When I was a little girl growing up in Toronto, I had no idea where Christmas trees came from. As far as I was concerned, it was part of the magic of the holiday. Every year at the beginning of November, a “forest” would suddenly materialize in the parking lot of the church at the end of our street. Trying to imagine that those trees originated in a field or farm in the country was beyond city-tyke me. On the weekend before Christmas, my father would take my older sister and me to the lot to pick out the perfect specimen for us to decorate. We were a balsam fir kind of family, and I remember being among those tall evergreens – standing straight like sentries – and feeling each magnificent one looming over me. There was a kind of hush when I was surrounded by the evergreens, like I was in my own private hideaway with my dad and sister on the other side of the branches, and I loved it. But the choice of which one was right for our living room wasn’t easy for two young ladies who had definite ideas in mind, and inevitably the trip dissolved into fights and tears – and my poor father ended up also being responsible for mediating between my sister and me about which one to pick. It’s been at least 40 years since the days when the origin of Christmas trees was as much of a mystery to me as how Santa Claus could leave presents for kids who lived in homes without fireplaces. And each year I still experience a lovely sense of nostalgia when the Christmas tree lots spring up across the city at the first sign of snow. Although many of us now go and cut our own verdant conifer, this city slicker still loves buying her Christmas trees from a local parking lot.

cup unsalted butter cup icing sugar tsp pure vanilla extract egg yolks cups all-purpose flour cup cornstarch tsp baking powder cup thick dulce de leche

DIRECTIONS Preheat the oven to 350°F. In a large bowl, beat together the butter and icing sugar with an electric mixer until light and fluffy, about 2 minutes. Add the vanilla and then the egg yolks, one at a time, beating well after each addition. In a small bowl, stir together the flour, cornstarch and baking powder. Using a spatula, stir the flour mixture into the butter mixture until well combined. Roll the dough into a ball, cover in plastic wrap and refrigerate for 30 minutes to 1 hour.

Using as little flour as possible, roll out the chilled dough onto a clean surface to ¼" thickness. With a 2½" fluted cookie cutter, cut out 60 cookies. Place the cookies 1" apart on a parchment paper-lined baking sheet. Bake on the centre rack of the oven for 10 to 12 minutes, until set but still pale in colour. Allow the cookies to cool slightly before using a metal spatula to carefully move them to a cooling rack. Let cool completely. Spread about 2 teaspoons of the dulce de leche in the centre of the underside of 1 cookie. Sandwich with another cookie, pressing gently to spread the dulce de leche to the edges of the cookies. Repeat with remaining dulce de leche and cookies. Dust the cookies lightly with extra icing sugar if desired; serve.

tip If your dulce de leche is too thin and runny, heat it in a saucepan over medium heat, whisking constantly, until thickened.

“We’re in the midst of a stone movement,” says Barbara Sallick when we ask her what trend she’s into right now. “Textured stones make you imagine how the earth was formed – what was flowing a gazillion years ago to make that shape, colour or texture.” It’s this type of thinking that makes Barbara a trendsetter in the design world. In the ’70s, Barbara was employed by the Yale University Art Gallery while her husband, Robert, worked for the family’s plumbing business. Her keen eye for design and her passion for history and architecture, paired with Robert’s engineering expertise, led the couple to create Waterworks, a luxury bath company whose long-standing mission is “to restore the bath to its rightful place within the home – and to do so in a manner suited to modern family life.”

Q: What’s the key to great bathroom design? A: “Plan the layout. It doesn’t make sense to pick toilets or tubs if you don’t know where you’re going to place them or whether you’ll even have room for them. Make sure the space you’re going to create is completely functional and livable. The key to a great bathroom is always the layout.”

Q: What’s your advice for working with bold materials? A: “I was inspired by a New York architect’s use of a highly figured stone – top to bottom – in her bathroom. And while I may have taken a more timid approach, it was so rich and stunning that it made me realize if you’re choosing to make a really bold statement, have conviction in your design. The more you use of a dramatic material, the less invasive it becomes.”


DO YOUR HOMEWORK

Q: What’s the number one tip you’d give to a bathroom design novice? A: “If you don’t plan your design, thoroughly and thoughtfully, with your style, taste and who’s going to use the space in mind, it’s all going to fail. Do your homework. Don’t go shopping until you’ve checked out Pinterest and Houzz and read magazines and whatever books you can find (and not necessarily ones that are just about bathrooms, either). The whole idea is to find something that inspires you, whether it’s colour, texture or form – I get my inspiration from museums, books and fashion, to name a few – then gather, sort and edit all the information you have found. Don’t buy anything until you’ve done this.”

Q: How do you choose the best contractors for the job? A: “You absolutely must interview and vet contractors. Call references, see the work that’s been done and be extremely clear about your expectations. If you don’t do that, you may not be happy with the results. And if you do all those things, you’ll end up with a fabulous bathroom.”

KEEP IT SIMPLE

Q: How can someone on a budget achieve a luxurious look in their bathroom design? A: “You have to design the room the same way you’d plan on wearing your little black dress – dress it up or down, just keep it neutral because it’s really about how you put the jewellery on – in this case, the fittings and hardware. If you’re trying to do something on a budget, you’ll have the best outcome if you keep it simple.”

WHILE ENJOYING the shiny novelty of a wholehouse renovation, it’s easy to justify buying all-new furniture for the fresh space. The Stergiu family of Whitby, Ont., took it one step further by purchasing not only furniture and accessories, but Christmas decorations as well. Just in time to showcase their top-to-toe renovation in the annual holiday house tour, homeowners Christine and John had designer Orsi Panos (who was responsible for the home’s redesign) and designer Candice Brown deck their freshly painted halls. “We tailored the holiday decorations to the home’s new modern rustic style by using all natural elements like fresh greenery, pinecones, and even seasonal fruit and nuts,” says Orsi. “We are huge Christmas people,” says Christine. Case in point – they erected three Christmas trees. In the living room, there’s a spectacular eight-foot-tall beauty; the

dining room houses a narrower version, and in the media room, a favourite hangout for the couple’s three children (ages 16 to 21), another tree is decorated with the family’s collection of sentimental ornaments. On Christmas Eve, John, a talented cook, pulls off a spectacular dinner for extended family. The new open kitchen (shown in Style at Home’s April 2016 issue) allows guests to gather around the generously sized island and wander in and out through the widened doorway of the dining room. One thing the family was adamant about in the renovation, which Orsi happily accommodated, was retaining the wood-burning fireplace in the living room. “I love the sound and smell of a real wood fire,” says Christine. The original dated brick was covered with drywall and stone, but the crackling fire brings a cozy rustic vibe that’s especially delightful at Christmastime.

LIFE BELOW GROUND HAS ITS CHALLENGES. Anyone with a cellar knows that. Damp air, uneven floors and less-than-pretty pipes are just the beginning. “When it comes to basements, people seem to fall into two categories – those who ignore them completely, and those who cram them full of storage,” says designer and homeowner Christine Dovey. Christine confesses she fell into the latter group, but wanted to make a change when she set about reclaiming and redesigning her Oakville, Ont., basement. “Eighty percent of the space was filled with junk,” she says. For Christine, the big cleanup was born of necessity. She and her husband, Ian, have four active kids – three of them under the age of 11 – and both work from their

2,200-square-foot (not including the basement) home. “My desk was the bed, and his was the kitchen table,” she says. Renovating the 1,100-square-foot basement would lend lots more living space, creating extra room for work and play. It just made sense. “I decided to do it as part of a six-week design challenge,” says Christine. “But I quickly regretted the decision of working on such a tight timeline. What in the world was I thinking?!” The reno required creative solutions to tricky architectural challenges. For example, the basement’s supporting walls divided it into a series of small, awkward “rooms.” Some of these areas were elevated, requiring steps to reach them. Others had a less-than-pleasing view of what Christine calls “the guts of the deck.” Yet it was precisely these quirks that, in the end, resulted in two super-cool elevated

“It’s like climbing onto a cloud,” says Christine of the pillow-plump daybed in the elevated space off the hallway. Nestled in a nook lined with animal-patterned wallpaper and a toe-tickling rug, the room is an end-of-day oasis. And located right across from the hidden playroom, it’s a great spot for watching the kids. Since the basement isn’t bright enough to support flora, Christine “planted” an artificial tree for a green-living effect. lounge areas, a cozy fireplace nook, an intimate gallery-like dining area and even a secret playroom. Using layers of neutral-toned textures and pattern alongside a mix of Mid-Century Modern, contemporary and downright eclectic furnishings gives this below-ground space first-floor-worthy appeal. “I’ve never worked so hard in my life,” says Christine with a laugh. “I was DIY-ing my heart out! I assembled so much furniture, I needed bandages on my hands when it was all done.” But now the family spends almost all their down time here. “Let’s face it. Nobody ever wants to go to the basement,” explains the designer. “But when you give it a voice, it becomes a destination.”

THIS PAGE & OPPOSITE The hidden playroom is a wonderland. Wrapped in striped wallpaper with fresh features like a custom geometricdoor sideboard, the room has an eclectic kaleidoscopic vibe. Fun kid-friendly details include a vintage typeface holder that houses one kid’s rock collection, a durable beanbag sofa and a rattan armchair fitted with a zany seat made of stuffed animals attached to its frame with zip ties. It lets you cut a lemon or spill wine without rushing to wipe it up,” she says. The smoky blue veining in the marble complements the slate cabinetry.

ount on West Coast designer Tanya Krpan to welcome a challenging space. Faced with decorating an awkward two-part u-shaped kitchen in the 3,400-square-foot home of a young bachelor, she didn’t flinch. “The house is a new build with a fixed layout. I didn’t have the luxury of removing walls, selecting the location of the island or deciding on the footprint of the prep area,” says Tanya. “So, early on, I realized I was going to have to get creative with finishes.” Her goal was to impart a livedin look, but to do so in a way that would be dramatic and masculine. It couldn’t be strictly culinary since the homeowner likes to entertain but rarely cooks. Tanya’s approach paid off. Here are her top takeaways for getting the look.

DARE TO ADD DRAMA

A wall of dark cabinetry proves that visual contrast is a must. It’s divided into sections – there’s the refrigerator, a display cabinet and a bar area – allowing kitchen tasks to blend with relaxed entertaining. Guests simply sidle up to the bar for a drink or lean on the island to watch the game (there’s a television built into the cabinetry as well).

CREATE A SPACE FOR DISPLAY

Glass cabinet doors reflect sunlight from the windows and showcase tableware and vases. Tanya lined the back of the cabinet with Calacatta marble tiles to mirror the island. “Since it was a small space to cover, marble was affordable to us,” says Tanya. Her tip: “Watch for blow-out sales on remainders. You can save a lot that way.”

INCLUDE STORAGE DRAWERS

The everyday cooking zone in the main kitchen is all about ease. Pots, pans and bowls are under the cooktop, easy to grab quickly – something that’s essential for the homeowner’s no-fuss meal prep. SUSPEND LIGHTING WITH STYLE

COLOUR-BLOCK THE CABINETRY

The island is a gathering place, so Tanya selected warm wood for both its base and the bulkhead above. To define the cooking zones, white uppers were chosen for the perimeters of the main kitchen as well as the butler’s pantry. For casual ambience, a bank of moody soft-black cabinetry was added; it features an integrated bar and television nook.

A bulkhead is a design multitasker: It hides stray wiring, provides warm contrast to the metal lighting and emphasizes the island, transforming it into a destination. The geometry of the pendant lights is classic yet current. “The hexagons are compelling, and these are oversized, which further sets off the island from the rest of the kitchen,” says Tanya.

ADD RUNNERS TO RUNWAYS

A vintage runner on the bar side of the island lends an old-world touch to the brand new kitchen. “It marries the various cabinetry colours, and softens the hard surfaces and sharp corners in the room,” says Tanya. The rug has a worn, lived-in look, so the homeowner needn’t worry about wear and tear. Plus, its motifs are busy enough to hide the occasional spill. Tanya also placed a sisal runner along the sink side of the island to contain splashes and spills.

HIDE THE MESS

For those who love an open kitchen but dislike having a mess in full view of the living area, a butler’s pantry is a dream solution. Let the sauce splatter and the pans pile up! Tucked behind a door at one end of the kitchen, it’s the perfect spot to hide the happy chaos of making holiday meals.

OPT FOR INTEGRATION

Seamless placement of a wall oven and microwave, and the use of a cooktop and an “invisible” refrigerator let the room’s finishes – not its appliances – take centre stage. “This makes the main part of the kitchen look less cluttered and feel less utilitarian,” says Tanya. In contrast, the hard-working butler’s pantry, which is tucked behind a French door, is served well by a slide-in range.

Red and green aren’t her thing, so Sarah Walker fills her home with pink, silver and gold to impart holiday sparkle and shine.

on nooks & crannies “Real life stops in December,” says homeowner and designer Sarah Walker. “Then, everything revolves around comfort and warmth.” A built-in nook holding firewood lends texture to the family room and is always stocked to heat up chilly nights spent lounging on the velvet sofas.


“T

o me, Christmas is the time to create memories,” says designer Sarah Walker of The Curated House by Sarah Walker. To set the scene for these treasured moments, she and her husband, Graham, transform the 1960s Oakville, Ont., home they share with their sons Noah, 14, and Tate, 3, into a lovely shimmering wonderland. Here, romantic floral garlands and lush evergreen boughs are punctuated with elegant splashes of silver and gold. The resulting look is festive and celebratory, but not over-the-top Christmasy. “Santa won’t walk into our home and mistake it for the North Pole,” says Sarah. “But he’ll know he’s in the right place when he sees Tate, his small face aglow, gazing at the Christmas tree’s twinkling lights.”

on family reading The built-in shelving honours family life by featuring keepsakes from travels and books. “We’re a bookish family, so you’ll often find one of us reading by the fire,” says Sarah.

ingerbread is scenting the air with its sweet spiciness, sleigh bells are ring-ting-tingling and strings of lights are twinkling. No, this isn’t the North Pole, but rather an 1,800-square-foot family abode in Oshawa, Ont., owned by designer Michael Penney, who’s also purveyor of the Whitby, Ont., housewares and decorating business Penney & Company. “We’re people who really love Christmas,” he says. Michael and his wife, Sara, adore the holidays so much that they have already established traditions for their young family, which includes daughters Violet, 4, and Hannah, 18 months. “We play old-school Christmas tunes, dig through boxes of cherished ornaments and make a gingerbread house, something I’ve done since I was a kid,” he says. This highly anticipated yearly ritual is matched by Michael’s passion for decor. “My aesthetic is traditional with a fresh and relaxed sensibility,” he says. “Our girls are a big influence on the way our home is decorated – family-friendly with humble finishes that aren’t too precious.” Neither are they expected: For instance, you won’t find any reds or reindeer in this space. Instead, cherished ornaments are the inspiration for the tree and beyond. “Our vintage decorations play a major role,” says Michael. “The way their cheerful colours have been muted by time always gets me.” On the tree, he uses them with abandon. “The rest of the decorations are a mix of contemporary silver and gold, good vintage reproductions made from glass and metal, and a lot of cheap-and-cheerful look-alikes bought in bulk to fill up the tree.” He continues the timeless colour palette throughout the rest of the home. “I love soft vintage hues like watery blues, celadon greens and lots of white.” These are represented in paint and furniture, as well as in seasonal accents that include an

abundance of natural greenery. In addition to adorning the mantel and the banister, the sprightly greens lend themselves well to Michael’s pottery and milk glass collections, tucking into bowls, vases and pitchers. That easy approach is in sync with how the Penneys live year-round. “Our home has generous rooms, except for the original compact kitchen,” says Michael. While many would be tempted to knock down its walls and open it up, he and Sara wouldn’t dream of it. “We don’t

live in our kitchen, but we’re always in our living room, especially at Christmastime,” he says. And it’s in the living room where they’ll welcome guests, enjoy homemade holiday cookies, sing carols together (as Michael says, “for the whole month of December”) and decorate the tree. “It’s so heartwarming to come home on a dark winter night and see your tree lit up in the window. It just makes you smile,” he says. That, and the smell of gingerbread.


“I wouldn’t dream of changing the layout of this original kitchen,” says Michael, who loves its built-in cabinets, which extend up to the nine-foot-high ceiling. “I updated the room with paint, new hexagonal floor tiles, marble countertops, a subway tile backsplash and fresh hardware. The mix of brass pulls and oversized ceramic knobs lend a real farmhouse kitchen feel.” The annual Penney gingerbread house is proudly displayed on a cake stand. Michael’s family-friendly dining room features his signature mix of styles. “The new wooden table and chairs look rustic and are serviceable for family meals – just stash the placemats in the table’s drawers and then simply wipe the table down,” he says. The linen-upholstered end chair layers in softness picked up by the rug, which has a casual distressed finish. “I must have something vintage in every room, so I added this sideboard I bought online and painted black.” It’s a nice complement to the chandelier, which Michael loves for its generous size and delicate look. In this charming Toronto home, the whimsical Christmas decor is constantly evolving and wonderfully bespoke with every passing year.

A

tradition of change might sound contradictory, but it’s the holiday norm at Chanele Krausz’s house. “Every year I implement a new Christmas scheme,” says the decorator, who shares this visually intriguing uptown Toronto semi with her husband, Ryan, an investment adviser. And though the young couple has lived here for only two years (it’s their first home together), the tradition of transformation is already in full swing. “Last year it was all red and green,” says Chanele. “This year, everything is calm and classic.” Her eclectic take on the holidays is in sync with her year-round design ethos. “I like a mix of antique and modern – rustic and glam all in one – unified by colour and texture,” she says. “Rooms should have layers of interest that inspire conversation.” Before any conversing could begin, the 1,200square-foot 1930s home required a serious overhaul that came with a big price tag. When the couple first viewed the house, they fell in love with its spacious rooms and character-filled details, like the living

room’s curved niches. But there was one original feature they didn’t bank on: knob-andtube wiring. “We had to replace it before we could move in, which was a huge expense,” says Chanele. “It meant other upgrades would be cosmetic only.” So the couple painted almost every surface, including the brick fireplace, and refinished the floors. Once the space was anchored by neutral walls, Chanele endowed it with her signature mix of treasured inherited pieces, cheap-and-cheerful thrift store finds and meaningful vacation souvenirs. To translate that knockout mélange into the calm and classic Christmas look she desired, Chanele relied on the interplay of white and grey augmented by judiciously chosen complements. “Traditional ornaments, fresh greenery and gold accents convey a timeless look,” she says. The style is evident even on the home’s threshold. “Our front porch proves holiday dressing doesn’t have to be complicated – a wreath and four urns filled with simple greenery.”

Back inside, one Christmas tree (versus last year’s two) keeps things easygoing. It’s placed in the dining room rather than the more expected living room window. “Entertaining during the holidays is important to us, and we spend a lot of time at the dining room table,” she says. “Having the tree here lets us take it in and, as a bonus, it radiates the best light for dinner parties.” The get-togethers kick off after the first weekend in December, which is reserved for the couple’s annual tree shopping and trimming ritual. “We pick out our Christmas tree after work on the Friday,” says Chanele. “On the Saturday, I make eggnog with rum, put on Frank Sinatra’s Christmas carols and we order pizza. Ryan gets the tree in position, helps with the lights and then hangs out while I put on the decorations.” And no matter how often Chanele reimagines the holiday decorations, this is one Christmas tradition she and Ryan have no plans on changing. RIGHT Chanele and her husband, Ryan, inherited the solid oak dining table from his family. “We lightly sanded and restained it, retaining all of the imperfections in the wood,” says Chanele. “The table will outlast us, and we don’t have to worry about damaging it – it gets better with time.” A collection of vintage brass candlesticks in lieu of a centrepiece continues the show of gold-toned accents featured in this year’s holiday decor. 2. KEEP IT SIMPLE, SANTA Shawn cites rustic Swedish style as his holiday inspiration. He selects plenty of natural materials and fresh blooms, generally avoiding anything that screams “holidays!” “I don’t set out a lot of festive seasonal decor,” says the designer. “And what I do set out is basic, but it’s pretty.”

3. BARE NECESSITIES A lover of spare and clean minimalist decor, Shawn takes a pared-back approach to the holidays with several rooms receiving no festive flourishes. The entryway stays the same, save for a few presents set out on a bench to grab en route out the door; the master bedroom in the background is also free of any tinsel and bobbles.

4. BASIC BLOOMS Two stems of white amaryllis set in a simple white vessel add a dose of freshness to this living room vignette. Throughout the house, various winter white blooms in similar arrangements add subtle cheer.

5. HOLIDAY HOST “I love entertaining,” says Shawn, who honed his skills while working at his parents’ popular pub throughout his teens. Shawn’s two main tips? Have an assortment of cocktails and refreshments ready for guests the minute they walk in the door, and offer pre-dinner snacks.

Gifts are gussied up with natural-look materials like kraft paper and evergreen sprigs with subtle pattern and sparkle.

READY TO ROLL A marble-topped bar-height table serves as the kitchen island. Set on casters, it’s a lesson in convenience: It rolls out of the way to accommodate large dinner parties (which is key, since Shawn often hosts his five siblings and their spouses and kids, as well as other family and friends for the holidays) and serves as a buffet area to keep feasts off to the side.

This fabulous farmhouse kitchen is also super functional. A Dutch door lets as much light and air in as the homeowner (and weather) permits; open shelving stacked with dishes makes it easy for guests to help themselves; and a sculptural sconce above the sink shines the spotlight on cleanup.

8. A DROP OF MODERN Danish designer Arne Jacobsen’s classic Drop chairs add a dose of Mid-Century Modern to the rustic elegant kitchen. The hits of black, echoed in the sconce, cabinetry pulls and perimeter countertops, ground the otherwise light and airy space, making it cozy and inviting despite its high ceiling.

9. THAT’S ENTERTAINMENT Open to the kitchen, the family room becomes a holiday hub when Shawn hosts. In this great space, friends and family gather to cook, eat, chat and watch movies. And it’s not the standard holiday viewing fare: Instead of It’s a Wonderful Life, National Lampoon’s Christmas Vacation and A Christmas Story, Shawn shows Oscar screeners (thanks to friends in the entertainment industry).

SNUG LIFE This cozy alcove off the living room serves as a perfect spot to store outdoor wear or to escape from the crowd and curl up with a good book. The style elements are simple and functional: Baskets under the bench offer organized storage while plush cushions make this a space in which one might want to linger.

WOODLAND MERINGUES MAKES ABOUT 70 COOKIES

tbsp unsalted butter, at room temperature, cubed cup + 2 tsp granulated sugar large egg, lightly beaten cup all-purpose flour tbsp Dutch-processed cocoa powder tsp baking powder tsp cinnamon tsp salt cup dark chocolate chips cup mashed banana (1 small) cups pecan halves, finely chopped cup + 1 tbsp icing sugar

In the bowl of an electric mixer, beat the butter and sugar on medium-high speed until light and fluffy; add the egg and continue to beat until incorporated. Sift the flour, cocoa powder, baking powder, cinnamon and salt into a bowl, then add to the butter and sugar. Mix on low speed for about 15 seconds; add the chocolate and banana. Beat until combined. Using your hands, roll the dough into a ball and refrigerate for 2 hours to firm up. Place the pecans in a medium bowl. When firm, form the dough into 1" balls, rinsing your hands if they get sticky; roll each ball in the nuts, pressing to adhere. Set the balls on a parchment paper-lined baking sheet (there’s no need to space them apart) and transfer to the fridge for an hour. Preheat the oven to 375°F. Line two baking sheets with parchment paper. Place the icing sugar in a bowl and roll the cookies in it. Place the cookies on the baking sheets, spacing them 1" apart; flatten each cookie to ⅓" thick. Bake for 10 minutes. The cookies will be soft coming out of the oven, so cool on the baking sheet for 10 minutes before transferring to a wire rack. Serve warm.

4½ oz egg whites (from about 3 large eggs) ½ tsp cream of tartar 1 cup + 3 tbsp granulated sugar ¾ tsp cornstarch ⅛ tsp baking powder ½ tsp pure vanilla extract Dark Chocolate Coating 3½ oz dark chocolate, chopped 1½ oz milk chocolate, chopped 1⅓ cups hazelnuts, toasted and very finely chopped White Chocolate Coating 5 oz white chocolate, chopped ½ cup finely chopped dried strawberries Preheat the oven to 275°F. Place the egg whites in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium-high speed until they appear foamy, about 2 minutes. Add the cream of tartar and continue to beat until the egg whites are stiff but not dry or crumbly, about 30 seconds. Place the sugar in a bowl, add the cornstarch and baking powder, and gradually add the mixture to the egg whites 1 tablespoon at a time. Continue to beat until the egg white mixture is thick and glossy, about 3 minutes. Beat in the vanilla extract. Spoon mixture into a piping bag with a ⅔" tip in place. Line two large baking sheets with parchment paper, sticking each piece to the baking sheet with a dab of meringue under the corners. Pipe small drops onto each sheet; the base of each drop should be about 1" wide. Raise the piping bag as you pipe so the drops are about 2" high with a fine tip at the top. Once all the meringues have been piped, place both baking sheets in the oven at once. Immediately lower the oven temperature to 250°F (you

want it to be slightly hotter when they go in to give the meringues a crunch) and bake for 2½ hours. The meringues are done when they look dry and sound hollow when tapped gently underneath. Turn off the oven; prop open the door and leave the meringues inside until cool. To make the dark chocolate coating, place the dark and milk chocolates in a medium heatproof bowl over a pan of simmering water, making sure the base of the bowl is not touching the water. Stir occasionally, until the chocolate is melted. Place the hazelnuts in a small bowl. Dip the base of each meringue into the chocolate, then into the hazelnuts; place meringues on a parchment paper-lined baking sheet to set. To make the white chocolate coating, follow the instructions for the dark chocolate coating, dipping the base of each meringue into the strawberries instead of the hazelnuts.

AMARETTI WITH HONEY & ORANGE BLOSSOM MAKES 20 COOKIES

2 cups + 2 tbsp almond meal ½ cup + 2 tsp granulated sugar Finely grated zest of 1 lemon Finely grated zest of 1 small orange ⅛ tsp salt 2⅛ oz egg whites (from 1½ large eggs) 3½ tsp honey ¼ tsp orange blossom water ⅛ tsp best-quality almond extract 1 cup sliced almonds, for rolling 3½ tbsp icing sugar Combine the almond meal, sugar, lemon and orange zests and salt in a bowl; set aside. In the bowl of an electric mixer fitted with the whisk attachment, beat the egg whites on medium speed until soft peaks form. At the same time, place the honey in a small saucepan over medium

heat. Just before the honey comes to a boil, increase the speed of the mixer to mediumhigh. While the honey boils for 30 seconds, the egg whites should be forming soft peaks. Remove the honey from the heat and carefully pour into the egg whites in a continuous stream, beating the entire time. Continue beating after all the honey has been added, until the meringue is fully whipped and cooled, about 1 minute. Stop the mixer and replace the whisk attachment with the paddle attachment. Add the almond meal mixture, orange blossom water and almond extract. Beat until it all comes together to form a soft pliable paste. Transfer to a bowl, cover with plastic wrap and refrigerate for 1 hour. Once chilled, divide the mixture into four equal portions. Sprinkle a quarter of the sliced almonds on a clean work surface and roll out one piece of dough overtop to form a log 12" long and ⅔" wide covered in almonds. Carefully transfer the log onto a parchment paper-lined baking sheet. Repeat with remaining dough and sliced almonds. Place all the logs on the same baking sheet, cover with plastic wrap and refrigerate for at least 2 hours or up to 2 days. Preheat the oven to 375°F. Remove the baking sheet from the fridge and cut each log into five 2⅓" pieces. Sift the icing sugar into a bowl and roll each piece in the icing sugar to cover. Place the pieces ¾" apart on a parchment paper-lined baking sheet and bake for 13 to 15 minutes, rotating the sheet halfway through, until the cookies are golden brown but still soft. Remove from the oven and set aside on the baking sheet for 10 minutes. Serve warm or allow to cool on a wire rack.
