to Table It Takes a Village to Bring the Bounty of the Sea to Your Plate By Rosanne Dunkelberger

Consider the Red Snapper. The reef she calls home is 12 miles off the coast of Destin and 150 feet underwater, where an old chicken coop dropped on the bottom has become a great place for she and her schoolmates to poke around, looking for shrimp and crabs to eat on the Gulf floor. Suddenly, her eye lights on a piece of fish, just floating there in the water, a perfect morsel. And she eats it. It’s a beautiful fall evening, and you’re sitting on the dock of a Destin Harbor eatery enjoying a glass of crisp, refreshing sauvignon blanc as you watch the clouds tinged shades of pink and orange by the setting sun. Your server sets in front of you a plate of grilled Red Snapper accompanied by ginger rice and finished with a lemon caper cream sauce. You flake off a bit of the filet with your fork, take your first bite and it is … sublime. This is the story of what happens in the hours between Paragraph 1 and Paragraph 2. Some in this cast of characters, like the fishermen and the chefs, are obvious. The fish cutters, packers, license holders and boat owners, maybe not so much. And there are others in the mix too, such as regulators, biologists, fishermen of yore, perhaps even the hand of God that you may not have considered at all. A LITTLE HISTORY Let’s begin with the beginning of the Earth. By now, pretty much everybody who’s been around here more than 15 minutes knows about that quirk of underwater topography

— the famed “100-fathom curve” — where the relatively shallow waters one finds along the Gulf of Mexico coastline drop off dramatically just south of Destin. A look at a nautical map shows that nearby port cities such as Panama City and Pensacola don’t have the fast access to deep water — a fathom is 6 feet, so we’re talking about 600 feet deep — that Destin enjoys. Kathy Marler Blue, whose family has lived in the area for four generations and is associate director of the Destin History & Fishing Museum, explains what this means: “All of the Gulf’s species live in a column somewhere of depth, surface to floor, (and) anglers out of Destin can reach every depth of fishable water for all Gulf species quicker than any other ports.” The museum itself features more than 75 mounted fish, all caught in the Gulf off Destin. Because money is made when fishing, and not burning time and fuel getting to where the fish are, Destin Harbor has served as a base for commercial fishermen for more than 175 years. When Leonard Destin came to the area in 1835, there were no motorboats. Boats were powered by men with oars. There was no such thing as fishing reels, and there was no ice to keep the fish from spoiling. Consequently, fishing in the early days was done near shore with seine nets. For the first 100 years, in the remote area then known as East Pass, Blue says pioneer families were “poor dirt farmers and poor fishermen.” In the mid-1930s, a bridge was finally built that would connect the small community with Pensacola to the west. And over the years, the fishermen’s equipment and techniques would improve. A quantum leap came after World War II, with the advent of electronic devices that could pinpoint with great accuracy the underwater reefs and rock formations that attracted quantities of fish. Before that time, “you had to be very, very skilled to find where those structures were. It was an artificial cap (on the number of fishermen),” says local businessman Dewey Destin, the great-great grandson of Leonard. “There is no cap anymore. You can fish anywhere all over the world in any depth of water with those electronics and go right straight to the structure every time as long as you have a number that tells you where the structure is.”


ON THE DOCK In the early days of his Harbor Docks restaurant, owner Charles Morgan figured out the equation: Fish minus middleman equals lower prices. And so, in the morning, before the locals and tourists arrive in droves at the Destin Harbor landmark and begin digging into their fried Seafood Combo Plates, the dock below the restaurant is abuzz with activity at the Harbor Docks Seafood Market. The wholesale market supplies fish for Harbor Docks and Morgan’s other restaurants — Camille’s in Destin, Dharma Blue in Pensacola, as well as four Five Bar restaurants in Birmingham, Ala., Tuscaloosa, Ala., Athens, Ga., and a fourth slated to open in Gainesville in the fall. Their website lists nearly 40 local restaurants serving their fish, which are also shipped to restaurants and wholesalers throughout the U.S. and Canada. On a spring morning earlier this year, Chatham Morgan (son of Charles) was sorting snappers by size from a huge vat into purple plastic baskets. Five or so workers in bright orange rubberized waders grab the fish, dunk them in an ice water bath (“It kind of pretties them up a bit,” says one.), pack them with fresh ice into cardboard cartons and load them into a refrigerated truck. Chatham Morgan says the market will ship 25,000 to 30,000 pounds of fish on a busy week, “a few thousand” on a slow week. “I’d say our busiest week we pushed 80,000 pounds of fish.” All the more amazing when one looks inside the market, which consists of a crammed order-taking office, a fish-cutting room and an icy storage area that’s no bigger than a decent-sized master bedroom. “A lot of stuff (comes) in and out … it’s a revolving door,” says Chatham Morgan. “If you’re not constantly buying and selling fish, the fish is getting old. You’ve got to have fish constantly coming in; you’ve got to have fish constantly going out. It can get very chaotic.” Eddie Morgan (another son of Charles) says it is very possible that a fish swimming in the Gulf in the morning could be on your plate within hours. “Our mullet guy … starts at daylight (and) gets here at 9:30 in the morning. And we’re cutting mullet for lunch.”

“You need to make sure you get that triggerfish before they try to sell it,” he instructed one worker. Fish cutter Eric Stovall concurs. “I love triggerfish. They used to call them trash fish, they used to throw them back 20, 30 years ago. Now, it’s great.” The dock is populated by characters, including Tony Martin, who describes himself as “a worker, I guess. Partner, manager, indentured servant since ’84.” He’s the guy who sets the price the market will pay for fish. It’s not like the New York Stock Exchange, with posted prices. Martin keeps it all in his head — the law of supply and demand in action — all day, six days a week. He’s also aware of what boats are coming into the harbor and what sorts of fish they’ve caught. “It could be sold before they even touch the dock,” he says. While he drives a hard bargain, Martin says it’s more than an exchange of money. It’s more like a friendship and a partnership with all the fishermen. Harbor Docks owns a few boats. Most of the suppliers are independent fishermen, although Martin estimates between 40 and 60 boats sell exclusively to the Harbor Docks market. “I’m not high every time, but in general they make more money selling to me,” he says, because they’re supplying Harbor Docks’ affiliated restaurants. Last year, the restaurants used $650,000 worth of seafood items, according to Martin. One of the most expensive fish crossing the dock is the tuna, and a fish’s value is determined by a grade between one and three based on color, clarity and fat content. No. 1 is the best — sushi grade. Stovall, who’s been cutting fish for 15 years, demonstrated “plugging” a tuna to determine its grade. He shoved a thin metal cylinder under the fish’s fin into the meat, pulled it out and then pushed out a worm-sized core sample of the meat. “What you want to look for is the blood line; you want to see how red the blood line is. You want it bright red.” The fish he was testing had a brownish cast when held in the sunlight, so it didn’t make the (sushi) grade. “This would be a No. 2. It’s perfectly fine to cook. That’s a pretty fish, but it’s not a sushi-pretty fish.” The fish-cutting room has a concrete floor that’s wet as the cutters hose gore off the waist-high stainless steel table in between fish. The process is surprisingly low-tech. Order takers write down the types of fish and poundage needed, and the forms are clothespinned to a line for the cutters to see. “I don’t do anything until somebody says, ‘This is what we need.’ It is hard. It’s monotonous. I just stand there for eight, 10 hours just cutting away.” While he’s constantly sharpening them, Stovall uses only two different knives to cut everything from little mullet to thick-skinned cobia. Although he’s just 33 years old, Stovall wears braces on his wrist and elbow and admits, “I’ve got scars and puncture wounds all over me.” THE LAST WORD Despite all the laws, the hard work, bad weather, danger and the uncertainties of the trade, the fish business is still Captain Bryant’s job of choice:

“It’s better to be out there ridin’ around in the salt air, in your shorts and slaps, instead of a son of a bitch cramped up in an office wearin’ a suit.”

“We don’t want to send it to New York, who’s going to send it to another market in New York, who’s going to send it to a processor, who’s finally going to send it to a restaurant,” says Chatham Morgan. “We say, ‘Cut out as many people as you can and get straight to a restaurant.’ ” Using a brokerage called Sea to Table, the market can pack and ship orders to restaurants overnight. FLORA-BAMA

Sitting along the Alabama-Florida state line is a place that people from across the globe refer to as “their favorite bar.” The half-century old, Gulf Coast landmark, lovingly known to all as the “Flora-Bama,” has been welcoming patrons near and far since 1964, when the Tampary family from Pensacola, Florida founded the “last great American Roadhouse.” The Flora-Bama is known for doing two things very well: mixing delicious cocktails and providing never-ending live music from some of the very best local and national artists. To the untrained eye, the Flora-Bama may seem like a rough and tumble honky-tonk sitting near a Waffle House and a variety of condominium complexes, but to those who are lucky enough to experience the Flora-Bama for themselves, they realize this generational establishment is a true diamond in the rough. What started off as a small shanty located along the sand, people long to return to the “bar on the line” year after year. However, the famous dive bar has an interesting and colorful past surviving fires, hurricanes, politics and more. The founding family, the Tamparys, owned a beautiful strip of pristine beach along what is now known as Perdido Beach. The family envisioned a small gathering place along the beach where people could gather, listen to great music and enjoy the beach with a cold beverage in their hand. With much excitement, the original Flora-Bama was constructed in 1962. However, the roadhouse was never opened due to a fire, burning the building to the ground prior to its unveiling to the public. In 1964, Ted Tampary and his sons Connie and Tony reconstructed their dream and unveiled the now famous watering hole! In 1978, Joe Gilchrist, a friend of the Tamparys’ and a local real estate entrepreneur himself, took ownership of the multi-state establishment. As the area continued to grow in size and demand, Pat McClellan, a former Naval Affairs Officer, was hired to handle the rapid growth in business. McClellan hit success with the development of amazing annual events such as the famed “Polar Bear Dip,” as well as the beloved “Mullet Toss.” In 2011, John McInnis III of Orange Beach decided it was time to bring the Flora-Bama into a new era of success. Making the annual events bigger than ever, and launching the Yacht Club, Marina and the newly opened Ole River Bar, McInnis has continued to make the Flora-Bama what it was originally meant to be – a Great American Roadhouse. Whether you first visited the honky tonk in the late 60s, or will be dropping in for your first time during your next vacation, the Flora-Bama remains a favorite of locals and visitors alike, to enjoy great live music and enjoy breathtaking views of the beach while sipping your favorite beverage.

Food trucks have been around for quite awhile on the east and west coasts and are beginning to rev up the culinary scene all along the Emerald Coast. When most people think of food trucks, they think of a quick bite on the go or a hot dog at the ballpark. While food trucks are still a quick and convenient dining option, many trucks along the Emerald Coast have gone gourmet and are serving up a side of atmosphere along with their tasty eats. You will find food trucks from Crestview to the gates of Eglin Air Force Base, in Pensacola and on 30A. “My family loves grabbing a bite at the food trucks and enjoying an afternoon in Seaside,” said Destin resident Melissa Zurick. “We can all get something different, and then enjoy lunch on the lawn together. Barefoot BBQ in Seaside is the best barbecued pork we’ve ever had.” Many restaurant owners have jumped on the food truck bandwagon to help expand their brand and provide another location for customers. Sweet Henrietta’s Treats in Santa Rosa Beach is opening Henri the Cupcake truck this spring to expand the current catering service. If you are looking for variety at your next “truck stop,” Al Fresco in Pensacola offers fun urban dining and serves as a destination location on Palafox and Main Street. Four silver Airstream trailers make up the Al Fresco development and include Z Tacos, Gouda Stuff, Gun Shot BBQ and Greenhouse. The Airstream trailers are anchored by a restaurant, Shux Oyster Bar, and share a fully developed paved patio, including a misting system for warm days, umbrellas, tables and chairs. “I travel to Austin regularly and really enjoy the food truck scene there,” said Michael Carro, Al Fresco’s developer. “While Austin has amazing food, they don’t really have any great food truck parks. There are mostly gravel parking lots, and the dining experience is not as fantastic as the food.” Carro worked directly with the city to develop the Al Fresco corner, involving landscapers and architects to create an atmosphere that would be a memorable part of Pensacola. “We were trying to come up with a concept that offered a great experience and great food,” said Carro. “We wanted Al Fresco to be a great addition to the city, not just an afterthought. By working with the city we came up with something unique that everybody could be proud of.” Of course the Emerald Coast has its own twist on the food truck concept, which includes floating eateries on Crab Island. In the early 1990s, well before Wayne Anderson planned for his Cabana Café restaurants, he opened Wayne’s Dog House on Crab Island.

While Wayne’s Dog House is no longer on Crab Island, others like it are. The Sinkin Weenie is a floating restaurant offering a full menu. “A boat selling food like a truck is a huge novelty and something that most people have not seen,” said Brian Fleming, owner of the Sinkin Weenie. “We have locals that are regulars as well as tourists that come back every year for the food.”

Board All ages, fitness levels love the balance this simple water sport gives their lives By Jennifer Howard

Paddle boarding has people of all ages standing up and paying attention to this new way to play on the water. To say the sport is “new” is not technically correct. The subset of surfing was practiced by ancient Hawaiians and refined by surfers throughout the last century. Paddle boarding came to the Emerald Coast a few years ago, and it soon became common to see people who at first glance appeared to be standing on the water in area lakes, bayous, the bay and the Gulf. The popularity of the sport has spawned several paddle board race and endurance events that invite the novice and pro out on the water (sometimes in full costume) to test a whole other type of “water boarding” skill during individual and team competitions. Although the experience may be different for each person, paddle boarders agree on one main point: Paddle boarding is easy. Magda Cooper, co-founder of BOTE Paddleboards in Destin, said she has done demos for 10-year-olds up to 80year-olds. “We’ve never had a single person who can’t stand up on a paddle board,” she said. “It doesn’t require some amazing amount of balance. It’s a sport anyone can do, no matter what age or gender.” The ease of paddle boarding is one reason the sport has caught on so quickly, according to Steve Hill, owner of the Destin-based GUSU Paddlesports. “No matter who does it — a pro or a guy who started paddle boarding last week — you are pretty much doing the same thing. You’re just paddling and having a good time,” Hill said. To get started, it takes only a board, a paddle and a body of water, plus a Coast Guard approved PFD (personal flotation device). 51

A general rule is that board size should fit your height and weight. Surf-style boards that float on the water and water displacement models are available. A first-timer will be most comfortable in calm, flat waters. Getting on the board can be as simple as stepping aboard from the beach, or climbing up from wading-deep water. To get your balance, kneel just past the center of the board. When ready to stand on the board, place first one foot and then the other where your knees were. Feet should be parallel, about hip-distance apart, toes pointing forward, knees slightly bent and back straight. Balance with your hips, not your head. According to Cooper, your paddle should be about 8 to 10 inches taller than you are. Strokes should be close to the board and fairly short until you get the hang of it. Paddle boarding is like riding a bicycle: The more forward momentum you have, the more stability. Area paddle board shops offer demos as well as lessons to teach the finer points of paddling. Lessons are typically an hour to an hour-and-a-half and cost around $40. Rentals are widely available. Perhaps the most difficult part of paddle boarding is navigating all the acronyms. Paddle boarding is also known as SUP (Stand Up Boarding). Popular board brand name YOLO stands for You Only Live Once. Destin’s GUSU (Get Up Stand Up) is a retailer of their board designs as well as boards made by other companies. BOTE is not an acronym, but based on the German word for “boat.” The Destin-based designer/manufacturer sells its own brand both wholesale and retail. Stand-up paddle boards are also available in sporting goods and marine stores.

My family and I recently stayed here with another family (4 adults, 6 kids total) and we had a fantastic time. You can’t beat the location; you are just steps away from the beach. You just walk out the door and the beach and pool are right there. The view is incredible and there is really nice patio furniture which we had breakfast on every morning. I am pretty sure the mattresses are new because they were super comfortable. To sum it all up, great location, great furnishings, crazy beautiful view, and definitely worth the price.

Power Play Flyboarding kicks summertime fun into high gear By Martha J. LaGuardia-Kotite

A blonde man in a dark swimsuit and ski vest rose slowly out of the green water ebbing around Crab Island. He wore jet-propelled boots attached to a skateboard-like platform, secured to a 55-foot-long red fire hose stiffened by water jetting out of a personal watercraft. He hovered around 20 feet above the water, then, looking around from his solitary perch, he smiled before taking a deep breath and diving into the water. Disappearing for only a second, he surfaced and soared up 15 feet before diving down again, resurfacing, trailing an arc of water streaming from below the boots, looking like a playful, human dolphin. As he vaulted toward the U.S. Coast Guard Station in Destin, his acrobatics stopped foot traffic on the shoreline and caught the eye of boaters and kayakers near the Destin Bridge. He finished the feat with a magical-looking elevated hover 50 feet away from the beach. The sport is called Flyboarding and the man, Ben Merrell, is bringing it to Destin for anyone with an adventurous spirit and $250 an hour. “That’s like some real-life Spiderman,” shouted Reggie Williams from the water’s edge to the daredevil Flyboarder. The Kansas City visitor and his wife paused to watch. “I’ve never seen anybody be a dolphin.” “We get called Iron Man quite a lot,” said Merrell, a 29-year old former U.S. Army serviceman who co-owns Power Up Watersports with his wife, Amber. The couple launched their Flyboard rental business last summer, which also includes Aqua Cycle Water Trikes — those floating tricycles with gigantic puffy wheels you can pedal around in the surf. Joshua Sullivan, a 34-year-old local musician, is the assistant instructor and the person driving the personal watercraft. Sullivan

controls the throttle to limit the height and increase stability of the rider. The craft forces the water stream through the hose. “It’s like two fire hoses of water coming out of the board,” said Sullivan of the lift’s power. Crab Island is the business’ base of operations every day (weather and water conditions permitting) from mid-May to Labor Day. A Flyboard rental includes with 20-minute demo lesson for $100, with times and prices going up from there. To get to the launch dock, you can hail a water taxi ($10 round-trip, refunded if you rent a Flyboard) or swim to it from your boat. Locals and military get a 10 percent discount on rental fees. Flyboarding is easy to learn at any age (although riders must be at least 16). “I had three teenage girls all take a 20-minute flight,” said Merrell. “It’s all intuitive — I give you three minutes of instruction and 99 percent of flyers get it, feel it. There’s a happy balance of forward and backwards and confidence — equals sweet spot.” Merrell has gone as high as 47 feet on a Flyboard but would not take a customer that high. He flies clients around 3 to 5 feet off the water and teaches them how to fall. “Show me they can control the board, then I’ll take them up to 15 feet,” he said. “I had a 67-year-old man learn in four minutes.” The Flyboard was patented and introduced in many countries by Zapata Racing, based in France. Merrell said he bought the first board sold and distributed in the United States in June 2012. The water sport is popular with thrill seekers in Florida, Texas and in Chicago’s harbor, where Merrell plans to demonstrate his stunts this year. While he’s a flying fish in the water, Merrell admits that on shore he’s far from athletic. “I can’t stand here and do a flip. I can do a really ugly cartwheel,” he laughed. “There’s a back flip coming soon on the board. I’m always pushing the limits.”

Wine festivals are an imaginative way to fully appreciate life’s most seductive and magical potion … wine By Zandra Wolfgram Wine pairs well with the good life on the Emerald Coast. Wine tastings are not relegated to spring for whites and fall for reds any longer. From local liquor package stores along U.S. Highway 98 to fine restaurants along the coast, you can find a range of wines being poured nearly anywhere and everywhere. Heck, even your neighborhood grocer is splashing a sip into sample cups on most Saturday mornings. During both the fall and spring in nearly every county from Escambia to South Walton, you’ll find much more than wine when you attend any one of the area’s major wine events. As if sipping and swirling several hundred domestic and imported vino varietals wasn’t enough, today’s event organizers are intoxicating all of our senses with gourmet food tastings, mood-enhancing music and educational seminars — all staged with tantalizing visual fanfare. For nearly three decades, April has been a highly anticipated month for both local and visiting wine enthusiasts to the Emerald Coast. Nearly every wine lover in the area has the second week set aside for the three-day Sandestin Wine Festival in The Village of Baytowne Wharf. The Sandestin Wine Festival started on a rainy day in 1986 to give attendees of the Louisiana Bar Association something to do, but it has evolved into a springtime tradition for Northwest Florida’s largest resort. To keep it fresh, Sandestin, like many wine festivals these days, is serving up more than just wine to “wine and dine” festivalgoers. To help tempt wine lovers the resort will enlist the culinary talents of its new executive chef, Javier Rosa. “We’re excited to have him play an integral part in this year’s wine festival. He’s innovative, creative and uses a lot of flavor. That — along with having a lot of

flair in his presentation and culinary style — has you anticipating what’s next,” Werz says. Part of the appeal of outdoor wine festivals is where they are located. The Emerald Coast has no shortage of wonderful amphitheaters and green spaces near the beach. So, it is no surprise that tickets to annual wine events such as Uncorked, which is staged in October throughout the cobblestone walkways of scenic Rosemary Beach, are sold out well in advance. Alys Beach is home to the 30A Wine Festival, the area’s first signature wine festival held in March. It, too, asks its attendees to venture beyond wine by serving up bourbon, beer, barbecue and … a surprisingly competitive croquet tournament. There is plenty of food and flare at South Walton festival, but the real draw — as is usually the case with most wine festivals — is the opportunity to discover new wines by tasting them. Saturday and Sunday’s Grand Tasting will showcase more than 800 domestic and imported wines. The South Walton festival’s partnership with the Destin Charity Wine Auction Foundation means dreams will come true for some in our community who need them most. To date, the foundation has raised $8 million for local children’s charities since it formed 10 years ago, placing it at No. 6 on Wine Spectator magazine’s list of Top 10 Charity Wine Auctions in the United States. Yes, the Emerald Coast’s proverbial wine cup runneth over, and once again this spring during “wine season,” everyone from the newbie to the aficionado is poised and ready to drink it all in. If festivals came with directions, they might say: “For best results, pair with family and friends, then sip, savor and celebrate every delicious moment.”

12 trails pave the way for fitness and fun for nature-loving hikers and bikers By Zandra Wolfgram

Do you know where to go to get your “green” on at the beach? Head to the beautiful Panama City Beach Conservation Park located just west of Griffin Road off Highway 98. This innovative public green space protects and balances the area’s natural resources while providing 2,912 acres of outdoor recreational fun.

And that’s just the start. As ecosystems are restored and habitats are improved over time, more native species will be reintroduced to the park. The park is part of a network of trails and connects to Frank Brown Park and Aaron Bessant Park. It’s a long-term environmental project that’s off to a great start. The park is open daily from dawn to dusk. Hikers can trek 24 miles on 12 different trails (ranging from .6 miles to 11 miles) not to mention over a mile of boardwalks that meander through scenic cypress domes. A great place to start is the 1.8-mile hike on the Green Trail; it hits the high points closest to the trailhead, is a comfortable walk for children and is wheelchair friendly. This is a fantastic place to exercise furry four-legged friends. Up to two dogs per person are welcome as long as they are leashed. Bring a mountain bike and enjoy an easy ride through the restored pine forests on any of the trails. For your convenience, parking and public restrooms are located at the Trail Head building.
