Foie Gras The Jean Larnaudie factory is based on the hills of Figeac-en-Quercy (France). Attached to its regional country cuisine, it has preserved its expertise for nearly 60 years. Its teams of men and women, devoted to their profession have continuously enriched and passed ont their passion for this “French culinary gem”. At Jean Larnaudie, whole foie gras is still cooked in a traditionnal manner. Very close attention is paid to the selection and sorting of livers that are still the basis of a quality Foie gras. Jean Larnaudie also offers ranges in line with South West PGI guarantees (Protected Geographic Indication) of French Origin.

Julián Martín has own livestock and farms, as well as a slaughter plant and several specialized production facilities located in Guijuelo (Salamanca) and the Alentejo region (Portugal). In this way, the control of the complete production cycle is maintained, guaranteeing the quality and homogeneity of the elaborations. At Julián Martín, we want to usher the public into the intense flavours of the products that we make as of a unique raw material: The Ibérico Pig. Our 100% Ibérico Pigs can also roam freely and enjoy the acorn season in our own meadowlands where they can also reveal in all the space they need for absolute perfect development, feeding and exercise. Charcuterie Italienne

The Dall’Ava Family has been producing San Daniele D.O.P. Hams since 1955.They produce 30,000 hams each year. Dok Dall’Ava only chooses the best legs from Italian certified pigs that are fed with cereal and milk serum. The legs are coming directly from the slaughterhouse fresh within two days. They are checked, registered and covered only with Sea Salt which comes from the natural park of Santa Margherita (Puglia). After two weeks they are ready to be dried in the traditional manner. Each ham is processed for a period of no less than 400 days, and finally sold with the Brand Prosciutto di San Daniele.

Escargots In 1921, our grandfather Omer Romanzini founded his cannery at La Rivière Drugeon. He inherited his know-how in the preparation of snails from a long family tradition. The production site located in Haut Doubs (Franche Comté), lived then at the rhythm of the harvesting seasons in its regions and neighboring countries. From a traditional home-made cannery business, the company became a pioneer in the marketing of frozen prepared snails in the 1970s and chilled snails in the 1990s. Modernized, structured and IFS certified, our factory now processes 45 million snails per year, mainly “wild” snails, collected in natural and healthy environments. Our raw material comes from Central Europe countries where we have our own subsidiary in Czech Republic. Innovation allows us to integrate new consumption patterns, and we regularly develop new products. For us, quality must go from field to plate, and we make it a point of honor to satisfy our consumers with constant quality products all year long.

Helix Pomatia snails They are also called Burgundy’snails. Once picked up by hand in the vineyards of Burgundy then sent by full baskets to Paris, the Helix Pomatia, or Burgundy snail, sees its collecting circuit disappear gradually in the 20th century with the modernization of wine techniques. Now, we have to import it, but its name remains the same and is not governed by a geographical appellation linked to Burgundy area.

IBERICO PORK

Porc Iberique

Ever since its foundation in 1933, Julián Martín has been based in Guijuelo, located in the southeastern part of the province of Salamanca, in the foothills of Béjar and Gredos mountain ranges. This area has a traditional link with the world of Ibérico, producing more than 70% of the total national production. At Julián Martín we respect traditional techniques, porks are farmed in a free range environment in the mountains, feeding from the largely available acornn found during the autumn season. Flavors are still there although we have incorporated the latest technologies to also offer a 100% guarantee to the consumer.

FROZEN IBERICO MEAT Our genetics: Alentejano Breed. The Alentejo Pig Breed, due to its genetic inexistence of crossings, registers a greater capacity for the infiltration of intramuscular fat, which explains the marble-like veins that gives the meat its unique greasiness and texture. The Alentejo Pig has black pelage nails and thin and elegant legs. The Alentejo Pig Breed grazes in total freedom in to the cork oak and holm oak up to 20 months. In the Acorn Season («Montanera» - November to March) it feeds mostly acorns. Rich in oleic acid, also known as Omega 9, the Acorn is responsible for the fat that melts in the mouth and the unmistakable aromas and flavours. Natural curing

The Isigny Sainte-Mere Pledges The cooperative works with some of Normandy’s finest milks. But, over and above its terroir, both the cooperative and its members follow their hearts and work according to Normandy traditions, preserving know-how accumulated over decades and transmitting it to future generations. Our organic butter is churned using our best creams. These develop all their flavour notes and mouth feel during the long, slow traditional ripening of the creams before churning. Our organic crème fraîche is made exclusively with milks from organic farms (AB certified). Fruits Congeles et Purees de Fruits Nature can express itself in our Fruit’Purée range: fruit purees with no added sugar or 10% sugar according to the flavours, without additional colouring, flavourings, preservatives or thickening agents. These new recipes « 100% fruit » offer two advantages : the ability for pastry Chef, chocolate and ice cream makers, Chefs and barmen, to sweeten at their convenience all their recipes but also to propose a fruit puree able to retain all the natural flavor of the fruit. Now it’s more than half of Capfruit purees that are proposed “with no added sugar”. Each puree is the result of a close partnership with the fruit growers, giving us total mastery of the procedure, control over the methods of cultivation and total traceability. The fruits are harvested at maturity and sometimes even transformed and frozen on site to ensure that no flavour is lost.

Capfruit’s skill and know-how is the fruit of experience and total mastery of the process, guaranteeing a top-quality range of purées that do not, in general, need pasteurization. Capfruit purees can be used as substitute for fresh fruit, and offer practicality, time efficiency, food safety, cost control and consistent quality throughout the year. Vanilla pods

Vanilla pods contain the seeds from the vanilla orchid plant. Real vanilla is expensive as each plant must be pollinated individually by hand. Then the green pods must be cured in the sun over several days, raised to high temperatures and ‘sweated’ in cloth to achieve the complex balance of sugars and aromatics, then dried and straightened out for several weeks. This process also transforms the green seed pods into the characteristic wrinkly, darkbrown pods.
