Hearty Harvest Flavors

To Warm Up Guests and Sales When the fall arrives, it brings with it a feast of sensory proportions. We’re talking a vivid mosaic backdrop of orange, reds, yellows, and browns. The rich, fragrant smells of pumpkin, apple, cinnamon, spices, and smoking wood linger in the air. Brilliant sunny days give way to crisp, chilly mornings and evenings. With its versatile root vegetables, bold, flavorful meats, and sumptuous, warm sauces, the fall harvest acts as a perfect culinary complement to this rush of seasonal senses – providing us with extra motivation to gather together, combat the colder temperatures, and make merry while dining out.

During this sweater season, the importance of providing guests with the complex and cozy tastes they crave is amplified; particularly with some restaurants offering year-round outdoor dining. For the October Dish, Performance Foodservice chefs have set aside the frights, instead focusing on popular bites that will bring comfort and convenience throughout the holidays. We start with hearty, protein-packed soups and stews to warm your menus, followed by a glazed carrot side sure to garner attention. From there, your senses will be stuffed with twists on the traditional turkey sandwich, beef stroganoff, and a French border take on pork chops with sauerkraut and assorted meats

and harvest veggies. For dessert, the flavors of pumpkin cheesecake and cherry cobbler are presented in fresh, festive ways that should increase your average check opportunities. The arrival of the sights, sounds, tastes, and feel of fall puts an added emphasis on seasonal comfort food. It’s also a signal that the holidays will be here soon. Performance Foodservice can help you prepare for this busy season with an array of fall flavors and products designed to soothe patrons and pack patios, even during the chillier months.

Chef Talk

To better develop flavor in this dish, based on the classic choucroute garni, sear the pork separately. You may also want to consider caramelizing the onion and apples to add some sweetness to the sauerkraut mixture. Check the tenderness of the pork after one hour of cooking, cook for the additional 30 minutes if you desire the pork to fall off the bone.

Gluten-free and available in three different delicious styles.

Few places in the world have mastered harvest cooking like the Alsatian region of France. One of the signature styles to come out of this gorgeous locale near the German/Swiss border is choucroute cooking, or French for “sauerkraut.” Featuring 4 oz., Prairie Creek® Pork Chops, this fall feast is garnished with a meaty combo of sliced Prairie Creek® Bacon, Black Angus Beef Franks, and Black Forest Ham. The slightly piney flavor of juniper berry is added to the crisp sweetness of Peak® Granny Smith Apples and Cobblestreet MKT® Sauerkraut, elevating this dish to its proper French name. Potatoes and white wine complete the impressively hearty repast, though our chefs also suggest serving with whole grain mustard and horseradish to enhance the abundance of fall flavors.

Hot to

Turkey Trot Ben Franklin may have wanted the turkey to be our national bird, but there’s no question that this fowl is a fall favorite. We’re approaching the time of year where an oven-roasted turkey with all the fixins turns into delicious leftovers and turkey sandwiches. Our Hot New England Turkey Sandwich recipe offers a take on the latter, while also adding a touch of a gourmet grilled cheese. We pile on the fall flavors by combining maple syrup, nutmeg and cinnamon for a spread that screams New England. To achieve maximum comfort food, sear on the griddle so that the Brickfire Bakery® Marble Rye turns a buttery, goldenbrown, and the Cobblestreet Mkt® Yellow Cheddar Cheese melts and blends into a fall feast.

Turkey

Transformation Classic cooking meets the international flavors that guests are craving – that’s fall fusion. Turkey soup is a hallmark of seasonal leftovers, and this recipe provides many of the same, soothing qualities: oven-roasted turkey breast in a warm, comforting broth with rice and apples. But consumers are seeking more than just the childhood soups they grew up loving. Mulligatawnystyle soups are derived from the Tamil cooking of southern India. Meaning “pepper water,” this flavorful broth is characterized by spicy curry seasonings, giving it a bright yellow fall appearance. Other ingredients such as dried thyme and chopped leeks provide its distinct flavor.

Looking to heat up your soup game this fall? Delicious soups start with a perfect base. And this fall, options like Custom Culinary’s® Savory Roasted Chicken, Beef, or Vegetable Bases can provide the authentic roasted meat flavors and subtle vegetable notes that bring your soups to life. With these bases, you can create soups and stocks full of made-from-scratch flavor that are easy to use across menu applications, save time and labor, and improve consistency in finished dishes.
