eresa is a busy wife and mother, but at every available opportunity, she escapes into a fantasy world. You see, Teresa is a romance writer, and her active imagination is helping write her third book. But Teresa had a real-life problem. She lacked an inspiring place where she could compose her nov-
els. She spent most of her free time writing in a local coffee shop, but she wanted a space at home where she could write and gather with fellow romance authors to work out ideas, celebrate victories and commiserate over rejection letters. She had an empty living/dining room in her large suburban home that suited the purpose perfectly, but the cold, blank slate of the room lacked passion — and furniture. So I decided to bring in my team and transform the space into a sophisticated and romantic writing retreat for Teresa. T
he men in my life don’t like squash very much. Even if I delicately season it and fry it to a Midas-esque perfect golden hue, they will eat a few bites and then refuse any more. At the office, the fact that I wanted to make this delightfully sweet and nutty dish got me front seat tickets to the grossed out face show from every male I talked to. Little do all the men in my life know, this past year, I have been sneaking squash into all sorts of dishes — burritos, cakes and ever turkey burgers. And they have been eating such dishes in blissful ignorant happiness. This spaghetti squash dish topped with home made marinara is the best way to mask all things horrible and squash. A great way to slowly turn any squash prejudiced taste bud is through slow introduction. When making this dish, I often add in regular spaghetti noodles to the plate to help lessen the intensity of the squash taste. This cuts some of the calories and adds some fiber to boot. The Muncy family spaghetti sauce is one dish dinner guests beg for. We pump it full of spices, meats and an assortment of tomatoes. It is easy, though, because we usually begin with a base of a canned sauce, especially if summer tomatoes are not in full swing. If you haven’t tried squash for awhile and you are looking for a dinner beyond the weekly spaghetti routine, give this healthy and delicious dish a go-around. If the boys keep turning up their noses, that means more for the rest of us to eat.
Roasted Spaghetti Squash Ingredients: 1 Spaghetti Squash 1 cup pecans, walnuts or pine nuts 1 tablespoon tarragon 1 tablespoon basil 1 tablespoon parsley Homemade marinara sauce — 1 pound lean ground beef 1 bell pepper 1 pound mushrooms 11/2 cans spaghetti sauce 1 can tomato paste
Directions: Heat the over to 375 degrees. Cut the spaghetti squash in half. Brush the opened squash with safflower or olive oil. Sprinkle spices liberally all around. Fill both centers of the squash with nuts. Cook squash for an hour. To make the marinara sauce, cook the lean beef in a pan with olive oil and then drain the grease out of the pan. Then add the mushrooms, chopped bell peppers and spices and sautee until vegetables are soft. Add the canned sauce and tomato paste. Let simmer until the sauce is thick. Serve the sauce over the squash.

Lighting to a room is as important as color, texture and scale. It sets a mood, tells a story, soothes or invigorates and it can serve a purpose. Placed over a picture, it leads the eye to something of interest. Placed just above the floor, it provides safe passage down a long corridor. Overhead, it illuminates a closet. At the flick of a switch, it provides the ability to read a book at night or gives better clarity to cut up vegetables. By controlling lights with a dimmer, you can dial it up for a large gathering or down for an intimate dinner. In fact, lighting is so important that it is worth taking the time to understand. Ambient lighting is like the sun. Its purpose is to provide general lighting on horizontal surfaces. In a large room, place can lights close to the wall for wall washing to illuminate items like pictures and bookcases. Used this way, the lamps light vertical surfaces, impacting the perception of space more than any other type of lighting. There is also task lighting which provides subtle illumination over specific areas. Use low sconces above a bathroom sink and in front of the mirror to illuminate your face in the reflection. This comes in handy for shaving or putting on makeup. The lights should be mounted no more than 30 inches apart and approximately 60-70 inches above the floor. In a kitchen, the lights to create a similar effect would be pendant lights and they should be mounted 30-36 inches above a countertop. I See Lighting/Page 8
