DANIEL NIGHTENGALE Food & Beverage Director, The Watch Rooftop Kitchen & Spirits A Charlestonian by way of New York City, Chef Daniel Nightengale joined The Restoration as the Food & Beverage Director two years ago, where he quickly immersed himself in the local flavors that were available to him. Nightengale continues to elevate the culinary experience for those looking for authentic Southern dishes, adding a new dimension of culinary adventure with his customized private dining program.
How did you get into the culinary field? I became interested in cooking when I was a teenager, and I would learn baking and cooking techniques from my mother. She would teach me how to make cookies and fudge, especially during the holiday season, and I was always more excited about the eating, rather than the making. Cooking was always a big part of my upbringing, my mother would pass down family recipes and make sure I knew how to execute them. We would also take trips to my family’s nursery, where they grew produce year round in greenhouses. What is your process for creating new menus or custom menus for guests? Creating menus for guests is one of the best parts of my job, as it really allows me to create a specific, sometimes romantic setting while also celebrating special events like holidays and family milestones. Taking cues from simple things that guests love can often inspire a 3, 4, or 5 course tasting menu. When creating a custom menu for a private dinner, what do you take into
consideration? I’m always thinking about time of year, seasonality of produce, special occasions and even inspiration from the guests. We love to incorporate where they have lived or traveled to during their lifetime. What role does food play in celebrating special occasions? Food can make or break any event, because it leaves a lasting impression on the guests. Additionally, the smell of food signals an olfactory response that can immediately take you back to a childhood memory, family tradition, or special event. We love recreating those memories through food, and of course adding our own special interpretation. How has Southern culture, or food traditions, influenced the menus you create at The Restoration? Southern culture is one of the main ingredients in our food. While we love implementing traditional techniques and recipes, we are constantly working to define how our culinary perspective helps shape The New South.

Aside from the ingredients that you use, what other intangibles make a meal great? The experience of a great meal is the culmination of so many elements: the lights, the room, the temperature, the table you are sitting at to consume the meal, and of course the company. All of these things can enhance the experience. Is there a progression in the menus you create? How should people feel at the end of a great meal? When writing menus, it is important to create a sense of progression and increase the intensity of flavor as the meal is served. We do this to intrigue the palate and build anticipation, course by course. A great meal should leave you full and satisfied, but still wondering what’s next. Director of Sales, The Restoration Karen grew up on idyllic Isle of Palms, firmly rooted in the people, traditions, and approachable Southern hospitality of Charleston. Winn truly understands every aspect of hosting an event at the hotel, as she joined The Restoration in June 2015 when the expansion and plans for the new event spaces and community outlets were coming together. With nearly two decades of experience in the market, Winn recognizes that unforgettable events and treasured weddings don’t come together unless you’re involved in every step, and her team works together to ensure that every vision, and detail, is brought to life. How do you leverage your Charlestonknow-how into planning events? Charleston is such a treasured destination, and the heart of our city is its people. Thanks to established partnerships and vendors that I’ve worked with for years, we can offer things that most of our competitors cannot. From private dinners in suites, cooking and cocktail classes, rooftop events overlooking our historic skyline to private yoga and wellness sessions, there really isn’t anything like The Restoration experience. It’s also an authentic Charleston experience, as I’m able to incorporate elements and details from this beautiful city, but also the warmth and approachableness our city is known for into events. What’s the beauty of hosting an event at The Restoration? Guests are always amazed when I provide a property tour and they see all the additional spaces that we offer from The Watch to the new street-front Port and the Residences which provide different backdrops and rooftops that we can customize. Not only are the spaces well designed and stunning — from exposed brick walls, so much natural light, and breathtaking views and sunsets from the rooftops — there is a comfortability that makes events feel like
you’re hosting in your own home. How are you taking the stress out of planning for couples or groups? The uncertainty of this year has allowed us to reflect on how we do things and to get really creative. Some couples have chosen to elope and then host a larger celebration when it’s safer to gather in large groups, and this trend inspired us to create our new “Elopement Package”. Couples can simply add the package to their hotel stay, or call us to take care of it all from coordinating the officiant, providing an 8’’ cake, a bottle of Veuve Clicquot, dreamy wedding florals from Roadside Blooms, to even choosing from four color schemes. The Restoration is their ceremony space, hotel suite for the happy couple and their guests, and the package includes a breakfast basket delivered the following day. We’ve simplified the elopement process, while still maintaining a truly intimate and special occasion. How is the hotel working to make guests feel comfortable to host an event during the pandemic? Safety is always our first priority and we’ve adjusted our capacities and have plenty of airy, outdoor offerings for small events and gatherings. Most of our event spaces have unique layouts that are more spread out,

extend over multiple floors or offer adjoining outdoor spaces. What does the hotel offer in terms of experiences and amenities for events? In addition to weddings, we’ve seen more private chef dinners and catering in the Suites. Most of our groups escape to the Indigo pool, which is the secret spot to relax and to catch an amazing sunset. The Exchange Suite is definitely one of the most unique event spaces downtown with a ping pong table that’s been known to entertain corporate, family, and wedding groups. We’ve even witnessed business decisions made by the winner of the game! If you could redo your own wedding at The Restoration, how would you plan it? While I loved everything about my wedding to my husband, if I were to do it again at The Restoration, I would love to have the ceremony on the King Street Rooftop at sunset with a reception to follow in the Exchange Suite with our closest family and friends. KIRK ROBERT Kirk owes his imagination to the technical side of photography. Working in his teens as an apprentice, he was fascinated by every behind-the-scenes production detail that made the final photo possible. Deconstructing and reinventing each element to get the perfect shot still drives him today. Kirk excels at creating and capturing ambient moments that feel natural, authentic and artistic. He specializes in fashion, lifestyle, product, food and drink photography. In addition to commercial photography, Kirk has worked as a creative director – concepting, producing and styling shoots. n property at The Restoration, we’re used to laughing and crying with our brides. And this year was no different. As our typically packed schedule of local and destination weddings quickly waned under the uncertainty of the pandemic, we became all too familiar with the heavy hearted conversation of indefinite postponement or even more unfortunate, cancellation of dozens of weddings planned for our rooftop and historic spaces. And then something changed. Couples stopped waiting for life to get back to normal, and decided to say “I Do” on their own terms. And if they were ready...so were we. While the pomp and splendor of a big Southern wedding still has it’s inevitable place in the roots of our tradition, here at The Restoration, we were thrilled to be part of couples that were rewriting their own script in our version of The New South. Our property has always been a bit left of center, and the creativity that emerged from what presented itself first as a challenge has been the start of so many new love stories, many of which we were fortunate to host.

Opting for intimacy over opulence, and choosing spontaneity over stress, we watched couples craft their ideal elopements in just days or weeks instead of months of planning. From tables for two under sparkling bistro lights, to candlelit dinners overlooking the Ravenel Bridge, we transformed our spaces to accommodate the most intimate of moments, creating an experience that belonged firsthand to the bride and groom, and for everyone else through pictures, story telling, and fond memories. We feel so fortunate to celebrate these milestones with our guests and friends of the property, and we applaud these couples on choosing love over fear. While we realize that this wedding might not be the one you had planned, we know that it is the start of a beautiful journey. And isn’t that what love is all about?
