The program that blows my mind is that the hotel staff is hired from unemployed locals and single moms who have never worked in hospitality. There is a hotel training school not just to staff the hotel, but also as a service to the community by creating a qualified hospitality pool. After their on-the-job Good Training Program is completed, recruits are networked and supported to find hospitality jobs in the Antigua area. In 2006 Amsterdam native Marten Dresen was backpacking and volunteering in Guatemala, unsuspecting that this journey would define the mission of his life. While volunteering he was inspired to buy a pair of desperately needed shoes for a little girl named Mirna. As he got to know Mirna, he wanted to do more to help her. Marten knew she would

ent and Holy Week in La Antigua Guatemala are full of century-old traditions. The first processions were held when the Spanish arrived in Guatemala in the 1520s and became very popular throughout the city’s history.

When all of the processional sculptures were moved to Guatemala City in 1773 with the capital’s inhabitants, Antigua was able to bring “new” century- old sculptures into the city and resumed the traditions in 1808. As time passed, Lenten traditions have been embraced. It is still common to participate in one’s grandfather’s or grandmother’s hermandad today. The key words are “tradition” and “devotion.” It is not necessarily an honor, a privilege or penance to participate year after year in these remarkable activities. Many of us remember the small processions through the 20th century before Antigua became the largest celebration in the world. Hermandades were small, with small processions, and bands sometimes played Guatemalan funeral marches out of tune. As our friend, Mario Gilberto, recently told us: Antigua in the 1940s still seemed somewhat abandoned. Mario’s family is part of the Hermandad del Señor Sepultado de Escuela de Cristo and kept the processional items at their house. His grandmother, Mamá Tona, was particularly in charge of keeping all of the processional robes in pristine condition, and his grandfather was in charge of the Roman attire. Year after year, families from this century-old city have taken care of the traditions with great devotion. Today new generations are very active. With the recent presentation of my updated book, Lent and Holy Week/Cuaresma and Semana Santa La Antigua Guatemala, I

have described the history, carpet making, velaciones, processions and calendar of more than 60 activities during a 40-day period. A list of Guatemalan funeral marches also embellished this new edition, which encompassed more than 40 years of research. It is always, however, difficult to convey the atmosphere of dedication that Antigüeños enjoy. 17

Pastores is the go-to place in Guatemala for handmade boots.

isiting Pastores to look for boots, I met with Alicia López, director of an English-language program for local kids. López and her students also offer free tours of the town, which has dozens of shops turning out handmade boots and leather goods. López’s English students have uncovered an extraordinary nugget in the story of how their town, population 3,700, became the go-to place in Guatemala for handmade boots. It is the story of Don Julio Acual 86, now retired. Back in the 1950’s, looking around at his friends and family, Acual decided the best thing he could do for his community was to learn how to make shoes. Pastores was farming country but no one owned decent shoes.

Acual walked the long road to and from La Antigua Guatemala each day to apprentice in the trade. He became the first shoemaker in Pastores and 10 years later started making boots.

“You had to be really careful with the women’s boots,” he says. “Sometimes the helpers were not and the boots would be sent back from Guatemala. Women’s boots have to be perfect!”

“If you were a butcher two years ago, now you’re a bootmaker,” Sánchez says. “If you were a shopkeeper, now you’re a bootmaker. I don’t know if they take the time and the care we took.”

The most difficult part he says is making a new design in a place steeped in traditions. “I always hoped that people would like them and buy them,” muses Don Julio softly.

His sentiments are echoed by his contemporary, Julio Álvarez at Botas El Paso.

Indeed they did. Pastores became known first for its cowboy boots. During the 1970s, Pantoleón Veras Sánchez 63, of Botas Veras was making upwards of 300 pairs a month. If you bought cowboy boots in the U.S. during that time, they may well have come from Pastores.

He recalls a unique advertising campaign conducted at an annual fall festival; it attracted vaqueros (cowboys) from all across the country, as well as musicians from El Salvador, Nicaragua and Mexico. “Here—take these boots and go home and tell all your friends that you got them in Pastores, Guatemala,” Sánchez recalls telling select patrons. The word spread and people started to come. In droves. Pastores, once a sleepy little farming community, was on the map as the place for boots, now with 50 shops offering an array leather footwear for men, women, and children, as well as purses, belts and accessories. 23

hile my heart and soul and culinary core are deeply Guatemalan, my desire and curiosity to learn about the synergies of all Latin cultures is only natural — after all, we share so many traits. From north to south and east to west, Latin America is rich not only in culture, but in unique cuisines. Recently, I traveled to a country off the beaten path for many and found a warm and very friendly land and people.

At times, I felt I was in Guatemala and as I turned the corner, in Mexico, and then in El Salvador and other countries that I have visited in the Latin American region. The towns and city structural similarity is another commonality that we inherited from the Spaniards. What is unique about Nicaragua is its cultural diversity and historical background.

I found a simple yet delicious cuisine that had all the traits of Mexican and Central American cuisine combined. Today’s Managua is a contrast of a recovering city with modern touches and an older world feel where carts drawn by donkeys awkwardly merge with the bustling traffic of cars and buses at all hours. This was touching and special. It reminded me that in Guatemala City some public services were once managed with donkey carts. While working animals are still used in rural parts in some Latin countries, in Guatemala City they have almost vanished. The cherry on the cake for me was the visit to the mercados and cooking with local chefs and friends. I Enchiladitas Boaqueñas–tostadas topped with spicy stewed meat and potatoes

While in the country, I spent time in León and Granada, both colonial and cultural, but uniquely different from each other. Granada resembles La Antigua Guatemala from a long time ago when I was a little girl growing up in Guatemala, and León is a laid-back place with a small-town feel. I enjoyed each one differently. Managua was transformed by past political strife and there really is not a quickly recognizable downtown. From the airport to my hotel downtown it felt that there was a short distance and once you are in the area many relevant places are within a few minutes from each other. Conflict from its past took its toll throughout the country, but it is more obvious in the capital. 70

found a simple yet delicious cuisine that had all the traits of Mexican and Central American cuisine combined. I identified unique cooking techniques and ingredients that give the cuisine its character and style; however, it is each individual that makes it truly special. I am fond of all things made with vegetables and found a new friend in Nicaraguan cuisine, as it contains plenty of the locally grown varieties of the typical Latin American staples such as corn, squash, herbs and spices, plus other unique plants. Key flavorings such as mint and sour orange predominate. What I learned and took in from Nicaragua will stay with me until the next time I visit to continue a deeper exploration of the north and southern coasts, which promises to be equally unique. If you care to visit, do so. Despite the country’s challenges of the past, I felt safe everywhere I went and the people whom I interacted with made me feel at home. In celebration of a sweet time spent with friends and colleagues, here is my rendition of a special dish that I truly enjoyed during my visit. Shredded Chicken and Vegetable Stew

Guiso de Pollo y Verduras

Shredded Chicken and Vegetable Stew Recipe by Chef Amalia Moreno-Damgaard (AmaliaLLC.com) 1 tbsp. canola oil 1 cup julienne yellow onion 1 tsp. minced garlic 3 roma tomatoes cut into 8 wedges 1 cup julienne carrots 1 cup julienne chayote squash 2 cups cooked shredded chicken ½ cup chicken stock 72

1 tbsp. tomato paste dissolved in a little chicken stock 1 tbsp. freshly squeezed lime juice Kosher salt and freshly ground black pepper Add the oil to a hot skillet and sauté the onion, garlic, tomatoes, carrots and chayote squash gradually for a total of 2 minutes. Add the tomato paste, the shredded chicken and chicken stock. Season with the lime juice, salt and pepper, and taste. Serve with Nicaragua-style guacamole, chile criollo, queso seco rallado, gallo pinto, crema ácida, and tortillas.

its from the businesses mentioned above support Niños. Seeing so much poverty, next to so much tourism, Marten came up with the idea of the “profit-for non-profit” business model for the Good Hotel. After graduating from the schools that Niños has created, these educated children would now need jobs. The Good Hotel both creates jobs and offers much-needed training to the local unemployed community.

The NGO has many entrepreneurial projects, but the biggest impact has been its three schools that provide a quality education to those who need it most. Schools provide English classes, extracurricular activities focused on developing independence, health programs, and social workers who support the students and their family’s physical and emotional well-being. While many people are inspired to create NGOs in Guatemala, Marten knew that for Niños to be sustainable and create real empowerment (instead of dependency) two things had to happen:

Prices range from $95 to $220, depending on the season and room type. Amenities include free WiFi, a 24-hour front desk, security, multi-lingual staff, concierge services and free iPads for guests’ use. During the development phase, I helped write the hotel’s social impact goals and I am proud to report that many of them have been met. One of things I most admire most is Good’s commitment to local artisans. They source their materials and labor locally and work solely with partners offering a healthy work environment and fair salaries to their employees. es, we’ve lots of bananas in this republic, and yes, they do taste much better here, tree-ripened to a vivid yellow color and rich in flavor, better than the green exported fruit ripened to yellow with gas at the destination.

We forget the banana is really a berry, growing on a tall herbal shrub that’s not officially a tree. And we’re surprised by many different kinds of bananas in Guatemalan markets, from finger-size to fat Gros Michels, “Big Mikes.” Banana varieties have rinds that vary from green and red to purple, brown, scarlet, pink, to the Cavendish “dessert banana” yellow that’s exported. One of my favorites is bubble-gum banana. Watch in the markets here for a little banana with a fuzzy bubble-gum-pink rind, rare but absolutely delicious. The Cavendish took over a half-century ago when earlier varieties of banana died off with a mold. Now a different disease is affecting Cavendish in some other countries, so a search is on worldwide for a new variety before Cavendish is lost. 94

Bananas—officially, musa—were spread by Portuguese traders from Southeast Asia. Most banana production stays to feed folk in the country where grown, though Europe and North America must import almost all their bananas. Today Guatemala is #4 in banana export worldwide after Ecuador, Costa Rica and Colombia. But back to the vivid banana yellow. Nothing else is quite like it. Ripe bananas are not lemon yellow, or butter yellow, not even golden yellow. Daffodils come close, but not quite. Little fragrant freesia blossoms, in tufts along streambeds, are even closer, but not banana. That banana yellow is a special shade on our Guatemalan palette.

If Sophie doesn't struggle to get away, we can assume that she has accepted this behavior because she loves your son and is bonded to him. However, dogs in general do not like to be hugged and kissed, especially by strangers. Just as we might feel if a stranger holds on to us so we can't get away and then starts kissing and hugging us, dogs don't like it either. Restraining an animal is extremely stressful and it puts you on the "not to be trusted list." An additional cause of stress for a dog is to stare directly into his eyes. In canine body language, it suggests you would like to interact—and not necessarily in a good way. Another type of stress for both you and your dog is when he jumps on you. Most often the response is to yell, "Get down!" Instead, work with your dog to teach him basic skills. Using positive reinforcement, repeat a specific word/phrase for down, sit, stay, etc. If it is "down" when your pet jumps up, do you expect him to have his belly on the floor when you say "down," or just all four paws? Use a different term such as "off" or "four on the floor" and teach the dog what the word means. The name of the cue is irrelevant. You could use the word "purple" as long as you show your dog the action that goes along with it. And finally, "let sleeping dogs lie," as they don't like to be bothered while sleeping any more than humans do.
