WE’RE PASSIONATELY, PROFOUNDLY, EVEN PATHOLOGICALLY PUGLIESE. We just love it here. But it’s the kind of love that can only be nurtured by living years abroad in the pursuit of work, of university degrees, of specialised training, of learning new languages. One by one, each of us has moved back, driven by both the deep, deep love of life here and the feverish desire to share it with the outside world. We call them ‘cookery’ and ‘wine courses’ but you coming here to learn about our worldfamous food and wine is only the beginning.

COURSE INTRODUCTION OUR COOKERY COURSES Founded in 2003, The Awaiting Table has always been in constant evolution, creating new food and wine courses for our students. And while what we do always comes back to Southern Italian food and wine, some of our courses add other elements as well. We call them ‘cookery courses’ but you coming here just to learn how to cook our world-famous local food is only the beginning. * Corso giornaliero: Day course * Terronia: Our Southern Italian Wine Course * Corso alla casa di Silvestro: A week-long course in Silvestro’s home in Lecce * Corso al Castello: General course at the castle * Corso avanzato: An advanced course for returning students * Corso Bici/Cucina/Vino: A course dedicated to bicycling/cooking/wine * La settimana della salsa: The week we make the annual tomato sauce! * Quindici!!! Our 15th Anniversary/ Birthday week! * Olive You: A course dedicated to Making / Tasting / Cooking with our Extra Virgin Olive Oil * Food writing / Cucinca / Vino with Russ Parsons. * The Jewish Cooking of Southern Italy

STUDENT SERVICES This is more than a job for us, our programme much more than just food and wine courses. This is our life’s work, and we’ve been doing this long enough now to understand your unique travel and informational needs long before you’re even aware of them. Towards this we’ve created this Student Service section of our site, reserved just for our students.

THE AWAITING TABLE For than just an Italian Cooking School, for the last 15 years The Awaiting Table has been teaching the food, wine and cooking of Puglia and the Salento to students from 54 different countries, in the historic Centre of Lecce, and at the castle, just off the Adriatic. With a strong emphasis on wine, many of our cookery courses have themes, such as bicycling food and wine, extra virgin production, wine making, the annual tomato sauce and on.
