INGREDIENTS
Pre-heat the oven to 200°C/400°F/Gas Mark 6. 2 x 300g packs British Pork Fillet Medallions Put the jacket potatoes in the oven to cook for 35 minutes. 4 Peaches In a large frying pan, sauté the pork fillet medallions 150g pack Sugar Snaps in the olive oil for 8 minutes, turning as you cook. 1 Quixo Chicken Stock Cube De-stone the peaches and cut into slices. Add these 120ml Baron Saint Jean White Wine to the frying pan and cook along with the pork 120ml Double Cream for a further 10 minutes. 120ml boiling water Pour the boiling water over the crumbled stock cube ½ tsp Stonemill Dried Thyme and mix to dissolve, pour this and the white wine 1 tbsp Solesta Olive Oil over the pork, sprinkle over the dried thyme, season Black Pepper with black pepper and cook for a further 5 minutes. 700g pack Frozen Bannister Add the cream and heat through. Jacket Potatoes Steam or boil the sugar snap peas for about 4 minutes, Butter – to serve in the drain and serve alongside the pork and jacket potatoes. jacket potatoes PREP
