Why Gulf Coast shrimp dominate our waters and our menus By Ashley Kahn Salley

A quick search of the Internet reveals that recipes for shrimp are nearly as abundant as the crustacean itself. But this was not always the case. Frank Patti runs Pensacola-based Joe Patti’s Seafood Company, the establishment that made a name and a living for his family dating back to the 1930s. His parents, both of Italian fishing stock, devoted their lives to the industry before anyone wanted shrimp for anything other than bait. Their relationship with shrimp developed quite naturally. When Frank’s mama became pregnant, she told his daddy he needed to find work that would keep him close to home. So he gave up his monthlong fishing trips and bought a small boat he called The Babe, after his newborn son. Frank’s daddy, Joe, didn’t know a thing about shrimp, so he turned to his father-inlaw to learn the (quite literal) ropes. They built a little shotgun house, where mama sold fish, shrimp, bread and milk off the back porch.

“Daddy caught the shrimp, and I would go with him. The boat was only 30 feet long, with a little cabin and a gasoline engine — clutch and all — it wasn’t a marine engine. It was ‘make do,’ ” Patti recalls. “All the shrimpers had something like that. Small boats, all hand rigged. And he caught so many doggone shrimp he would fill up the boat. From that point on, he never ceased.” FROM BAIT TO PLATE But there was no money in selling shrimp for bait. So Joe came up with an idea that he would head the big shrimp and freeze the tails. He took them down the road to Mobile, Alabama, where a new process was catching on, yielding Individually Quick Frozen (IQF) shrimp. Now, Joe Patti had shrimp year-round, when no one else did. He believed in shrimp, and World War II proved him right. In those days, shrimp was unknown except in New York. A Savannah based Italian fellow by the name of Cicerone introduced it to the government, and the rest is history. “The war came along and the military needed fuel. They wanted his shrimp boats to patrol the east coast, and in turn they would buy their diesel fuel from him,” Patti explains. “He agreed on the condition that the government would buy his shrimp and introduce it to the servicemen. That’s how Americans started eating shrimp.”

small community that would grow in time, as snapper fishing was curtailed due to fishing regulations and shrimp became the mainstay of the Gulf of Mexico. IS FRESH REALLY FRESH? At that time, shrimp were headed and placed in ice bins. They could stay out for only 15 days, and it was a job to keep them that long. Joe Patti had the first freezer boat to catch shrimp and freeze them on board in the IQF style. Using IQF, shrimp are caught, headed, washed and placed in sacks to be put in the tank, where they are frozen solid within seven minutes. You’d have to cook them onboard the vessel for them to be any fresher.

Cicerone’s mama lived in Pensacola, and that’s how Joe Patti’s Seafood became the Gulf Coast source for shrimp. It was a

The Patti family began building modern shrimp boats and had 16 super trawlers at one time. “Then Daddy told me I had to stay in the shop instead of shrimping,” he recalls. “I said it wasn’t big enough to grow, and he said, ‘You make it like you want it.’ ”

It would take 30,000 gallons, or upwards of $100,000, for Frank Patti to fill the “Captain Joe” with fuel and oil. After that, 40 percent of the profit goes to the crew. “You just can’t make it, you can’t catch enough shrimp,” Patti says.

So Frank transformed Joe Patti’s from the tin-and-driftwood shack on the bay to the powerhouse it is today. Of course, nothing ever stays the same. As fuel prices rose, oil spills ran boats out of the Northern Gulf and restaurants turned to imported product, the big seafood markets had to change with the times.

With new industry standards, Patti now imports shrimp from all over the country and as far away as Argentina and the Antarctic. Still, he believes Gulf shrimp are the best.

TODAY’S CATCH Patti’s fleet of 16 boats is now retired, but the Captain Joe stands watch over the harbor just outside the family business. Company vessels are too costly to operate; today, it’s a family man’s job.

“I just love our shrimp,” Patti beams. “I was born into shrimp.” Florida’s Executive Chef and Culinary Ambassador Justin Patrick Timineri also touts the “Fresh From Florida” resource and sympathizes with industry leaders during these changing times.

“Frank Patti has been in this business a long time. Very few — likely no — seafood companies can be compared,” Timineri says. “He is an intelligent and quite colorful man, one-of-a-kind. Fuel, labor and the cost of keeping boats afloat are common issues we hear about everywhere.”


THE EVOLUTION OF THE SHRIMP COCKTAIL Once upon a time, the only way you’d find shrimp on a menu was the ubiquitous Shrimp Cocktail. Today, shrimp can be found on almost any menu in any cooking style — from Cajun to Mexican, Asian to Italian and beyond. (Just think of Bubba in the film, “Forrest Gump”: “You can fry ’em, sauté ’em, stick ’em in a stew … ”) “Shrimp cocktail is a classic menu item that anyone not completely familiar with Florida seafood can feel comfortable with ordering,” Timineri says.

“Florida Gulf shrimp are one of the most common seafood species available. Their sweet flavor combined with their modest price and limitless versatility make them a welcome addition for any menu.”

when we possess the natural resource in our backyard, Timineri and others “in the know” remain puzzled.

Not only are they versatile, they’re sustainable. Here, a short science lesson: According to Timineri, there are five species of food shrimp harvested from Florida’s waters: brown, pink, royal red, white and rock shrimp. Each of these species is prevalent at different depths, salinity levels and locations around the state. Shrimp can be found in near-shore waters and estuaries and use the estuaries as nursery areas. They migrate in and out of Florida’s estuaries, mainly during growing and spawning periods.

“The benefits to eating local are myriad. We do not know the rationale for purchasing imported shrimp beyond the financial one,” he says. “These imported farm-raised shrimp are typically lower in price and can be processed and packaged in a more uniform size than wild-caught shrimp. We always recommend purchasing shrimp fresh from Florida, as there is no comparison when it comes to taste.” In fact, our executive chef’s favorite thing about living and cooking in Florida is the amount of year-round access to local and regionally grown or caught fresh fruit, vegetables and seafood. “I know that when I buy anything harvested or caught in Florida, it is safe, fresh, flavorful and naturally healthy,” Timineri says.

The agencies regulating the harvesting of shrimp in Florida’s Gulf and South Atlantic waters have established fishery management plans to protect the resource. As to why so many restaurants insist on purchasing imported shrimp

2 cups Dixie Lily grits ¼ pound butter 1 (14 to 16 ounces) can creamed corn ½ pound shredded smoked Gouda cheese The Ya Ya 8 strips applewood-smoked bacon, diced 1 tablespoon minced garlic 1 tablespoon minced shallots 3 tablespoons butter 1 pound peeled, deveined jumbo shrimp

the family. Shake in the shredded cheese and stir till it’s all smooth. While your grits cook, bring a large saucepan to medium heat. Add bacon and cook for about 3 minutes, then add garlic and shallots. Sauté and then add butter and a splash of white wine. When the butter is half melted, add the shrimp. When the downsides of the shrimp become white, flip them and add mushrooms, scallions and spinach. Sauté for 2 minutes. Remove the shrimp. Pour in heavy cream and let simmer while stirring. When reduced by one third, add salt, pepper and hot sauce. Return shrimp to the sauce and combine. Spoon the sauce and shrimp onto heaping mounds of cheese grits.

Add cream if you need more liquid. Then tumble in the butter, drizzle in the rest of the cream, and stir till it’s all in

Couple of years ago, I had to move a guest due to renovations. After the guest departed, he emailed me, thanked me and said they really enjoyed their vacation and that it was their first trip with their four-month-old grandson, and it was a memorable one and they will be back.

There are many, but I’ll have to say Mary Alice Royals was my favorite. She was an 85-year-old grandmother from Jackson Mississippi. She would come down in the fall and winter months and stay a few months each year. She would come down every morning and do her exercises in the pool while I cleaned it. We talked every morning and she was always my favorite guest. I always looked forward to her arrival.

Chris Alvarado makes music — literally. He makes it out of wood and strings and shellac, on recording equipment in his studio and at live music venues all around the Northwest Florida Gulf Coast. Long popular as a local live act and songwriter, Alvarado, a Crestview, Florida native, began designing and building acoustic guitars back in 2007 and never looked back. Driven by a passion to create original works of art, this soft spoken, dark-eyed luthier pours his heart and soul into every instrument he makes.

Since founding Driftwood Guitars in 2007, he has been handcrafting guitars that pay tribute to the craftsman of the past, while keeping an eye toward the future of building innovations. People have taken notice. Now with a national clientele, and a waiting list for his instruments, Alvarado is one of a select few luthiers in the country that not only builds instruments, but also plays music. Alvarado makes it his goal to get to know every customer that commissions a piece, and to build a truly custom instrument; one that not only looks like the guitar they have been dreaming of, but one that feels and sounds far greater than the guitar of their dreams. Also, on Alvarado’s client roster is Brian Kelley, “BK,” of Florida Georgia Line. Kelley recently commissioned a piece with a specific inlay to remind him of “home,” while he is on tour, as well as while playing the instrument. The guitar featured materials from a special place near Kelley’s home and led to another commission that would pay ode to Nashville. “I am proud to say that each instrument that I build is not only playable, but it is a true piece of art,” says Alvarado. “Each guitar and inlay are passion projects for me. I enjoy bringing the instrument to life through handcrafting the piece, as well as the artistry that goes into creating it. Many of my guitars will go on to be family heirlooms which will be passed down from generation to generation, which is very humbling to me.” The base price for a current Driftwood Guitar is $6,550, with the average price ranging between $7,500 to $9,500.

Over the past 11 years, Alvarado has continued to build instruments while honing his craft and artistry and getting closer to his ideal of the perfect acoustic guitar. This journey has also taken him down the path of self-discovery. It is through his experience as a professional musician, as well as being an artisan that allows him to do both. Without his ability to play music, he would be unable to make guitars that are truly playable. Without his ability to build guitars, he wouldn’t be able to maximize the potential of the instrument he uses to make his music. It’s through these shared experiences that Alvarado draws from when making each and every instrument. Through the creation of elaborate inlays, he can make statement art pieces that draw on and encapsulate

the life experiences of each new owner of a Driftwood Guitar. The result is something that is far greater than a simple guitar. It is a piece of art that is the physical manifestation of its player in sound, shape, playability and design. Alvarado recently delivered an exquisite piece of art, which was a guitar for Mick Fleetwood, of Fleetwood Mac. The unique guitar, made of Quilted Maple and Sitka Spruce, featured abalone trim; as well as a custom inlay showcasing all the members of the band. The intricate inlay of more than 300 pieces, took 62 hours to fabricate by hand and was made up of mother of pearl, oyster shell, abalone, maple, reconstituted stone, ebony, and many other materials.

During the guitar-building process, Alvarado talks to clients about the shape of the instrument, their selection of wood and how the different bracing styles for construction will affect the sound. Together, they discuss the trim work, the wood and pearl inlays on the body, the fingerboards and the sides. On average, it takes him four months to build each guitar, and he normally talks to clients twice each week during the process. It’s important to him that the client leaves with more than just a beautiful instrument. Many of his clients describe the building process as an emotional experience because they participate so closely. For Alvarado, it’s just one more way to leave a mark on the music world. “I want to be known as an artist,” Alvarado said. I just want to make something that lives longer than I do. I’m going to die someday, and these guitars are going to live on, and that means I’ll get to keep making music long after I’m gone.”

The Van Winkle’s

FAVORITE PLACE to be a Family

For three decades Valarie and Daniel Van Winkle of Mariah Hill, Indiana, have ventured to the emerald shores of Northwest Florida for their annual family vacation. They’ve lost count on exactly how many properties they’ve stayed in, but can rattle off the names of several different places in the ResortQuest by Wyndham Vacation Rentals family they have tried — from The Palms in Destin, Island Princess, The Breakers and Waterscape in Fort Walton Beach and more. WHY NORTHWEST FLORIDA? “It’s gorgeous! Plus, for us it’s close enough to be a nice day drive,” Valarie Van Winkle explains. It all started on Okaloosa Island in Fort Walton Beach, Florida in the ‘80s. Dan was in the U.S. Army stationed in Huntsville, Alabama in 1984. When he could get away for some R&R, he and his buddies made a bee line to the Gulf Coast. Not long after he and Valarie met in 1987, he could not wait to show her the beautiful beaches he came to love. “We had a friend who told us about the Conquistador on Okaloosa Island. We stayed there a week and couldn’t wait to go back,” Valarie says. The new bride was excited to begin a tradition she grew up with of enjoying an annual family vacation in a special place.

The beaches are just the beginning of what Valarie looks forward to in Northwest Florida. “I really love the wildlife,” she says. “I love turtles, sting rays, dolphin, jellyfish, sand dollars — even the sharks.”

In the early years the new family stayed at Island Sands on Okaloosa Island. They piled in a one-bedroom and spent all of their time lounging at the pool or walking on the beach. Allison was 3 years-old, when she took her first beach trip. Way before cell phones, the young parents used WalkieTalkies to keep tabs on their only daughter as she played in the sugar-white sand.

When they visit, the Van Winkles plan stops at their favorite local spots and a tour often revolves around the great local food in Destin. A visit is not complete without the Grouper Pecan at Louisiana Lagniappe, barbecue at Hog’s Breath and Key Lime pie at the Donut Hole. Valarie insists it’s the best, “I know it is, because I’ve tried them all,” she says with a laugh.

Valarie and Dan enjoy exploring wines with tastings at the Emerald Coast winery on Old 98, recently they tried Emeril’s new Italian restaurant in Grand Boulevard in Miramar Beach. “That was special, because we usually eat seafood the whole week,” confesses Valarie. After the BP oil spill in spring 2010, Valarie was even on TV. “The oil wasn’t bad, but no one knew that. I got on TV and told everyone the coast was clear. I said, the only thing you’ll see is maybe some June grass, because that was the truth.” As Allison grew, the size of the Van Winkle’s vacation rentals grew, too. “When she got bigger, she wanted her own bathroom so we graduated to two-bedrooms.” Many trips family members joined in on the fun, too. “My sister joined us last year and this year, so we got the Tiki Beach condos right on the beachfront,” Valarie said. Today, Allison is 24 years-old. She got engaged at The Islander on Okaloosa Island with both sets of parents on vacation together. Her betrothed, Spencer Scarth, conjured a creative scavenger hunt with clues that ended in a proposal. Allison and Spencer married in May 2018, at TOPS’L Beach & Racquet Resort, on a nice spring day with not a drop of rain. Friends and family traveled in for an evening wedding that

started on the beach and transitioned to the pool deck. “She wanted a destination wedding and we made her dreams come true,” Valarie beams. “It was perfect, but it wasn’t just the location, the service was amazing, too. Anything we asked about was taken care of immediately. From the beginning stages and all the way down to last minute details, the staff was great. We couldn’t have asked for better.” For Valarie and Dan, ResortQuest fills an important role in their growing family. She says, “We value ResortQuest’s great service. We work hard for our money. When you go someplace away from home, you want it to feel like home, because you are going there to be a family.” The Van Winkles started coming in the spring over Memorial Day weekend, but six years ago they had to delay and didn’t make it until October. “We loved it here in the fall. Now we come over Labor Day Weekend. We think fall is the perfect season,” Valarie tells. In 2019 this beach-loving family is headed overseas to Curacao in the Caribbean for their 30th anniversary and Allison and Spencer’s one-year anniversary. Still, Valarie says don’t count them out either. “We have about four weeks, so I’m sure one of those we’ll get back to Florida.”

After the service, Dan went to work for Toyota, where he has been for 17 years. The couple is looking forward to retirement and moving to Florida in the next five years. They are looking at homes in Crestview or Shalimar that are within a half hour of their favorite beach, and plan to continue to be surrounded by a growing number of Florida fans. “We love ResortQuest. Some people prefer to wait for a fish to find their bait on a line dangling from a boat, pier or shoreline. Others choose to dive down on a tank of air or even freedive and spear them in their underwater lair. For both, it’s the thrill of the chase and a fresh fish meal. For spearfishermen, it’s the culmination of many adrenaline activities rolled into one. “It’s boating, fishing, hunting and diving all at the same time,” said Bob Provost, owner of Discovery Dive World in Valparaiso. “It never gets old. You never know what you’re going to see every time you go underwater.” Provost has been diving since 1984 and

says he can’t get enough of the adventure every spearfishing dive brings. As a former Air Force pilot who was stationed all over the world, he’s had the opportunity to dive in many unique places. When he came to the Northwest Florida Gulf Coast and decided to buy a dive shop in 2007, he was filling a void by supporting divers and spearfishing enthusiasts with an extensive selection of gear, proper training, travel and competition. Ever since, he’s seen the sport of spearfishing grow in the area significantly. Provost’s shop offers several different scuba diving classes, including the PADI (Professional Association of Diving Instructors) Underwater Hunter certification taught by diving veteran Bryan Kennington. Kennington instructs divers on fishing

regulations, fish identification, how to safely spear fish, mastering the kill shot and how to safely get it to the boat. Provost recommends that anyone interested in spearfishing first get a few dives under his or her belt. “When a diver is completely relaxed while diving, then they are ready to spearfish,” he said. Spearfishing is distracting and requires the ability to multitask underwater. For example, a spearfisherman might be wrestling a fish but must also keep checking his or her air supply and bottom time. “No fish is worth no air,” Provost said.

much more ethical and conservative than line fishing because divers are selective and leave no line behind. He personally enjoys the challenge of spearfishing amberjack, which he calls the “donkey of the sea,” because it puts up a tough fight if you don’t get a kill shot. Kennington, who is also a dive equipment technician, said he’s noticed that there is more of a diverse group of people diving because of underwater scooters, which propel divers to explore with less effort and half the air, and digital photography attracting people to the sport. But one factor working against the sport is the closure of fisheries, short fishing seasons and limits for some fish such as snapper, that discourage divers from going out because the cost to fill up a boat to catch only one fish doesn’t seem worth the gas money. Regardless, Provost has seen an exponential increase and interest in his annual dive and spearfishing charters to the Keys, as well as participation in the Gulf Coast Reef Hunter Annual Spearfishing Tournament. Discovery Dive World began the competition in 2010 with 15 participants, and it has grown to more than 50 contestants. The event is held in September at Legendary Marine in Destin. For one day, divers hunt and weigh in their largest fish in various species categories to win more than $5,000 in cash prizes and dive gear. “People love it and have a great time,” Provost said.

Besides the inherent risk of scuba diving, Provost says the risk is low when it comes to sharks, and he’s never heard of a spearfisherman being bitten by a shark. “You are not in their food chain,” he said. “They are curious and only want the fish that’s on you.” According to Provost, the five most common fish for local spearfishermen are snapper, grouper, cobia, amberjack and flounder. Some fish are off limits to spearfishing, such as pompano and red drum. His personal favorites are cobia and gray triggerfish, because they taste similar to halibut. Kennington said he believes spearfishing is

One of those champs is Miramar Beach resident Tony Sanabria, who caught an award-winning 21.3-pound amberjack. Sanabria enjoys bringing the fight to the fish and slaying tasty meals. “I’ve done a lot of rod-and-reel fishing as well, but there is something cool about going down to 100 feet and choosing the fish you want to eat for dinner,” he said. Sanabria is an NAUI (National Association of Underwater Instructors) master diver and an elite military diver with many underwater expeditions on the Emerald Coast and Florida Keys under his belt.

Diving as deep as 148 feet looking for big gag groupers is just a typical Saturday for Sanabria and his dive buddies. “The beauty of Destin-area diving is you don’t have to drop deep to get big fish,” he said. “My favorite spot is classified; all Gulf Coast fishermen keep their spots to themselves.” Northwest Florida is the perfect area for successful spearfishing because the water visibility is ideal, the best fish are in season and there are many sunken wrecks where large game fish dwell. Despite the beauty, spearfishing is a serious sport not to be taken lightly. Sanabria says it’s important to know how to handle stressful water environments while pushing the limits. “As long as you can stay calm in the water and be aware of your surroundings, you can be a good spearfisherman,” he said. “With practice, you will get better at placing kill shots (2 inches behind the eyes), which makes it easier to get control of the fish.” The keys to having a successful spearfishing trip are having a plan and heading out early.

Many scuba divers are giving up the tank and exploring spearfishing with just a mask, fins and the air in their lungs. “You’re able to see and interact (or hunt) with sea life easier since you’re not scaring everything away with bubbles,” Pooler said. “It’s definitely more of a purist form of diving. Miramar Beach The Clark brothers out of Dallas, Texas, had the vision for TOPS’L Beach & Racquet Resort back in the 1980s, and not a moment too soon. The land changed ownership many times over the years, and the previous owner had plans to develop an automobile racetrack. Luckily, these enterprising young developers had a vision to create a “residential commercial resort community” on the 52 acres of land we now refer to as TOPS’L Beach & Racquet Resort. On September 20, 1983, they formed the TOPS’L Master Association with documents that still govern how TOPS’L operates today. In 1986, the Clarks developed much of the infrastructure, including the sales and check-in office, TOPS’L Club, tennis courts, Tennis Village and Beach Manor, that you see today. Immediately following the completion of these projects, the Clark brothers were affected by sweeping changes to income tax laws, which forced them to release control of the property. In 1994, ResortQuest (known at the time as Abbott Realty) joined forces with a prominent businessman from Tennessee to purchase the property and continue to build out the plans for the resort. From 1996 to 1999, The Summit, Captiva, Sierra Dunes and The Tides were constructed.

During this time, at least one family unknowingly began what would become a more than 20-year tradition of visiting TOPS’L with their children and eventual grandchildren. “We used to stay in Fort Walton Beach, then Destin, Sandestin a few times, but then we found TOPS’L,” recalls Tommy Sortor, of Mandeville, LA. “I remember when we first started going down there. We might’ve stayed at the Beach Manor a few times, but then we found the Summit. We saw the Tides building go up. We were initially concerned that there would be too many people. But it didn’t turn out that way. There’s plenty of property and plenty of beach. We never find it really crowded like we did when we stayed further west. And now they have that little restaurant down there by the pool. It’s really nice when you can go up there for lunch from the beach and not have to go back to the room.” Tommy, and his wife, Ann, say they liked that the property was a little more secluded and quiet. Ann says, “We love to walk that long walk. It’s just beautiful. It’s restive. It’s relaxing. It’s calming.” It’s also why they love to stay at the Summit. “We enjoy that great expansive view,” says Ann. Tommy adds, “We see deer down there occasionally, too. Either from the balcony or a bedroom window – usually at night.” The family-focused couple is already planning their next trip to TOPS’L and looking forward to seeing the renovations and improvements on the property – particularly at the Club.

“If I can’t beat them now, I’ll outlive them,” jokes fun-loving, focused, fitness enthusiast, Evert Jonsson, Swedish National Champion tennis player. Evert is 75 years young now, but only began playing tennis when most players hit their peak, at age 32. Born and raised in Ovesholm, Sweden, Jonsson played soccer when he was young, and found tennis later in life. He’s now chasing what age group tennis players call “the gold ball,” a U.S. National Championship. Jonsson won a World Championship for Sweden in 2013 and says he has “seven or eight” National Championship titles for Sweden, but he’s still striving for the coveted U.S. title. A successful career in the computer industry brought Jonsson to the United States for travel and eventually full-time in 1990. Initially settling in Atlanta, he and his wife, Donna, decided that beach life was much more appealing than the big city, and

they moved to Destin in 1997. In 2007, the couple become owners and full-time Captiva residents in TOPS’L Beach & Racquet Resort. So, while Jonsson jests that he’ll just outlive all of his age group opponents until he can win that gold ball, he may only be partially joking. He takes his training and health seriously, working out at the Club regularly with personal trainer Kyle Higginbotham in the off-season, in order to maintain strength and cardio. Closer to tournament season, you’ll find him playing more matches and practicing with TOPS’L tennis pros Sam Vickroy and Joe D’Aleo. As soon as they open, Jonsson begins to “hold court. He

likes to get out there before it gets too hot, which he measures by “how many shirts I have to change into during one match.” Diet is an important part of this player’s training as well. He eats, “a salad a day.” In fact, Club Tiki just named a salad after Evert, which is a tasty mix of greens, grilled chicken breast, hard-boiled egg, bacon, walnuts, bleu cheese, cucumbers and tomatoes. When asked, “Why TOPS’L?” Evert flashes a smile and quips, “My kids in Sweden wouldn’t visit me if I wasn’t here on the beach.”

His face refocuses as it does when he prepares his serve and he adds, “At TOPS’L, there’s tennis for everyone. It’s a community and it doesn’t matter if you are here with your kids and just want to learn with them, or if you are chasing a gold ball.
