ecember holidays and Christmas bring a welcome respite from the struggles and strife in the world. It also reminds us all that love and compassion saves the day, every day. This month we start off with Guatemala Insight by Elizabeth Bell featuring December Celebrations, The Virgin of the Conception. Devotions began in 1617, and in 2012 the Guatemalan government declared it a Cultural Intangible Heritage of Guatemala. She explains, "This is definitely one of the most popular traditions in the country." Other holiday/ Christmas-themed articles include Christmas Season Around the World by Billy and Akaisha Kaderli; a Special Events calendar highlighting Christmas and New Year dinner and party schedules; Sensuous Guatemala by Ken Veronda reminds us, "Year-around, and particularly now at the holidays, that it's Apple Blossom Time." fter Burning the Devil festivities throughout Guatemala on Dec. 7, Christmas celebrations begin the following day with processions for the Virgin of the Immaculate Conception of Mary. This is definitely one of the most popular traditions in the country. The devotion of the virgin dates to the 1500s in Guatemala, while the “Rezado (procession) de la Inmaculada Concepción de San Francisco” in Guatemala City celebrates its 400th anniversary this year! The virgin officially became the Patron Virgin of Santiago de Guatemala in 1617 after a number of epidemics wreaked havoc on the city. Thus, the rezado was institutionalized and has been a yearly tradition since – known as the “Día Clásico.” The Guatemalan government declared it a Cultural Intangible Heritage of Guatemala in 2012. The very first cofradía in Santiago de Guatemala was for the Virgin of Conception 1598 sculpture, which was brought from Spain. In 1617, the Immaculate Conception was declared the Protective Patron of the City of Santiago de Guatemala (now La Antigua Guatemala), and this was approved by the president of the real audiencia, governor and captain general, Conde de la Gomera. In 1654, the president and royal military swore to defend her as yearly popular fiestas continued at San Francisco Church. The Fireworks, Ironwork and Pastry Guild of Guatemala became her official patron in 1673. King Phillip IV of Spain declared her the patron of Spain and the Indies, followed 16

by King Charles III of Spain declaring her the patron of all kingdoms and dominions under Spanish Catholic rule in the Courts of Madrid in 1759 with the approval of Pope Clement XIII. All graduates of the Guatemalan University of San Carlos swore to defend her—no exception! The list goes on, including a Papal Bull of Pope Pius XII in 1954 conceding her coronation. She is, indeed, very popular. Many cities will be celebrating! At San José Cathedral in Antigua on Dec. 3 at noon, the archbishop of Guatemala will be present to consecrate and crown the sculpture of the virgin—truly the most beautiful at that parish—followed by the processional rezado at 3 p.m. In a meeting on Oct. 21, the City Council declared the 1854 sculpture, with its exquisite silver crown and 12-star halo by artist Ventura Ramírez, the “Queen and Mother of La Antigua Guatemala.” Ciudad Vieja has a full one-week fair for the virgin, including quite a spectacular display of fireworks on Dec. 7 to Burn the Devil, with folkloric dances: the Dance of the Devils and the Dance of the Seven Virtues and Seven Vices. Their sculpture of the virgin— nicknamed “La Chapetona”—was restored this year in preparation for her celebration on Dec. 8. Don’t forget the food, which goes back to colonial times and helps make this a truly festive time of year. While other processions are known for being solemn and serious … this is a FUN time of year. urkey is quite possibly the most delicious main dish of the holiday kitchen. In the United States, it is consumed year-round in sandwiches and other preparations and it reaches a higher status at the Thanksgiving table. In Guatemala, turkey is the key ingredient of Kaq’ik, a Mayan stew from the region of Coban, and of festive meals during the year-end celebrations. Christmas Eve (December 24) is more important than Christmas Day (December 25) in Guatemala. On Christmas Eve, Guatemalans await the birth of baby Jesus at midnight. Throughout the day of December 24, family and friends have short gatherings at their homes to eat and drink and to deliver presents, blessings, and best wishes to their relatives and close friends. Everyone returns home before midnight to spend this special time with their loved ones. As soon as the clock marks midnight, everyone rushes to hug each other and say, “Feliz Navidad!”.

Neighborhoods erupt with joy as people light fireworks in the streets nonstop for about an hour. The fireworks create a loud, fragrant environment, and a smoky haze lingers for hours afterward. Dogs bark or hide. You may wonder about safety. Surprisingly, the incidents that make it to the news as a result of a firecracker going astray into a home, factory, or store, are few. Guatemalans dine on any one or a combination of foods immediately after midnight. This is a very intimate time for family, during which peace and love reign. People exchange gifts and best wishes right after dinner. On Christmas Day, they continue celebrating by visiting other family and friends. Firecrackers start again at noon and are repeated again on New Year’s Eve and New Year’s Day. It is such a deeply ingrained tradition, that it seems that everyone is following an atomic clock to start at the right time. The foods include Tamales Navideños (Christmas Tamales with red sauce and pork or turkey); Tamales Negros (sweet Christmas tamales with mole sauce garnished with almonds, raisins and prunes and can contain turkey, chicken or pork); Pavo Navideño (Guatemalan holiday roasted turkey); Ponche de Frutas (fresh pineapple and dried fruits hot holiday punch spiked with rum for the adults); and uvas, manzanas y nueces (red grapes, Washington apples, and a

variety of nuts in the shell). This is the only time of the year these latter items are purchased by almost every home in Guatemala City. For a Guatemalan style holiday celebration, it would be appropriate to choose any combination of the foods above. I choose Guatemalan Holiday Roasted Turkey because it is delicious and super easy to make. After all, turkey (aka pavo, chumpe, chompipe or chunto) is a classic food as is it native to the Americas, readily available and reasonable in price, especially during the holidays. e have been traveling the world for almost three decades, and have had the privilege of celebrating the December holidays in both Western and Eastern cultures alike. One year we experienced four different New Years in a matter of months! As those in Guatemala know, Christians celebrate the birth of Jesus in the first seconds of Dec. 25 and throughout the day, and it is a high holy day revered in the church. However, countries with large Buddhist populations such as Thailand, Laos and Vietnam are different. The story of Jesus’ birth by a virgin mother with the special star in the sky and the three kings following that star to the manger in Bethlehem holds no special significance to them. But all of these countries are more than willing to join a celebration, and they have adopted the Santa-Clausand-his-reindeer-style of Christmas, as well as gift giving. Mix this time of year with the Western New Year of Jan. 1, Chinese 20

New Year in the middle of February, the Balinese Hindu New Year in the middle of March and the Thai Buddhist New Year in the middle of April, and one can find themselves making merry from Thanksgiving in November (a U.S. holiday) all the way through the spring. Below we share some quick moments from our years of festivals and revelry in differing cultures. Latin America In a Christian country such as Guatemala or Mexico, there would be no reason at all to celebrate Christmas without the birth of Christ. He IS the reason for the season. No Christ, no Christmas. There are posada re-enactments of Joseph leading Mary riding a donkey searching for a room at the inn. Eventually they make their way to a Bethlehem-style manger, usually at the local home. You will witness processions, shepherds, Christmas carols, angels, and a special bright star in the night leading the way for the three kings to bring expensive gifts the newborn child king.

Guatemala With its deeply Catholic, post-conquest roots, Guatemala has plenty of Flor de Pascuas, Christmas trees, Santa’s elves and presents, but the primary focus is the birth of Jesus. Vendors sell hand-made figures complete with hand-carved sheep, cows, statues of Mary, Joseph, baby Jesus and angels. The three kings riding camels, bringing their gifts of gold, frankincense and myrrh to the stable, are also for sale. Pine needles provide a carpet in front of stores and hotels welcoming guests, and wreathes made of chamomile all provide the familiar scent of Christmas.

Mexico Pozole is a traditional soup served on Christmas Eve in Mexico. In Chapala, Mexico, we were invited to a friend’s house to join the

family for midnight dinner on the night before Christmas. Mama, with her full 4-foot, 7-inch frame standing on a ladder, stirred a huge pot of pozole on the stove with a wooden paddle large enough to power a canoe. She and the pot were about the same size! The entire family squeezed into the dining room, where botanas and bottles of tequila were on the table. Just after midnight, the pozole was finished and ready to serve. Sliced radishes, shaved cabbage and shredded pork were added at the last moment to the hominy and soup broth, with squeezes of lime. Tortillas all around! A tasty tradition in Mexico.

Traditionally, one pours water respectfully over the hands of the elders in the community, and clearing out of the home from the old year is done. These modern days, the celebration of Songkran has become a water festival, complete with buckets of water and fully loaded water pistols.

PAVO NAVIDEÑO Guatemalan Holiday Roasted Turkey By Chef Amalia Moreno-Damgaard (AmaliaLLC.com)

Serves 8 to 10 people One 10 to 12-pound turkey, rinsed and patted dry 1 tablespoon canola oil 2 tablespoons ground achiote (or use fresh paste if available) 3 teaspoons nutmeg 2 tablespoon guaque (guajillo) chile powder Kosher salt and freshly ground black pepper Preheat oven to 325˚F. Rub the turkey with the oil and all of the spices and salt and pepper. Transfer the turkey to the oven and roast it until done (3 to 3-1/2 hours), or when a meat thermometer reads 165˚F. Because of carryover heat, the turkey will continue to cook outside of the oven. Its internal temperature will rise about 10˚F, bringing it to the proper and safe temperature of 175˚F. If you wait until the thermometer reads 175˚F to take the turkey out of the oven, it will be overcooked and possibly dry. Serve the turkey with stuffing on the side and drizzle both with the 58

cooking juices. Pair with your favorite Guatemalan or personal favorites.

Amalia’s Note I prefer not to stuff turkeys before cooking them because this increases the cooking time and tends to dry out the meat. For a deeper marinade, rub the turkey with the spices 2-3 days before cooking day. Increase the intensity of the spices according to your taste. Carefully lift the skin over the breast and rub spices in between the top and under the skin.

To sweeten their meals, indigenous Maya used honey of various species of bees; the nature of sweets changed radically when the Spaniards introduced sugarcane. he usual cool mountain breeze was absent the day I stood atop the mountain ridgeline of Mixco Viejo, but still it felt like a smaller version of Peruâ&#x20AC;&#x2122;s Machu Picchu. Standing there your eyes drink in every shade of green as peace surrounds you, leaving you wondering if this is how the ancient Maya felt when they stood on the same peak overlooking these same mountains. The magic of this place somehow spans 600 years, connecting you to a part of something larger than yourself, an ancient world. The archaeological site of Mixco Viejo ruins is located in the heart of the Maya world, only an hour and half from La Antigua Guatemala or approximately an hour from Guatemala City â&#x20AC;&#x201D; perfect for a day trip with friends, family or on your own. Surprisingly enough, this site is not swarming with tourists, making it easier to roam the mountaintop ridge experiencing this ancient site as one of the Maya would have lived their everyday lives. 78

Archaeologists, scientists and historians alike praise the planning of this city.

Apple Blossom Time C

hristmas isn’t supposed to be “apple blossom time,” at least as thought by folk from farther north in the Americas, Europe and back where apples originated eons ago in northern China. Spring is time for apple trees to blossom, right? Then apples should enjoy the warm summer and be crisp and sweet by fall. That works up north, but in this “land of eternal spring” apple trees in the Guatemalan Highlands blossom whenever a tree wants to do so. Apples didn’t arrive here until the 17th century, when seeds from European trees were scattered around mountain villages. They did well enough to burst out with too many blossoms. Corn-and-bean farmers cherished the apple tree behind their house, and knew they needed to pull off about half the blossoms to get larger fruit. But they didn’t discard the apple blossoms. Some were dried for flavoring in cooking. Some were fer82

mented with apple juice for homemade hard ciders. And around Christmas, some were added to fruit punches in celebrating the holidays. Apples are in the rose family, and the apple blossom is rich with the aroma of the fruit. There are hundreds of apple varieties, and Highland bees continue to help propagate new cultivars as the bees move from one family’s tree to another’s. The Spanish priests told of the religious and mythical significance in Christian tradition. With some German migration into Guatemala, the Germanic mythologies of the apple and its blossoms were told around the country. Yes, it’s holiday time, and it’s also apple blossom time. Taste some of the ponche your neighbor is serving, and the punch from the family across the street, and the hot fruit drink at a friend’s holiday celebra-

tion. If you find the scent of apples in the punch, it just might be from a handful of fresh or dried apple blossoms. Year-around, and particularly now at the holidays, remember that it’s apple blossom time.

t the Women’s Justice Initiative (WJI), our Adolescent Girls Program works to prevent child marriage through community-based steps, improving girls’ knowledge of their rights and ensuring parents and community leaders take action to delay early marriage. One of WJI’s incredible staff members who is leading the way to a better future through her work with the Adolescent Girls Program is Delfina Raquec. Delfina Raquec at a training.

Delfina was introduced to WJI in 2012, when she participated in our Women’s Rights Education Program. The six-month legal literacy course sparked her passion for women’s rights and she joined our network of community advocates. As an advocate, she underwent intensive training to support women and girls in her community understand and access their rights.

I can’t get my dog to stand still for a nail trim. Any suggestions?

The key is to relieve your dog’s nail-trim stress so that you are more likely to have a calm, cooperative dog rather than one who fights to get away. These ideas can make a difference: 1. Provide ample and super-flavorful treats (cut up, pea size) throughout the entire nail trim; 2. Don’t force the issue by holding him down against his will, which can increase fear and resistance. Instead, build his confidence gradually by earning trust and associating paw and nail handling with good things the dog enjoys; 3. Divide the nail trim into smaller segments. Start with a spot on the dog that’s well within your dog’s comfort zone. Make sure that his body language is happy, relaxed and loose and that he’s readily accepting treats before continuing; 4. Don’t start with the clippers. Just handle your dog’s paws and nails with your fingers. Then move to other items, like the closed end of a ballpoint pen or a spoon, to mimic the sensation of something touching the nail; 5. Then reintroduce the trimmers by holding them in your hand and allowing your dog to approach, instead of bringing the trimmers to your dog. Encourage approach by placing a soft, spreadable treat like peanut butter on the handle. Or place the clippers on the ground with a “trail” of treats leading up to and around them; 6. Rather than doing all the nails at once, trim one to three nails a day. This alone will make the task much less stressful for you and your dog.

I ran to the window and looked out afuera, And who in the world do you think that it era? Saint Nick in a sleigh and a big red sombrero Came dashing along like a crazy bombero. And pulling his sleigh instead of venados Were eight little burros approaching volando. I watched as they came and this quaint little hombre Was shouting and whistling and calling by nombre: “Ay Pancho, ay Pepe, ay Cuco, ay Beto, Ay Chato, ay Chopo, Macuco y Nieto!” Then standing erect with his hands on his pecho He flew to the top of our very own techo. With his round little belly like a bowl of jalea, He struggled to squeeze down our old chimenea, Then huffing and puffing at last in our sala, With soot smeared all over his red suit gala, He filled all the stockings with lovely regalosFor none of the niños had been very malos. Then chuckling aloud, seeming very contento, He turned like a flash and was gone like the viento. And I heard him exclaim, and this is verdad, Merry Christmas to all, and Feliz Navidad!
