Is there a better tailgate pairing than brats and beer? The sports mad fans of the Midwest might get offended at the very question. This recipe puts a new spin on the traditional tailgate dog. Here, we’ve wrapped a Villa Frizzoni Polish Sausage in gloriously spiced applewood smoked bacon and placed it in a toasted hot dog bun. Yellow onions are caramelized with diced jalapenos and infused with stout beer to maximize the spicy Midwestern tailgate flavors. Hot sauce adds even more sweet heat to the ketchup drizzle. One bite of this baby and sports fans will need to cool down with a crisp beer, giving an extra jolt to average check.
Bacon adds the perfect fatty/salty flavor explosion to a sausage. Cook the bacon about halfway before wrapping the sausage, to create a crispy blanket. Using stout beer to cook down the onions provides an amazingly sweet earthy tone. It balances well with the spicy vinegar toned Tabasco sauce.
