon juice. Reduce the heat and simmer for 25–30 minutes until tender. Drain well.

Drizzle the octopus with olive oil and season with salt and pepper. Heat a grill pan over high heat and cook the octopus for 3–4 minutes on each side until charred.

To Assemble

Spoon the broad bean puree onto a large serving platter, then top with the grilled baby octopus, chicory and burratas. Finish with a sprinkle of chilli flakes and black pepper.

A CONFIDENT START FOR 2025 R eal Estate

If the first weeks of 2025 are anything to go by, it’s shaping up to be a big year for real estate. Open-for-inspection numbers have been strong - stronger than the same time last year - which tells us one thing: buyers are back.

There is a real sense of optimism in the air. The prospect of lower interest rates - whether they come in February or later - combined with the feeling that the uncertainty of previous years is behind us, has led to renewed confidence. Buyers are engaging with the market in a way we didn’t see early last year, and this positive sentiment has exceeded my early expectations.

A Record-Breaking Start

January is typically a quieter month, but not this year. In fact, we experienced record-breaking sales right from the start. One of our standout results was a sale in Mount Eliza - over $7 millionwhich clearly indicates that high-end buyers are very much active.

At the very top end of the market was the recent sale of the “Coonac” estate in Toorak by a competitor agency. This recordbreaking result set a new benchmark for the Victorian prestige market, which bodes well for the high-end sector across the board.

What This Means for 2025

Right now, the market is showing strong momentum. More buyers at inspections, increased enquiries, and solid sales activity across all price brackets all point to a confident start to the year. If interest rates do drop in the coming months, we are likely to see even more activity.

If you have been wondering whether now is the right time to buy or sell, this could be your moment. The early signs suggest that 2025 is already shaping up to be a year of opportunity in the Melbourne and Mornington Peninsula property markets.
